An in-depth discussion of the emulsification process will give students key points in stabilizing temporary emulsions. Techniques in “repairing” separated emulsions will be reviewed. These bases will be used to make derivative sauces such as bearnaise, choron and foyot sauce. A royal glacage will be made and used in the preparation of the classical French dish Coquille Saint Jacques. $35
