The future site of Bernadine’s and Hunky Dory concepts now features the outer shell and foundation laid in

place. A representative with Treadsack said construction is expected to be complete in June, barring any major delays or issues. While the group is still working out menus for the establishment, Hunky Dory will focus on British comfort food with Bernadine’s focusing on seafood like oysters, crab and other Gulf-inspired dishes. Both restaurants will share a private dining room; however the two will have their own bar areas and will also share a large wine cellar with hundreds of different wines to choose from. According to the company’s website, preview dinners were also held for both restaurants earlier

this year. Treadsack owns several other familiar restaurants in The Leader area, including Downhouse, located at 1801 Yale St., D&T Drive Inn, located at 1307 Enid St. and Sugar & Rice, located at 811 Heights Blvd. Foreign Correspondents, which Bernadine’s replaced at the North Shepherd Drive location, will instead open on North Main.

A new restaurant is opening in the old Stella Sola location at 1001 Studewood Dr. at 10th St. in the Heights and its generating a lot of interest. The restaurant is called Black & White and identifies itself as a “contemporary Mediterranean and seafood bistro.� Notably, Black & White will feature two restaurants in the beautiful space that formerly housed one. “It is a big place,� said Black & White owner Hernan Garcia. “It has seating for more than 200, so we thought we would offer two different restaurants with a shared kitchen. That’s why we chose to call it Black & White. The black side will offer Mediterranean and European fare. The white side will concentrate on fresh seafood and may be a little more casual. Both will offer good, honest food with a full meal in the $40 per person range.� Garcia and his partner Sven Hossfeld live in Mexico City and filed their partnership as Snapper Kitchen LLC with the State of Texas in 2014 to open an eatery in Houston. Your mom can come in and get a Vodka Cranberry. Your dad can come in and get a Lonestar, or any craft beers that we may have. There’s something here for everyone.” Johnny’s Gold Brick, the first Treadsack concept under Ross’ direction, will offer a menu of 10 house cocktails under $10, all classic stalwarts that Ross says are so reliable because of their simplicity. If you look up on the shelf, you will also find unique and hard to find spirits that you’ll pay a prettier penny for than what is on the menu; but what you won’t find is a neighbor who walks in and who can’t find a well-made drink or a cold brew. If you asked Ross if competing in this year’s Southwestern Region of Diageo of World Class Competition or leading the bar program for the Treadsack group was the dream a few years back, she would give you a big smile and a long snarky giggle. If you asked Ross those years back what the plan was, she’d tell you that she was taking a more scientific approach and organic chemistry was the next move. Somewhere along the lines Ross found herself at MAX’s Wine Dive, expanding her knowledge on wine. Then continued her craft beer edu-

As Ross has navigated through her career, she has always been driven by personal curiosity and one simple objective: to make drinks that taste good and look pretty. The easiest way to explain Ross’ cocktail creations is her self-proclaimed phrase, “I take couture and make it ready to wear.” ”When I do a competition cocktail, it’s not exactly something that I can serve,” Ross said. “The preparation of the garnish is something that wouldn’t be approachable for a normal bar. What I am good at doing is taking the same drink, same concept, same flavor profile and stripping that down and making it a reasonable thing to do. I really like doing that. It’s actually an exercise for me.” Even though Ross loves couture, she promises you won’t find the unaffordable “Davinci of gowns” cocktail on the menu at Johnny’s Gold Brick. What you will find is Ross’ touch painted on the walls, decorated around the bar and friendly staff who understand her concept of decompressing that Davinci gown and making you something that you’ll come back for on the regular night instead of on just special occasions. Johnny’s Gold Brick is Ross’ first project she’s walked through from start to finish and this isn’t where she stops. Ross will be heading the beverage program for Hunky Dory and Bernadine’s – the Treadsack double project taking shape on North Shepherd – and, also, Foreign Correspondents over off of North Main, also in the Heights; and one other project C

New Orleans is getting some Cajun flare

If you’ve driven down Durham Dr. lately, you may have noticed a small development on the right hand side before you get to I-10. Construction is being finalized for two New Orleans inspired eateries. On the far left is the just opened PJ’s Coffee of New Orleans. PJ’s Coffee serves a wide variety of hot, iced and frozen coffee, as well as organic tea and fresh breakfast pastries. The NOLA coffee house displayed their ‘Now Open’ sign Monday. On the far right side we have Gumbo Jeaux’s. This eatery serves crawfish bisque, catfish tout and even has a Bayou Burger on the menu. Yelp reviews show unanimous support and warn not to let the strip mall appearance to be a testament to the food. There is currently a vacancy for the middle space that is for lease by Silvestri Investments.

Sushi on Memorial Drive

Neighbors might be checking off their wish list a little sooner than planned with the move in of Café Japon at 5900 Memorial Dr. last week. The sushi eatery was in for the long haul with their Upper Kirby location, with a sudden closing last December. An unfortunate closing, but the area will welcome the sushi spot with open arms. The menu offers happy our every day, Monday to Saturday from 5-7 p.m. and ALL day Sunday.

Ross has her hands in. As far as competition goes, Ross received her letter as a regional finalist for the Southwestern region of Diageo of World Class. They chose 15 people in each region. The top three will advance to the National Finals in Chicago and the winner will advance to Cape Town, South Africa for the world finals. Last year, the winner was an American and Ross says she has big shoes to fill. In January, Ross competed in the San Antonio Cocktail Conference where she submitted her “Walking the Dead.” Last year, Ross competed in various competitions and was named Eater’s Best Bartender and Bombay Sapphire’s Most Imaginative Bartender of 2014. Beyond the competitions and recognition, Ross says she finds it amazing how bartenders are changing the perception of bartending from a side job to get you through college, into an actual career. We aren’t just doing this for money,” Ross said. “We care enough with what we’re doing and go forward to pioneer certain things up.” Ross may not be pioneering her own spirit line, but instead says she’s deconstructing and forming neighborhood bars to fit their location and become a neighborhood destination. All while leading her first bar program and putting her touch of couture in the Heights.

We can’t be sure, but we think we saw the sun this week. Hopefully it is the harbinger of many pleasant days ahead this spring, when enjoying an evening cocktail on the patio is not at all out of the question. For this month’s Cocktail of the Month, we look to Brazil’s national cocktail, the Caipirinha. It’s in regular rotation at my house since my other half came back from a trip there with a bottle of cachaça and lots of advice from Brazilians on how to make the perfect Caipirinha. Cachaça, by the way, is a sugarcane-derived alcohol, like rum, which you can get stateside too. The term Caipirinha can describe any cachaça-andfruit-juice drink, but it is most traditionally made with lime. Other contenders are pineapple, lemon, or mango. The recipe is simple but delicious:
