LAMB SOUVLAKI

FOR EASY FLAVOUR, TRY MATADOR’S SOUVLAKI BBQ RUB

Serves 6 Prep 15 mins (+ 1 hour marinating time). Cooking 40 mins

1kg diced lamb 2 tbsp olive oil 1 lemon, juiced 2 garlic cloves, crushed 2 tbsp dried oregano 6 souvlaki flatbreads 450g halloumi, sliced Hoummus, to serve Tabouli, to serve Barbecue sauce, to serve Lemon wedges, to serve

1 Combine the lamb, oil, lemon juice, garlic and oregano in a large bowl. Cover and refrigerate for 1 hour. Thread the lamb onto 12 metal or soaked bamboo skewers. 2 Preheat the barbecue over a medium heat. Place skewers on the grill and cook, with the lid open, turning occasionally, for 8 mins or until cooked to your liking. Place on a tray and cover with foil. 4 Wrap the flatbreads in foil. Place on the grill and cook for 5 mins or until heated through. Cook the haloumi on the barbecue hotplate for 2 mins each side or until lightly charred and heated through. 5 Arrange the flatbreads on serving plates. Top with hoummus, tabouli, lamb, halloumi and barbecue sauce. Serve with lemon wedges.
