SEPTEMBER 2020 HOPES MALAYSIA BRINGS HOPE TO LESS FORTUNATE SABAHANS Kota Kinabalu, September 2020 - The COVID-19 pandemic has taken its toll on the lives of many Sabahans. This includes our local rural farmers and charitable homes, whom are both facing extreme financial difficulties. Hopes Malaysia, a local non-governmental organisation, is striving to lessen the daily burdens of these groups through the Tamu Kita Benefit Bag. These care bags are filled with fresh local fruits and vegetables from farmers, before being distributed to care centres and orphanages all around Kota Kinabalu. These bags allow the village farmers to earn a consistent income for their families, while tackling the financial and nutritional issues that the COVID-19 pandemic has brought onto care centres and orphanages. One bag only costs RM48 and supplies fresh food to a medium-sized home for two to three days. Learn more about Hopes Malaysia’s initiative by visiting www.hopesmalaysia.com, or donate a bag at www.hopesmalaysia.com/tamukita. Besides this, the NGO also provides weekly Tamu Kita produce deliveries to customers all around Kota Kinabalu. All efforts go towards helping the less fortunate Sabahans and their families have a better life.

PETRA KASIH TO SUPPORT THE MALAYSIAN ECONOMIC RECOVERY AND ITS CITIZENS
Kota Kinabalu, 19 September 2020 - The PETRA Group has launched PETRA KASIH, an initiative to support economic recovery and uplift people’s spirits in the wake of the COVID-19 pandemic. The launch was held in conjunction with the PETRA Group Malaysia Day Celebration at The Magellan Sutera Resort. It was attended by dignitaries and celebrities from both Peninsular and East Malaysia. Datuk Dr Vinod Sekhar, Chairman and Group Chief Executive of the PETRA Group, said, “In the face of COVID-19, we must put aside all our prejudices and stand together. PETRA Group is about creating Solutions For Humanity. Hence, we are launching PETRA KASIH as our way of giving back to the Malaysian people and contributing to the country’s recovery. It is a national imperative that SMEs and farmers, the backbone of our economy, are provided with financial assistance and protection during these trying times.” PETRA KASIH comprises of four main programmes, a microfinancing investment scheme, a farm upscaling programme, the introduction and the cultivation of a new high-value crop and a concert in support of the local creative industry: •

Faezrah Rizalman She is the founder & CEO of Rambutan Code Academy, Sabah’s first coding school as well as Pandan Digital, a bespoke software development house based in Kota Kinabalu. Faezrah Rizalman is a Keningau native who grew up in KK. Her goal is to provide a fast-track route into the technology industry for Malaysian youth living in Borneo, especially in Sabah. She is passionate about mentoring people who want to learn to code and believes in inspiring the next generation of coders. Outside of tech, Faezrah also runs a social enterprise helping farmers from rural Sabah innovate and market their products online. Faezrah established Rambutan Code Academy in order to empower Sabahans with the skill-set needed for IR4.0, while Pandan Digital helps mitigate the second issue, providing job opportunities to those with said skill-set. Her proudest achievement came when Faezrah and her business partner, Jeannette Goon, created an online digital platform called Bayu that connects women entrepreneurs in rural areas of Sabah with lucrative markets of Kuala Lumpur. They received the APEC Digital Prosperity Award for the innovative idea. During her free time, Faezrah loves to travel, especially by train. It gives her time to take in and appreciate the surrounding scenery. She just adores the adventure of going to “non-tourist spots”. In the future, Faezrah sees herself growing a tech startup that’s sustainable, while also growing her current businesses to empower more Sabahans.

Angelyca Laura: A Love For Performing
T
he best thing about being an artist is the adoring fans cheering for you during your performance, or so I’m told. However, it’s always the glitz and glam of showbiz and hard work needs to be put in to even step foot in the limelight. This month, we’re featuring the charming Angelyca, who is making her mark in the music scene. Angelyca Laura Lee is a 19 year-old musician from Kota Kinabalu. She started playing the guitar when she was 9. Her very first performance to an audience was during the wedding of a family friend when she was 12. So it’s easy to say, even for her age now, she has much experience under her belt performing in front of an audience. As of now, Angelyca mainly performs song covers. Although she doesn’t have a specific go-to artist, her genres tend to rotate between indie, pop, and oldies. Angelyca has tried dipping her toes in songwriting and composing, but feels that she still has a lot to learn in order to fully be successful. Performing on stage and for crowds is always a fun experience for Angelyca. She has performed at countless gigs around Kota Kinabalu. Her most memorable experience yet was in 2016, when she had the opportunity to open for Mira Firza.
by Noel Jinguli Images | Angelyca & Noel 14
Having a crowd cheering for her is definitely the highlight for her while performing. The size of the crowd doesn’t matter, as long as she’s able to entertain and make them enjoy the show. Although the support from the crowd is great, the support from Angelyca’s parents is what she’s really grateful for. They also inspire her to be the best she can be and she owes a lot to them both. Apart from them, Allie Sherlock has also inspired her to try out busking as another means of performing for an audience. Angelyca adores the way she sings and the style she conveys. At the end of the day, all the support from family and friends has helped her move forward in her musical career. In the near future, Angelyca is looking at releasing her own songs. Support Angelyca on Instagram at @glnea or YouTube: Angelyca Laura.

The Smartwatch of Smartwatches
T
he evolution of watches has always been fascinating. What started as a small accessory used to tell time on our wrists, has now become an easier way to view notifications and monitor our health. Many companies have done a great job introducing their own smartwatches to the world, but only one brand has become synonymous with the term, SMARTWATCH. In this issue, we’re taking a look at the Apple Watch Series 6 with its new and improved sensor that better monitors our health compared to the predecessor. Before we get ahead of ourselves, let’s look at how it looks first. Physically, it looks exactly like the Series 5, but Apple has added 2 new exciting colours to the lineup. A stunning blue and their famous (PRODUCT)RED are now available for the 100% recycled aluminium case. Along with the old strap designs that were available, you can now choose a claspless or buckleless strap. Choose between two materials and nine custom sizes, all tailored to the size of your wrist.
by Noel Jinguli Images | Unsplash

Apple has also introduced some new watch faces along with the previous versions. Customize them to suit your mood, style, or favourite activity, and make it as unique as your liking. Easily share and discover custom watch faces for yourself, all with the information that matters in one place. Now let’s get into the beefy additions Apple has made. First, they’ve added a new sensor that is capable of reading your blood oxygen levels. It’s able to take on-demand readings of your blood while also continuously monitoring it in the background. The sensor also tracks your heart rate and sleeping habits as well. It’ll provide you with the information you need to stay active and healthy. All in all, this is the perfect accessory for those on the go but still want to look good. It looks beautiful on the wrist and packs a great punch in terms of performance. You’ll definitely want this on your wishlist.

Signal Hill Observatory Tower
K
ota Kinabalu is a beautiful and amazing city to experience. But have you ever wondered what it would look like from a bird’s eye view? Of course you can view it with the help of a drone! All jokes aside, the Signal Hill Observatory Tower is the place to be to enjoy your day sightseeing around the city.
Anyway, once you’re there, you’ll see 2 saucer-like platforms for you to soak in the atmosphere. There’s also a cafe for sightseers to order snacks and drinks while they relax and enjoy the view. Apart from the platforms, you’ll also find some benches on the sidewalk along the road if the platforms are too crowded.
Located on Signal Hill, the Observatory Tower is the highest point in Kota Kinabalu (KK). It’s unclear when it was built, but some sources do speculate it to be between the 1970s and the early 1980s. You’ll also pass by the Atkinson Clock Tower on your way there
The best time to visit the Observatory Tower is during sunset. Witness the majestic sun set into the horizon of either the city skyline or the sea, depending on the time of year. Even after the sunset, take in the view of the city nightlife while enjoying the night air.
Speaking of which, it’s just a short drive from the Merdeka Square (Padang Merdeka) of Kota Kinabalu (KK). If you fancy a bit of hiking, why not try the Signal Hill Trail, which starts from the bottom of the hill nearby the local DBKK Hall. The pathway up the trail is surrounded by a mini forest, shielding you from the sun’s rays as you hike.
The Signal Hill Observatory Tower is open from 10am to 10pm daily with no entry fee.
If you decide to drive up, just keep in mind that the winding road is a bit narrow, so you need to be careful. Otherwise, if you’re looking for a fun road for a drive, I definitely recommend it, especially if you make your way from Karamunsing.

BEING CREATIVE
WORD POWER SABAH
The Empowerment of Words – and women Hello Breeze readers! I am delighted to tell you that I have been invited to contribute a page each month on behalf of wondrous WORDPOWER which we hope we will be able to run in March. It all depends on the C who must be obeyed, and whether I will be allowed to return to Sabah after going home to see my family for Christmas. Things change so fast that everything can be different in two weeks! But I will keep sending a column so if you like it, stick with me!
countries that are regarded as the most successful in managing the Corona virus are those with women leaders – New Zealand, Germany’s Angela Merkel, Taiwan’s Tsai Ing-wen, Denmark’s Mette Frederiksen, for example. Belgium bucks the trend at present but a study has found that the researchers still conclude that generally, “proactive policy responses” to the pandemic adopted by female leaders have provided countries with an advantage. Makes you think, doesn’t it? It should.
POETRY – Words That Work Beautifully WordPower has been running four wonderful poetry workshops, a follow on to our very successful Creative Writing one a couple of months ago. It is led by poet Thira Mohamed and I recommend you all to log on to our website and look up how to join the sessions. RM20 each one and my goodness do you come away feeling excited about words. She invited a couple of successful poets (Kulleh Grasi and Nelson Dino) to join her sessions: Kulleh has just won another prizer and his latest book of poems, Tell me Kenyalang, is published by Circumference. We will be doing more of this – keep an eye on our website and catch what you can. The Someone who insists they’re right despite clear evidence they are wrong, is a mumpsimus (another from the 16th century). This month is Women’s Empowerment month, and I wanted to talk about how words can empower and do the opposite. We all need to be alert to the importance of getting things right. We don’t have to be too Politically Correct, or Woke or whatever it is called these days, but we do have to be aware. For instance, words that are used for men and women are very different, and often we don’t know we’re doing it. One red flag which I find helpful is to ask yourself: would I ever use this word to describe a man? It wasn’t so long ago that women’s ages and vital statistics (I have always wondered why they are vital!?) were mentioned in any article about her.

Sonia Huang: Leading A Team & Beyond
J
ust over half a century ago it was almost unheard of to have a female boss, well times have changed. Female bosses are more likely to engage their employees because they have better social skills. It has been shown that a female manager is more likely to provide both feedback and support to their employees. This has resulted in a better job performance and a more productive employee. We can all learn a thing or two from female managing styles and career wisdom. To acquire a little of her professional intel, I got to chit chat with Sonia Huang, General Manager of Kimanis Food Industries Sdn Bhd (KFISB), about her responsibilities and leadership style, how to manage a factory and more. Tell us about your background. I was born and bred in Kota Kinabalu. I am a pure Chinese, of Hokkien descent. I graduated in Bachelor of Science in Operations Research from the University of Technology Sydney, Australia. Operations research is a study on how to assess processes and look at the way that goods are produced or the method of product distribution and break down the steps involved to determine how to improve operations, basically how to maximize profits and minimize cost. After graduating, I returned home to Kota Kinabalu and worked in an audit firm for about 3-years before joining Kimanis Food Industries Sdn Bhd. How long have you been with KFISB and what are your responsibilities? I have been with the company for 17-years now. I first joined KFISB as an Accounts Executive, and subsequently I was promoted to Operations Assistant Manager. It has taken tremendous dedication, hard work and working with my team to propel to where I am today. As General Manager, I oversee human resource, purchase, and factory operations; most recently and the last department I now overlook is sales and marketing. What motivates you to come to work and excel every day? I absolutely love a challenge, the more difficult the better; and coming from the accounting background there were a lot of new things I had to learn; from departments like human resource, purchasing to sales, marketing and factory operations. I have to ensure productivity is at its peak and turning around the company to make more profits. On top of that, purchasing negotiation with suppliers can be demanding too. Challenges come daily, but when I watch the employees perform well on the job, it makes me really happy and motivated, and knowing that I

was there to support them. I’m extremely blessed and contented that I am able to lead them. What is leadership to you? A leader should be self-confident and constantly provides guidance to their employees, whether they are job related or not, help them overcome problems and obstacles – most bosses aren’t aware of what their employee does. For me, I prefer to learn about what the employees do on a daily basis. Additionally, I’m always keen to learn something new by myself and once I’m familiar with the procedure or routine, I will then delegate it to the employee. At the same time, nurture and guide them throughout the project journey. It is how you treat and inspire your employees that is very important, I don’t want them to be just a follower. I’m certainly not the kind who will just sit there and let the employees do the work. A leader should always be a team player and be on the ground working with the team.
Tell us the history of Kimanis Food Industries Sdn Bhd. Established and founded in 1987 by Datuk Alan Ang, Kimanis Food Industries Sdn Bhd is a snack food manufacturing business that began with a single product. KFISB has consistently grown over the years to the current variety range with more than 60 products and the number is ever growing. We now have an established brand called D-jack in the snack food market. In the early years, we only marketed and distributed within Sabah region and eventually we began distributing to West Malaysia. As of 2015, we have at least 20-30 varieties of our snacks being exported overseas, mainly to China. How has COVID-19 impacted the snack business? Not so much except the first 2 months of the Movement Control Order (MCO) in March and April as the government imposed only 50% production capacity during that time. So we had to cut down our headcount and production by 50% as required, then in subsequent months we gradually increased and now our operations are back to normal. Also, since China recovered earlier from the COVID-19, we were able to export most of our products there and that definitely helped the snacks market get back to where it was. Manufactured snack foods are generally perceived as both more convenient and more suitable for indulgence and comfort eating so demand has been quite consistent thus far.
How do you use social media to help the brand & what’s the company’s innovation philosophy? Right now, we are embarking and moving towards e-commerce for our brand D-Jack onto platforms like Lazada and Shopee; with another new project on the cards. Our company philosophy, KFISB aspires to continue to produce healthy and organic snacks to our customers. Our snack is prepared from whole cereal grains which can be a good source of dietary fibre, and the addition of a few per cent of bran in place of the purified cereal fractions improves the fibre content of the finished products. Five years from now, what is your vision for the brand? We want to focus on West Malaysia and overseas will be in China, Africa and perhaps to Europe. Snack foods occupy an extremely important position in the food consumption market. They meet the consumption habits and consumption fashion of modern people for their good colour, fragrance, and taste; they are convenient for eating, and offer a variety of nutrition. Therefore, I hope our snacks can be seen in more supermarkets, large food stores, and so on, and the market space is huge.

DoubleUgou: Small steps lead to big changes
I
t’s always rare to see people taking the initiative to solve issues on their own. Usually, we talk the talk, but can’t walk the walk. That’s why it’s always refreshing to see those who put the work in for the greater good. This month, Breeze is introducing the people behind DoubleUgou, a local vendor of environmentally friendly essentials. Roslia Dumis and Rosevia Francis are two lecturers from a local university in Kota Kinabalu. These enthusiastic women aspire to educate and inspire communities around Sabah to adopt smarter lifestyles and more sustainable consumption patterns. But why DoubleUgou? Well, it’s simple, “ugou” is a nickname in the Dusun language which means little girl, so you can easily see the connection there. DoubleUgou was established in 2018. A viral video of a turtle having a plastic straw lodge in its nose was what inspired Roslia and Rosevia to start DoubleUgou. “Anyone with a sense of awareness will feel sad watching the video,” they commented. They added, “as humans, we’re responsible for the damages we cause with singleuse plastics. That’s the realization we both had.” So they took it as their mission and responsibility to do better and raise awareness. Their products consist of bamboo straws, sporks, toothbrushes, and cotton buds. They also produce eco-shopping bags, drawstring bags, loofahs, and much more. Most of the products and packaging are designed by themselves. “Design ideas are admittedly difficult to come up with at the early stages, but we kept at it and

persevered to succeed.” Their designs are all in black & white, as to not use a lot of colours and help minimize the impacts of printing. Starting off the brand was difficult because of the lack of public awareness. Roslia and Rosevia remembered some people laughing at the idea of using bamboo straws. Although disheartened, that didn’t stop them at all. Now, their customers are adopting and practicing the zero-waste lifestyle. It’s even better when there are more discussions and thought exchanges among those who follow DoubleUgou on said lifestyle. In the future, the DoubleUgou duo are planning on opening their own zero-waste shop and adding to the variety of products, especially from local sources. More awareness towards the lifestyle will help the environment. “This might sound cliche, but we don’t need small numbers practicing it perfectly. We need millions to do it imperfectly,” they said confidently. Personally, that might just be the best quote I’ve heard recently. @doubleugou

Personal Empowerment
T
his month Cruz and I would like to share a strategy that we’ve coached our clients to empower themselves towards the goals they seek. Please do use them to create a more wonderful life for yourself and as Cruz likes to say, Live Life to the Fullest! The first step is to start by defining clearly what it is that you want. First of all, try saying “I want X”, “I am X”, or “I have X”, where X is the object of your dreams. Keep the one that feels right for you. So for instance, you could say “I want to be slimmer by 5kg” or “I am 70kg” or “I have a weight of 70kg”. Then, vividly imagine, what would it look like, sound like, and feel like when you achieve your goal. Refine your visualisation until you strongly feel your inner motivation. Finally, decide, when, where, and with whom do you want to experience this success. This may bring up some fears but as you grow comfortable setting what you want and when you wish to experience it, you will find it feels more real and achievable.
morning. If it is on finance, you could call someone up to develop a business idea. The key is to take action based on what you know now. Don’t delay your success. Take action first, and figure things out as you take each step. That’s all you have to do actually, choose what you want, take action, revise what you want and what you do as the need arises. It’s that simple. Now, for those of you wondering, can it be that easy? Ask yourself, what needs to happen for me to succeed? How can I find the resources to make it happen? If money is your barrier, you can find ways to create, borrow, and allocate it. After all, you already have two big inner resources, your time and your effort, which can be used to create anything! Till we chat next, we’d like to wish you much success and joy in the month ahead!

The Nature of Breastfeeding
B
reastfeeding is a natural part of human growth. Though, it’s very common to see mothers now preferring to skip breastfeeding and go straight for bottle feeding. I had a chance to talk with Dr. Sylvia Lim of Phi Dental and discuss why we’re seeing this happen while talking about the benefits of breastfeeding. First off, as mentioned above, breastfeeding is a natural way of feeding babies. Right after giving birth, mothers can breastfeed their babies without the use of bottles and formula milk. The nutrients come straight from the mother to the baby. Speaking of which, did you know breast milk actually contains more types of nutrients compared to formula milk? How about the fact that it helps develop the facial development of babies? According to Dr. Sylvia, breastfeeding is the first step for correct facial development. Here’s a recap from the previous issue. Breastfeeding promotes the correct muscle movements of the baby, allowing them to put their tongue on the roofs of the mouths, encouraging forward growth of the facial bones. Now let’s answer the question of why parents and mothers are preferring bottle feeding. Well, the first issue is the myths being circulated among our communities. For example, “not having enough breast milk” is one that’s often heard. Dr. Sylvia assures that breast milk naturally starts developing when the mother
by Noel Jinguli Images | Unsplash 31
is 16 weeks pregnant. Next is how formula milk companies spread misinformation regarding their products. They sponsor certain clinics to promote their products, which in turn misleads mothers into thinking that formula milk is essential in their child’s growth. However, as simple as it sounds, there are correct methods to breastfeeding. Welcoming parents are encouraged to attend classes or seminars to learn the proper methods. It can be challenging for some, but there are always ways to solve the issues. Public acceptance can also become an issue for mothers. Dr. Syliva believes in order to encourage more mothers to breastfeed, the public must learn to accept that this is a natural process. The best thing we can do is provide facilities for mothers to either breastfeed their child or for working mothers to pump breast milk. This way, we not only help children grow and develop naturally, but also empower women to do what’s most natural for humans comfortably. At the end of the day, babies need to sustain themselves, and breastfeeding is the best and most natural way to feed them.

women’s empowerment
W
omen’s empowerment is a process that enables women to be more accessible to opportunities so that they may fully optimize their capabilities and make strategic decisions. Empowerment can be defined in many ways, however, when talking about women’s empowerment, empowerment means accepting and allowing people who are on the outside of the decision-making process into it. There are actually huge movements among women to support and empower each other. Women have been fighting for rights ever since the 19th century. Back then, women didn’t have the right to vote. Therefore the women’s suffragettes was created by Emmeline Pankhurst to help fight for the right to vote for women. Thanks to them, women finally got their vote on 6 February 1918. There is also a movement called #MeToo and it is a movement against sexual assault and harrasment. This movement mostly supports survivors of sexual assault and harrasment. It became a platform for women to voice their experience. It is a movement to remind survivors that they should not be afraid to tell their story and there are others who are just like them and will support them. The movement is to raise awareness of the impact of sexual violence. The movement gives women courage to stand

up against something that they have had to feel ashamed of and hide away from. Women are always breaking stereotypes that dictate how a woman should act. They are constantly fighting for equality and they empower each other by supporting each other, helping each other when in need and raising the status of women. Women empowerment allows women to show their abilities that have otherwise been looked down upon. It is a large topic that is heavily discussed today and women continue to fight for it and empower each other.
Wonder Woman: A SYMBOL of Women’s Empowerment
B
eautiful like Aphrodite, wise like Athena, swifter than Hermes, and stronger than Hercules, she’s none other than Wonder Woman. An iconic female character with the symbol of truth, justice and equality. The character was created in 1941 by William Moultan Marston, who himself was a strong supporter of the women’s reinforcement. According to Marston, “She (Wonder Woman) encourages women to stand up for themselves, learn to fight, and be strong so they don’t have to be scared or depend on men”. As captivating as she is, Wonder Woman is the definition of beauty with brain. Wonder Woman/ Princess Diana, was born on a Hidden Island called Themyscira. She was trained for combat to fight injustice in their land and also in the Man’s land. Diana can speak 180 languages, communicating with civilians all over the world wouldn’t be a problem. That’s how powerful and bright she is. The grail of Wonder Woman is, she believes the possibility that people could live in a world with zero existence of war and violence. This female superhero persistently fights for justice, with massive responsibility on her shoulder to gain peace. In the comic world where male superheroes are dominating, no doubt
pop culture
that Wonder Woman made her place. This character proved that man and woman can work hand in hand and the ‘man-hating’ in feminist culture is just a propaganda. Wonder Woman has been the iconic face in the Feminist Movement and has led the character to become UN champion for Women’s Empowerment and gender equality. According to the UN, the superheroine will be used to promote the message about women’s empowerment and gender-based violence. Truly, this sparks hope and change in the women’s rights movement. Due to the monumental popularity of Wonder Woman in 2017 played by Gal Gadot, the movie generated 800 Million USD in global ticket sales and won the ‘MTV Movie Award For Best Fight’ and several other prestigious awards. With the rise of superhero Hollywood movies, the classic Wonder Woman comics were in high demand. No surprise, the iconic DC comic of Wonder Woman was recorded as the most expensive female-led comic book issue to be ever auctioned, it was sold on eBay for almost 1 Million USD. This is great evidence that Wonder Women is an iconic character and she is a force to be reckoned with. No matter what land or the perimeter of the sky, women’s empowerment will find the silver lining and shines through. We may live in a different universe, where superpowers don’t exist, but in a world that is full of injustice, try to be our own kind of Wonder Woman.

pon entering, The Three’s interior is industrial chic with neutral tones; an open kitchen concept that welcomes diners to take sneak peaks of what’s happening inside. It is a clean and tidy interior, with large window panes that brightens the whole space. The Three has been in its current location at Lintas Square since they opened their doors in 2018. Its dining concept is contemporary cuisine; whereby The Three team aspires to offer diners a modern and distinctive dining experience. When we arrived just after lunch, the crowd was decreasing; Felix Chiew, co-owner of The Three greeted us with much enthusiasm. While conversing with Felix, first out was one of Three’s signature salads the Slow Roasted Cauliflower Salad from their starter section of their menu. Served with sweet potato hummus and nut dukkah, this warm salad is flavourful and healthy. The cauliflower florets are tender in the centre while crisping and hints of charring around the edges, on a bed of the most delicious and creamy sweet potato hummus and a generous sprinkling of a crunchy sexy nut dukkah, all pulled together with a dash of EVOO and sprinkled herbs. Best part, it is vegan and gluten free so everyone can pick up their fork and dig in.

The Three: Fusion Cuisine at Your Doorstep
Another crowd pleaser is their Beer Charcoal Battered Barramundi served with horseradish mayo and lemon wedges. Beer makes such a great base for batter because it binds together three ingredients—alcohol, carbon dioxide and foaming agents—each of which brings to bear different aspects of physics and chemistry to make the crust light and crisp. The barramundi here is tender and juicy and of course is super crisp too. The seamlessly smooth and punchy flavours of the horseradish mayo will make you want to eat it on everything. Horseradish sauce is mainly or usually served with meat but it sure goes well with the barramundi. The Pork Bao is constructed with miso-spiked Asian slaw, crushed peanuts and hoisin sauce. These are snack-sized and just slightly bigger than a slider. The marshmallow-like steamed bun is fluffy and soft. It cradled the pork belly, cucumbers, Asian slaw and crunchy peanuts quite nicely. The pork belly is slow cooked for 16-hours; is tender and juicy with a nice bark at the surface. With two thick slices per bao, there was plenty enough for each meaty bite. The miso-spiked Asian slaw contributed a slight tang and sweetness as well as a fresh quality and a watery crunch. Hoisin sauce is savoury with a salty punch and layered on a lightly sweet touch of umami. Oxtail is probably the most over-looked cut of beef. The Braised Oxtail Pappardelle is a perfect dish if you are in need of something delicious and comforting. It is delectable as the ragu is cooked until fall apart soft, tender meat with fat that melts in the mouth and into the sauce giving it that distinctive creamy mouthfeel. The
dish is topped with poached egg and grated parmesan cheese; it is the most succulent ragu. Oxtail is such an amazing cut of meat to cook with. Cooked long and slow it becomes so tender and melts in your mouth you will be begging for more. Drool-inducingly good. The Grilled Boneless Lamb Leg next is articulately plated with sautéed carrots, potatoes and long beans and topped with homemade mint sauce. The result is perfect, medium lamb that was tender and succulent. This grilled boneless leg of lamb dish will convert any lamb skeptics. While devouring the other dishes, the Cheesy Pork Chop was served to us. It’s definitely a throwback inspired by pork chops of the ’80s and ’90s. This porky-licious dish was cooked perfectly, crispy on the outside and lusciously moist on the inside. It is served with an awesome cheese sauce and a simple slaw. The Three also offers lunch/brunch special; we had their Fried Chicken Rice that is served with sunny side up egg and barbeque sauce. If fried chicken is your ultimate comfort food, this dish’s chicken is succulent and paired marvellously with the sunny side up egg and barbeque sauce; a sure promise to treat your taste buds. While The Three’s dessert selection isn’t a lot, I am told their Chocolate Fondant is a pretty hot item on the menu. When it was presented to us, I was immediately attracted to how elegantly it was plated; salted caramel, homemade honeycomb and vanilla ice cream. Chocolate is always an eager-to-please dessert and everyone’s guilty pleasure. From the warm spongy exterior to the alluringly silky liquid centre, this rich chocolate fondant is best when not shared and must be accompanied by a dollop of velvety ice cream. If you’re looking for the perfect place for an after-dinner treat or simply want to indulge in something chocolatey, spoon yourself over to The Three.
