Mr Morris, by Michael Meredith Chef Michael Meredith's food approach is an intuition of flavours and cultural inspirations that showcase the region. For Reliable Consistency One of the challenges Mr Morris faced was not having a unit that had an accurate enough steam generator and technology to be able to cook products consistently and unmonitored overnight. The chefs needed a unit where the humidity levels could be adjusted to the percent for items such as their Potato Bread, to achieve the right amount of lift or to braise their lamb shoulder overnight to prevent it from drying out. To solve the requirements and still be able to offer a unique dining expereince at the highest level, RATIONAL was the best partner. Therefore, Mr Morris decided on a RATIONAL iCombi Pro.
