What are the latest looks for autumn/winter? The autumn/winter 2015 collections spanned numerous looks, eras and sensibilities. There was a big move away from the structure and rigidness of winters past, with luxe fabrics and embellishment featuring strongly, plus a return to the softness and oversized “hug” of loungewear, while the line between workout and to-work wear became increasingly blurred.

for me personally. As The Vine stylist though, the strong influences throughout the international collections from the 1960s are a bottomless source of inspiration – keeping winter bright and cheery.

What trend are you most excited about? Obviously I love the return to soft tailoring, over-sized knits and luxury comfort dressing

What is the one accessory you can’t get through autumn/winter without? Loafers will work with everything.

What are the easiest ways to incorporate new trends into your existing wardrobe? Big knits, turtle-necks, capes, parkas, chic trainers and embellishment rather than print, references to the ’60s and some bohemian touches and you’re set to go!

Can all ages follow this season’s trends? This season is not age specific, with longer lengths in skirts and dresses, elegant soft lines and soft tailoring in pants. This sophisticated season is trans-generational. Which new-season trend did you not expect to see again? The presence of real fur on the catwalk was the only element of this season’s collections that surprised me; I always expect to see reincarnations of most other trends. What are some of the best looks for men in the cooler months? For men, lines are still quite slim in the pants – 1960s stovepipe shapes cropped at the ankle with bigger, bulkier layers on top in the way of parkas, quilted jackets, raglansleeve raincoats/duster-coats and, staying firmly in the ’60s, biker jackets. Turtlenecks have made a comeback for men too, shown under black tie attire at Tom Ford. Very beatnik!

soup

2 tbsp extra virgin olive oil 2 tbsp butter, plus 1 tbsp extra 1 onion, chopped 2 cloves garlic, crushed 2 medium parsnips, peeled and diced 1 celeriac, peeled and diced 1 potato, peeled and diced 2 tins cannellini beans, drained 3 cups vegetable stock 5-6 sprigs lemon thyme, plus 4 extra ¼ cup cream 1 tbsp walnut oil, plus extra couple of drops Sea salt and pepper Pinch of nutmeg ½ cup walnut pieces, roasted 50g parmesan, shaved

Heat olive oil and butter in a large saucepan. Add onion, garlic, parsnips, celeriac and potato with a good pinch of salt. Cover and cook gently for about 30 minutes without allowing them to colour, stirring from time to time; you may need a splash or two of stock. When the vegetables are sweet and tender, pour in one tin of beans, the remaining stock and lemon thyme. With the lid partially covering the saucepan, cook for another 30 minutes or until all vegetables are very tender. Allow to cool slightly then remove lemon thyme and puree vegetables until very smooth. While vegetables are cooking, warm up the 1 tbsp walnut oil, extra tbsp butter and extra lemon thyme, add second tin of beans and cook gently for 6-8 minutes. Tip the puree back into a clean saucepan and add the extra beans (discard the thyme), cream and extra walnut oil and season well with salt, pepper and nutmeg. Ladle the soup into warmed bowls and top with roasted walnuts, shaved parmesan and a puff pastry twist.

Brush puff pastry with walnut oil. Sprinkle with walnuts and parmesan; press down gently with your hands. Cut pastry into 4cm strips across the shorter side. Twist pastry strips gently and place onto a lined baking tray. Cook in a preheated oven at 200C for 12 minutes or until puffed and golden. 800g thick white fish fillets – flathead, snapper or even a small whole fish such as bream or snapper, cleaned and scaled Salt and pepper 1 clove garlic, thinly sliced, plus 1 extra if using a whole fish 4 tbsp extra virgin olive oil 4 medium potatoes, sliced very thinly (for easy slicing use a mandolin) 3 tomatoes, sliced very thinly 1 small lemon, sliced very thinly 1 small red onion, sliced very thinly 1 sprig rosemary 250g cherry tomatoes, halved Pinch of dried chilli flakes 2 tbsp green olives, pitted 1 tbsp capers in brine 1 tbsp caperberries ½ cup fish stock or water 2 tbsp flat leaf parsley, leaves only 1 extra lemon, quartered

Preheat oven to 180C. Prepare fish: if using fillets simply salt and pepper on both sides. For a whole fish, cut sharp incisions with a small, fine knife and insert slices from extra clove of garlic. Line a pan with baking paper. Pour in 1 tbsp oil to coat bottom of the pan and layer potato interspersed with slices of tomato, lemon and onion. Season each layer and

sprinkle with a few leaves of rosemary (keep it light). Drizzle with another tablespoon or two of olive oil. Bake for 20 minutes, until almost cooked, while you prepare the rest of the dish. Pour remaining oil into a deep frypan, add garlic, cherry tomatoes, chilli, olives, capers and caperberries and cook for about 1 minute. Remove potatoes from oven and set prepared fish on top. Add tomato salsa over fish. Pour in stock or water and return to oven for 12 minutes for the fillets or 20-30 minutes for the whole fish; or until the flesh parts from the bone of the fish at the touch of a knife, or fish fillets are cooked through. Serve garnished with parsley leaves and lemon wedges and sprinkled heavily with crisp, garlicky breadcrumbs, with a side of baby spinach and mushrooms.

Heat olive oil and gently toast breadcrumbs until crisp. Add zest, parsley and garlic.

In a wide frypan, heat oil and butter. Add mushrooms and cook until golden. Add spinach, then remove from heat and add zest and juice. Season well and serve. dish over medium heat and brown the chicken, not cooking through. Remove and place on a plate. Add onions, thyme, bay leaves and garlic cloves and cook over low heat until onions are tender and golden; mash garlic cloves into a paste and mix through. Add pear cider and chicken stock and allow to boil. Add chicken and any juices, and pear pieces. Simmer gently, uncovered, until chicken is cooked and pear has disintegrated. Stir in cream and reduce liquid until thick. Season well. Transfer chicken to either one large ovenproof baking dish suitable for serving, or 4-6 individual ovenproof dishes. Top with spoonfuls of mashed potato and dot over a little extra butter and a grind of pepper. Bake at 200C for 10-12 minutes or until golden. If garnishing with sprigs of thyme, add them for the last 5 minutes of cooking.

slow cooked lamb shoulder with pappardelle Serves 4-6

1.5kg shoulder of lamb (works equally well with veal) 1 tbsp extra virgin olive oil 2 onions, sliced lengthways 1 tsp cinnamon 1 tsp allspice 2 bay leaves 3 cloves garlic, crushed Long zest strips and juice of 1 orange ¼ cup balsamic vinegar 2 tsp brown sugar ½ cup red wine 1 tin whole cherry tomatoes 1 cup beef stock Sea salt and freshly ground pepper 500g pappardelle 1 bunch flat leaf parsley, chopped Shaved parmesan

Preheat oven to 160C. Season lamb with salt and pepper. Heat oil in a large ovenproof casserole dish and brown meat on all sides. Transfer to a plate. Add onions, spices and bay leaves to the pan; season and cook for 5 minutes. Stir in garlic, zest and juice, vinegar, sugar, wine, tinned tomatoes and juice, and stock. Cook for 5 minutes at a boil. Return lamb to the pan with any juices. Cover lamb with baking paper then cover tightly with a lid or foil. Braise for 3 hours, turning meat halfway through. Test meat with a fork; it should pull apart very easily. If it doesn’t, cover again and braise for another 30 minutes. Once cooked, uncover and bake for a futher 30 minutes to reduce the liquids. Transfer lamb to a plate. Tilt the baking dish and scoop off excess fat; discard. The braising liquid should be quite thick, if not, reduce it further, discarding the orange zest. Using two forks, shred meat off the bone and mix with onions and reduced braising

liquid. Season well with salt and pepper. Keep very hot in a deep serving bowl. In the meantime, boil 5 litres salted water in a large saucepan. Cook the pappardelle until al dente. Drain, but reserve ½ cup of the cooking water. Mix pasta with the shredded meat. If mixture is too dry, add a little of the pasta water. Serve sprinkled with chopped parsley and shaved parmesan.

Use tins with removable bases. Peanuts can be subsituted with any other nut, such as macadamia, almond or hazelnut. 200g butter chopped into 3cm cubes, at room temperature 70g icing sugar 40g salted peanuts, very finely ground 300g plain flour 1 egg yolk ½ tsp cinnamon 40g peanuts, finely chopped

Pumpkin, leek and sage risotto with marscapone Serves 4

1kg Queensland blue pumpkin, peeled and cut into bite-size pieces Bunch of sage leaves, half roughly chopped, half left whole 3 tbsp extra virgin olive oil 100g butter 2 small leeks, finely chopped 2 litres vegetable stock, plus extra stock or water Good pinch saffron 300g Vialone Nano rice 125ml dry vermouth 50g parmesan 50g mascarpone Salt and pepper ½ cup sunflower oil, plus extra for frying Sage leaves

Preheat oven to 200C. Toss pumpkin pieces and chopped sage with 1 tbsp oil and roast for 20-30 minutes until soft. Set aside. Meanwhile, in a small frypan, melt half the butter and cook leeks over very low heat until they collapse and become quite sweet. From time to time add a little water or extra stock. This will take a good 20 minutes. Set aside. In a small frypan, heat sunflower oil and gently fry whole sage leaves until crisp. Set aside on kitchen paper. In a deep saucepan, heat stock and saffron to boiling, then keep at a low simmer.

In another pan, heat remaining oil and rice, stirring until rice is completely coated. Keep rice moving until it is shiny and the edges of the grain start to change to a solid white colour. Pour in vermouth and simmer until completely evaporated. Add stock one ladle at a time over medium heat and stir until it is almost evaporated, then add the next ladle. When rice is almost cooked al dente and there is approximately 1 cup of stock left, pour it into rice. Cover tightly and allow to cook for 5-7 minutes, undisturbed, on a low flame; the risotto should be creamy and slightly soupy. Turn off heat but do not lift the lid at this stage. Roughly mash half the pumpkin and leave the rest whole. When risotto is just done, stir through the mashed and whole pumpkin and leeks. Add remaining butter, parmesan and mascarpone and season well. Serve garnished with crisp sage leaves. Preheat oven to 180C. Put all ingredients except chopped peanuts in a food processor and pulse together until just combined, and butter evenly distributed. Roll into a log, wrap in plastic and place in refrigerator for 15 minutes. Cut the chilled log into 8 even pieces (if making small tarts). Roll out each piece between two sheets of baking paper until large enough to cover the bottom and sides of the tin, leaving the bottom sheet of baking paper on to line the tin. Lightly prick the base with a fork and freeze for half an hour. Take out of freezer and line tart shells with baking paper; fill with baking beans or rice and bake for 10 minutes, then carefully remove paper and beans/rice and bake a further 5 minutes. Allow to cool. Divide caramel filling between tins and smooth top with a warm spoon. Bake for 5 minutes until set; allow to cool. Remove tarts from their tins. Pour chocolate ganache over the cooled caramel filling. Decorate the edge with the finely chopped peanuts. Chill.

Mix all ingredients and set aside.

The bEsT bites Which bread and when to serve? Bread is a family staple in any season but the colder weather means we can enjoy bread and butter puddings with sliced brioche or plain bread from Baker’s Delight or Village Baker. Sourdough is a close textured bread and makes the best sandwiches. Crusty, chewy Italian loaves such as filone or ciabatta are ideal for mopping up oily dressings and make wonderful bases for bruschetta and open sandwiches. Flatbreads, be they pitta, Turkish pide or piadine are great, toasted with shared plates of olives, sausage and dips or plain used as wrappers for a healthy, mobile lunch. Don’t let good quality bread go to waste: break it up and dry out in the oven for a great panzanella or blitz it in the food processor and make your own panko crumbs.

In South Australia, you can buy just about everything just about always, but not only is a lot of produce especially good in its season, it’s considerably cheaper as well. Stop into My Greengrocer to find the best produce each season.

Find out whether the fruits and vegetables are locally grown and support local farmers when you can. This is a great season for preserving citrus and making jams and chutneys. Moroccan salted lemons, grapefruit marmalade, quince paste and jelly are all easy recipes for a novice cook. You can buy sturdy jars with lids from Coles to give as presents.

How to buy fish

If you want to steam, bake or barbecue a whole fish – Asian style with ginger, chilli and lemongrass or Moroccan style with a dry spice – look for fresh clear eyes, bright red gills, firm flesh and moist scales. Ask the staff at Angelakis Bros to scale and clean the fish. If you want bones for stock, ask them to fillet a whole fish and give you the bones as well – but ring at least a day beforehand. For recipes that recommend “firm white fish”, discuss the day’s catch with the shopkeeper, but for simple shallow frying or grilling, use tommy ruffs, garfish, whiting or salmon trout. Choose a sturdier fish for a curry or tomato based recipe. Flathead, bream or squid would be terrific.

Storing fish Freshly caught and sold fish will last in the fridge for three to four days. To keep it at its freshest, pat the fish with paper towel, wrap it in freezer wrap and put it in an airtight container in the fridge. If you freeze fish, make sure you wrap it very securely in freezer wrap first, then plastic. Label and date it and use it within five weeks. The most important rule is not to overcook and not to over flavour. Keep it simple.

Use snapper, flounder, ocean trout or a small salmon for baking whole in the oven or wrapped in banana leaves or alfoil for the barbecue.

How to choose the best meat cut for the job

The cooler seasons are great for long, slow cooking of meats and the good news is that the best meats for such recipes are relatively inexpensive. So, consider buying lamb shanks or shoulder from Haydon’s Quality Meats for roasting over several hours with orange peel, red wine and coriander seeds. Whole pork neck and belly make succulent braises with Asian flavours such as ginger, rice wine and star anise. For curries and stews use chicken thigh fillets (never breast fillets) or meats with plenty of marbling such as chuck, boned leg or shoulder or oyster blade. Good quality mince will make an economical and healthy chilli con carne or flavour some home made pasties or sausage rolls.

Vegetarians and meat-lovers alike will enjoy Shanghai Tea House’s newest menu item, broad beans with pickled vegetables. The tasty dish is the perfect side for established menu favourites, including the ever popular smoked tea duck.
