This week... Some of my fondest dinner party memories are from my days as a young magazine journalist in Sydney. My cash-strapped flatmates and I would pop tealight candles on window sills to deflect from the shabby (but chic) interior of our Darling Point apartment, dig out a linen tablecloth from somewhere and serve up a rustic risotto (hey, it was the early 2000s). Friends would arrive with bottles of red, cheese and a ciabatta loaf and we’d laugh long into the night. Good times. The memories came flooding back when I read our Cover Story (P8) on West End’s Clare Scrine. In her debut cookbook, Clare shares recipes from her feasts with friends in various Brisbane share houses. It’s a glorious, homegrown work, filled with tasty vegetarian fare that puts my pumpkin and pine-nut risotto to shame. Do snap up a copy and be sure to try her loaded baked brie (P10). It’s delicious.

Brooke Falvey It was probably ballsy to wiggle my butt around with so many iPhones pointed my way. But was it brave? I don’t think so. Not to me, at least I recently had the opportunity to walk the runway in a pair of swimmers as part of a spring fashion show. I was flattered, nervous and vowed to stop eating cheeseburgers for the week before. It didn’t happen. I don’t remember much of the show because it was a bit of blur, but as videos were uploaded online, I was inundated with messages. People loved seeing me sing, dance and strut my way down the runway, and they loved the colourful collections that are coming this season. However, there was one common comment that didn’t sit well with me. “You are so brave.” Sure, it was bold to strut around in
swimsuit given I was nowhere near a pool or the beach. And yes, it was probably ballsy to wiggle my butt around with so many iPhones pointed my way. But was it brave? I don’t think so. Not to me, at least. The Cambridge English Dictionary defines brave as “showing no fear of dangerous or difficult things. To deal with an unpleasant or difficult situation”. Wearing swimwear – at the beach or anywhere – does not make the list. “Brave” belongs to the children undergoing painful medical procedures to treat illness. To the women and children fleeing domestic violence in search of a better, happier life. To the firefighters and emergency
services personnel who have put their own lives at risk in recent weeks to fight the bushfires that have swept across our beautiful state. It does not belong to me simply because I wore swimmers in public and posted photos on Instagram. It may be bold, but it is not brave. I know I’m not a “typical” swimwear model; I have thighs that touch, a core made of marshmallow and my butt hasn’t felt the pain of a squat in at least three years. And I understand that many women wouldn’t be comfortable doing what I did, perhaps that’s why they felt it was brave. I posted the photos because loving all of myself is still a work in progress. To me what I did was ballsy. Plucky.
Daring. Audacious. Bold, not brave. As women, we are often our own worst enemy. Hell hath no fury like a woman if someone negatively comments on our friend’s body and yet we do it to ourselves all the time. It’s not an easy habit to break; we have to take it day by day. But this summer I beg you to remind yourself – and your friends – that all you need to have a beach-ready body is to put on swimmers and go to the beach. Don’t think about what size is written on the tag. Don’t think about what bits may jiggle as you run across the hot sand (or dance around a room full of friends and strangers). This summer, be bold.

Dream builder Fashion-loving influencer Rachel Ford is a jill of all trades in a male-dominated industry Hannah Davies
S
hould Mattel ever have a notion to release a new “Builder Barbie”, Rachel Ford could be the prototype. With her long blonde hair and model proportions, she doesn’t look like your average DIY enthusiast, but she’s more skilled than most, and that includes her fiance, Travis Telser. The 26-year-old is fast making her mark in Queensland’s tool industry as marketing manager of her father’s company, TradeTools. And while she enjoys wearing makeup and dresses, she says she’s just as happy in work boots and a hi-vis vest. “I’m very adaptable. If I need to be hands-on doing a tool demo, then I’m in my tradie gear, but the next minute, I could be at a business networking event in heels and red lipstick – it’s the best of both worlds,” she laughs. “People underestimate what I can do with power tools because I look like a girly girl. They shouldn’t be fooled by appearances.” Not a tomboy either, but “something in between”, Rachel says she was always destined to work in the tool industry. When she was born, TradeTools – founded by her dad, Greg Ford – was only four years old, so she grew up with the business, eventually getting a part-time job filling oil bottles at the age of seven. After high school, Rachel studied a diploma of graphic design at CATC Design School but never really felt comfortable until she returned to TradeTools, first as a part-time receptionist and then full-time
when the company launched its marketing department three years ago. “I couldn’t help myself,” she says. “It’s a company with so much potential, and it’s so great to be able to work with dad again and keep things in the family. We’re both very stubborn so we’ve had some clashes over the years, but we do get along really well.” With no brothers or sisters waiting in the wings, Rachel, of Morningside, is the heir to the TradeTools empire. She also has a thriving Instagram account, @rachelsuzannahford, with 11,000 followers, many of whom are tradies, which reveals her love of fashion. Rachel says she is keen to use her social media profile to break down the stereotype that manual labour is just “for the boys”. As well as writing tool reviews from her own test runs, every second week Rachel heads into TradeTools’ Capalaba store (one of 18 across Queensland), where she works as a sales assistant. “I’m very confident and capable in this male-dominated industry,” she says. “Of course there are times when men bypass me at the store to speak to a male member of staff, but they actually do it without thinking and have all apologised to me for it. “At home I’m the one who does all the DIY too. Travis is in the fitness industry so he leaves the power tools for me. I’m more than happy with that.” tradetools.com

Crowd pleaser West End’s Clare Scrine loves nothing better than feasting with friends and she’s sharing her passion with a new cookbook Emma Schafer
T
here’s never been a cookbook more quintessentially Brisbane than Clare Scrine’s The Shared Table. A love letter to her hometown, it features her gaggle of friends and the meals they’ve shared to stave off hangovers, celebrate
victories and ease the pain on bad days. “It’s an ode to shared homes,” says Clare, a 25-year-old who works in politics as a community organiser and campaigner. She counts climate change campaigning and cooking as her great loves, along with
her West End share house and the five friends who share it. Each chapter in the book is named for and photographed at the share houses of Clare’s inner circle. The friends sat for the bountiful meals pictured in the book and, over the years, have eaten every dish described in its pages. Shared meals are a sacrosanct ritual for the Brisbane friends. “I wrote this book to celebrate those times, and hopefully encourage others to have a whole lot more of them,” Clare says. “Most meals were conceptualised, tested and perfected within a share house environment, and The Shared Table endeavours to capture the warmth, affection, and unique connection of a loving house.”
Chapter seven – pasta night – is her favourite. “We did it in the most welcoming Queenslander-style house on Ampthill Tce in Highgate Hill,” she says. The friends dined under palms and fairy lights on a table groaning with platters of gnocchi, fettuccine and spaghetti dressed in sauces of roasted tomato, mushroom and spring vegetables. “We had the most beautiful lighting and it was the last shoot we did so it had this gorgeous sense of ceremony about it,” Clare says. “I was actually really sick … I hardly remember the shoot but I remember when it finished. We popped a bottle of champagne. It was a really lovely moment.” It’s ironic the pasta menu should be her

I am a vegetarian, but if there is a leftover burger I’ll eat it,” laughs the bona fide foodie
pick, because pasta was Clare’s least favourite meal when growing up in Morningside with her parents and three siblings. In fact, it was the urge to reinvent her family’s dinner staples that ignited her passion for cooking.
“My love of cooking was born out of a sheer love of eating, and growing up I just always wanted to eat particular things,” she remembers. “And I didn’t want the same Napoletana sauce every week.” And so she started cooking, adding variety to the Scrine family menu. For the book, Clare enlisted her photographer friend Savannah van der Niet to capture her and her friends feasting at eight of their shared homes across the city. Only one – a Paddington home borrowed from the family of Clare’s filmmaker boyfriend, Jackson Scott – slightly breaks the mould. Savannah’s photos are an essential ingredient in the warmth, connection and distinctly Brisbane vibe that oozes from
every page of The Shared Table. Between shots of delicious vegan cinnamon doughnuts and loaded baked brie (see recipe, P10) are candid snaps of the friendships built around them: Clare and her friends giggling over cups of tea; a group of eight lounging in the golden light of late afternoon on a picnic rug at Orleigh Park by the Brisbane River (see our cover); friends around a patio table, barefoot with the house dog at their feet or a cat in a lap. And so this one-of-a-kind cookbook goes on. All of the meals in The Shared Table are vegetarian or vegan, but Clare says she is not strictly either. “I am a vegetarian, but if there is a leftover burger I’ll eat it,” laughs the bona fide foodie. “I’m really passionate
about showing people how exciting and adventurous and delicious vegetarian food can be so more people can reduce how much meat they eat.” Clare campaigns and advocates loudly for climate causes. “Cooking on a budget is also big for me, especially since I started this project while I was a student.” She studied a Bachelor of Arts and Law at the University of Queensland while working as a short-order cook at the In a Pickle cafe in Camp Hill. “Sharing food is a joy, but (sharing) is also the best way to reduce waste, energy and time spent cleaning and cooking,” she says. “For this reason, this is a book of banquets and big portions. Every recipe makes a big bowl or plate full of food designed to be placed in the centre of a table, ready to be dug into by the masses.” Also to reduce waste, all styling props for the book were sourced from op-shops, borrowed, or supplied by family, local ceramicists, woodworkers and other artisans. “Plus I wanted it to be authentic and it’s not often that you’ll find a set of beautifully matching plates in a sharehouse,” Clare laughs. The finished product – her first cookbook – is exactly as she dreamt it. It’s been given somewhat of a second life with its launch this month. Clare crowdfunded the original last year and the pre-sold 200 copies were handed out over Christmas. Soon after, Smith Street Books bought the publishing rights, and launched a new edition this month. Clare says there has been “some tidying up” of the copy, but both versions are bound with the same heart. Seeing the book in her local bookstore, Avid Reader in West End, was an emotional experience for the debut author. “Truly bizarre – that was probably the main feeling I got when I saw it,” she says. “I took a photo of it and a weird selfie and I guess, yeah, it really was exciting. I felt so proud, not so much of me, but of all the people who did this with me.” She’ll hold on to that feeling for as long as she can with no immediate plans for a second book. “I’ve just got too many pots on the stove to think about book two,” she says.

CLARE SCRINE’S PARTY STARTER Baked brie is absolutely beautiful and very easy to create. Camembert works just as well too, but it’s essential that you use a whole wheel of cheese, rather than a wedge, or you’ll have a melted explosion on your hands. You can top these babies with just about anything, depending on your taste, and what you have available. I think the key is to have plenty of sweetness on top (chutney, cranberry sauce, honey, jam or even just brown sugar), along with some texture (nuts, seeds) and extra flavour (balsamic vinegar, herbs, pesto). Some of my favourite toppings are walnuts, pesto, chilli jam or fresh chilli, pine nuts, sliced and roasted mushrooms or capsicum, and herbs of any kind. Another big bonus is you can assemble everything ahead of time, then simply bake the cheese wheels when you’re ready to eat.
1 tbsp olive oil, plus extra for drizzling 1 tbsp butter 1 large red onion, sliced 2 tbsp brown sugar 3 tbsp balsamic vinegar, plus extra for drizzling 4 tbsp pepitas (pumpkin seeds) 1 tbsp honey 2 tsp smoked paprika 2 wheels of brie, each weighing about 200-250g 2-3 tbsp cranberry sauce 1 handful thyme leaves 1 handful rosemary leaves Toasted baguette slices, bread or crackers, to serve
METHOD Preheat oven to 180C. In a frying pan, heat the olive oil and butter. Add the onion and cook over medium heat for about 10 minutes, stirring often. Once the onion has started caramelising, add the sugar, 2 tbsp of the balsamic vinegar, and salt and pepper to taste.
Cook for a further 5- 10 minutes, stirring often. If the onion seems too sticky, add another splash of vinegar. Transfer to a bowl. Add the pepitas to the same pan with another drizzle of olive oil. Cook over low heat until the seeds begin to pop. Add the honey, paprika and a good pinch of salt. Cook for another 1-2 minutes, then set aside. To assemble, place the wheels of cheese on a baking tray lined with baking paper. Spread the cranberry sauce over each one, then top with the balsamic onion. Divide the herbs over each wheel, reserving a few sprigs for garnishing. Add the honeyed pumpkin seeds. Finish by drizzling a little more olive oil and vinegar over the top. Bake for about 15 minutes, or until the toppings are sizzling hot and the inside of the cheese is melted (the wheels will have slumped, as they’ll be runny inside). Garnish with the reserved herbs and serve immediately, with your carb of choice. Makes 2 wheels; serves 10 as a starter

Jenny is passionate about providing opportunities for women working in science, technology, engineering and mathematics (STEM). My Aunt is a Protein Crystal Scientist is the fourth in our series and it follows Cool and Creepy Parasites, written by myself, Amazing Nanoscience by Qin Li, and The Intriguing World of Forensic Science by
Donna Stewart. All of our authors are inspiring women working in interesting STEM fields. We want to inspire as many children as possible with our picture books. What has been the response? More than 200 copies of the latest book have been given out to children, with great feedback and lots of wonderful questions about what it’s like to be a scientist. What led you to a career in science? My “aha” moment was when my mum and dad successfully bid on an auction lot when I was about 10. The box contained junk, but what intrigued me most was a wooden testtube rack full of glass test tubes. From that moment, the seed was sewn – I knew science was my passion. Who or what inspires you? My daughter, definitely. She is one of the reasons I started the That’s RAD! Science project. In fact all the children I meet inspire me – they ask such genuine and
enthusiastic questions when their imaginations are sparked. What do you love about Brisbane? My father was part of the Australian Air Force so our family moved a lot when I was younger – I was born in Malaysia. I also spent four years working as a scientist in Germany when I was a bit younger. So what I love about Brisbane is that it has the true feeling of home to me.
What’s next for you? My team of scientists at Griffith University is working on some exciting malaria drug discovery projects, so I am looking forward to working with them to see what happens next. Vibrant vegan Diners can practically feel their bodies rejoicing over this eatery’s offerings – and their tastebuds are plenty happy too RESTAURANT Tony Harper After never stepping inside one before, I’ve now dined at two vegan restaurants this year (goodness), and they are as different as a spaghetti joint is to a sushi house. Which shouldn’t surprise me, but it does. Here’s me thinking that vegan food is all mushroom and kale – a single identity – with meat-replacement products central to each dish. But I stand corrected. Greenhouse Canteen in South Brisbane is my second vegan foray for 2019. It is part of a small chain, with two sibling venues at Coolangatta and Miami on the Gold Coast. From what I can glean, the menus are the same across the board. The South Brisbane venue is nicely kitted out in a palette of greens and browns – not really rustic, but it has landed the “natural” feel. Its wine list comprises a couple of house wines, plus Delinquente (in several guises), Harvest and Shobbrook, so all at the smallproducer, low-intervention end of the scale. Beers are supplied by Stone & Wood. There’s a fabulous house-made lemonade (as sour as a great-aunt), kombucha, and a bunch of cocktails. A bit of animal-replacement appears on the menu, such as “cheese” in three styles (parmesan, brie, and one that’s almost liquid) and “krab” cakes. And some of it is very, very convincing. Take the krab cakes ($14 for two) – banana blossom for the texture (like flakes of crabmeat), nori, and other bits and bobs for the flavour. They taste like crab cakes – good ones: saline, moist, tangy, seafood-ish, if that’s even possible. Then there’s the nut mince that features in a taco ($9). It’s a hard dish to share – tortilla piled high with a melange

Seeds of a couple of sorts are sprinkled on top, with a slice of lime and a pea shoot on the side. It bears little resemblance to a traditional taco (more a quirky rice salad on a tortilla), but it tastes great and I feel my health rating climbing by the second. Arguably the best dish we share is Korean rice cakes ($14). You know those

Well imagine one of them (without the pork) condensed into a oneinch baton covered in sticky chilli jam and, perplexingly, served on cos leaves with cashew cheese. The cos and the quasicheese seem culturally out of place to me, but it works. Nothing happens in a real hurry – perhaps that’s a good thing, and perhaps it’s the vegan lifestyle, escaping the rat race
along with meat and milk. But despite a long pause between ordering and eating, the service was as good as can be, considering one person was looking after the floor solo. We walked away content and convinced: my daughter tells me she could easily get used to veganism. Is she aware that chocolate contains animal products? I doubt it. And would I go again? Probably.

Fame becomes her She’s played to packed houses all over the world but for superstar soprano Mirusia, there’s no place like home Hannah Davies

he has won hearts around the globe performing with Andre Rieu and the Johann Strauss Orchestra but when star soprano Mirusia steps on stage with The Original Seekers next month, she will be proudly returning to her musical roots. “I was eight when we got our first CD player, and my dad had the 25th anniversary of The Seekers album,” she says. “Georgy Girl became my favourite song. I would choreograph dances to it and perform for my parents, so it made so much sense to me to perform with the four people who really inspired me when I was growing up. “I can’t wait to sing the songs I sang in my living room all those years ago. It’s a huge honour, and so good that the music is living on.” Mirusia and The Original Seekers features music from the 2019 albums The Original Seekers – Back to Our Roots, and Mirusia – A Salute to the Seekers. While The Seekers’ story has been well documented, not many people know that the genesis of the group stretches back to the 1950s, and that it was originally an allmale group. Mirusia will share the QPAC stage with three founding members – Athol Guy, Keith Potger and Bruce Woodley – and long-time Seekers producer and guitarist/singer Michael Cristiano. Mirusia, a 34-year-old who shot to fame after being discovered by music megastar Rieu, is also pleased to be sharing the music from her childhood with 19-month-old daughter Sascha. “Being a mum is so wonderful and has
given me even more reason to sing,” she says. “Sascha absolutely loves singing too and sings all day and all night, but I’ll leave it up to her whether she wants to follow in my footsteps or not. “My parents never pushed me to sing, they were not ‘stage parents’, and actually got fed up driving me around to singing competitions all the time. It was always me who was pushing for it.” Despite scaling great heights, it would seem fame hasn’t changed Mirusia at all, something she puts down to understanding who she was before her success. “I was always a normal person. I grew up in Brisbane and wanted to be a singer my whole life,” she explains. “People who are the most successful never change who they are. There is no need to change yourself. Andre is still the same guy. “I think when you’re launched into fame very quickly, that can change you, but I had the ladder-climb experience and did the hard yards before I made it. “Anthony Hopkins is one of the biggest movie stars in the world and I’ve met him and he’s so lovely, just like a normal grandpa. “If he’s such a massive movie star and yet so normal and kind to people, why should I change myself?” Mirusia and The Original Seekers, from $89.90, Oct 13, Concert Hall, QPAC, South Bank. qpac.com.au

RIDE LIKE A GIRL (CTC) hhhkj Director Rachel Griffiths Starring Teresa Palmer, Sam Neill, Sullivan Stapleton Rachel Griffiths directs this handsome biopic about Melbourne Cup-winning jockey Michelle Payne with a steady hand and one eye on the finish line. The lack of sentimentality with which the actor-turned-director recounts Payne’s triumph over extraordinary odds will no doubt meet the approval of its gutsy subject, but it also serves the audience well. Griffiths’ clear intention with this inspirational drama is to pay tribute to Payne’s unparalleled athletic feat, but in doing so, she doesn’t gloss over the controversies, such as the jockey’s tendency to test her limits on the track (which resulted in another – 15-meeting – suspension for careless riding earlier this year). The first-time feature director also gives
appropriate weight to Payne’s painful rift with her father, Paddy (Neill), but this is conveyed as much by what is left unsaid as it is by the actual dialogue, and that seems entirely appropriate for the characters involved. All of which adds up to a contemporary piece of myth-making, told in an authentic Australian vernacular. Certain key scenes – such as the Christmas pudding incident, in which Payne and brother Stevie polish off said item under the dining room table while the rest of the family eats lunch – feel like the stuff of family legend. Ride Like a Girl documents Payne’s story from her rough, but loving, childhood on a farm near Ballarat in Victoria to the day she became the first female jockey to win the Melbourne Cup – at 100:1 odds – on Prince of Penzance. The film chronicles her early life in the tumultuous Payne household – Michelle’s mother died in a car accident when she was six months old, leaving behind 10 children,
all of whom appear to have inherited their father’s love of horses. Coming from a family of jockeys, it was a natural choice for Payne to follow in her older siblings’ footsteps. But when her eldest sister, Brigid, dies after a fall, Paddy becomes more cautious. And so his impatient youngest daughter decides to go it alone, only to be ignored by the other trainers. She spends many cold, dark mornings waiting in vain for a ride, before finally fast-talking her way into the saddle. The film portrays her as plucky, determined and driven – to the point of obsession. Teresa Palmer steps into her character’s stirrups with courage and commitment, and she is supported by Payne’s real brother, Stevie, who has Down syndrome. No other actor could have done the role justice. It would be hard to go wrong with this story, but Griffiths gives the film just the right amount of rein.
A space cowboy’s got to do what a space cowboy’s got to do, but Neptune is a long way to go to bash out a few father/son issues. Astronaut Roy McBride (Pitt, above) is so emotionally restrained, his pulse doesn’t rise above 80, even when his life is on the line. By reducing a familiar character type to its bare essentials, the filmmakers have succeeded in making it strange again. When Earth is struck by power surges that appear to be from outer space, McBride learns that not only is his absent father (Jones) not dead after all, he’s not the hero he was cracked up to be. McBride is still processing this when he’s tasked with a new mission – one he’s uniquely suited for. The hope is that McBride Sr will re-establish contact after hearing a message from his son. This involves a trip to Mars via a transit station on the moon, where McBride runs the gauntlet of resourceplundering pirates. The astronaut knows he is being manipulated by the powers that be, but his interest has been piqued. So he embarks on a lonely, difficult journey that is ultimately more about personal growth than space travel – despite the spectacular backdrop. Pitt provides the emotional centre of gravity in this weightless world, and a satisfying resolution allows him to land the battered sci-fi vehicle in one piece. REVIEWS BY VICKY ROACH

Advance party Many of them were ahead of their times, and now Brisbane’s female artists are celebrated in a show spanning a century Phil Brown
I
f you’re holding an exhibition celebrating women artists it seems only fair to include a portrait of Brisbane’s first female lord Mayor. So the exhibition New Woman, now on at the Museum of Brisbane, features a rather wonderful portrait of Sallyanne Atkinson who just happens to also be the chairman of the museum’s board. The painting, done in 1986, is by Caroline Barker who has other work on display. As she should. She was a significant figure in the Brisbane art world and she taught at several girls schools including Somerville House where her students included the fledgling artists Margaret Olley and Margaret Cilento, both of whom are also represented in this show. In 1928 Barker painted the portrait of Brisbane’s first lord mayor, William Jolly (he was in office from 1925 to 1931) and 58 years later in 1986, Caroline Barker was commissioned to paint Sallyanne Atkinson who served as lord mayor from 1985 to 1991. In her introduction to the handsome catalogue (a stunning hardcover book which is for sale at the museum shop), Sallyanne reveals that Caroline Barker was 92 when she painted her portrait. It’s lovely to see it hanging in New Woman which is one the most interesting and important exhibitions ever held in Brisbane. It encompasses 100 years of Brisbane art history and one wonders why it has never been done before. Never mind, it has been done now and full marks to Museum of Brisbane director Renai Grace and her team, particularly curator Miranda Hine, who has done a terrific job. Of course stalwarts such as Daphne Mayo and Vida Lahey are there along with Olley, Cilento, Davida Allen, Tracey Moffatt, Pat Hoffie, Bianca Beetson, Judy Watson ... the list goes on and on. The works are hung floor-to-ceiling, salon style, in one big gallery space and that works a treat. Standing there looking up, down and around, one marvels at the variety and the history. Daphne Mayo was painted by Vida Lahey and that wonderful portrait is one of a number in the show. Mayo is probably our most famous sculptor, the creator of the Brisbane City
Hall tympanum, completed between 1927 and 1930, which crowns the front of the building. The tympanum represents a relief of early settlement entitled Progress of Civilisation of the State of Queensland. OK, it’s a bit dated but it is considered one of the most important Brisbane sculpture commissions ever awarded and Mayo’s public works can be seen around the city. So it’s lovely to have her included and other sculptors are also represented including Rhyl Hinwood and Donna Marcus, among others. There is also ceramic work, notably by the late, great Gwynn Hanssen Pigott. And there’s much much more. In fact there is
an embarrassment of riches really and it’s hard to know where to look next. As well as being one of the most important exhibitions ever staged in Brisbane, New Woman is also one of the most charming. It seems to be the year for historical retrospectives, with a major Margaret Olley show still on at GOMA and a terrific exhibition of Jon Molvig’s work on at the Queensland Art Gallery. s one of Bali’s most over-the-top resorts, visiting The Mulia was always going to be a treat. Still, there’s no way I’m prepared for how normal it soon feels to be spoiled rotten at every turn. The Mulia’s unrelenting decadence has a way of bending your will. The first day you might recognise yourself letting go a little. By day three, you’re so unwound you’re saying yes to things that wouldn’t normally tempt you. Like my vegetarian lunch companion who succumbs to the foie gras served two ways at the resort’s Soleil restaurant. Architectural Digest once declared it Most Luxurious Brunch in the World and the leopard print brioche has me nodding in agreement. Willpower long ago conquered by that “I’m on holiday” mindset, I soon become a regular at The Cafe, which has a giant
dessert room filled with homemade icecreams, precision patisseries and white chocolate fountain. A lacy Balinese coconut pancake topped with a scoop of coconut gelato? Sure. Seconds? You bet! Healthy eating is not entirely out of the question, of course. The Japanese restaurant Edogin is a brilliant choice for low-carb dining – if you manage to avoid the performative chefs at the “teppanyakiesque” frozen dessert bar with its five-star take on Cold Rock-style confections. Should you wish, workout regimes can also be maintained at the world-class giant Fitness Centre. Equipment is on par with a Manhattan hedge-fund’s executive facility and the trainers are as expert as their toned bodies are inspirational. A private yoga class looking out to the pools set among The Mulia’s spectacular gardens is one way to temper any culinary overindulgence. Or, join one of the five on-
trend group classes held daily, such as Hatha yoga and tabata. My only physical goal this trip is to take a dip in each of The Mulia’s six swimming pools. Alas, I only make it to three before I find a favourite: the beachside Oasis Pool, which is Bali’s longest oceanside infinity pool and has a swim-up bar. What can I say? I grew up in Queensland in the ’80s. I also hit a serious snag when I’m upgraded mid stay to a One Bedroom Villa Ocean (from US$1220) with a private pool. Yes, I go skinny dipping, you would too! Not that there’s anything less than fabulous about my first room, an Earl Beachfront Suite (from US$980) with a jacuzzi on the balcony. It’s the perfect spot to watch the sunrise if you can bear to leave your king-size bed. Besides, both of my rooms come with butler service. What’s it like to have a butler? Kind of fun. Transferring to my new home across
the resort is super simple when I pack just my personal items and ask my butler to pack the rest and arrange delivery since I’m at Mulia Spa for a Balinese massage. My butler is also ready with a golf buggy to drive me around the resort as needed. But the best perk is arriving back at my villa one evening to find a warm bath drawn – complete with fragrant Aromatherapy Associates Relax Body Wash bubbles – and a handwritten note wishing me a restful evening. This kind of epic indulgence is what sets The Mulia apart from other holidays. The personalised service starts as soon as you land at Denpasar, where you’re warmly greeted by name (not just a sign), and continues until you reach security for the flight home, thanks to the resort’s airport-based team. During a four-night stay, I don’t leave the resort once. Would I recommend this? If you have

It’s not for everyone of course, but a 24/7 stay at The Mulia and wafting around in a dream of happy relaxation is exactly what I needed at the time. And it could be perfect for a long weekend couple’s break or a busy family wishing to reconnect. My quick holiday still brings me into contact with many of the things Australians love about Bali, including its kind and friendly people. The Mulia has about 2000 staff and it feels as if I say hello to half of them, because everyone is up for a chat. I also have the chance to join a workshop making canang sari offerings – the tiny flower baskets I’d seen everywhere on two previous trips to the
island. The Mulia can also organise cultural activities off-site, such as day trips to Ubud to meet with one of the island’s famed healers and local temple visits. Will I be heading back to The Mulia? Absolutely. I’ll go for a girls’ trip or return by myself for a solo trip. After all, I have unfinished business at The Mulia. I need to swim in every one of those six glorious swimming pools. And discover the secret to those luscious coconut pancakes as well. Light fantastic A sun-filled extension makes a world of difference to this Queenslander in Brisbane’s Red Hill Michelle Bailey

inding new and inventive ways to adapt and extend the Queenslander is becoming a favourite local pastime. And there seem to be many ways to embrace the challenge. Architects Michael Lineburg and Lynn Wang’s transformation of Andrew and Carly’s double-gabled beauty at Red Hill centred on making almost imperceptible architectural moves. They designed a slender, 2m-wide addition, which keys into the southern side of the historic house and extends into the backyard. Downstairs they partially infilled the undercroft, introducing a master suite as well as guest and children’s bedrooms. The new additions capitalise on city views while working sympathetically with the existing slope and vegetation. “It’s a beautifully perched site with a deep foreground and views to the city that will never get built out,” Michael says. “We knew we would be able to work 22 BRISBANE NEWS September 25-October 1, 2019
with the slope of the land and build in half of the underneath without lifting it.” Minimal disruption to the original rooms of the Queenslander was achieved through the careful insertion of an internal staircase at the back of the dining room. This gave access to the lower floor while keeping the historic upper plan largely unaltered. The biggest changes were to the old sleepout, where the external wall was removed and a 2m-wide extension introduced, forming space enough for the master bedroom under the existing roofline. The bedroom spills onto a deep corridor connecting a string of rooms dedicated to robe, ensuite and terrace. “We tried to stitch the old and new together very carefully,” Lynn says. “And we needed to be spatially efficient so we wanted the circulation corridor to be a programmed space.” The corridor serves several functions: a place to pull on shoes, scrutinise your
wardrobe choices and stand at twin basins to brush teeth and wash hands. It also gives access to the shower and bathrooms, keeping each separate and private. “Carly and Andrew really enjoy this space as a retreat close to their bedroom,” Michael says. “It’s elevated to capture city views, but it’s also quite discreet.” From the street it is difficult to distinguish the contemporary addition, but viewed from the side of the house, a distinctive white form emerges. Timber battens encircle the two-storey extension. “The facade is primarily a privacy screen, but in the late afternoon it shades the glazing and creates these great lighting effects inside. It’s a bit of a light catcher,” Michael says. “We wanted to celebrate the playfulness of the screen so we incorporated garden lights into the structural tie rods at points along the length of the building.” On the opposite, northern side of the extension, sunlight is drawn inside
through high-level glazing above the ensuite and robe. A glass shelf inserted between shower and WC allows the same light to be reflected into the lower floor. “We wanted to strengthen the idea of the plan being ‘extruded’ from the back of the house through the glazing strategy,” Michael says. “So we used butt-jointed glass so it extends continuously through each space.” The clerestory windows provide views to frangipani trees in the back yard, where each spring, pink blossoms enliven branches and shift the chromatic experience of the interior. Out of season, pink colour tones are made a permanent fixture in the stone walls and floors in the walk-in shower. Brass shelving, fixtures and lighting bring another layer of tonal interest and sense of luxury while oak floors imbue a sense of warmth and comfort, balancing the crisp whites and soft greys interrupted only by views to sky, tree and city. Phil Brown Sometimes, if I’m really, really early and I have done a lot of socialising in the foyer beforehand I am tempted just to leave, feeling my work is done Most people who know me know that I am usually early. I hate rushing in at the last minute, particularly if it means I might not get a good seat. Even though I had arranged reserved seating at a piano recital recently, I made sure we were still there half an hour before the performance began. We were greeted as we arrived and escorted to the QSO Studio to listen to the brilliant British pianist Paul Lewis, who is Queensland Symphony Orchestra’s artistin-residence this year. Anyway, blow me down, when we got inside the joint was full. The seating was by general admission and the audience for this sort of thing is
usually an older demographic and they are notorious early birds. Earlier than me. I reckon some of them had been there since lunchtime. And I thought I was an early bird. The only time I’m ever late is if it is something I really don’t want to go to. Then I might amble in reluctantly just before or just after something has begun in the vague hope that I might get locked out and have to go home. But most of the time I’m there in plenty of time. I have always done this, although there are certain circumstances in which I wouldn’t be quite so early. For example, I wouldn’t arrive for lunch or dinner at someone’s house early. I hate
people arriving early at our place if, God forbid, we have invited people over. If you are to be there for 1pm, for example, you should arrive between 1pm and ten past. If we go to someone’s house and we are too early I will park outside until the appointed time and knock on the door just as the clock strikes the hour. But for a concert I will always arrive 30 minutes before the show so I can have a lemonade, chat to some people and powder my nose before I go in. Sometimes, if I’m really, really early and I have done a lot of socialising in the foyer beforehand I am tempted just to leave, feeling that my work is done. I’m early for the doctor ... even the
dentist. But I have a friend who is even earlier. He lives in Sydney and whenever I go there, which is three or four times a year, I take him to dinner. He comes to meet me at my hotel and then we will either dine in-house or nearby. Last time we did this I’d had a busy day and I told him I would meet him in the lobby at 6pm. I was getting in the shower at 5.25 when my phone rang. It was my friend. “I’m here already,” he said. “I’m sorry. I can’t help it.” I made him wait 20 minutes, though, while I washed and shaved. We were all done by 7.30pm. Start early and finish early, that’s our motto.
