04 HELLO Are you team Marvel or team DC Comics? Iron Man or Superman? Captain Marvel or Wonder Woman? Either way, superheroes are taking over Brisbane. GOMA’s latest blockbuster (P19) reveals the art behind the Marvel universe, and finally arriving in cinemas is DC Comics’ Wonder Woman film (P20). What is it about these fantastical characters that captivate our imaginations? Is it about hope – that there is someone out there fighting to make a better world? Why do we look to them when there is clear evidence of myriad marvels in the real world? Chefs (P12, 21, 22) have been elevated to super status, and so they should be – wrangling a heroic offering from a handful of plain ingredients is a superhuman feat in my books. (Even Dr Strange’s ability to turn back time couldn’t save some of my dinner “efforts”.) Heroic status, too, belongs to architects whose talents transform our built environment (P31) for the better; the comedians who can turn that frown upside down (P17); and the fashionistas helping us express our personality with confidence (P15, 26). Surely we are all heroes in some way, we just need to find our own version of a red cape or magic lasso. Go get ’em!

Dancing for joy FOROUGH YAVARI, 38 Photographer War-torn Iran taught Forough Yavari to seek hope and beauty in any situation, no matter how dire. Ultimately, it laid the foundation for her awardwinning career in photography. “To make us forget about the intense condition of war, my parents found ways to lead us into more creative activities,” says Forough, who has been named Queensland Portrait Photographer of the Year by the Australian Institute of Professional Photography. “My father used to gather all the family and children and organise painting exhibitions of works from all ages. That was my first interaction with art, and something that changed my whole life forever.” Forough went on to study fine art at the University of Tehran, and later held small exhibitions of her paintings and digital art, which combine photography and painting. “I remember my second solo exhibition,” she says. “I had most of my works sold, and my parents were there. My father coming towards me with tears in his eyes, telling me how proud he was, was the greatest moment. I felt I was on the right path.” Her works were portraits of women, and dealt with social issues, which meant she could not show them in public galleries in Iran, due to legal restrictions. That, coupled with a wish to travel, led her and husband Afshin Jafari, 38, a software engineer, to move to Australia in 2011. “Australia has always been a mystic far land, separated from everywhere,” Forough says. “I felt in love with Australia’s sky, nature and ocean, and was feeling it will be my second home, which it is now.” These days Forough works as a portrait photographer from her home studio in Stafford Heights, and also shoots weddings. “When I print the result I feel satisfied and that’s the happiest moment. That’s the feeling of being alive, full of power and joy. You could even find me dancing around my studio.”

Phil Brown I switch on the mantra and soon, like Moses with the Red Sea, a spot will open up I can’t tell you how much joy it gives me to get a good parking spot. Parking is now becoming such a nightmare in this city that finding a space is an emotional high. When I get one, I punch the air with joy. It’s like I’ve just scored a try in State of Origin – not that I actually know what that feels like. And if it’s a free parking spot, well, that’s even better because parking is so expensive now. I made the mistake of going into one of those multi-level carparks in the city on a weekday some months ago and that emptied my wallet somewhat. We were in the city for about an hour-and-a-half and I thought that might not be too expensive. But when I put the ticket into the machine as we were coming back to the car, I was so shocked by what it cost that I started foully cussing as a sort of reflex action. This was unfortunate because there were several people behind me waiting to use the same machine. In my next life, I want to own one of these parking stations. I will never have to work again.
Prices for parking in the city on weekends are better and the best place on a Saturday or Sunday is the King George Square Car Park where you only have to pay $5. But you will need to get there early because everyone is on to this now, dammit. I also suggest trying around lunchtime when the morning crew head home and make way for the afternoon shift of cheapskates. We frequent the James St precinct and the parking around there is not easy nowadays either. The carparks there have middle-aged men wearing Panama hats on patrol to make sure you are parking legitimately. We have it wired because a friend lets us park in front of his art gallery. So we gently pull in and I always get out wearing a smile of smug superiority. How sweet it is! New Farm Park is one of our favourite destinations on weekends (we like to walk our wee hound there) but recently we went there to find the whole place parked out, which was amazing to me, not to mention frustrating.
When you get a space at a place like this you never want to leave. It reminds me of that Seinfeld episode when George’s father won’t move his car for days because he has jagged such a great spot. I have a method for getting a good park which isn’t exactly scientific but it seems to work. I developed this method on holidays in Townsville when shopping at CastleTown Shopping Centre with my mother-inlaw. The method is known as Phil’s Mantra. It involves me chanting, internally, “we will find a space, we will find a space” over and over again, visualising a parking spot as I do so. As we drive into the carpark I switch on the mantra and soon, like Moses with the Red Sea, a spot will open up before me. Is this magic? Or is it just down to the fact that in a carpark someone’s always arriving and someone’s always about to leave. I prefer to think that it is the extraordinary power of Phil’s Mantra. Now if I can just find a way of marketing that. Om.
Belinda Seeney For once, my make-up application was flawless. A thin layer of moisturiser followed a light exfoliation before I cracked open a new tube of primer, squeezed out a minuscule amount and spread it evenly over my skin. Next came liquid foundation, a jumble of shades and brands that blended seamlessly with my skin tone, followed by a dab of concealer. Looking for a matte finish, I shook mineral powder and translucent powder into a small dish and swirled a makeup brush through until I hit on the ideal hue then dusted it on. Next came the bronzer, just a light sprinkling – nothing too shimmery – to achieve an effortless, natural glow. I stood back and eyed myself critically in the mirror. I turned light switches on and off, and stepped outside to check my handiwork in the far-lessforgiving sunlight.
Satisfied with what I saw, I grabbed a giant can of hairspray and liberally expelled its contents over the multiple layers of product to set them tight. My left knee had never looked so stylish in my life. The reason for its elaborate makeover was far less glamorous. I was off to the races and facing a jam-packed week, had planned my entire outfit well in advance. The hat, the shoes, the bag, the earrings, the necklace, the ring and the sunglasses, all anchored by a striking white dress with long sleeves and short hemline. Then, 36 hours before I was due trackside, I dragged my weary bones outside in the dead of night to wheel the bins to the kerb and promptly tripped over the dog. Down came that left knee, out came a string of expletives and off ran the dog. I shivered my way through the rest of the night as I rotated ice
packs but as race day dawned, there shone my knee in an autumnal palette of aubergine, claret, plum and just a hint of chartreuse. Not quite the “bold colour” dress code this race day had in mind. And so to the make-up drawer I turned, paying more attention to my pins than my pout as I attempted to cover my clumsiness. Sure, I could have just swapped out the dress and indeed, I did have a back-up planned for just this scenario. The only problem being it was still in the laundry pile after I’d hurriedly promoted it from understudy to star the week before to camouflage two shins, mottled with aubergine, claret, plum and just a hint of chartreuse, who’d met with a runaway kayak and come off second best. Cue string of expletives.

He’s the head chef at one of Brisbane’s top dining rooms and now Josue Lopez can also add television presenter to his list of career credits. The 33-year-old father of two appeared on Network Ten’s MasterChef Australia just over a week ago, setting contestants the task of recreating one of his most challenging dishes – “After the Eucalypt Fire�. The pairing of emu and lilly pilly symbolises new life after bushfires. “I was honoured to be invited on MasterChef, particularly as I am a huge fan,� he says. “It was a privilege to be a part of it, but for me the food still comes before being famous.� His passion for food was ignited at an unlikely place – McDonald’s Coorparoo, where Josue worked after finishing high school. “Whenever I made Quarter Pounders my mates would say they were delicious and the best they’d ever had. I think that’s because I knew they were for my friends so I put extra love and care into them,� he says. “That was when I first discovered the emotional connection with cooking and decided to pursue it.� Born in El Salvador, Josue arrived
in Australia with his parents at the age of two. The family settled in Brisbane, and Josue recalls his mum feeding his friends tacos on Tuesdays. “My mum never backed herself, but she was the best home cook,� he says. “I was the kid at school with the best packed lunches and there was always too much food so I shared it around.� Today, Josue’s approach to food is a culmination of his time spent at Gordon Ramsay’s Maze in London, Noma in Copenhagen – four times ranked world number one restaurant – as well as stints at local restaurants Spring, Moda and Two Small Rooms. He describes GOMA’s take on food as a “unique dining style mostly influenced by local ingredients�, but has fond memories of a special cultural night he held last year featuring dishes from his homeland. “There were pupusa canapes – a tortilla filled with beautiful fresh cheese. I used local buffalo mozzarella and feta, peppers and a tomato salsa. I also made a gallo en chicha, which is basically a Spanish coq au vin. “It was a bit of an emotional experience creating these dishes, because food was a big part of my upbringing and I wanted to do my mother justice.

My mum never backed herself, but she was the best home cook
“As a family we celebrated food, and I have great memories of this, which I hope to make more of now that I’m a father.” At home in Camp Hill, Josue rarely does the cooking. Wife Krystal, 33, whips up delicious dinners for him and children Jemima, 5, and Ezekiel, 4. “She’s superb,” he says. “It’s hard to create restaurant food at home because I don’t have the manpower and time, but I always use fresh ingredients. It’s all about eating clean. “We recently bought a new barbecue so I did some lovely salmon portions with a coleslaw and salad of fresh tomato and rocket.” And of course Josue still has a soft spot for McDonald’s. “There’s something about that tangy Big Mac sauce and the balance between the melted cheese and the patties that just gets me every time,” he laughs. If one dish was to encapsulate both the Thai heritage and Australian training of Khanittha Muangsong, it would be her kangaroo pad ped. The aromatic spiciness of red curry paste paired with kangaroo meat was a hit with diners when it debuted at Woolloongabba’s Pawpaw Cafe. “We grilled the kangaroo first, sliced it then stir-fried it in the pad ped sauce,” says Khanittha, known to all by her nickname, Bowyo. “It was quite popular even though some people thought it might be too spicy or wouldn’t match with the kangaroo but then they tried it and liked it.” As executive chef, the 29-year-old is the architect in Pawpaw Cafe’s signature fusion of eastern and western cuisines, borne of her desire to entice local palates to try flavoursome Thai cuisine. To counter the common misconception that all Thai food is spicy, she makes her own curry pastes and bases to control the heat of a dish. “We know western (diners) don’t like strong chilli or too much spice so my mum taught me how to turn all the herbs into a green curry paste. “She didn’t use much of the green chilli at all, just green herbs like lemongrass, Thai basil, coriander, as well as ginger, garlic and turmeric.” Her Bangkok-based mother, Duangdee Tanyongthong, was a chef at Thai restaurants in France before opening her own restaurant at home. Surprisingly, Bowyo had little interest in following in her mother’s footsteps until she moved to Brisbane 12 years ago to work part-time at her aunt Kittiya Tanyongthong’s Milton restaurant, Thai Terrace, while she studied English.

Encouraged by her aunt and cousins, she enrolled in a TAFE cooking course. “I liked creating new, different things, not just following the recipe,” she says. Bowyo melded her new skills with the flavours of her homeland to create unique menus. Dotted among Pawpaw Cafe’s breakfast staples of pancakes and eggs on toast is more unusual fare such as Thai omelets stuffed with succulent duck meat, Asian herbs and
pungent hoisin sauce. And while the kangaroo pad ped has bounded from the menu, the innovative chef continues to marry local ingredients with traditional dishes. Bowyo’s tamarind fish is made with crispy barramundi fillets and her green curry combines wagyu beef with kaffir lime and lychee. “About 80 per cent of my customers prefer to get the traditional flavour,” she says. intention is to source Australian products and fuse the two cultures in the kitchen. “I just want my experience from Italy, the products I know and the products here to match and make something nice, something different.” Massimo laments an absence of highquality traditional mozzarella and prefers to import parmesan and balsamic vinegar from Italy, but he estimates 90 per cent of the ingredients he uses are sourced locally. “I’m still trying to get my taste here for using the local products which is a big challenge,” Massimo says, listing finger limes and parsnips as new favourites. Along the way he has introduced a “raw and cured” section of fresh seafood and meats designed to share at the start of the meal and set a relaxed dining pace. “Italians eat more, it’s the lifestyle,” he says. “Like on a Sunday, you sit at the table at 12.30pm, maybe don’t get up until 5pm. It’s famiglia, it’s time to spend together. “With this kind of restaurant, you come to make an experience so I’m trying to get the customer to eat as much (variety) as I can.”
Bacchus, South Brisbane Massimo Speroni has no intention of serving hearty bowls of pasta. When the Italian-born chef took over as head chef at Bacchus Restaurant in January his plan was to share the culture and style of his homeland’s cuisine, rather than saturate the menu with trattoria favourites. “I don’t want to be like an Italian restaurant here,” Massimo, 32, says. “For the mains, we don’t have a lot of Italian dishes but more done in the style of Italian.” Growing up in seaside Roseto, in Italy’s Abruzzo region, Massimo’s diet was rich in Adriatic Sea bounty, perhaps influencing the first dish he created at Bacchus. “I’m not a potato gnocchi lover so I’ve changed the recipe,” he says. “It’s black ink gnocchi made from fish and squid ink and we serve it with mussels and calamari which we source from Australia, so the idea is like an Italian dish but we buy everything from here.” So while he draws inspiration from his European heritage, Massimo’s clear

Bucking the trend Belinda Seeney Jodie Hilton, 36, could have had a career as a barrel rider. Instead, she chose to saddle up for a completely different path. The bubbly mentor oversees The New Garde, a co-working fashion studio in Newstead (right). “I grew up in the rodeo circuit. My father was a bull rider, one uncle was a bull rider and I had another uncle who was a bareback and bronc rider so I was heavily immersed in that scene during my childhood,” she says. Declaring she “wanted to be a famous artist someday”, Jodie threw herself into visual arts, scoring a solo exhibition in Calgary in her early 20s before returning to Australia to pursue a career in visual merchandise and interior design. Her attention turned to fashion when she decided to launch a label, despite her inexperience. “I realised very quickly how much
money I would have wasted if I had just given it a crack,” she says. The label never eventuated but her studies and subsequent internships at fashion magazines and high-end brands whetted her creative appetite. “I had this idea that I had to move to Sydney or Melbourne to further my career … but what I noticed at a lot of the interviews was the people I was up against were also from Brisbane,” she says. “It made me wonder what people who are anchored here do and how
they champion their brands, how they make those first steps.” It spurred her to establish The New Garde, a shared workspace for emerging designers and solo operators to create, connect and progress their career. “It’s a complete ecosystem around the fashion designer so when a designer walks through the door, they’ve got access to all of my contacts and all the people (coworking) here. It’s a way for them to make a couple of mistakes without them being fatal to their own brand.” Jodie recently received a $25,000 Brisbane Arts and Culture Innovation grant, part of which will be used to launch The New Garde fashion label. Interns will be offered the chance to create pieces for the “learning label” while Jodie oversees its creative direction with plans to launch the first collection at Brisbane Fashion Month in October.

How did that come about? As marketing manager for Healthwise Global, I spent a lot of time travelling across the country. In every office there was one consistent theme: hungry and time-poor employees with no healthy snack options in sight. They would reach for the quickest thing – (often) overly processed and high in sugar – to get them through their afternoon slump. There was an obvious need for healthy, nutritious snacks that employees could just grab on the go. Who or what inspires you? I’m a big believer in self-education and I love learning from other entrepreneurs. Grant Cardone and Tim Ferriss are a huge source of inspiration for me and every day I listen to their podcasts and training courses. If I’m ever feeling a bit stuck, this always gets me back on the right track. When or where are you happiest? When I’ve achieved a goal, be it a big one I’ve achieved with my business, or personal such as getting up every morning at 4.30am to go workout. It makes me feel like I’m on the right track. What do you love about Brisbane? You can’t beat the weather here in Brisbane, and its proximity to Noosa. Most weekends my fiance and I just take off without even checking the weather app. Having lived and worked overseas, you really learn to appreciate the amazing year-round weather here.

Literary connection Fiona Purdon For the past nine years Penny Ashton has toured the world performing in Jane Austen-inspired one-woman comedy shows. But it was only in 2013 that the Kiwi performer received some surprising news. Her uncle had been researching the family tree and discovered their family was related to Irishman Tom Lefroy, who had a famous fling with a 20-year-old Jane Austen while visiting English relatives in 1796. “I was astonished ... it blew my mind,” she says. “It gives me a connection to Jane Austen and I now know without Tom Lefroy, I wouldn’t exist.” Jane wrote in a letter about her “Irish friend” Tom, who became Lord Chief Justice of Ireland (1852-1866): “Imagine to yourself everything most profligate and shocking in the way of dancing and sitting down together.” Penny, 41, of Auckland, was so inspired by her new personal connection with Austen that she wrote the
award-winning musical show, Promise and Promiscuity, which has been performed worldwide including in Edinburgh and Toronto. Now she is bringing the one-woman production to the Brisbane Cabaret Festival on June 10 and 11. Penny has created a new cast of characters inspired by the 19th-century author’s novels, Sense and Sensibility and Pride and Prejudice. In the musical, heroine Elspeth not only has to battle literary snobbery but her “gross” cousin Horatio’s digestive problems, and her mother’s nerves. There is also the enthusiastic Reginald based on Pride and Prejudice’s Charles Bingley, and Elspeth’s passionate and enthusiastic sister, Cordelia, based on Sense and Sensibility’s Marianne. “Once people realise I’m coming from a place of fondness for Jane Austen, they love the story and they love the characters and they can see I’ve done the research and they can relax,” Penny says. “There’s (also) a lot of
innuendo and pop culture references.” She first turned to the author for performance fodder during an improv concert in New Zealand nine years ago. Someone in the crowd yelled out and asked her to perform in the style of an Austen novel. “I immediately clicked into the genre by pretending to drink tea and attend choreographed balls and everyone was laughing so much,” she says. She is also touring another project – Olive Copperbottom: A New Musical by Charles Dickens and Penny Ashton, a tribute to Dickens’ classic Oliver Twist. When was the last time you saw people queuing up to get into an art gallery? You were at The Louvre in Paris, right? But I mean here in Brisbane. Well, if you were at the Gallery of Modern Art for the opening day of Marvel: Creating the Cinematic Universe you would have seen a line of people snaking for hundreds of metres as gallery-goers eagerly waited for the first look at GOMA’s latest blockbuster. Is it worth queuing for? Damn straight it is. This exhibition is a stroke of genius and it could end up being QAGOMA’s biggest attraction ever. Soon you won’t be able to wipe the smile off the face of director Chris
Saines. He and his team have unashamedly embraced popular culture and a film genre that is going gangbusters. But is it art? We think it is, because there’s so much more to Marvel than cartoons. There’s fashion design (the costumes are amazing), Marvel film artwork, digital artistry and the films themselves, which will be showing in the Australian Cinematheque at GOMA during this exhibition. When the exhibition was first announced as GOMA’s next blockbuster, some turned up their noses. But most critics have come around. And GOMA is a public gallery so why not put on a show for the public?

It all began as an idea by Screen Queensland chief executive Tracey Vieira. She and Premier Annastacia Palaszczuk put that idea to the Marvel folks in Los Angeles when negotiating the filming of forthcoming movie Thor: Ragnarok in Queensland. GOMA officials loved the idea and curator Amanda Slack-Smith was put in charge. For something like this you need the wow factor. That is supplied by the seven-metre tall Asgardian Throne, part of the set of Thor: Ragnarok, which dominates one gallery. They had to take off the side of the GOMA building to install it. It’s truly gobsmacking. The Formula 1 racing car from Iron Man 2 is pretty impressive too. The exhibition has more than 500 items including costumes and props. Thanks to a collaboration with QUT the whole thing is very interactive. One of the most popular interactive attractions is sure to be the “virtual mirrors”. Deb Polson, of QUT’s School of Design, says these mirrors “scan your movements and allow you to control stunning life-size character models from the very latest cinematic releases”. I looked in the mirror and saw The Hulk looking back and aping my every move. Awesome. A wall of touchscreen interactive maps allows viewers to explore the connections between characters and there are a number of other interactive elements. The “green screen” is popular too. Here you can have your photo taken and become insinuated into a Marvel poster which you can then email to yourself as a memento.
The Captain America diorama is pretty cool too and it features Captain America’s costumes and his WWII elite team, the Howling Commandos. Local artist Wayne Nichols has painted a Spider-Man mural on one wall of the gallery too, which is a nod to the graphic style found in early comics. There are some vintage versions of those on display to show where it all started. And did I mention the gift shop? Merchandise is not a dirty word in this case. Opening the exhibition, the Premier stressed that art should be for everyone and this show exemplifies that idea. Enjoy.

Little wonder WONDER WOMAN hhh Director: Patty Jenkins Starring: Gal Gadot, Chris Pine Rating: M Running time: 141 minutes We’ve waited a long time to see a female superhero in a lead feature role. With so much riding on those well-rounded shoulders, Gal Gadot’s Wonder Woman was perhaps destined to disappoint. On a physical level, there will be few quibbles. In her second screen outing as the superhero (she stole Dawn of Justice from Batman and Superman), the Israeli model-actress looks every inch the goddess she is supposed to be. And two years as a soldier in the Israel Defence Forces means Gadot can handle herself convincingly in screen combat. But as a character, Diana, Princess of the Amazons, is a little earnest.
And as a role model for female empowerment, she is predictable. Wonder Woman takes itself seriously. There’s an old-fashioned Saturday matinee innocence to this M-rated fantasy, in keeping with its girl’s own, World War I backdrop. Chris Pine (main image with Gadot) is well cast as Steve Trevor, the dashing US air force pilot rescued by Diana when he crashes into the sea off Themyscira. He’s the first man she has ever seen (cue the double entendres).
Learning about the “war to end all wars” that has been raging in a parallel universe for years, Diana accompanies Trevor to London to vanquish the forces of evil. In a bid to stop rogue German General Erich Ludendorff (Danny Huston) and his sidekick Doctor Poison (Elena Anaya) from unleashing their deadly gas on soldiers and civilians, Steve enlists the help of a motley bunch of mercenaries including Ewen Bremner’s drunken sniper, Said Taghmaoui’s fast-talking
conman, and Eugene Brave Rock’s opportunistic Native American Chief. The action is solid enough and the effects are impressive, but the first female superhero movie lacks imagination. Following in the footsteps of Jennifer Lawrence’s reluctant warrior, Katniss Everdeen, Angelina Jolie’s athletically stylised Lara Croft, and even Sigourney Weaver’s alienkicking Ripley, Wonder Woman feels like a bit of a throwback. Magic in the mix RESTAURANT Tony Harper Let’s imagine for a moment that Ian McKellen floated in wearing his X-Men Magneto suit, picked up Stokehouse and deposited it somewhere else, away from the river – Ipswich, Burpengary, Bardon maybe – with everything else still intact. Would it have the same lustre, or is that magical vista of the Brisbane River the restaurant’s defining factor? It’s kind of a moot question – a big part of the Stokehouse identity is obviously its glorious position and quite stellar city views: imagining it elsewhere is like imagining myself with a smaller nose, or my car painted yellow (oh dear) with a VW badge on the front. But there’s the rest of Stokehouse – the food, the drinks, the people and the attitude. They are definitely worth talking about. Service runs on ball bearings – slick, smooth and cosseting from the moment you stride in the door until weaving out sometime later. And it’s a staff that knows its stuff, well-versed on the wines, intimate with the food and blessed with that rare blob of common sense that predicts a diner’s need before it arrives: simple things such as noticing a nearly empty beer glass, a questioning face, a missing piece of cutlery. It is a floor that is manned by professionals, and if they raise an eyebrow (and I doubt it) at my shabby attire midst the suits and ties

of the city crowd, they at least do it discreetly. There’s a wealth of wines on offer, from Kiwi sauvignon blanc to big-end Australian and European reds. But there’s also insightful stuff on the list – bottles for a reasonable price with interesting contents. I ask for gruner veltliner and I get it – Salomon Wachtberg Austrian, sublime and well under $100. Stokehouse has always housed some good wine people and still does. There is a moment, when one of the staff is poised with her mental pen and paper twitching, that the menu
lets me down. There’s nothing crying out to me – no offal, no oddity from the depths of the ocean, no jowl. It’s a safe menu. Stokehouse, I assumed, needs broad appeal rather than quirk and intrigue. I opt for a couple of fish courses, ceviche ($19) and “market fish” ($42) and both are exceptional enough that my assumption is slayed: these are carefully, artfully concocted dishes with plenty of intrigue in their makeup. They don’t need offal to be clever. The ceviche is tuna, smalldiced, wrapped in daikon, dressed with elderflower vinaigrette: vibrant,
sweet, tangy, salty … quite special. Market fish is a slab of kingfish fillet, exquisitely presented, perfectly cooked, nestled in a pool of what’s called carrot reduction (rich, thick, sweet) and parked beside a small salad with purpose. It is exceedingly good food, perhaps not as wondrous as you’ll find at our pinnacle restaurants, but superb nonetheless, and as well cooked – as brilliant– as the venue. Magneto could take Stokehouse anywhere and it would still be terrific, but in the end it’s the site on the bank of the river that makes it magic.

AM Marche du Macaron, Gordon Park Early-morning exercisers, city commuters and locals have already discovered the deliciousness that is Marche du Macaron, tucked within walking distance of the Kedron Brook Bikeway, Lutwyche bus station and Gympie Rd. DAY ONE: MORNING When my sister and I manage to sync our schedules for a long-awaited girl’s weekend, Byron Bay beckons. A hop down the highway and we land at pretty Folk (facebook.com/ folkbyronbay), an eatery with plantbased fare and just the place to ease into Byron’s laid-back vibe. Timber beams are laced with devil’s ivy and the comfortable interior is studded with treasures from the 1970s.
Have you ever wondered exactly how happy a pig in mud can be? They set the bar pretty high at rural hub The Farm (thefarmbyronbay.com.au). Make the Three Blue Ducks produce store your first port of call for a picnic basket brimful with local goodies. We’re talking Nimbin Valley cheese, The Bread Social baguette, Naked Byron Dips, chocolate brownies, berries and more. Next, have fun finding the perfect spot to spread your rug as you wander past floppy-
eared pigs and fields awash with sunflowers. We were lucky enough to meet The Farm’s most famous “hairy coo”, the fuzzy Braveheart, and his faithful shadow Silence the Lamb. Stop for a snack at the macadamia orchard where a windfall of buttery native nuts awaits under a leafy canopy. Three Blue Ducks picnic hampers cost $100 and feed two to four people.
Shopping is hard work, but there’s scope for rejuvenation at Elements of Byron (elementsofbyron.com.au). Swing from cushioned chairs overlooking lagoons, lounges suspended in the pool or head into the spa. We’re booked into one of the resort’s stunning beachfront villas. A word of warning: you might be tempted to spend the rest of your stay stretched out on the silvery cowhide in front of the fire, or chindeep in bubbles on the private bathing deck. I’ll confess, I was a little late joining the cocktail crowd at the resort’s poolside firepit. Once there, I am introduced to Brookie’s Gin, made in a rainforest distillery whose potions are infused with species native to the NSW north coast, including aniseed, myrtle, ginger, rye berries and finger limes. There’s more magic in store at Graze Restaurant, the new base for Simon Jones. The former head chef at Marco Pierre White’s Michelin-starred L’Escargot in London is embracing the seachange with a menu spanning grilled Ballina prawns in burnt anise butter to roasted New England lamb rump with native saltbush.
AFTERNOON We head to the town’s heart for some souvenirs – quite simply, nobody does barefoot luxury better than Byron labels. Spell & the Gypsy Collective (shop.spelldesigns.com) is a must-visit for the haute hippie. From the 200year-old Moroccan doors to the Balinese hooks adorning the walls, this gorgeous space will make you want to try on one of everything.

DAY TWO: MORNING It’s hard to beat a soundtrack of crashing surf for a good night’s sleep, and even harder to tear myself away from piles of pillows in time to join the First Light Club. But it’s worth it. As the easternmost point of mainland Australia, Byron is the first place to see the sunrise. Greet those golden rays with the resort’s in-house yogi, who hosts a free class overlooking the ocean. A reviving cup from Marvell Street Coffee will do the rest – it’s waiting alongside bountiful breakfasts at Graze. Then it’s time for a treatment at the resort’s Osprey Spa
(elementsofbyron.com.au). Try the Rainforest Revival Ritual with lemon-myrtle scrub and massage.
AFTERNOON After a lunch stop at Doma Cafe in the town of Federal, our host proves he’s more than just a sushi-making master when he gives us the hottest tip of them all: Minyon Falls. The 15minute drive from Federal winds past roadside fruit and veg stalls through picturesque pasture and ancient rainforest. Nightcap National Park’s main attraction, Minyon Falls lookout, is an easy stroll from the
carpark (nationalparks.nsw.gov.au). The misty 100m cascade, slicing through a palm-filled gorge, is alive with dancing rainbows. Don’t forget to find the pot of gold at the bottom, a rock pool made for mermaids.
EVENING Head back into town to catch a Byron sunset session. You can drive up to Cape Byron Lighthouse (Lighthouse
Rd, nationalparks.nsw.gov.au) or take the scenic stairs from the metered parking at Wategos for a bonus workout. The grassy stage that marks Australia’s most easterly point usually inspires some form of spontaneous live entertainment (we scored an acoustic recital from a guitarstrumming backpacker), but you can rely on nature to put on a show. You might even get a wave from a whale.

On the
verge Tonya Turner After their West End apartment flooded in 2011, Jodi and Geoff Tainton decided to head bush. But they didn’t want to venture too far from the city and the lifestyle they’d come to enjoy there. A rare vacant allotment in Mitchelton purchased from a family friend offered the best of both worlds, even if they had to do the hard yards to make it build-ready. “I grew up in the country and Geoff loves gardening and being outside,” Jodi says. “The bush (on the property) was higher than me when we got here and over nine months we cleared it ourselves. “Every weekend we’d come out and chop and chop because we wanted to get to know our land. We’d get covered in ticks because of all the kangaroos coming through.” When it came to designing a house for the steep northeast-facing site, they called on Geoff’s sister and brother-in-law, architects Sarah and Duncan Betts. “We told them we wanted a retreat,” Jodi says. “Geoff wanted a sense of adventure and I wanted to feel like I’d left the city. We like minimal clean lines. “(Using) natural materials was really important as well. This view is so beautiful and when I was out the back I felt like I was in the bush, so I wanted to totally embrace that and be part of it.”

Black metal sheeting on the home’s exterior was inspired by the bushland setting. “It’s like when a bushfire has been through, embracing that charred look like a burnt tree, so the colour was just part of the bushland and the environment and not competing with it,” Jodi says. The “adventure” part of the brief took the form of a secret room tucked above the office and accessed by panelled doors disguised as a wall. The room is decorated with treasured items collected on their regular trips overseas, including handpainted paper dolls from Prague. “When our nieces and nephews come over they’ve got to go in there and see things and they can sneak in and hide,” Jodi says.

Around the house, baskets of yarn hint at Jodi’s passion for knitting. Her craft group often gathers in the office. “On Saturdays we all go to someone’s house and knit and drink cups of tea and coffee and sometimes champagne and gin. We’re a quirky bunch made up of a marine biologist, psychiatrist, vet and other professions,” she says. Jodi and Geoff worked closely with
Duncan and Sarah on customising and contributing to the house. Geoff, who has a background in visual communication, designed the ceilings’ patterned plywood panels. Jodi sourced decor from Space, including the lounge suite, dining chairs, rugs, light fittings and more. An extra room under the house that wasn’t in the original plan is where Jodi spends most of her time.
“I love this room. It’s really cool and it was put on to connect the building to the garden. We’re so glad we did because you feel really private here and right in the bush. “The serious coffee machine is down here and a lot of knitting happens here too,” she says. MAGICAL SPACE … The design was created with the owner’s granddaughter in mind.
“If you have a garden and a library, you have everything you need,” the Roman philosopher Cicero once said. The owner of this garden in Albany Creek, was of a similar mindset. Both an avid reader and garden lover, she has a rich family history of horticulture and a passion for plants. When she recently moved into the house, rejuvenating the gardens was top of her to-do list. Landscape architect Eva Porter was brought in to create a garden that was private and lush with reading nooks, offering a magical space for the owner’s granddaughter to play when she visits. “There is a beautiful recycled timber log to sit on in the garden,” Eva says. “This natural and rustic material was chosen to soften the garden as well as provide a feature statement. “It also looks a little like a log in a fairy garden.”
Adding personal elements was a priority in the garden. A small area serves as a remembrance garden, blooming with brightly coloured bromeliads given to the owner by friends who have since passed away. The rest of the garden was designed using textural plants with a subtropical influence including bougainvillea, native gardenia, silver lady fern, cordyline “Caruba Black”, purple waffle plant and mona lavender. porterdesigns.com.au

This ugly duckling suggests a flavour of celery meets walnuts. Used in a soup, it is the quintessence of winter. Improve it by adding potato to give it more structure. Similarly, make a creamy celeriac bake or crispy rosti even better with some spud.
Celeriac’s starring role is all too often hidden – coarsely shredded and folded through a mustard mayonnaise. It deserves more than celeriac remoulade.
CELERIAC ROSTI, CELERY SALSA VERDE AND CRISPY SPECK Prep time: 50 mins Cooking time: 20 mins INGREDIENTS 1 large celeriac, peeled, coarsely grated 1 large potato, peeled, coarsely grated 2 large golden shallots, peeled, and thinly sliced 1tbs lemon juice Sea salt and freshly milled pepper 1tsp coriander seeds, toasted and finely crushed 1tsp cumin seeds, toasted and crushed 1 garlic clove, peeled and crushed 2 eggs, beaten 2tbs plain flour Vegetable oil, for frying 100ml creme fraiche 5 thin slices speck, grilled until crisp 2 finger limes, halved, pulp extracted Nasturtium leaves, to garnish
Celery salsa verde 100g celery stalk, finely diced (reserve heart leaves, finely chopped) 1 lemon, zested 2 cloves garlic, crushed 20g baby capers, desalinated (plus extra for garnish) ½ bunch flat leaf parsley, finely chopped

¼ bunch mint, finely chopped ¼ bunch chives, finely chopped 2tbs white wine vinegar 100ml extra virgin olive oil Sea salt and freshly milled pepper
METHOD Rosti: Combine celeriac, potato, shallots, lemon juice and 2tsp of sea salt in a colander lined with muslin. Combine and leave for 30 mins. Gather up muslin and squeeze to remove liquid. Place into a bowl and add spices, garlic, eggs and flour. Divide into 10 and shape into round, flat cakes. Heat 1cm of oil in a heavy based fry pan over medium-high heat. Place cakes into pan and cook for 4 mins on each side or until golden. Drain on a cake rack. Celery salsa verde: Blanch celery in boiling salted water for 10 secs, arrest in iced water then drain. Combine with remaining ingredients. Serve two cakes with salsa, creme fraiche, spread around speck, finger lime, extra capers, celery and nasturtium leaves. Serves 5. Trends to excite Keeping up to date with the latest kitchen trends is all part of the job for the design team at Enigma Interiors. Designer Lee Hardcastle, who worked on Enigma’s 2016 HIA awardwinning kitchen design, says elements from the late ’70s and ’80s now play a part in kitchen design in 2017: think fun, quirky edges and corners, patterns and polygon abstract shapes.
