Smoked Venison & Artichoke Recipe Recipe courtesy of award winning Chef Darren Wright, using the RATIONAL iCombi Pro and RATIONAL VarioSmoker 2 venison fillets 100g manuka wood chips 300g artichokes 100g butter 1L natural yoghurt 50g miso paste 2 pears 125ml white vinegar 75g sugar 1 cinnamon stick 8g allspice 10g root ginger Peel from 1/2 lemon Miner’s lettuce or watercress to garnish DIRECTIONS Labna Prepare 9 days in advance. Place the natural yogurt into a fat filter bag, tie the top and hang in the chiller over a container for 48 hours to catch the liquid as it drips away. Once this has been done leave the labna in the bag and rub the outside with the miso paste. Ensure it is covered completely and let infuse for approximately 1 week. Venison Trim the venison fillet of all silver skin and set aside on a wire rack. Prepare the Rational iCP and VarioSmoker unit with the wood chips. Set the Rational iCP to 51°C dry heat for 45 minutes, place the VarioSmoker unit in the bottom of the oven cavity then add the venison on the wire rack and start both units. The smoking unit will take approximately 15-20 minutes to start. Once cooking is complete, remove the venison and wrap in cling film. Store in a chiller overnight to allow the smoked flavour to develop. Artichoke Purée Clean the artichokes and roughly chop 150g then place in a vacuum pack bag. Add 20g of butter, a pinch of salt and vacuum seal. Cook in the Rational iCP on steam setting 95°C for 15-20 minutes or until soft to the touch. Remove contents of the bag, blend, and pass through a fine sieve. Reserve until needed. Fried Artichokes Chop 100g artichokes into even sized pieces. Cook them in a deep fryer until crisp and cooked through. Season with flaky sea salt. Artichoke Chips Finely slice 50g of cleaned artichokes on a mandolin and fry until golden brown at 160°C. Remove and season with salt. Pickled pear Peel pears and place them in a vacuum bag with vinegar, sugar, spices, ginger, and lemon zest. Vacuum seal and steam in the Rational iCP at 85°C for 25 minutes. Remove and allow to cool. To Serve The Vital Elevated Plate 290mm from Ariane is made from commercial-grade fine white porcelain for a sophisticated and elegant finish. This range is distinguished by its fine, smooth contours & classic Hamptons style design. The shapes of these pieces are subtle and understated, making them the perfect canvas to bring your dishes to life.
