HELLO 03 Nov 22 is going to be good. It’s the annual #SnapBrisbane day, when lovers of Brisbane will express their feelings in a groundswell of snapping and social media posting. It will become a time capsule of 2017 in this city (Cover story, P11). Remember time capsules? Buried under school asphalt only to be dug up decades later to reveal (in my case) video cassettes of children skipping and yellowed crayon drawings of life circa early 1980s. But this time capsule will be pictorial, and voluminous. What are you going to snap (and hashtag SnapBrisbane to join in)? I like to take images of accidental beauty, architecture and, of course, iconic Brisbane-isms – fallen jacaranda flowers, the Story Bridge (my favourite landmark), our exceedingly blue sky. I am not a consummate photographer by any stretch of the imagination, but with the judicious application of a filter (or two), and some inventive angles, voila – a moment of magic captured. Join in! NOW & THEN 1890 v 2017: Time travellers from the 1800s would have no problem recognising Union St, Spring Hill. Rising up to St Paul’s Terrace and the St Paul’s Presbyterian Church is a streetscape that has remain largely untouched, apart from the addition of a few brick 1950-70s homes. The dip in the middle – now Water St – was called Spring Hollow, a natural collection point for the spring after which the suburb was named. Chic in the city Leesa Maher By day she is a public servant but on weekends Marie Hillard is The Brisbane Girl – a fashion influencer who can be seen striking a pose at beauty spots around the city with her husband John behind the camera. “He does an amazing job and for the most part we have it down to a fine art,” says Marie, 41, of Moorooka. “Sometimes I may do two to three dress changes, so he does brilliantly as my photographer-Instahubby.” Street style with a feminine/tailored edge is Marie’s signature, a look which has earned her almost 15,000 followers on Instagram. She and John shoot in the early morning on Saturdays and Sundays, when the streets are quiet and they can snap away undisturbed. South Bank and James St in Fortitude Valley are favourite haunts. “We photograph in mostly laneways and industrial areas or against lovely walls. I can find inspiration for a shoot from a timber staircase to pretty vines that cascade down a brick wall,” Marie says. “Historic buildings are perfect as the clothing always becomes the focal point. If I’m looking to create a grand photo I’ll be straight to Kangaroo Point with that amazing Brisbane skyline or QUT campus in the city.” Growing up in Brisbane, the child

of a Malaysian mum and Australian dad, Marie was a fan of fashion magazines and “never left the house without getting dressed up”. But it was a trip to New York in 2014, to visit her now US-based mother and brother, which sparked her sideline in fashion photography, styling and marketing. “I loved walking the streets of Soho and was lucky to have a little personal tour with one of my brother’s friends. She had worked as a (fashion) buyer for some years, so it was great to have her knowledge on the day.” As an influencer, Marie attends fashion shows and VIP events and collaborates with Brisbane designers, such as Sacha Drake, and other stylists on fashion shoots. She says aspiring influencers don’t need fancy equipment to get started – just an SLR camera, and a smartphone for video and posting purposes. “I highly recommend you are selective with the images that you post and to ensure that you engage with your followers by taking note of their comments,” Marie says. “My followers always tell me when I post something incredible and sometimes images that I wouldn’t have expected to be so popular are the ones that they love the most.” instagram.com/thebrisbanegirl/

Belinda Seeney Sneaky tactics have shaped the sports I steer my own unwitting progeny towards Playing sport is such an important part of childhood. Steering a child into a convenient sport is an important part of parenthood. Growing up, I had not the faintest inkling of the Machiavellian machinations disguised as affable indifference that shaped my physical education. I breezed through my younger years secure in the assumption my siblings and I chose our extracurricular activities. It was a happy coincidence the sports I selected were the exact same ones my brother and sisters wanted to play. Never once did it dawn on me that said sports did not seem to require extensive training sessions or demand specialist equipment and were largely relegated to compact blocks of time on a Saturday, dipping into the odd Sunday for a carnival or tournament. My parents were masters at their craft and the sneaky tactics I’ve gleaned from such adroit role models

have shaped the sports I steer my own unwitting progeny towards. No rowing – training sessions are far too early. Keep oar-some enthusiasm in check by marvelling at Brisbane’s unseasonably cold mornings and be sure to point out how fast CityCats travel. No swimming – also too early. Mention how pungent the lingering scent of chlorine is and tell tales of people whose hair turned green after a dip in the pool. No cricket – seriously, a full day in the sun watching a game unfold at a snail’s pace? No thank you. It would be a shame to miss all those birthday parties young friends hold on Saturdays, too. No equestrian events – too expensive. A few militant PETA pamphlets scattered around the house ought to do the trick. No Nippers – too far to drive. Add Jaws and The Shallows into the mix for family movie night.

No boxing – far too scary. Same as above but with Fight Club. I’m by no means anti-sport and have cheered, consoled and dissected performances for netball, crosscountry, gymnastics, volleyball, hiphop and even football – AFL, soccer, touch and rugby – despite it being played in the dead of winter on fields designed to catch the tradewinds from Antarctica. Blessed with children who grow like magic beanstalks, I smugly steered them towards basketball. It ticked all the boxes: a one-hour game played at a respectable time in a weatherproof indoor court with plenty of spectator seats. It seemed too good to be true ... and it was. Cost of basketball shoes that won’t mark the comfortable, weatherproof indoor court? An eye-watering tripledigit amount. Training? Several sessions a week. Training time? 6.30am. I forfeit.

There’s panic every time a storm approaches. But hey, get over it people. It’s summer, it’s storm season. Please, try to enjoy it. Being a weather watcher (some might say weather nut), I love this time of year. Winter can be boring, all those blue days. Give me subtropical summer any time. I’ve been watching weather keenly since I was a teenager. Being a surfer, I learnt to read the elements and this has continued throughout my life with a bit of help from the Australian Bureau of Meteorology website. Those of us in the weather trade just call it the BOM. You know what I’m talking about, you fellow BOM people. I love the BOM and whenever a storm is on the horizon I’m all over the BOM site like stink on a monkey. I love watching online as storms track towards us like angry, colourful amoebas changing shape as they sweep in, mostly from the west. Our Maltese Shih tzu, Sarge, doesn’t like storms much. In fact he’s terrified of them but there is an upside

to this. He has become something of a furry barometer and when he starts quivering and quaking I know the barometric pressure must be dropping. When the thunder starts rumbling he’s impossible and follows me around the house whimpering to be picked up and cuddled. But I like storms as long as they are not too drastic. Watching them approach is one of my greatest pleasures. Being out in them is not much fun though. I recall being in the surf at Main Beach one morning when a thunderstorm hit rather suddenly. Sitting there with forked lightning spearing into the water nearby was a bit scary and I paddled in pretty quickly. I didn’t want to end up like a snag at a barbie. But watching storms sweep in from the safety of the front veranda is enjoyable and the aftermath is always wonderful, the cooling effect with water dripping everywhere, the scent of frangipani in the dank air.

Phil Brown I love weather and most of the time the information on what is coming is readily available and accurate thanks to the BOM. It surprises me how many people are oblivious to all this though. I’ve spoken to folks planning outdoor events or jaunts with storms imminent and informed them of the foolishness of their plans and they have seemed amazed. I was in a cab the other day and the driver said he thought it might rain. I informed him that it wouldn’t because I know what’s going on meteorologically. “Oh those clouds look a bit dark,” he said. “But they are not rain bearing,” I said. Didn’t he know who I was? I’m the guy who was once dubbed Punxsutawney Phil, after Groundhog Day’s weather-predicting groundhog. Yep, that’s me, Punxsutawney Phil, so, a little respect please.

Amanda Horswill Declaring your love of Brisbane is as simple as snapping a pic and sharing it with the world. There will be thousands of snappers out in force on Nov 22, the day that’s the zenith of the #SnapBrisbane campaign. The campaign, launched on October 18, aims to create a social media frenzy of hashtagged images, broadcasting the best bits of our city. Similar events are being held across the country (but let’s see if we can shout them all down with our snaps). Last year, more than 6000 images were posted in Brisbane alone, with more than 35,000 posted across the country. To join in, simply go to your favourite spot, snap a pic, detail the location and why you love it, and hashtag SnapBrisbane when you post on social media. Whether you’re creating an iconic representation of your city that will last the ages, or snapping a quick pic on your walk to work, attention to detail and an understanding of photographic principles make a big difference. Basic photography guidelines haven’t changed much since the Box Brownie, even though modern photographers can slip a camera into a jeans pocket. What are your tips for a great shot? Simplicity: (Above, top left) Think about what you want the viewer to notice and make it obvious. Place the photo’s focus in the first third or the last third of the scene. If there’s something distracting from your main subject, cut it out. Leading lines: (Above, top right) A handrail, path or train track (or an arm) can guide the viewer through the photo and make it more compelling.

Exposure: (Above, bottom left) Smartphones don’t always expose photos correctly. You can change exposure on an iPhone by tapping the screen to focus, and then tapping the sun icon and dragging it across the screen. Samsung phones have a Pro mode that lets you change exposure and settings such as white balance. Portraits: (Above, bottom right) If your smartphone has dual cameras,

use them to create smart portraits with blurred backgrounds that appear to be captured by a dedicated camera with a wide aperture. RAW: (Main image) For greater detail and editing options, you can shoot photos in RAW format using Adobe’s Lightroom app. It records larger files that let you change a photo’s white balance post-capture. How will you #SnapBrisbane? This year I will start by finding a community group that I feel does great work and spend some time documenting what they do. I love photographing people, especially people who come from a different cultural background to myself. Also, I really love the visual problem solving that goes into taking a photo, looking at a scene/situation and trying to make it work as a compelling image.


What are your photographic secrets? My hints for taking #SnapBrisbane photos would be to shoot what you know, photographing people you know, going about their day. When photographing family friends or some other activity, follow your passions. Don’t underestimate photographing day-to-day life. This has great social significance so it’s well worth documenting. The camera captures a moment in time that we can all look back on. Do you use filters when posting on social media? The rules don’t change for Instagram. A great photo is a great photo no matter. What’s your favourite place to shoot? The best locations in Brisbane for me are close to the city, the Valley and West End. I work in the finance industry and being Lady Brisbane is a hobby that began four years ago. When I was out running with friends early in the morning I would often see a beautiful sunrise and other images of Brisbane and wanted to share what I saw. My running coach at the time was on social media and she introduced me to the world of Instagram and I’ve never looked back. How do you choose a location? It’s more that a location chooses me. I see a great view or angle for a photo and just take it. That’s the beauty in using an iPhone – you have your camera with you all the time. No setting up a tripod, lugging around heavy lenses and camera, I’m a girl on the go and my phone serves me well. Five of your favourite locations? South Bank Parklands, Wilson Outlook Reserve (New Farm), New Farm Park rose garden, Mt Coot-tha Lookout and anywhere with flowers blooming and a glimpse of the city.

Here are some tips from the collective: Location: Before shooting, find a background that will contrast with the face of the subject. Golden hour: The first and last hours of daylight are among the best times to shoot in the open due to the soft, warm, natural lighting. Depth of field and camera settings: A good-quality camera allows the use of lenses and settings to flatten and blur the background, highlighting and drawing attention to the subject. Relax your subject: Everyone has seen a picture where the subject looks awkward. The more comfortable and happy you can make them feel, the better the photograph will be. Consider the angle: Often people simply stand and snap, but shooting looking up or down on a subject can create a new and interesting image. Sport: Stay close to the image and

keep the light behind you. Then crop the frame to minimise background distractions. Water and the beach: Look for reflections on the surface. Try to keep both the camera and horizon level.

Landscapes: Colour can be distracting so try black and white. Have a strong subject within the frame. Level horizons are important here, too.

Where do your photographers go for the best shots in Brisbane? Our photographers scouted the city and decided on South Bank for the best views of the city skyline and New Farm Park to exploit the beautiful parklands and riverside walk.

Be abstract: Look out for textures, tones and patterns. It’s about seeing something often missed. Shadows can make simple, abstract shots.

When is the best time to shoot? Capitalise on sunrise and sunset hours. In Brisbane during summer, the peak window for sunrise is from

4.45am to 5.30am, and the sunset window is from 6.15pm to 7pm. Steer clear of lunchtime hours in summer. Any trade secrets? Our lead photographer Claire Young says: Look for repetition or symmetry in the scene. Small details can really make a shot successful. Slow down and notice the little details. Take time to observe your surroundings, sit down on a bench and really observe. Enjoy being lost – wandering off the beaten path can open opportunities for some of the best photos. Set aside time to wander the streets. This is when the magic happens.

SERVES WITH VERVE Modern Italian adds pizzazz to James St glamour

Infinity and beyond Phil Brown It’s not at all an exaggeration to describe Yayoi Kusama’s work as cosmic. Here’s the thing – the night after the opening of Yayoi Kusama: Life is the Heart of a Rainbow at the Gallery of Modern Art (GOMA), I went to see rock star physicist and cosmologist Brian Cox at the Brisbane Convention and Exhibition Centre. Why do I mention this? Because Cox showed us the most amazing photos of deep space, photos of galaxies and star clusters and other wonders, and the weird thing is that these photos looked like the inside of a Yayoi Kusama art installation. I’m thinking in particular of her 2015 work I Want To Love on the Festival Night, an immersive hexagonal installation with external and internal mirrors and a floor of multicoloured flashing lights. Go to GOMA, stick your head inside that and tell me it doesn’t look like the cosmos. Same goes for her “infinity room” Soul under the Moon. I wonder if Brian Cox got a chance to look at these works while he was here? He would have been blown away. Kusama is an artist who reaches out into space and delves deep into the human heart. Her work is, yes, cosmic. It’s colourful, joyful, engaging

and fun. Weirdly, this show is paired with the more serious Gerhard Richter: The Life of Images. But in a strange way these two exhibitions are complementary. Both artists are deep thinkers, both are in their 80s (Kusama is 88) but only one of them is a permanent resident in a private psychiatric hospital. That’s Kusama. It’s a detail that adds to her mystique, I think. It has been pointed out that she is one of the world’s most loved artists and Queensland has a special relationship with her. We have been

collecting and showing her work for more than two decades. This show was co-curated with the National Gallery of Singapore and was shown there before arriving here. It went off in the city-state, according to QAGOMA director Chris Saines. “The exhibition attracted a record number of visitors when it was seen in Singapore recently and we have no doubt it will be extremely well received here in Brisbane,” Chris says. QAGOMA’s curator of contemporary Asian art, Reuben Keehan, co-curated this show.

He says Yayoi Kusama is known and loved here. Some people love her pumpkins, some her rainbows, some her giant inflatables. There’s a lot to love. In fact there’s something for everyone in this show which is also a serious survey going back decades, with paintings, installations, videos, sculptures and plenty of interactivity. Step into the spotty yellow room that is her work The Spirit of the Pumpkins Descended to the Heavens and if you’re beaming after that, check your pulse. Fiona Purdon Playing the hero is becoming a habit for rising Hollywood star Alex Russell. The Brisbane-born Alex is on the big screen now playing hopeful rescuer of Daniel Radcliffe in the film Jungle. He’ll return to cinemas later this month, as an elite firefighter alongside Josh Brolin in Only the Brave. And in January, he’ll make his TV debut as a cop in the major series S.W.A.T., on Foxtel’s FOX8. It’s a long way from his days as a “chubby’’ 10-year-old who was often teased at school. “I had this fluffy, woolly hair, I was this fat kid with glasses and braces so I was teased, mostly for being chubby,’’ Alex, 29, says. “Now when I look back on it I laugh, I probably would have teased myself. It’s funny how my life has worked out.’’ Los Angeles-based Alex was excited to come home to Queensland last year to play American photographer Kevin Gale, alongside Daniel Radcliffe, in the survival film Jungle. “Daniel is an awesome person and he is an awesome actor and artist. I respect him as an artist. Ever since Harry Potter he has had this focus that he wanted to expand himself and challenge himself and break the boundaries,’’ Alex says. Jungle, based on Israeli adventurer Yossi Ghinsberg’s memoir, covers the real-life events of 1981 when Yossi (played by Daniel), Kevin, Swiss friend Marcus Stamm (Joel Jackson) and mysterious Austrian guide Karl Ruchprecter (Thomas Kretschmann) set off to find a lost Indian tribe in the

Amazon jungle. Alex spent several weeks filming in the jungle river networks and villages in Colombia, South America. But most of the jungle scenes were shot around Mt Tamborine in the Gold Coast hinterland. “It’s funny because you go out to South America to shoot jungle but the Australian jungle looks more jungle than the jungle we were meant to portray,’’ Alex says. A Yatala warehouse, south of Brisbane, served as the makeshift home of Yossi’s family. In Jungle, when things don’t go to plan, Marcus and Karl try to return on foot, while Kevin and Yossi go on a raft down the Tuichi River until the two are separated. Kevin leads the rescue mission to save Yossi. “Kevin is a real-life American hero who acted on his conviction that Yossi was still alive, which is so inspiring to me,’’ Alex says. In Only the Brave, Alex plays the

role of real-life firefighting hero Andrew Ashcraft. “There is definitely an added sense of responsibility you carry when you are playing someone real and I felt that with Kevin and with portraying Andrew.’’ Only The Brave depicts the courageous efforts of an elite crew of firefighters who battle a deadly wildfire in Arizona in 2013. Alex is now based in Los Angeles, where he lives with long-time glamorous girlfriend and actor Diana Hopper (Goliath). There, he’s filming the big-budget S.W.A.T. – his biggest American gig yet. He plays rebel police officer Jim Street. Rockhampton-raised Alex, who features in Angelina Jolie’s movie Unbroken and Ivan Sen’s film Goldstone, says he would not have become successful if not for the support and faith of his parents Andrew and Frances who “brainwashed me with positivity’’.

“I attribute everything to my parents. My mother always believed that when I left school I would become an actor and go to NIDA and that’s what I did,’’ he says. Jungle is in cinemas now. Only the Brave will screen from Nov 30 and S.W.A.T will be showing on FOX8 from Jan 2018.

Oscar-winning director Kathryn Bigelow and the journalist-turnedscreenwriter Mark Boal tackle the 1967 violent 12th Street Riot in Detroit in which more than 40 people, the majority of them African-Americans, were killed. The filmmakers tell the story from the point of view of a diverse bunch of young, mainly African-Americans holed up at the Algiers Motel. When one of the long-term residents rashly fires a starter pistol, the full might of the Michigan police force rains down upon them, supported by the National Guard and Army paratroopers. Led by Philip Krauss (Will Poulter), a small group of police offers systematically brutalises and terrorises their “suspects” to gain a confession. Disturbing, provocative and timely, given the parallels with the cases of police brutality and homicide that fuelled the Black Lives Matter campaign, this dramatisation of events won’t let us look away.

Italian glamour RESTAURANT Tony Harper Bucci is a terrific place to plonk your butt for an hour or two, soak up the surrounds and peer at the goings on of James St’s glamour stretch. And they are good surrounds: bright, comfortable, nicely boisterous with its open kitchen as the focal point. The theme is Italian – fresh, contemporary, plenty of classics but no stodge. And, unlike some Brisbane Italians, it comes without attitude: the service is pandering, friendly and reasonably well-drilled. Starters so often hold the best bits of the menu and Bucci doesn’t break the mould. Zucchini flowers ($24.50) come three to a plate, stuffed with ricotta and parmesan – by the book, delicate, lovely. Bruschetta ($14) changes daily; we get baccala (cod) on ovals of rather solid toasted sourdough. And calamari fritti ($15) is a good rendition. I’m there with a seafood specialist (of Italian descent) so I’m a little nervous about the calamari hitting the table … it passes. Two plates of pasta make up our mains – the boar ragu ($33) and a spanner crab linguine ($38). The ragu is the northern Italian version (opposed to the rich and sticky stew-like, slow-cooked French version), which means finely minced, like boar-derived bolognese. I don’t

get it. This is anonymous mince, ground finely so it’s kind of dry despite the tomato-based sauce. It’s combined with breadcrumbs: nice touch as they soak up the sauce and add some textural interest. There’s a tipping point with pasta – a moment when the balance between carb, sauce and protein hits or misses

the mark. The crab linguine has plenty of sauce but could do with more crab. It’s all a bit lean when it comes to the good bits. Italian wines make up a good portion of the wine list, from serious barolo to inexpensive chianti, and spanning Friuli to Sicily. About 20 wines are offered by the

glass, plus a Coravin selection. The beer selection is stifling – two Italians (Moretti and Menabrea); Peroni and Leggera on tap, then a handful of basics. I liked Bucci on my first visit four years ago, and I like it now. The food is solid, the service good and the room terrific.

Striking selection WINE Mike Frost When French cognac giant Remy Martin started Blue Pyrenees Estate more than 50 years ago, I doubt it imagined what an amazing winery it would become. complex, generously flavoured wines that repay long cellaring. The whites are almost equally varied, not unexpected given the estate is planted with chardonnay, sauvignon blanc, marsanne, fiano, roussanne, riesling and ugni blanc. It’s the varietal reds that really show Blue Pyrenees’ quality and

value. They all exhibit distinct varietal characters along with well-handled oak maturation and, while drinking well already, have the structure to repay short-term cellaring. And at $17-$20 they pack a punch. An ideal wine for Queensland’s summer is the Bone Dry Rosé ($18), a blend that shows lifted fruit on the nose and palate and a fresh, crisp finish. Enjoy it chilled by itself or with almost any food short of a big steak or roast beef or lamb. The Estate Red blend shows rich blackcurrant and plum fruit, with a hint of mint and bay leaf and long, fine tannins. Drink it now with roast lamb, or cellar for five years or more. By Tonya Turner Most people don’t hire architects to build cubby houses – unless the cubby house is the home they plan to live in. When the owners of this idyllic parcel of land in the leafy northside suburb of Hendra engaged architect Robert Takken to design a home for their family of five, they wanted something that evoked the fun and playful spirit of a cubby house. “The concept of the house being a supersized cubby house emanated from the existing backyard where there were no trees – only lawn with a faint hint of a makeshift cricket pitch, an above ground vinyl pool and a Hills clothes line,” Robert says. “The only item missing from the backyard was a cubby house – an essential item for any Australian backyard.” The existing old ramshackle house on the site was removed along with the pool and clothes line to make way for a new contemporary home suitable for modern family living and Brisbane’s subtropical climate. With the old house gone, there wasn’t much left to do to the block which was clear of any significant vegetation and had a gentle fall away from the street. With its wide northern orientation at the rear, it provided the perfect canvas for Robert to create his masterpiece. “The project was a dream build,” he says. The timber-lined cubby house portion of the home comprises the top floor where the sleeping and bathing rooms are. The concept of the house being a supersized cubby emanated from the … backyard (with) no trees

built upon the branches of a large tree. Living and working spaces take over the ground floor, which is an abstraction of the undercroft spaces often screened by timber battens found in traditional raised Queenslander houses. “The idea was to create a broad canopy that provides weather protection with minimal barriers or walls to allow flexibility of movement to and from the undercroft spaces,” Robert says. The brief for the house evolved over several meetings where strategies for living in the house were developed. The main focus was to create a casual contemporary home that opened out to the landscape and provided plenty of outdoor space for

the professional couple’s three young children and large extended family to relax and play. The northern and southern living and working spaces extend via timber-framed sliding and stacking doors to terraces and lawns. “By opening up all of the doors the

children have unfettered access in and around the lower level of the house,” Robert says. Key materials include western red cedar shiplap cladding to emphasise the notion of a cubby house, honed white concrete block walls and American oak timber floors.

Beyond the lawn, frameless glass fencing provides uninterrupted views of the pool. Despite being at the back of the block, it retains a connection to the living areas. It might be big, but the house has plenty of spaces for this family of five to snuggle up inside their ultimate cubby.

Greek classic with Alastair McLeod Dr Google makes replicating dishes from our travels easy these days. I hadn’t started cooking when I visited Greece almost 30 years ago. Yet, when I reflect, I already had a latent interest in what I was eating and how it was made. With no internet, it was just reflex and a fledgling palate to help me replicate the frappe coffee and tzatziki I experienced. When I got it right, it took me straight back to the Cyclades with the Meltemi winds blowing warm into my face. I would never have been able to afford this posh tribute on a backpacker’s budget. #takemeback MORETON BAY BUGS, TZATZIKI MAYO AND ALMOST PICKLED CUCUMBERS INGREDIENTS 1 lebanese cucumber, peeled and coarsely grated Sea salt 150ml greek yoghurt, drained overnight in muslinlined colander ½ clove garlic, finely grated 1tbs dill fronds finely chopped ¼ lemon, zested Pinch cayenne 1tbs olive oil 100ml mayonnaise 1 lemon, segmented and flesh diced Freshly milled pepper 50g butter 1tbs extra virgin olive oil 12 Moreton Bay bugs, peeled and meat cut into bitesized pieces METHOD Place grated cucumber onto a tray covered with a clean cloth. Season lightly with salt and leave for 5 mins. Bundle up the cloth and squeeze to drain the juice. Set drained cucumber aside. Place thickened yoghurt in a bowl with garlic, dill, lemon zest and cayenne pepper. Add drained cucumber and olive oil and stir to combine. Combine 3tbs of the tzatziki with the mayonnaise and diced lemon then season and chill until required. Heat butter and olive oil in a large frying pan over high heat. Add bugs and cook for 1-2 mins each side until just cooked through. To serve, spread tzatziki mayonnaise on plates, divide bugs, administer a squeeze of lemon and pile cucumber salad alongside. Serves 4

ALMOST PICKLED CUCUMBERS INGREDIENTS 4 small lebanese cucumbers, quartered lengthways ½tsp sea salt 2 garlic cloves, thinly sliced ½tsp cumin seeds, lightly toasted 2tbs white vinegar 1tsp honey 1tbs dill fronds, chopped ½ lemon, juiced 2tsp za’atar

METHOD Combine cucumber and ½tsp salt flakes in a bowl. Add garlic, cumin, vinegar and honey, and toss to combine. Chill for at least 1 hour to marinate then add dill, lemon juice and za’atar and serve with the dressing.
