THREE WORDS TO DESCRIBE YOUR CREATIVE PROCESS: Organic, colour, form. WHAT DO YOU REMEMBER FROM THE VERY FIRST EDITION OF THE VINE? I was lucky enough to create a vine illustration on the cover image of the mother and daughter, as well as doing the hair and makeup for the fashion pages. It was a fun day!

WHAT HAVE YOU BEEN UP TO SINCE YOU WERE FIRST FEATURED IN THE VINE? I have become a full-time artist. I exhibit worldwide and also within the gorgeous space of the Burnside Village Fashion Mall. My work has evolved so much!
FIRST EDITION
We check in with Emma Hack and Kate Collins to see what they’ve been up to since their feature in the very first Vine magazine. WHAT DO YOU REMEMBER FROM THE VERY FIRST EDITION OF THE VINE? Wow! Was it really 10 years ago? How time flies! I think it was one of the first photoshoots and articles that I had been interviewed for, since becoming a full-time newsreader. In those days, I still had the time to sit quietly and have leisurely coffees at Burnside Village! WE’RE TEN YEARS ON FROM THE FIRST EDITION. WHAT HAVE YOU BEEN UP TO? In the last 10 years I guess you could say I’ve had a few milestone moments. I married my husband Leigh in 2014 in a beautiful ceremony at Golding Wines in the Adelaide Hills. Our son Harvey was born a year later and then just last year, we welcomed our second son Eddie into the world. These days, I’m far more likely to be shopping for the boys at Burnside Village, than for myself!
KATE COLLINS THREE THINGS YOU’RE PROUD OF: I’m really proud of my role with Nine News and everything it has allowed me to do over the years. I’ve been able to lend my voice and my time to some really worthy local causes in big and small ways and that means a lot to me. I’m proud of the life my husband and I have built together so far and of course I am proud of my two beautiful children, who are such blessings to us. PLANS FOR THE NEXT 12 MONTHS? The plan for the next 12 months is to continue to find that elusive work/life balance! I’ve set myself a challenge – I’m embarking on my first trek, tackling the Fiordland National Park outside of Queenstown, New Zealand. 11

YOU’VE HAD AN INCREDIBLE CAREER SO FAR – WHAT ARE SOME OF THE HIGHLIGHTS? Highlights would definitely be the travel I get to do, visiting beautiful places to show my art. The Gotye music video changed the way people perceive my work, with over a billion views, it’s a lovely thing to have had created. I also love the work I created for Nic Watt’s Madame Hanoi restaurant, an 8-metre tall mural artwork, titled ‘Madame Hanoi’. WHAT’S NEXT FOR EMMA HACK? I am attending a lot of art fairs worldwide to promote and sell my artworks. Affordable Art Fairs Melbourne, NYC and Singapore, PULSE Art Fair in Miami and LA Art Show to name a few, with solo shows in London and Singapore early next year. I have just created new works (‘Be Still...’) that has recently launched at Burnside Village, so these will travel with me until I create next June. It’s all about running the business side of my career and being inspired along the way for my next collection.

WOMAN From a small row of shops to the impressive grandeur you see today, Pat Cohen is the driving force behind the beautiful Burnside Village.
Tell us about your history in Adelaide and why you love the city so much:
A lot has happened since the first edition of The Vine. What are you most proud of ?
I have spent most of my adult life in Adelaide and I love that the city was purposely designed in a grid format by Colonel Light. The cool winters and dry summers are perfectly suited to me.
The quality of the publication is fantastic and I love that it showcases our excellent retailer mix. Our incredible team continually surprise me with the excellent level of information and insight they provide.
How did your journey with Burnside Village begin?
We know you’ve spent a lot of time travelling. What’s the next destination on your bucket list?
My husband owned an old cottage on Portrush Rd, which was developed in a partnership into a small L-shape row of shops, which we named Burnside Village. From then it has grown and become what you see today.
What does a typical week in your life look like?
I would absolutely love to return to the Baltic states. I’ve been before and loved the region.
“THE VILLAGE ATMOSPHERE IS SOMETHING VERY SPECIAL”
These days I live a quiet life, having brought up three wonderful boys. Currently I enjoy ballroom dancing, and shopping at Burnside Village of course. I am also blessed with some wonderful friends that I enjoy seeing and doing various activities with.
How was your experience in front of the lens for this edition’s photoshoot? It was enjoyable and I was honoured to take part in the shoot. Initially I was quite nervous but was made to feel at ease by the wonderful people involved and enjoyed wearing the beautiful clothes that I was dressed in from Perri Cutten and Carla Zampatti.
Outside of Burnside Village, what are some of your favourite pastimes? I really enjoy cooking and baking. Playing bridge with friends is always a challenge and very entertaining for me. I also enjoy watching murder mysteries, the British do it so well!
Your favourite thing about Burnside Village? Even with humble beginnings, as the centre has grown and evolved, I believe we have been able to retain the ‘Village’ atmosphere, which is something very special. I really love to see children playing and enjoying themselves at the fountain. I feel very proud that at Burnside Village, we have some amazing staff, who ensure Burnside Village is well maintained and continue to provide a wonderfully pleasant environment for people to shop and visit.

Stylist, entrepreneur, wife, mother, presenter and philanthropist. Is there anything Jules Sebastian can’t do? Being in this industry means you’re exposed to the latest trends. What are you most excited to see this spring summer? Pastels are fun to play with in spring and there’s some amazing prints out there at the moment – I love the statement that a bold floral or polka dot makes. But, my favourite of the current trends are the structured designs that I’m seeing – exaggerated shoulders and hip silhouettes are really fresh at the moment.
Three things you’ll be investing in this season: Heading out of winter and trying to guide my family through the flu season by investing in myself with daily multivitamins, a great facial highlighter that helps give a beautiful dewy base, and an oversized floral maxi dress.
You were involved in issue 12 of The Vine, talking all things Camilla. What are you
loving about their latest release? I was just considering Camilla swimwear yesterday actually. I love how Camilla prints translate into swimwear and particularly, their high-waisted two piece suits.

There’s too many to pick one favourite, however I did recently get a little star struck with the opportunity to interview style icon Carla Zampatti. She is an absolute legend and I have to admit to being a little nervous for that one!

THE PIECE THAT LAUNCHED MY BRAND:
Elegance, beauty and a contemporary edge are what defines this South Australian designer. How would you describe your brand couture+love+madness? Is it a reflection of your own personal style? Couture+love+madness is feminine and classic but with a modern twist. The brand is for the woman who wants something unique, well-cut and one-off. Bespoke is such a personalised service and I love the fact that I get to spend so much time with my clients, getting to know them, and working together to create a piece that not only represents CLM, but also captures the client’s personality. CLM is definitely a reflection of my personal style, just on steroids!
Tell us about the piece that went viral and launched your brand. Why do you think it struck a chord with so many people? The ‘Rose’ Gown from our SS18/19 Collection ‘La vie En Rose’ has been the post popular with our customer base (and
our social media followers!). It’s a big, fluffy, romantic gown crafted from hundreds of organza laser-cut petals and a fitted bustier with velvet detailing and pleated tulle. It’s a very feminine design and a big gown – she has over 70 metres of fabric but is super lightweight! We are working on a new version for our upcoming bridal collection ‘La Mariée’ which explores different bridal styles to suit different personalities, from traditional to classic to modern.
Describe your creative process. Are there certain things you do or can’t be without when you’re designing? I get inspired by fabric. Design can go two ways – you can either design then source fabric or source fabric then design. I’m the latter. I won’t buy a fabric unless I have a bit of an idea as to what I will design with it. A typical CLM gown is really textured so I often search for interesting, textured fabrics and sometimes we create our own texture from a basic fabric. 25

Your three spring summer must-have pieces? Pastels are so huge for this spring summer season. I have just purchased a soft pink double-breasted blazer from Zara – it’s the perfect trans-seasonal piece! Next on my list is the Kim Double Strap Heel from Seed Heritage. And last but not least, any piece from the new ‘Among The Gumtrees’ collection from Camilla. The pieces capture the true beauty of the Australian landscape.
Let’s talk fashion muse. Who were you inspired by at a young age? Barbie of course! She is the one who got me into this business. I started making her clothes from the age of five, and I knew then that I wanted to do this for the rest of my life! I loved her sense of style from a young age, she had so many clothes and careers – she was very inspiring. I would cut and staple clothes together for her and then photograph them.

We chat with the stunning Dominique Chehade following this season’s beautiful and romantic photoshoot, shot at the incredible Kingsbrook Estate. Your favourite part of the photoshoot? The shoot for The Vine’s 10th anniversary edition was simply amazing. A dream team, dream location and obviously my dream man (but I may be a little biased)! It was great to share the experience with my fiancé Nick, it’s something he has never done before and it was good to have him experience a little piece of my world. It was the first time Nick had ever seen me on set as well! Our wedding is coming up fast in November this year and it definitely felt a little like a prewedding shoot. It was pretty cute watching him watching me and smiling at me from afar.
How would you describe yourself: I lead a fast-paced and busy life. I would say I have a good sense of social awareness and tend to be outgoing and enthusiastic. I am emotionally balanced, but definitely like to stick with convention and familiar routine.
You’re also a qualified lawyer, how do you juggle your two careers? Both careers are great but utilise different strengths, so focusing the right energy into what I am doing at the time is important for me mentally and physically. It definitely took me a while to find the balance and it was tough along the way, but I can acknowledge that learning how to find this balance is all a part of the learning process and has aided in my growth and development as an individual.

I studied hard to give myself the best chance of success and I am now starting to enjoy the benefits of that hard work. I’ve set the bar high for myself and I love the challenge, I always have.
Describe your personal style:
I don’t have a set personal style, I love mixing styles! I am definitely a “mood dresser”. One day you will find me wearing a pretty floral outfit and the next I will be in baggy ripped jeans and a grungy leather jacket.
Fave Burnside store? I have a few favourites. Zara is always great and affordable. I love Scanlan Theodore for their quality basics and adorable two-piece sets. Of course, being an active wear junkie, Lululemon also makes the list!

You featured in the SS17 edition of The Vine. What have you been up to since? We’ve had a whirlwind of adventures since the 2017 edition of The Vine! We’ve published a book (The Nourishing Cook) which was a #1 best seller in Australia and NZ! We’ve also gone into the digital space now with our new BARE (Balanced and Realistic Eating) program which is doing incredibly well – we are so proud of it! We’re also about to release a vegetarian version of this guide which I am super excited about.

You recently expanded into a warehouse space. What does this mean for the future of your business, Bare Guide? We’re just about to move in! We have been working from our home office and we have started to outgrow it. We’re developing a space that is perfect for filming, more recipe creation and more BARE! Plus, we’re looking into delving into the App space with a way to help the world to eat healthy, learn about nutrition and cook along with me, at their fingertips.
If you could only eat one meal for the rest of your life, what would it be? This is way too hard to answer! I think maybe I’d have to go with a curry, or my bacon pinwheels in BARE! They’re both my equal favourites.
Top tip for living a happy and holistic life? Wake up early, exercise and take control of your nutrition. I guess that’s three tips, but all of those things will put you in a great position to smash each and every day, the way you want to.
What would be your ultimate food dream/goal? In terms of business, I would LOVE to have an App that people use on a daily basis that helps them grow, learn and flourish with their nutrition. It’s something that is super important to me and I can’t wait to help as many people as I can moving forward. 52

BUDDHA BOWL SERVES 2 // PREP TIME 10 MINS // COOKING TIME 20 MINS 1 can cooked kidney beans, drained ½ cup multi-coloured quinoa, cooked 1 cup red cabbage or sauerkraut ½ cup white vinegar 1 avocado, peeled and cut 1 cup fresh greens (we used spinach and mint) 2 medium sweet potatoes (gold and white variety) ½ cucumber, diced Pomegranates Bean sprouts Coconut oil Tomato relish or chutney

1. Preheat the oven to 180ºC and line a baking dish with baking paper. Add sweet potato, drizzle with coconut oil and roast for 20 minutes. 2. In a small bowl, add red cabbage and white vinegar, and leave for five minutes until pickled. Alternatively, use sauerkraut from the store. 3. Meanwhile, start loading your bowl with remaining fresh ingredients. Add any toppings that you like – we used pomegranates and bean sprouts, but you could also use sunflower seeds or flax seeds. Serve with fresh tomato relish.
WASABI VEAL SCHNITZEL SERVES 2 // PREP TIME 25 MINS // COOKING TIME 15 MINS 2 x 200g veal schnitzel fillets WE 1 tbsp wasabi paste LOVE! 1 tbsp sesame oil 2 cloves garlic, crushed 2 eggs, lightly beaten 2 cups panko breadcrumbs Plain flour ½ cup sesame seeds Salt and pepper
Vegetable oil for frying Watercress Sweet soy sauce Black rice WASABI MAYONNAISE 1⁄3 cup whole egg mayonnaise 2 tsp wasabi paste 1 tsp sesame oil
1. Place the wasabi, garlic and sesame oil in a large bowl and mix to combine. Add the veal fillets and coat with mixture. Set aside to marinate for 15 minutes. 2. Heat a large frying pan with vegetable oil, over high heat. 3. Place eggs in a large bowl and place panko breadcrumbs, sesame seeds and salt and pepper in a separate large bowl. Dip the veal fillets into the egg, then the panko breadcrumbs. Cook the veal, one at a time, for 3-4 minutes or until cooked through. Drain on paper towel. 4. For the wasabi mayonnaise, combine all ingredients in a small bowl. Top each schnitzel with wasabi mayonnaise and a drizzle of sweet soy sauce. Dress with fresh watercress and serve with wild black rice.

FIG & CASHEW CREAM TART SERVES 6 // PREP TIME 30 MINS // COOKING TIME 40 MINS 12 figs, sliced Walnuts, crushed CRUST 1 ½ cups plain flour ¾ cup brown sugar ¾ cup desiccated coconut 190g butter FILLING 300g raw cashews, soaked overnight
4 tbsp white chia seeds, finely ground ½ cup honey 3 tbsp lemon juice 3cm ginger, grated Pinch salt 1 cup water 1 cup melted coconut oil 2 tsp vanilla paste
1. Preheat oven to 190ºC. Grease a loose base rectangular pan (35.5cm x 12.5cm) well with butter, coconut oil, or coat lightly with cooking spray. 2. To make the crust, combine all ingredients in a large bowl. Dough should come together easily. Press mixture into the pan, starting with the sides then moving onto the bottom, keeping the edges square. 3. Bake until golden all over – usually 20-30 minutes. Remove and let cool completely. 4. For the filling, drain the soaked cashews and place in a food processor. Add chia seeds, honey, lemon juice, ginger, salt and water and blitz for 2-3 minutes until mixture is smooth. Add melted coconut oil and vanilla paste and blend again for a further 20 seconds. 5. Spread cashew cream into cooled tart shell. Chill for 30 minutes or until cashew cream is set, but not hard. Top with a layer of figs and crushed walnuts. Chill until completely firm before slicing. 55

PEANUT CHILLI TOFU BURGER (V) SERVES AS MANY AS YOU LIKE! // PREP TIME 10 MINS // COOKING TIME 10 MINS Firm tofu, cut into slices Bread roll of choice Baby spinach Red onion, sliced Cucumber, sliced into ribbons 2 tsp onion relish 2 cloves of garlic, crushed 2 tbsp chilli jam 2 tbsp hoisin sauce SATAY SAUCE ½ cup roasted peanuts, finely chopped 2 tbsp soy sauce 1 tbsp lime juice 1 small garlic clove, finely chopped 1 tsp light brown sugar 1 tsp grated ginger ¼ cup water

1. In a small pan over medium heat, add red onion and onion relish. Cook until onion is soft and caramelised. 2. To make the satay sauce, place all ingredients in a bowl and mix to combine. Set aside. 3. Place the garlic, chilli jam and hoisin in a bowl and combine. Brush both sides of the tofu with the mixture. 4. Heat a frypan over medium heat with oil of your choice (we like olive oil or sesame oil). Cook the tofu for 2-3 minutes per side, or until caramelised. 5. To build your burger, start with a layer of satay sauce, followed by spinach, one piece of tofu, more satay sauce, second piece of tofu, cucumber and top with caramelised onions.

CHORIZO & PRAWN SKEWERS SERVES 12 // PREP TIME 10 MINS // COOKING TIME 5 MINS 12 King Tiger Prawns, peeled with tails left on 12 slices Spanish chorizo Lemon zest Olive oil Smoked paprika PIRI PIRI SAUCE 3 cloves garlic, crushed 2 red chillies, deseeded and roughly chopped ¼ cup lemon juice ¼ cup lime juice 1 tsp paprika 1 tsp brown sugar ½ tsp dried oregano Salt & pepper to taste 1. To make Piri Piri sauce, place all ingredients in a small food processor and blitz until combined. 2. Meanwhile, preheat a char-grill pan or barbecue on a high heat. Wrap each prawn around a flat skewer with a piece of chorizo in the middle. 3. Brush prawns with olive oil, lemon zest and a sprinkle of smoked paprika. Cook for approx. three minutes each side or until cooked through. Serve with Piri Piri sauce and grilled lemon.

Butter and flour for coating and dusting cake pan 3 cups all-purpose flour 3 cups white sugar 1 ½ cups unsweetened cocoa powder 1 tbsp baking soda 1 ½ tsp baking powder 1 tsp salt 4 large eggs 1 ½ cups buttermilk 1 cup warm water ½ cup vegetable oil 1 tsp vanilla bean paste

CHOCOLATE BUTTERCREAM 1 cup unsalted butter, softened 3 ½ cups icing sugar ½ cup unsweetened cocoa powder 3 tbsp heavy cream ¼ tsp salt 2 tsp pure vanilla extract 1. Preheat oven to 180ºC. Butter three, 9-inch round cake tins. Dust with flour and tap off the excess. 2. In a large bowl, add flour, sugar, baking soda, baking powder and salt. Mix with a stick mixer on a low speed until combined. 3. Add eggs, buttermilk, warm water, oil and vanilla bean paste. Mix on a medium speed until all smooth. 4. Divide batter evenly among the three pans. Bake for 35 minutes or until a toothpick comes out clean. Cool on wire racks. 5. For the buttercream, beat the butter in a large bowl with a stick mixer until smooth and creamy. Add sugar, cocoa powder, cream, salt and vanilla extract. Mix for a further minute until combined. 6. Once cakes are cooled, layer buttercream between each layer. Hip, hip, hooray!

MASTERCHEF TO
Sprout Cooking School, the brainchild of chef Callum Hann and dietitian Themis Chryssidis, is all about fresh, seasonal and hands-on cooking. Can you pinpoint where your love of food came from? Callum: Growing up in the Barossa, it
seemed everyone is connected to food in some way! My mum owned a cooking homewares business and my dad worked at a winery for 27 years, which gave me a perfect start to cooking as a career.
Themis: Like so many people, my family love cooking and entertaining, which is rather infectious! Food is so much more than fuel for our bodies – it brings us together, is a social lubricant and is central to celebrations. All of my favourite memories involve food!
Your cooking style in three words: Both: Quick, easy, healthy.
You’ve gone from being a ‘student’ on season two of Masterchef, to a teacher in your very own cooking school. How would you sum up the last nine years? Callum: I’ve loved every minute of it! We
started out running the cooking classes, but over the years we now run a nutrition consulting studio, where Themis has a team of five dietitians that provide advice to a range of people. We also have our training business where we offer accredited and nonaccredited training, and we have a catering side to the business that will host over 300 events this year. Phew! I’ve loved watching the team grow and working with so many other passionate individuals.
How did Sprout Cooking School come about?

skill sets when we first met. Mine was as a private-practice dietitian who loved food, and Callum loved cooking the type of fresh, seasonal and healthy dishes that still encapsulates our ethos today. We both wanted to show everyday Australians how easy and satisfying cooking can be, so we planned to host one class a month as a side project. Safe to say it has grown quickly since then! Despite our differing skills, we share the same views on food and have worked together for so long that he’s a quasi-dietitian and I’m effectively a quasi-chef! In the last nine years or so, we are proud to say we have cooked with tens of thousands of South Australians and hope to keep inspiring more.
At the beginning of the season, slicing under-ripe peaches into salads and savoury dishes are a brilliant, crisp and slightly acidic addition. Apricots or plums gently roasted, poached or served sliced on a pavlova. Towards the end of the season, I don’t bother cooking with them at all; just eat them like an apple! Finally, is there anything better than cherries in the lead up to Christmas?
Callum: We have a strong emphasis on
seasonality in our Sprout recipes, so I try to stay away from tomatoes in the colder months. When summer hits though, I use them almost every day – whether that’s on toasted sourdough for breakfast, cooked into a pasta or made into a refreshing side dish with mozzarella or burrata. I also love when you find baby zucchini or squash – try using a vegetable peeler to shave them straight into a salad.

Fave shop at Burnside Village to pick up supplies? Themis: Angelakis is a must every time I visit Burnside Village. The quality and freshness is always obvious, but my favourite part is their staff. They are always happy to prepare or portion the seafood for you to suit the dish you are cooking.
Callum: I’ve thoroughly enjoyed the new(ish)
Tony and Marks Piccolo store. My theory is you can tell a good fruit and veg store by the quality of its herbs; if the produce isn’t cared for, the herbs are the first things to wilt. These guys pass that test with flying colours – they are constantly getting in fresh produce, and they have a great variety to choose from.
What’s next for Sprout? Both: Our cooking school and catering team are growing all the time, and we love working on a wide array of events, everything from hands-on cooking classes to catering weddings. One of our key focuses this year is our workplace health programs. We’re working with businesses to provide a well-rounded approach to the overall health of their team.
