Easy as pie MasterChef graduate Justine Schofield wants us to rediscover the simple pleasures of home cooking Hannah Davies

P

roving that even the most gifted cooks need a night off once in a while, Justine Schofield admits to eating toast for dinner now and then. Fortunately it’s a rare occurrence for the celebrity chef, not least because her new book The Weeknight Cookbook ($35, Plum) is full of recipes that can be made from what’s hanging around in the pantry. Looking forward to demonstrating these easy meals at Brisbane’s free food and wine festival Regional Flavours next month, Justine says she wants people to enjoy cooking at home. “I’m trying to bring back joy in the kitchen and also save people money,” she says. “We need to nourish ourselves by cooking at home and enjoy the process of doing it. I think it’s a life skill that sometimes we lose, and there are so many apps around these days that it’s become too easy to just order takeaway midweek.” The foodie, who rose to fame on series one of TV’s MasterChef and is now the face of Everyday Gourmet on Network Ten, has been putting her book to the test at her brother’s home in Brisbane – a home away from home for Justine, who lives between Sydney and Melbourne. Her brother and his wife have just added triplets to their family, so she’s been busy showing the couple how to make easy dinners (such as her spinach gnudi and yoghurt panna cotta), and says freezing should not be underestimated. “I’m by myself often, and I still cook. Sometimes when I have absolutely nothing in the kitchen I have had toast, but usually there are soups or curries pre-made in the freezer,” she says. “I always have eggs so

I can make an omelette with potatoes. I always have frozen spinach and peas. Cans of tuna are also a lifesaver – they’re cheap and can be delicious.” This year started with something a little different for Justine when she was whisked off to the South African jungle for I’m a Celebrity Get Me Out of Here. She quickly became the resident cook and won the hearts of her camp mates with her ability to transform basic ingredients into delicious meals. “It was a huge learning curve,” she laughs. “But I benefited from it creatively because of all the new ways I found I could cook things like beans. I can also cook wonderful porridge and rice now.” Cooking with Brisbane produce at Regional Flavours is going to be a much nicer experience for Justine, who describes Queensland as “the food bowl of Australia”. “So much of our produce comes from Queensland because of the beautiful warm weather all year round. I love the amazing citrus fruits I’ve had in Maleny and the outstanding Moreton Bay bugs and snapper,” she says. “I’ll try to incorporate some of that into my dishes that I’ll showcase on stage.” Regional Flavours, South Bank Parklands, South Brisbane, July 20-21, free entry. regionalflavours.com.au

Greener pastures It’s the ultimate swap meat – thanks to chef Alejandro Cancino’s tasty vegan burgers at Grassfed. Now he dreams of opening his own three-hatted vegan eatery Tonya Turner

I

t’s a blustery winter’s morning and Grassfed is getting ready to open its doors on Cordelia St in South Brisbane. Business owner and former Urbane chef Alejandro Cancino, 35, and I are sitting at one of the tables inside the warm and cosy dining room, about to order a burger from the menu. It’s a choice between the Classic, Aussie, Chick’en, BFC, Herbivore or BBQ “pork”, but not as you know them. At Brisbane’s first vegan burger bar, the “pork” is made from jackfruit, the “beef” patties with soy beans or peas and the “egg” with soy milk skin and carrot puree. I order the Aussie made with vEEF (vegan beef), vEgg (vegan egg), “cheese”, pineapple, beetroot, pickles, red onion, aioli and beetroot sauce. If I didn’t know it was vegan, I might’ve thought I was eating a beautifully balanced and tasty vegie burger – and that’s just the way Alejandro wants it. “Trying to change people’s habits is way too hard, but if you say, ‘Have the same thing you normally have but made with plants’, that’s much easier and people are more likely to do that than something completely different to what they’re used to,” he says. After leaving his homeland of Argentina, travelling the world working in Michelin-star restaurants and running Brisbane’s three-hatted fine diner for six years, Alejandro decided it was time to make a change. “I wanted to be true to myself, and also my baby was born and I wanted to take time off from the kitchen so I said, ‘OK,

whenever I get back to this, I want to be completely vegan and plant-based’, and that is now the challenge,” he says. While working at Urbane where he would “switch off and do what I knew”, he started developing his own line of vegan products under his Fenn Foods label and soon began selling them at the Brisbane Vegan Markets. It was here that he met the market’s founder Jonny Garrison, who would later suggest they open a burger and ice-cream bar together showcasing Alejandro’s vEEF patties and Jonny’s I Should Coco vegan ice-cream, and so Grassfed was born.

By this time, Alejandro had already cooked his last meat dish at Urbane, moved to the Sunshine Coast with his wife Paola and their daughter, Lola, 1, and opened his first vegan cafe, Lola’s Pantry in Kuluin near Maroochydore. Although it recently closed its doors, Alejandro has reinvented the space to showcase his Fenn Foods products, including vegan sesame cheese, mayonnaise and aioli, offering a much smaller menu than before. Alejandro never imagined he’d be where he is today. One fateful night in Tokyo, where he was working at an event for Bulgari, he met a musician who blew

away all of his misconceptions about vegans. “I’d always thought vegans were skinny and a bit weird and preachy, but he was this really cool guy, a big guy, about 150kg but solid. He’d just finished playing and I asked if he wanted some risotto we had left over. He asked if it had dairy so I asked if he was dairy intolerant and he said, ‘No, I’m vegan’. I said, ‘What? You cannot be vegan’, and he said, ‘Yeh, I am’. He was super cool,” Alejandro says. “I used to think, ‘Why do they do that to themselves, with all these flavours, why would you be vegan?’ I thought they were crazy people.”

Their meeting set Alejandro on a path to find out more about veganism. More than anything he was hoping to find reasons not to go vegan so he could feel good about his food choices. “I went deeper and deeper until I was completely submerged and then I knew, there was no real reason. I’d read books and follow people against it, and there was no real reason. I tried to take myself out of the equation and tried to be very fact-driven and it was so obvious,” he says. “I was thinking, ‘What about nutrition, what about real consequences, what if everyone went vegan tomorrow?’ – stupid

questions I had at that point – ‘What would we do with all the cows, what about deforestation in the Amazon, isn’t it because of soy, no it’s because of animal agriculture’.” Alejandro is used to copping flak for being vegan from his chef buddies and avoids talking about it socially. “Religion, politics, food. They’re the things you can’t talk about because it will give you problems. Sometimes I hear people giving ‘facts’ about things or diets and I just avoid it, although it depends on the person. “If it’s someone I have a good relationship with I’ll say, ‘Look, you

know…’ but if it’s someone I don’t know… you have to pick your battles. Some people will fight every battle, but I don’t have the energy. I’d rather focus my energy elsewhere.” That’s exactly what he’s doing. A deal with a major supermarket for his vEEF range is due to be signed any day and although his plans to open a new vegan fine diner in Noosa were thwarted recently, he’s now planning to save some cash to buy land to build his own. The ultimate goal? To own the world’s first three-hatted vegan restaurant. “We are social animals and it’s extremely hard to go against the grain. I think that’s why we now have flexitarians, people who are trying to slowly eat less meat. It would be a much better change if 90 per cent of people eat less meat than if 10 per cent are 100 per cent vegan. If that 90 per cent cut 50 per cent then consumption would drop massively and it becomes more mainstream,” he says. Food for thought. Then what happened? Well, I actually ended up with PTSD. You never really know how to deal with stress and stressful situations when you get hit with it, and the mind, well it’s not your friend sometimes and I found it really difficult to find my mojo for a hell of a long time. I lost a lot of confidence in my abilities, so it’s been really cathartic to take this amazing business from its grassroots to where it is now in such a short time. I’m back!

Well, we started this little business selling deliciously decadent vegan and gluten free doughnuts, dusted in a range of handcrafted sugars, hoping someone might be interested in maybe buying a couple. Little did I know it would take off so successfully we now have OMG Decadent Donut licensees from far north Queensland down to Victoria and the company goes through one tonne of doughnut mix a month and it’s growing.

What did you take from the experience? I’ve learnt that I have the ability to create and become whoever I want to be, and I don’t need a hell of a lot of money for that, just an inquisitive mind and the gumption to give it a go. I’ve learnt that I’ll be OK.

How do they taste? So damn good, you just want to scream OMG! when biting into one. Coeliac Australia and Vegan Australia have endorsed the company, which is really exciting, especially because our focus has been to create a product that many people with food allergies or intolerances, as well as the vegan community, can enjoy.

What has your new venture taught you? I’ve learnt the power of gratitude. To see a mother so excited that their child, who is suffering from a plethora of food intolerances, can have a doughnut. To talk with someone who has coeliac disease and see them so excited over a doughnut is crazy. To see someone who is vegan jumping for joy over one of our doughnuts really puts a smile on your face. The amount of love and gratitude we get is overwhelming. Sometimes it’s the simplest things in life that can make the biggest impressions.

Why go into the doughnuts business? I was at a market and had a hot cinnamon doughnut and, walking home, I wondered what it would taste like with different sugars. When I got home, I googled it and realised you can’t buy really nice decadent flavoured sugars, so I thought, ‘I’ll make my own’. I borrowed a mate’s dehydrator, bought a heap of different fruits and vegetables and started playing.

What excites you most about OMG Decadent Donuts? That we have created a successful business model, which is being duplicated by our licensees, by everyday people who are looking for a better work-life balance, or as a side-hustle to help pay off their mortgage, or a business to fund their semi-retirement.

You sadly lost your previous business, Drift, in the 2011 floods ... I loved that business, I know it sounds crazy, but it was like my baby. I’d poured my heart and soul into this beautiful, rundown iconic restaurant, to create an award-winning venue, winning Best New Restaurant in Brisbane,

Brooke Falvey The truth is, road trips are seldom about the destination; it’s the experience of the journey that’s all the fun When it comes to getting out of the city, I usually head for the ocean; finding comfort in the warmth of the sunshine and the sand between my toes. But last weekend I swapped the coast for the country and headed inland to Kalbar, in the Scenic Rim, to attend “Carrot Couture” – a world-first fashion parade in a carrot field. Given I like to pretend I’m a trendsetter, I wasn’t going to miss it – especially as it was the perfect excuse for a little road trip with my friend Stace. I don’t know about you, but I thoroughly enjoy road trips. Perhaps it’s because I’ve watched National Lampoon’s

European Vacation so many times, or maybe it’s thanks to the 31-day bus tour we did around Europe when I was a teenager. Either way, I find them a perfect break away from the mundane – all you need to do is pack a bag (or some snacks), leave your worries behind, keep your eyes on the road and the music pumping. Stace and I decided our road trip could serve double duty – not only would it take us where we needed to go, we could also stop for a few fun “city girls go country” photos to share on Instagram. Because if you don’t share it on Instagram, did it really happen? It was very Thelma and Louise meets The

Simple Life (the TV show with Paris Hilton and Nicole Richie). Although we weren’t leaving behind trust funds … just Stace’s dog Rex and my overflowing laundry pile. The truth is, road trips are seldom about the destination; it’s the experience of the journey that’s all the fun – although this road trip ended with a bigger party and more fun than anyone expected. To kick things off, 200 guests lined the runway as sisters Chloe Rowe and Kate Russell unveiled their latest vegetableinspired collection and it turns out having hundreds of people singing and/or dancing to The Horses and Jolene was the perfect rain dance because moments after the

parade ended, the skies opened with a long-awaited downpour. As we huddled in a shed out of the rain, chef Kate Raymont prepared a post-parade feast filled with local produce, washed down with champagne or carrot beer. Now, I’m not sure if the champagne or beer was to blame, but in front of the John Deere tractors, chairs were pushed aside and a dance floor was created. Using carrots as microphones, we belted out off-key but enthusiastic versions of songs by Dolly Parton, John Denver and Keith Urban. And there, at 6pm on a Saturday night in the middle of a shed in the Scenic Rim, Carrot-oke was born.

Yet (how’s this for nice) each and every dish comes out plated separately, in pairs, just like a degustation for two ... smaller but perfectly constructed. Would I do the Tuesday BYO? Maybe, but there’s a very good, pleasingly international set of wines on offer, including some gems under Coravin. So why bother? Josh Lopez has a way with food that’s rare. It’s artful – everything looks pretty on the plate – but it only takes a bite or two to realise that taste comes first. Our five courses hover between very good and stellar, and ... oddly enough, it’s dessert

that is possibly, perhaps, maybe (goodness this is hard for me to say) the front runner. It’s this craziness with caramelised Jerusalem artichoke (awesome vegetable, but who has ever seen it in a dessert?), toasted sunflower, apple sorbet, poached apple balls, Pepe Sayer marscapone, honey ($19). I’ve got that kind of right, but not quite. It’s only just sweet ... amazing. Sommerlad rooster ($38) is next in line (any food nut who hasn’t tasted a

Sommerlad chicken needs to do so. And this isn’t chicken ... it’s rooster) poached breast and confit maryland, rosella puree, crispy skin, rapini, rose petals and a whole lot of other, beautifully treated things. I loved several more dishes, all hovering between excellent and amazing, and if I had more words I’d tell you about them. But in short, if you crave creative, meaningful food, The Wolfe is about as good as it gets.

Josh Lopez is a chef with plenty of admirers: I reckon I hear about him more than any other chef in town. That’s partly because he is an engaging fellow, and I think his time at GOMA – cooking some of Brisbane’s most innovative food in an unlikely space – cemented his reputation. He loves wine and makes wine-friendly food. He is thoughtful, clever, and at times tricksy – never too much though – and plays with all sorts of unusual ingredients, often nicely indigenous. With him, it’s never simply beef, lamb, chicken and veg. Lopez bought The Wolfe from Paul McGivern earlier this year. He hasn’t changed the name and in plenty of ways he has kept the culture intact, including Tuesday night BYO. If anything it feels a little more produced … not quite formal but more staid than the relaxed adventure of The Wolfe of old, and perhaps the addition of carpet has been the tipping point. Who knows? But while everything rolls along in occasionally almost jaw-dropping fashion, it feels a little stiff at times. Nervous perhaps, stilted. Which is a small price to pay for the adventure that’s offered. There’s a definite push toward degustation. A la carte and degustation ($125) are both available for most of the week, while Saturday has a shortened four-course menu for $90. And if I had my time again I’d be doing the degustation thing; it simply makes life easy and lets you have a good look at what the kitchen can do. But I don’t, instead opting for five items of my own choice to be shared between myself and a friend; we’ve known each other forever and are very happy to bicker

Pillars of strength Lasting impression It may be a mouthful to pronounce, but blaufrankisch is a red wine that will linger WINE Mike Frost If you’ve never heard of or tasted a wine made from the grape variety blaufrankisch, don’t worry, you are not alone. It may not be the world’s most obscure red variety but there’s a lot more cabernet sauvignon, shiraz, pinot noir and grenache produced. However, in its native Austria it is the second-most important variety, behind only zweigelt, and flourishes in Burgenland, particularly the subregion of Mittelburgenland. It’s also grown in Germany and Hungary, where it is a major component of the flavoursome Egri Bikaver (Bull’s Blood of Eger). At its best it produces wines of rich flavour, reminiscent of blackberries and cherries, with fine, firm tannins and good acidity, and great ageing potential. It’s almost a cross of pinot noir and nebbiolo. One of its best makers is Roland Velich (above) of Moric wines in Burgenland, who produces three grades of the variety, Burgenland Blaufrankisch, Estate Reserve Blaufrankisch and single origin old-vine wines from Lutzmannsburg and Neckenmarkt in Mittelburgenland. I tasted three of the wines (2016 Burgenland Blaufrankisch, about $45; Reserve Blaufrankisch, about $80, and 2012 Neckenmarkt Alte Reben, about $180) and was most impressed. Gin distillery Four Pillars is at the forefront when it comes to innovation SPIRITS Angus Hughson You would have to be living under a rock to miss the explosive growth in popularity of gins that now sit in bars around the country. It seems like boutique distilleries are popping up across the country and around the globe, adding a little more spice to the average. Whether mixing a martini or a G&T, no longer is it good enough to throw a slice of lemon over an inch or two of Gordon’s when there is a never-ending supply of very serious gins to whet your appetite. Gin is, in some ways, the chardonnay of the spirit world, but don’t let that put you off. Just like chardonnay it can be churned out cheaply and simply to make a good drink. But it is also a blank canvas of white spirit to which a creative distiller can add his or her own unique touch. The classic ingredient in every gin is the small, hard, juniper berry, adding its telltale pine needle aromatics – no great surprise as juniper is a conifer. And over many years that recipe has been improved, with the benchmark Bombay Sapphire including nine different additions to the classic juniper including licorice, lemon peel, coriander seeds, angelica and orris roots. It is a well-worn formula that hits the spot. But perhaps the most fascinating side to the boom in gins has been the drive by

boutique distilleries into experimentation. Take Hartshorn Distillery’s Sheep Whey Gin. Ryan Hartshorn creates the base spirit from leftover whey from his family’s Grandvewe cheesery at Birch’s Bay, south of Hobart, which creates a full-flavoured gin with a sweet, almost lactic, edge. However, botanicals have the greatest potential to push the boundaries. One of Australia’s most innovative gin distilleries is Four Pillars, in the Yarra Valley. Here you will find classic gin with a touch of Tasmanian pepperberry to give a spicy edge. A meander through the range is a journey through the endless possibilities of gin. There are chardonnay and sherry barrel-aged gins, a Japanese-inspired Kisume Gin, the Bloody Shiraz Gin made by steeping Yarra Valley Shiraz grapes in

gin and even a Christmas Gin, made with distilled Christmas puddings, care of a recipe by distiller Cam Mackenzie’s mum. The favourite though is the most simple and subtle – Four Pillars Dry Island Gin ($99). This is a collaboration between Jon Hillgren, founder and master distiller of Sweden’s Herno Gin, and the Four Pillars team. It’s made with a combination of classic juniper, coriander and lemon with local wattleseed, strawberry gum, river mint and lemon myrtle, finished off with Swedish meadowsweet. I’m good at comedy ... but what I really love is to make people feel by telling a great story

though they will be operated by humans it will seem as though human beings will disappear and animals will come alive.’’ As the son of a high-ranking army father, John was well-travelled as a child until the family settled near Enoggera Barracks when he was in primary school. John, who is in-demand for voiceover work and has won two Matilda Awards, is often stopped in the street for his roles in Red Dog and Sea Patrol (2007-11). “The moment I did television was the moment my life changed, because everyone has a television but not everyone goes to a play,’’ he says. It was as a teenager, at Brisbane’s Arts Theatre on Petrie Terrace, that John’s acting career started. “Growing up I would put on one-man shows to entertain my family and I loved watching Paul Hogan but I had no idea about going to acting school until my school counsellor suggested it,’’ he says. John, who studied for a year at QUT before successfully auditioning for NIDA, has been based in Sydney for the past 20 years but is always looking to return to Brisbane for work. Six years ago he starred in Queensland Theatre’s Managing Carmen and last year appeared in La Boite Theatre’s The Dead Devils of Cockle Creek. “Any opportunity I can get I come back, and Storm Boy is such an exciting opportunity,’’ he says.

ohn Batchelor loves to make people laugh. Even more, he loves to tell an emotionally powerful story and that’s why he has embraced the role of Hideaway Tom, the loving but grieving father of title character Storm Boy in this month’s Queensland Theatre production. “I’m good at comedy and I love making people laugh a lot but what I really love is to make people feel by telling a great story,” he says. “I love playing characters where I have to find that melancholy.” John, best known for playing larrikin mine worker Peeto in Red Dog (2011), is looking forward to playing the reclusive hermit who “is desperately trying to protect his son from the world’’. Based on Colin Thiele’s 1964 children’s classic, Tom and Storm Boy (Conor Lowe) live simply in the coastal wilds of South Australia’s Coorong. They befriend

outcast Aboriginal man Fingerbone Bill (Tony Briggs). Then one day a pelican mother is shot and Storm Boy rescues the three chicks and nurses them back to health before releasing them. His favourite, Mr Percival, keeps returning. “Tom has been pushing everyone away but no matter how hard he tries, he can’t push away the pelicans who turn up and he and his son’s world changes completely,’’ John says. Sydney-based John, who grew up in Brisbane, is excited to work with local company Dead Puppet Society, whose show The Wider Earth was nominated for Best Family and Entertainment in this year’s Laurence Olivier Awards in London. Puppet designer and associate director David Morton, of Dead Puppet Society,

has helmed the creation of a dozen puppet pelicans, some with more than 1200 pieces, mostly made of wood and steel. There is also a menagerie of animals such as fairy penguins, crayfish and a giant groper fish. John, 49, says his family – wife Bronwyn and children Ella, 16, and Jack, 12 – cannot wait to see the show. “My children are both incredibly excited that I’m doing this play because they both know the story really well and they are really looking forward to seeing the puppets,’’ he says. “To be in a production where you can have a relationship with these animal puppets is incredible. A

new exhibition by Rosella Namok always makes me think of rain. Because no-one paints rain the way she does and she’s from tropical far north Queensland, so that makes sense. Her latest exhibition at FireWorks Gallery in Bowen Hills is entitled Sand Scribe and it’s a double show under the umbrella title of Matches 4, which also includes Merryn Trevethan’s Floating Cities. In Rosella’s show the rain is back in works such as Sunset ... stinging rain and Stinging Rain ... Iron Range. Rosella is an internationally renowned artist from Lockhart River originally. She calls Cairns home nowadays and her abstract works convey a sense of place. V1 - BNSE01Z01MA

Rosella often draws directly on to the painted surface with her fingers and her style is distinctive and immediately recognisable and though they are mostly

abstract (there are a couple of almost representational portraits), you clearly get a sense of the world she is depicting. The moon is another recurring motif and her Full Moon series, showing a moon hovering in the sky, is an iconic image dripping with Rosella’s finger-patterned linear arrangements. Her Rainforest Series engages with imagery in and around the Iron Range National Park, one of the largest areas of lowland rainforest in Australia. One of the things that is so attractive about this artist’s work is the colour and in this exhibition those colours really pop, as usual. She has created a visual language that is understandable despite the abstraction. The titles of the works help you imagine her world with its beach houses, rainforests and rainy tropical vistas. Her new series of painterly selfies is another treat. There are 10 new paintings in the show along with previous work. Merryn Trevethan’s first exhibition at Fireworks Gallery is intriguing and suitably colourful to work as a lovely companion piece to Rosella Namok’s. At the core of her show, Floating Cities,

(paintings and sculptures) are abstracted cityscapes depicted in bright, almost psychedelic colours. (Gallery director Michael Eather warns you might need to wear your sunglasses.) Merryn says her art depicts “a world shaped by the unwavering flatness of screens, by the endlessness of feedback loops and fake news … a world in which we are constantly surveyed both on and offline.” The digital age inspires these colourful works. Merryn now lives in Singapore, a globalised megacity that has certainly influenced her. And while these two artists are very different, Michael Eather is showing them together to celebrate their differences and similarities. “These two artists instinctively create art which reflects the changing relationships between the natural and built environments in which they live and work,” he says. SPIDER-MAN: FAR FROM HOME (PG) hhkjj Director Jon Watts Starring Tom Holland, Samuel L. Jackson, Zendaya It’s not only Peter Parker who’s lost without Iron Man. The departure of Robert Downey Junior’s wisecracking superhero, who gave birth to the Marvel Cinematic Universe, left a huge vacuum. And the hotly anticipated first film since Avengers: Endgame flounders desperately in the billionaire playboy’s wake. In place of the wickedly charismatic and eminently quotable genius inventor … Spider-Man: Far From Home gives us an exceptionally awkward and desperately insecure ’50s throwback. To be fair, Tom Holland’s tortured teenage web-slinger is the first to acknowledge his manifest inadequacy when it comes to filling Tony Stark’s shoes. In his second outing as lead superhero (after the lightly handled 2017 Homecoming) Spidey spends most of his time trying to duck the responsibilities implied by the suit. But the filmmakers do such a convincing job of portraying Parker as an ordinary high school student, the character and his story arc feel correspondingly pedestrian and flat. Watching Parker’s bumbling, excessively drawn-out courtship of MJ (Zendaya) on a school science trip to Europe, it’s hard to know who the intended audience for this film might be. The relationship is too self-conscious and naive to work as a contemporary teen romance and it’s hard to imagine hardcore Marvel fans having much patience with the excruciating and rather humourless exchanges.

QUITE A STRETCH … Tom Holland’s Spider-Man has big shoes to fill following in Robert Downey Junior’s Ironman footsteps, and he struggles.

There’s a point, early on, in Far From Home, when Spidey, who just wants to spend his summer vacation as a normal kid, asks Nick Fury (Samuel L. Jackson) why none of the other Avengers are available to fight the giant Elementals that represent the latest threat to the planet. The obvious explanation would be that they belong to a different studio (Sony Pictures has the Spider-Man license, which it now shares with Marvel and Disney). But one also gets the sense that the real action is somewhere else; that larger-thanlife characters such as the Guardians,

Doctor Strange, Thor, and The Hulk are off fighting more important and exciting battles. In Far From Home, Spidey is struggling to qualify for his P-plates. In fact, the film only really kicks into gear about two-thirds the way through – when the boy-man is abruptly catapulted into an altered reality. This sequence – along with the climactic showdown – goes close to justifying the price of admission to the film. Far From Home also introduces a new super character in the form of Jake

ANNABELLE COMES HOME (M) hhhjj Director Gary Dauberman Starring Mckenna Grace, Madison Iseman, Katie Sarife Annabelle has a relatively small amount of screen time in this lovingly restored threequel. Her reputation does most of the work (it’s an inspired move, since the doll is not actually that scary). After a playfully creepy prologue, in which the blank-faced Victorian toy summons a graveyard full of lost souls, writer-turned-director Gary Dauberman concentrates much of his initial energy on his three human leads. In Annabelle Comes Home, Ed (Patrick Wilson) and Lorraine (Vera Farmiga) Warren’s preternaturally mature 10-yearold daughter, Judy (Mckenna Grace), has control of the ouija board. She is supported by a resourceful babysitter, Mary Ellen (Madison Iseman), and the babysitter’s transgressive best friend, Daniela (Katie Sarife). placed comic relief as a smitten grocery store clerk and Judy’s neighbour. The latest film in the cash registerclinking Annabelle franchise is set in the Warren’s own home – if you’re looking for a haunted house, you can’t do much better than the one in which the world’s leading demonologists store their evil collection.

They keep the supernatural artefacts in the basement, under multiple locks and key. It’s blessed once a week as a precautionary measure. Annabelle is kept in a consecrated glass cabinet. But the Warrens haven’t factored in someone like Daniela (pictured). Consumed by her own dark secrets, the rogue teenager carelessly liberates

Gyllenhaal’s space gladiator Mysterio. And there are some interesting, if underdeveloped thematic strands involving fake news, technological manipulation, and the everyday repercussions of Endgame’s dramatic reversal of Thanos’s Infinity Wars finger-click – now described as “The Blip”. But the overarching impression left by Far From Home is that the franchise, like its central character, is grappling with a serious case of performance anxiety and identity confusion. Is there any juice left in the MCU after Endgame? At this point, the jury is still out.

Annabelle, along with the Warren’s entire back catalogue of ghosts, demons, werewolves, malevolent board games and vengeful brides. “What did you touch?” asks Judy. “Everything,” Daniela replies. Since we already know the score, firsttime director Dauberman plays it with a light, sure touch, artfully referencing the era in which the film is set. Jennifer Spence and Leah Butler deserve a shout-out, too, for their exquisite production and costume design. The Warren’s house is a ’70s museum piece. Butler’s costumes – from the textured knit of Daniela’s striped, long-sleeve T-shirt to Mary Ellen’s corduroy miniskirt and suede boots – also sit on the right, wrong side of a department store catalogue. Being the daughter of a medium, with nascent powers of her own, Judy takes care of nocturnal business in a floor-length flannelette nightgown. THE LOWDOWN: I think we’re well past saying that brows are having a moment, because it’s been near on a decade and a well defined, full brow is still atop the list of beauty must-haves for most women. The lasting trend has led to the burgeoning of salons dedicated solely to brow beautification and among them is Amy Jean Brow Agency. With its signature salon at the luxurious Palazzo Versace on the Gold Coast and its sixth salon opened last month in Byron Bay, Amy Jean’s brow sculpting, eyelash enhancement and

cosmetic tattooing has a loyal A-list fan base that includes Delta Goodrem, Mel B, Naomi Campbell and Dannii Minogue. I’m booked in for my treatment at the James St salon in Fortitude Valley with Queensland director, Monique Deveney, who heads up the teams in Brisbane, the Gold Coast and Byron Bay. She greets me in the uber-sleek foyer and I’m quickly settled in to begin the brow sculpting. Admittedly, I don’t have a lot going for me in the brow department and I’ve managed in the past with a mere monthly tweeze of my naturally thin brows to keep things in check. Monique tells me the henna brow treatment – based on a natural plant pigment from the Hina Tree – is a perfect one for those like me who would like a little more fullness. The semipermanent,

all-natural treatment is painted on to stain the skin, not just the hair as a tint would. This means Monique can slightly overdraw my brows – once they’ve been tweezed and waxed – to create a soft arch where there wasn’t one before. I’m told the results should last two to four weeks. That done, Monique moves on to my lashes that will get a lift, tint and a hit of nourishing keratin to keep them healthy and strong. To get the kewpie doll curl, Monique essentially puts miniature hair-rollers to my upper lashes. The small silicone moulds sit over my closed lids quite comfortably and my lashes are adhered and are left for about 20 minutes to set. Then the tint is applied, the mould removed and I’m allowed to open up and check out the results.

VERDICT: For those with sensitive skin, the vegan-friendly, all natural henna brow treatment is a winner. My results were subtle, and I am still filling a little with a liner, but this is likely because I was a brow treatment first-timer and Monique didn’t want to startle me by straying too far from my natural look. The keratin lash elevate is phenomenal for the eyeopening curl it gives and I recommend it particularly to anyone with stubbornly straight lashes. Good for you Chef and natural beauty expert Carla Oates offers recipes for a healthy gut and glowing skin

What’s better than a dessert that doesn’t require any cooking? The result looks like haute cuisine, but it’s so simple to make and lovely to eat, without any of the bloatedness that often comes with eating sweets. Thanks to the presence of polyphenols, blueberries have a significant antiinflammatory effect in the body. I’ve chosen delicious pecans for the base, which a study found rapidly increase antioxidant levels in the bloodstream after eating. RAW BLUEBERRY, LAVENDER & COCONUT CREAM FLAN Ingredients Base 140g pecans 20 BRISBANE NEWS July 3-9, 2019

20g unsweetened desiccated (shredded) coconut 80ml coconut butter, melted 1tbs extra-virgin coconut oil, melted 1tsp natural vanilla extract 1tsp ground cinnamon ½tsp ground ginger Pinch of sea salt Filling 80ml cold water 1tbs grass-fed powdered gelatine 300g blueberries, fresh or frozen & thawed 250ml coconut cream 1tsp natural vanilla extract 1tsp edible (unsprayed) lavender flowers Stevia equal to 1tbs regular sugar Blueberries, pecans, toasted coconut & edible flowers, to garnish 250g coconut yoghurt, to serve (optional)

Method Lightly grease a 3cm deep, 20cm springform tart tin with coconut oil. Refrigerate to set. To prepare the base, blend all ingredients in a food processor until the mixture begins to bind. Press the mix into the prepared tin to cover the base and sides. Smooth over and compact with the back of a spoon. Refrigerate for 15 minutes, or until firmly set. Meanwhile, to prepare the filling, pour the cold water into a small bowl and sprinkle the gelatine over the surface in an even layer. Set aside for 10 minutes to bloom. In a medium saucepan, simmer the blueberries over a low-medium heat for 10 minutes, or until soft and pulpy. Add the gelatine mixture and stir to dissolve. Set aside to cool slightly. Combine the cooled blueberries, coconut

cream, vanilla, lavender and stevia in a high-speed blender and blend until smooth. Pour the filling into the base. Refrigerate for 4 hours, or until firm enough that the surface springs back when pressed. Decorate the flan with some fresh blueberries, pecans, toasted coconut and edible flowers. Serve with coconut yoghurt, if desired. Cover and store in the refrigerator for up to five days. Serves 8 Carla’s tip Strawberries would work just as well with this recipe, as would blackberries.

Crepes are always a good idea, especially when they’re packed full of coconut goodness. In our house, these are a Sunday morning favourite. Apart from being rich in healthy fats, coconut milk and/or yoghurt are great dairy-free alternatives for those who struggle to digest wholemilk dairy. Blackberries and blueberries are both low-GI fruits and are antiinflammatory and antioxidant rich. These delicious, zesty bite-sized snacks are rich in hazelnuts, which are full of vitamin E – important for helping to maintain healthy intestinal barrier function as well as healthy skin, hair and nails. They’re also a good source of mono-unsaturated fatty acids and fibre, promoting digestion. HAZELNUT, APRICOT & CACAO NIB COOKIES Ingredients 125g ground hazelnuts 30g arrowroot ½tsp gluten-free baking powder Small pinch of sea salt 80g organic dried sulphur-free apricots, finely sliced 2tbs hazelnuts, coarsely chopped 2tsp cacao nibs 1 free-range organic egg, lightly beaten 1½tbs unsalted cultured butter, melted 2tsp natural vanilla extract Finely grated zest of 1 unwaxed orange Stevia equal to 2tsp regular sugar, or to taste Method Preheat the oven to 180C and line a baking tray with baking paper. In a medium bowl, whisk the ground hazelnuts, arrowroot, baking powder and salt until combined. Add the apricots, chopped hazelnuts and cacao nibs and stir through. Add the egg, butter, vanilla and orange zest and stir until well combined. Sweeten the batter with stevia to taste. Roll the mixture into heaped tablespoon-sized balls. Arrange on V1 - BNSE01Z01MA

the prepared tray and flatten slightly using the back of a fork or your fingertips. The cookies will not spread as they cook. Bake the cookies for 10-12 mins, or until golden brown. Remove from the oven and leave on the tray for 5 mins to cool a little. Transfer to a rack to cool completely before serving. Makes 12 cookies Carla’s tip I always make a double batch and pop the cookies in the freezer to have on hand if I’m craving something sweet in the afternoon. For a slightly crunchier option, flatten the cookies out a little more to a 0.5cm thickness.

Method To prepare the crepes, whisk the coconut flour and arrowroot in a medium bowl. In a separate bowl, whisk the eggs and almond milk until well combined. Gradually pour the wet into the dry ingredients, whisking continuously to form a smooth batter. Cover and refrigerate for 30 mins to allow the coconut flour to rehydrate. Heat a 20cm non-stick saucepan over a medium heat. Dip a paper towel into ghee or coconut oil and rub it over the hot pan to lightly grease it. Pour 60ml batter into the pan and swirl to coat in an even layer. Cook the crepe for 30-60 secs until the surface dries out and the underside is lacy and golden. Flip and cook for another 20 secs, or until golden. Transfer to a plate, cover to keep warm and set aside. Repeat the process with the remaining batter. Serve the crepes topped with coconut yoghurt, berries, nuts and pomegranate seeds, if desired. The crepes can be made in advance and stored in the refrigerator for up to 1 week or frozen for up to 3 months. Makes 12 crepes, serves 4 Carla’s tip Enjoy these crepes with a healthy, polyphenol-rich chocolate sauce made with cacao: just combine 20g raw cacao powder, 2tsp coconut oil, 2 dates (pitted and coarsely chopped), 1tbs pure organic maple syrup, 125ml boiling water and a pinch of sea salt, and blend.

t was the combination of all the right things that captured the imagination of architect Scott Petherick and his wife Emma. A sloping yard, sprawling jacaranda tree and magnificent 1920s weatherboard home in Paddington all promised happy home-making potential. “The reason we loved the slope, which falls sideways across the site, was because we knew it would allow us to get out directly to the backyard from the southern side of the house,” Scott says. “The nice thing about the jacaranda tree is the shade. And in spring it’s just amazing in bloom.” Scott’s architectural eye recognised that big changes could come with just “two big

moves”. “The first move was making a new bedroom,” Scott says. “It was pushed out to form a little courtyard space (on the other side) and create some foreground drama to the kitchen. The second move was making a deck-kitchen which extends out into the garden.” Both bedroom and kitchen are designed to engage with the jacaranda and newly terraced garden. From the bedroom, solid timber panels slide across to expose large reveals, framing views across Paddington and back to the sprawling branches of the jacaranda. Scott considers these windows as design elements in their own right. “We didn’t feel we needed the luxury of

an enormous walk-in robe,” Scott says. “Our luxury was paring it back and introducing joinery in the form of wardrobes and window units.” The deck-kitchen is also orientated to capture northern sunshine and northeasterly breezes. Sliding walls open the room to the garden encouraging Scott, Emma, and their children Jacob and Eleanor to spend more time outdoors. Its proximity to the ground ensures deck parties can spill onto the lawn. “We tried to create lots of little spaces where people can sit in the garden, rather than at the table,” Scott says. “Usually the table is where we lay out

the food and then everyone sits around the edges of the kitchen, around the garden and fireplace.” An outdoor fireplace has become a popular gathering place with visiting friends and family. “Our neighbours have a pool and we have a fireplace so we can swap yards depending on the season,” Scott says. Stepped brickwork forms a small amphitheatre to the outdoor fireplace and introduces blonde masonry to a rich material palette. “We really wanted to exploit the material language to define indoor and outdoor territories,” Scott says. “The brick

is a stitching mechanism, it forms the chimney and wraps underneath the floor slab and around to make the base for the barbecue. Heavy elements such as the concrete slab and brick tie into the landscape and the lighter timber elements tie back the original house.” Steel is used to frame the kitchen and establish a column-free space inside. The same material is deployed in smaller sections, most notably as a series of steel ribs forming an elegant eaves canopy lifting up towards the sky. “The roof of the kitchen takes the same pitch as the existing roof of the Queenslander,” Scott says. “It was all

about being about to sit at the table and frame views to the jacaranda tree and chimney.” Although the kitchen is in its natural state when open, double layered sliding doors and a diaphanous curtain ensure the room can operate with varying degrees of enclosure. Sliding screens exclude insects, sliding glass protects from the elements and the sheer curtain brings privacy and ambience in dinner party mode. But the most playful element of this beautifully conceived space is a simple rope swing suspended from the ceiling. The swing strengthens the playful and outdoor quality of the space and brings joy.

Scott also designed and built the terraced garden using a combination of concrete block walls and timber sleepers. Weathered COR-TEN steel over the block walls adds an ochre patina to the garden. Vegies and herbs provide kitchen staples while flowers make a colourful backdrop for homemade fairy gardens. Sandstone steps connect lower and upper terraces, completing a continuous loop that traverses each corner of this delightful home and garden. Phil Brown I don’t feel I have to read every page of every book I pick up. Personally, if I’m not engaged by page 20 I move on. Life’s too short, isn’t it? If you get part of the way through a book and you don’t like it ... do you keep going? My wife was reading a novel recently and struggling with it but she was determined to finish it. “Just ditch it and move on,” I suggested, but she persevered. What would you do? Personally, if I’m not engaged by page 20 I move on. Life’s too short, isn’t it? I won’t read books that don’t interest me, subject-wise, so I rarely have to abort but now and then I think ... this is rubbish ... and I move on. And I refuse to read books of more than 400 pages, unless they are recognised world classics.

Which is why I love novellas, which are, depending how you look at them, short novels or very long short stories. I love a novella and would encourage more writers to have a go at them. I dip in and out of lots of books and because I’m reading a lot of nonfiction lately, I might just read a few chapters on a subject I am interested in and leave it there. I don’t feel I have to read every page of every book I pick up. That’s just an odious social convention. In the same way, I don’t have to stay until the end of every performance I attend. Sometimes, as you may already know, I will leave at interval. That may be because I am disgusted or

bored to tears or it may be that I’m satisfied and have had an elegant sufficiency. If the piece I wanted to hear at a concert is played before interval I’m often in a taxi just as people are ordering interval drinks. An hour can be quite enough sometimes and it’s best to leave on a high, wanting more, than being in the position of looking at one’s watch and being grumpy because someone is doing several encores. It’s enough already! And so it is with books. If you want to be a martyr and struggle through until the bitter end, good luck to you. That’s fine if you’re enjoying it but if you’re not, unless it’s homework, simply close it and move on

. to the next book and save yourself the heartache. Same goes with movies. I have walked out of my fair share of them too because I simply couldn’t take any more. I recall going to see Chicago, at the old Regent cinema in the city, and after about 40 minutes I was catatonic. So I left my wife in the cinema and went out into the Queen Street Mall, bought myself an ice cream, went to the chemist, got a newspaper and I was waiting happily in the foyer when my wife came out. I was so much happier than I would have been sitting through the damn thing. As I said, life’s too short. Don’t you agree?
