BRIGHTON AND HOVE INDEPENDENT SPECIAL

A guide to the perfect meal in the city The recipe for a successful and satisfying restaurant is a complex affair. Unsurprisingly, it all begins with the ingredients. And that means much more than just the menu. Location, decor, atmosphere, and service combine to create the context for the perfect meal. We all know that the tastiest food does not taste the same if the surroundings are dingy, if the welcome is less than warm, or if the service is slow and slack-jawed. Equally, it is

important for the eating experience to be appropriate to the occasion. A quick weekday lunch, either alone or with a colleague; a night out with a group of friends; a romantic evening with a lover or partner. Each inspires and informs our choice of restaurant. British Hove Place

Hove Place, Second Avenue, Hove, BN3 2FH 01273 738266 www.hoveplace.co.uk info@hoveplace.co.uk @hoveplace hoveplace Hove Place Head Chef Phil Bartley insists on using only the finest British produce to create the ever changing menus. Using modern cooking techniques along with more traditional methods to produce interesting and sometimes challenging dishes alongside more traditional offerings, with Sussex-bred beef and free-range and sustainable eggs and fish.

Meet the head chef - Phil Bartley Phil Bartley has a passion for proper British food, which is why it takes centre stage at Hove Place where he is head chef. The menu is a cross between traditional home-and-hearth pub food and fine dining. With all the classics like Sunday roasts and burgers, Hove Place also stocks the most varied range of British charcuterie in the world. Diners can pick from more than 50 meats and cheeses, served on a deli board with locally baked bread. It’s going so well, that Phil plans to open up his own shop at the Marina, selling quality British meats. He said: “We pay a lot of attention to the ingredients we use. We

buy the most expensive of everything. Meat is our real focus here.” Hove Place uses British wagyu steak, which is expensive, and Phil admitted he doesn’t make a profit on it to keep prices down for customers. The meat is so sought after, it can cost up to £160 for a steak in London. At Hove Place, it will set you back £35 to £40. But why the focus on British food? He said: “French cooking has always been the pinnacle, but British food in the last five to ten years has come up enormously.” Phil also said it’s important to use local suppliers and support businesses in the area - an

ethos that he thinks his customers share. He said: “I think people are trying to pay more attention to the food they eat. Ten years ago it was all about supermarkets, but people are realising now small businesses are really important. “People are much more aware of what they are eating now. “Customers always want to know where the food comes from and where we buy it. “It’s really important to support local people. We use Barfield Butchers in Fiveways, for fish we use MCB Seafoods in Newhaven and Tastables for vegetables - from my old school mate.” Phil took over the kitchen at Hove Place four years ago, but he

has been cooking up a storm in the kitchen from a young age. He started out at the Metropole when he was 15, after a work placement he was offered a job. He trained there, and moved on to Richard’s on Western Road, Hove (now Six), before starting out on his own. Now Phil is training up the next generation of talent. He said: “At Hove Place we’ve got five chefs. We have to go through an awful lot of chefs to find a good one. We’ve taken on an apprentice, and he is staying with us. It is important to train the kids up.” The kitchens at Hove Place are a treasure trove of gadgets - so a great

Phil Bartley has been cooking up a storm from a young age

place for budding chefs to learn. Phil uses modern techniques such in his cooking, such as sous vide (cooking in a water bath at low temperatures to lock in flavour and transform cheaper cuts), compressing (vacuuming fruits, vegetables to change texture and

appearance), and thermo mix (temperature controlled blender for custards, sauces, super smooth purees). So why is Hove Place so successful? Phil said: “The quality of ingredients and the creative cuisine. It’s food that is a bit different.”

The Bali Brasserie house speciality is the Indonesian 'Rice Table', called Rijsttafel – 15 dishes, each a gastronomic delight! The dishes on the Bali Brasserie restaurant and bar menu come from two very distinct, but similar countries; Malaysia and Indonesia. The population of Malaysia consists of the Malay, the Chinese, and groups of Indian origin and the dishes of the country reflect these influences, and the Bali Brasserie represents them all. Indonesian food offers an invigorating contrast of flavours, with many regional variations from island to island. No other Far Eastern countries embrace so many influences and offer such a wide variety of dishes. And these are available to you, here in Brighton and Hove.

food Convenience

Bex Bastable meets the man behind making takeaway meals that bit simpler.

A

night in with a takeaway has never been better. With the arrival of delivery services bringing restaurant food straight to your door, the choice is

endless. A whole host of food delivery services have sprung up in the last few years, but why is there a demand for them? Sohail Rahim, owner of Brighton and Hove-based Dinner2Go, thinks he knows the answer. “We can bring food from restaurants that are not normally available,” he says. “We can bring people stuff they can’t normally get. It has really caught on in the last three to four years.”

He said another reason for the success of the industry was advances in technology, which makes ordering your evening meal quick, easy, and hassle free. But what makes Dinner2Go stand out? “We try and use local companies - we try to only use businesses inside Brighton and Sussex,” he says. “Brighton is a really nice place, and we want to make sure we are keeping money in the city. Everything we do comes back to the city. Most of our restaurants are local independents. “And it is good for them. Dinner2Go means they can deliver without spending the extra money on a delivery driver. It is adhoc. Plus a restaurant can have one or two

delivery drivers. If one lets you down, you’re in trouble. We have 15 drivers, plus back-up.” So it’s a win-win situation for customers who want more choice, and restaurants who can’t afford a delivery driver, but want to expand their business. The business also has a charity drive to help the homeless. Sohail recalls a conversation he once had with a homeless man, who was in a vicious cycle where he could not get a job as he did not have an address, and vice versa. He wanted to help in some way, so helping the homeless was an obvious choice for him. “Homelessness is a growing problem in Brighton,” says Sohail. “We pick up clothes from people as we deliver their order.

“They give us clothes, and we give them to the homeless. We then give the customers 20 per cent off their next order. “We give these clothes to Off The Fence and Brighton In Need. We started to do this in November, and we are going to do this from now on.” But how did it all begin? For Sohail, it started four years ago when he took on Dinner2Go. “We bought the company four years ago from a friend, although it has been going for ten years,” Sohail explains. “It was started by a friend of mine, but five years down the line he had personal issues. “We moved from Freshfield Road to where we are now in Third Avenue. For drivers to go from one place to another, it was much easier.

“We also got rid of all paper. Before, drivers would have to go to Freshfield Road and collect three of four pieces of paperwork, one for the restaurant, one for the drive, one for the customer, and another one if they had paid by credit card. “We got rid of that, and cut every single receipt. Now it is all online. We made sure all drivers had a mobile phone where they could access everything online, including maps and GPS. Now drivers do not have to come back to the office. “In the office I have one member of staff, and another one or two if it is busy, and we have around 15 drivers, but this goes up to 18 when we are busy. “We used to open from 5pm until 11pm

but now we open from midday to 11pm.” Things are going from strength to strength, with the company investing in a fleet of Dinner2Go smartcars for its delivery drivers. But what’s next? “We are growing,” he says. “We opened in Worthing two months ago. It is growing slowly. “We are looking at expanding to two other cities, but can’t say where at the moment. Not too far from Brighton though.”
