EXCLUSIVE: Inside The Salt Room the city’s smartest new restaurant With only days to the official opening of The Salt Room, owner RAZAK HELALAT speaks to Greg Hadfield about his ambitions for the modern fish and seafood restaurant on Brighton seafront. Tell us about your background? Coming from a Persian background, eating and food has always been an integral part of daily life. When I was at university in London, I had a job with Corney and Barrow in my early 20s, and then - when I moved back to Brighton - I had a job at Brown’s. Initially, I worked on the floor in the restaurant and then became a manager. I later joined The Ginger Pig, when it first opened in 2007, where again I started working on the floor and later became a supervisor. I always had thoughts of opening up my own place but it was while I was working at The Ginger Pig - and after meeting my now wife - that I decided to actually go for it. I did a course at Plumpton College and started to look at suppliers for different produce and then started to look for potential sites to open my first restaurant. This whole process took about three years before the doors to The Coal Shed were eventually opened in September 2011. Tell us a bit about The Salt Room, and the history of the site As I had looked round so many different sites before finding 8 Boyces Street, where we decided to open The Coal Shed, I had continued to keep my ears close to the ground on other potential sites for good restaurants over the past few years. Having lived in Brighton most of my life and having lived in a flat on the seafront as a child, I have always felt that the key to Brighton's charm is its seafront and the spectacular view of the piers. On my daily commute into Brighton to The Coal Shed, I would go past Bar 106 and always felt that it would make an ideal place for a
really good fish restaurant given its amazing location and great terrace. It was after enquiring about the Hilton's use of Bar 106 (as it had been shut for several years) that their general manager at the time invited me to put forward a business plan and proposition for The Salt Room. After several meetings and discussions, they agreed to give us the lease and so the hard work began What can we expect on the menu? The menu will offer a wide selection of sustainably-sourced seafood dishes, including impeccablyfresh cuttlefish, oysters, lobster, sea bass, and our signature whole market fish to share cooked over charcoal. The legendary Coal Shed classic - 35 day dry aged Scottish steaks from the North Highlands cooked on the Josper grill - will also be making an appearance. You’ve already made a success of The Coal Shed. Will you be doing anything differently at The Salt Room? It's all about great produce, well

1976 | Friday, February 13 Dr Desmond Morris opened the new galleries at the Booth Museum in Dyke Road. Constructed in quite an isolated position in 1874 by Thomas Booth to house his collection of stuffed British birds displayed in their natural habitats, the building now houses one of the country’s largest regional natural history collections with 621,000 items, including butterflies, moths, insects, skeletons, reptiles, mammals and geological exhibits.

Temporary planters have been placed along Viaduct Road in Brighton to calm traffic and make the city’s “gateway” more attractive. The square planters are intended to prevent drivers breaking the 20mph speed limit along the residential road. More than 11,000 vehicles travel along it every day; more than half go faster than 30mph. Motorists say the planters make the road more dangerous, with cars swerving to avoid them.

Muesli Mountain. It is a cliché in every local newspaper article about politics in Hanover and Elm Grove. Stereotypically, it is the denselypopulated domain of healthy-eating, Guardian-reading, tree-defending, nofracking, caring professsional couples, with 2.4 bicycles. The victory of Emma Daniel in a by-election in July 2013 overturning a Green majority of more than 900 - galvanised Labour activists into believing they really could turn the Green tide in the city. Ms Daniel new to party politics, but with a good heart and an established third-sector record - helped engender a long-lost sense of momentum among Labour grassroots. Several factors were on her side: a refuse workers' dispute that split the Greens; a concentrated campaign by Labour's small army of "super-activists" from across the city;and - crucially, perhaps - a vote during the university holidays. More than one in four residents are students aged 18 or older. Can the momentum be maintained on May 7? Well, a refuse workers' dispute is beginning to boil again and Sussex University term does not start until May 11. It is certainly possible the Greens can regain lost ground. But if Labour win all three seats, they would be heading for majority control. The Green Party has organised a meet-the-candidates meeting at The Hanover public house in Queen’s Park Road at 7pm on Monday (February 16).

FotoDocument, the Brighton-based not-for-profit arts education organisation, is inviting residents of Brighton and Hove to submit photographs illustrating one of the 10 "One Planet Living" principles for sustainability - and reflecting the people, landscape, and character of the city. Some of the city's earliest petrol pumps could be added to a list of historic landmarks. The council is seeking feedback on a draft list of heritage assets proposed for "local listing" - including two defunct 1950s petrol pumps at Bath Street, near Seven Dials. The former garage is now a private house. Bill Randall, lead councillor for heritage (pictured) said: “Local listing is very important to raise the profile of these assets so everyone is aware of what is in a locality if change is proposed."

VIP invitations have been sent to leading figures in Brighton and Hove, offering the chance to meet Mike Gilson, who takes over as editor of The Argus on February 23. A chance to meet Mr Gilson - at the Grand Hotel on March 30 - costs only £30 (+ VAT), including a glass of wine and a two-course lunch, at an event that marks the 135th anniversary of the newspaper which has gone more than three months without an editor. The invitations came as it was reported Newsquest, which owns The Argus, is charging students £120 to write articles - without pay.
Lewes Road has won an award for the most improved journey to work. A development scheme converted the existing 4.5km long dual carriageway between Vogue Gyratory and Falmer into a single carriageway, with a dedicated bus lane and a widened cycle lane. The council added pedestrian and cycle crossing facilities along the route. Monitoring showed a 14% increase in cyclists using the route; general traffic on Lewes Road reduced by 13%.

A Hove school has won a share of £2 billion funding to improve one of its buildings. The government money was awarded to Hove Park School and Sixth Form, one of 277 schools to bid successfully for capital funding as part of the Priority School Building Programme. The average award is expected to be about £7 million.
Professor dies Sir David Watson, who was important in securing university status for Brighton Polytechnic, has died at 65. Sir David was vicechancellor from 1990 to 2005. The university’s board of governors have supported a proposal to name a new building and library in his memory.

Us by David Nicholls This is a deeply-felt book, written by the master of the light hand. It covers the long-forgotten joys and upsets of a marriage. Love in all its forms is between these pages. And, if you loved One Day, I can guarantee that this will soon become a favourite re-read. I can think of no writer other than William Nicholson, who writes about married love with such warmth, understanding, and affection. It also helps, of course, that it’s very funny indeed. Connie and Douglas are going through a bad patch in their marriage, but a grand European holiday has long been booked. Connie decides that they should go ahead with it, so they and their troubled son embark on a
family Grand Tour. The results are everything that you could possibly hope for. As we whizz through various European countries along with a picked-up busker, forgotten passport, heatwaves, and sunburn - the book jumps backwards in time to pick up on the courtship of Connie by Douglas. She’s the arty one. He isn’t. Or so he thinks. I defy anyone not to fall a little in love with Douglas. Naturally, the writing is deft and polished and accomplished - and the plot is dazzling, with subtle complexities. This is an honest portrayal of a marriage in trouble and we are never in any doubt as to who the winner will be. Love steals the crown. Joy, sadness, laughter, and tears are all mingled in this wonderful book.

What qualifications do I need? You don’t need any qualifications to study with us, just a desire to learn and commitment to stay the course. For certain qualifications, such as our Level 2 or 3 qualifications, you may need to study at a lower level first. How much will it cost me? Some courses are free - for example, all our English and Mathematics courses, including GCSE, if you do not already have a grade C. If you are receiving benefits, many other courses are also free, or cost just £10. This is the year the crisis in local government funding hits home. Local authorities up and down the country have made huge savings to cope with tens of millions in cuts by the Conservative-led government. Now, services will be hit - and some smaller councils may go bankrupt entirely. With annual cuts of more than £23 million, totalling about £100 million by the time the planned cuts end, Brighton and Hove City Council is facing a decimation of the services it provides to residents. The situation is not sustainable. With councils taking on growing costs in public health and social care, and government funding to councils being cut, a new solution to local government finance is needed. The Green Party proposals to increase council tax by 6% won’t stop

So, in real terms, our income has fallen well behind inflation, let alone the huge scale of government cuts we face.
We have a moral duty to protect services for our most vulnerable residents, our elderly neighbours, and our children. That’s why we are proposing a 5.9% council tax referendum to ask your support for putting a bit more in the budget to help protect those essential services. The 5.9% rise advocated by the Greens would raise just 0.8% of the council’s budget. We don’t know if the proposed budget is workable and if money is being spent effectively or even allocated in the best way for our city’s residents. Just taking slices of money away from each council service doesn’t work. The council needs to draw up a budget, starting again from zero, justifying the allocation of funds to every area of council spending. Lib Dems propose this exercise for 2016-17 and for 2015-16, council tax should be frozen. We will be proposing creative ways the council can generate income apart from raising the council tax.
Spending has to be prudent - but we have now reached crunch time, writes Leigh Farrow for UKIP. I have been in contact with council officers and been told the council has general reserves of £39 million. It is recommended that £9 million has to be held in reserve, but that leaves £30 million that I believe can help protect frontline services. The council has land and buildings worth, at March 31 2014, £1.171 billion. It's a huge amount, even though there are restrictions on what you can do with any money raised from their sale. Furthermore, there is another £43 million in investment returns. We are in such a financial crisis that I believe the council should use all the resources it has access to. We have reached crunch time - and we do not want to lose our youth services, our community services, or our children's centres.

Boats, planes, trains, and more at Modelworld 2015 Modelworld, the hugely-popular model exhibition, returns to the Brighton Centre on Friday, February 20. In addition to the usual collection of boats, planes and trains of all shapes and sizes, this year's threeday event will also feature Daleks, Lego models, a boating pool, dolls' houses, circuses, and fairground displays - as well as a range of trucks and tanks. In addition, Neil Gough, the
Sussex steam engineer, will bring Gigantic, his faithfully-restored traction engine, in tribute to the people who died in the First World War. Throughout the exhibition, the engine will do what it was built for: hauling the huge Howitzer Field Gun and the crew's living van through the streets of the city every day. Another steam attraction will be the biggest-ever display of five of the fifth-full-size railway
locomotives that are usually hidden away at the strictly-private Ingfield Light Railway, near Horsham, a line that is managed by Chris Knibbs, manager of the Bluebell Railway, in the grounds of Ingfield Manor School. Chris English, Modelworld's joint exhibition manager, said: “The 2015 show is set to be one of the best modelling exhibitions in the city to date and we really want to prove to families that there is
something for everyone no matter their age. "We are obviously delighted that we have been going strong for 37 years and, most importantly, that the modelling industry is still alive and gaining popularity every year. We look forward to welcoming both new and old faces to the exhibition and I hope all of

The sense pregnancy conveys that your body is not quite your own is also paving the way for what’s to come, preparing you for those moments when your toddler will approach and interact with you as their very own ragdoll. And it wouldn't be true parenting preparation, if it didn't have frequent moments of feeling absolutely clueless. You know the sort of thing..."It's the first Sunday after the full moon, so can I eat brie or not?" It's easy to see how this morphs into "Is it okay to let my precious little one wee in her daddy's shoes, if it makes her giggle with pure delight?" A celebration of the nature and human life of old Sussex Graham Chainey
One sweltering day in August, 1899, a middle-aged man lies on the top of Kingston Hill, near Lewes. The wind is fierce, the view hazed. For two or three hours, he lies motionless, gazing in rapture at the silvery thistle down, as it leaps up in its thousands to fill the sky. Using binoculars, he can make out higher and higher layers of it drifting upwards. He recalls how, as a boy, he once galloped on the Argentine pampas through a valley filled like a lake with thistle down, how his horse shied in terror as it plunged into this drifting phantasmagoric stuff. The opening pages of WH Hudson’s Nature in Downland (1900) are at once arresting and typical of his highly-personal take on nature. This is no dull inventory of flora and fauna. While his eye for detail is prodigious - down to the tiniest insect or plant, the tiniest nuance of colour, sound or mood - there is always a human interaction between observer and observed. It is a book all lovers
of Sussex and the Downs should read. The springy turf, so delightful to walk on, Hudson notes, “is composed of small grasses and clovers mixed with a great variety of creeping herbs, some exceedingly small. In a space of one square foot of ground, 20 or more species of plants may be counted, and on turning up a piece of turf the innumerable interwoven roots have the appearence of coconut matting.” He notices how, after he has lain on it, his clothing carries its aroma; when he wakes next morning, the air in his bedroom is “charged with it”. He studies the behaviour of flies. “One big yellow fly like a honeybee comes directly at you with a loud hostile hum or buzz, hovers for a few moments, dashes away in a straight line, turns off at a tangent, and, rushing back again, proceeds with extraordinary velocity to describe curves and circles, parallel lines, angles, and

other geometric figures, in the air; and finally drops down within a few inches of you, to remain motionless." He grabs moles, dandles adders, converses with shepherds, chats on Goring beach with a man feeding his horses with seaweed - “they ate it greedily, as if it had been the most fragrant new-mown hay” he admires the long-horned red Sussex oxen ploughing at Stanmer, he listens to a hundred invisible skylarks. He is robust in opinion. He detests bird-trappers and shooters, keepers of caged owls.
He stalks out of a church (it is at Singleton) containing a monument to a huntsman. He ridicules a man from Ringmer who has never heard of Gilbert White, one from the Isle of Wight who has never heard of Tennyson. He wants gibbets brought back “to suspend our universally abhorred scorchers by the neck until they were dead, dead, dead, and food for crows and pies” (I am not sure who these “scorchers” were). Brighton he calls “Islingtonby-the-Sea”, over-populous, full of “ragamuffins”, with “trumpetblasts” of fried-fish smells. As for Chichester, Hudson devotes a chapter to excoriating its stink
of “old forgotten cesspools”, its excessive pubs and inebriety, the miserable sights and sounds of its cattle market, its depressive atmosphere - always getting there “the malady commonly known as ‘the chichesters’, from which many persons who visit this town are said to suffer” - and even the colour of its mud. “Before departing never to return, I stepped aside from the road, and very carefully wiped the ash-coloured mud from my boots on the wet grass, for I wished not to take any of it away.” Graham Chainey is a freelance writer living in Brighton and Hove
Valentine’s Day Confusion As a Collaborative Family Lawyer and Mediator working with separating couples one of the key messages I try and get across to my clients is that divorce is a process not a one off event.The journey will of course be painful at times but with patience and as much mutual respect as you can muster you will get through it.And the good news is that even if they aren’t in love anymore many couples I work with in time can be friends. Many will move on to happier times as individuals. But every February when the shops and restaurants around Brighton become a haze of pink and red hearts and flowers in the name of love I am sensitive to the fact that for some couples Valentine’s Day is an unsubtle reminder that their relationship isn’t what they hoped it would be. Valentine’s Day for couples going through separation also presents its own unique set of challenges. When a couple seeks advice about the legal separation process, even if the split is mutual, quite often one partner is driving the process more than the other. Sometimes one desperately wants out of the relationship and the other wants to try new ways of trying to save things. So the lead up to Valentine’s Day often means hurt, and confusion. And there are couples who, though not on the
brink of divorce feel an emotional distance that has them wishing there was far less fuss around February 14th. One party might love to plan a romantic dinner but doesn’t know if their partner would feel too pressured. Sometimes it can be tempting to use Valentine’s Day as a desperate attempt to win your partner back – even though you both know it is over. We’re separated. Should I even email or text my partner around this time, is a conundrum I often hear. In my mediation work I spend time helping both partners understand what mediation involves. Explaining as much what it isn’t as what it is. Both parties need to understand that mediation is not a process whereby I am helping the couple get back together (even if deep down that is what one party wants). The spirit of mediation is to be mutually respectful, keeping in mind you were happy once and that with support via this fair and open process practical issues can be agreed. In time if a couple can get help in managing the end of their relationship in a way that is transparent and respectful then in time they can move on and one day cherish the romantic times they once shared.

Pain is defined as an unpleasant feeling that is conveyed to the brain. Chronic pain is debilitating, yet people and animals learn to cope with pain and often hide it well. Usually pain in pets is associated with subtle signs of inability or discomfort. This might include stiffness on getting up, or hesitation before climbing steps or getting into the car. Pain in some animals may be as subtle as a reduced appetite, lagging behind or becoming distracted on their normal walk. Occasionally pets might cry out when pain is severe, but generally they live with it and continue much as normal. Limping allows briefer weight bearing, and reduces
pain associated with that movement - but limping is not normal. We will all suffer chronic pain at certain points in our life, particularly as a consequence of ageing. People can freely take steps to manage their pain with medication and lifestyle changes, but we need to think about this in our pets too. So when you take your dog for their next walk, or you watch your cat mooch around the house, look for their subtle cues warning you they are uncomfortable. Artist Anon - which makes and sells urban apparel from the newly-refurbished West Pier arches on Brighton seafront - is fighting back against the idea that we should all wear America or Japan on our clothing. It aspires to a unique take on the "SoCal" (Southern Californian) and vintage look - "with a twist of Brighton madness". It was 2012 when Mars Miller founded Artist Anon, originally an online enterprise selling and making t-shirts from the spare bedroom in his house. He said: "We progressed on to sell our wears at all the fantastic local festivals and events in and around Brighton. Bringing us to where we are now, being privileged enough to have graduated to our own fantastic shop on Brighton’s seafront."
A lot of stock is still made on the premises, allowing customers to choose from the t-shirt range and have them made up in pretty much any colour or size. Children can also design their own t-shirts, drawing a sketch on a table in the shop and including their own name.

City saving 2 million litres of water a day With Southern Water nearing the end of its five-year programme to provide customers with water meters, Brighton and Hove households are each saving, on average, 50 litres of water a day. With 42,000 meters installed across the city since the pioneering water-saving programme began in 2010, that means that Brighton and Hove is saving a whopping 2.1 million litres of water per day - nearly enough to fill an Olympic-sized swimming pool every day. The metering programme is a central part of Southern Water's long-term plans to continue to secure reliable drinking water supplies across the often drought-affected South East region, in addition to reducing leakage and investing in schemes such as underground reservoirs, water re-use and desalination. Metering is the most cost-effective option for customers, particularly as the technologically advanced meters being installed provide an automatic leak-detection facility.
Metering is also the most environmentally friendly solution as the water savings mean that less water is extracted from rivers and less water is treated. That means using fewer chemicals and consequently reducing the number of road tanker deliveries, making an environmental impact on less fuel and pollution. The metering programme is accompanied by an information campaign to advise customers how, by adopting some simple water-efficient tips such as turn off the tap when brushing your teeth or only use a dishwasher with a full load, they can reduce their water consumption and have a positive impact on bills. The reduction in demand for water has led to 62 per cent of metered households across Southern Water’s region saving on average, £162 a year. Energy bills are also affected because heating water makes up around 30 per cent of the average household’s energy bill.
For a minority of customers, water bills have increased but Southern Water has introduced the Changeover Tariff which phases in the price rise over a three-year period, giving customers time to manage their water use. The company has also introduced a Support Tariff to help customers who have genuine difficulty in paying. This is conditional on agreeing to a free Home Saver Check carried out by a Green Doctor who fits free water efficiency devices such as tap aerators and low consumption shower heads. The company is presently trialling a Customer Portal which extends services to customers allowing them, for example, to view their usage history so that they can have more control over their accounts, and in the near future will introduce a Social Tariff, offering discounts of up to 90 per cent, to make sure that the most vulnerable customers receive bills they can afford.
One of my clients under-priced on a piece of work the other day. Her customer emailed her to thank her for the job and suggested that he pay her £600 instead of the £400 she had quoted. It would be lovely if we all had customers who were this honest and thoughtful. But most of us don’t have this luxury and we have to guess at our pricing. This is particularly true for creative businesses: the web designers, coders, architects, copywriters, and photographers of Brighton and Hove. Setting the right price is one of the things that I work on a lot with clients. Over the past 14 years of helping hundreds of businesses in the city, I’ve probably seen two where their pricing has been too high. That’s right, just two. Pretty much everyone else’s prices have been too low.
And that means that they’ve not been making enough money. Which is where I start to thump my fist on the table and insist that businesses charge better prices, because I see far too many companies where the owner is not making enough money to live a decent life - or is kept awake at night worrying about cashflow. I’ll be running a workshop on pricing for creative businesses on Thursday (February 19), as part of the Brighton Chamber’s Ride the Wave programme. As part of its consultations before drafting the current budget proposals, Brighton and Hove City Council undertook a survey of a random sample of 3,000 households. The results - based on a total of 502 responses - are regarded to be representative of what citizens think, give or take 4%. Which is pretty much as accurate as it gets with surveys like this. Details were reported last night (Thursday) to the council's powerful policy and resources committee at its final meeting before the all-important budgetsetting council on Thursday, February 26. They make for fascinating reading. Our four-page report – and the illustrations it contains - summarises the findings of the report prepared for councillors. Residents were first invited to rate - as high, medium or low
- the priority they would give to different service areas for themselves and their family, then to do the same for the city as a whole. Compared with last year’s results, the proportions rating services as high priorities are lower - and the proportions rating services as low priorities are higher. Which suggests, according to council officers: "The scale of the budget challenge may be better understood this year". The top five priority areas with the biggest proportion rating high priority for the city - were: education (74% high); public health (73% high); refuse collection, disposal and recycling (62% high); children’s social care (60% high); and public safety (57% high). With the exception of public health, which was not asked about in last year’s survey, all service areas have lower priority ratings this year: education was rated the highest priority for the city by 74% of respondents, with just 3% rating it a low priority; for respondents and their families, education
received a lower rating (50% high), but was nonetheless the fourth highest ranked service; public health had the highest priority rating for respondents and their families (65% high) and was rated even higher for the city as a whole (73% high), - although 1% below the top priority of education; refuse collection, disposal and recycling received high and very similar priority ratings, regardless of whether respondents were rating it for themselves or the city (63% and 62%, respectively); children’s social care had a high-priority rating, especially when rated for the city - with 60% rating it high - although only 30% rated it high for themselves and their families (it ranked 6th out of the 13 service areas asked about); public safety, like refuse collection, disposal and recycling, was rated very similarly for respondents themselves (55% high) and the city (57% high). The bottom five priority areas with the biggest proportion rating low priority for the city - were: central Services (33% low); Council Tax Reduction Scheme (31% low);

highways and traffic Management (24% low); adult services (21% low); and planning and economic development (19% low). As in previous years, central services was the lowest-rated area with just 11% rating it a high priority for the city - and only 9% rating it high for themselves. A third of respondents rated it a low priority for the city. So where would citizens cut, increase, or maintain funding? Respondents generally did not want funding reduced, with
most opting to either maintain or increase spending for all areas. Notably, 42% would reduce funding for the Council Tax Reduction Scheme (for the 16,000 poorest households), 41% would reduce funding for central services, and 39% would reduce it for highways and traffic management. The only service area where at least a third wanted funding increased was public health, with 34% saying they would increase >> Continued on page 24

on the council’s finances: 13% of the sample felt that council tax should rise, a notably larger proportion than the 6% saying it should in response to last year’s survey. Some 39%, however, thought that it should never rise, while 48% felt an increase in council tax could be justified in certain

As in previous years, there was significant support for easing pressure on the council’s finances through more fines for antisocial behaviour - such as littering, dog-fouling and noise, with 89% of the sample saying they would support raising money by way of such fines; only 2% said this should never
happen. The majority (61%) also favoured charging residents and non-residents different rates for attractions. This year there was more of an appetite to increase charges for attractions, with 42% in favour. Last year, respondents were divided about increasing admission charges for
attractions, with similar proportions in favour (26%) as opposed (27%). Some 49% of respondents were opposed to increasing revenue through raising parking charges, a slightly lower proportion than last year (55%). Respondents were asked - in the financial context - what they
would stop doing, or do less of. Comments clustered around reducing or cutting services, staff and benefits. Stopping traffic, cycling and parking initiatives was a close second with 44% suggesting making fewer changes to transport infrastructure. Looking in more detail at what respondents

We all know that London Road has seen something of a food revival recently - with some even likening the half-mile stretch as “the new Shoreditch”. Personally, I wouldn’t go that far, but that doesn’t mean to say London Road isn’t home to some London-esque food. A recent opening is The Joker, a pub opposite Duke of York's Picturehouse and formerly known for many years as Circus Circus. The latter served mediocre Thai food and didn’t exactly fit in with the “new” London Road vision. The Joker however, fits in perfectly. Yes, the pub is dark and yes the bar-staff look like they couldn’t give a monkey's. But, guys, this is cool at the moment. The booze is reasonably-priced, although sadly lacking any big craft or independent names. But, The Joker plays good music; think independent bands, punk, shoe-gaze, and 1980s synth/ electro. A perfect mid-week hangout spot, if you like that kind of thing. It’s clear that The Joker wants to branch out into emerging trends hence the reason for choosing chicken wings as the fuel to accompany alcohol. And not just any run-of-the-mill wings, award-

Running the kitchen at The Joker is Orange Buffalo’s first venture outside of the big smoke and they have wisely chosen Tom, from local street food company Wing Shack, to oversee the day-to-day business. Firstly, the homemade sauces are all brilliant. Ranging from a mild, sweet and sticky BBQ, to the infamous "Viper", Orange Buffalo’s hottest sauce, admittedly none of which I tried for fear of ruining my tastebuds permanently. But rest assured, it is a scorcher. My personal favourite was the Woof Woof, made from Scotch bonnet, Dutch and naga chillies. It was smooth, a little bit fruity, and just the right amount of heat: not too intense and not too mild. Paired with a tangy blue cheese dip and shop in the city exploits it's tenuous link to what is essentially a religious celebration. From cheap chocolates and petrol-station flowers, to mixtapes, balloons and a cuddly toy it's like a modern-day Generation Game. There are profit margins to be made for every type of retailer; gone are the days when Clintons and Thorntons had the monopoly. Not ones to miss out on an exploitative opportunity, let's
traditional celery sticks, the Woof Woof I would recommend to any wing enthusiast. The Vincent is also worth trying for its intense mango flavour. The wings themselves, served in shack-style baskets, were slightly drier than some I’ve had before, possibly due to being double fried. But the skin was crispy even while drenched in warm, hot sauce. Tearing fleshy, free-range chicken off a bone has an almost caveman feeling to it, something I enjoyed while slathering my face in spicy, messy sauce. Dirty I know, but these are buffalo wings - the ultimate messy street food. Reasonablypriced, too: eight wings and two sauces cost a mere £7. And if you’re in the mood for filling up, sides of curly fries or hand-cut chips are £3. Orange Buffalo also serve NYCstyle salt-beef deli sandwiches and an epic-sounding vegetarian burger with beetroot, chestnut mushrooms, and tofu. Overall, it was the sauce that really made these birds fly. Washed down with a pint of something cold and hoppy, I would have no trouble returning to Orange Buffalo. They clearly didn’t win best in London for nothing. Cod Beignet, with sauté wild mushrooms and a warm Vichyssoise topped with a garlic foam (Serves two) Ingredients One leek One Maris Piper potato 250ml whole milk 100g wild mushrooms Three cloves of garlic
250ml skimmed milk 150g fresh cod loin 50g butter 3g salt and pepper 5g chives 10ml olive oil
250ml water 125g margarine 250g plain flour 2g salt Six eggs
Method Beignets: Preheat a deep-fat fryer to 180C; bring the water and margarine to the boil in a large saucepan; sieve the flour and salt, then slowly fold in the water; beat for five minutes until cool; slowly add the eggs; flake the cod into small pieces, then mix that with the beignet mix; keep to cook later. Slice the mushrooms and purée the garlic cloves. Peel the potato and wash the leek; cut both into 1cm dice. Melt 50g of the butter in a pan; add the potato and the leek; and sweat off. When softened, add the skimmed milk and allow to boil. Add two garlic cloves to the whole milk and allow to simmer and infuse for about 10 minutes. Sauté the mushrooms in 10ml olive oil; and add the third garlic clove and the mushrooms. Make the beignets into small balls and deep-fry for three minutes until golden. Use a hand-blender to blend the Vichyssoise until smooth and pass through a sieve.

Should you spend money on a property you are about to sell? The basic rule of thumb here can be summed up in two well-worn sayings: “less is more” and “price doesn’t equal value.” In other words, while little things like a good spring clean, touching up the paintwork and tidying the garden can definitely be beneficial, any major outlay is likely to be uneconomic, since you almost certainly won’t recoup the full cost when you sell. Try thinking of it in car terms. Just because you have spent £1,000 on a new gearbox does not make your car worth £1,000 more than before. On the other hand, a good going-over with some T-Cut and a chamois leather can work wonders. Just ask any car salesman! OK, so cars are a depreciating asset, whereas houses generally are not. Nevertheless, the same rule applies. To take an extreme example, let’s look at the roof. As with cars and their gearboxes, people expect houses to have a
reasonably sound roof. So, if it’s just a question of a couple of loose or missing slates letting in a bit of water, and a satisfactory repair can be effected at minimal cost, then it’s definitely worth doing. On the other hand, if the roof is in such a poor state that it really needs completely replacing - forget it. A house with a brand new roof costing, say, £15,000 is not going to sell for £15,000 more than the one next door! So, my advice in this instance would simply be to leave the roof, and adjust your asking price accordingly. Needless to say, of course, as with any rule, there can be exceptions – and those will depend on other factors, like the type of property, its location, and the state of the market. So, for example, if you have a two-bed house in an area where there is a glut of them on the market, but a serious shortage of 3-beds – then it might just be worthwhile having that expensive loft conversion done!
My view is that is it usually better to spend your money on what you are moving to rather than on what you are moving from. A critical factor is also the time it will take, not to mention the hassle. If you decide to fully redecorate or fit a new kitchen or bathroom, or rewire the property, just think of all the ancillary issues you have to deal with; not just the money. Our view is price accordingly and let the buyer take the strain! They also then get the property style they want rather than have to live with yours…wonderful though it may be! Before you launch into a refurb of your existing place, call a sensible agent around for some sensible advice!

The Seagulls sit just one place above the dreaded drop zone and are only ahead of Millwall on goal difference after a lacklustre 0-0 draw against Cardiff City on Tuesday night. A first clean sheet since the club’s 1-0 away win at Charlton Athletic was one of few positives the Albion will take from the stalemate with the Welsh side who were booed off by their supporters.
The return of Dale Stephens to first-team action after months on the sidelines was the only other real plus point of a game which summed up much of why the Albion have struggled this season. Brighton boasted 60% of possession against the Bluebirds but managed only a solitary shot on target. So far this season, the Albion have the Championship’s sixth highest average possession (53.7%) and the division’s fourth highest average number of shots per game (15.4). However, the Seagulls drop to 12th best in terms of efforts on target per game (4.3) and a lowly 18th for goals scored (32). Coincidentally, that total of 32 goals is actually nine more than Saturday’s opposition.

In a week when Sky and BT Sport paid a record £5.136bn for live Premier League TV rights for 2016/17, the importance of avoiding relegation for top flight teams has come into sharp focus once again. The TV companies argue that it's good value (for them!). Of course, there is huge competition for the rights so they obviously feel it is the right strategy. Meanwhile, some estimate that the average wage of a Premier League player will rise to £5m a year with the new contract so I think they will be OK. But what of the fans? I hope they can benefit from reduced ticket prices. I am constantly amazed how

The horrific events of September 11th 2001 shocked the world. Thousands perished and the lives of many changed forever. Rising out of the wreckage of such an appalling tragedy was the Robert Eaton Memorial Fund (REMF), eponymously named after the young Albion fan who was just beginning his normal day at work, on the 105th floor of the World Trade Centre, that fateful day. In the subsequent years, an annual football match – amongst many other events – between Albion supporters and their south London counterparts from Crystal Palace (yes, really) has raised funds towards a range of initiatives both at home and abroad. A fantastic example of putting football rivalries aside for a good cause, the first recipients of the fans’ generosity was Los Peladitos, a club formed by
Ecuadorian immigrants in New York City’s borough of Queens. Now vice chairman, Brett Mendoza has been involved with the charity since 2004. “I was selected to be part of the football squad at Withdean Stadium,” recalls the West Stand season ticket holder. “I was a substitute, came on after 75 minutes, and scored with my first touch. It’s on YouTube! “In 2009, I became manager of the football team and that's when the fundraising kicked in. I've been told I've been responsible for over £25,000 coming in to the charity, which is humbling to hear. It’s an achievement I'm immensely proud of. In January this year I was honoured to be welcomed on to the board of the charity, alongside new chairman, Mike Langridge, son of the late former chairman, and much missed, Tony.” The charity has taken a slightly different angle of late to help clubs in Africa, identified by Albion fans
working abroad: Team Thunder, a club from the biggest slum in Nairobi, Kenya and Chunga FC, from Kafue National Park, Zambia. “We have a vision to freshen up not only how the generous-funds are raised, but also how the money is spent. We are investigating new angles, rather than just buying kit and equipment for clubs. Ideas so far include paying for coaching courses for clubs without properly qualified personnel, or helping out a kid with ambitions to become a coach who may not necessarily be able to afford to pursue their dream.” An incredible £150,000 has been raised – from the football matches, Brighton marathon runners, golf days, quizzes, calendars and bike rides – since 2001 and the next big event in the charity’s calendar is the REMF quiz, 7.30pm, Friday 13th March, Dick’s Bar, American Express Community Stadium.
