Georgia Barclay (P10) has such a Brisbane story. Schooled here, then jetting off to exotic locales for a few years, feeling the call of home, and then making a triumphant return to a successful model management career and a relaxed subtropical lifestyle. Maybe it’s time for a sequel to that 2007 film All My Friends Are Leaving Brisbane, called All My Friends Are Moving Back, Along With A Good Whack Of Sydney. Speaking of southern influences, Tony Harper checks out Sake’s new menu (P18) under the guidance of Rockpool’s Neil Perry. Showcasing local talent is Michelle Bailey’s architecture feature (P28) on a home that’s taken “letting the outside in” to a whole new level. THEN & NOW Anzac Day began in Brisbane when a group of men met at Exhibition Hall on January 10, 1916. They wanted to honour those involved in the first landing at Gallipoli a year earlier. On April 25, the anniversary of the landing, more than 50,000 people attended the first Anzac Day parade (left). It now draws hundreds of thousands to marches, such as last year’s parade through the city (above). This year’s march starts at 10am.

Carnival role’s a winning post KENDALL GILDING, 26 Seven News presenter When food, fashion and horses are among your favourite things, the role of ambassador for the 2017 Channel 7 Brisbane Racing Carnival is a tailor-made fit. For Seven News presenter Kendall Gilding, the glamorous winter event – which comprises five race days including the Hardy Brothers Doomben Cup Day on May 20 – also affords the opportunity to don her favourite accessory: hats. “You can go all out,” the Mitchelton resident says. “I often wish we wore hats like they used to wear to church on Sundays. We need more events where we can wear headwear, there is something so glamorous about it. It pulls an outfit together in a different way.” On the frock front, Kendall will favour Australian designers – Zimmermann and Alice McCall are likely – and advocates a wintry palette of deep burgundy, emerald green and burnt orange. “I do like to wear something a bit daring, a bit more playful, but appropriate,” she says. As well as the fashion, Kendall will also soak up the trackside action. She grew up with horses in Cairns and, arriving in Brisbane to study at QUT at age 17, just assumed her fellow students also rode. “You sort of think everyone got that opportunity, but we were really lucky,” she says. “We had a mare called Storm and she had the most wonderful little personality. We had another called Missy and she was a bit of a psycho, so I stayed away from her.” She likes a flutter, but Kendall has never been a “mad punter”. Phil Brown Let me say from the outset that if you can’t stand rejection, never become a poet People talk a lot about resilience nowadays – how to build it and how to help young people develop resilience. There are various ways of doing this but I know a way you can develop resilience that isn’t mentioned much. Poetry. Yep, that’s what I said: poetry. Not reading it – I mean writing the damn stuff. Nothing builds resilience, I reckon, quite like being an aspiring poet. Now I should say that I have had some mild success as a poet, having published two slim volumes (Plastic Parables and An Accident in the Evening). I still occasionally dash off a poem, although I am really a semi-retired poet. I used to describe myself as a “poet in remission” and I did so once to former arts minister Matt Foley, a poet himself. He quipped back: “But you know there is no cure.” He was kind of right. I’ve been thinking about poetry lately because I’ve been republishing my back catalogue on my website and have

been getting a rather nice response from that endeavour. But looking at some of those poems now, I recall the angst and anguish of my poetry career. Let me say from the outset that if you can’t stand rejection, never become a poet. Part of the process of becoming a poet is years and years of rejection. This is the stuff that builds resilience. I started writing verse when I was in my late teens and then more seriously at university, where I was fortunate enough to have Australian poet Bruce Dawe as a lecturer. Bruce became a mentor and he helped me along the way but couldn’t protect me from the sheer avalanche of rejection that was to follow. For years I would submit poems to literary journals and other outlets, and for years I got knocked back. I sometimes jokingly say I could have wallpapered my room with the rejection slips but that’s no joke. I really could have. And yet I kept doing it like a bloke hitting his head against a brick wall

who hasn’t quite realised that if he stops, it won’t hurt anymore. That was a lesson in persistence, as well as resilience. Eventually, though, I managed to break through, and here and there, in dribs and drabs, poems began to get accepted, and eventually I was published in Poetry Australia, The Bulletin magazine, The Weekend Australian and elsewhere. I was thinking about this recently because I was asked to submit a poem to a rebooted literary website and I did so enthusiastically because I had recently written a new poem, the first in a year. And then I got the “Dear Phil” rejection note. They didn’t want it, but did I have something else? Ah, the memories came flooding back and I inhaled again the heady whiff of rejection. It stiffens the backbone, it really does. So, do you want to toughen your kids up? Get them to start writing poetry. I’m serious. It’s tougher than rugby, I reckon.

Belinda Seeney I love the idea of minimalism, truly I do. The thought of gliding through my home unimpeded by school bags, laundry baskets and sneakers of all sizes holds such appeal. I long for a dining table used solely for meals rather than as storage for week-old newspapers, a desk to pay bills, a wrapping station for birthday presents and a general display area for the educational detritus of permission slips, newsletters and unchecked homework. How marvellous it would be to possess a benchtop where I could whip up culinary masterpieces without fear of slicing through a mobile phone charger, splattering important paperwork or disturbing a flock of origami cranes. I fantasise about opening a wardrobe and extracting a pair of shoes rather than rummaging under beds or standing bereft in the middle of my living room, amid the school bags and laundry baskets, trying to

retrace the last steps of any given pair. But above all, I would adore to open an overhead cupboard and not get brained by an ever-growing assortment of cake tins and baking trays crammed haphazardly within. If minimalism was a religion, then Marie Kondo would be the high priestess. Devout followers of this Tokyobased “organising consultant” snap up her books in their millions and follow her patented clothes folding techniques to the very last crease. Her latest battle cry in the war against clutter is to keep only things that “spark joy” – coincidentally, the title of her latest how-to guide. Kondo – now so famous her surname is used as a verb – recommends bundling up stuff, piling it in the middle of a room then picking up each piece in turn to see if it “sparks joy”. If it doesn’t have you in raptures, kick it to the kerb or store it away so

its very presence won’t harsh your mellow. Great theory, but I’m unlikely to Konvert. Case in point: children’s school lunch boxes bring me no joy. The thought of filling them day in, day out makes my soul ache but I can’t toss them and it’s pointless hiding them away when they’re required daily. Likewise, the washing up cloths and tea towels are depressing as heck but it’s hard enough to cajole children into clearing up after themselves without impeding their access to basic cleaning implements. Out of sight, out of mind and all that. And then there’s the fact that despite the clutter I still know where everything is in my un-Kondoed house – bar the odd misplaced stiletto. What good would come of tidying and folding, ransacking and rearranging until my house is joyously sparking, only to forget where I’ve put everything? That would be a Kondo-strophe.

In a world where Brazilian supermodel Gisele Bundchen earned $A40.5 million last year, successful models operate in a realm of gorgeous clothes, beautiful people and exciting places. But Georgia Barclay – the Queensland boss of Vivien’s Model Management and a former model herself – knows there are two sides to that catwalk. “It’s glamorous, but emotionally, there are hard parts,” the 43-year-old says, sharing tales of wearing $20,000 designer dresses and touring Australia for the David Jones and Myer biannual seasonal parades as a 22-year-old model. “I don’t think people appreciate how hard it is for a young person to go to eight or 10 castings and be told at the end of the day they haven’t got any of those jobs; to be told you’re too tall, too short, you’re too blonde or too brunette.” More than 100 hopefuls apply to Vivien’s Queensland every week, with the agency signing one new model “every two or three months”. Georgia counsels her charges to plan for the future, reciting a mantra to each of them: “Be good, be kind, be brave”. “Modelling is a short-term job; this

is not going to be forever,” she says. “You have to have a story, you have to study or have a part-time job. You have to have something other than modelling. It’s just modelling – it’s not life and death here,” she smiles. It was that pragmatism that propelled her into model management. While most look at modelling and see fashion and glamour, Georgia instead saw a fascinating business model. “I was naturally interested in clothes and models as I was growing up but as I got older and more careerfocused, I started to appreciate that there was this whole business behind the magazine that we buy.” Georgia came to modelling by way of journalism, personally scouted by the agency’s founder, Vivien Smith, while interning at magazines Cleo, Vogue and Marie Claire during her university studies. By her own admission, at 22 she was a late recruit to the runway, making her modelling debut at a time when most of her contemporaries were planning their retirement. Her agent tactfully asked her what “the next step was” a mere 18 months into her modelling career. “I remember just looking at her

and saying, ‘Actually, I want to do what you do’. It all started to click. There was that management side, managing people, there was also the business side of negotiation and sales, which I love, and it was also fashion and modelling. And it was fun.” Her first foray into journalism was at age 15, hosting children’s TV program Footprints, a volunteer role she accepted when original host Sofie Formica moved on. By the time she was in Year 12, at Stuartholme School, Georgia was being paid to present other lifestyle and children’s programs. She initially enrolled in a film and television degree at QUT but then switched to a Bachelor of Business, majoring in journalism.

It was while at university she met future husband Ben King, 43, a chiropractor. After graduation – and post modelling – they divided their time between Brisbane and Sydney, then packed up and headed overseas for a two-year working holiday that stretched out to 11 years. Georgia carved out a career as a travel writer. Their eldest son Kaspar, 8, was born in London and his younger brother Aston, 7, in Jakarta. Ben delivered Aston on the floor of the family’s apartment after a lightning-fast labour that took the family by surprise. Daughter Giselle, 4, was born two years after the family returned to Brisbane and is named after Georgia’s

favourite ballet – not the Brazilian supermodel, she notes. Travel is still a priority for the now Bulimba-based family, although the lengthy overseas jaunts have been replaced with getaways closer to home and weekends at the beach. All three children are members of Currumbin Surf Lifesaving Club’s Nippers program. “You’ve got to get out in nature, it’s so good for you mentally and emotionally,” Georgia enthuses. Now her children are getting older and she’s “coming out of the fog”, the savvy and well-connected businesswoman is looking to her next career challenge within the company. “I’ve done a million and one things;

it’s not been a straight line with me,” Georgia says. “I’m quite happy chopping and changing around. The works are art in motion, creating themselves, with the gentle whirring of mechanics that carve out a picture of indigenous and Western culture combined. Ground Up, for example, uses water to gently erode white chalk, exposing layers of bleeding red ochre beneath. Gradually a word will be revealed by the end of the exhibition at the Museum of Brisbane. The man behind the works is Robert Andrew, who has been tinkering with machines since he was a child. They tell a story of the meeting of two worlds, and Robert’s personal story of learning at the age of 13 that he had indigenous blood. Robert, who grew up in Perth, is descended from the Yawuru people of

the Rubibi (Broome) area in Western Australia. He would visit his family up near Broome on school holidays. “Up until a certain age, as a child, I wasn’t seeing other races within Australia. Even at 13 I didn’t understand what that meant,” he says. “It was really exciting and I was really happy to be telling everyone I’ve got Aboriginal blood. It was confusing as well.” Robert is also very interested in the loss of Aboriginal language. Data Stratification, his most ambitious work to date, incorporates many natural elements, including sticks and rocks threaded to strings, which gently spell out Aboriginal words using patterns. Robert is a former Telstra technician and has also worked at a furniture-restoring business in Newcastle. He now lives in Brisbane with his partner, also an artist.

Wrong play is right Fiona Purdon When Tammy Weller was 10, her life changed forever as she sat spellbound watching her first production at the Queensland Performing Arts Centre – lavish musical Phantom of the Opera. Now, 20 years on, Tammy can’t believe she has made it on to that stage. She will make her QPAC debut with hit show The Play That Goes Wrong, opening on May 4. “I still have the clearest memory of going to see Phantom of the Opera and watching the chandelier dropping down … it captured my imagination,” she says. “Since then it’s always been at the back of my mind that I would one day love to perform at QPAC. It blows my mind to think I will be performing on the same stage as some of the world’s most amazing performers. “I’m really excited to be performing in Brisbane before friends and my family.’’ Tammy, 30, who moved to Melbourne from Brisbane four years ago, survived three audition rounds to snare a coveted role in the national tour of the hit play, which has also just opened on New York’s Broadway. “The play is currently being performed in six out of the seven continents,” she says. “A production like this is totally what you live for as an actress. The comedy is not only universal but it knows no bounds.” Tammy believes the play, created by English troupe Mischief Theatre in 2014, has been so successful because

of the funny script and the physical comedy style, as seen in hit TV shows such as Fawlty Towers and Mr Bean. The play, which won the 2015 Olivier Award for Best New Comedy, follows the misfortunes of an amateur theatre company which experiences disaster after disaster on the opening night of its mystery, The Murder at Haversham Manor. “It is above and beyond your imagination with what goes wrong with the play,” says Tammy who joins Brooke Satchwell in the eight-strong cast, which also includes James Marlowe, who featured in the original West End production. Tammy plays Annie, the stage manager. “Annie has a kind heart and means well; she is like a naive clown.” Bundaberg-born Tammy grew up in Hervey Bay where she was a keen participant in school and local drama productions. She then studied acting at the University of Southern Queensland in Toowoomba. Tammy, who is also a writer, moved to Brisbane when she graduated and featured in many local productions while also working with Queensland Theatre Company’s education program. She has starred in many independent productions since moving to Melbourne, including Shakespeare tragedies Macbeth and Coriolanus. She is now loving the change of pace to comedy. The beastly behemoth that materialises in Seoul one night, leaving a path of destruction in its wake, might reasonably be expected to be the villain of this piece. But the film’s leading lady, Gloria (Hathaway, above), makes the startling discovery that said creature is actually the physical manifestation of her monstrous internal conflict. Becoming aware of her own power, Gloria sets out to makes amends to the good citizens of the South Korean capital – putting on a decent show for good measure. There is much to recommend Colossal, but it is a wild and ambitious hybrid that ultimately fails to fulfil its promise. Now showing

life’s pleasures. Lipstadt’s problems begin when Irving launches a libel suit against her in the UK – where the onus of proof is on the author herself. To win, she must prove in a court of law that the Holocaust really happened, which is much harder than it sounds. Lipstadt assumes this will be achieved by allowing the testimonies of Auschwitz survivors to be heard. But her legal team stonewalls this option on the basis that it will give Irving the opportunity to crossexamine the victims (past experience has shown survivors often get small details wrong, leaving them open to ridicule and humiliation). Instead, Rampton exposes the lies and distortions in Irving’s arguments with skilful cross-examination. This is one satisfying case in which justice and the law do go hand-in-hand. Now showing

Hooked by silken touch RESTAURANT Tony Harper There we are happily ensconced at Sake and I’m pondering exactly how much Neil Perry has influenced things; meanwhile my wife is pondering how long it’s taking to cook my fish because the kids need collecting. There’s a small hubbub at the pass and she is on to it like a greyhound on a rabbit: “They’ve forgotten your fish,” she reckons. Perhaps she’s right, because it arrives rather late and we received a flurry of promises to the contrary. But the fish – Glacier 51 toothfish to be precise ($49) – is so good I’d wait all afternoon if need be, wifely wrath regardless; it could well be the best piece of fish I’ll eat. Part of the allure lies in the flesh of the Patagonian toothfish – an ugly creature, but made of rich, flaky silky flesh that has the same effect as foie gras and good wagyu: your eyes close and your mouth becomes an erogenous zone. The other part of the puzzle is the way it has been cooked, wrapped in bamboo leaves, drizzled in miso butter and topped with kombu. It’s a simple but extraordinary combination. The toothfish sits in a section of the menu labelled classics, and from what I can glean from the almighty web it’s one of the dishes that Neil has brought to the mix after his company and Sake owners Urban Purveyor Group merged last year. It speaks volumes for the guy with the ponytail

and if I had my lunch over again I’d focus a little more on the dishes inspired by him. Not that the rest of the menu fails – in fact it is as good as ever, peddling its version of contemporary Japanese. We wade through scampi nigiri ($17 for 2), prawn shumai ($19), beef tataki ($29) and popcorn shrimp ($26). It’s hard food to fault but none of these smaller dishes – with the possible exception of the scampi – come within shooting distance of the toothfish. The shumai are interesting, cunningly removed from their

Chinese counterparts; covered in tendrils of noodle, the main pastry very soft and the prawn component there, I’m sure, but as elusive as the Pimpernel. Popcorn shrimp is perfectly executed and tataki is a lesson in very good beef. It all happens in a dimly lit, beautifully appointed series of rooms with almost incidental (but rather stunning) views of the river: it lives in fashionable gloom. But there’s a sense of moving worlds when you enter – the meal is an adventure – and I reckon that is a big part of the

experience. Then there’s a staff that – aside from a late plate of fish – doesn’t really miss a beat. There’s a drinks list with a good selection of sake, a flashy, albeit corporate, list of wines (with some hefty inner-city margins) and a fabulous run of Japanese craft beers that I found far too late. My fish arrives, we manage to collect the kids and I go home with the umami of Patagonian toothfish loitering in my mouth. Sake is good and, given a taste of the Neil Perry influence, it is destined to get better.

Lines will be deeper, pores larger and your glow? AWOL. Which is why I was only too happy to try the new Halo Hybrid Fractional Laser. Bulimba Dermatology, owned and operated by specialist dermatologist Dr Scott Webber, is the first in Queensland to offer the US-pioneered laser-resurfacing treatment. The Halo reverses sun damage, pigmentation, wrinkles and dilated pores, and goes deeper to kickstart collagen production, firm the skin and get that glow back. The latest in lasers, it promises results – a “porcelain effect”, no less – with minimal downtime. Oranges are rarer in Orange than you might imagine. Without having really thought about it, I assumed the regional NSW city of 40,000 residents 250km west of Sydney, must be an orange-growing epicentre. But the name is actually the result of an 1846 name-dropping exercise by NSW surveyor general, British-born Sir Thomas Mitchell. He had become mates with the Prince of Orange (later King Willem II of The Netherlands) when they were both aides-de-camp to the Duke of Wellington as he fought the Peninsular War against Napoleon. However, the altitude means oranges aren’t on the agricultural agenda although the district does grow vast quantities of apples, cherries and pears. The closest I got to an orange on my recent visit was the duck a l’orange at Highland Heritage winery, which has a restaurant and

offers tastings of its varietals including cabernet sauvignon and chardonnay. Wine is a relatively new industry in Orange, with this year the 21st birthday of it being recognised as a winegrowing region and being accorded cool climate status. Now there are more than 80 vineyards, with about 35 cellar doors. Queenslanders can fly direct to the region since Fly Corporate launched its five-days-a-week service from Brisbane earlier this year. Orange’s wine-making prowess will be celebrated at a festival from Oct 13-22, with the program out in July. The Orange Wine Show Tasting at the city’s showgrounds will be the opening event, showcasing the wines entered for judging in the more formal Orange Wine Show, including the trophy and medal winners. the oasis Vertical glass panels create a hidden haven promising backyard bliss Michelle Bailey Brisbane’s back yards are a constant source of surprise and inspiration. Tucked behind an unassuming Queenslander in Indooroopilly, and invisible from the street, is this extraordinary backyard pavilion designed by Loucas Zahos Architects. It was constructed as a retreat for the owners and serves as a hidden oasis nestled in Brisbane’s suburbia. “The idea was to create a contemporary space for living, including a living area, a bedroom and two studies,” architect Con Zahos says. “These rooms are accommodated within a narrow floor plan that bends in an L-shape around a central courtyard. “It’s a simple diagram. It’s about a space that increases in volume up to a second storey that is used as a writing room or study.” By wrapping the L-shaped building around the outdoor courtyard, rooms are positioned directly adjacent to the garden and spaces are orientated towards views of Mt Coot-tha. More importantly, northern sun has been captured inside for the first time. “There used to be an extension here (at the back of the house),

completed in the 1980s,” Con says. “It was orientated into the corner of the site so it was quite dark and south facing and it didn’t take advantage of any views the site had. So the idea was to rearrange and reorientate these rooms.” The character of the rooms is largely defined by the use of an unconventional material palette. Where possible, plasterboard and white painted surfaces have been avoided.

MAXIMUM EFFECT … Bold lines and a simple but clever design create light-filled space and make the back yard a focal point in this Indooroopilly home.

“We stripped down the palette of materials to concrete, steel and plywood,” Con says. “We used plywood in everything from the timber mullions to wall panelling, to features screens such as the one to conceal the television.” The birch timber plywood visually softens the raw grey tones of the concrete floor and steel panelling and brings a sense of calm to spaces, particularly the bedroom and studies. The plywood window mullions

establish a vertical rhythm that is echoed in a steel colonnade that encircles the courtyard. Further complexity comes in the form of custom ceiling panels made from perforated steel which run the length of the colonnade. These extraordinary, patterned, lightemitting ceiling panels throw animated shadows across the room. Custom perforated steel panels are also used to create exterior sun shades and the sliding doors in the bedroom.

“The owners wanted to be able to sleep safely with the door open,” Con says. “So the door is designed to do many things. It’s a sunshade but it’s also a security screen.” On a balmy night it allows cross ventilation to passively cool the space. The bedroom exterior is equally intriguing. Here, conventional walls have been replaced by a vertical landscape. “We wanted to create a level lawn

and accentuate that by introducing green walls to create a cottage garden feel to the courtyard,” Con says. The changing seasons are reflected in the foliage and flowers, and in its constant state of flux it appears like a living work of art. Epitomising this is a back yard in Highgate Hill, a collaboration between landscape designer Steven Clegg and the home’s owners, architect Jayson Blight and designer Melissa Blight. On this long slender plot, the team has created an interesting visual landscape and outdoor space with multiple uses. The original sloping yard was terraced using a series of retaining walls forged in salvaged bricks and concrete block work. Brick garden beds reserved for herbs, fruit and vegetables, define a productive landscape zone closest to the house. A level brick patio establishes the centrepiece – a gathering space open to the sun by day and to the stars by night.

Beside it, a poinciana tree creates shade for the lawn and overhangs a lagoon and grotto at the rear. The long plot appears to extend infinitely as “garden rooms” and “walk-through zones” unfold along the garden journey. Plant species are arranged to appear as if they have been seeded randomly and include both native and subtropical plants. Fiesta favourite Alastair McLeod When I worked in the LanguedocRoussillon region, which borders Spain, we prepared straight-bat Spanish tapas into the early hours for throngs of hungry and thirsty tourists. Anchovies grilled over wood embers; octopus braised in smoked paprika; small, scorched green peppers; shaved iberico de bellota; fried goats cheese; and crispy

croquetas. While these traditional bites aren’t at the vanguard of cuisine they are bold, savoury, salty, spicy and textural. Guests would mooch from bar to bar, becoming pleasantly replete. Not only did the tapas taste great, they reduced the effects of the wine, sherry and spirits imbibed. Culturally, the Catalans consider that to drink, you must have food. I’ll roll the arm over for that.

INGREDIENTS 60g butter 1 tbs extra virgin olive oil 1 small onion, finely chopped 75g plain flour, plus additional for dusting 500ml milk 125g sobrasada, room temperature ¼ bunch flat leaf parsley, finely chopped Sea salt and freshly milled pepper 2 eggs, beaten 150g breadcrumbs 30g manchego, grated Oil for frying Mayonnaise, to serve

METHOD Melt butter in a heavy-based fry pan. Add the oil and when it shimmers add onion and cook over a low heat until soft. Add flour, stirring for 2 minutes. Switch to a whisk and gradually add milk, whisking to a smooth sauce. Switch back to a wooden spoon or spatula and stir in the sobrasada. Continue to cook until the mixture

has the texture of mashed potato and pulls away from the sides of the pan. Add the parsley and season with salt and black pepper. Transfer mix to a container then refrigerate overnight. Gather three bowls, placing flour in the first, beaten eggs in the second, and the breadcrumbs and grated cheese in the third bowl, stirring to combine. Scoop out heaped tablespoons of the mixture and roll in flour then dip into the egg followed by the breadcrumbs. Transfer to a tray and repeat until all the mixture is dipped and rolled. Chill for 30 minutes. Preheat oil in a deep-fryer to 180C. Fry in batches until golden – about 2 minutes. Remove using a slotted spoon, season with sea salt and serve with mayonnaise.
