Morgan Zimmermann the Billboard Bride

M

Morgan Zimmermann is a former cheerleader and cheer instructor. She met her fiancÊe, Jack Line, through a mutual friend and they’ve been dating for nearly three years.Although marriage had been discussed, Morgan had no idea Jack would pop the question on a trip to Napa. Jack planned it perfectly. He set up a private wine tasting with food pairing at Artesa winery where he asked for her hand. As soon as she said yes, the photographer Jack hired appeared and began shooting engagement photos in the beautiful Napa setting. -7-

Currently, Morgan works at a Houston-area wedding venue and understands issues brides encounter during this exciting time. She suggests focusing on the memories and important stuff: your dress, hair, makeup and the reason you are at the altar. It is about love and the feelings you have for your soulmate—the rest is just icing on the cake! “I am a firm believer in not stressing about the wedding planning process,” she says. “At times it can be overwhelming but you just have to remind yourself this is supposed to be a fun and special time— not stressful.” As she makes plans for her late Summer/

early Fall 2016 wedding, she is certain she will enlist the services of a videographer. “I think it is so awesome to be able to watch live footage from the big day,” she says. She looks forward to re-living the memories and catching moments she might have missed in real time. Lorie Speich from A Splendid Event coordinated the billboard bride shoot at picturesque Pecan Springs.Her specialty is taking a bride’s love story and portraying it to the guests through the wedding. When Lorie saw the beaded gown from Ventura’s Bridal Fashions it immediately became the inspiration for the shoot. The gown evokes a Tuscan, oldworld feeling. “Morgan looks like a princess,” she says. The photography team from Dream Photography and Video was on hand to capture every moment of the shoot. AJ’s Urban Petals created a custom table scape with beautiful flowers to coordinate with the look of the day. Morgan’s hair and makeup were transformed by the team at Simple Beauty Artistry. Linens were provided by LBL and Supreme Kakes provided the naked cake.

I was so caught up planning my wedding; I didn’t have the time to enjoy being engaged. The open-air restaurant overlooks the beautiful blue water, food is delicious and if you don’t want to leave the beach you don’t have to, servers bring your drinks and food to your cabanas. Seven other dining options are on property ranging from casual to experiential. Havana Blues is the best restaurant on property. The cuisine is Latin America meets Pacific Rim. It has a blue hue to it, open windows and doors looking out at the ocean. Our guests enjoy the skirt steak served with mashed potatoes and breaded asparagus. Puerto Rico is a small island in the Caribbean Sea. Discovered by Christopher Columbus in 1493 and settled in the early 1500’s by Spanish Conquistador Ponce De Leon. Puerto Rico was the gateway to the New World and whoever controlled the island and its deep harbor controlled access to the Americas.

The Spaniards spent nearly 300 years fortifying the area around the port, now called Old San Juan, with giant walls. Atop the walls are lookout towers, huge forts and heavy cannon. Soldiers scanned the horizon 24x7 looking for enemy ships. And enemies came! French, Dutch and British all tried take control numerous times and were turned

away by the Spanish forces and their cannons. Access to the city was gained through five gates in the giant walls. Every night at 6pm the gates were closed. If you were on the wrong side of the gates, you stayed there until morning. Inside the walls was a bustling city. Puerto Rico’s population exploded from a few thousand to nearly a million people by the mid 1800s, and all the needs of a modern society had to be met. Housing, shops, restaurants and markets lined the blue cobblestone streets (the stones were covered with slag from the cannon factories and shone a silvery blue). Churches were erected and it was standard practice for Spanish nobles to arrive in the harbor, walk through the main gate up the

Juan to see the damage the giant American guns could cause. Very few big shells were fired and little damage was done.

Old San Juan is amazing. Most of the city is still surrounded by the original walls; the cobblestone streets still shine blue and are lined with thriving businesses. You can stand outside the main gate on the dock and look up at the walls stretching around the city, 18feet thick and over forty feet high, and walk as the nobles did to the church; inside you’ll find Ponce De Leon’s tomb. The forts are in place and intact. Now museums, you can stand in the lookout towers and scan

the ocean as Spanish soldiers did for hundreds of years. Everyone speaks English and the American dollar is the official currency, but you feel like you’re in Europe.

Stay close to town: The Condado Plaza Hilton is less than five minutes from Old San Juan. It offers great ocean view and access to a private beach. It’s also connected to the bay where you can enjoy water sports such as kayaking and stand up paddle boarding. Opening the door to my room I am taken back by the picture postcard view of the ocean. From the 10th floor I’m mesmerized by the reflections of clouds and evening sun, as the water slowly turns from green near the shore to dark blue farther out to sea.

High in the Sky

At 9,200 feet above sea level, Cloud Camp’s guests are on the lodge’s porch enjoying Colorado sunshine. A storm is moving through Colorado Springs below and they watch from above the clouds as lightning strikes and thunder rumbles. The storm soon plays out and they look down at a double rainbow. Cloud Camp is perched on the eastern cliff of the Rocky Mountains. If one threw a rock, it would fall 3,000 feet nearly straight down onto The Broadmoor’s West golf course. From this

vantage point you can see across Colorado into western Kansas. The adventurous can climb 195 steps up through thin air to the old fire ranger lookout for 360-degree views from the peak. The antennas on the next peak over belong to the Cheyenne Mountain Complex, a military site and nuclear safe bunker hidden deep inside the mountain. The log cabin lodge is more than exquisite. The

long, airy great room has giant stone fireplaces on each end. Western art covers the walls and a long communal table runs the length of the room. Overhead, ornate light fixtures hang from heavy beams and illuminate Indian paintings on the high-pitched ceilings.Large porches and wrap around deck allow plenty of room for mingling and enjoying the views. Add in cuisine from The Broadmoor chefs and a rehearsal dinner here is truly majestic. Eleven cabins and six rooms in the lodge allow sleeping spots for 40-50 guests. The

Escalades over dusty, scenic mountain roads. The road to Cloud Camp goes through the middle of the Colorado Springs Zoo, with giraffes looking in on you and mothers pushing strollers out of the way. More adventurous guests mount up on long-eared mules that climb the trails. The third option is a challenging three-hour hike up 3,000 feet of elevation. Create your own experience.

Guests check in/out at Base Camp in The Broadmoor’s South Tower in Colorado

cabins (one and two bedroom) have great beds and little porches with rocking chairs, but most people are drawn to the beauty and activity of the lodge. The views, the bar, cooking demonstrations and art classes are in the lodge. Many guests sit on the deck playing cards and board games.

grace, a sales account executive, met Paul, a managing director, during a concert at Fitzgerald’s. Paul asked grace for her number; three days later, they went to dinner at sambuca followed by bowling at lucky strike. a year and a half later, while vacationing in rio de Janerio, Brazil, Paul surprised grace by proposing in front of the beautiful and romantic copacabana hotel; of course she said Yes! grace wore an elegant beaded ivory gown by stephen Yearick from Brickhouse Bridal when she walked down the aisle march 22, 2014 at First methodist, downtown houston. The ceremony in the old church was followed by a reception at the unique, modern 5226 elm. The gorgeous 3-tier vanilla cake with strawberry filling was styled with a monogram of their names and matching flowers. Paul also had a special groom’s cake in the shape of an authentic knight’s helmet.

Grace’s advise

grace’s advise to other brides is, “make sure to take it all in. i made a point to walk down the aisle with my father slowly and really take the moment in because the night flies by!”

at the end of the reception, they rode away in a vintage 1930’s convertible rolls royce. The honeymoon was six days in Bora Bora at the st. regis hotel, followed by six days at the Four seasons maui. Before visiting the Pacific tropics, a scuba diving course was great “premarital counseling” because of the teamwork involved. -melanie mcginness

lottie & Blaze met at texas tech university. They were married on the same place where Blaze proposed on the edge of Palo duro Canyon before their family Christmas party. They wanted an outdoor wedding that had a ranch/rustic atmosphere since this matches their backgrounds. lottie’s dress was the amazing karena royal by Maggie sottero. she tied her aunt’s wedding ring to her bouquet, she said,”i tied my late aunt Becky’s wedding ring to my bouquet, it was my way of having her as a part of it. she absolutely loved weddings and was such a wonderful help to anyone during their wedding planning”.

it all began when laislee spent the summer with her sister in Ohio. The austin, texas girl began working at On the Border and met shy and reserved Peter. Peter seemed interested, but had not made a move. so laislee took matters into her own hands and gave Peter her name and number on a silverware paper wrap. That night he called her and asked her out on a date. Peter proposed eight years later during a trip to south Padre island. They got married at Vuka Coop, an eclectic venue

with a beautiful backyard in the heart of austin. The Vuka ambiance is so impressive there is little need for additional decor. For example: our officiant read the same vows my grandfather read at my parents wedding; we included “our love story” in the programs- which were hand made by us; Ben threw my garter wrapped around a football because he was a former college football player; we had only our brothers and sisters in the bridal party, which made the day very intimate and our guests knew everyone standing by our sides.

For Jorden and Ben, syracuse University is more than just an institute of higher learning. it is where they met, where they fell in love, and where Ben proposed. They had returned to campus to attend a friend’s wedding. while taking a casual stroll through the quad, they stopped at Jorden’s favorite spot; Ben got down on one knee…”the rest is history!” Jorden says. They chose the Festival Hill music institute in round Top, Texas for the

ceremony and reception. Festival Hill has multiple venues on their 200-acre property. Ben and Jorden married at the edythe Bates old chapel. The Tuscany-inspired reception was held just behind the chapel where the newlyweds, friends and family, danced the night away. - marissa greteman

The two were immediately drawn to each other, but spoke no words…”it was love at first sight” Jim says. later that year, they bumped into each other at a local grocery store and knew they were destined to be together. after dating for some time, they went to Jamaica with a group of friends. on a Jamaican evening, the sky illuminated by the colorful sunset, he took Crystal to the pier and asked her to spend the rest of her life with him.

Taylor McQueen, manager at Bellacures, married derrik “Tyler” leBaron, a real estate agent at rogers Healy and associates,at the dallas arboretum on May 18th, 2014. They met at a mutual friend’s birthday party where Tyler boldly approached her and tried to start a conversation. Taylor didn’t pay much attention and blew him off; that didn’t stop Tyler from trying harder. Persistence is an attractive trait, and Tyler’s got her attention; she was new to town and barely knew anyone. They ended up clicking right away and even had a dance off. This was the start of their journey. Tyler has perfect timing; he proposed to Taylor on her birthday and turned a special day into a one she’ll never forget. He had a romantic picnic arranged at one of their favorite places, the dallas arboretum. There were flowers and champagne; little notes of affection hung from the trees. Things moved from “Happy Birthday” to “we are so good together.” it was an engagement, in a birthday party disguise. Tyler created a nostalgic playlist for background ambiance. when david gray’s “sail away” played, the lovebirds clinked

champagne glasses and Tyler revealed the diamond ring on his pinky. He got on one knee and popped the question. Tyler had more surprises up his sleeve; an engagement party at the Zaza Hotel with friends and family was followed by dinner at nobu. “Taylor remembers it as, “The best day of my life!” a beautiful botanical ceremony at the dallas arboretum took place about six months later; at the same spot they were engaged. Match made in Heaven

Jennifer, owner of a cake and pastry business, first met Benjamin, a ministry coordinator, at a young adults church retreat. family friends worked behind the scenes to strike a flame between the two. when it was time to propose, Benjamin’s plans for a picnic were rained out, but he was not deterred. He read Jennifer a special bible verse expressing his feelings, dropped to one knee and opened a box with a ring made of string. The Count of monte Cristo fans always joked they would have a string engagement ring.

They were married at ashton gardens in Corinth, Texas. Jennifer wore a dress from allure bridal designs she found at lulu’s in dallas and legacy Cakes in grapevine created the perfect cake. They enjoyed the vibrant waters of Playa del Carmen on their honeymoon.

Tree of love

Their unique guest book was made of old fence boards and featured a painting of a boy and girl sharing an apple underneath the apple tree. guests wrote their names on the leaves creating a memorable souvenir. – Yazmeen sahadi

There are so many variations of fish tacos that it’s impossible to claim an official recipe. Historically, I’ve made them from my day’s catch; redfish, trout, bass, perch, channel cat, flounder and shark have all flopped onto my tortilla. I’ve cooked my fish in the oven, cast-iron skillet, deep

fryer and over campfires. Sometimes, the fish is just “cooked” in the fridge covered with lime juice. However, my tacos usually have a combination of textures, flavors, fish and tortillas. Here, we decided to feature several varieties of fish, cooked using a couple of methods, and tied them together with the same condiments and sides. I didn’t have time to hit the beach and snag fish out of the sea, so I left my faithful fishing pole at home and headed

to Whole Foods. I prefer a thick fillet of Gulf Coast redfish, but settled for cod, salmon and shrimp. In the produce area were some excellent ears of corn, along with fresh ingredients for slaw, black beans and pico de gallo. A Mexican market had authentic tortillas, and Specs had margarita supplies. Here are the easy-to-replicate results of our latest taco experiment. Celebrate with your family and friends in style.

Frie� �s� CANOLA OIL AS NEEDED SEASONED FLOUR (AVAILABLE IN THE BAKING AISLE AT MOST GROCERY STORES) 1 EGG ⅓ CUP MILK 1-2 POUNDS FISH FILLETS, CUT INTO 1-X-2INCH CUBES (OR LARGE SHRIMP, PEELED AND DEVEINED) SALT TO TASTE 1. Preheat the oil in a deep fryer or frying pan to 375°F. 2. Pour the flour onto a dinner plate or into a shallow baking pan. Whisk the milk and egg together in a small bowl. 3. Drop the fish into the egg mixture to moisten it. Remove the fish and drop it into the flour; toss until coated. 4. Place the coated fish into the fryer and cook until the fish is golden brown and floats to the top, about 2–4 minutes. 5. Remove the fish from the fryer, place on paper towels to drain and season with salt.

1. Rinse the fish in cool water and liberally shake the blackened seasoning on all its surfaces.

2. Working in batches, melt 2 tablespoons of butter in a cast-iron skillet over high heat. (Hint: Be sure your oven vent works. It’s about to get smoky!) Place the seasoned fish in the hot butter and cook for 1–2 minutes per side. The spices will turn black and the fish will begin to flake.

Margarita� You can mix margs by the glass or pitcher. Just use any measuring device (shot, cup, gallon!), and mix 3 parts tequila with 1 part triple sec and 6 parts sweet-and-sour mix. Add a bit of lime juice, stir/shake and pour over ice. If you want to get fancy, rub some lime juice around the rims of each glass, dip in salt and garnish with a slice of lime.

Use a vegetable peeler to thinly slice the carrot. Place the shaved carrots in a bowl, add the cabbage and toss. In a separate bowl, combine the remaining ingredients and whisk until the spices dissolve. Pour the dressing over the cabbage mixture and toss to thoroughly coat; refrigerate for at least 2 hours.

1. Make the herbed butter: Combine the butter and herbs in small bowl. Cover with plastic wrap and set aside in the fridge. 2. Prep the corn: Fill a large bowl or pot with cold water; add the kosher salt and stir. Peel back the husks and remove the stringy silk. Return the husks to the corn and drop into the salted water for about 30 minutes. 3. Preheat a grill to medium-high heat. Place the corn on the grill and cook until tender, about 45–60 minutes, turning occasionally. 4. Remove the corn from the grill and peel back the husks. Cover with the herb butter and dashes of salt and pepper. Serve immediately.

1. Soak the beans overnight in the water. 2. Transfer the beans, along with the water they were soaked in, into a large stockpot over high heat. Add the bay leaves and cook until boiling. Reduce the heat to a simmer, cover and cook for 30 minutes. 3. While the beans are simmering, heat the olive oil in a medium skillet. Add the onions, bell pepper and garlic; sauté over low heat for 5 minutes. Add the olive oil mixture to the pot of beans along with the cumin, oregano, sugar, pepper and salt. Continue simmering until the beans are tender, about 1 hour. 4. Add the vinegar and wine and simmer uncovered for an 30 additional minutes.

Prime rib is one of the most impressive cuts of meat you can buy. If the butcher slices it into steaks, he gets marvelously marbled rib eyes. But when left in tact and cooked as a roast, prime rib takes on a unique taste and texture. Also called a standing rib roast, prime rib is commonly purchased with the bones at-

tached; shoppers can choose to buy roasts from two (feeds four to six) to seven ribs (feeds 15 to 20). Covered with seasonings and roasted bone side down for 14 minutes per pound, the meat comes out flavorful and juicy. The end cuts are well-done while the center remains sinfully rare. Carved on a platter, it is truly impressive.

1 (20-POUND) PRIME RIB ROAST, AT ROOM TEMPERATURE 1½ CUPS KOSHER SALT 2 TEASPOONS FRESHLY GROUND BLACK PEPPER 6 TABLESPOONS MCCORMICK GRILL MATES (SPICY VARIETY IS RECOMMENDED) 1 TABLESPOON DRIED BASIL 1 TABLESPOON DRIED SAGE OLIVE OIL FOR COATING 1. Preheat the oven to 500°F. 2. Combine the salt, pepper and spices in bowl. Wash the roast, pat dry and coat with olive oil. Rub the seasonings into the meat and place bone side down in a sturdy, foillined baking pan. 3. Place in the oven for 15 minutes. Reduce the heat to 325°F and roast until the internal temperature reaches 130°F (for medium-rare). 4. Remove from oven; cover with foil and let rest for at least 30 minutes.

Prim� Rib Although most sources quote 15 minutes per pound for a medium-rare roast, that time can vary based on the shape of the roast and starting temperature. For this party, we cooked two 20-pound roasts in two different ovens; they cooked in three hours (nine minutes per pound). Be sure to use a meat thermometer, and check the temperature oſten. - 249 -

In a medium stockpot, combine the wine, onion, soy sauce and butter and bring to boil. Add the mushrooms, cover and cook until tender, about 10 minutes.

1. Preheat the oven to 400°F. Toss the eggplant in some olive oil and season with salt and pepper. 2. Heat about 1 ⁄3 cup olive oil in a cast-iron skill and brown the garlic. Add the herbs and sauté for about 15 seconds. Place the eggplant into the oil, skin side up, into the pan. 3. Preheat the oven to 400°F. Combine all the ingredients in a large bowl and toss to coat the potatoes. Pour into a 9-x-13-inch baking dish and bake until the potatoes are tender and beginning to brown, about 30 minutes.

For the raspberry sauce: 1½ CUPS RASPBERRIES (PLUS MORE FOR GARNISH) 2 TABLESPOONS SUGAR

Chocolat� Cheesecak� 1. Preheat the oven to 325°F. 2. Make the crust: In a small bowl, combine the cracker crumbs and sugar; stir in the butter. Press onto the bottom of a greased pan. Place the pan on a baking sheet. Bake for 10 minutes; cool on a wire rack. 3. Make the fi lling: In a large bowl, beat the cream cheese and sugar until smooth. Beat in the cooled chocolate chips and cocoa. Add the eggs; beat on low just until combined. Pour over the crust. 4. Place into the oven for 55–60 minutes, or until the center is just set and the top appears dull. Cool the cheesecake on a wire rack for 10 minutes; loosen the edges from the pan with a knife. Cool for 1 hour longer; refrigerate overnight.

5. Meanwhile, make the ganache: Place the chocolate chips into a small bowl. In a small saucepan, bring the cream and sugar just to a boil. Pour over the chocolate; whisk until smooth. Cool to reach a spreading consistency, stirring occasionally. 6. Remove the rim from the pan. Spread the ganache over the cheesecake to within 1 inch of the edges. Refrigerate for 1 hour or until set. 7. Meanwhile, make the raspberry sauce: In a blender, puree the raspberries and sugar until smooth. 8. To serve, drizzle the raspberry sauce over slices of cheesecake.

I

I start with an overall party theme and build on it through the planning process. Often I envision the whole party, and then get to the linen store. Picking out linens always seems to shake my plan; creative energies shift when you see the linen in person. In this case, I abandoned my bold color idea and went with softer pinks and creams; I added bright teal accents that really popped. A cream overlay linen cut in the shape of flowers was perfect for the main dining room table with darker pink linen laying beneath. When I added red, yellow, lavender, pink and white roses, every aspect of the décor blended beautifully. The floral arrangements had the right amount of boldness on top of soft linens. When you choose pieces of your decoration, find pieces that you truly love. Find your color schemes, mix and match bold and light colors to blend.

This huge event is held twice annually and draws marriage-bound couples from all over Texas and beyond. They find invaluable resources and register to win honeymoons and shopping sprees.

The New York style runway was packed on Saturday and Sunday as attendees viewed fashion shows from Damsel White Label, Impression Bridal, and The Princess Bridal. On Sunday morning, brides were entertained by Randy Fenoli, star of “Say Yes to the Dress.” VIP brides enjoyed an exclusive event starting in the Couture Lounge. Lewis Grell of LG Entertainment rocked the house as brides and their friends sipped champagne and received swag bags. Then they paraded through the convention center behind a live musician to the exclusive DJU Productions Couture Stage. The Couture fashion show, produced by Todd Ramos, featured gowns from The Princess Bridal, Nima Boutique, Impression Bridal and Winnie Couture. The fashion show was accompanied by live music from Divisi Strings. You never know who you’ll meet at the Extravaganza. Clinton Kelly surprised everyone and made an appearance at the Macy’s booth!

A new addition to this two-day event was widely received: Beyond the Basics Wedding Seminar.
