LOCAL FOOD PRIMER Glorious Food! Peas & Rice:
Pigeon peas and white rice, with an amalgamation of local spices. The recipe differs from person to person but is a local staple as a side dish.
Mutton:
Stone Crabs:
Native to the waters of The Bahamas, stone crabs are a delicacy only available from November to May. Claws are usually served chilled, often with a mustard sauce.

Avocado:
including Key limes, oranges, lemons, grapefruit and others show up in Bahamian cuisine in salads, sauces, marinades and more.
Grouper, Snapper:
These native fish are essential to true Bahamian cuisine. Depending on the restaurant, they are fried, broiled, baked, grilled or “smudder” as the Bahamians call it and these fish appear on most menus.
Dolphin:
It’s not Flipper!! Also known as mahi mahi or dorado, dolphin are a beautiful colored fish known for their mild white meat. Many area restaurants have adapted and changed the name for visitors, but there are holdouts which still list mahi mahi as dolphin. (Flipper and his cousins are really porpoises, not dolphins!)
Spiny Lobster:
Found locally this species has not claws and only the tail is eaten. The season for these is from August 1st to March 30th annually.
Most everywhere in the world mutton refers to an old sheep, but not in The Bahamas! In The Bahamas mutton refers to goat and is usually served curried. Somwhere between a stew and a soup this local favorite is a breakfast staple. Souse is usually made from chicken, but the more adventurous may choose from pig feet or sheep tongue. This is known to the locals as a “pear” or “avocado pear”. Native Bahamian avocados and are much larger than their Californian cousins the Haas avocados. Bahamian acovados also stay bright green when ripe. They are wonderful raw on sandwiches and in salads, and make great guacamole!
Plantains:
This banana variety is not sweet when it is still green. Plantains are often served deep-fried as chips or fritters and served as a side. Sweet ripe plantains are pan fried to caramelize them and eaten as a dessert, side or snack.
Conch:
A mollusk that is considered the national food of The Bahamas. Conch is used very frequently in Bahamian cooking such as, conch fritters, conch salad, conch chowder and many more. It is also known as an aphrodisiac. No vacation is complete without sampling this national delicacy.
TASTY TREAT Peas & Rice Ingredients 1/4 cup butter 2 ounces sliced bacon, diced 1 large onion, diced 1 stalk celery, diced 1 large tomato, diced 1/2 (6 ounce) can tomato paste 1 tablespoon ketchup salt and pepper to taste 1 (15 ounce) can pigeon peas, with liquid 1 2/3 cups water 1 1/2 cups uncooked long-grain white rice 1 sprig fresh thyme, chopped
Directions 1. Melt butter in a large, heavy saucepan over medium high heat. Place bacon in the saucepan, and cook until evenly brown. Stir in onion and celery, and cook until tender. Mix in tomato, tomato paste, and ketchup. Season with salt and pepper. Reduce heat to low, and continue cooking about 15 minutes.
2. Stir pigeon peas and their liquid, water, rice, and thyme into the saucepan. Bring to a boil, cover, and reduce heat. Cook 40 minutes on low, or until all liquid is absorbed. Fluff rice with a fork. This dish is served with most Bahamian meals, along with potato salad and coleslaw. Salt pork can be substituted for the bacon if you can find it, and this would make the dish even more authentic.
