What’s On Delightful donations Bakers Delight at Burnside Village will take part in their annual Bundraiser Day, to raise money for the Women’s and Children’s Hospital Foundation. The bakery will donate one dollar from every six-pack of Hot Cross Buns sold on Saturday, April 5 to the foundation. Continuing the great work, they will hold the Bakers Delight Pink Bun Campaign from April 24 to May 14 to support the Breast Cancer Network Australia. The first ever Coles store opened its doors on Smith St, Collingwood, in Victoria. It was April 9, 1914, the Thursday before Easter and the world was on the brink of war.

Coles was listed on the stock exchange in 1927.
A larger store opened, again in Collingwood, with the slogan ‘Nothing over 2/6d.’ That slogan was to stay with Coles for 2 decades.

village cookbook Mushroom san choy bow Serves 2 as a meal or 4 as a snack 6 dried shiitake mushrooms 300g mushrooms (more than one variety if possible) 1½ tbsp canola oil 1 long red chilli, deseeded and finely sliced 2cm piece of ginger, finely grated 3 cloves garlic, finely chopped ½ bunch coriander ½ cup canned water chestnuts, finely chopped 2 tbsp hoisin sauce 2 tsp soy sauce 1 small zucchini, finely julienned or grated 3 spring onions, finely sliced on an angle 1 small cos lettuce, broken up into individual leaves 1 tsp sesame seeds, to serve
Pour enough boiling water onto dried mushrooms to just cover them. Allow to stand for 10 minutes or until they soften. Chop fresh mushrooms finely. Heat oil in a large frying pan or wok over high heat. Add fresh mushrooms. While they cook, remove and discard stems from dried mushrooms and finely chop (reserve the liquid they have soaked in). Add dried mushrooms to the pan, along with chilli, ginger and garlic. Chop coriander stems finely and add these; reserve leaves for serving. Once mushrooms have browned and reduced, add water chestnuts, hoisin and soy sauces and enough mushroom liquid to moisten. Stir, then cook until most of the liquid reduces. Stir zucchini and spring onions through mushrooms. Divide mushroom mixture between lettuce leaves. Scatter over coriander leaves and sesame seeds and serve.

Heat 1 tbsp canola oil over medium heat. Add pancetta and cook until fat begins to render out. Add shallots and increase heat. Once shallots and pancetta are golden, add brussels sprouts. Cook for 5 minutes, stirring occasionally, then add stock. Stir, then cook for a further 10 minutes or until liquid has reduced and brussels sprouts are tender. Remove from heat and keep warm. Heat a non-stick frying pan over highmedium heat. Pour in extra 1 tbsp canola oil. Season fish, then add to the pan, skin side down. Hold fish down with a spatula, egg slide or your hand for 10-15 seconds to ensure skin stays flat and gets crispy. Cook for 3-4 minutes, turn fish over and cook for a further 2-3 minutes or until almost cooked through. Cooked fish will flake when prodded. Alternatively, insert a skewer into the fish. If it inserts easily, fish is cooked; if it has resistance, it needs a little longer. Add butter, thyme leaves and capers to the pan. As mixture melts and foams, use a spoon to baste it over the fish skin. Once butter has turned golden-brown, remove fish from pan to serving plates. Spoon over caper butter. Serve with braised brussels sprouts. Rub cumin, coriander and salt over lamb. Preheat a frying pan over high heat with oil. Add lamb. Cook for 2-3 minutes or until golden-brown. Turn and cook for a further 2-3 minutes or until done to your liking. Transfer to a plate or board to rest. Meanwhile, place cous cous in a large bowl. Pour over boiling water and allow to sit for two minutes. Fluff up cous cous with a fork, then stir through lemon juice and olive oil. Fold through almonds, parsley and mint. Spoon tabouli onto a serving plate. Top with lamb, scatter over pomegranate seeds, spoon around yoghurt and place in the middle of the table for guests to serve themselves.

village cookbook Poached chicken, fennel, radish, seeds and fig salad Serves 4 1 small fennel bulb, halved 1 lemon ½ bunch parsley 1L chicken stock 2 x 250g chicken breasts Large handful rocket 3 radishes, sliced as thinly as possible 3 figs, sliced into wedges (a handful of grapes works well as a substitute) 2 tbsp pine nuts, lightly toasted 2 tbsp pepitas 1 tsp chia seeds (optional) ¼ cup extra virgin olive oil 2 tbsp seeded mustard
Roughly chop half the fennel. Use a vegetable peeler to take off strips of lemon zest. Pick parsley leaves and retain stalks. Reserve parsley leaves, lemon juice and remaining fennel for salad. Combine roughly chopped fennel, lemon peel and parsley stalks in a large saucepan. Cover with stock. Bring to the boil, then add chicken. Return to the boil, then immediately reduce heat to a very gentle simmer, with just the odd bubble. If the water is simmering or boiling, the chicken can turn a bit tough. Cook for 15 minutes or until chicken is just cooked through. Remove from heat and allow chicken to stand in stock for 5 minutes. Remove chicken, shred meat and season with salt. Reserve stock for another dish. Slice remaining fennel half as thinly as possible. Roughly shred parsley leaves. Combine fennel and parsley in a large bowl with shredded chicken, rocket, figs, radish, pine nuts, pepitas and chia seeds. Whisk together lemon juice, olive oil, mustard and a pinch of salt in a small bowl. Toss through salad. Serve immediately.

Heat canola oil in a non-stick frying pan over high heat. Season pork, then add to the pan. Cook 2-3 minutes each side or until pork is golden-brown and just cooked through. Remove from pan and allow to rest while salad is prepared. Whisk together soy sauce, brown sugar, lemon juice, ginger and sesame oil in a small bowl. Combine wombok, carrot, snow peas, spring onions, mint, coriander, bean sprouts and peanuts in a large bowl. Toss through dressing. Slice pork thinly across the grain and serve with salad.

Beetroot, goat’s cheese and dill risotto Serves 4 4 beetroot 1L low-salt chicken or vegetable stock 1½ tbsp olive oil 1 brown onion, cut into small dice 4 cloves garlic, thinly sliced 1¼ cup arborio rice ¼ cup riesling or other dry white wine 6 sprigs thyme 80g goat’s cheese ¼ bunch dill, roughly chopped
Preheat oven to 200C. Individually wrap beetroot in foil, place on a tray and roast for
1 hour or until tender when pierced with a knife. Bring stock almost to the boil in a saucepan. Keep warm. Heat a large, heavy-bottomed pan with the olive oil. Add onion and garlic and cook gently, stirring occasionally with a wooden spoon until transparent. Add rice, increase heat, then add wine and thyme. Once wine is bubbling away add stock, a splash at a time, waiting for each addition of stock to be absorbed before adding the next. This process will take about 15 minutes. Stir occasionally. If you run out of stock and the rice needs a little more cooking, use a little hot water.

Artists and their audience connect at this annual exhibition.
Now in its third year, the 2014 Richard Cohen OAM Memorial Sculpture Competition at Burnside Village will be on display in the Fashion Mall in August. Finalists are chosen by a selection panel comprising sculpture artists, guests, gallery owners and directors of Burnside Village. The winner will be announced at the official opening, to which all are welcome to attend. Established in memory of Richard Cohen, the founder of the Village and an avid art collector, the competition aims to continue his passion by providing an opportunity for artists to display their work and in turn, gain exposure within the local community. The competition embraces a vibrant arts community, fostering creativity and talent. The competition complements the many artworks already in situ throughout the centre. These include bronze figures Frivole and Premiers Pas by Françoise Abraham, Vincent Magni’s David & Lola, and Super-Model-in-Blue by Stephen Glassborow as well as the iconic carved black granite fountains by South Australia’s Silvio Apponyi. With adult prize money of $12,500 the competition attracts artists from around the nation. A junior prize of $3000 is also on offer for students and the People’s Choice Award is valued at $2500.
