Upcycle a plain tray with paint to suit your special-occasion scheme

Drinks tray
EXPERT TIP
Look for a pizza oven with a stone floor and adjustable chimney vent, to help Dad achieve crispy-base perfection!

Painted drinks tray
What you need ¡ Safety equipment (mask and gloves) ¡ MDF tray (we used Boyle 40cm x 30cm craft timber serving tray) ¡ 180-grit abrasive paper ¡ Cloth ¡ Paintbrush ¡ Primer (we used Zinsser ‘Bulls Eye’ 1-2-3 undercoat primer-sealer stain blocker) ¡ Water-based enamel paint (we used Dulux ‘Aquanamel’ low gloss in Tuscan Sunset)
Method Lightly smooth over the tray with 180-grit abrasive paper then wipe away dust with a damp cloth. Apply primer and finish with two coats of paint, leaving to dry after each coat. Safety tip: Never serve food directly on a painted tray; always use a serving dish or bowl.

Pizza-maker’s rack
What you need ¡ Safety equipment (gloves, eye and ear protection) ¡ Drill with 5mm and driver bits ¡ Two 280mm planters ¡ Strong cord (we used Grunt 3mm macramé cotton cord) ¡ Mesh panel (we used
RapidMesh 1200mm x 600mm wire mesh panel in White) ¡ Four screws with wall anchors ¡ Small herb plants ¡ Potting mix ¡ S hooks (we used Zenith 50mm x 4mm zinc plated S hooks)
Method Using a 5mm bit, drill two holes in the back of each planter, 20mm from the top and 80mm in from the ends. Thread 400mm lengths of cord through the holes, knotting at the back and tying them to the panel. Secure the rack to the wall with four screws at the corners, installed with anchors suited to the wall type, pre-drilling holes with the recommended bit and leaving the screws protruding 10mm. Wear gloves to plant the herbs with potting mix and hang S hooks for utensils.
Safety tip Secure your DIY rack with appropriate fasteners (see method) to avoid it being knocked over

Elevate your barbecue game with succulent, smoky meat that’s worth staying home for
While the nostalgic simplicity of a grilled snag will always appeal, Australians are increasingly turning to Americaninspired low ‘n’ slow barbecue cooking for fall-apart-tender meat that’s absorbed the subtle flavours of smoke and sauce.
ALL ABOUT THE SMOKER
If you’re ready to take your grilling game from amateur to pro, you need a smoker that’s up for the challenge. The Char-Griller ‘Competition Pro’ offset smoker charcoal grill is equipped with everything you need to master the authentic smokehouse taste of American-style barbecue. The side fire box is designed for low ‘n’ slow cooking, providing the indirect heat and low temperatures needed to cook for six or more hours, and produce meltingly tender meat. An adjustable side air vent and smokestack damper, plus an adjustable fire grate and a heat gauge, give you perfect control over the cooking environment. Plus, with its heavy-gauge steel construction, this pro-level barbecue will be with you for the long haul.
FLAVOUR SAVIOURS
Raise your barbecue game with a few accessories and flavour-enhancing products. Low ‘n’ slow cooking starts with the smoke. Kingsford charcoal briquettes are fast-heating, long-lasting and most importantly 100 per cent natural – try Hickory for a rich wood-smoked flavour that will take your beef and pork to the next level.
A good sauce is the grill master’s secret weapon, infusing the meat with spice and sweetness; the Aussie BBQ Legends giftpack lets you sample crowd-stopping sauces from four grill champions - and makes a great Father’s Day gift!
Mastering the barbecue is all about temperature, and an Inkbird thermometer lets you know exactly what’s going on inside your cut. Go for a simple and effective digital model, or step up to the smart wireless version, which will alert you via your smartphone when your barbecue is ready. Slow cooked beef ribs with peach & bourbon sauce
Serves 8 Prep 15 mins (+ 15 mins resting time) Cooking 8 hours 10 mins
¡ 2.9kg beef short ribs ¡ 2 tbs smoked paprika ¡ 2 brown onions, cut into wedges ¡ 700g jar peach slices in juice ¡ 1 cup (250ml) bourbon or apple juice ¡ ¼ cup (60ml) balsamic vinegar ¡ ¼ cup (50g) brown sugar
1 Light your Char-Griller Competition Pro offset smoker, and preheat with hood open for 10 mins to produce smoke. Tip: Use Kingsford charcoal briquettes with hickory for a delicious smoky flavour. 2 Remove the sinew from the outside of the ribs using a small sharp knife. Rub ribs with paprika and place in a large roasting pan. Season with salt and pepper. Add onion, peach slices in juice, bourbon or apple juice, vinegar and sugar to the pan. 3 Place the pan in the smoker and cook with the lid down at 120ºC for 6 hours, basting with pan juices every 1 hour. Cover the pan with foil and continue cooking for a further 1 hour or until the beef is tender and the internal temperature reaches 96ºC. Tip: Use an Inkbird probe thermometer to check the meat. Remove ribs from the pan and wrap in foil to rest for 15 mins. 4 Meanwhile, set the onion mixture and pan juices aside to cool slightly, then transfer to a blender. Blend until smooth. Strain through a fine sieve into a saucepan and discard the solids. Bring to the boil over medium-high heat. Cook, stirring, for 5-10 mins or until the sauce thickens slightly. Serve.
