ooking back to when our boys were toddlers, Halloween stands out as one of those holidays that might have been more for me than for them. Yes, they liked getting the candy, but they didn’t have a clue why we were parading them house to house. As a young parent, Halloween was a chance to get them dressed up for cute photos and for fun they weren’t old enough to fully appreciate.

One of our young family’s very first Halloween activities was Haunted Happenings at Runge Nature Center. I remember being stunned at the number of parents, little ghosts, goblins and superheroes lined up to get in. It was worth the wait in line, and Runge events have been favorites for our family ever since. Check out Runge Manager Kathy Cavender in this issue’s Person You Should Know on Page 54.

The entire September/October issue is filled with great fall escapes. Pick a winery or a corn maze, or stick around town for one of several great events, such as the HarvestFest at the Governor’s Mansion on Oct. 15. n Page 59 of this issue, you’ll find this quote from Jefferson City’s very own Tom Henke, a retired professional baseball player: “I used to think God gave me the ability to throw a 100-mph ball just to play baseball, but I came to realize he gave me the gift so I’d have a platform to help.”

For the past 17 years, Tom has raised nearly three-quarters of a million dollars for the Special Learning Center.

Tom’s words really struck me to the core and inspired me to ask myself what gifts did God give me that could make a difference in someone else’s life. With the United Way kicking off its annual fund drive, this is a perfect time to ask yourself the same question.

In this issue, I was excited to write a story about the nurse navigator program at Capital Region because the position is funded by a group that I have raised money for, the Susan G. Komen for the Cure Mid-Missouri Chapter. You have probably heard of the wildly popular Komen Race for the Cure. This year’s race is Sept. 18 at the University of Missouri. Run, walk or even sleep-in for the cure (komenmidmissouri. org)! Seventy-five percent of the proceeds go to local programs such as the nurse navigator program and Capital Region’s Day of Relaxation and Rejuvenation (Oct. 29).

Whether a group of two or 22, I’ve always loved bringing people together. My first career with Hallmark emphasized the importance of occasions and how even an ordinary day can be special. For me, wine and food are at the center of making every day a special occasion. And now as the marketing director for the Missouri Wine and Grape Board, I enjoy sharing with others the wine culture, rich history and bright future of the Missouri wine industry (see my article on Page 20).

People always tell me that I must have the best job in the world, and they’re right; serving as the ambassador for the Missouri wine industry is a dream come true!

I’ve spent my entire life in Jefferson City, and I’ve always found it to be somewhat anticlimactic. The magic of Chris Parr’s photography is that he isn’t looking for the climax. He captures the soul of our town in microcosms: a set of windows, a faded sign. The detail in his photographs recalls the complexity of the ordinary moments that create our history. Speaking with Parr is a similar experience. His words give you a pearl, beautiful in its own right but also a testimony to the oyster and the ocean that created it.

Beautiful rolling hillsides, delicious award-winning wines and Midwest hospitality await you in Missouri wine country. Missouri’s rich history of grape growing and wine making dates back to the settlers. Throw in their German, Italian and French traditions along with Missouri’s rich soil, and the story of the Missouri wine legacy writes itself. We helped save the French wine industry when they were inundated with phyloxera, and then came the great U.S. industry destroyer, prohibition.

Alternative crops were planted, and the Missouri wine industry went dormant until the late 1960s when Stone Hill Winery and St. James Winery dug deep and championed the flourishing industry we have today. It hasn’t been an easy or graceful 40-plus years, but through it all the Missouri wine industry has mastered award-winning wines, driven tourism and led the regional wine culture. With 100 wineries, five wine trails and a $1.6 billion economic impact annually, Missouri wines are here to stay.

Whether it’s girlfriend getaways, family gatherings, celebrations or just an ordinary Tuesday, Missouri wineries have something to offer whenever you’re ready.

Spas, hiking, dining, a ranch or a cave can all be found in the Ste. Genevieve area.

Take the train to Hermann, stay in a bedand-breakfast, ride the trolley and take in the beautiful, historic German river town. Would you rather drive Highway 94 through the Country’s First Wine Country? Head to Augusta for stunning views, music and sunset dinners. Or go west to Kansas City, and see baby doll sheep working the vineyard, a winery in a church or the downtown urban scene.

Take a mini vino-cation close to the Capitol City. Summit Lake and Native Stone are the closest for quick getaways with delicious food, great wines and relaxing vistas. Travel east to Bland, and visit Wenwood Farm Winery, where you’ll find a renovated Dairy Barn, lots of outdoor seating and Missouri’s only organic wine offering, Simply Chambourcin. Westphalia Inn, restaurant and tasting room, is in the heart of Westphalia. It offers sulfite-free wine and raises Kobe beef nearby.

Up the river to the north in Rocheport is Les Bourgeois Vineyards. Visit one of its three locations on the property: the A-Frame, bistro or newly expanded winery facility/tasting room. Stop in and ask Marilyn for a tour. Cooper’s Oak Winery has two locations: Boonville and the original in Higbee. Its wine My Sweet Deer is perfect for the hunter in your life, complete with a bright orange wine label. If a trip south is more in mind, stop at St. James Winery for a one-of-a-kind tasting experience. Also in the area are Meramec Vineyards and Three Squirrels Winery.

Wine Trail events are a great way to have someone else plan the fun for you.

Jefferson City is part of the Missouri River Wine Trail, with the Hermann Wine Trail and the Missouri Weinstrasse Trail nearby. The Route Du Vin is located in the Ste. Genevieve area, and the Ozark Mountain Wine Trail is down south. Many of the wine trail events offer food and wine pairings, wine education and adventure. Fall’s harvest is a great reminder to enjoy eating local. The bounty of fresh foods and locally grown products we enjoy in mid-Missouri should be complemented by our delicious Missouri wines. Fresh baked apple pie and a glass of Vignoles, lamb and Norton, pork tenderloin and Traminette or squash soup with Chardonel are perfect pairings to enjoy the season while sipping locally. With growing awareness of where our food comes from and encouragement to enjoy fresh foods at the peak of their season, it’s important to take the locavore practice to your glass. And with holiday entertaining and gift giving around the corner, Missouri wines make great gifts.

In addition to the 16-acre maze, Shryocks offers hayrides, campfires and pumpkins, plus a unique attraction: a three-story gumball roller coaster. Planned for this year is a new Rubber Duck Race area.

In 2010, Shryocks had more than 17,000 visitors.

It is sectioned into four separate trails so trekkers can take a shortcut if desired. This year’s maze brings a salute to the Missouri Comets Soccer Team. Additional smaller mazes include a soybean maze, rope maze and rock maze. New this year is a game called “Farm Scene Investigation.”

There were more than 30,000 visitors to Liberty Corn Maze in 2010.

Campbell’s Maze Daze

The larger maze features a game of riddles to solve if you visit during the day. At night, it is transformed into a “haunted” field. Campbell’s also offers hayrides, pumpkin and face painting, bounce house and tractor trikes. Custom-Made in the Country

M

ary Pringer enjoys looking through house plan books, but when it came time to choose a plan for her and husband Dale’s new country home, she couldn’t find one she liked. Features she wanted were found mostly in larger home plans, and because the Pringers were downsizing, her search was frustrating.

“I came across many of the same features in most plans,” she says. “I knew what I wanted. I just couldn’t find it.”

Armed with the knowledge of Pringer’s vision, her brother John Grieshammer drew up her custom home plans. Dale tweaked the plans just a bit, and Scruggs Lumber Company made the blueprints for the Pringers’ use.

The 2,400-square-foot, three-bedroom home is a conglomeration of Mary’s and Dale’s custom wants and what they found in other plans that suited their style and needs. “I liked the outside of three houses,” Mary says. “I pieced together what I liked about each of them.”

A multi-colored brick exterior, gables and a large covered porch welcome visitors to the Pringers’ farm. When Mary and Dale lived on the outskirts of Jefferson City while raising their three children, their house didn’t have a porch, so a porch on their country home was a must. The covered front porch ends in a gazebo, a favorite feature of Mary’s. From there she can see the lake in the back of the house and watch her grandkids swim.

“We also added a large back porch where Dale can look out over the fields at his cows,” Mary says.

In addition to the porches, Mary and Dale wanted a nice-sized kitchen with a large pantry, a larger master bedroom and bathroom than most of the smaller house plans called for, a formal dining room and hardwood floors and tile throughout the house (no carpeting) to combat Dale’s allergies.

Moving back to the country was a coming home of sorts for Dale, who raised cows for years while growing up.

“I like having lots of room,” he says.

The Pringers incorporated the theme of wide-open spaces into their house design as well.

“I remember many mornings over the years getting ready for work and bumping into each other,” Mary says with a laugh. Now, their bedroom and bathroom provide ample room for getting ready in comfort.

The master suite is a haven with wellloved personal pieces working together to enhance the homey feel of the spacious area. The air-jetted tub in the master bath uses air bubbles to produce an overall calming effect. Behind the tub is a 4-foot-by-8-foot walk-in shower.

Two walk-in closets and a laundry room complete the master suite.

Also spacious is the kitchen area, decoratively inspired by a mosaic piece Mary found while on vacation in Barcelona. “I had pictured something entirely different for the kitchen but fell in love with this piece,” she says. “It was lighthearted, whimsical.”

Dark cherry cabinetry and yellows and browns were used in designing the kitchen, along with accent colors and patterns found in the mosaic.

Two bedrooms, a bath and a small sitting area comprise the upper lever of the home.

The great room features 18-foot ceilings, a three-panel Tuscany mural, tapestries and artwork from artist and personal friend Greg Olsen. When it comes to decorating her traditional country home, Mary says, “I just use what I like.” n Jefferson City Magazine | 39

The Cooks'’ Bathroom Remodel More space, more shower, more modern

ack in the early 1990s when Cindy and Max Cook built their home, oak was big, but bathrooms were not. So when they decided to tackle their master bath — for the second time since building the house — they completely gutted the space. Out went the old-fashioned oak, the burgundy and hunter green, the seldom-used Jacuzzi tub and the small shower to make way for modern amenities more suited to the Cooks’ lifestyle.

What they initially wanted, Cindy Cook says, was an updated tile floor, granite and a huge, really nice shower. The final product gave them that and much more, including much needed storage space, a linen closet and other eye-catching details.

“We wanted to make it feel bigger and give it an open, airy spa feeling,” says interior designer Theresa Heckman of Theresa Heckman Interior Designs. “We personalized every inch according to what was important to them.”

For the Cooks, that meant forgoing a tub to make room for a large 5.5-foot-deep shower, made to feel even more spacious by the room’s 9-foot ceilings. After living with a small shower for so many years, the Cooks’ new shower, which includes a seat, a fixed showerhead and a showerhead on a slide bar, is a highlight of the room. New oil-rubbed bronze plumbing fixtures are a welcome departure from the brass that was predominant in the old space, and the intricate tile work really makes an impact.

With Heckman’s help, the Cooks chose a neutral warm-toned porcelain tile for the floor and shower walls.

At eye level, an accent row of shiny glass tiles and black honed marble is separated from the brick pattern wall tiles with bullnose made from natural stone. The same glass and marble tiles also accent the cubbies cut out of the wall to hold soap and shampoo bottles. Natural stone tiles in a lighter color were chosen for the shower floor.

“The cool thing is you can be more creative,” Cook says of the trendy larger showers. “All these showers are so pretty now with all the decorative tile. Steve from Scruggs spent hours and hours laying the tile in the shower.”

Floor-to-ceiling Merillat cabinets in a warm off-white accented with a brown glaze line one wall with storage space. In the middle of the wall of cabinets, glass doors break up the monotony and add visual appeal. Crown molding around the entire room and big mirrors with recessed lighting give the space an airy feel and timeless appeal.

The Cooks also seized the opportunity to make the space practical for both Cindy and Max. To personalize their individual spaces, they chose different heights for each sink and also created a space where Cindy could sit down to apply makeup. Kristin Schroeder from LaBelle Cabinetry and Lighting was also able to figure out how to encase a small television in a tower of drawers, and she also added other storage features such as a vanity pullout that efficiently stores a curling iron and hair dryer. Giallo Fiorito granite was specially chosen to add interest and warmth to the space.

After 20 years, the new, modern bathroom is a welcome change.

“Anyone who has lived in their home for 20 years knows there is a difference in the way homes were built,” Cook says. “Bathrooms back then weren’t very big.” n Opposite page: The Cooks' remodeling effort transformed their bathroom from a space dominated by old-fashioned oak to a new, more modern, open and airy spa environment. Corporate culture is to business as chemistry is to dating: a crucial but amorphous element for success. The good news is that though good chemistry is usually either there or not, an effective corporate culture can be developed if leaders are willing to strategize and work for it.

Q. How would you define corporate culture?

A. I’d define corporate culture as business principles that are preached by the executives; the standards that tell us what is ethically acceptable and what is not; the work practices and behaviors that define how we do things around here; and the overall values, business practices, traditions, work climate and personality of the entire organization.

Q. What are the benefits, both internal and external, of a healthy corporate culture?

A. The greatest benefit … is that it can help a company execute its strategy, which results in better earnings and higher returns for the shareholders. Internal benefits include higher productivity and morale, lower stress and happy employees; reputation, image and the ability to attract talented new employees can be considered external benefits.

Q. What role do mission, philosophy, values and codes of ethics have in developing a corporate culture?

A. First, a company that works hard at putting its stated core values and ethical principles into practice creates a work climate where company employees share strongly held convictions about how the company’s business is to be conducted.

Second, the stated values and code of ethics provide company personnel with guidance about the manner in which they are supposed to do their jobs, which behaviors and ways of doing things are approved (and expected) and which are out of bounds.

Q. What do managers need to consider when deciding what kind of corporate culture they want to develop?

A. This depends on the company mission and goals. Determine your core competencies and what you do best, and then build a strong culture around those competencies. A manager in a service industry might want to develop a culture built around such business principles as pleasing customers, operating excellence and employee empowerment. A manager in the high-tech industry where product innovation is a high priority might want to see a culture that includes taking initiative, challenging the status quo, showing creativity, embracing change and working collaboratively. I think it depends on the type of industry you’re talking about.

Q. What are some specific steps managers can take to develop, communicate and implement the desired culture?

A. Changing a problem culture is among the toughest management tasks because bad habits and behaviors become ingrained when they are tolerated (or encouraged) over a long period of time. The first step in fixing a problem culture is for top management to identify those areas of the present culture that are dysfunctional and preventing the company from meeting its performance targets.

Second, managers have to clearly define the desired new behaviors and features of the culture they want to create. Third, managers have to convince company employees why the present culture is creating problems and why and how new behaviors and new approaches will improve company performance and benefit every employee. In other words, the case for cultural reform has to be persuasive.

Finally, and most importantly, all the talk about remodeling the present culture has to be followed swiftly by visible, forceful actions to promote the desired new behaviors and work practices.

An example of a specific business practice arising from the company’s core values is the diversity in the range of services it offers, from traditional audit, accounting and tax services to estate planning and cost segregation studies.

“We ensure our professionals receive the specialized training and access to resources they need in order to provide full service to our clients,” Sheehan says.

Mission: Have Fun, Help People, Make a Profit!

Huber & Associates is an IT solutions company that primarily focuses on implementing and supporting smarter IT solutions for its clients. In March, Huber & Associates created the Transformation Team tasked with improving internal communication of the company culture. Huber & Associates is also expanding its marketing campaign, now centered on the slogan “Extreme, Always On Customer Service” to include a message highlighting the company’s personalized, caring service approach.

“We really have a company culture that says when you are a client of Huber & Associates, you’re family,” says Ken Enloe, director of marketing and business development. “As we bring a new client in, it’s our intent and philosophy to support that client for the long term.”

That notion of clients as family is communicated to all employees.

“In talking with prospective employees and in orientation, we communicate that we have a high level of expectation for taking care of our clients,” Enloe says.

The culture of family also directs relations within the company.

Huber and her husband and company founder, Jim Huber, “have demonstrated over and over again that they view the employees of Huber & Associates as their extended family. That fosters that family atmosphere that spills over to our clients.”

That is just the short mission statement. The full statement adds that GFI Digital provides “network solutions, office products, related supplies and technical support through a professionally managed service and distribution network” and that GFI Digital “will maintain an environment that supports and encourages employees to enhance their professional competencies through internal and external development programs, provides opportunities for career growth based on performance capabilities and offers highly competitive compensation rewards.” The mission statement ends with the declaration, “In all instances, the highest level of integrity is to be maintained with customers, suppliers and employees.”

GFI Digital also has a formal statement of values, which proclaims, in part, that it is “an organization built on values, knowledge, integrity, customer service and accountability,” and a formal philosophy, declaring the company strives for “a high performance work environment through the active involvement of all employees” and “open and candid communications, friendly and productive work relationships, opportunities for development and fair treatment for everyone.”

Corey Backues, director of sales at GFI Digital’s Jefferson City office, offers several practical examples of those statements at work. Just this year, a company-wide competition was launched to give employees the chance to earn points for providing excellent customer service; the more points earned, the better the employee’s chance of winning a drawing for a 2011 Harley Davidson.

Other incentives, such as recognitions and travel rewards for meeting quotas, leave no dependence on luck, just solid performance.

“You do a good job here, and you may get a real nice raise or bonus,” Backues says. “That’s pretty common. Good performance doesn’t go unrecognized here.”

As for how the culture affects clients, Backues explains how employees feel free to go for the “wow” factor. Say, for example, a tech is helping a client with a difficult issue, and it’s not resolved by 5 p.m.

“The tech has authority to stay late and finish the job without approval for overtime,” Backues says. “Any employee can do what is needed to take care of the customer without seeking prior approval.” n

eing known as a bag lady has historically carried a negative connotation, but for approximately 600 mid-Missouri women, that is no longer true. And it’s all thanks to Tina Marie Cole, the original bag lady.

“When I was waitressing, I did purse parties on the side to make a little extra money,” Cole says. “And when I no longer did them, women would see me out and about and say: ‘Hey, aren’t you the bag lady? You still sell bags?’ And The Bag Lady Exchange grew from that obvious need.”

The Bag Lady Exchange opened in September 2009 at a small downtown location and carried just bags and accessories. “But my customers asked if I could carry additional items — clothes, shoes, jewelry — so I tried it, and, it’s worked well,” she says.

The store’s concept is “fashion recycling,” Cole explains. It consists of new and new-to-you items for sale. “Ninety percent of our inventory is pre-owned,” she adds.

Customers don’t have to become a bag lady to shop at the eclectic, one-of-a-kind boutique, but after becoming one (sign up through the store’s website), customers can bring in items to exchange (must be cute and in great condition) for store credit. “All bag ladies also receive 10 percent off full-price purchases,” Cole says.

When Cole opened the new Wright Plaza location in July 2010, her vision of an ample space where she could meet her customers’ needs, help women feel good about themselves and give back to the community was realized. Cole greets every customer as a friend, strives to make shopping at the boutique a fun experience and believes in providing personalized service. “Everyone should feel special and beautiful,” she says.

Not only is her business built on fashion recycling, but also if the items exchanged do not sell within 90 days, they are donated to local charities such as Dreams to Reality and the Samaritan Center.

Walking into The Bag Lady Exchange isn’t like any other shopping experience. The space is fabulous: stylish and welcoming with purpled-hued walls, artistically displayed items, wood flooring and creative and funky decorations. With a diverse clientele, Cole is living her dream. “I love what I do and the people I help,” she says.

The last thing I expected when I started this job was to write grants, but I have done so on several occasions that led to more opportunities to share nature with children. I never thought I would love getting up and presenting programs in front of groups at work, but I do.

I have a creative side to me that most people don’t know about: I like to carve gourds, work with wood and sketch. My favorite website is NPR. My favorite movie is Winnie the Pooh. Tom Henke Baseball Hall of Famer and Special Learning Center MVP

“Over the years we’ve raised nearly three quarters of a million dollars for the Special Learning Center,” Tom Henke says of the annual Tom Henke Charity Classic Golf Tournament.

This year marks the 17th annual golf tournament hosted by the Jefferson City Cosmopolitan Club, with proceeds going to the Special Learning Center in Jefferson City, as well as local, state and national diabetes research and education.

Henke, a retired professional baseball player, received many career accolades during his 14-year pitching career and has much that he can be proud of; this past June he was inducted into the Canadian Baseball Hall of Fame in St. Marys, Ontario. Henke spent eight seasons

playing for the Toronto Blue Jays and helped bring home Canada’s first World Series title in 1992.

“It was very humbling,” Henke says of the induction. “It’s a tremendous honor.”

Henke always enjoys visiting Canada, but having his family and coaches share in the honor with him at the induction banquet was an “unbelievable experience.”

However, what is evident within minutes of talking with Henke is that, in addition to baseball, his passions include his charity work.

“We’re trying to remove the stigma that disabled people have no place in society,” Henke says of his involvement with the Special Learning Center as well as Special Olympics and other charities for those with special needs. “These kids, these people, are a valuable asset to every life.”

In working toward that goal, Henke has sat on the board of directors for the Missouri Department of Mental Health, has played in various tournaments other than his own and has participated in many walkathons, to name just a few ways he’s involved.

“The golf classic keeps me in touch with guys I probably wouldn’t see much of,” Henke says. He likes to have every sport represented at his tournament and also includes local celebrities. Past participants include Whitey Herzog, Ozzie Smith, John Costello, Bernie Ferderko (NHL), Art Still (NFL) and local coaching legend Pete Adkins.

“Keep in mind these people are not paid,” Henke says. “They come out of the goodness of their hearts. I don’t think they’d do it if they didn’t believe in what we’re doing at the Special Learning Center.”

The Special Learning Center provides a variety of services and educational opportunities for children with developmental delays and disabilities.

“Tom’s been very instrumental in the growth and development of the Special Learning Center,” says Debbie Hamler, SLC director. “The funds his tournament has generated have helped us add a new wing to our facility and assists with dayto-day operations. We’re very appreciative of all that he and his family do for the Special Learning Center.”

The golf classic consists of an evening banquet with live and silent auctions.

“Half of the profits from the tournament come from the banquet and auctions,” Henke says. Banquet tickets cost $35 each, and more than half of the celebrities playing in the tournament attend the dinner and sign autographs and take photos with fans.

“I used to think God gave me the ability to throw a 100-mph ball just to play baseball, but I came to realize he gave me the gift so I’d have a platform to help,” Henke says. n For banquet ticket information, contact Mike Evans at (573) 659-9703. Pink Ribbon Golf Tournament

By Molly Wright For Ruth Markway, an avid golfer for 25 years and member of the Pink Ribbon Golf Tournament committee, this event is equally important. After 25 years as a hairdresser, currently with Marshall and Company, Markway understands how essential a flattering haircut can be after chemotherapy or a shampoo when you can’t lift your arms after surgery.

Markway also recognizes the value of listening. “I hear what their husbands and their families don’t hear,” she says. “The whole journey: the crying at the beginning and the celebration at the end when their hair comes back.”

Both Gratz and Markway will play in the Pink Ribbon Golf Tournament this fall. For Gratz, who lost a father-in-law and daughter-in-law to cancer, the tournament provides hope.

“Faith, family and friends is what gets you through,” she says.

For Markway, teeing off with her team in October not only gives her a chance to honor her clients but also her mother, who died of uterine cancer four years ago.

Crane invites all women to participate, golfers and non-golfers alike. Panera will again supply their special pink-ribbon-shaped bagels, and Redfield Golf and Country Club is providing lunch.

he American Cancer Society in Jefferson City kicks off Breast Cancer Awareness Month with the eighth annual Pink Ribbon Golf Tournament on Oct. 3 in Eugene, Mo. According to D’Arcy Crane, community manager for ACS, the 18-hole, four-woman scramble, complete with fabulous food, door prizes and special games, is an area favorite.

For the participants who have experienced cancer first hand, this event truly touches their hearts. Nancy Gratz, senior vice president, commercial lending officer and real estate loan officer for Providence Bank, has played golf for 15 years.

However, she particularly enjoys events that support breast cancer research and remind women to be vigilant about breast health. In 2001, Gratz almost cancelled her yearly mammogram because of her busy schedule. But something told her the small lump discovered during a self exam needed to be checked. The visit confirmed her worst fears, and she underwent a bilateral mastectomy. When cancer was detected again in 2011, she went through a second surgery.

Gratz says she feels early detection in both cases was the key to her survival.

“Because I have gone through cancer twice in my life, I really believe in early detection, having mammograms, ultrasounds and taking care of your own health,” she says. “We get so involved in other things, we don’t listen to the signals telling us to take care of ourselves. Without our health we can‘t do our jobs and help our families.”

Holiday Meal Solutions Rosemary and Thyme Encrusted Pork Tenderloin with Butternut Squash, Apples and Asparagus 1 1 1 1

pound 8 ounce pork loin pound butternut squash (cut and cubed) pound fiji apples (cut and cubed) tablespoon dried thyme or 2 tablespoons minced fresh thyme leaves 1 tablespoon dried or 2 tablespoons minced fresh rosemary 4 ounces asparagus 1 tablespoon butter 1 tablespoon olive oil salt and pepper to taste 1. Cut rosemary and thyme into small pieces and rub on the pork loin along with a pinch of salt and pepper.

2. In a hot skillet, add olive oil and sear on each side (to keep the juices inside).

3. After the meat has been browned, add cubed butternut squash and apples. Drizzle lightly with olive oil and add a pinch of salt and pepper.

4. Place pork loin on top of squash and apple mixture, cover with foil and bake at 300 degrees for 45 minutes (internal temperature should be 160 degrees).

Featured Dessert: Tuxedo Truffle Square topped with Smuckers Caramel and Chocolate, plus fresh mint

In a saucepan, bring 2 cups of water to a boil. Once boiling, add a pinch of salt and the asparagus. Let cook for two minutes and remove from boiling water. Place in ice cold water (to stop them from cooking). Remove pork from oven and let sit for 3 minutes so juices can redistribute throughout the meat, then cut into slices, 1/4 inches thick. Remove asparagus from water and finish cooking by sauteing on medium until hot (about 1-2 minutes) with butter, salt and pepper.

Place a scoop of squash/apple mixture on plate with pork slices on top and asparagus on the side. Garnish with a fresh stem of rosemary. *Pair with St. James 2009 Dry Red Cynthiana or Hermanhoff 2009 Vignoles Compliments of Chef Gerardo Hernandez at Jefferson City Hy-Vee.

olumbia welcomed a new restaurant in late summer, but it’s not your typical dining experience. Once you sit down, you’re headed out of town. The Columbia Star Dinner Train combines cuisine and the rails for an experience that goes beyond a good meal.

Pulled by a 1950s streamlined passenger locomotive, the dinner train offers gourmet dining aboard vintage 1930s and 40s passenger cars. The trip takes two and a half to three hours and carries passengers from Columbia to Centralia and back.

Reservations must be made in advance. Although the train features a full kitchen, the close quarters limit storage space. Meal quantities must be known prior to pulling out of the station to stock only what is needed for each run.

Located off Route B on Brown Station Road, the Columbia Star Dinner Train boards at an inauspicious location amidst some of Columbia’s industrial partners. At boarding time, blue and gold ribbons between stanchions seem a bit out of place in the gravel parking lot as the train staff greets and guides guests up the steps into the train. The gleaming locomotive, however, can’t help but stir nostalgia and excitement as ticket holders line up.

With a hand to steady the ladies and gents boarding the train, the staff’s personal welcome is a warm first impression and a precursor to what will come.

Throughout the ride, the staff is friendly and attentive to ensure a pleasant, memorable trip. And as soon as you step into the train car, the industrial, utilitarian environment outside the train falls away.

Jazz plays in the background, rich, padded velvet panels accent gleaming wood trim on the walls, and white tablecloths cover the tables that fill each dining car. The train features four cars to seat diners (accommodating up to 224). Two dining cars flank the kitchen car in the middle, so staff can serve from either side of the kitchen. Once in motion, servers work with orchestrated grace to deliver drinks and food; they’ve been trained for train-legs to accommodate the rocking motion.

Chef Scott Hampton brings culinary experience from Columbia’s Upper Crust and The University Club on board. He leads his team in preparing a four-course meal for each guests that features an appetizer, house salad, entrée and dessert. At the time of reservation, guests choose from chicken, salmon, prime rib or a vegetarian plate. Menu selections will vary based on season.

The Columbia Star Dinner Train is co-owned and operated by Greg Webber and Mark Vaughn. Webber serves as general manager, and you may find Vaughn behind the wheel as one of the train’s engineers. Webber says that in the 1990s, approximately 100 dinner trains ran in the U. S. Today, only 30 or 40 are left, and Webber believes only two or three offer full onboard kitchens such as the Columbia train. Most dinner trains have closed because they lost the tracks they ran on, according to Webber. The Columbia Star Dinner Train’s track is owned by the city of Columbia, a rare and perfect find, Webber says. During the day, the rails are used to transport freight, but at night, they are free for the dinner train to treat guests.

Running between Columbia and Centralia, the dinner train offers a relaxing view of Missouri countryside as it slips past a few backyards and into more field and wood-lined settings. As the sun sets, the Missouri sky delivers a romantic vista. Watch for deer, fox and other wildlife on the journey. This fall, the ride should reveal some spectacular foliage scenes as well.

The Columbia Star Dinner Train is perfect for a fine-dining night on the town and special occasions such as birthdays or anniversaries. Individual cars or the entire train may be rented for private affairs, from wedding rehearsal dinners to company Christmas parties. n Columbia Star Dinner Train

f a photograph is a tribute to a moment, for Chris Parr, shooting the photograph is a tribute to a memory — of his older brother, Russ.

“In 2001, (Russ) passed away from leukemia, and his gift to me in his will was his camera rig, which was two Minolta bodies and an assortment of lenses,” Parr says.

Russ had been an avid amateur photographer, specializing in nature scenes and portraits of his family. Both brothers had come to understand the allure of photography at a young age. Quality cameras and shutterbug parents are constants in Parr’s memories from childhood. Unlike Russ, though, Parr let his interest go dormant after his teen years until Russ’ death and the gift of his cameras teased out Parr’s inner photographer.

Starting with his brother’s film-based Minoltas and moving several years later to digital Sony cameras, Parr began to explore the world through the viewfinder.

“I really like urban decay and I guess rural decay as well,” Parr says. “I like old buildings no matter where they are, but I think that the urban stuff really lends itself better to photography. I love that sort of thing. Kind of Americana, older signs, even graffiti can be really cool.”

You learn to see what makes a good photograph, Parr explains, to identify with a primitive eye the voice of each moment and scene. And then you hone the craft, learn the settings on the camera and use light and angles to reproduce the image.

Parr’s sensibility spoke to Jami Wade when she first saw his work. Owner of Capital City CORK, a wine bar on High Street, she was looking for artwork to display in the restaurant when Parr and his wife, Katy, became patrons of the business. “[His work] just was perfect for that space because it really had a narrative,” Wade says.

Like the building where she established CORK, Parr’s cityscapes told the story of Jefferson City.

The show at CORK, which ended in August, was Parr’s first solo show, but his photography has been on display in other places around Jefferson City. A recent show at Capital Arts on Missouri Boulevard included photographs he shot for a contest that was part of the 175th anniversary celebration of the Missouri State Penitentiary. One is a close-up of a big lock used to lock an entire block of cells. Another focuses on two signs that say, “If you don’t have a pass, don’t be here,” and, “Out of bounds.”

“It’s got a really kind of sparse and creepy feel to it,” Parr says.

He currently has a piece hanging in the Cole County Courthouse that has proven to be popular with local audiences. Titled Alley Doors, it simply shows a set of old doors in the alley behind Arris’ Pizza.

For Parr, the magic of each photograph begins with its inception but is not complete until seen by each individual viewer. He laughs because despite selling multiple prints of Alley Doors, it has never been one of his personal favorites. You can’t always know how an audience will react to any piece of art, Parr says, whether it is a painting or dance or a photograph.

Taken as part of Parr’s body of work, however, Alley Doors is, similar to his other photographs, an overture of Parr’s life. Photography is the art that speckled his childhood, moved him through grief and eventually shaped the adult he is today. n

Teal season in Missouri runs from Sept. 10 to Sept. 25, 2011. It’s like the precursor for the big duck hunt. A teal hunt usually takes less gear because of the warmer weather, so it’s a great way for newcomers to get their feet wet with little investment prior to the big duck hunt later in the fall.

Check with the Missouri Department of Conservation for fall hunting season dates for ducks and geese to be announced in September. Last year, youth duck season was held at the end of October, followed by regular season in early November (so prime your kid or borrow someone else’s if you want to get out there early). mdc.mo.gov/hunting-trapping/birds/waterfowl

Whether you’re in your teens or in retirement, this trend is not just for Hollywood anymore.

At the beginning of the 20th century, Hollywood film stars wore false lashes to stand out in the crowd. Legend has it movie director D.W. Griffith designed the first pair back in 1916. He wanted his leading lady to have lashes so long that they graced her cheeks. The movie flopped, but the eyelashes were a hit.

Many associate false eyelashes with Elizabeth Taylor, Twiggy and Tami Faye Baker. Some did it right — some didn’t.

False eyelashes, also known as eyelash extensions, add length and create a fuller, longer look. They’ve been referred to as “the Wonderbra of eye makeup.” Lashes come individually or in strips, glue or self-adhesive, black, brown, short or long.

Nurse Navigator, Goldschmidt Cancer Center A new offensive player takes the field against breast cancer

n the crisp autumn air, under the bright stadium lights, the roar of the crowd cheers on the team. The coaches call the play, and the team moves the ball down the field to victory.

Fall football is a staple of the season, but October also brings us another important tradition: remembering Breast Cancer Awareness Month. Similar to the players’ and coaches’ synchronized effort, such is the teamwork at the Goldschmidt Cancer Center in Jefferson City. The oncologists and radiologists are the coaches, and the players include a nutritionist, social worker, psychologist and psychiatrist.

This year, the Goldschmidt Cancer team has recruited a new weapon for the offense: a quarterback who can take the latest play and pass off the patients to the most effective team member to move down the field to a victory over breast cancer.

“Quarterback” Rosie Honse is not new to Capital Region.

She’s worked there for 14 years, most recently as an infusion nurse overseeing chemotherapy. But she moves into her new position this fall as the hospital’s first nurse navigator.

Ellis Fischel Cancer Center in Columbia and St. Mary's Health Center also employ nurse navigators. The new position for Honse was made possible by a $77,508 grant from the Susan G. Komen for the Cure Mid-Missouri Chapter.

“I know my way around; I know the people,” Honse says.

As nurse navigator, she stays beside patients throughout their journey, from the first meeting with their doctor through their treatment and follow-up. Because people newly diagnosed with breast or any type of cancer have plenty of questions racing through their minds, Honse will be their advocate at appointments.

“I’ll be their brain, like a GPS,” she says. Her guidance may include conferencing with physicians and coordinating a referral to an exercise program for wellness, a visit with a psychologist to treat depression or finding transportation to appointments.

“My goal is to find out what’s in their head, mentally and emotionally,” Honse says.

During her first week on the job, Honse was paired with Debbie Forrest, a breast cancer treatment veteran, first diagnosed in 2009. This year an MRI showed a recurrence of Forrest’s cancer. After a double mastectomy at the end of

June, she’s preparing for chemotherapy and future reconstructive surgery. Right now that means one to two trips a week from her home at the Lake of the Ozarks to her appointments in her hometown of Jefferson City.

When Forrest received some unsettling news from one of her tests, Honse was there to offer the latest information and to arrange a same-day biopsy so Forrest did not have to return the next day for the test.

“I have a lot of support,” says Forrest of her husband and family. “But Rosie will be a great asset to people who don’t have what I have, if I was there by myself.”

Oncologist Dr. Raonak Ekram says a daily challenge is convincing women that breast cancer is a treatable, survivable disease.

“There’s such a stigma associated with the word cancer,” Ekram says. “Their perception is that of imminent death.” But Ekram knows that catching breast cancer early dramatically increases a woman’s chances of survival. She sees several women with a new diagnosis every day and says once women are convinced there will be a future beyond their cancer treatment, the other members of the team can do their work. Ekram works closely with Honse, who will guide a patient to a specialist to deal with anxiety issues, depression, hair loss and even long-term follow-up.

“Rosie will be calling and making sure the six-month and yearly mammograms are done and watching for other long-term side effects associated with the cancer treatment,” Ekram says.

With so many specialists on each case, a nurse navigator helps patients at Goldschmidt through the blocks and to the goal of successful treatment. And Honse has the passion to star in her new role as a nurse navigator.

“I will tell women, ‘I’m so sorry you are here, but I am glad I am here for you,’” Honse says. “I hate that they are hurting, I hate that they are anxious, and I will help them in anyway I can.” n

Ghost Stories at the State Pen

T

he Missouri State Penitentiary, 100 years older than Alcatraz, housed thousands of men and a few women throughout its 168 years of operation. The penitentiary was a “city-within-a-city,” where offenders did everything from basic day-to-day activities such as cleaning cells to landscaping the grounds, working in various factories, visiting the doctor and performing surgeries. As every city does, the prison witnessed its share of death.

Many ask, “Could some of those souls still be walking the halls at MSP?” Just a few weeks ago, a visitor walked into A-Hall, looked around and quickly exited the building with her husband following behind. When our tour assistant asked if she was OK, she explained that she had seen a man on the second floor staring down at her and described the man in detail. Her husband dismissed her story and went back inside to rejoin the tour. A few minutes later, he heard the tour guide explain the gruesome details of one of the worst murders that had ever taken place at MSP, a murder that had occurred just outside the exact cell on the second floor where the woman spotted the man.

The woman’s husband said his jaw dropped to the floor when he realized there was no possible way his wife could have known about the story because this was their first visit to the prison.

In addition to the apparition in A-Hall, a number of visitors describe a man walking quickly down the hall that once led to the prison hospital. The man, dressed in a white lab jacket and carrying a clipboard, appears to be heading toward one of the housing units.

When the story was relayed to past MSP employees, they immediately knew whom the visitors were talking about. It was ‘Fast Jack,’ the man responsible for ushering patients from their cells to the infirmary.

Because of recent stories in the Los Angeles Times, the Chicago Sun-Times and many local and regional papers, people from all over the country made Jefferson City and the Missouri State Penitentiary one of their vacation stops this summer. In fact, one recent visitor of the prison was from New Zealand. No matter where our guests come from, with each visit they are putting money into our economy by staying at our hotels, eating at our restaurants and shopping in our stores. This year we have seen a substantial increase from the previous year, an increase that both excites us about the popularity of MSP as well as inspires us to continue sharing this incredible treasure with the public.
