Dinner is served at 5 p.m., and class is from 6 to 8 p.m. The purpose of Elevate Work is to provide students with the tools they need to be successful in the workforce, including skills such as communication, problem solving, teamwork and time management, as a way to address the many destructive behaviors and issues connected to perpetual lack of employment. Graduates receive a certificate of completion, highly respected by many area employers who look forward to interviewing Elevate Work graduates for job openings.

Local business professionals assist with the class in the form of business panels, 60-second commercials and mock interviews. Mentors are crucial to this course, said Elevate Work director Donna McConkey, as they provide personal interaction, a sense of community and friendship, assistance with assignments such as resumé preparation, and other support as the student progresses.

Mentors, many of whom participate on a regular or ongoing basis, frequently comment that they benefit from the experience as well, making a new friend and having the opportunity to witness a changed life.

Winners of Branson ShowAwards named

By K.D. Michaels, Staff Writer The Branson Show Awards ceremony was held on Sunday at Branson’s God and Country Theater with a theater full of eager and enthusiastic fans in attendance.

The Branson Show Awards was the creation of Branson enthusiast and fan Gary Wackerly. The Branson Show Awards was designed to offer a more fair way of determining award winners. In other Branson awards shows, winners are determined based on fan votes, meaning a person can vote having not even seen the show, and shows with a large number of fans or family members can unfairly tip the voting scales. In the Branson Show Awards, an award committee sees every show in Branson before making their nominations.

The committee members then vote in each category to determine the winner. The committee is made up of a group of volunteers who love Branson and the entertainment our town offers.

Sometimes, well, most of the time, it appears we celebrate on Labor Day, but we forget what it is all about. It came from a time when, basically, if you lived in a major industrial city and didn’t work, you and your family did not eat, let alone enjoy the myriad of benefits that people who don’t work today, receive.

In the large manufacturing cities of America, workers of all ages, including children, worked long, grueling hours under highly un-

safe working conditions in manufacturing plants. Long hours with no breaks, inadequate sanitary facilities and fresh air were the norm. There were strikes, riots and boycotts to try to improve things.

In the wake of this massive unrest and repairing ties with American workers, Congress passed a law making Labor Day a legal federal holiday. President Grover Cleveland signed it into law on June 28, 1894.

History.House.gov reports that “The response to the new holiday was overwhelmingly positive. Labor unions in cities such as Boston, Nashville and St. Louis celebrated with parades and picnics. Large turnouts in Chicago (30,000) and Baltimore (10,000) underscored the holiday’s popularity.” Since 1894, however, although some major unionized cities have Labor

Day parades of some sort, to the vast majority of Americans, Labor Day has become a three-day weekend to celebrate the last days of summer with very little thought to the reasons for the holiday.

There was not much industrialization or union organization in the Ozarks in the mid to late 1800s.

For the vast majority of those living in Southwestern Missouri, Labor Day was just another day.

Interestingly, however, the seeds of what Labor Day means to most Americans today were planted in 1894 when William Lynch and his two young daughters, Genevieve and Miriam, purchased Marble Cave, a “bat guano” cave that had ceased operation. Lynch ran the cave with his daughters until he died in 1927. The cave’s name was changed to “Marvel Cave” shortly after his death, and his two daugh-

ters operated the attraction until leasing it to the “Herschend family,” Hugo, Mary, and their two teenage sons, Jack and Peter, in the mid1950s. The Herschend family has operated it continually since.

“After signing a 99-year lease, the Herschends made many improvements to the cave but wanted something for people to do up on the surface while they were waiting to tour the cave. Hugo’s vision was to have Ozark craftsmen demonstrating their crafts. That vision, along with some insight about Marmaros, were the seeds which were planted and nourished by the Herschend family and blossomed into an 1880s themed town named “Silver Dollar City,” located at the entrance to the cave, which opened May 1, 1960.”

Just when you think you’ve got one problem conquered, another one comes to steal your peace and rest. During those times, our first response is often to ask, “Why me, God?” We wonder what we did to deserve the difficult situation in which we find ourselves. While there are certainly times when our un-

wise decisions cause negative consequences, that is not always the reason we must face an onslaught of hardships. Take Paul, for example.

“Five different times the Jewish leaders gave me thirty-nine lashes. Three times I was beaten with rods. Once I was stoned.

Three times I was shipwrecked.

Once I spent a whole night and a day adrift at sea. I have traveled on many long journeys. I have faced danger from rivers

and from robbers. I have faced danger from my own people, the Jews, as well as from the Gentiles. I have faced danger in the cities, in the deserts, and on the seas. And I have faced danger from men who claim to be believers but are not. I have worked hard and long, enduring many sleepless nights. I have been hungry and thirsty and have often gone without food. have shivered in the cold, without enough clothing to keep me warm.” 2 Corinthians 11:24-27.

Paul’s trials didn’t come as a result of wrong actions or bad decisions. His difficulties came as a result of his right actions. As a man who was called to preach the gospel, Paul yielded himself to God in every way--even when it meant certain danger and persecution. He understood that sharing the good news of salvation through Jesus Christ was worth the challenges that came along with it. As a soldier walks willingly into battle knowing that his or her noble actions could bring pain and possibly even death, Paul also fought the good fight of faith. Many of the trials he endured were stepping stones into the next phase of life that God was leading him into. There were people in every phase who needed what Paul had to offer. They needed to hear that there was a God who loved them.

Once Paul had been obedient and accomplished what God had asked him to do, he was thrust into a new season wrought with

By Cindy Thomas, Staff Writer During a recent trip, I intentionally took some side roads past small country churches next to community cemeteries. Aside from the benefits of using land already set aside and having funeral services sheltered from the weather, I wonder if locating churches beside cemeteries served another purpose—to remind worshipers that life happens; it isn’t always pleasant, and death happens.

Many of those churches were built decades ago; the cemeteries are full of personal and national history—farm accidents; women dying in childbirth; at least four wars.

But as congregants looked out at those stark reminders, they continued to worship, knowing death doesn’t have the last word.

Jesus told his disciples unpleasant things would continue and, in fact worsen, until his return. The hope he gave, though, is recorded in the gospels and Paul’s letter to the Thessalonians: “I do not want you to be ignorant, brethren, concerning those who have fallen asleep, lest you sorrow as those who have no hope.

For if we believe Jesus died and rose again, even so God will bring with Him those who sleep in Jesus.

This we say to you by the word of the Lord, that we who are alive and remain until the coming of the Lord will by no means precede those who are asleep. For the Lord himself will descend from heaven with a shout, with the voice of an archangel, and with the trumpet of God; and the

more challenges.

You may find yourself experiencing a challenging season full of changes that have caused stress and unrest. Like Paul, you may “have worked hard and long, enduring many sleepless nights” with no visible results.

Life may seem chaotic. You may feel as though you’ve taken one step forward only to take two steps back. The dreams you had for the future may have crumbled before your eyes. Resist the urge to doubt God’s goodness or to ask, “Why me?” Instead, trust that God could be leading you into a new season of victory that exceeds anything you’ve ever imagined. Look for people who need what you have to offer, even if the situation you are in may be difficult and uncomfortable. Your strength in hard times may very well be what gives others the inspiration to keep going when their situation looks grim. May we follow in Paul’s footsteps, heeding the same invitation he offered to his friend Timothy-“Endure suffering along with me, as a good soldier of Christ Jesus.” 2 Timothy 2:3

On this Labor Day, as it has for decades, Silver Dollar, the result of the labors of the Lynch and Herschend families and all the “citizens of Silver Dollar City,” will provide a labor celebration unlike any other in America. It is the epitome of what Labor Day means to many Americans. But along with it is that unique spirit that makes Silver Dollar City so special. It defies explanation, but an Ole Seagull feels it every time he enters the “City.”

Tours of Marvel Cave, a National Natural Landmark and Branson’s oldest continuously operated attraction, are still conducted daily and are actually included in the price of admission to Silver Dollar City. The 60-minute walking tours depart every half hour and are guided by trained cave guides. They take visitors over 500 feet below the surface into the “wet limestone cave” via a combination of stairs, trail, and ramps. Once at the bottom, cave visitors get a half-mile ride back to the surface via a unique “cable train” installed in 1957.

The past week brought destruction from the hurricane in Louisiana and more confirmed deaths in Haiti. More people died from COVID-19; some reportedly were denied treatments that have been effective for others.

The news from Afghanistan is devastating, especially for veterans and military families. My dad, a WWII veteran, is horrified by the idea of people being left behind.

itary vehicles; our hearts go out to the families.

The good news—sometimes the only good news, it seems—is that there is hope in Jesus Christ.

I found myself turning to those familiar Thessalonians verses last week as I not only watched the news but also attended a cousin’s funeral. It was tough, but we knew he loved Jesus. He was laid to rest in one of those country cemeteries where each year, for decades, people have gathered on Decoration Day each year to reminisce, lay fresh flowers, and be reminded by a simple, heartfelt sermon: We have hope.

I still don’t like watching the news. But I am thankful I have hope.

Louisiana, was a favorite of the many who visited Silver Dollar City each year. Many spoke of his musical flair and engaging personality.

“Cedric was our reason for going to Silver Dollar City,” said Branson resident Olive Foster. “So sorry to hear that he is gone, but definitely not forgotten.”

Doris Watridge, a regular visitor to Branson noted, “When we came to Branson and visited Silver Dollar City, we always went to his shows. He was the life of the party.”

Another Branson resident, Bev Eugenio added, “Cedric Benoit and his Cajun Connection was always a show we went to see at SDC every time we visited there over the years. He was

an icon. I will never forget his showmanship.”

“Cedric was a huge part of my childhood, going to Silver Dollar City to see the Cajun Connection,” said Branson’s Heather Garibay. “He was truly one of a kind. He will be greatly missed.”

Others knew Cedric on a more personal level.

Said marketing professional Carrie Anne Mitchell, “Cedric Benoit wasn’t just my media marketing client for almost seven years, he was my big brother, my encouragement, my best friend, my prayer buddy, and one amazing listener. He made me feel like anything was possible and believed in me when I had trouble believing in me at times. He was amazing.”

Longtime Branson entertainer Bob Nichols added, “To me, Cedric was a Branson, Missouri, icon. He left a lasting impression on millions of Branson visitors with his exuberant style of entertainment. And, he was

a really great friend to so many in our community. Branson will miss Cedric Benoit.”

Branson headliner Doug Gabriel echoed Nichols’ thoughts. “Cedric was a true entertainer who gave his all every time he hit the stage,” noted Gabriel. “He was my friend and someone I respected for his longevity and amazing career in Branson. He will be missed but never forgotten.”

Said comedian Terry Wayne Sanders, “Cedric was a true professional on stage and always a true friend to all! He made us all better performers, and he set the bar high. His legacy will live on.”

Former Mayor Karen Best shared her thoughts on the loss of Benoit. “Cedric Benoit was the kindest, most talented and loyal friend you will ever find,” said Best. “He wanted everyone in life to be happy. He didn’t care about monetary things. He cared about things of the heart.

He leaves a huge hole in our community.”

In a news release, Branson Mayor Larry Milton stated, “I am saddened to hear of the passing of my friend Cedric Benoit. Cedric had a larger than life personality and brightened every room he walked into with a

‘Laissez les bons temps rouler’ or ‘let the good times roll’ for those of us who weren’t as fluent in French as he was. His engaging personality and contagious smile will be greatly missed.

Local conference helps bring hope, health, healing

By Cindy Thomas, Staff Writer The Hope, Health and Healing Conference at King’s Castle Theater August 20–22 was the setting for prayer, laughter and tears of healing as speakers shared their stories with attendees seeking to overcome their own struggles or find meaning and community in their lives.

Along with personal testimonies, speakers offered techniques to manage stress, promote self-care and personal well-being, and develop a strong support system in line with personal core values. Attendees learned ways to recognize and address overwhelm, isolation and personal “busyness,” as well

“I hadn’t really thought of myself as a perfectionist,” said one attendee, “but I realized I often don’t consider God as being there to help; I think it’s all up to me if it’s going to be done right. After hearing some

of these speakers, I’m starting to let go of that pressure.”

Other takeaways included a challenge from local author Harriet Ford to “resist the devil; believe God, not your symptoms, even if it takes a while.” Dr. Marla Woodmansee concurred as she shared her story, saying,

“With God’s help, you can remain unmoved no matter what the devil throws at you.” Another local ministry leader, Dr. Joe White, spoke of God’s faithfulness during a journey of physical difficulties The common theme was of overcoming adversity; several speakers were victims of abuse who, with God’s help, have healed from past trauma and gone on to successful ministry helping others. Speaker “Definitely Holly” brought gales of laughter with her impersonations, but also gave coping strategies and reassurance for people who struggle with anxiety and are frequently shamed for it, often by Christians. “Anxiety is hard; your brain never shuts off,” she said. “But it’s not sin. the show, but as the show’s popularity grew so did the youngest member of the Tabuchi family, and Christina soon became a featured entertainer, gifted in vocals and dance. Christina now co-headlines shows with Shoji, works side-by-side with dancers and other performers, and has taken on major creative roles in the business adding the titles of show director and producer to her name.

In the midst of “The Branson Boom,” the Tabuchi name was synonymous with Branson, and the Tabuchi family was often performing three shows a day, adding a morning show to their already packed matinee and evening show schedule, entertaining hundreds of motorcoach groups each week, and selling out shows on a daily basis.

Though trends have changed and Branson does not host the massive number of motorcoach groups that once visited our city, Shoji Tabuchi is still a favorite among show goers, whether performing in Branson or in road shows across the nation.

The Tabuchi family – Shoji, Dorothy and Christina – was honored on Tuesday for the many contributions they have made to Branson throughout the years and for being an integral part of Branson’s musical history. Said Howden, “The mayor and I had many discussions on how to honor some of the legends that built Branson over the decades, and we felt these days of remembrance were the best way to begin that effort. We are going to announce one new holiday per season. Shoji, Dorothy and Christina were the logical choices for the first honorees because of their status as early pioneers of the entertainment scene in this community and the recent announcement that Mr. Tabuchi will be the newest inductee into the National Fiddler’s Hall of Fame in October. From now until the end of time, August 31 will always be Shoji Tabuchi Day in Branson, and I am honored to

have played a role in seeing this through.”

Shoji, Dorothy and Christina Tabuchi were grateful to the community and the City leadership for the unique honor that was bestowed on the family.

Said Christina, “We are very honored and touched by this.

Thank you to Mayor Larry Milton and to Marshall Howden for such an honor. We have spent over 30 years doing what we love while also supporting the community that we live in and love. Our family is very much just that, a family unit. There is no way that we would have been able to achieve the things that we have been able to achieve without all three of us pouring our blood, sweat and tears into a business we love, in a community we absolutely love and are so proud of. Thank you to all of the wonderful people who have supported us throughout the years!

USACE and Ozarks Water Watch announce 21st Annual Shoreline Cleanup Submitted to Branson Globe The U.S. Army Corps of Engineers, Little Rock District and Ozarks Water Watch are seeking volunteers to participate in the 21st Annual Shoreline Cleanup Event in conjunction with National Public Lands Day. The event will take place at Table Rock Lake, Lake Taneycomo and Bull Shoals Lake Sept. 1819 and 25-26. National Public Lands Day is organized annually by the National Environmental Education Foundation, in cooperation with Department of the Interior, Department of the Army, and Department of Agriculture.

The U.S. Army Corps of Engineers along with other federal agencies like the National Park Service, U.S. Fish and Wildlife Service, Bureau of Land Management, Bureau of Reclamation, and U.S. Forest Service all

provide sites and volunteers to support National Public Lands Day. Since 2001, Ozarks Water Watch and thousands of dedicated volunteers have removed over 400 tons of trash and have recycled over 5,000 tires. At least 1,000 volunteers are ex-

pected this year to gather around the shorelines to do their part to keep these lakes clean and beautiful.

Donating blood is a simple yet profound act of kindness providing hope to patients and their families across the country. Donating blood remains essential and a single blood donation can help save more than one life.

The Red Cross is concerned that the rise in COVID-19 cases due to the delta variant and a potentially active hurricane season may fur-

ther challenge our ability to collect and meet hospital demand. In recent weeks, the Red Cross has seen the number of blood donors coming out to give drop by nearly 10%.

This decline in donors is believed to be due to multiple reasons, including the continued effects of the pandemic on blood drive cancellations and donor availability as well as back-to-school preparations for many families. Emergencies of all types occur daily in communities nationwide. The Red

Cross encourages people have an emergency plan and be prepared should an emergency strike their home or community. Part of being prepared is ensuring an adequate National blood supply. Blood can take up to three days to be tested, processed and made available for patients, so it’s the blood already on the shelves that helps save lives in an emergency.

The health and safety of everyone attending Red Cross blood drives is a priority, especially

as COVID-19 cases are surging again. As such, the Red Cross resumed requiring all blood donors, staff and others at our blood drives and donation centers to wear face masks regardless of their vaccination status Aug. 9. Individuals who have received a COVID-19 vaccine are still eligible to donate blood. Knowing the name of the manufacturer of the vaccine they receive is important in determining blood donation eligibility.

ed to donate now and throughout the fall to help patients counting on lifesaving blood. Invite friends and family to join in this act of kindness—it can make a lifesaving difference. Submitted to Branson Globe As wildfires across the West continue to rage, coupled with flooding and tropical storms impacting parts of the Midwest and East Coast, the American Red Cross is providing support from coast to coast. For weeks now, dedicated American Red Cross workers have been providing critical aid to those impacted, from

safe shelter and nourishing meals to comfort and care for individuals processing the wrath of these disasters.

Hundreds of disaster workers from across the nation are providing support to those in need. The American Red Cross of Missouri and Arkansas has stepped up to deploy individuals to lend a hand.

gust, 34 volunteers and staff from across the Missouri and Arkansas Region have supported disasters across the nation, with 28 individuals currently responding.

FAiTH Community Health partners with Branson Chamber to provide COVID-19 vaccine clinic Submitted to Branson Globe Faith Community Health (FAiTH) partnered with the Bran-

son Area Chamber of Commerce to host a COVID-19 vaccine clinic at the chamber office, on Au-

gust 19. The vaccine clinic was available to anyone in the area, ages 18 and up. FAiTH administered the Moderna (2-dose) vaccine.

“We believe Partnering with the Branson Chamber will help the City of Branson and our local health departments increase awareness on the importance of getting vaccinated to slow the spread of COVID-19 in our communities,” said Michele Dean, Director of Development and Community Partnerships at FAiTH. “Getting vaccinated is a simple but powerful step people can take to protect their health and the health of those in Ozark Mountain Country.

A gentleman that received the

vaccine during the clinic called the efforts heroic. His wife contracted COVID-19 and was hospitalized for 84 days.“I didn’t think this virus was real till my wife became ill” said Jim Shook.

“I got the vaccine so others wouldn’t have to go through what she did.” Jim brought with him his three children to also receive the vaccine.

This was the sixth vaccination clinic FAiTH has hosted but the first partnership with the Branson Area Chamber of Commerce.

Over 500 people have been vaccinated through FAiTH’s vaccine clinics.

Hollister welcomes new antique store, Creekside Antiques

By K.D. Michaels, Staff Writer A beautiful new shopping experience now calls Hollister home.

Creekside Antiques opened on Monday with a ribbon cutting and grand opening celebration.

Located on St. James Street, the spectacular new shopping complex is owned by Gary Loyd.

“This was three years in the works,” Loyd explained. “There was so much damage from all of the flooding, that we’ve completely redone all of the buildings.”

The result of all of the remodeling and renovation is a main building of over 10,000 square feet full of antiques, as well as an

additional section, another 5,000 to 6,000 square feet, allocated for vendors and consignment sales.

Managed by Ree Lovell, with help from co-manager Leisa Vanhoozer and Terina Johnston, who is the manager of the vendor and consignment area, Creekside Antiques features a large selection of antique furniture, tools,

toys, household items, collectibles and much more, as well as a coffee shop with fresh-brewed beverages and ice cream.

September is National Recovery Month: Families and communities can make a difference

By Marietta Hagan, Project Coordinator, Stone & Taney Counties Substance Use Initiative Oftentimes, individuals who experience mental health or a substance use disorder feel isolated and alone. Yet, every year, millions of Americans experience these conditions. It’s important that we offer support to individuals facing mental health and substance use disorders. In fact, we need to create environments and relationships that promote acceptance. Support from families is essential to recovery, so it’s important that family members have the tools to start conversations about prevention, treatment and recovery.

Too many people are still unaware that prevention works and that mental health and substance use disorders can be treated, just like other health problems.

Having worked in the recovery field for five years and having seen recovery change the lives of those I love, I have witnessed the positive reality of recovery. Individuals who embrace recovery achieve improved mental and physical

health and form stronger relationships with their neighbors, family members and peers. We need to make more people feel as though recovery is possible.

Mental health and substance use disorders affect people of all ethnicities, ages, genders, geographic regions and socioeconomic levels.

They need to know that help is available. These individuals can get better, both physically and emotionally, with the support of a welcoming community.

Families and communities can find hope and spread the message that recovery works by celebrating the annual Recovery Month.

Drug Free Ozarks is celebrating Recovery Month by honoring individuals and families who are in recovery. Help us celebrate by supporting the recovery community, including those who provide prevention, treatment and recovery support services. Taney County Health Department updates COVID-19 numbers Submitted to Branson Globe The Taney County Health Department (TCHD) is saddened to confirm the deaths of seven, previously unreported, Taney County residents due to COVID-19. The total of Taney County residents whose deaths can be attributed to COVID-19 is now 134.

TCHD continues to remind the community that there are three tools available to decrease the likelihood of getting COVID-19: vaccination, physical distancing and wearing a face covering. The public is being asked to consider using more than one of these tools as part of a multi-layered approach

due to the prevalence and severity of the Delta variant. Practicing good hand hygiene and staying home when sick continue to be important in reducing the spread of the disease. TCHD encourages everyone 12 years of age and older to get vaccinated.

Here are a couple facts that will definitely be ‘cool’ to know.

-Chargers get hot when plugged in for too long. When putting a tool battery on its charger, be sure to monitor it and remove the battery when it’s fully charged. Battery chargers are notorious for catching on fire when they overheat.

This is also true for the small USB charging blocks and cords for phones and other devices.

Some chargers and cords fail to self-regulate their temperature and thus melt the insulative coating on the wires. Look for discoloring near the USB end

‘Be the Light’, 2021 community Christmas tree to feature cut crystals, lights Submitted to Branson Globe The Branson Christmas Coalition has unveiled plans for this season’s second annual community Christmas tree entitled “Be the Light.” The tree’s theme is planned to be a celebration of faith and an inspiration to all. It will be a combination of old and new, warm and cool, silver and golden tones, all creating and reflecting light – the age-old symbol of goodness, wisdom, hope and the grace of God. The 2021 Community Christmas Tree will be displayed on West 76 Country Boulevard between the Branson Ferris Wheel and the Holidays on Ice Skating Rink again this year.

“This Christmas tree’s new lighting and decor will sparkle like never before, reflecting our community’s wish for peace, kindness and joy this holiday season,” according to Ann McDowell, Executive Director of the Branson Christmas Coalition. “It will be a shining example of what makes the Branson area special and unique in the world – our genuine kindness, our shared faith and the true joy our destination provides

Nearly 10,000 genuine cut crystals are being provided to adorn the tree by the Branson Centennial Museum and Branson Boardwalk, home of Aquarium at the Boardwalk. These Austrian crystals originally formed the magnificent chandelier that hung in the Grand Palace theater lobby from 1992 until 2008. When the theater was transformed by Kuvera Partners into the developing entertainment complex with the Aquarium at the northwest corner, they donated the chandelier to the museum.

“Both they and White River Valley Historic Society, of which we are an affiliate, wanted to preserve and showcase this iconic chandelier from the region’s largest and most elaborate performance venue of its time.”

The original fixture was created by the Gross Chandelier Company in St. Louis, Missouri (now G Lighting). The family-owned company was able to provide extensive documentation of the design by E. Linton Gross III (now deceased) and other details to the Branson Centennial Museum

for their upcoming exhibit. The original fixture was 16 ft. tall, 10 ft. 4 in. across and featured 141 lights. It was delivered to the theater in January 1992 for a price of $40,000.

Since acquisition of the chandelier, extensive volunteer hours

have been dedicated to reclaiming its elements, cleaning, sorting, and organizing thousands of crystals, candlesticks and polished brass and nickel adornments. Strands of crystals will be featured on the 2021 Community Christmas Tree.

Other smaller and unique items from the fixture will be on display and for sale at the Branson Centennial Museum.

“This tree is another huge, collaborative effort by our community which is ongoing,” explains Ann McDowell. “Volunteers are still needed at the museum now and with tree assembly in OctoSEE TREE, PAGE 28

1 cup sugar 2 eggs 1/2 cup butter, softened 2 cups sour cream 2 tsp. rum extract 3 cups flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 14-oz. can crushed pineapple, drained (You can freeze the juice for smoothies!)

1 cup shredded, sweetened coconut Preheat oven to 350 F. Beat sugar, eggs, butter, sour cream and rum extract until combined. Add flour, baking powder, baking soda and salt. Add pineapple and coconut. Stir.

Fill muffin liners about 3/4 way full with batter. Bake for 25 minutes or until a toothpick comes out clean. Cool on a cooling rack.
