Recently launched in Australia, the new Audi A4 offers the latest technology and a stunning interior while retaining its distinctive style. The latest Audi A4 brings a suite of progressive technology to the Australian luxury car market. Among the new features are adaptive LED headlights, a new smartphone interface and an advanced navigation system with live traffic updates. The entertainment package includes a DVD player, music storage with USB input and an 8.3 inch centre screen. “It redefines what we believe a customer is looking for in this segment, and offers more progressive technology than any Audi before it,” managing director Andrew Doyle says. Information including warning symbols and mileage is displayed in 3D as part of Audi’s Virtual Cockpit, available as an
optional extra. The A4 also comes with a long list of innovative safety systems. Pedestrian detection, basic pre-sensing technology to prepare occupants in case of emergency, and a rear collision system that warns traffic behind the car of a potential crash using its hazard lights, all come as standard. Included in the optional assistance package is adaptive cruise control with Traffic Jam assist, lane and turn assist technology and a pre-sensing system on the front of the vehicle. Drivers have the option of a 1.4 or 2 litre two-wheel drive petrol option, or a 2 litre all-wheel-drive petrol or diesel, each of which is paired with a 7-speed transmission as standard. audisolitaire.com.au

Style icon A touch of the exotic has landed at Burnside Village with the opening of the Camilla boutique, bringing bespoke pieces handpicked from designer Camilla Franks’ own travels.
W
hen Camilla opened its doors at Burnside Village for the first time, celebrity stylist Jules Sebastian was on hand to offer some special guests an intimate style session. The Adelaide girl was right at home among the colour, romance and beauty of the new store. The boutique is unmissable – the lavish, opulent fretwork archway welcomes customers to discover the grand Moroccan lantern and Budda statue sitting on a twotiered marble tile and brass shrine. Trinkets from Africa, Morocco, Tibet, Turkey and Polynesia nestle among the main attraction – the racks of beautiful clothing. It’s the epitome of boho luxe; the perfect setting for Camilla’s stylishly elegant pieces.

For Jules, the appeal of an iconic Camilla kaftan is the ease. “It is a piece that you can throw on, style up, and walk out of the house,” she says. “And they are so comfortable!” The kaftan’s versatility is another drawcard – their website offers a whole section on ways to style your flowing fabric. “There are so many different ways to wear kaftans, I don’t think I could pick one! A favourite would definitely have to be the tuck, to change the length of the kaftan.” Jules lives by the mantra “less is more” with her statement pieces, preferring a great pair of flats with a kaftan. And while the pieces are so quintessentially summer, don’t rule out autumn/winter appearances. “Wearing a leather jacket always adds a bit of weight to the outfit, not to mention
it would keep you warm.” Camilla’s latest autumn winter collection “El Duende” unveils anew silhouettes inspired by a journey to Greece, Spain and Turkey. You’ll find more than kaftans at Burnside Village, the boutique has a range of womenswear, menswear, children’s wear, accessories, shoes, swimwear and homeware lines. The stunning setting was no surprise for Jules, who got to know the woman behind the brand when sitting down for a chat with Camilla for the Tea with Jules YouTube series. “She’s warm, creative, full of ideas and so willing to share her story. We did the interview in her home, which was really special to see. That too, was everything you wanted it to be. She has had huge success with her business, so I found her to be really inspiring.”

T
ony Morter, product design manager at Jo Mercer, has been at the helm of the company’s creative team for three years and gathers inspiration from Australia and abroad. The fashion capitals of the world – London, Paris, Milan and New York – are regular haunts to scope out the latest trends to help shape the new range. Inspiration is gathered from travel, as well as online; blogs, Instagram and other websites all breed ideas. Then the team of five get onto sketching, all bearing in mind the important factors – fit, quality, styling and brand signature. Sketches turn into a sample and the styling, fit and colour is reviewed for any potential final adjustments. “It’s an amazing feeling seeing the designs delivered to store, I love seeing them come to life,” Tony says. Fashion may always be evolving, but there are some things that remain the same – almost. “We have classic corporate styles that are available in store all year round and feature classic pumps with varied heel heights, toe shapes, classic ballet flats and loafers. We try and refresh this core part of our business each season to ensure we’ve got something new and fresh for our customer to purchase.” This season, the team has worked with a focus on boots, from ankle to over-the-knee statement styles. “The AW16 collection has a cool, tranquil colour palette with beautiful soft hand finished leathers showcased throughout the range.” In keeping with the theme, Tony recommends keeping your wardrobe colour palette cool this season and introducing oversized jackets, hats and luxurious textured materials, layered to give the perfect silhouette. “Elements of fringing will bring your outfit to life and a unique statement handbag will finish off the look.” Jo Mercer is now open in the Atrium Mall.

DRAWN TO IT Creativity often begins with a pencil and paper and it’s no different for fashion illustrator and designer Petar Prodanovic.

W
hile technology allows for digital sketching, there’s something about dragging and flicking lead across a page that Petar connects with. “Ever since I was little I enjoyed art and drawing,” Petar, 31, says. “I’d read stories as a kid and interpret them and illustrate them myself.” A background in art was the perfect preparation for fashion; Petar’s drawing skills were already well-formed when he began an Advanced Diploma of Fashion Design & Technology at TAFE. Through the course, Petar revived his passion for sketching, this time with a renewed vigour to make the drawings come to life. The designs earned Petar the honour of student of the year and a trip to Hong Kong, sponsored by George Gross and Harry Watt. He’ll take the trip this year, garnering as much information about the industry as possible. His graduate collection The Departure, with its structured monochrome pieces and abstract geometric prints, already has people taking notice. But Petar remains committed to gaining precious experience. “I aim to start my own label but you have to learn from the masters to be a master so I’m hoping to get as much experience as I can. After that, the sky’s the limit.” Petar’s background in visual art merges perfectly with fashion, and has granted new opportunities. His skills come in handy at the design stage of his creations, but his sketches have become works of art themselves. The elegant, elongated figures in high fashion designs conjure up visions of the most beautiful models and couture. Petar’s received commissions for his sketches – even swapping hair and makeup services at fashion shoots for the drawings. “The illustrations are right at the edge of fashion and art.”

While he may be old fashioned with his sketching method, Petar’s inspiration comes from technology. Social media provides a barrage of photographs and Petar gathers all he can and neatly packages it on Instagram and Tumblr for reference in his drawings. One of Petar’s latest projects has been to create sketches for the promotion of Burnside Village’s Fashion Illustrative competition; he will also be teaching a few illustration classes at The Village. Petar’s top tip, and one he lives by, is to always tell a story through your drawings, no matter how subtle. While he looks for inspiration in many places, Petar says it’s important to put your own stamp on your work. “Do whatever you love, don’t look for things that are already out there. Use pictures for inspiration, but make your piece as unique as you can. Inject your own style.” When Burnside Village decided to run The Fashion Illustrative Petar was the perfect choice to join the judging panel. You’ll find work from the six finalists on display in the Fashion Mall until March 24th.

Autumn winter 2016 is full of freedom of choice with colour and style. There are some great trends this season, with many earthy tones including olive, copper, burgundy, flax and dark chocolate. I love this, as it reflects our time of year. I wear my sneaker shoes with everything, not just at the gym. They look great with jeans/shorts/ skirts and a simple tee, and create a little bit of edge to the outfit. Not to mention they are incredibly comfortable! Bold sunglasses are a great statement piece, which I won’t leave the house without, rain or shine. It’s very important to find glasses that complement your face shape. I’m also loving the androgynous look – think boyfriend jeans and blazers with more of a traditionally masculine tailoring, paired with a thick, low heel or even a sneaker. The level of tailoring of a jacket depends on your body shape – more of a curve will require something a little more fitted. This more casual and edgy look is fantastic for women on the go as it’s so easy to wear.

To me autumn winter is the most important fashion scape of the year – it transcends all others, and as a stylist it provides me with clarity for up and coming fashion trends. I always look to the high end designers and base my wardrobe and that of my clients on their perspective. We have great choices at Burnside Village so my job is made a lot easier. Whatever the time of year you can’t go past a dress. This season put it together with ankle boots or layer it with a velvet coat. Styles that are slightly tighter at the bodice and softly gathering from the waist, are a great option for all body shapes. Folksy tribal is huge this winter, as is military styling. Team a military jacket with a dress or jeans for a stylish casual look. Masculine tailoring is also a big look for the season, along with oversized knits. Faux fur is huge again this year but using bolder colours. The wide leg pant is also making a return and can be worn casually or dressed up with a blouse for night time. To dress with ’70s style team a higher-waisted flare with a turtle neck and accent with accessories.

Winter comfort As the temperature drops, warm up with these simple and delicious dishes designed by Callum Hann and Themis Chryssidis from Sprout Cooking School.
THYME, MUSHROOM AND LEMON PEARL BARLEY RISOTTO Serves 4
1 litre low-salt chicken or vegetable stock ½ tbsp olive oil, plus 2 tbsp extra ½ brown onion, cut into small dice 4 cloves garlic, chopped cup pearl barley cup dry white wine 500g mushrooms, cut into pieces (try to get a mixture including field, button, shiitake, king brown, oyster) 8 sprigs thyme Zest and juice of a lemon ½ bunch tarragon, leaves picked 30g crumbly feta cheese Bring stock almost to the boil in a saucepan. Remove from heat and keep warm. Heat a large, wide based pan and add ½ tablespoon olive oil. Add onion and cook gently, stirring occasionally for
2-3 minutes or until translucent. Increase heat. Add garlic, cook for a minute, then add pearl barley. Cook, stirring for another minute, then add the white wine. Once the wine bubbles away, add the stock, a ladleful at a time, waiting for each addition of stock to be absorbed before adding the next. This process will take about 20-25 minutes. Stir occasionally. If you run out of stock and the pearl barley needs a more cooking add a little hot water. While the risotto is cooking, heat a large frying pan with the remaining olive oil. Add the mushrooms to the pan and cook for 3-4 minutes or until golden brown on all sides. Add thyme and stir for a further 1-2 minutes or until fragrant. Remove from heat. Once the pearl barley is al dente (soft but still with a little bite) stir through lemon zest and juice. Divide into bowls and top with mushrooms. Top with tarragon leaves and crumble feta over to serve.

BEEF WITH SET POLENTA, PARSLEY SAUCE AND LEMONY SPINACH Serves 4 1L low salt chicken stock (or water) 1 cup instant polenta 30g grated pecorino or parmesan ½ bunch flat leaf parsley 2 tbsp olive oil 2 beef steaks (such as porterhouse or scotch) 3 cloves garlic, thinly sliced 1 bunch spinach or chard, sliced 1cm thick 400g can cannellini beans Juice of 2 lemons Ÿ cup baby capers in brine, drained Bring chicken stock or water to the boil in a medium saucepan over high heat. Slowly whisk in the polenta until combined. Turn heat down to medium, and cook, stirring until thickened, about 2-3 minutes. Line a 24cm square container with baking paper. Remove polenta from heat, whisk in grated pecorino or parmesan. Remove saucepan from heat and pour mixture into the container. Smooth the top, refrigerate for 25-30 minutes or until set. Turn the set polenta out onto a shopping board. Cut into four square pieces. Roughly chop the parsley and half the capers together. Place in a bowl and stir in half the olive oil and half the lemon juice. Set aside to serve. Heat a large non-stick frying pan with the remaining olive oil. Add the steaks and cook for 2-3 minutes each side or until cooked to your liking. Remove from pan and allow to rest. Add the polenta squares and cook for 1 minute each side or until lightly browned and warmed through. Place polenta pieces onto serving plates. Add garlic and spinach to the pan. Cook for 1 minute, add the remaining lemon juice and the cannellini beans. Remove from heat. Slice beef and divide pieces between polenta. Top with spinach mixture, parsley sauce and remaining capers then serve. Foliage from Burnside Village Flowers

MOROCCAN CHICKEN WITH BLACK QUINOA, BRUSSELS SPROUT AND POMEGRANATE SALAD
FIGS WITH ROSEWATER YOGHURT, HONEY AND PISTACHIO BRITTLE Serves 4
Serves 4 (page 89) 2 medium-sized beetroot 1 bunch baby beetroot (or substitute 2 extra medium sized beetroot) ½ cup walnuts, toasted ½ cup thick Greek yoghurt 2 tbsp olive oil 4 ocean trout fillets or salmon fillets (around 180g each) ¼ cauliflower, cut into 2cm florets 1 bunch flat leaf parsley, leaves picked Preheat oven to 200C. Individually wrap beetroot in alfoil and place on an oven tray. Roast for 60-70 minutes or until tender. Remove from oven and allow to cool slightly. Wearing gloves, rub the skins off the beetroot. Cut baby beetroot into wedges and set aside. Place the two medium beetroot into a small food processor with half the walnuts and yoghurt. Blitz until smooth. Heat a large non-stick frying pan over high heat. Add one tablespoon olive oil and the salmon, skin side down. Cook for 2-3 minutes or until skin is crisp. Turn fish over and cook for a further 1-2 minutes or until done to your liking. Remove fish from pan and set aside. Add the cauliflower florets and remaining olive oil to the pan the salmon was cooked in. Cook for 2-3 minutes over high heat until cauliflower is lightly browned. Remove from heat. To serve, spoon a quarter of the beetroot sauce onto each plate. Top with baby beetroot wedges, remaining walnuts, cauliflower florets, fish and picked parsley leaves. 2 tbsp cumin seeds 2 tbsp coriander seeds 8 chicken tenderloins ½ cup black quinoa 1 pomegranate, seeds tapped out 1 bunch mint, leaves picked cup roasted almonds, roughly chopped Juice of a lemon 1 tbsp olive oil plus 1 tablespoon extra 12 Brussels sprouts, quartered Heat a dry frying pan over high heat. Add cumin and coriander seeds and toast for 1-2 minutes or until lightly fragrant. Tip spice mixture into a small food processor and blitz until fine. Rub mixture all over chicken tenderloins and set aside. Place quinoa in a saucepan with plenty of water. Bring to the boil and cook for 13-15 minutes or until tender. Drain, and set aside. Cut the pomegranate in half. Holding the cut side facing down, use a wooden spoon to repeatedly knock the pomegranate until the seeds fall out. Combine in a bowl with quinoa, mint leaves, almonds, lemon juice and 1 tablespoon olive oil. Heat a heavy based frying pan over high heat with remaining olive oil. Add chicken and cook for 1-2 minutes each side or until just cooked through. Remove from pan. Add Brussels sprouts and cook for 1-2 minutes, stirring until bright green and crisp-tender. Stir Brussels sprouts through quinoa salad. Divide between plates, top with chicken and serve. Deep dish from Best Wishes
cup caster sugar ¼ cup pistachios, roughly chopped ¼ tbsp bicarb soda 8 figs, halved 1 cup thick Greek yoghurt 2 tbsp rosewater 2 tbsp honey Cover a tray with baking paper. Heat a small heavy-based saucepan over high heat. Add sugar and cook, stirring occasionally, until an amber caramel forms. Stir in pistachios and bicarb soda. Tip the brittle onto the tray and allow to cool. Roughly chop pistachio brittle into small pieces. Lay figs on a serving platter or tray. Stir yoghurt and rosewater together and spoon over figs. Salvatore Pepe has transformed the space formerly occupied by H by Felici into a bar and restaurant. Central to the menu is the charcoal grill Salvatore uses to cook a selection of local fish and meat, for the creation of Tuscan-style dishes and snacks featuring ingredients such as octopus, Gulf prawns and cuttlefish “cooked à la minute”. On the menu this winter is a classic Italian roast pork (porchetta), blue swimmer crab taglierini (ribbon pasta) as well specialist Italian cakes for dessert. gin
GIN IS THE FLAVOUR OF THE MONTH WITH BOUTIQUE DISTILLERS REFINING THEIR CRAFT TO BRING US THEIR UNIQUE INTERPRETATION OF THIS POPULAR SPIRIT. NIGEL WEISBAUM OF AUSTRALIA’S ARCHIE ROSE DISTILLING CO. EXPLAINS THE PRODUCTION PROCESS.
THE BASE SPIRIT To produce our gin we start with the finest wheat spirit – and we look no further than our own backyard, as Australia has the best wheat around. The decision to use wheat, rather than one of the alternative bases, was a considered one, as in our book it provides the cleanest and smoothest base to infuse our gin botanicals. THE WATER Before distillation, we cut the spirit with water that has been filtered six times for good measure, using a variety of processes. It may sound excessive, given the quality of the water to begin with, but in our opinion it’s worthwhile – and something you can appreciate with a direct taste from the tap at the distillery. THE DISTILLATION Then comes the distillation, which at Archie Rose is no mean feat: we distill all our
botanicals individually to ensure we capture every distinct flavour; and we do it all in our one-of-a-kind handmade gin still, using three different techniques: 1. MACERATION by adding botanicals directly
into the spirit and leaving them to steep 2. HOT VAPOUR INFUSION by suspending botanicals in a basket at the base of the neck of the still 3. COOL VAPOUR INFUSION by holding botanicals in our Carter Head style infusion point in the still’s Lyne arm THE BOTANICALS Between them, these three different infusion methods allow us to tailor the distillation to the individual botanical. This was a key consideration during the process of designing the still, and allows us to treat the lighter, more
floral botanicals in a different manner to the bolder and spicier botanicals, to capture even the most subtle of flavours. THE DISTILLERS In the end, however, the still is only as good as its distiller and it comes down to experience, intuition and an acute sense of timing – traits both our distillers have in spades. We are one of few distilleries worldwide who distill in individual botanical batches. THE FINAL PRODUCT Finally, honouring the saying “good things come to those who wait”, we let the gin rest between two and four weeks before bottling.
