THE EDITOR’S SMALL PIECE Hi there and welcome again - another month, another issue. For me May is always a nice month as it is the month in which I moved to this part of the world. Early May 1989 brought hot sunshine and blue skies to Bristol, together with a slightly nervous “young” lad moving from the East Midlands to start a new job at the Central Electricity Generating Board up at Bedminster Down. Cautiously over-estimating how big the city was when I came for interview I stayed overnight at the Jury’s Hotel on the harbourside, and gave myself an hour to drive all the way up to the CEGB HQ - which turned out to be two miles away. Job secure, I spent the first week of May flat hunting in hot sunshine, finding my first base in this lovely city on Redland Road.

Thirty two years on and the Spring weather is lovely again. How nice it is to see people, emerging from a sort of enforced hibernation, sitting outside coffee shops, cafes and restaurants, enjoying the sunshine and the company of friends and family. Let us hope that the careful release from lockdown is indeed irreversible. I’m hugely grateful to have had my second jab today, and can’t help but continue to be in awe of the staff and volunteers who are making such a success out of such a monumental public undertaking. They have my gratitude.

Following the easing of lockdown regulations, the Film Club, which takes place at St Peter’s Church Hall in Henleaze, will be able to operate with social distancing measures in place.

American by Day is an intelligent, funny and gripping thriller by Derek B Miller.

Thought-provoking and almost philosophical in tone the novel offers amusing insights on guns and American life and climaxes in a final exciting race against time.

In Asko Sahlberg’s remarkable short novel The Brothers, it’s 1809 and Henrik and Erik return home from fighting on opposite sides in the war between Sweden and Russia. The estate is Erik’s, although he’s the younger son, and it’s peopled with compelling characters who in telling their own stories contribute to a wider tale of obsession, family secrets and suspicion. There’s the Old Mistress; Erik’s wife, Anna; the Farmhand, who seems to enjoy a privileged position; Mauri, dragged off to war with Erik; the Maid who can’t bake and sundry others. This a dark, austere and gripping drama with an ending you won’t see coming.

WALKING WEST TANPIT WOOD If you read last months magazine you might remember that the walk I intended to feature was a little too long to be comfortable, so I decided to split it into two. The first part took us to Abbots Pool in Abbots Leigh, and this second walk starts less than half a mile away. It is a circular walk, albeit more of a lolipop as the first 600 yards of walk you do on the outward and return journey.

As ever, little is flat in the countryside - well not locally at least - and this walk is a bit up and down.

I’d rate it at “3 Plod” - so three uphills that will create a gentle puff, and three corresponding downslopes to even things out. It is a good walk for energetic children, but not one for buggies or scooters as downhill 1 in particular is bumpy and potentially muddy. It’s all off road though so no traffic worries, and not that long - you should be round in an hour and thirty. Take a snack and find a perch en-route to sit and listen to the birdsong (I saw wrens galore, jays and thrushes and heard a drilling woodpecker). Add in the beautiful flowers you’ll find in late April / early May and this walk is a reward for the senses.

At the sharp hander where Manor Road turns into Weir Lane there is an obvious path (marked “restricted byeway”) that leads up the left hand side of the farmhouse. Follow this path uphill (plod number 1) - it will soon level out and the woodland to your right will give way to an open grass field with woodland beyond. Carry on for maybe 400 yards until you reach a crossroads where your path meets another at right angles.

(As a gentle detour you could turn right here, through the gate and across (through another gate) into the rounded wood beyond - this is Soutche’s Plantation. Follow the nice circularish path running within it, but then head back through the two gates to the main path junction).

Assuming you didn’t do the detour then at the path crossroads you need to carry on straight ahead and continue along the main flat path.

Soon the open field on your right will give way to woodland and the path will slowly start to descend. The wood on your right is East Tanpit Wood, but it is the one on your left, West Tanpit Wood, that will be the focus of the next part of the walk. As you continue along the main earthy path it will start to get quite rough and rocky in places (still perfectly walkable though) and will steepen downhill (you’ll be pleased you are heading down not up!). Eventually the path will narrow as it runs behind a white building on your right, Tanpit Lodge, and emerge onto a quiet country road, Sandy Lane.

To get to the starting point head out over the Suspension Bridge, head towards Pill and half a mile past the Beggar Bush Lane traffic lights turn left, by the George Inn on the corner, into Manor Road. Follow the road - slow, it’s narrow and twisty - past the sign to Abbots Pool on your right and past the toad warning sign (!) until you come to a sharp left hand bend. Park considerately where you can - there is verge parking for a few cars and a layby about 50 yards back - and you’re ready to go.

You will immediately see the clearly marked entrance into West Tanpit Wood, which is part of the Forest of Avon and owned / managed by

(There’s no charge to visit the wood). So, in front of you is the main path through the woods, which you will follow. It climbs gently (plod number 2) with woodland uphill to your left and downhill to your right. If you are lucky the only sound you will hear will be that of birdsong, and the gentle trickle of running water which comes from Markham Brook, down the slope to your right. There is a clear path that branches off to your right, off the main route, and this will lead you down to the brook if you so choose. The main walk however remains on the wide uphill path with woodland on both sides.

is just beyond what was, when I walked it, the muddiest part of the walk. Through the gate and the path splits as you head uphill again and pass a pond on your right. Resist the temptation to head for the metal bench straight ahead (which I think is on private land) but instead head off up the left fork - the two paths run parallel for twenty yards - until you head left through a metal gate and on up to your right. This is plod three. As you head up, the path will open out as you walk along the top side of the hill, through a wide avenue of newly planted thorn saplings and with the view of Ferney Row and Failand Farm down to your right.

You are entering wildflower territory here and in springtime the early celandines will give way to wild garlic and a carpet of bluebells. (I walked the route in mid April when the celandines were prevalent, the garlic beginning to flower and the first bluebells just poking up through their foliage.

At the top of the avenue is a break in the wall with an open metal gate, and a water trough. A nice place to sit for a breather or a flask of something - I sat on the trough to eat my cucumber (don’t ask). The path takes you through the gate and turns right, widening out with a narrow strip of woodland on your right, and far reaching views over the Severn Estuary / Bristol Channel to your left.

Your path will eventually level off as it swings left, and then drops down to a junction with another path that heads off to the right. You though need to keep left and head for the wooden gate that

You are on the homeward stretch now, and if you’ve been keeping score you’ll have counted three plods and two downhills - which must be good news. Follow the wide path for a hundred yards or so until it swings left and downhill. You are at the corner here of the Bristol & Clifton Golf Course, but you’ll be safe - any golfer hitting into the trees next to you is miles off any fairway. At the bottom of the slope you will come to a metal gate and stile - which is at the path crossroads you encountered at the start of the walk. So, head through the gate, turn right and continue back downhill along the path until you get back to the start point of the walk. Hope you enjoyed it.

Despite her towering talent and songs she’s contributed to the world, it still feels as though Peggy Seeger is best known for her relationships with other people. Whether as the sister of singer and activist Pete Seeger or as the wife and muse of Ewan MacColl (she was the inspiration for his classic The First Time Ever I Saw Your Face).

Though the release of First Farewell, muted to be Seeger’s final album, is unlikely to change that perception, it’s further proof of her ability to write songs in the protest tradition –easy to remember with plenty to say.

Not an obvious next step this month, instead we’re suggesting an album which showcases the duality of folk music in all its glory. Seeger’s songwriting style, though not without its own sense of storytelling, is mainly to the point and simple, it’s a message that has been edited down to a key slogan in order to resonate with as many people as possible.

The music made by singer-songwriter Joanna Newsom is something else entirely, a magical tapestry brought to life but still retaining much of its otherworldliness. All four of her studio albums are well worth a listen but Ys from 2006 remains her masterpiece. Containing only five tracks (but lasting almost an hour in total), Ys ebbed, flowed and tumbled around Newsom’s harp playing and the orchestral arrangements supervised by Beach Boys collaborator Van Dyke Parks. Opening track Emily was an ideal introduction to her esoteric (and Kate Bushy) vocal delivery and what was to come. Both music and lyrics had a stream-ofconsciousness feel to them which slowly revealed themselves as the story unravelled. Genredefying in its majesty and sonic power, it’s no wonder that Ys still resonates 15 years after it first appeared.

From Gonna Be an Engineer to Song of Choice, Seeger has always known how to put activism to music in a way that can inspire and mobilise.

She’s also not afraid to tackle difficult subjects, and themes such as climate change, male suicide, loneliness and modern slavery feature throughout First Farewell.

Now in her mid-80s, Seeger is in a position to write about the world from a different perspective, one which rarely gets a voice in the youth-obsessed culture we are surrounded by. The Invisible Woman is just one example. Lamenting the way in which society pushes its older generations into the margins, she sings, “Now it seems that I’m not here at all.”

Far more than just a formulaic genre study, it’s about the fascinating characters who helped shape one of America’s most popular styles. Each episode focusses on one person (Ernest Tubb, Loretta Lynn, Bobbie Gentry, Merle Haggard…) but takes plenty of detours as Coe digs deep in order to reveal fascinating tangents. If you enjoyed Ken Burns’ recent television series on country music, this podcast series might well blow your mind.

Helped throughout by sons Calum and Neill MacColl, and daughter-in-law Kate St John, First Farewell may be a family affair but its also another reminder that Peggy Seeger is a folk treasure worthy of the spotlight.

2021 Spring Budget and Inheritance Tax The much anticipated 2021 Budget announced there would be no changes to personal taxation rates which sounds positive at first glance. However, many of the allowances, thresholds and exemptions have been frozen for a number of years. So is this a tax rise in disguise?

The inheritance tax nil rate band was last increased from £312,000 to £325,000 on 6 April 2009. It was due to be frozen until 5 April 2021 then increase in line with CPI. However, it was announced that it would stay at that level until at least 5 April 2026; that’s a total of 17 years!

The initial ‘freeze’ in the nil rate band has seen more and more individuals being brought into the inheritance tax net. Whilst the rate of inheritance tax has remained at 40%, it is inevitable that any future increase in asset values could result in a significant increase in tax for many people.

The introduction of the residence nil rate band (RNRB), from 2017/18, has slowed inheritance tax receipts’ growth and reduced the number of estates liable to inheritance tax.However, consider an example of an individual who had assets worth £400,000 in 2009 and assume the value increases by 5% per annum over the 17-year period to 2026.

Even after accounting for the RNRB, their inheritance tax bill increases significantly as a consequence of fairly modest compound asset growth against a frozen nil rate band over 17 years.

Inheritance Tax - What Is the Residence Nil-Rate Band?

Leila Goodarzi “In this world nothing can be said to be certain, except death and taxes” wrote Benjamin Franklin in 1789. It is certainly still true that on death, your estate will be taxed at 40% of the value of your assets, exceeding any available tax-free allowances.

The main allowance is the ‘nil-rate band’, currently £325,000, but which may be reduced by the value of any gifts you made up to seven years before your death.

The Residence Nil-Rate Band (RNRB) was introduced as an additional tax-free allowance from April 2017, and is generally available to be claimed in an estate where an individual leaves their main residence (or the proceeds of its sale) to their direct descendants. The current allowance is £175,000.

Can a RNRB Be Transferred to the Estate of a Spouse?

Unused RNRB allowances can be transferred to the estate of a surviving spouse, even if the first death was before the introduction of the RNRB. The allowance from the first death is known as the transferable residence nil-rate band, or TRNRB. What If I Have Sold My Home and Moved to a Care Home?

If you downsize, or sell your home and move to a care home, your estate will not necessarily lose the RNRB. It may still benefit from

‘downsizing relief’ in these circumstances.

What If My Estate Is Valued at More Than £2m?

The RNRB is reduced incrementally for estates valued at more than £2m. The reduction is at the rate of £1 of allowance for every £2 of additional estate value. So, for a single person, the RNRB is lost entirely if the estate is worth £2.35m or more at death. For a married couple, the relevant figure at which both the RNRB and TRNRB are lost is £2.7m.

What If I Am Leaving My Estate in a Discretionary Trust?

The RNRB is only available if the residence (or a share of the residence) is left directly to children/grandchildren. If your Will includes provisions creating a discretionary trust, additional steps may need to be taken to allow the RNRB and TRNRB to be claimed.

What If I Own Two Homes?

The RNRB is available in relation to your main home. It must be a home you have lived in, so a buy-to-let property will not count if it has never been your own home.

What If My Home Is Worth Less Than £350,000?

You can only benefit from the RNRB and TRNRB to the extent that you are passing on property

to your direct descendants. For properties valued at less than £350,000 the value of the allowance will be reduced.

Does It Apply for Step-Children and Foster Children?

Yes it does. However, if you have no qualifying beneficiaries, your estate will not qualify for the extra allowance.

10. In the vegetable garden, you can sow French, Runner and Dwarf Beans in situ.

Also sow salads little and often to ensure you have a constant supply, but no glut!

Watch out for blanket weed in your pond - Twirl it out with a cane, make sure you have a net of barley straw in the pond, and if it’s very problematic, you can buy a liquid barley straw extract from your local garden centre. Now that the spring bulbs have finished, they can all be deadheaded and congested clumps can also be divided. Apply a liquid organic fertiliser such as seaweed extract to bulbs after they die down to prevent bulb blindness next year.

Regularly hoe off annual weeds to stop self seeding. Many annual weeds such as chickweed or ephemeral weeds such as hairy bittercress produce masses of seed, so ensure that you remove them before they seed.

Mow lawns weekly, and if you haven’t done so already, feed your lawns with a spring lawn feed high in nitrogen, to green up your lawn.

Clear and re plant up your pots with summer annuals to add instant colour. I love the drought resistant pelargoniums and I shall be buying new this year as mine didn’t last through the cold spell.

Check for nesting birds before clipping hedges. I smiled as I watched 2 blackbirds building their nest in a Griselinia hedge at a client’s garden last week, so that won’t be pruned for a while. And another fellow gardener has robins nesting in her clematis cirrhosa, so that pruning is on hold too!

Put supports in for tall perennials, like these peonies, before they get too tall and flop over on smaller plants in the front of your borders. You can use natural pea sticks pruned from dog wood or hazel or buy metal supports from the garden centre Ensure your water butts are ready for the summer, just in case there is a period of dry weather.

Sow half hardy annual seeds outdoors where they are to flower. These could include Cosmos, Nicotiana, Tagetes (marigolds), Zinnia, Cleome and Cobaea.

WESTBURY WILDLIFE PARK I’m sure a lot of older readers who were brought up in this part of Bristol will remember the old wildlife park in Westbury, tucked up the hill at the end of Trym Road behind the Church and Dial House. I don’t know the history of the place, and never visited it when it was open, but did get a sneaky visit in once it had closed down with the permission of the then custodian.

and understanding the interest and flow of the people, this will be run as a series of ticketed days.

Tickets are free and have no age restrictions but entry will be in line with park rules. Within our free tickets we have some donation tickets if you are feeling generous, these tickets will really help us in our drive to make the park as special as we can before opening.

The great news though is that, as many will have read, for the past year the park has been undergoing an overhaul, under the stewardship of new dedicated trustees and with the hard graft of a band of willing volunteers. These efforts are paying off with the imminent re-opening of Westbury Wildlife Park, under the banner of creating “A community space to help preserve and protect local Flora and Fauna. A centre to Educate and Create. A place to feel Safe”.

Opening weekend 1 Thursday 6th May - Sunday 9th May Opening weekend 2 Thursday 13th May - Sunday 16th May We will then be offering free entry with a limited capacity every weekend until October.

We really hope you can join us and celebrate the start of a new chapter at the WWPF. We will be running competitions for kids over the opening weekends Saturday and Sunday, we will have an onsite coffee wagon and we will be doing a BBQ on the Sundays on both weekends. We will be running some wildlife workshops (TBC) over the weekends and will have lots of stuff for our small wildlife wonderers to do. The park is still a work in progress but we are happy to open and delighted to show you what we have been up to over the year. Come along and get involved and be a part of the journey with us.

They hoped the strategy of overprinting the old sacred sites and customs would gradually lead people away from their old Gods of wood, dell and spring and come to accept “the new religion”. A splendid example of the instruction can still be seen at Crowcombe Church in Somerset. There, one of the carved bench end depicts both Christian and pagan beliefs, The upper half shows two men slaying a double headed dragon whilst lower down a good dragon has not flames, but vines and foliage coming from its mouth.

What has this ancient warning got to do with Bristol, you may ask. My first intimation that Bristol had any relationship with dragons came from Ray McEwen Smith and Marguerite Tomkins’ book “The Lost Farms of Henbury”. In their book there is mention of a pond on Ray’s Westmoreland Farm which never froze over.

Local legend has it that the reason for this was because the water was warmed by the breath of a dragon that dwelt in its depths. Although Ray’s farm has long succumbed to urban development, the name lives on in the nearby Council street sign, Dragons Well Road. (I think the pond only had one dragon, but the council can’t run to the expense of punctuation). But if there was ever a dragon dwelling in the depths of the pond I wonder where it went? - perhaps to its cousin in Loch Ness, or maybe it is still there providing underfloor heating for the new homeowners.

This raises an interesting question, given the number of ancient sites still visible to us here in Bristol, such as the pre-historic tumps or barrows in places such as Bowness Gardens and Horfield Common. Was the name of the ever-warm pond on Westmorland Farm, just a memory of those pagan times? In the iconography of new religion, the dragon was often depicted as being slain by the good and brave knights of St Michael or St George, or sometimes even recognisable local village heroes.

One generally held belief is that many old explorer’s maps, or Portolan charts, carried the dire warning “Hic sunt Draconis”. However it seems that this wasn’t true. The only place where this warning could be found is on a small copper globe in the collections of the New York Public Library. Believed to have been made in or about 1510, making it the third oldest terrestial globe known to man, it is known as the Hunt Lenox globe, and depicts the Draconis as a sea monster.

The only other reference I could find to a dragons well is in Nehemiah, book 2, verse 13 of the Old Testament of the King James Bible, (although there are at least twenty-two references to dragons there is just this one for a dragons well. The prophet Nehemiah, a captive of the Persians, was allowed to return to Jerusalem to oversee the repairs to the damage to the walls brought about by the Romans. He mentions, going out of the gate and past the ‘Dragon Well’, but unfortunately gave no further information.

Presumably given the state of the defending walls, dragons were the least of his worries.

In eastern cultures and religions dragons were viewed as beneficial entities, having supernatural wisdom. In this country, in pagan pre-Christian ages, they were seen as a symbol of fertility, whereas in Christian times they were portrayed as representing the forces of darkness or the Devil. At first sight it might seem strange to find them represented in Christian churches, where many churches still have a stubborn reminder of the old religions which may be seen on carved pew bench-ends. In these carvings dragons are depicted, not with flames issuing from their mouths, but grape vines or other symbols of fecundity. The reason for this paradox lies in the teachings of Pope Gregory, in his instruction to Abbot Mellitus “Do not ban the old religion’s,

“Sorry, I didn’t see that email” might be the 21st century equivalent of “the cheque’s in the post”, but genuine email from friends/contacts disappearing into the Spam (also known as Junk or Bulk) folder IS a problem most people experience. So how do you stop it happening?!

There are two key things you can do to ensure this doesn’t happen.

Tips for Microsoft Outlook There’s a special option that prevents emails from getting marked as spam. Click the “Junk” button in the Delete section on the ribbon and select “Never Block Sender”.

Tips for Outlook.com.To add to contacts, click an email from that sender and locate the sender’s email address at the top of the email. Hover your mouse cursor over the sender’s name or email address and a pane will appear. Click the “...” menu button and click “Add to Contacts.” Or you can completely override the spam filter with the “SafeSenders” list. To do so, click the gear menu at the top right corner of the Outlook.com website and then click “View All Outlook Settings.” Click the “Junk Email” option in the left pane. Add senders to the “Safe senders and domains”.

Add the sender’s email address to your ‘contacts’ or ‘address book’ in your mail program. This tells your email service that you care about a particular sender’s emails. (Many people assume they have done this because their email program seems to remember and suggest email addresses when they start to type them - but the email program does this from its’ own memory, not from looking in the contacts list) Second, if a message ends up in spam anyway, go into your email client’s spam, select the message you don’t consider spam, and click “Not Spam” (or a similarly labeled button.) Your email program will learn about your preferences as you do this.

Yahoo! Mail In Yahoo! Mail, add a sender to your contacts and its emails won’t get sent to spam in the future. To do so, open an email from that sender, mouse over the sender’s email address at the top of the email, and click “Add to contacts”.

Despite a tumultuous year, the changing way in which we live and work has created opportunities for new business models to spring up and we have been pleased to advise many new business owners who have started a business during lockdown.

Whilst setting up a business is an exciting time, it is worth setting aside some time to put in place the appropriate legal framework to help support and protect your business through its early years. For a company with two or more shareholders, this includes creating a shareholders’ agreement to regulate how the shareholders work together.

A Company’s internal affairs are regulated by the Companies Act 2006 (‘the Act’) and the Articles of Association. In addition to this, the shareholders can enter into a shareholders’ agreement which is a flexible way of regulating the rights and responsibilities of the individual shareholders. Some of the areas that are typically considered within a shareholders’ agreement include: Decision-making The directors have control of the day-to-day management of the Company, save for a limited number of decisions that require shareholder consent under the Act. The shareholders’ agreement can reserve additional decisions for the shareholders, other than just those required by statute which can be particularly

useful if there are minority shareholders without a board seat.

Share transfers While all businesses start with a shared goal, the shareholders’ personal circumstances and objectives may change along the way. It is imperative to document the agreed terms at the earliest opportunity while the shareholders are still on the same page.

A departing shareholder may wish to sell their shares to whomever they choose, whereas the remaining shareholders may not want to end up in business with someone they had not chosen to work with. A shareholders’ agreement can balance these objectives by providing a clear procedure for share transfers, for example by requiring the selling shareholder to offer their shares to the remaining shareholders first before they can sell the shares to a third party.

Incapacity or death A shareholders’ agreement can also specify what will happen to a shareholder’s shares in the event of their incapacity or death.

Shareholders may need to hold frank conversations about how they can best balance the interests of the remaining shareholders and the incapacitated or deceased shareholder’s family members. For example, what should happen to their voting rights and dividends?

Should the incapacitated or deceased shareholder’s shares be transferred to the remaining shareholders?

While there is no legal requirement to have a shareholders’ agreement, companies with two or more shareholders should consider putting one in place. There is less potential for serious conflict between shareholders when their roles and responsibilities have been clearly recorded at the outset, particularly in circumstances where and emotions are likely to be running high on both sides.

THE “HAVE A GO” CHEF Ingredients

So here we are - dish number three on the “if I can’t do it in one pan I’m not cooking it” menu - and still no curry. Nope, this month we’re heading towards Spain for what I suspect will be a far-from-authentic paella.

I’m sure I’m adding things that might be sacrilege to many an Iberian, but hey - food is in many ways about experimenting and evolving. This has become a firm favourite in our house - well, I love it - and a regular “I don’t want this meal to end” supper. I bet every house has a few such dishes.

A “reader” has commented that the first recipe in March included so many ingredient “alternatives” that by following them all she’d have ended up with a completely Safron - a spice that different dish. Fair comes in threads - the point mum, but vivid red stigmas of the the idea was to saffron crocus - that demonstrate that adds an unmistakeably with these recipes gorgeous orange / the ingredients yellow colour and are not written in grassy / hay-like scent tablets of stone to this dish. but can be varied a bit depending on Chorizo - a pork and what you find in pork fat sausage the klitchen. originally from Spain, smoked and cured with garlic, smoked paprika and salt.

Rice - in a perfect world you’d use bomba rice, but we don’t live in a perfect world so use arborio rice, which will go soft and sticky not graint and fluffy.

1 large or 2 small chicken breasts 100g-150g chorizo 100g-150g pre-cooked prawns 100g (dry weight) arborio rice 4 shallots (one small white onion is ok) 2 cloves of garlic a pinch of saffron - about 10 threads soaked in a little warm water chicken stock - at least twice the volume of the uncooked rice, so make lots a mug-full of frozen peas a glass of white wine (optional - you can always drink it instead) a big handful of finely chopped parsley olive oil 2 lemons salt and pepper

Preparation.

Finely chop your shallots or onion, chop the chicken into pieces the size of a young jelly baby, dice the chorizo into small (1/2cm) cubes (if you’ve not bought it ready diced), crush your garlic cloves, soak your saffron to release its magical taste and colour, zest and juice one of the lemons. and you are good to go.

Method

That said, this month there are three key ingredients saffron, chorizo and rice - that should not be substituted with anything else or this version of paella just won’t be right.

Paella with Prawns and Chorizo Makes enough for 2-3 people, depending on how much each person eats

In about a tablespoon of olive oil in a large pan (ideally with a lid, but it’s not the end of the world if you’ve no lid) gently cook your onion, garlic and chorizo over a medium heat, stirring regularly, for 5 minutes. The chorizo will exude some lovely porky fat that will colour up the onion and garlic (see photo overleaf)

Add your chicken to the pan and continue to fry gently, for another 5 minutes, until the chicken has picked up the colour from the pan and started to brown slightly. It should not be fried to a crisp at this stage - it will finish cooking through perfectly as the rice cooks. (continued (continuedoverleaf) overleaf)

Step 1 Continue by adding in your chopped parsley (save a pinch for the garnish) and saffron liquid to the pan and stir well, taking up any crispy bits from the bottom of the pan. Now add in the paella rice and stir well to ensure that all the grains are coated with the lovely oily chorizo mix in the pan.

Once fully coated it’s time to add in your chicken stock and optional white wine. It can all go in at the same time.

Set the heat down to low-to-medium, just enough for a gentle simmer, cover the pan and let the mixture bubble away quietly for about 20 minutes. Keep an eye on it though and add in a little more stock or hot water if it needs it.

After 20 minutes take off the lid and add in the peas, the cooked prawns and the lemon juice, stir through, season with salt and pepper to taste, and return to simmer for 5 minutes more or until the rice is ready - it should be creamy and with a little bite to it, but to be honest as long as it’s tastes OK to the chef then you are ready to serve.

Make sure your bowls are good and hot, pile in the paella and serve sprinked with the obligatory garnish (parsley) and a lemon quarter for additional squeezing.

one. However, are there other things we can do?

I was reading a report a few days ago about the extent of financial fraud in the UK. The report was produced by UK Finance – a trade body representing over 300 companies in the UK Banking and Finance sector. What is clear is that financial fraud has now become so sophisticated that anyone of us, if we are honest, could be caught out by a scam of some kind or have been. I nearly fell for the ‘parcel delivery’ scam a couple of months ago. I’d ordered something online and a day later had a notification that a parcel was awaiting delivery and to give some personal information to check on its progress. The criminals behind these scams are organised ruthless people who are constantly adapting their methods to take advantage of how we live today.

Cold Call – If a telephone call comes out of the blue, from an organisation you have not heard from before or one you wouldn’t expect to hear from over the phone like HMRC or your Bank, then there is a good chance it is not legitimate. Don’t give out any personal information to them and more than likely the best option is to hang up. If it was legitimate, then the organisation will find another way of contacting you. Maybe use the Telephone Preference Service or explore ‘Call Screening’ where someone calling has to announce who they are before you agree to take the call.

Message in your inbox – Similar to the cold call. Ask yourself if this is the first time you have had an email from the organisation? Is it unusual to do so? Are they saying you owe them money, or you are owed money? If so be very wary. Open up Google or other search engine and type the name of the organisation in and the word scam and see what responses you get. Remember you are not the only person to have received the email, and if it is a scam, then the internet will tell you so. NEVER click on a link.

Over the past year we have worked from home, been in lockdown, isolating, and relied more on online services. As a result, these organisations have focussed less on scams through the banking system, which is doing its best in implementing ever tighter security with some success - £1.6bn of unauthorised fraud losses were stopped in 2020 - and instead turning to a sophisticated targeting of people directly. There have been increases in fraud around impersonating broadband providers, HMRC, utility providers, the posting of fake jobs adverts promising ‘easy money’, fake documentation from Government Departments, parcel delivery companies and even organisations pretending to be the NHS. Scammers tend to focus on phone calls and in recent years a move towards email communications.
