Crunchy Kale and Quinoa Salad
! Ingredients 1 Cup Quinoa (cooked)
Chopped Kale
Dried Cranberries
Pecans (or walnuts, almonds, or whatever nut you like)
! Dressing: 3 T Olive Oil
2 T Lemon Juice (or Balsamic Vinegar)
1 T Honey
1/2 tsp Salt

Tips from the kitchen: I cooked the Quinoa according to the directions, but I let it completely cool off and get as "dry" as I could. You don't want this to be a soggy quinoa situation. I also buy the big bag of chopped kale from Walmart, Sprouts, Target. It's pre washed and chopped perfectly. The dressing is meant to be light, you get lots of flavor from the cranberries and nuts. I personally used the balsamic option for my salad and it was super yummy.
