Five active volcanos make for some seething underground energy. In between Arenal National Park and the Arenal Volcano are mineral springs bubbling in the rainforest preserve. Mineralized and heated by the subterranean magma, the hot springs offer an ecological brilliance and a nourishing soak.

Shallow sandbars, jeweltoned waters and a smooth stingray gliding past you. Welcome to Stingray City, an interactive, untamed water park for visitors and home to the southern stingray, some with wingspans stretching over 6.5 feet. This may be a tourist attraction, but we like to think of it as a stingray retreat.

Take an unforgettable dip in swimming pools only nature could create. Made of limestone, the water that fills them is rich with healthy nutrients. Also filled with marine fossils, stalactites and stalagmites, and surrounded by organic vegetation. The cenotes are considered sacred and are even blessed by Mayan priests.

Each night, the glow-in-the-dark phenomenon becomes a place out of this world, so much so that it’s been likened to moving stars. Microorganisms thrive where the freshwater meets sea water, and light up when they are touched. Playful splashing becomes sparkles, and quiet viewing sometimes conjures the outline of a fish.

Waikiki’s Way BY BROOKE NA SSER

Three hundred years ago, Waikiki was a marshy plain where Native Hawaiians cultivated taro, fished for manini and moi, and surfed on mile-long cerulean waves. This famous beachfront still provides fish and surf, but it has bloomed into an international shopping destination on par with Bond Street, Fifth Avenue and Rodeo Drive—offering couture for every fashion persuasion, from young hipster stylings to the ultra -kitsch. In the 1980s, the city invested in a revitalization project led by former Mayor Jeremy Harris. The concept: Make the experience of

walking along Kalakaua Avenue feel like being in a beautiful park rather than an urban metropolis. The project was a resounding success. Rows of shops give way to swaying palms and shimmering ponds along a one-mile stretch of pristine white-sand beach. Central to the stunning natural beauty is the Waikiki Historic Trail that stretches the length of Waikiki. Designed by Native Hawaiian historian George Kanahele, visitors are greeted by 6-foot-tall bronze surfboard-shaped placards, describing everything from information about Waikiki’s 19th century Chinese-owned

duck farms to the names of local surf breaks. Waikiki has been an ocean-lover's dream since Hawaiians invented surfing, riding oval planks of thick koa wood down the steep faces of white-crested ocean waves. From Kaimana Beach near the Natatorium War Memorial on the east side of Waikiki all the way to Gray’s Beach at Fort DeRussy, visitors can rent surfboards, bodyboards or stand-up paddleboards from oceanside stands and take lessons from the pros. Connor Kennedy is a surf instructor at Hans Hedemann Surf School, which operates out of the Park Shore Hotel,

a site very close to where Queen Liliuokalani, the last queen of Hawaii, once lived and, yes, surfed. He represents the next generation of the Waikiki beach boy, one of the traditions for which Hawaii is famous. “People come to Hawaii, and they want to learn to surf,” Kennedy explains. “I think it’s great that we’re teaching people how to surf where surfing was invented.” As with retail shops, there are now an array of hotels, resorts and lodging houses in Waikiki, offering everything from traditional Hawaiian charm to modern exclusivity.

Ho’okipa, or the giving of a warm welcome and complete hospitality, is a fundamental value in Hawaiian culture. Before the first transoceanic airplane landed on Oahu, jumpstarting a booming tourism industry, Hawaiian royals were hosting famous artists and dignitaries in their Waikiki estates with all-day luaus, musical concerts and hula performances. Hawaii’s first resort hotel, The Moana Hotel, opened in 1901. Rooms went for a cool $1.50. Seemingly overnight, the pristine shores of Waikiki became a coveted, though still exclusive, tourist destination. The Royal Hawaiian Hotel, with its cotton-candy pink Spanish-Moorish architecture, debuted in 1927 on land previously owned by King Kamehameha III. Waikiki’s newest resort offered glitzy international glamour. It has since become a Waikiki landmark. At the turreted

entrance visitors can stand in the wide fanning shade of ancient coconut trees from a grove planted in the 18th century. In addition to retail, hotel and recreation options, Waikiki extends its hospitality with culturally diverse food offerings designed to satisfy every taste and exceed all expectations. Strolling down Kuhio on any given night, visitors can sample everything from Japanese udon to Vietnamese pho to Baja fish tacos. Expanding the culinary offerings of Waikiki has walked hand in hand with a renewed interest in authentic Hawaiian culture. The International Market Place, fluently interlaces the culture of Hawaii with modern shopping and dining. Chef Michael Mina recently opened The Street, a socialhouse-style eatery with 10 different cuisines on display. The 4.5-acre complex also

features Hawaii’s first Saks Fifth Avenue. As with all things Hawaiian, nature is front

and center. A giant Indian banyan tree remains the focal point of the new design at the International Market Place. New Zealand entrepreneur Harry McFarland planted the now-famous banyan on land that originally comprised King Lunalilo’s estate. The banyan’s twisting limbs bear the mark of generations of Waikiki’s residents and tourists, and have stood witness to many of her incredible transformations. ■ An Oahu landmark, The Royal Hawaiian Hotel.

2018 FIFA World Cup: The world is watching.

Thirty-two teams. 64 matches. 90-minutes of adrenaline, national pride and festive times. This summer, Russia will host the most watched show on earth, and we can’t think of two better places than Moscow and St. Petersburg to experience the excitement both on and off the field. BY KIA NAMIN Kick off Though the Russian team will be energized and emboldened by enthusiastic home crowds, Germany, Brazil and France are the tournament favorites. Germany won the 2014 World Cup in Brazil, the first-ever European team to win the tournament on South American soil. With an impressive 10-out-of-10 record in qualifying, they’re the favorite for a repeat. Toni Kroos and Die Mannschaft (now you’re talking like a true German fan) are hungry to double the honor. With stars like Neymar Jr. and Coutinho leading the charge, Brazil will aim to make up for missing their golden opportunity to win the tournament on home ground in 2014. Though some critics are not quite as enamored with the French, Paul Pogba and Les Bleus will be eager to prove any doubters wrong. At the other end of the spectrum—with far less expectation but no less motivation—both Panama and Iceland will make their World Cup debuts.

The drama of the tournament will unfold in 12 brand-new or impressively renovated stadiums across this massive nation. The opening match between Russia and Saudi Arabia kicks off at the largest venue of them all—Luzhniki Stadium in Moscow, where the final match will also be played. And though there will be no shortage of entertainment on the field, catching a cultural fix between matches will be a breeze.

Off the pitch in Moscow & St. Petersburg Whether you’re interested in hundreds of years’ worth of history or hoping to be surprised by the city’s contemporary quirks, Moscow is ready for you. Make quick work of your bucket list with an afternoon at Red Square: The Kremlin’s grandeur and the opulence of St. Basil’s Cathedral are architecturally iconic and a can’t-miss. For a kinetic exhibition sans cleats and referees, head to the Bolshoi Theatre for the worldrenowned Russian ballet. And to see exactly what art means to modern Moscow, peruse the collection at

the stunning, chic Garage Museum of Contemporary Art. St. Petersburg is both Russia’s former imperial capital and all-time beer capital (Stepan Razin and Vena, Russia’s first two breweries, were founded in the city). Those hoping to swap vodka for craft suds will be pleasantly surprised by the thriving craft beer scene. Grab a pint or two of AF Brew at the specialty Redrum taproom, then head over to Rockets & Bishops to sample the Bakunin Brewer’s beers. The city might just be best savored with a simple stroll along the canals, but skipping The Hermitage Museum (with more Rembrandts than the Louvre) would be a travel blunder worthy of a red card. ■

No matter who you ask, they all grew up eating family meals at La Carreta. It’s a foundation of Miami-Cuban culture that has been serving homemade Cuban dishes since 1976. So, go to La Carreta with the locals. The outside will be packed with people sipping on Cuban coffee, eating croquettes, discussing everything from baseball to politics. Inside, the counter is filled with regulars ordering traditional Cuban dishes like Picadillo (ground beef with vegetables) or Tamales en Cazuela (a heavy corn soup). No dish is complete without the typical Cuban side dishes of Arroz con Frijoles Negros (white rice and black beans) and Platanito Maduro (sweet plantains). Leave room for dessert and order yourself a Tres Leches (sweet cake made of evaporated and condensed milk) and top it all off with an order of Cuban coffee, part of the energy that fuels South Florida.

The first thing you’ll see is an open fire pit used to cook meat in the traditional asado fashion. For starters, try the Morcilla (blood sausage), Mollejas de Res (sweetbreads), and of course, the Provoleta—the fried cheese dish that Argentinians have mastered. Or, try a few empanadas. Empanadas are ubiquitous among Latin culture, but Argentinians do them the best. Otherwise, you can’t go wrong with anything off an Argentinian grill: Bief de Chorizo (sirloin), Costillar de Res (beef short rib) and my personal favorite, the Entraña (skirt steak). Don’t forget to ask the waiter for some extra chimichurri sauce. If there’s room left for dessert, you can’t miss the Flan de Coco (caramel pudding with coconut shavings) or Panqueques con Dulce de Leche (crepes filled with reduced condensed milk).

The first thing to remember is this simple formula. H2O. Drink lots. The air in planes is dry, with humidity as low as 15 percent. I suggest you double the normal daily recommendation of eight, 8-ounce glasses (a half gallon) on travel days. Or better yet, start the day prior. To enhance hydration, I like to add powder electrolytes to my water. Some tasty lemon works too. The next step in proper hydration is to avoid dehydrating drinks like caffeine and alcohol. You’ll enjoy them even more when you arrive in destination.

PLAYA DEL CARMEN, MEXICO More sunshine, crystal blue waters, lots of nightlife and a pedestrian boardwalk that you can explore for the day. Catch Recently opened, this hot new restaurant has locations in NYC, Los Angeles, Dubai and now Playa del Carmen. It is the see and be “scene” destination with cocktails, sunsets and open-air dining with views of the city and sea. Evening turns into night with DJs and their famous “Hit Me” chocolate cake. A couple of thoughts before taking off. Avoid salty foods and junk food which can make you feel bloated. Eat as clean a diet as possible, like fruits, vegetables or a hard-boiled egg. Sleep. Don’t just wait to nap on the plane. Get a regular night’s sleep beforehand. And when the captain says you are free to move around, do it. Get up once an hour, go to the back and do some stretching. It will help get that extra water into your joints and muscles, they’ll thank you later.

Now Erika can focus on enjoying the moment instead of worrying about last-minute details. A Culinary Journey As beautiful as 2-Michelin Star Chef Sydney Schutte’s creations are in presentation, there’s an exquisite inner beauty that reflects the diversity of his international experience. Recently, Chef Schutte shared his thoughts with Here & Beyond – on the culinary world and his unique place in it. To make our world even better, he shared one of his signature dishes. Or you can try one at Cocina de Autor, at The Grand Velas Los Cabos. H&B: Your bio says you’re inspired by every ingredient in your creations. Are there certain locally sourced ingredients that inspire your menu at Cocina de Autor? Schutte: Yes, the ingredient I use a lot in Los Cabos that really makes me happy is almeja de chocolate (chocolate clam) and Lobina (sea bass), which is a very nice fish to work with. H&B: Let’s say four Here & Beyond readers have been seated at Cocina de Autor for dinner and drinks. What do you personally recommend?

H&B: Cocina de Autor translates to “signature cuisine.” What do you want your guests to take away from a dining experience signed by Chef Schutte?

Schutte: We start with a Crispy Tuna Bubble. This is a crispy small sort of a balloon made from seaweed with mild spicy filet of American tuna and crème from toasted brioche bread. Another favorite dish is a combination of Mexico and Holland. It’s the chocolate clam with Bouillon of Piccalilli (a typical Dutch food), savory ice cream of roasted bell peppers in BBQ’d Mangalitsa. For the main course, we will serve lamb that is roasted and cooked in hay and served with onion confit in hay butter with anchovy cream. The combination of lamb and anchovies is one of my most favorite combinations for lamb. These two things go very well together.

Schutte: I like to surprise my guests with things they have never seen or eaten before. That means small, super tasty, powerful dishes with flavors I have discovered all over the world— all lined up in a big tasting menu.

H&B: You kindly shared one of your signature entrées with us. Please tell us about it, and what goes into creating a truly special meal. Schutte: Baby mackerel with red beetroot, sesame seeds, bay leaves, smoked haddock liver and baked mustard seeds. This dish offers an unusual, yet well-balanced combination with a distinctive smoky note. And for a dessert, my personal favorite is the avocado sorbet. It looks just like a slice of avocado, but is a sliver of delicious sorbet, with the shell lovingly crafted from chocolate. It always leaves unsuspecting guests utterly amazed. The development of a new dish is a neverending process. Sometimes it takes a week, and sometimes it takes a month to six months before a dish is exactly as you have always imagined it. ■

From Roller Coasters to Shows: Blockbuster Movies Inspire Disney Summer of 2018 The world has changed since The Walt Disney Co. released its first feature film “Snow White and the Seven Dwarfs” in 1937. Since then, The Walt Disney Co. acquired Pixar Animation Studios, followed by the purchase of Marvel and, finally, Lucasfilm and its “Star Wars” franchise. The Walt Disney Co. is no stranger to creating special worlds we want to experience in all their magic. This summer, three beloved, awardwinning movies, “Toy Story,” “The Incredibles,” and “Up,” transform into magical experiences at several Disney parks and properties. “Star Wars: Secret of the Empire” will literally have guests walking in the Stormtroopers footsteps. Walt Disney World Fun While they may have settled into a suburban existence in “The Incredibles,” back in 2004, Mr. Incredible, Mrs. Incredible, Frozone and crew will be venturing out this summer at The Incredible Tomorrowland Expo at Magic Kingdom Park. High points include a “Super Party Time” dance party on the Rocket Tower Stage and the opportunity to interact with Super Hero costume designer, Edna Mode. And for those who have a difficult time parting from their favorite Incredible characters, they won’t have to wait long for a reunion. This summer, they’ll be in everyone’s backyard, on the big screen when “Incredibles 2” opens in theaters June 15. At Disney’s Animal Kingdom, all you have to do is look up and discover exotic bird species from around the globe in UP! A Great Bird Adventure, a show inspired by the movie. “Up” was the first Pixar film originally presented in 3-D, and the first Pixar film to win an Oscar in the Best Original Score category. Senior Wilderness Explorer Russell stars along with his furry sidekick, Dug. This colorful spectacle is sure to take fans to new heights. Also at Animal Kingdom, and impossible to miss, is Pandora, the world of Avatar. Fly on the back of a mountain banshee on a 3D ride for a unique point of view

of this distant world. But the floating mountains and bioluminescent plants are just as captivating. Classic Disney characters will also be joining the fun this summer. Donald Duck and his pals Daisy, Goofy, Pluto, Scrooge McDuck, Launchpad McQuack and Chip ‘n Dale take over Dinoland, U.S.A. for Donald’s Dino-Bash! a dinosaur-themed party. Disney’s Hollywood Studios joins in the Disney Pixar magic with the highly anticipated Toy Story Land opening June 30 to the delight of little buckaroos and parents alike. This first featurelength, fully computer animated film was also the first animated film in Oscar history to be nominated for an Academy Award for Best Screenplay. Who can forget Tom Hanks as loveable cowboy, Woody? “Toy Story” fans will view Andy’s backyard from his toy pals’ points of view as they shrink down and join in the fun. Fun features include the Slinky

Dog Dash, a roller coaster Andy built from his Mega Coaster play kit, and the Alien Swirling Saucers, a galactic play set. Toy Story Mania! a guest-favorite 4D Shootin’ game, has expanded for more balloon popping with darts and throwing baseballs to break plates. For a heroic time head over to Epcot where Super Heroes have taken over the America Gardens Theatre. The highestgrossing Super Hero film of 2014, “Guardians of the Galaxy” received an Academy Award nomination for Best Visual Effects including Best Makeup and Hairstyling. Disney-goers will now be able to see those effects up close. Experience a journey through the cosmos at this awesome concert series featuring hits from Mixtapes 1 and 2, from the movies’ soundtracks. “Guardians of the Galaxy” Star-Lord and Gamora, will make an appearance alongside an alien band. The out-of-this-world show runs through Aug. 19.

New Attractions at Shanghai Disney & Hong Kong Disneyland The excitement doesn’t stop here.

Toy Story Land is also set to amaze visitors at Shanghai Disney and a new Marvel attraction is coming to Hong Kong Disneyland. Guests will join Ant-Man and the Wasp to fend off Arnim Zola and his army of Hydra Swarm bots. Based on the successful 2015 Marvel release: “Ant-Man,” this new attraction is a prelude to “Ant-Man and the Wasp,” due out July 6 with a new mission.

Also at Hong Kong Disneyland, the newest Walt Disney Animation Studio heroine, Moana, will be the star of a stage show in Adventureland, titled “Moana: A Homecoming Celebration.” Other female leads join the renovation. Storm Troopers Inundate Disney Springs “Star Wars: The Force Awakens,” was the first Star Wars film produced after Disney purchased Lucasfilm. It quickly became the highest-grossing installment in the franchise, receiving five Academy Awards including Best Special Visual Effects. This summer Disney lets fans experience the feeling of those special effects in a new hyper-reality experience. “It’s unlike anything else our guests have ever experienced… pushing the boundaries of location-based virtual reality,” Lisa Mendillo, influencer communications manager at Walt Disney World says. “Guests, disguised as Stormtroopers, are

transported into the Star Wars universe and put into the middle of the action via the magic of this hyper-reality experience that combines interactive sets, real-time effects and amazing technology.” After they’ve battled the Galactic Empire, visitors can view “Incredibles 2” and grab a bite to eat at one of the new restaurants and bars in Disney Springs. The Edison, a lavish, multilevel, themed restaurant is familyfriendly until 10 p.m. at which time it turns in to an adults-only venue. The theme is “industrial gothic” and offers patrons cozy couches or standard tables, along with three bars to choose from. Wine Bar George, the only Master Sommelier-led wine bar in Florida, managed by Master Sommelier George Millotes, serves up shareable small plates accompanied by more than 100 wine selections. What a great way to unwind amid the aromas and tastes of an estate-style wine bar.

Disneyland has created some of its own magic this summer. Excitement is ramping up at Pixar Pier, opening June 23 at Disney California Adventure Park. Pixar Pier will feature four whimsical neighborhoods depicting beloved Pixar stories. “While Paradise Pier has always had thematic placemaking along the lines of a California seaside boardwalk, Pixar Pier adds an entire new layer of Disney and Pixar storytelling to this area,” says Mendillo. “Not only will all the attractions have Pixar themes, but everything from the background music, food and beverage and merchandise locations will represent Pixar stories and characters.” The California Screamin’ Coaster has been re-imagined into the Incredicoaster, with a new theme based on—you guessed it—“The Incredibles.” As the first Pixar film to win

two Oscars: Best Animated Film and Best Sound Editing, The Incredibles are used to shaking things up. “The story will be entirely new, as will the music, show scenes and effects,” Mendillo explains. “Guests will accompany the Parr family as they race to catch up with baby Jack-Jack, who has discovered some new powers of his own.” A new Incredibles float, featuring Mr. Incredible, Elastigirl and Frozone is set to roll in the Paint the Night parade.
