Local girl scout troops on the move with cookie sales By Betsy Denson betsy@theleadernews.com
Maybe you noticed them on your last trip to the grocery store – young girls with a keen entrepreneurial spirit offering a product with a long and tasty history? While Girl Scouts have been selling to friends and family for weeks, last weekend marked the start of booth sales. Thin Mints, Peanut Butter Sandwich, Caramel deLites, Shortbread, Lemonades, Peanut Butter Patties, Thanks-A-Lot and Cranberry Citrus Crisps, are on sale for $4 each in front of retail locations across southeast Texas. Get ‘em while they last. The sale ends March 20. For Cadette Troop 24197, who has been together since they were Daisy Girl Scouts, the cookie sale is a tradition. So on Valentine’s Day, troop members Savannah Salazar, Rebecca Crow, Jordan Reeves and Amber Nussberger were at the 43rd Street Kroger to try to make
a sale. While the girls acknowledge that it’s easier “to sell when you are little”, troop leader Rochelle Salazar tells them that they are still “cute.” Age does have its benefits, too. “We work better with money and making change now that we’re older,” said Savannah Salazar. “And we can interact more with the customers.” Their sales pitch is varied. Maybe customers want to know that it’s the last year for the Cranberry Citrus Crisps. The popular cookie variety will be discontinued. If someone wants gluten free, there’s a chocolate chip peanut butter oatmeal cookie called Trios which retails for $5 per package. The girls tell potential customers that the cookies freeze well, or if they don’t want to eat them themselves they can do the Cookie Share program, where cookies are distributed See Cookies P. 6B

There may be snow on the ground in some parts of the country, but over off of White Oak Drive, the flurries are coming in a much tastier form. Timbergrove residents and partners, Daniel McCrackin and Michael Schwartz, grew up with Rita’s Italian Ice on the east coast. After moving to the neighborhood in 2013, the two decided that they missed their hometown treat and embarked on bringing some of that tradition to their new home. “We opened the first day of school [in 2015],” Schwartz said. “We’re excited for our first summer, our first real season.” Being an east coast tradition, franchises up east close for the winter and re-open the first day of spring. To get everyone excited about Rita’s ice again, franchises invite neighbors to come in to get a free ice on them. This year, the first day of spring lands on March 20, and the White Oak location will be participating in the free ice giveaway. “From open until close, everyone that walks in the door will receive free Italian ice,” Schwartz said. “It’s a fun day!” While gearing up for the first day of spring, Rita’s is launching a brand new cool treat to the everyday lineup –
Sugar-free Italian Ice. The ice is sweetened with Splenda brand sweetener and made with all natural ingredients. So far, two flavors have been launched at the Heights location – strawberry and pineapple. “These have zero high fructose corn syrup, no artificial colors or flavors,” Schwartz said. “They are basically just fruit, water and sugar.” Later in the spring, two more all natural flavors will be added to the lineup with banana and orange rotating in. “It’s a good option if you don’t want the preservatives or if you’re cutting out things like high fructose corn syrup,” McCrackin said. Another highlight for the Heights location is that their award-winning custard is back. With the egg shortage last year, the egg element was missing from the custard, but things are back on track for the frozen treat recipe. Rita’s Italian Ice on White Oak Drive is gearing up for
some great events in the near future. On the calendar later this year, you’ll find a few events with one of their favorite local organizations – Friends for Life. Rita’s has partnered with the no kill shelter and says they will continue to partner with the organization. “Friends for Life is a really important organization to us,” McCrackin said. “You can find a donation box on our counter every day.” Timbergrove residents McCrackin and Schwartz enjoy bringing ice to their new home and the two both have favorites they recommend from the menu. McCrackin said his is the Blendini of cheesecake strawberry and vanilla. Schwartz said his favorite varies from day-to-day, but he is partial to the Misto shakes. The two can both agree that the fan favorite, hands down, is the mango flavor and the mango Gelazi is the best-selling crowd pleaser. Rita’s Italian Ice is located at 2802 White Oak Dr.

Locally owned Dacapo’s Pastry Cafe celebrates 22 years in business By Kim Hogstrom For The Leader
Dacapo’s Pastry Cafe has been making Heights residents happy with its sweet treats and fresh fare since 1994. Today, many locals drop in the store at the corner of 11th Street and Studewood for a fresh sandwich, handbaked pastries, or simply a rest from a hurried world. Still, 22 years ago, the area was in transition. “Transition - it was scary,” Lisa Biggerstaff, co-owner of Dacapo’s Pastry Cafe, said. “When we first started, we would open at 7 a.m., but no one was on the streets until noon, so we changed our opening time to 11, where it stays today.” Biggerstaff owns Dacapo’s in partnership with her twin sister, Tresa Biggerstaff. Together, the women do all the baking, make all their own breads and roast all their own meats. The fare is produced with a commitment to fresh, preservative-free, quality - an equation that apparently works. “We have many regular customers,” Biggerstaff said. “They come by for lunch or for orders to-go, sometimes several times a week. Every once in a while, we will try something new on the menu, but the customers protest if we take something off the menu to do it. Everyone has a favorite.” Dacapo’s has been serving its regulars for so long that the children of original regulars are now bringing their own kids in for treats. In fact, the twins had a grandfather who owned two bakeries, and joke that it is in their genetic make-up to serve the public home-baked goods. “We say we were ‘bread for the business’,” Biggerstaff said, laughing. Garden Oaks resident Patrick McDougle often meets his Heights sister at Dacapo’s for a slice of cake, coffee, or a coup of soup in the afternoon.

“It’s a very pleasant little place,” McDougle said. “The food is great, the baked goods in particular, and the prices are good, plus it is a little like stepping back in time. There is no internet service so people are actually speaking to one another while they eat. Where else can you find that?” And the name? Farmstand organizer takes over steak night at Sassafras By Christina Martinez christina@theleadernews.com Mickey Morales was born in Galveston and moved to the Garden Oaks/Oak Forest area when he was three years old. He was raised off of Hialeah Drive and graduated from Waltrip High School in 1976. Being here all of his life, it’s safe to say that Morales has seen the area grow. Speaking of growth, you may recognize Morales from The Farmstand on Saturday mornings as the organizer and breakfast guru or “the guy with killer tacos�, as some like to call him. “The Sassafras folks knew me from my work at The Farmstand,� Morales said. “Of course I’d also come up here often with my good friend Joe Apa, from Rudyard’s Pub. I rarely could make it over to steak night when Mike McElroy was running it, but when a couple of the owners asked me if I could take over I said I could do it.� For almost a month now, Morales has been running the Monday night steak night. The previous pit master, Mike McElroy, who is now executive chef at The Durham House, has come by during one of Morales’ steak nights and gives Morales praise. “I love the fact that he’s a local farmer,� McElroy said. “His produce is great and he takes a new look at a traditional Texas steak night. In fact, in Italian and Latin, De capo means ‘from the beginning’ or more literally, ‘from the head’, and is often used in music to mean ‘a new start.’ “We chose it on purpose,� explained Biggerstaff. “We were both sort of starting over when we opened the cafe, so the term spoke to us.� The Houston Heights has always gravitated toward the locally owned, owner-operated small businesses, and Dacapo’s is a great example of the preference. There is no detail, flavor or experience that is not carefully curated by someone who is probably your neighbor. We put down our fork full of carrot cake, and raise our coffee cup to toast another 22 years for Dacapo’s Pastry Cafe!

onathan Garris is our Editor. Jonathan has been with THE LEADER since August 2014 and originally hails from Burlington County, NJ. He relocated to Texas in 2007 and graduated from Stephen F. Austin State University in 2011, has an older brother and is a loyal fan of the Philadelphia Flyers. What are you working on now? “I’m working on a portrait of my Mom and doing small drawings in between so I don’t lose my patience and rush things,” DeRamus said. “The small drawings are all based on alchemical symbolism mostly taken from 16th century art.” What’s your connection to the Heights? “It’s home,” DeRamus said. I came here in ‘97 and after moving to NYC in 2002 and spending almost nine years in Brooklyn, it was the first place I wanted to come back to. I plan to stay here until I get pushed out by high rent ... luckily we have great landlady!! Hopefully I’ll be here for a long time.” I certainly second that!
Thin Mints Cupcakes
Prep: 40 min. Bake: 15 min. + cooling • 2 packages (9 ounces each) Girl Scout Thin Mints cookies, divided • 1 package (8 ounces) cream cheese, softened • 1 package chocolate cake mix (regular size) GANACHE: • 4 ounces semisweet chocolate, chopped • 1/2 cup heavy whipping cream • 1/4 teaspoon peppermint extract FROSTING: • 1 cup butter, softened • 1 cup shortening • 1 teaspoon vanilla or almond extract • 1/2 teaspoon salt • 3/4 cup baking cocoa • 1/2 cup 2% milk • 4 to 4-1/2 cups confectioners’ sugar Directions: Preheat oven to 350°. Reserve six Thin Mints cookies for garnish. For truffles, place remaining Thin Mints cookies in a food processor; process until finely crushed. Add cream cheese; process until blended. Roll into twenty-four 1-1/2-in. balls. Line 24 muffin cups with paper liners. Prepare cake mix batter according to package directions. Drop 1 tablespoon batter into prepared muffin cups. Place one truffle in center of cup. Fill twothirds full with remaining batter. Bake 14-18 minutes or until a toothpick inserted in the cake portion comes out clean. Cool in pans 10 minutes before removing to wire racks to cool completely.

Tell us one crazy thing that has happened to you “Well, let’s see, I was on the local news (CW11 and NBC) in NYC for filming UFO’s over Brooklyn a couple of times,” DeRamus said. “That was nuts. They never interviewed me, but both stations showed my videos to a couple of professors of astronomy at Columbia University. One said it was unidentified and the other said it was a planet. Have you always thought of yourself as an artist? “I’ve always drawn,” DeRamus said. “I told my mom when I was four that I wanted to be an artist after accidentally figuring out how to draw four legs on a dinosaur in perspective. I got a lot of praise for that dino drawing and I wanted more, so I stuck to it pretty hardcore. I wanted to be a heavy metal guitar goddess for a while but I can draw better than I can jam, so I put that aside.” Tip for you metal-heads, search “I like to draw Tina DeRamus” on YouTube, for an amazing fast motion demo of DeRamus sketching detail. DeRamus’ early drawing influences were from Mad and Cracked Magazines. With zero fine art exposure, her role models were Alfred E, Neuman and Sylvester Smythe (the fictitious cover mascots). Her first exposure to art with a capital “A” as she puts it, was during a field trip to the Menil in her junior year in High School. “I kissed the Magritte statue of the birdcage man (René Magritte, The Healer, 1967, Bronze) that day while the guard wasn’t looking,”DeRamus said. “I became a big fan of surrealism from then on. Dali and Magritte were my favs. when I was younger but in grad school I developed a thing for Dada artist/ poet Hugo Ball.”

Tell me about your background and your time in NYC. “I grew up in Baytown but moved to the Heights around 1997 while going to school at UH,” DeRamus said. “I got my bachelor’s degree in painting in 2002 and shortly after moved to Brooklyn to go to graduate school for fine art at the school of Visual Arts in NYC. I graduated with my MFA in 2004. I returned to SVA again in 2006 when I was hired as the Assistant to the Chair of the MFA Fine Arts Program. I was the Assistant to the Chair from 2006 to 2010 when I returned to Houston after my mother was diagnosed with a terminal form of cancer.”

A few years ago a new neighbor moved in next door and just my luck, she’s an artist. Not only that but she actually lived in my building before leaving for art school. I told her then she was on my list of people to interview. Unfortunately, she then assured me that she was only creating for herself for a while. Tina DeRamus would occasionally work on her ink designs on our shared patio, and her level of detail amazed me. I encouraged her not to wait long to share her work with the world. This weekend, DeRamus is finally showing her amazing work and I finally got that interview! This Saturday evening, DeRamus will join 60 artists selected from hundreds of applicants by Claire Richards and Stäcy Smith to showcase both 2D and 3D artwork at Hardy & Nance Art Gallery at a show titled the “Black and White Art Show”. DeRamus submitted two new works just for this show. Her medium is ink, primarily on paper, and she said if she’s feeling colorful sometimes on gouache. However, for this particular show, there won’t be any color.

The Eagles open district play at home against St. Pius X on March 31. They will look to avenge their playoff loss when they visit Concordia High School on April 7.
By Jonathan Valdez For The Leader Spring is around the corner and for Texas high schools that means one thing: baseball. Although the pre-season has begun for many teams, exhibition and district play starts in less than a week. Here is a comprehensive guide for the teams that make up the Greater Heights area. John H. Reagan Bulldogs David Petty returns for his 14th season as the Bulldogs head coach. During his time as head coach, the Bulldogs have won three district championships and have made the playoffs on nine separate occasions. Last year marked a disappointing season for Reagan as they finished fifth in district with a 7-9 record. Coach David Petty believes this season will be different and gave a few reasons as to why he thought the team struggled last year. “We moved from class 4A to class 6A,” Coach Petty said. “The competition is at a much higher level. We [also] did not have access to a field last season due to the renovation of Studewood Park.” The Bulldogs must rely on the maturation of their team if they are going to improve this year. The team must also improve their record against the teams that finished ahead of them in the district standings. The Bulldogs were 0-8 against the four teams that finished above them in district last year. “We were sophomore heavy last season,” Petty said. “If we stay healthy and eligible we feel we have a realistic shot at returning to the postseason.” The team will look to start the season strong as they open district play on Feb. 23 against Westbury High School, a team they were 2-0 against last year. Lutheran High North Lions Lutheran High North is bringing Andy Moore back for his second full season as head coach. The Lions enter the season with a lot of confidence after finishing 3-9 in district play last year. In 2015, the Lions had nine freshmen on the roster and all of them are coming back as sophomores. While a one-year jump may not seem like much, the experience of playing at varsity for a year may prove to

be invaluable for the Lions. According to Coach Moore, last year was the first year since 2008 that the Lions had won a district game. The team looks to build on the momentum of last year and has set an even bigger goal this year - the playoffs. In order to make the playoffs, the team is going to have to rely on the experience and talent of their key players. Coach Moore says he is looking for Andrew Santillan, Ronnie Spanos and Jacob Elizondo to step up and become leaders for the team. When asked about their roles, Spanos, a sophomore, and Santillan, a junior, said they felt no pressure and they believed the team was a lot better this year. The Lions first game is at home against St. Joseph on Feb. 19. They began district play at home against Beaumont Legacy Christian Academy on March 10. Scarborough Spartans The Spartans are led by Edgar Villalta, who is in his second year as head coach, according to Max Preps.com. Scarborough finished third in district last year and qualified for the playoffs. They were eliminated in the first round by Giddings High School. The Spartans offense was huge last year, as they scored four or more runs in nine of 10 district games. However, the defense was non-existent, as they gave up seven or more runs in the same span. The Spartans must be able to beat the teams that finished ahead of them if they want to make the playoffs again this year. They were 0-4 against the Furr Brahmans and the Washington Eagles, who finished No.1 and No. 2 respectively.
The Spartans open their season against Sterling High School on March 2 at Cowart Stadium. St. Pius X Panthers Charles Johnson is taking over as head coach and according to him, the first thing he has tried to do is establish a culture within the team. “We want grinders,” Johnson said. “Guys who will put all types of personal accolades aside and do what we need to do to win every ball game.” Last year the team finished last in district play with a 18 record. Their sole win was against Beaumont Monsignor Kelly Catholic High School. Their goal this year is simple. “Win the next at bat – whether it’s the pitcher on the mound or the batter at the plate,” Johnson said. The Panthers started their season last Thursday with a wild 12-11 win over St. John XXIII. The team begins district play on March 31 at St. Thomas. St. Thomas Eagles Ryan Lousteau is back for his third season as the Eagles head coach. The team finished second in district last year and advanced to the regional playoff, where district rival Concordia High School eliminated them. The Eagles lost a significant amount of seniors, including Wendell Champion who is now playing at the University of Houston, but are only a year removed from winning the TAPPS 5A State Championship. St. Thomas will count on its strength at the pitcher’s mound to make up for the departures of last year’s graduating class. According to the St. Thom-
Waltrip Rams In his fourth year as head coach, Mike Evans returns to lead the Rams’ varsity squad. Last year, the Rams clinched the 5A District 20 Championship with an 8-1 record and qualified for the postseason. They lost in the first round to the Memorial Wildcats, who made it to the final four. “I think we’re primed and ready to do even better than we did last year,” said Nick Hollas, third baseman and pitcher. Coach Evans also agrees that his team can compete at an even higher level. He will look to seniors Hollas, centerfielder Richard Bailey and pitcher Clay Malkowsky to set the example for the team. The Rams open district play against Yates High School on March 8 at Delmar Field. They will look to avenge their sole loss in district play when they travel to College Park High School on April 9.

Reagan High School sends eleven on athletic scholarship By Christina Martinez christina@theleadernews.com Last year, HISD announced that John H. Reagan High School sent the highest amount of students to college on an athletic scholarship, sending six. While it’s a little early for the final district count, the Bulldogs are already on their way, surpassing their own number and sending 11 college commits for the 20152016 school year. Of the 11, there are nine boys from baseball and football and two girls from soccer.
