Dartmoor is home to one of England’s most famous National Parks. A wild and beautiful place, sprinkled with granite topped hills, marshland and numerous Dali-esque rock outcrops, sculpted by the sweeping winds. This is a hugely exciting time for the Andrew Brownsword Hotel Collection. We have grown into a well formed group of twelve hotels offering individual experiences across every property, delivering exceptional food, wines and service. My roots are firmly planted at Gidleigh Park where delivering 2 Michelin Star food is my passion, however the development of ABode hotels provided the opportunity to make the very best food available in a more accessible way. I took the ethos of our kitchen at Gidleigh Park and transferred this into the dining options across MC restaurants, CafĂŠ Bars and Taverns found within ABode. It has been a winning formula that has seen young diners grow through our experience and develop a love of great food, maturing and appreciating the qualities of a fine dining experience. The expansion of our country properties has added another dynamic to our collection and now I can look forward to overseeing and acting as an advisor to our talented Chefs across those hotels. Learning from me and my team at Gidleigh, new talent will be developed and encouraged to create and innovate, and wherever you stay you will enjoy a dining experience that will be memorable on every level. The setting of the picture postcard village of Amberley is truly stunning. To the East is the sheer incline of the Downs, which will take you on a steep walk up to Amberley mount. Creeping round the South and West sides of the village is the atmospheric River Arun and a host of wild brooks. They normally flood every winter ensuring it remains a haven for a diversity of wildlife, notably birds. The Arun Valley, in which the river sits, can often be seen filling with mist from the surrounding downs. by Brian Viner When Crab tortellini with mango and ginger puree, pan-fried scallop and a lemongrass foam, exquisitely cooked and presented, is the sort of food you can eat in, why on earth would you want to eat out? Or more accurately, perhaps, where on earth? The answer is Zermatt, the delightful Swiss village in the shadow of the mighty Matterhorn that, in the opinion of many people who love to combine great skiing with great eating, is peerless in the quality of its mountain restaurants, but where inchalet catering, too, has now reached unprecedented levels of excellence.

Now, if there is one man who embodies a passion both for skiing and food, it is Michael Caines, the acclaimed Executive Chef at Gidleigh Park who is also an operating partner in Brownsword Hotels. Michael started skiing when he was 21, but four years later suffered the road accident in which his right arm was severed. As you might expect of a (right-handed) man who eschewed self-pity and promptly re-taught himself to cook left-handed, he continued to ski, and continued to improve. He now cuts quite a dash, zipping through off-piste powder using his one pole as a kind of rudder.
We stayed in a tremendously swanky apartment, and overseeing our catering needs was Chris Jenks, a clever young chef who had worked under Michael at Gidleigh Park for more than two years, before, with his lovely German girlfriend Cat, taking his highly exportable skills on the road. It was Chris, in homage to his former boss, who gave us the crab tortellini (a twist on a Michael Caines original), and that was just an appetiser. Foie gras terrine with home-made brioche followed as a starter, then honey and pistachio crusted venison with fondant potato. Michael took quiet but manifest pride in the talents of his protégé.

The chefs on the Mountain Exposure payroll also cooked dinner for us, and Michael, like a culinary Hercule Poirot, was able to identify their antecedents. On our first night, for example, we were given a sublime, extremely buttery mashed potato, and Michael recognised instantly that chef Kostas Papacharalampous must have been apprenticed to the great Joel Robuchon, as indeed he once was himself. Superb as our dinners were, however, they were matched if not exceeded by the quality of our lunches. Our “gourmet guide” was the founder of Mountain Exposure, an engaging fellow called Donald Scott, naturally an exper t skier but also a discerning gourmand, who took us to three of Zermatt’s so-called “big f ive” mountain restaurants. At Blatten we ate a memorable crayf ish and truff le risotto; at Fluhalp, a simple yet sensational dish of king prawns with noodles, washed down with a delicious Swiss Rosé called Oeuil de Perdrix. Fluhalp stands over 2,600m above sea level, and feeds up to 800 covers a day at the height of the season. Michael was agog at the logistical exercise required, at that altitude, to stock up with so much wonderful fresh produce. “You don’t often get that experience on a mountain, it was incredible,” he told me later. He and Nick were also beguiled by the band playing on the terrace, who, possibly with the assistance of the Oeuil de Perdrix, got us all dancing in our ski boots. I asked them whether they might consider such a thing at Gidleigh... dancing in wellies, perhaps? 50
“Maybe at The Slaughters Country Inn,” said Nick, chuckling, of the characterful old Cotswolds pub recently acquired by the company. If not quite moved to introduce lunchtime dancing on the terrace, he and Michael certainly returned from Switzerland feeling inspired. “We already have lots of shared values with Mountain Exposure, such as great hospitality and wonderful service,” said Michael. “But what I really loved was that I felt we got a real taste of Zermatt, and that sense of locality is what I want to bring to The Slaughters Country Inn. Andrew (Brownsword, owner of Brownsword Hotels) keeps talking about OPQ - originality, personality and quality - and that’s what we’re striving for all the time, in such a way that we can also deliver perfect consistency. An interraction with local people and local customs, such as we experienced in Zermatt, can be part of that too.” And maybe there will also be a more direct link between the two businesses. It was while working years ago as a live-in chef for a family in an American resort that Michael really found his ski legs, and enthused anew by the sight of Chris and Cat having such a good time, and doing such fine work, he came home wondering whether he might build a mutually beneficial relationship with Mountain Exposure, rewarding hardworking and loyal young staff, with an urge to see more of the world, with a season or two cooking, and skiing, in Zermatt. Myself, I’ll stick with eating and skiing in Zermatt. There can be no better place on the planet.

In 2011, two star Michelin chef, Michael Caines MBE became an official partner to the Williams F1 Team. We talked to him about his love of Formula One and how he has been taking the world of corporate hospitality to dizzying new heights. How long have you been a fan of F1 Michael?
It was a time with some of the sport’s most legendary drivers...
I have been a massive fan since the days of my childhood - glued to the TV on Sundays watching the glorious battles between people like Nigel Mansell, Alain Prost and Ayrton Senna! So there has always been that interest in Formula One, and because there were a lot of British drivers and teams dominating the sport at that time you couldn’t help but fall in love with it.
I agree. But for me it is also about the people behind the scenes; the ones orchestrating the success of those drivers and teams. Without their vision and leadership these household names would not have achieved such levels of greatness! This truly is a sport of excellence and teamwork, which is exactly what I find captivating about it.

We seem to be in a new ‘Golden Age’ of F1 at the moment, where the racing keeps getting more exciting. Well for a start, we have seven world champions on the grid and that has never happened before! I have a particular soft spot for Michael Schumacher, the most successful driver of the modern era. We were both born in 1969, and he is out there racing as hard as ever with the current crop of superstar drivers:

Hamilton, Alonso, Button, Raikkonen and Vettel. Truly inspirational! Tell us a little bit about how the opportunity to combine two of your greatest passions came about? It was really a series of fortuitous events, involving some family friends which culminated with an invitation from Mumm Champagne to go to one of the races. It was then that I met Sir Frank Williams and we discussed how I could possibly get involved in helping them raise the level of their corporate hospitality. What appealed to you most about doing this? Basically it was the chance to work
closely and become a part of the Williams F1 Team. They have such a great heritage in Formula One and are the third most successful team in the sport, of all time. Racing is in their blood. They live to go racing and they race to win!

And for me, Sir Frank Williams is an absolute inspiration. He has not let personal adversity stand in the way of success, so I see this as both a great opportunity and an honour to be involved with him and the whole Williams F1 Team.
I work closely with two of the Williamsâ&#x20AC;&#x2122; chefs, Adam Dixon and Jon Smee, who spend time with me at Gidleigh Park to create the dishes that can be best taken into the race weekends and the particular challenges of that environment.

a temporary structure made up of two big trucks and a marquee, so you have a small workspace and limited staff. You are dealing with up to 50 covers at breakfast and lunch as well as the VIP dinners. It’s a matter of being sensible, lots of planning and recognising what you can and cannot do.
How many GP’s do you attend a year? At the moment it is 3 or 4. So this year, the British grand prix, Monaco and Monza and I will probably go to the American event as well. I also hosted a dinner at one of our hotels, Lower Slaughter Manor, and we are looking to do more of those at some of the other Brownsword properties.
Your involvement is now pushing the boundaries of hospitality at a Grand Prix weekend?
Would you say that you are very much a part of the Williams F1 team now?
Definitely. The Williams F1 Team were the first team to get a Michelin starred chef involved with their corporate hospitality. We have raised the bar by adding more value to the sponsors, which of course then makes commercial sense for the brands involved in the sport.
Absolutely. It was important for me to immerse myself into the team. I have my own team kit, and when they won the race this year, and celebrated Sir Frank’s birthday, they did it with Michael Caines’ champagne! I am proud to be part of such a fulfilling partnership.

What have been some of your personal highlights working with the Williams F1 Team? There have been so many! The formula one paddock is like a small village and that is something special. I have made some great friends both in and out of the team. To be on a first name basis with people like Kimi Raikkonen, Nigel Mansell, Lewis Hamilton and Jenson Button well, what else can I say... It’s amazing!

Crab Salad with Avocado & Tomato Vinaigrette by 2 star Michelin chef Michael Caines M.B.E
Serves 4 Ingredients 240gr White Crab Meat Picked · 30gr Brown Crab Meat · Greek Yoghurt · Mayonnaise · Vegetable Oil Vinaigrette · Avocado · Vinaigrette · 8 Sun Blushed Tomatoes · 4 Cherry Tomatoes (cut into quarters) · Extra Virgin Olive Oil · Aged Balsamic Vinegar · Fresh Basil (chopped and finely shredded) · Micro Basil (baby basil shoots) · Smoked Paprika · Lemon.
Vegetable Oil Vinaigrette 300ml Groundnut Oil · 100ml Champagne/White Wine Vinegar · 1 Clove of Garlic - peeled and lightly crushed · 1 Sprig of Fresh Thyme · Salt and Pepper. Mix all the above together in a bowl & place into a plastic bottle. Shake well before using.
Avocado Vinaigrette 250gr Avocado Flesh Ripened · 100gr Vegetable Oil · Vinaigrette · 50ml Water · Salt & Pepper Dash of Lemon Juice. Place the avocado flesh into a blender and add the water and groundnut vinaigrette. Blend until a smooth and fine purée and then season with salt and pepper and a dash of lemon juice.
Tomato Vinaigrette 250gr Tomato Sauce · 20gr Tomato Paste · 100ml Olive Oil (Extra Virgin) · 20ml Sherry Vinegar · Salt & Pepper. Place the tomato sauce and tomato paste into a blender, add the sherry vinegar and blend well. Add the olive oil and then season with salt and pepper and place into a plastic bottle.
Method Take the white and brown crab meat and place into a bowl, add a tablespoon of Greek yoghurt and mayonnaise, and mix well. Add some chopped basil and season with a pinch of smoked paprika and squeeze of lemon juice. Adjust texture by adding more yoghurt and mayonnaise, but be careful not to make the mixture too wet. Dress some tomato vinaigrette onto the plate. Shape the crab mixture between two large spoons and place in the middle of the plate spoon on some avocado vinaigrette and dress the sun blushed and cherry tomatoes around. Now sprinkle the thinly shredded basil over the top and drizzle with extra virgin olive oil. Finish with some aged balsamic vinegar and a few basil sprigs.

In 1937 a co-operative company was formed to provide employment in a small town called Ballinasloe, in the heart of Galway on Ireland’s glorious West Coast. Named Dubarry, after a famous French courtesan, the company began by making fine leather shoes. Dubarry was fortunate to be able to draw on a local population of hard working craftsmen and women, and they soon developed a reputation for excellent workmanship and quality. But Dubarry didn’t rest on their laurels, and looked to the wild West Coast and Galway’s great sailing heritage to motivate them to create superb deck shoes. Then, by using the finest performance materials available, they designed and made Shamrock, the company’s first dedicated sailing boot.
