This week... At home on the sprawling Brookfield property she shares with husband Mark Gilbride, retired netball star Laura Geitz is in her element. Caring for the couple’s two little boys, Barney, 2, and new arrival Frank, born in July, she is the picture of contented bliss. Fresh approach Matt Golinski is bringing his passion for local produce to Brisbane’s Good Food and Wine show Hannah Davies

W

atching his daughter slurping spaghetti one string at a time is a precious moment for Matt Golinski. After losing his entire family in a Tewantin house fire almost eight years ago he knows how fragile life is. “I don’t take anything for granted now,” he says. “I know how quickly life can change and so I embrace every day and take advantage of every moment. “I’m happy and enjoying life … apart from being far too busy.” The celebrity chef, who has since found new love with wife Erin, welcomed little Aluna into the world in 2017, and now lives at Pomona, in the Sunshine Coast hinterland. As food and culinary tourism ambassador for the Gympie region, he’s looking forward to bringing fresh rural produce to Brisbane when he takes to the stage for the Good Food & Wine Show. The 47-year-old, also known for his past appearances on Ten’s Ready Steady Cook, will be cooking with his good friend and fellow celebrity chef Alastair McLeod. “It will definitely be entertaining with some good banter,” he says. “I love live demonstrations because as well as cooking with some seasonal, locally sourced produce, interacting with the audience is a lot of fun.” This year’s show will feature more than 200 food, wine and lifestyle exhibitors, wine tasting masterclasses, a “cheese alley” and appearances by other top chefs Miguel Maestre, Matt Sinclair and Matt Moran.

“I think it’s important to share with people the need to know where their food comes from. They need to get out to the farmers markets and get to know the suppliers,” Matt says. “You can create great dishes very easily using simple ingredients.” Some of his favourites at this time of year include stone fruits such as peaches and nectarines, but he also takes advantage of great dairy ingredients. “Goat’s cheese is amazing in the spring because all the baby goats are being born and so the milk is at its richest,” he explains. Having decided, at the age of 12, to one day be a chef, Matt’s passion for the food industry has never wavered. After working as executive chef at some of Queensland’s leading restaurants, he founded his own catering company, and in March 2018 he joined the Peppers Noosa Resort team, developing menus that consolidate his knowledge and love of regional produce. Indeed, it was his love of cooking that helped him carry on after the 2011 tragedy that robbed him of his wife and three daughters, and left him with burns to more than 40 per cent of his body. “It’s something I’ve done since I was a kid and when I got out of hospital I was keen to get back in the kitchen and get on with it,” he says. “I’ll never get bored of cooking, it’s a job I love.” Good Food & Wine Show, Oct 25-27, tickets from $35, Brisbane Convention & Exhibition Centre, South Brisbane. goodfoodshow.com.au

S Home advantage Golden girl Laura Geitz realised her goal of returning to netball after baby No.1, but now her growing family has changed her priorities Tonya Turner

itting in the dining room of her Queenslander in Brookfield looking out over her 1ha property, Laura Geitz can almost imagine she’s back in her country hometown of Allora on the Darling Downs. The farm she grew up on with her parents and sister was a lot bigger at 607ha, but the space and privacy is enough to make her feel the peace and comfort of her childhood home. Wearing the comfy green track pants (the trendy kind) and loose-fitting top she changed into after the hilarious family photo shoot outside (complete with every trick in the book to make toddlers smile) with her husband Mark Gilbride, twoyear-old son Barney, and baby Frank, born in July, Laura reminisces about her life growing up in a small country town. Barney wanders in and out from the veranda, captivated by the gardener mowing the lawn and pruning the bushes while Laura’s mum, Juanita, rocks Frank in her arms and Mark paces the house on a work call. “Growing up in the country and having wide open space – I always said to Mark ‘as soon as we have a family of our own I want them to have that’,” Laura, 31, says. “I love the fact the kids can get on their bikes and ride horses; it’s a pretty special little lifestyle to be able to offer them.” The retired netball champion who helped the Queensland Firebirds to three national titles (two as captain), and captained the Australian team the Diamonds to Commonwealth Games and World Cup victory, doesn’t miss their former home in Bulimba they moved from a year ago, or the inner-city lifestyle they used to lead. “I can’t tell you the last time we went out for breakfast. Now I’m happy just to have a coffee and not have to heat it in the microwave,” she laughs. Adjusting to motherhood after having

Barney in 2017 came with the usual challenges of becoming a first-time parent, but Laura is finding it easier the second time around. “With Barney I was a bit shell-shocked by it all, but this time it’s been lovely, and seeing Barney with Frank, he’s unreal. It’s obviously an adjustment but I think I’m a lot more relaxed this time,” she says. Not having the pressure to return to netball has made a big difference too. “It was a goal that I had set to return to the game after having a baby,” she says. Laura went back to playing netball when Barney was six months old, determined to find the right balance between being a mum and a professional athlete for the sport she’d played since she was 13 years old. “It was a huge whirlwind and I did find that difficult … Reflecting on it, it was quite hectic. You’re balancing motherhood with playing and you’re physically exhausted from training, and I got to the point where I wasn’t doing either really, really well. “I did it for six to nine months in total, and it was doable, but I don’t think it was sustainable. Something had to give,” she says. After playing the Commonwealth Games in front of a home crowd at the Gold Coast last year, where Australia lost by one goal against England, and completing her season with the Firebirds, Laura announced her retirement in August last year. By now, Barney has grown bored of the gardener and hovers at the doorway. “Barney, come on in, do you want to watch something on mummy’s phone?” Laura asks the sleepy-eyed toddler while gently guiding him inside. Before long he’s asleep on the couch next to his baby brother. CONTINUED NEXT PAGE

I had the best dad for 25 years of my life, I learnt a lot from him, and that’s what I’d love to pass on to our kids

“Someone said to me in a conversation, ‘It’s time to retire when you’ve exhausted all your love for the game’. I’d had a lot of conversations with a lot of people, it wasn’t just a split decision … My time and energy had to be focused somewhere else, which was being a mum to Barney. “When I was there I felt I was missing out a lot on him, and I just knew it was time for me to step away. I felt like I’d given everything I could give, and the

sport had given me everything it could give,” she says. Although her playing days are behind her, Laura will continue to commentate for Channel 9 and run clinics encouraging young girls to get into sport through her partnerships with Suncorp and Queensland Country Health Fund. Netball’s golden girl will also stay busy through her sponsorships with Rebel Sport, Chemist Warehouse, AV Jennings, Auto Sports Group and Go Healthy, which came in extra handy when it came time to

take her pregnancy and breastfeeding supplements. Exercise is still a big part of her life, helping her to relieve stress and get the endorphins flowing. She keeps fit with up to three pilates sessions a week at a studio in Paddington and does yoga in her home gym downstairs. As she focuses more on family life, Laura often thinks of her dad, who passed away six years ago, and how proud he’d be of his two grandsons. “I think about the role model and the father I had in dad, and if I can pass some

of those traits on to Barney and Frank in the way that he was a parent, that’s all you can do. He was just a wonderful, wonderful person. “I had the best dad for 25 years of my life, I learnt a lot from him, and that’s what I’d love to pass on to our kids,” she says. As for her goals for the future, right now for Laura it’s all about adding to their brood. “After I had Barney I was like, ‘Oh gosh, this is full on’, but then after having little Frankie I’m like, ‘I just want more of these little cherubs’. I’d love to have a big family,” she says. Laura catches Mark walking down the hall. “I think we’ve decided we’re going to have four kids?” she asks sheepishly. Mark, who wants three children but doesn’t seem completely opposed to the idea, jokes tenderly, “I’ll be working until I’m 80”. Laura and Mark, a former professional rugby player turned commercial real estate agent, got married in December 2012 after first “liking” each other on Facebook four years earlier. Their romance blossomed from there, and while these days their date nights are few and far between, they’re just as happy cuddling up on the couch in front of the fireplace with a glass of wine or a beer watching the footy while the kids are asleep. Barney doesn’t go to sleep most nights until around 9pm, but Mark says they’re happy with that, as it means he gets to spend more time with his son when he gets home from work. As for family time, they don’t venture out all that much, happy instead to enjoy the house, gardens, pool, tennis court and wide open spaces of their estate, with plans for a chook pen soon. “We’ve sort of become recluses in a way since moving out here. It’s quiet and it’s nice being able to switch off and have that time to ourselves,” Laura says.

Alicia Pyke Yes, even in my imaginary career I’m driven and exacting. Even fantasy me doesn’t stop to smell the roses when there’s more work to be done Do you have a fantasy career? I do, it’s being a florist. Surrounded by flowers, I imagine myself in a minimalist, sunlit studio. I’m standing at a bamboo-topped work bench, selecting the most exquisite seasonal blooms to turn into bold yet simple bouquets. My stylish clients value quality and come to me for the freshest, locally grown flowers to adorn their homes or present to loved ones. We chat as I gently wrap these beauties in recycled brown paper and arrange stems in weighty, vintage crystal vases sourced from markets around the world. Between

clients I sip peppermint tea and plan an upcoming floristry workshop. Yes, even in my imaginary career I’m driven and exacting – juggling cups of tea with brand extensions and obsessing over ways to set my flowers apart from the zillion other florists out there and grow my business. cop the blame when we’re feeling under the pump. Me. I’m the one setting the sky-high expectations and giving myself a hard time when I fall short. It’s exhausting, but a friend who studies astrology tells me it’s all part of being a triple Capricorn (yes, it’s a thing). Apparently I like goals, deadlines and achieving what I set out to. Uh huh, I’m a real hoot, astrologically speaking. Little surprise then that I love being back at uni where the relentless pursuit of good grades is everything. My course has weekly assessments so there’s always

something for a nerdy approval-seeker like me to strive for. And the rare 10/10 moments feel just as satisfying today as they did when colouring neatly inside the lines earned a gold star or red smiley face stamp in primary school. Remember those? Given that I now have study for my type-A personality to sink her teeth into, it’s time to let go a little elsewhere in life. You know, just to see what happens when I stop trying so hard to make sure things turn out perfectly. So please excuse me, new relaxed me starts now, and starts with a nap. It’s going to be the best nap of my life.

Hangout haven First and foremost a drinks and music offering, Ivory Tusk does nail much on its menu with a dash of Mexican flair RESTAURANT Tony Harper If it was 1999 and I walked into Ivory Tusk I’d feel right at home – the day that follows a big night, no sleep, music slightly pimped and a little bit doof-doof … taking the edge off a long session. But I’m 20 years too late and 20 years too old. Despite the fact that it’s lunchtime and the place is empty, I feel a little out of place. Which is not the fault of the staff – the welcome is hearty and we are looked after in a no-frills but want-for-nothing kind of way. Ivory Tusk is first and foremost a bar. I’m guessing music is a big part of its makeup – it does live stuff, DJs and notquite background – and food is the third part of the mix. But the food is surprisingly good. It’s Mexican of sorts – perhaps more southern Californian/Baja than true Mexican, but it comes with a lot more intrigue and savvy than just about every other Brisbane Mexican I can think of. There’s a Netflix series called The Taco Chronicles, and it’s a must-watch for anyone with more than a passing interest in food. The most captivating episode is surely the fifth which delves into barbacoa – a method of slow-cooking lamb (primarily) in stone wells. The meat is wrapped in agave leaves, covered with coals and cooked for anything up to 18

hours … like a Mexican version of a hangi. The meat is shredded, and popped on a tortilla with salsa and pickles. Just watching it from the couch (and I’m revisiting the episode as I type) is spellbinding. So I’m intrigued, but prepared for disappointment, when I see barbacoa ($33) on the menu. And it is disappointing. But having a Netflix-barbacoa fetish, I’m bound to feel let down by almost anything. Regardless, do you reckon this lump of nicely tender lamb has been wrapped in agave and roasted overnight in coals? I truly doubt it. Fish tacos ($15) are rather splendid – fat, battered, deep-fried fillets of something on a bed of rocket and other saladish bits, chipotle mayo on top. The tortillas are flour, not corn, which, if you toss the rocket salad in for support, speaks way more of California than it does of Mexico.

Which is neither good nor bad ... merely an observation. Ditto the bowl of slaw that comes with the chicharrones ($17: pork crackling) and reappears on a plate of chicken mole ($24). Americano! But the mere fact that chicken mole is on the menu earns a gold star. It hasn’t been done in the classic mole-poblano (chocolate, spices, pepitas and chilli) style, but it is a pretty interesting rendition, and so, so much more intriguing than a bowl of nachos and a cheesy enchilada washed down by a jug of watered-down sangria. For me it’s a shame that I need to go to Ivory Tusk to get that food, which I probably won’t do again. But for folk going to Ivory Tusk for music and bop-bopbopping the night away, it’s a godsend. It’s some of the better Mexican in town and surely the best food in a Brisbane quasi-nightclub.

All fired up We can always learn new tricks when it comes to cooking steak, says Alastair McLeod Grilling steak over fire is a quintessentially Australian thing to do. I’m veering into teaching my grandmother how to suck eggs but there are always tips to be taken. Remove steaks from the fridge a full hour before cooking then season generously with sea salt and freshly milled pepper. Drizzle steaks with oil and place on a preheated barbecue. After 30 seconds turn and continue to turn frequently until you are happy with the degree to which you have cooked your meat. Rest for half the cooking time, carve and administer a little more salt. Sorry Granny.

STEAK AND CHIPS Ingredients 500g Dutch cream potatoes, scrubbed 1 tomahawk steak Sea salt and freshly milled pepper 120g unsalted butter, softened 65g miso paste 1 small truffle, half finely grated, half sliced Method Cut potatoes into 2cm-thick slices. Cut each slice into 2cm-thick chips. Rinse under cold running water for 2 mins. Drain then place into a medium pot, cover with cold water and bring to the boil over high heat. Reduce heat to low and simmer for 10 mins then drain well. Place on a tray in a single layer and chill for at least 2 hours. Heat vegetable oil in a deep-fryer to 130C. Cook potatoes in batches for 5 mins. The potatoes should look dry, but not coloured. Drain on paper towel. Cool slightly and then refrigerate again for 2 hours or until cold. Next bring steak to room temperature and season generously. While the steak comes up to room temperature, beat together butter, miso and the finely grated truffle. Use as it is or use plastic wrap to make a neat log, chill then cut into thick “coins”. Cook the steak as recommended and while it is resting, finish the chips. Raise the fryer temperature to 180C and cook for 8 mins,

turning occasionally until golden. Season with sea salt. Serve steak with chips, miso butter, sliced truffle and the beetroot remoulade. Serves 4 Beetroot and walnut remoulade Ingredients 225g celeriac, peeled and shredded 225g beetroot, peeled and shredded ½ lemon, juiced 70g mayonnaise 1½tbs Dijon mustard 1½tbs creme fraiche 2tbs finely chopped flat leaf parsley 40g toasted, skinned and coarsely chopped walnuts Sea salt and freshly milled pepper Method Place celeriac and beetroot in separate bowls and toss with lemon juice. Combine mayonnaise, mustard, creme fraiche, parsley and walnuts. Season with salt and black pepper, then toss in both vegetables and lightly fold together to maintain two distinct colours. Enduring star People thought Kris Kristofferson was crazy when he left teaching to write songs, but he’s had the last laugh Daniel Johnson He’s a three-time Grammy winner, a singer-songwriter whose compositions have been covered by more than 450 artists, and a gifted actor who has appeared in more than 70 films, including A Star is Born (1976) with Barbra Streisand. Ahead of his Brisbane show with The Strangers next month, Kris Kristofferson, 83, chats to Brisbane News about his journey in music. You were older, in your 30s, before you found success as a songwriter ... I’ve always been grateful for my songwriting success. It’s what I wanted to do when I was teaching literature at (US Military Academy) West Point – move to Nashville to be a songwriter. Most people thought I was crazy and I sometimes wondered if they were right. When I first came to Nashville, as soon as I got there I knew I was in the right place. The first time I got to Music Row, I walked from downtown to 17th Avenue South and by the time I got there, I was soaking wet. I spent the whole night listening to cowboy Jack Clement and I think Bobby Bare was there, and I was just head over heels. Then I got to shake Johnny Cash’s hand, backstage at the Opry, and that put the nail in the coffin right there. It didn’t look like a smart choice for several years – my family thought I’d lost my mind but it all worked out. Which of your albums should have been bigger hits? I don’t think of songs in terms of hits, I write songs as literature. I’ve started songs very differently (to how they have

ended up). Usually it’s the sensual idea of the song, it’s the idea of it and you build around it. I’ve never, to my knowledge, started with a melody. What do you think of the latest A Star is Born remake? A Star is Born is one of my favourite films. I think it gave me a chance to do some stuff I hadn’t done before and I think it holds up. It was popular with people, I can still look at it today and feel good about it. I love the remake and think Bradley Cooper, Lady Gaga and Lukas (songwriter Lukas Nelson) all did a great job with the story and music. Your songs have been covered by everyone from Janis Joplin and Elvis Presley to Johnny Cash and Willie Nelson. Do you have a favourite? A lot of them happened around the same time. It was real fortunate. Sammi Smith cut Help Me Make it Through the Night, and Johnny Cash was doing his television show at the time and did Sunday Mornin’ Coming Down, and used the recording from the television show. Then, Roger Miller did Me and Bobby McGee and I never had to work again. What keeps you on the road? Playing with (late outlaw country musician) Merle Haggard’s band, The Strangers, has brought new life into the tours. It’s fun for me to have a band on stage with me again, especially Merle’s band. Larger than life A maverick artist’s legacy inspires with vibrant works that pulse with energy Phil Brown He was becoming a legend in his own lifetime and the artist Jon Molvig was certainly one afterwards. Sadly Molvig died at the age of 46 in 1970 but his influence has had an amazing ripple effect. He was well known as a rambunctious type and not everyone always agreed with him. But he was an important teacher and mentor and one of the most important figures in Brisbane’s art history. First and foremost though he was an artist and the exhibition Jon Molvig: Maverick, now showing at the Queensland Art Gallery, reminds us of that. Behind the legend was a painter’s painter who could turn his hand to any genre. Portraiture was a strong point and in 1966 he won the Archibald Prize with a terrific portrait of painter Charles Blackman. That portrait is included in this extraordinary and long overdue survey of his work and influence. In an essay on the artist’s work in QAGOMA’s ARTlines magazine Simon Elliott, who is deputy director collection and exhibitions at QAGOMA, points out that Molvig’s career was cut short when he was in his prime. Simon writes about Molvig’s time living and painting and teaching in Spring Hill where his salon was a who’s who of Australian art – John Rigby, Joy Roggencamp, Albert Tucker, Russell Drysdale, Charles Blackman and Gordon Shepherdson. Who said Brisbane used to be a cultural desert?! Molvig was born in Newcastle in New South Wales, came to Brisbane in 1955 and dominated the local art scene until his death. “Molvig purposely turned his back on the art centres of Sydney and

Melbourne, choosing Brisbane but also agitating against the timid nature of its art scene at the time,” Simon writes. “With great energy he worked through figure studies, portraits and landscapes, making radical stylistic shifts to suit his subject matter. The city inspired his greatest work, and it was from here that his influence spread across Australia.” There’s a handsome hardback catalogue accompanying the exhibition

and that is a wonderful window into Molvig and his era which was really the cradle of contemporary art in Brisbane. There are essays by curator Michael Hawker, Samantha Littley, Michele Helmrich, Glenn R Cooke and Bruce Heiser and there’s a lot to learn about this almost mythical figure. In a sense Molvig can be credited with creating the Brisbane art world, with a little help from his friends. The story of his

life and work is fascinating and tinged with sadness on account of his untimely demise. That sudden departure allowed his legend to grow a little faster than it might have had he still been around. But that legend has a very solid basis as this exhibition demonstrates. The importance of this exhibition cannot be overstated and his oeuvre is rich and incredibly varied. This is the good work our state gallery complex does so well. Bravo QAGOMA.

DOWNTON ABBEY (PG) hhkjj Director Michael Engler Starring Maggie Smith, Michelle Dockery, Hugh Bonneville Thirteen years of romance, tragedy and scandal … that’s an awful lot of loose ends to tie up. But Downton Abbey creator Julian Fellowes interweaves the multiple plot strands with such dexterity, you can barely see the knots. Set two years after the events in the final series of Fellowes’ post-Edwardian soap opera, the movie ups the ante with a royal visit – by King George V (Simon Jones) and Queen Mary (Geraldine James). The old system might be crumbling under the weight of a rising middle class, as well as the changes brought about by the suffragette movement, but nothing affirms one’s aristocratic entitlement like an up close and personal encounter with a reigning monarch. A similarly renewed purpose can be detected downstairs, where even rebellious assistant cook Daisy Mason (Sophie McShera) comes to understand the knockon effect for the surrounding village of the privilege that has been bestowed upon the Crawley family. While it’s the servants’ job to ensure everything goes without a hitch in the opulent upper echelons of the country estate, all hell breaks loose in their own quarters as the haughty royal staff ride rough shod over Downton’s established practices and routines. Even Carson (Jim Carter), who is summoned back, willingly, from retirement by the besieged Lady Mary (Dockery), is no match for the royal butler (David Haig). Working quietly behind the scenes, it’s

Adding a combustible element to the equation is Maud Bagshaw (Imelda Staunton) – Queen Mary’s lady-in-waiting and Robert Crawley’s (Bonneville) cousin. Violet Crawley (Smith), the formidable

Dowager Countess, has Maud in her crosshairs due to a disagreement over how the widow intends to bequeath her substantial inheritance. At this point, the diverse cultural influences informing this joint ChineseAmerican venture begin to cross-pollinate. It’s hard to imagine the mystical element of this story about love, loss and community, which coalesces in a moving sequence in the lap of the Leshan Giant Buddha, being handled as delicately in the

West. In terms of plot, Abominable is relatively straightforward. Bonding immediately with the vulnerable creature, Yi is determined to get him home safely – there are familiar echoes, here, of E.T. Pursued by a myopic zoologist with strangulated English vowels (Sarah Paulson) and the wealthy trophy hunter

heightened production values do full justice to the costumes, carpets and corridors of the magnificent York estate. Fans – whose experience is enriched by six series worth of backstories – will not be disappointed. For the rest of us, this conservative English melodrama amounts to a handsome and thoroughly persuasive argument for the revival of the Republican movement.

who employs her (Eddie Izzard), Yi and Everest leap on board a barge that carries them up the Yangtze. Yi’s eager young neighbour Peng (Albert Tsai) and his cousin Jin (voiced, rather appropriately, by Mt Everest legend Tenzing Norgay’s grandson, Tenzing Norgay Trainor) follow in their slipstream. The trio’s journey segues neatly with the destinations in the treasured postcards Yi collected with her father. Abominable’s showdown, on the iconic Everest suspension bridge, recalls that of Missing Link, the similarly light and skilful stopmotion adventure released early this year. Written and directed by Jill Culton (Open Season), the humour is refreshingly artless and unforced – the recurring whoopy snake joke is a fine example. Jin’s transition from self-involved teenager to team player is nicely handled and Peng is a natural comic foil. But the film belongs to the spirited Yi and her giant, undomesticated pet with his lolling tongue and goofy teeth. Seldom has an odd couple melded with such harmony. T

here is a beautiful peony farm near my parents’ place. Peonies are my absolute favourite flowers, so walking into the peony fields and picking what I need to decorate the table is my idea of heaven. Peonies come in a variety of shapes and shades, and for my table colour theme, I selected pale pink. The peonies running along the table in classic blue and white chinoiserie-style pots atop the lettucegreen linen cloth create a bright and beautiful setting. The colour combination also looks amazing against the backdrop of the lake, and reflects the tranquillity of the water. I used blue-and-white printed china plates and side plates, sitting them opposite bright-green wine glasses and patterned green napkins to anchor the look. Blue-and-white placemats add interest and complement my plates. This combination of colours works so well with the delicate flowers. When my guests arrive, they will be welcomed in a drinks area with a beautiful grazing table, adjourning to the jetty. The grazing table forms the informal first course; everyone can greet each other and chat before sitting down at the table for the main meal. Breaking the meal up like this makes it feel more casual. Setting the lunch up in this way also takes advantage of the stunning countryside, which acts as an extension of my lunch table decorations. Grazing tables have become very popular, and creating the perfect table setting that reflects your theme is enjoyable. It does take a little bit of fiddling with, but, if you are organised and have all your props ready to go, you will find it falls into place. As my grazing table acts as the entree, I want to serve a variety of things, from different cheeses, breads and dips to ham, salami, grapes, fresh pears and figs – the list goes on. Grazing tables are all about abundance, so think about creating layers to display your food, with chopping boards, cake stands, books, a variety of different-sized bowls – anything to create height across your spread. Set your plates up first, then start to spread your food around, place your meat selection on the boards with cheese to match, keeping cutlery always in reach. Fill in the gaps with bunches of grapes, collections of nuts, fresh figs and herbs.

A gin-inspired bar for the ladies A brilliant gin bar could never be a bad thing. Using a variety of boutique and local gins, I have created a space to concoct a few blends. A beautiful tray laden with all the garnishes a gin could possibly need helps to make it all the more exciting and inviting. To create your own bar setting, you will need: ● A variety of gins ● A variety of tonics ● An abundance of ice ● Freshly sliced lemons and limes ● Basil, thyme, mint and rosemary sprigs ● Long slices of short (Lebanese) cucumbers ● Star anise ● Burnt orange rind, pre-curled ● Different-sized glasses

How to make the perfect G&T ● The key to a great gin and tonic is to balance the bitterness of the tonic water against the gin. ● The flavour of the gin will also dictate the garnish used: will it need lemon, lime or cucumber? Perhaps a sprig of rosemary? There are many flavoured gins available now, so a little taste-testing may be required when perfecting your tipple. Sometimes you will need to adjust recipes depending on how you take your gin, but this is something to play with and is all part of the fun! Glassware is also something not set in stone. A great cutglass tumbler is traditional, but I have had some beautiful gin cocktails in wine and Champagne glasses and they tasted just as sweet.

● Add a handful of ice to a highball glass. Pour over your gin and give it a swirl. Add your tonic to fill your glass about halfway, then finish with your garnish of choice. ● If you don’t like your gin watered down with ice cubes, how about making ice cubes out of tonic water? Add a garnish of fresh herbs, edible flowers or citrus to the cubes for a gorgeous added detail. About the author Chyka Keebaugh owns one of Australia’s largest events and catering companies. Phil Brown We were once raided by the police who got excited when they discovered a bag of green plant material in our pantry. But it was only peppermint tea For some reason I was thinking the other day about all the places I used to live before I was married. And I thanked the Lord I don’t have to live like that any more. Living a quiet life in a home with my wife, son and dog is heaven. I shudder when I think of how it used to be, all those years of living in dumps and sharing. When I first left home to go to uni in Toowoomba I lived in a house that had a wood stove and no phone. It was a small and ramshackle place on Tor St and there were several of us in it. My friend and I used to skateboard on the highway out front at night and, being on a hill, that worked well.

Eventually I graduated to a bigger share house with about five bedrooms and since each of us had a wide circle of friends there were often thirty people in the joint. We had a rudimentary but proper stove in that one. We had fireplaces but no wood so it was freezing in winter. I recall I bought an overcoat, which I used to sleep in. It was excruciating. We had a few parties there too and were once raided by the police who got excited when they discovered a bag of green plant material in our pantry. But it was only peppermint tea. After uni when I worked for the local radio station on the Gold Coast I shared a house with a couple of radio announcers,

one of whom played Demis Roussos records rather loudly all night. I moved out of there soon enough. In Monto, where I began my career, I started out living with friends but they kicked me out and I ended up in the local caravan park. In a caravan, thankfully. Then I lived in a farmhouse at a place outside town called Hurdle Gully. I was just upwind from a piggery. True story. Then I moved to Rockhampton – the big smoke – and I lived, at first, with a couple who threw me out after accusing me of using their towels. Also a true story. Later I moved in with three women. They lived upstairs and I lived in a room

under the house known as “The Cave”. I eventually moved into another joint with a couple of colleagues and there was a lot of cheap wine and stout drunk there I can assure you. Just thinking about it now makes me cringe. Before I got married I lived in New Farm a couple of times. I moved into one flat by myself but moved out the next day because I thought it was haunted. You should have seen the real estate agent’s face when I explained why I was handing back the key. Maybe it was just my imagination? Either way he thought I was nuts. Go figure.
