HOUSE FIRE BLAZE HITS HOME IN UNINCORPORATED DOWNERS GROVE

A

t approximately 9 p.m. on May 18, a report was received of a house fire at 9 S. 280 Woodcreek, in unincorporated Downers Grove. Fire units arrived minutes later and noticed a slight amount of smoke in the area. An investigation quickly found fire in the rear of the home at the roofline. Hose lines were quickly advanced into the building to extinguish the fire. Additional crews were utilized to protect the belongings inside the home from further damage and to cut holes in the roof to control the fire spread. The fire was extinguished within 30 minutes, but crews remained on the scene for several hours overhauling the area to ensure there was no hidden fire. The majority of the fire damage was in the roof and attic. There were three occupants home at the time of the fire,

and no one was injured. They were alerted to the fire due to a heat detector in the attic, which was connected to their security system. The owners will be displaced from the home for some time. Initial damage estimates are $200,000. The cause of the fire is believed to have started at an exterior floodlight, which then traveled up the roof and into the attic space. In addition to DarienWoodridge units, assistance at the scene or to stand-by in our stations was received from Pleasantview, Westmont, TriState and LaGrange Park fire departments. Fire officials want to stress the importance of having working smoke alarms in their home. A properly operating smoke alarm will cut the chances of dying in a fire by half. Smoke detectors should be tested monthly, and have batteries changed every six months.

FISH Food and Clothing Pantry to hold volunteer training Due to an increased need in the community for telephone and driver volunteers, the Downers Grove area FISH Food and Clothing pantry will hold volunteer training from 10 to 11:30 a.m. on June 9 at 1111 Warren Ave. The Downers Grove area FISH pantry provides emergency support to those with the greatest need living in Downers Grove, Darien, Lisle, Woodridge and Westmont. Volunteers are needed to help drive clients to medical appointments and handle telephone requests for assistance. FISH maintains a free food pantry and clothing closet that is open on Monday and Friday from 9 to 11:15 a.m. and the third Saturday of every month. Emergency assistance is provided to approximately 500 people each and every month. The pantry is located at 4340 Prince St. in the lower level of the Downers Grove Township Building. FISH is 100 percent non-profit and 100 percent volunteer organization, operating strictly through the generosity of those in our community with donations of food, clothing and financial assistance. The FISH pantry continues to function after 43 years through the time and effort put forth by hundreds of volunteers using no government funding or tax dollars. FISH provides food and clothing and financial assistance for rent, mortgage and car repair for those who qualify.The pantry has volunteer drivers who provide transportation for medical services, and phone volunteers answer messages. The pantry also provides eyeglasses to elementary school children and senior citizens in need. These requests continue

to grow, as does the need for volunteers. The pantry’s recruitment for additional volunteers is ongoing. Materials and refreshments for recruitment and training are provided courtesy of Community Bank. To register for the event, call 630-968-4700 by June 4.

News Happy 100th! Emily Szatek will turn 100 on June 5th. Szatek has three daughters, 11 grandchildren, 37 great grandchildren and 5 great great grandchildren. Szatek is an avid card and game player, loves to do crossword puzzles and read. Szatek loves the Lord and prays everyday for family and friends. She also loves children and has been going to the Highland School for 20 years to help second graders with their reading. Szatek loves the Chicago Cubs and is still waiting for them to win the World Series. She would take her daughters to the ladies day games when it was only one dollar. Szatek has lived in the Downers Grove area for 20 years and has lived in Chicago most of her life. When her husband Thomas retired they moved to Florida for a while and then moved back to the area. Her family is incredibly proud of her for all she has done, and all the people she has helped over the years.

Shots fired in Woodridge on Janes Ave. On Wednesday, May 16th, at approximately 6:15 p.m., Woodridge Police responded to the 8000 block of Janes Avenue in response to a report of shots fired. Responding officers quickly identified a suspect vehicle in the vicinity of the Natural Falls Apartment complex. Officers detained the occupants of the vehicle for investigatory purposes. In the process of investigating the incident, several witnesses alleged that a shot was fired into the air following a verbal disagreement between two groups. There were no injuries reported and this incident is still under investigation. Officers charged Denzel Griffin, 20, 1797 Sierra Trl, Romeoville,

with possession of cannabis and additional charges are expected. Police feel this is an isolated incident and that the general public is not in danger. Westmont prepares for Kid’s Safety Preparedness Camp The Westmont Fire and Police Departments has begun registration for the 2012 Kid’s Safety Preparedness Camp. There will be three camp sessions offered this year. The sessions will be held on June 20 21, July 17 and 18, and August 8 and 9. Each of the two-day camps will be held from 9 a.m. to 3 p.m. “This is a good public education program for our young residents,” Fire Chief David Weiss said. “We want to reach out and provide safety education for this age group in particular because we see that

there is an increase of youthrelated injuries and accidents during the summertime.Our past camp graduates have enjoyed their experience and have gone on to become ambassadors for awareness and safety. “We hope that people will help spread the word regarding this opportunity as we need at least 25 students per camp. The camp is free to Westmont residents.” The camp provides an opportunity for 8-, 9- and 10-year-old children to spend time with local firefighters and police officers, and learn much

more than the usual safety lessons. Applicants must live or attend school within the village of Westmont or participate in a Westmont-based Cub Scout or Brownie Troop. The camp is co-hosted by the Westmont Special Events Corp., Oakbrook Toyota in Westmont, Westmont Citizens Fire Academy Alumni and the Westmont Citizens Police Academy Alumni. Fire hits home in Woodridge At approximately 7:30 a.m. on May 14, a report was received of a bathroom fire at 1609 Dunham Court in Darien.

Fire units arrived minutes later, and upon investigation noted fire in a bathroom ceiling fan, which had been extinguished by the occupant.

Seven Bridges Ice Arena’s annual spring ice show plans for Czisny’s absence Due to an injury, our premier guest skater, two-time national champion Alissa Czisny will not be able to perform in Saturday’s ice show. Seven Bridges Ice Arena will be holding its annual spring ice show, “A Journey On Ice” The show will feature guest skaters ranging from regional champions, as well as junior national and national competitors. The show will take the audience on an adventure through the many levels and journeys of a figure skater. Czisny will be at the arena on Friday and Saturday, providing

lessons to the Seven Bridges Competitive Program skaters. Czisny will also be available to sign autographs after the 1:30 and 7 p.m. shows on Saturday. Skating in this year’s show is four-time regional champion Osadolo Irowa and two-time junior national competitor Kelvin Li, both train at the Seven Bridges facility. The 2009 junior national champion and 2012 national competitor Nick Vrdoljak and the 2012 junior ladies national Pewter medalist Barbie Long also will skate this year. “A Journey On Ice” will also feature skaters from the Seven

Bridges basic skills program, as well as skaters from the competitive program. The ages of skaters performing in the show range from tots through adults. Show times on Saturday are 1:30 and 7 p.m. Tickets can be purchased by calling the arena office at 630-271-4400. Tickets also will be available for purchase on the day of the show starting at 1p.m. Adult admission is $15, and tickets for seniors (65+) and children (ages 12 and under) are $12. FIRE Continued from page 3 further. In talking to the owner, he indicated he was leaving for work when he heard a pop. Upon his investigation of the noise, he noted some flames and smoke coming from the ceiling fan. He retrieved his fire extinguisher and discharged it at the fire. As that did not completely extinguish the fire, he removed the fan cover and discharged the contents on the remaining fire. His quick thinking prevented this small fire from turning into a major roof fire that would have displaced four families. A home fire extinguisher is a great first aid tool, and every home should have at least one.

Most home fire extinguishers will last for only 5 to 12 seconds. Learning how and when to use an extinguisher is crucial. When purchasing an extinguisher, make sure it is good for the three most common classes of fire, wood/ paper, flammable liquids and live electrical equipment. Fire extinguishers can be purchased at big box stores for under $35. All fire extinguishers operate the same way. Pull the safety pin or handle. Aim the extinguisher at the base of the fire. Squeeze the handles. Sweep the nozzle across the base of the fire. This is the P.A.S.S. technique. For more detailed information on fire safety, contact your local fire department.

blue jeans and a black sweatshirt with a hood.The second suspect was described as male, black, late teens or early 20’s, approximately 5 feet 10 inches tall, thin build, wearing blue jeans and a black sweatshirt with a hood. District 99 preschool openings offered for 2012-13 The preschool programs at both North High School and South High School in Downers Grove have openings for the 2012-2013 school year. High school students studying child development take on an active teaching role for the programs, which are designed for parents to drop off their children. North High’s “Little North Stars” preschool is open to children ages three years old (by September 1) through kindergarten. Two, two-day a week sessions are offered, either on Monday and Thursday or Tuesday and Friday. Both sessions run 12:50 p.m. to 2:20 p.m. The 9-week session runs November through December; a 14-week spring session runs

February through May. The cost is $210 for the year. North High also offers a “Playgroup” during the second semester, March through May 2013, for infants through ages three years old. The Playgroup meets three days a week on Monday, Tuesday and Thursday, from 8:10 a.m. until 10:30 a.m. The cost is $90 for the 9-week session. Downers Grove Concert Association stages final concert The concluding concert of Artists Showcase West’s 65th and final season will take place Sunday June 3rd at 3 p.m. The special event will feature the Ariel Quartet with guest pianist Menahem Pressler performing music of Beethoven, Leoš Janáček and Antonín Dvořák. Mr. Pressler first appeared in Downers Grove in 1947 as part of the inaugural season of the Downers Grove Concert Association. Sixty-five years later, he continues his active career teaching at Indiana University Jacobs School of Music, performing internationally, and mentoring younger musicians such as the Ariel Quartet. It isn’t easy to defend a title, but the Downers North 3,200-meter relay team gave it a good run Saturday at the Class 3A state meet at Eastern Illinois University in Charleston. The Trojans squad, consisting of Gabby Hesslau, Meghan Bonfield, Stephanie Urbancik and Jillian Kothanek teamed up to place sixth in the state this year with a time of 9:17.71. Wheaton Warrenville South won with a state-record time of 7:59. “We had two goals,” Kothanek said. “We wanted to medal (for the third straight year) and we wanted to make it on the podium and we did both, so we are really excited about that. We had a pretty cold season outdoors, but we were drinking a lot of water and were ready for (the heat).” Kothanek, Hesslau and Urbancik all ran on the team at state last year and that was a big help. “My experience definitely helped me,” Hesslau said.“I think it was even better than last year because I didn’t make finals in the mile and was able to focus on the 4x8. I wanted to go out with the leaders and I tried to take the lead and keep it as long as I could.” “I’m so happy and so proud of us,” Urbancik said. “I’m so proud of us because we lost one of our best legs last year (Gabby Effrein) and a lot of teams underestimated us. So we wanted to show them what we could do. None of us our graduating so we’re really excited for next year.” Meanwhile,Bonfield was happy with the team’s performance in her first time competing at state. “It’s really cool,” Bonfield said. “It feels good to be on the

podium. It’s my first time and I got more comfortable down here today. I’m happy with the medal.” Downers South senior Rebecca Stearns had the highest finish of the area athletes, coming in fifth in the 800 with a time of 2:12.81. “Obviously everyone hopes for a little better,” Stearns said. “I know I couldn’t do any better than I just did, I just put it all out there. I couldn’t even walk at the end. I tried having a kick, but it wasn’t as strong as it could have been. I just did the best I could.” Stearns definitely peaked at the right time, dropping her time by more than four seconds from the sectional meet. “Yesterday I PR’d like crazy,” Stearns said of her preliminary time of 2:11.8. “As long as I did my best, I’m happy. I’m really happy with how I performed yesterday and today. I didn’t expect a 2:11.8. The school record was 2:14.7 and I think I took care of that. That record was there for around 20 years, so I hope I can have mine for 20 years. I’ve worked so hard for it this year after I knew how close I was last year.” Also medaling in 3A was Benet senior Darcy Cadman in the high jump, who finished tied for seventh with a jump of 5-3. “My goal was to place and I accomplished that, so I’m pretty happy with it,” Cadman said. “I felt good (at 5-5) but my steps were off or something. I’m really happy with it. I wish I would have made 5-5 at this meet, but other than that I had a really great season. Aldrin then competed in the 200 prelims and advanced to finals, making him good to go for finals. “Our athletic trainer is really good,” Aldrin said. “I pulled (my hamstring) last week at conference. The Lockport trainer has been stretching me out too. My leg isn’t at 100 percent, but it’s pretty close.” From there it was nothing but success for the senior as he qualified for state in the 200 (22.23) as well as the 4x1 and 4x2 relays. “It’s a great night,” Aldrin said. “I’m really happy about it. The goal now is to make it to finals, so we’ll see how it goes. It really helps to have a lot of the same guys in both relays.They all work hard and it’s paying off.” Joining Aldrin in the 4x1, which took first with a time of 42.23 were Odell McFarland, Demaine Bailey and Kaelon Miller. The

4x2 squad finished second to Downers North with a time of 1:28.63 as Kevin Jones replaced Miller in the race. “It feels great,” McFarland said. “We worked really hard to get out handoffs down and our conditioning and it worked. We’ve been talking about this all year and we did it. Now we need to work on our conditioning so we can catch North in the 4x2.” “I’m the leadoff man so it’s my job to get us off to a good start,” Bailey said. “I just opened up my stride and ran. We’re a strong relay team and we have good chemistry. It helps out (having most of the same guys on both relays) with exchanges. My goal is to make the finals in both the 4x1 and 4x2 and break the school record in the 4x1.” McFarland also qualified for state in the 200 (22.18). The team finished second overall to Lockport and had other qualifiers in the 4x4 relay (3:23.37), Charles Chang in the 300 hurdles (40.07), Nick Kirk in the 3,200 (9:18.78) and Jeremy Ulrich in the discus (161-01). “I’ve been training a lot more and changing a little technique,” Ulrich said. “It was a calm atmosphere which made things a lot easier. It was good to peak at the right time. I knew since last

year that I could do it, it was just a matter of executing it. I’ve been training hard and am happy to be going to state. Hopefully I can get top 10, that would be great.” “It feels pretty good,” Kirk said. “This is the first time I competed at sectionals in track. This is a good way to finish my track season off. I just had to go for it, it was either now or never. I want to break the school’s outdoor two mile record. I was one second off today. Hopefully I can get it at state.” Downers North also had a good night and finished third overall. Their relay squad of Matt Pospisil, Ryan Koegel, Nate Sloan and Jordan Munar took first in the 4x2 (1:28.48) and second in the 4x1 (42.69) to qualify for state. “I had an exceptionally good start today, so that helped the 4x1,” Pospisil said. “We normally See RELAYS, page 15

Downer South’s boys tennis program churns out sectional champions and state qualifiers year in and year out, but the Mustangs surpassed even their high standards with their performance at Saturday morning’s York sectional.

ROUNDUP The Mustangs cruised to the team championship with 36 points, easily outdistancing rival Downers North (19). Not only did DGS qualify two singles players and two doubles squads for this week’s state tournament, those singles players and doubles teams played one another for the sectional title. No. 1 singles player, senior Joey Leto, who’s state-bound for the fourth straight year, defeated his younger brother, Tim, in the title match, 6-2, 6-2. And DGS’ No. 1 doubles team, senior Connor Harmon and junior Cody

Freischlag, beat Mustang senior Kiernen Cavanagh and his partner, junior Jon Artus, 7-6 (4), 6-2. Pete Frieschlag has seen plenty of top-tier players and teams come and go during his 28 years as head coach. However, Mustang vs. Mustang playing for the singles and doubles crowns at sectional is a feat even he hadn’t witnessed until Saturday. “It’s been an amazing run,” Freischlag said.“It’s four sectionals where we’ve qualified all six guys, and it’s pretty surreal. (But) we’ve never had a perfect score where we’ve had our guys play our guys in the final. “It’s a very rare occurrence. I’m sure the kids will never forget it, and they’re part of something really special.” Harmon—who along with Cody Freischlag will attempt to better their showing last spring when they advanced to the third round of the state tourney’s championship bracket—concurs with his coach. We were a little nervous on Friday in the qualifying match, but we got through it and we got through today.” Although playing one’s teammates in the title match isn’t the ideal scenario, Leto said going up against his brother was a memorable experience. And make no mistake:Tim, a nationally ranked player as a freshman, is a formidable foe who’ll be making a name for himself the next three years. “It’s an experience,” Joey said. “It’s something that not a lot of people could say they could do. It’s just cool to look across the net—me and my brother and then our doubles (teams) to look across the net in the final. We’re playing each other; we all earned it. We all worked really hard and we all deserved this.” Like Harmon and Cody Freischlag, Joey Leto will be attempting to go deeper into the championship round in this, his last hurrah as a high school player. He also made it to the third round in 2011. “This is the time of year I’ve been looking forward to the entire high school season, my entire high school career,” he said. “Senior at state; this is what I’ve been working hard for: the

It’s a mindset they’ll continue to take in the state tournament, which takes place Thursday through Saturday at Hersey High School in Arlington Heights. “It’s a really tight-knit group, and we’re really looking forward to the state tournament,” he said. “They’ve taken each day one at a time and have gotten one day better every day. We’re going to compete really hard, and when they look back, there’s no regrets with whatever happens.” Downers North, meanwhile, will be represented at state by their doubles team of junior Tristan Burnham and sophomore Matas Kisielius. The pair knocked off a team from York, 6-3, 6-2, in the third-place match to advance. •The Redwings are sending two doubles teams to the state tourney. Seniors Bobby Martin and Matt Rurka, each of whom advanced to state last season playing with doubles partners who have since graduated, paired up this year and have formed a successful tandem. They earned a tough 6-3, 7-6, (7-4) victory over a team from Naperville North to take the sectional crown. Junior Grant Gatto and sophomore Noah Read, Benet’s No. 1 singles player, have teamed up recently and polished off a team from Glenbard West, 6-2, 6-0, in the third-place match. Both

SOCCER Downers South moved on to the Oak Park-River Forest regional title game by whipping Addison Trail, 7-0, May 16. Jess Bronke, Emily Warner and Sarrah Ludwig each scored twice for DGS, while Flo Beshiri netted a goal. The Mustangs (16-5-3) then won their first regional championship since 2008 by knocking off the host Huskies, 3-0, last Friday. Ludwig put the Mustangs on the board early with her goal after taking a pass from Bronke. The Mustangs went up 2-0 on Rachel Ruggiero’s goal, and Beshiri closed out the scoring with a goal off a rebound. Western New York is a sportsman’s paradise By Dan Stefanich

“Start spreading the news, I’m leaving today. I want to be a part of it New York, New York!” Okay, I realize that Frank Sinatra definitely didn’t have wild turkey, steelhead, and smallmouth bass in mind when he sang that. But nonetheless, that song was going through my mind as I left Chicago towards Western New York for a recent adventure. Organized by the Association of Great Lakes Outdoor Writers and Niagara Tourism, this trip offered us opportunities to hunt wild turkey and fish some amazing bodies of water. As I quickly discovered, the Niagara Falls region is undoubtedly a must-visit destination for sportsmen. Lewiston, New York was “home-base” for the trip. Located on the majestic Niagara River, this quaint community had friendly people, amazing history, and a quiet downtown shopping district. Our turkey hunting took place south of Buffalo, in the rolling hills about 20 miles from Lake Erie. With large tracts of timber, open grass meadows interspersed between cornfields, the hunting terrain was not much different than Illinois. With only two days to hunt, we had our work cut out. The early spring severely impacted the turkey behavior. Since birds starting gobbling and chasing early, our hunt was near the end of the mating season presenting a much more challenging hunt. The birds were not very vocal, so locating them was extremely difficult. I saw some giant toms but never filled my tag. I figure they will be there next year when I go back.

A FISHERMAN’S DREAM The Niagara Falls region is with a doubt a fisherman’s dream. Three bodies of water — Lake Erie,Lake Ontario,and the Niagara River offer a variety of species including walleye, smallmouth bass, salmon, sturgeon, steelhead, lake trout, panfish and catfish. Did I miss anything? Our group did fantastic on the salmon, boating several 18-pound-plus Kings. Although I didn’t have the opportunity to fish the big lakes, I fished the lower Niagara River several miles below Niagara Falls. Fishing a three-way rig, we driftfished bouncing a one-ounce weight along the bottom with a five foot trailer line baited with emerald shiners. Our technique was to drift about a quarter mile, then fire up the motor and boat back up river and start the drift again. Pass after pass we hooked into 3 and 4-pound smallmouth and 5-10-pound steelhead. On our last afternoon, my buddy Don Dziedzina hooked into something big. With the drag screaming and line peeling off the reel, we fired up the motor and chased it down river. After one heck of a fight, we boated a giant 18-pound lake trout. The Niagara River is unlike any water I have ever fished before. The water is a beautiful bluish-green very similar to Lake Michigan, and crystal-clear due to a granite rock bottom. Combined with vertical solid rock walls that confine the river, the scenery is simply spectacular. It’s pretty cool to drift down a river with Canada on one side and the Unites States on the other.

How to get an employee into counseling Q. I have an employee that seriously needs some psychotherapy. He is touchy and defensive, and he alienates his coworkers. He is also brilliant and productive. How do I bring up the topic without making him believe I’m questioning his mental health? A. You can bring up the idea diplomatically, but you must start by realizing we have a lot of inaccurate myths about what psychotherapy is and what it means if an adult is in therapy. Therapy is simply adult education in emotional and communication issues. If you present it as training, you’ll get further than if you suggest your employee is nuts. The myth of why adults do therapy is that they are less well adjusted and weaker than the rest of the population. The truth is when we test the mental health of adults in private psychotherapy, the average mental health of these individuals is much higher than adults who never do therapy. The theory behind these results

is that people who can admit they make mistakes, have room to learn, and are curious about how to improve their interpersonal toolkit are stronger and more resilient than people who believe they need no help. Start by meeting privately with your employee. Point out the specific situations you’ve noticed where you believe he may be missing some communication skills. Do research before you talk with him to find a psychotherapist who can also do executive workplace coaching, so you can give your employee a list of names. Make it clear to your employee that you simply want him to learn new interpersonal skills. Eat your vegetables - with pasta Just about everybody loves pasta and eats it regularly nowadays. Certainly, pasta dishes - from tagliatelle ribbons in cream sauce, to plump little agnolotti filled with pureed squash or sweet corn, to the fluffy potatoand-ricotta dumplings called gnocchi - remain perennial favorites among our guests at Spago and my other restaurants. But, when I talk to my friends about what they cook at home, it seems that many people are in a pasta rut. Time and time again, they wind up making spaghetti or fettuccine with tomato sauce or Bolognese or cheese sauce. And they begin to get a little bit, well, bored with that popular dish they swear they love. So please let me shake up your home pasta routine with the recipe I share here, while also adding a generous portion of the green vegetables we all should be eating more of (along with a pleasing and calciumpacked share of fluffy ricotta, creamy mascarpone, and gooey mozzarella cheeses). I think many people shy away from filled and baked pasta recipes because, as the familiar words you see on the boxes of complicated children’s toys, there is “some assembly required.” But

FRESH PASTA ROUNDS WITH SPINACH-RICOTTA MOUSSE Serves 8 1 pound ricotta 8 ounces mascarpone 1/2 pound organic baby spinach leaves 3 tablespoons unsalted butter 1/4 cup pine nuts 3/4 pound shredded mozzarella 1 large cage-free egg, lightly beaten 1 teaspoon salt 1 teaspoon freshly ground black pepper 2 ounces freshly grated Parmesan Fresh Pasta Dough (recipe follows) All-purpose flour, for dusting Tomato-Garlic Basil Sauce (recipe follows)

this dish is a lot easier to put together than a child’s plaything and you can do some of the work in advance, not to mention the fact that you get to eat the delicious results. The recipe starts with sheets of freshly made pasta, for which I include an easy recipe. But you can also find ready-to-use fresh pasta sheets in some Italian delis. (Ask for pasta sheets if you don’t see it on display; they may have them in the back, displaying only already-cut noodles for purchase.) If you like, you can mix the filling, fill and cut the pasta rounds, and put them into the individual-serving tart pans up to several hours in advance; just cover each pan with plastic wrap and refrigerate until baking time. For the filling, bags of prewashed baby spinach leaves make preparation extra easy. Feel free to embellish the vegetable mixture, including some sauteed mushrooms, for example, or slivers of sun-dried tomato. It’s OK to use reduced-fat ricotta and

Put the ricotta, mascarpone, and half the spinach in a food processor. Pulse on and off until pureed. Transfer to a mixing bowl. In a skillet, melt 1 tablespoon butter over medium heat. Add the remaining spinach and saute until wilted, 2 to 3 minutes. Chop coarsely and set aside. In a small skillet over medium heat, toast the pine nuts until light golden, about 2 minutes. Transfer to a bowl to cool. Fold the mozzarella, egg, salt, pepper, nuts, spinach, and half the Parmesan into the cheese mixture. Set aside. Cut the dough into 4 equal pieces. On a lightly floured work surface, roll out 1 piece to a 20-by-4-inch rectangle; trim as needed. Evenly spread a fourth of the filling over the lower two thirds of the rectangle’s length. Starting at the filled edge, roll up lengthwise, forming a 20-by-1-

tip: If you don’t want to go to the effort of making that part of the recipe, feel free simply to heat up your own favorite, good-quality bottled brand of tomato-based pasta sauce instead. It can be that easy. My recipe for Fresh Pasta Rounds with Spinach-

inch cylinder. Cut crosswise into 20 equal pieces. Repeat with the remaining dough and filling. Preheat the oven to 375 degrees F. Melt the remaining butter and brush the insides of 8 individual 4-inch tart pans. Inside each, arrange 10 pasta slices, cut side up; it will be a tight squeeze. Sprinkle with the remaining Parmesan. Place on a baking sheet. Bake for 15 minutes. Using a potholder, invert each pan onto the tray and lift off to unmold the pasta. Continue baking until golden brown, 15 to 20 minutes. To serve, spoon some sauce onto 8 warmed plates. With a wide spatula, transfer the pasta to the plates. Pass the remaining sauce on the side.

In a food processor, combine the flour, yolks, salt, oil, and 2 tablespoons water. Process until the dough begins to hold together. Stop the machine and pinch the dough; if it feels too dry, pulse in up to 1 more tablespoon to form a moist ball.Turn out onto a lightly floured work surface and knead by hand into a smooth ball. Loosely wrap in plastic wrap and leave at room temperature for 30 minutes to 1 hour before preparing as directed.

BASIC PASTA DOUGH

TOMATO-GARLICBASIL SAUCE

Makes about 1-1/2 pounds

3 cups all-purpose flour 8 large cage-free egg yolks 1 teaspoon salt 1 teaspoon extra-virgin olive oil 2 to 3 tablespoons water All-purpose flour, for dusting

2 tablespoons extra-virgin olive oil 1 small onion, minced 3 garlic cloves, minced 1 tablespoon tomato paste 2 pounds Roma tomatoes, seeded and diced 1 cup good-quality canned chicken broth, heated 6 to 8 fresh basil leaves, cut into thin strips Salt Freshly ground black pepper In a medium saucepan, heat the oil over medium-high heat. Add the onion and saute until wilted, 4 to 5 minutes. Add the garlic and saute 1 minute longer. Stir in the tomato paste and then the tomatoes; saute 2 to 3 minutes. Stir in the broth and cook, stirring occasionally, until thickened, 15 to 20 minutes. Stir in the basil. Season to taste with salt and pepper. Cover and keep warm.
