Word on the Street
I
f you are like me, you can see the light at the end of the tunnel that is January 1, 2021. Of course, I know nothing magically changes simply because it is a new year, but I am pretty sure we’re all willing to say we have had enough of this one. Regardless, the holiday season always seems to lift my spirits, no matter the circumstances of the year. The gathering of family, the food and spending time with the people I care about reminds me of what is important in life. This month, we decided to share a little of our season with you. In this edition, you will find some incredible recipes that will make your mouth water and your loved ones smile with anticipation. Despite the COVID crisis, we’ve managed to find a few events you can enjoy with your loved ones, safely. Finally, let us remember to shop local this season and support small business owners in our community. We strolled historic downtown Concord for some gift ideas, and boy, did we find some wonderful options! As I am writing this, the election is still a few weeks away. If you are reading this, it either means it is days away, or it is over. In either case, it is my sincere hope that, no matter the result, this country can begin to come together and realize we are so much bigger than our politics. To paraphrase Dr. Martin Luther King from his famous speech, we should not be defined by our political beliefs, but by the content of our character, and that goes for everyone. At our core, we are not that different. President John F. Kennedy once said, “We all inhabit this planet. We all breathe the same air. We cherish our children’s future, and we are all mortal.” If there is anything 2020 has taught us, it is that together we can accomplish a great deal. However, if we remain so divided, our struggles as a nation, and as a people, will only get worse. So, take a moment this season. Get off social media and look up from your phone. There are people you care about around you. Enjoy their company. Cherish the time you have right now because it will never come again. Despite all that has occurred this year, I know for me, I will be giving thanks with a grateful heart. Happy Thanksgiving!

CBC will have lots of vendors onsite for the COVID-safe edition of their 4th Annual “Christmas At Cabarrus� Holiday Market. Featured gifts include handmade crafts and jewelry. Plus, there will be artists and other vendors available to help you find that perfect gift, all from local businesses in our community. There will also be five food trucks on hand, in case you get hungry. Of course, the taproom and beer garden will be available for seating to enjoy food and drink. Organizers are working with CHA to ensure this event is as COVID-safe as possible. For instance, all vendor areas will be located outside, and only a limited number of shoppers will be permitted in the areas at a time. Only three shoppers will be allowed per tent at any given time. Chickadee Hill Farms, located near Troutman, NC, is holding their 1st Annual Tree Festival this year. Promising to be a “holiday event for all,” the festival will boast more than 50 fully decorated trees, while guests enjoy music of the holidays. The Christmas trees range from mini-trees to several that are 12’ high. At least 10 tabletop decorations will also be available in the selection. A separate raffle will be held for a money tree which will include at least $500 in cash! The trees (except for the Chickadee tree) will be raffled off on December 4. Ticket sales will benefit Chickadee Farm’s instead of Chickadee’s mini-horse rescue efforts. There will also be treats for kids and adults to enjoy, as well. Santa will make his appearance on November 28, with mask provisions available. To promote a safe environment, masks will be provided at the door for everyone that attends. All foot traffic will be directed along a one-way path. With every ticket purchased, guests will receive five (5) free tree raffle entry tickets. Memory Café Provides Social Connection for Seniors
I
t is well documented that loneliness impacts our physical, emotional, and mental health. Unsurprisingly, almost 30% of seniors report regularly feeling lonely. According to research from the AARP and CDC, the effects of loneliness are comparable to living with chronic stress and pose a higher health risk than smoking 15 cigarettes a day. Social isolation can lead to a higher risk of chronic health conditions including heart disease, weaker immune system, and is linked to a 40% increase in developing dementia. While everyone needs social connection in order to thrive, there are individuals at higher risk of experiencing loneliness. If you have a mobility or sensory impairment, such as hearing or vision loss, you may be less likely to engage in social interactions. Those who have experienced major life transitions or loss, have lower income or financial resources, have challenges with transportation, language barrier, and even being a caregiver can place you at higher risk. Although coronavirus has certainly led to an increase in isolation, it is important to note you can be physically distant without being socially distant. While it may seem difficult to see an end to the COVID pandemic, there are actionable steps anyone can take to help reduce the negative impacts of social isolation on our physical and mental health. Some suggestions include planning your day and sticking to daily routines. Plan a time each day to call a friend, or take an online class to learn something new. Stay physically active, either through home exercise, or walking your neighborhood. Meet your neighbors while you are out! Join a support group, as many have virtual offerings to connect others who may be facing similar situations. People living with dementia have a higher risk of being socially isolated and lonely than other groups. As a result, Cannon Pharmacy offers a

With this in mind, we wanted to offer up some recipes that have continued to impress for generations. HELLO DOLLY BARS Hello Dolly Bars go back much further than the mid-1960s, when they were tagged with their present name. For many years, they were simply called “coconut bars.” The present name seems to have come from the Broadway Show “Hello Dolly,” which was popular during that time. Regardless, this recipe from the 1960s continues to be an extremely popular holiday treat and is easy to prepare. INGREDIENTS • 1 Stick Margarine Or Butter • 1 Cup Graham Cracker Crumbs • 1 Cup Coconut Flakes • 1 Cup Chocolate Chips • 1 Can Sweetened Condensed Milk DIRECTIONS 1. Melt a stick of butter or margarine in a 9x9 baking pan. 2. Add graham cracker crumbs and spread evenly in the butter. 3. Spread coconut flakes on top of the graham crackers 4. Add chocolate chips on top of the coconut flakes. 5. Pour (1) 8 oz. can of sweetened condensed milk on top of the mixture. 6. Bake at 350° F for 30-35 minutes until lightly brown on top. Cool, serve and eat.

HOLIDAY CHOCOLATE ROLL This delectable gluten-free recipe was once a featured dessert item at the Forum of the Twelve Caesars Restaurant in New York City. The restaurant closed in 1975.
Chocolate Roll
INGREDIENTS • 3 Eggs, Separated • 1 Tsp. Vanilla Extract • 5 Tbsp. Sugar • ¼ Tsp. Ground Aniseed • 3 Tbsp. Cocoa • ½ Tsp. Almond Flavoring DIRECTIONS 1. Set oven at 3500 F. Grease an 8-inch square cake pan and line the bottom with waxed paper. Grease the waxed paper. Set aside the separated egg whites. 2. Beat the egg yolks with an electric mixer until they are light in color. Add the sugar 1 Tb. At a time making sure to beat well after each addition. The mixture should be very creamy. 3. Stir in the cocoa, vanilla, almond flavoring, cinnamon and aniseed.
4. Beat the egg whites until they are stiff. Fold them gently into the egg yolk mixture. Spoon the mixture into the pan and bake for 25 minutes or until the sides of the cake shrink away from the pan. Cool for 5 minutes. Remove the cake from the pan and peel off the waxed paper. Immediately roll the cake and wrap in a towel to complete the cooling process.
Cocoa-Pistachio Whipped Cream Filling INGREDIENTS • 1 ½ Cups Heavy Cream • ½ Tsp. Vanilla Extract • ¼ Cup Sugar • 2 Tbsp. Chopped, Toasted Pistachio • 2 Tbsp. Cocoa
DIRECTIONS 1. Mix-do not whip- together in a medium sized bowl the cream, sugar, cocoa and vanilla flavoring. Chill the bowl in the refrigerator for 2 hours. Then whip the mixture until it holds its shape. (DO NOT OVERWHIP!) 2. Spread half of the filling in the middle of the cooled cake. Reroll the cake. The whipped cream will form a layer within the cake. At serving time, cover the roll with the remaining whipped cream mixture and sprinkle with pistachios. Cut into slices. Makes 4 to 6 servings. DIRECTIONS 1. Combine the sugar and butter, spread evenly on the bread slices to make sandwiches, stack together and cut of the crust. 2. Cut the “sandwiches” in ½ on an angle (from corner to corner) 3. Butter the inside of 8 oven proof cups or preferred baking dish. One by one dip the “sandwiches” in the anglaise and place in the baking dish, layer the bread and a sprinkling of soaked raisins as you go until done. 4. Bake covered in a Bain Marie at 375 degrees for 35 minutes until it rises a bit. Remove the cover and bake an extra 10 minutes until slightly brown. 5. Carefully remove from the oven and allow to cool slightly serve warm or at room temperature with anglaise and caramel sauce.
For Creme Anglaise:
RAGLAN ROAD BREAD & BUTTER RECIPE Straight from the mouse’s house comes arguably the best bread pudding recipe you will ever try. This dessert was made famous by the Raglan Road Irish Pub, located in Disney Springs, in Orlando FL, and is a must-order if you ever visit. The secret is the combination of the crème anglaise and caramel sauces that, when poured over the bread pudding, create a culinary masterpiece. Enjoy! 22 | Cabarrus Magazine
INGREDIENTS • 1 Loaf Pullman or Texas Toast • 1 Lb. Butter (softened) • 1 Lb. Sugar • 1 Cup Raisins (soaked in Irish mist or water)
Creme Anglaise
• 6 Egg Yolks • 2 Cups Sugar • 1 Vanilla Bean Split or 1 Tsp. Vanilla Extract • 4 Cups Heavy Cream
Caramel Sauce
• ½ lb. Butter (Chilled) • ½ lb. Brown Sugar • 1 Cup Heavy cream
1. Heat up the cream and the vanilla bean on the stove until it almost starts to boil. Meanwhile combine the egg yolks and sugar in a bowl, and whisk well. 2. When the creams reaches the almost boiling point, turn off and remove the pot from the flame. 3. Temper the yolks by ladling a small amount of cream to the bowl and mixing well. 4. Then add the yolk sugar mixture to the cream. Whisk well so that it does not curdle. 5. Place over a low flame for 2 minutes, whisking until it starts to thicken. Strain and allow to cool at room temperature.
For Caramel Sauce:
1. Combine the sugar and butter in pot and cook over a medium high flame. 2. Whisk well to combine, when sugar is melted and it starts to boil turn off the stove, remove from the flame and whisk in the cream to combine. Allow to cool to room temperature.

Concord and Kannapolis Live Holiday Events Cancelled
A
s with many events since spring of this year due to the COVID-19 pandemic, many of the Concord and Kannapolis live holiday events have been cancelled. This includes both the Concord and Kannapolis parades. In place of the decades-old local traditions, CabCOTV Spectrum Channel 22 will air special programming that will feature parade highlights from the past nine years. To top things off, the public Downtown Concord Tree Lighting Ceremony, originally scheduled for November 20, has been changed to a live virtual event. Instead of being open to the public, as usual, it will be shown on CabCOTV Spectrum Channel 22. As of press time, no additional details for time were available, but should be released by early November, and should be posted on Cabarrus County’s and the local cities’ social media sites. CHA WIC Dept; Clinic Staff Member Receive Awards Cabarrus Health Alliance’s (CHA) Women, Infants and Children (WIC) Department and licensed clinical social worker, Sonja BohannonThacker, each received awards last week for their impact on clients and contributions made to their respective fields of work.

CHA’s WIC Department was honored on October 7 with the GlaxoSmithKline Local Health Department Recognition Award. The award acknowledges local health departments that have developed an innovative program which has produced measurable, sustainable outcomes. The award recognizes the department’s implementation of an online appointment scheduling tool for WIC participants. Cannon Ballers Hosting ‘Field Of Honor’ In tribute to those whose actions made them heroes in our lives, the Kannapolis Cannon Ballers are bringing their inaugural Field of Honor® display to Atrium Health Ballpark from November 2 -11. Each 3-foot by 5-foot flag comes with its own story and displays a tag identifying both the flag honoree and the person who sponsored the flag. Flags may be purchased to honor the memory of a veteran or current service member from any branch of service. display of heroism flies as a patriotic tribute to the strength and unity of Americans, and honors all those who are serving, have served, and have made the supreme sacrifice for our nation’s security and freedom. “It is appropriate to honor our heroes with a display of the flag that they honored through their service and sacrifice,” the team stated on its website. “The Field of Honor® display of United States flags bring volunteers, residents, and visitors together as hundreds of flags are posted. This inspiring and memorable panorama of red, white, and blue is hard to describe, but once experienced it is not to be forgotten.” The Cannon Ballers will host an Opening Ceremony for the placing of the first flag on November 2 at 12:00pm at Gate #1 (West Ave). field located outside Atrium Health Ballpark will then be open to the public 24 hours a day for viewing and observation. Each evening, “Taps” will be played at sunset. A closing ceremony will be held on November 11 at 11 a.m. inside of Atrium Health Ballpark with guest speakers, musical tributes, and the reading of the names of the veterans honored on the field. All ceremonies are to be held using social distancing standards and the mandates from the Office of the Governor. Available online, the Parent Teacher Assistant Toolbox features helpful tips and advice, as well as personal guidance from a parent teacher assistant (PTA) coach, and opportunities to network with other parents. “We have heard from many frustrated parents who are realizing that virtual learning may not be short term,” said R3 Director Keri Allman. “With a multi-entry enrollment, parents can join at any time. More time availability is definitely a need for parents and this toolkit, along with the coach assistance, will help create a more flexible schedule during this journey.” While the course is designed for parents of students in kindergarten through eighth grade, the resources can be helpful for any parent wanting to get organized, build their own skills, and create a beneficial home learning experience.
Participants have round-the-clock online access to all course content, as well as weekly meetings with their coach. The R3 team also is available to assist anyone who needs to learn, or brush up on computer skills to participate. “This course is completely selfpaced,” said Gina Pinyan, Parent Teacher Assistant Toolbox coach and a
former public school teacher. “We want to make it as convenient as possible for parents, and we know it might be 10:30 at night when the house is finally quiet and they have some time to devote to exploring these tools.” While the course does not include tutoring, its services and resources are designed to equip parents to assist students with schoolwork. Course content includes “cheat sheets” and refresher information in areas such as math, reading and writing. The Parent Teacher Assistant Toolkit is available at no cost, thanks to fee waiver opportunities, and scholarship awards through Better Jobs for Better Lives in Rowan County and other sponsors.
