14TH ANNUAL DENIM, DIAMONDS, AND STARS GALA ____________________________________ ____________________________________ Photography by Brian Stethem and Michael Adams The red carpet was rolled out once again at the Four Seasons Hotel in Westlake Village as some of Hollywood’s most recognizable stars, families impacted by autism, and philanthropic members of the community joined together for the 14th Annual Denim, Diamonds, and Stars Gala to support Autism Care Today—the nation’s leading autism nonprofit organization providing support to children with autism and their families. Festivities included a cocktail reception, silent and live auctions, live entertainment, gourmet dinner catered by Four Seasons’ award-winning chefs, and special tributes to 2019 ACT Today honorees. This year’s honorees were Doreen Granpeesheh, founder of ACT Today and founder and CEO of CARD; Erin Murphy, autism activist and autism parent; and Nancy Alspaugh-Jackson, ACT Today executive director emeritus. 2ND ANNUAL SKY FULL OF STARS GALA BENEFITTING SOMETHING YELLOW
____________________________________ ____________________________________ Photography by Melissa Westervelt Kevin Cordasco, Sr., and family hosted a beautiful fundraising event for their foundation, Something Yellow, and dedicated the evening of October 12 to the Heroes of Childhood Cancer. Kevin, Jr., was an inspirational young man who battled neuroblastoma, a rare childhood cancer, for nearly seven years. He was an honors student, an athlete, and a musician. Kevin Cordasco, Jr., passed away March 11, 2013. The Cordasco family, their friends, and our community continue to remember Kevin through the Something Yellow Foundation. The night, hosted at the Warner Center Hilton Hotel, included a cocktail hour, dinner, dancing, live and silent auctions, and an array of touching speakers, including childhood cancer survivor Danielle Rosoff. A magnificent and celebratory atmosphere was created, complete with the sounds of accomplished composer/arranger Paul McDonald and his incredible Big Band, with special vocals by Kevin Cordasco and Hope Diamond. Hosted by well-known Los Angeles weathercaster Fritz Coleman, this year’s event was hosted at the Canyon Club in Agoura Hills to benefit the Cancer Support Community Valley/ Ventura/Santa Barbara. Guests enjoyed a tournament of No Limit Texas Hold ‘Em poker with celebrity guest players, the casino area, a buffet dinner, and cocktails, with an outstanding live and silent auction rounding out the evening. The event raised awareness for mental health—to directly support the launch of Sheba’s at-home nursing program and implementation of telemedicine for the treatment of patients with mental illness. Over 250 guests attended the sold-out event led by Mistress of Ceremonies Jill Simonian. The keynote speaker was Professor Mark Weiser, head of the division of psychiatry at Sheba Medical Center. Dr. Susan Bookheimer was honored for her work centered on the organization of language and memory in the brain, both in healthy adults and children, in neurological conditions and developmental disorders. LA. “As a family, we value transparency, health, and wellness,” says Sean. “We are thoughtful about our environment and the health effects of the products we use and foods we eat. It was only natural to start a company founded upon similar values.” Created with Calabasas resident Jay McGraw—son of popular TV personality Dr. Phil and best-selling author Robin McGraw—Launched.LA includes three companies at present. One is Hello Bello, a baby brand launched earlier this year and cofounded with Kristen Bell and Dax Shepard. They offer premium, plant-based baby products at a not-so-premium price at Walmart and online. Second is Taffer’s, cofounded with John Taffer from the Bar Rescue show. Taffer’s creates cocktail mixers and low-carb hard seltzers with high-quality, natural ingredients. It’s now available at Walmart and other grocery stores. Third is newly launched Tiller & Hatch, co-created with fellow Calabasas resident Chef Bruce Hecker and Jennifer Lopez and Alex Rodriquez. It provides healthy, restaurant-quality frozen meals for families on the go at an affordable price. It’s the first frozen food brand of this kind. Meals are ready in minutes using an electric pressure cooker. They’re currently sold at Walmart and through a convenient subscription service online. All of the brands developed through Launched.LA will have a give-back component. In its first seven months, Hello Bello already donated over $125,000 worth of products to organizations like Baby2Baby, Alliance of Moms, and the Red Cross. Tabitha began podcast Housewives of True Crime almost by accident with longtime friend Gretchen Macaulay. “We started the podcast after literally calling each other while waiting in the carpool line to talk about a true-crime podcast or show we just watched,” explains Tabitha. Once their kids grew a little older, they realized the time was right to launch their own podcast, whose apt tagline is “talking crime in the carpool line.” Tabitha’s family remains super supportive. “Sean listens to all the cases, offering welcome critiques,” says Tabitha. “My kids even sing my theme song in the car on the way to school.” It’s no mystery that the Kanes will continue enjoying each other and their community for years to come. n

9TH ANNUAL FOREVER FOUND GALA

Forever Found presented “Reach & Renew,” its 9th annual benefit dinner and auction, which took place at the Hyatt Regency Westlake on Saturday, October 5, 2019. Speakers Rachel Thomas, sex trafficking survivor and overcomer, and Forever Found’s founder and CEO, Shannon Sergey, spoke to almost 400 guests in attendance—from longtime donors to new faces who only recently became aware of the trafficking problem, especially in Ventura County. A musical performance by the band Wayland was another highlight of the evening. The evening included a raffle, silent auction, and live auction that featured three Africa safari trips. Forever Found International is currently visible in India, Thailand, and Ethiopia. Forever Found Local works with youth who have experienced trafficking. The Corvette Marque Day at Supercar Sunday was incredible. The annual Marque Day, as it is called, honors certain marks by providing a corral area for them. The Corvette Marque Day is one of the largest of these days at Supercar Sunday, and this year, it was the largest ever. As the event began at the Pierce College location, it was clear that just about every local Corvette club was participating. As the Vettes rolled in by the ones, twos, and then tens and twenties, it going to be a record-breaking day for sure. Every model type was present and on display. From the early C1 all the way to the C7s, it was a tremendous showing of one of the most iconic American sports cars. As Chevrolet has just launched the 2020 C8 Corvette, Corvette enthusiasts are very excited, and the new model has rekindled and reignited the passion for the Corvette. At that Supercar Sunday, all anyone could talk about was the new mid-engine Corvette. Everybody waited breathlessly and crossed their fingers that the new Corvette was going to show up. By the end of the morning, more than 235 Corvettes had been counted. Corvette owners came from as far as Northern California and San Diego. For some, it was their annual Corvette reunion with their friends. For others, it was about showing off their pride and joy or their race car that they trailered in. All in all, it was the best Corvette Marque Day at Supercar Sunday to date. Supercar Sunday is a weekly event produced by Dustin Troyan and sponsored by Keyes Automotive Group.

15TH ANNUAL REYES ADOBE DAYS The 15th Annual Reyes Adobe Days Festival took place at the Reyes Adobe Historical Site in Agoura Hills from October 10 to 14. Reyes Adobe Days is a four-day-long celebration of generations of California culture hosted by the City of Agoura Hills. This year’s anniversary celebration featured special highlights from past festivals. Serving as Grand Marshal was celebrity resident Regan Burns. The festival offered events for all ages that included the RAD Run 5K, 10K, and 10-Miler that took place early Saturday morning, followed by a celebratory parade. A Senior Fiesta, Night at the Adobe art event with local beer and wine tasting, and free Day at the Adobe family-oriented festival complete with new activities like candle- and rope-making plus returning favorites like pony rides were also a huge hit and continue to attract over 15,000 attendees every year.

By Lori Berezin and Gayle Barnes Photography by Steve Geldman and Gayle Barnes As the one-year anniversary of the horrific Borderline Bar and Grill mass shooting approaches, all of us at Calabasas Style Magazine wanted to pay tribute to the victims, families, survivors, and loved ones touched by this tragedy. Indeed, we will never forget. Let’s all take a moment of silence this November 7 in remembrance, to show our solidarity in the wake of this unspeakable act. We will always remember how this senseless tragedy extinguished so many lives long before their time. Our community once again honors these 12 victims and more than 200 survivors. While most of our lives have returned to normal, the families directly touched by these acts continue to mourn. Most of us were incredibly lucky that our loved ones weren’t at the club that night or had left before the shooting. College night at the Borderline has long been one of our kids’ safe havens. A year later, we continue to attend tributes and fundraisers honoring the victims and heroes who helped others escape. People still wear Borderline Strong t-shirts honoring the Borderline 12. A makeshift memorial was also set up near the club last year with 12 crosses, cowboy hats, cowboy boots, poems, flowers, gifts, stuffed animals, and letters. In addition, local artist Ali Alinejad created eight-foot sculptures with the words “Love” and “Peace” reflecting our continued love and support for the memorial. He now has also produced a large sculpture for each of the victims, displaying his or her name. These can be seen at Ali’s Thousand Oaks Clay Studio and Gallery and on Paige Lane in his neighbors’ front yards in solidarity. He is searching for a more permanent location so the 12 sculptures can all be together again. Construction has also been underway for a healing garden memorial at Conejo Creek Park North, which is planned to open this November by the one-year anniversary. The contemplative memorial will feature 12 granite stone-slab benches and fountain bubbler jets in a pond commemorating the 12 victims, plus 248 paving stones honoring the survivors. We all continue to be survivors in this war we never started, against enemies who look just like us yet act with such evil intent. We must all find strength in unity as we continue to lead lives full of courage and hope, forever remaining Borderline Strong. n

WOODLAND HILLS WOMEN'S CLUB SUMMERTIME TEA August 17 was a delightful afternoon marking the 5th Annual Summertime Tea for the Woodland Hills Woman’s Club. Held at St. Bernardine’s Parish Hall in Woodland Hills, the popular event sold out 150 tickets by June. Guests and members were immediately greeted by a massive display of silent auction items, vendors offering marvelous gifts, and 17 tables decorated for “High Tea in the San Fernando Valley.” Winner of the most elegant table was Caryn Pola. Proceeds from the afternoon of live music, raffles, tea, fun hats, finger sandwiches, and deserts went to benefit charities and organizations the club supports, including Hugh O’Brien Youth Leadership, C.A.T.S. and Domestic Violence Shelters, West Valley Occupational Center, and so many more. SAVVY CALABASAS SENIORS PRESENT FESTIVAL OF ARTS October 2, 2019, was a remarkable celebration of the arts unlike any other. Hosted at the Calabasas Civic Center, keen and crafty local seniors ages 50 and over worked together to create an art show of original work for the city’s Festival of Arts. Creations included photography, watercolor, oil painting, acrylic, and colored pencil. The community was invited to sip wine and other beverages, nosh on delicious appetizers, and chat with friends about their favorite pieces of art.

I always get sick around the holidays. What can I do to try and stay healthy? All illnesses seem to increase between Thanksgiving and New Year’s. No one wants to miss out on holiday parties or family gatherings. Many people are
traveling in enclosed spaces on airplanes. Plus, it’s a stressful time of year, and stress weakens your immune system. When your immune system is depleted, bacteria, viruses, and toxins overwhelm your body. To strengthen your immune system, first, get a flu shot. This is the most important thing you can do to protect yourself from the flu. Second, wash your hands often with soap and water. Viruses can live for hours on surfaces. If you can’t get to a sink, use hand sanitizer that contains alcohol. Keep your hands away from your face. Cold and flu viruses enter through your eyes, nose, and mouth. Third, get plenty of aerobic exercise and sleep. Aerobic exercise increases your body’s natural virus-killing cells. As little as 20 minutes of fast walking three times a week has been shown to improve immune response. Sleep is important too because sleep deprivation is known to suppress immune-system function. Fourth, maintain a healthy diet, something that is difficult to do over the holidays. Limit alcohol and sugar because microbes love sugar. A diet rich in antioxidant vitamins can boost resistance to infection. Fifth, take supplements and vitamins. Get vitamin C and zinc (in lozenge form) and helpful herbs, like echinacea, elderberry, ginseng, and garlic. Probiotics have also been shown to improve immune function. Finally, relax. PAINT THE TOWN PINK The Oaks Mall and Los Robles Hospital joined forces to kick off Breast Cancer Awareness Month on October 1 with a fun night out to raise funds for the professional programs offered by Cancer Support Community Ventura/Valley/Santa Barbara. This year’s event was the largest yet with a turnout of over 200 supporters. LLS LIGHT THE NIGHT The Leukemia & Lymphoma Society’s Light the Night event took place at Warner Center Park in Woodland Hills on October 5 to celebrate, honor, and remember those touched by the diseases. The annual event drew huge crowds and great corporate support to help fund treatments that are saving the lives of patients today, with an opening ceremony that featured incredible stories from special speaker Aubrey Kelley who shared her son’s successful battle with blood cancer as he stood with her on stage. This year’s fundraiser emcee, Mindy Sterling, reminded participants of the importance of community and supporting one another. Chaminade Preparatory School had over 600 students come out to celebrate their incredible achievement of raising over $30,000 to support LLS, among many other teams who raised over an additional $70,000. Student Filmmakers Filmmaking is not simply a hobby for our local high school students. It’s a passion and potential career, which is why there was no hesitation on their behalf in taking advantage of the opportunity to submit films to be screened at the Calabasas Film Festival’s Student Day—a special day dedicated to honoring the future of the entertainment industry. Students competed in five categories where outstanding achievers received awards, including software from Shot Lister, Red Giant, and Final Draft; books from Michael Wiese Productions; Mercedes Benz of Calabasas backpacks filled with goodies; and use of the media room at the MPTF campus. Calabasas Style had the opportunity to chat with four of the category winners. They shared how they found inspiration, what was in store for their future, advice for young filmmakers, and more.

Their advice to students looking to break into the industry is simple--just do it.
OUTSTANDING ACHIEVEMENT IN FILM: STATIC Born into a family of filmmakers, some of Jackson Little’s earliest memories include having a camera in-hand. His 10th birthday gift was a Sony camcorder, and the rest is history. His advice to young filmmakers is to create as many short films as possible, even if your dad is the main character.

ANNUAL CALABASAS PUMPKIN FESTIVAL

Surprisingly, it means pumpkin or gourd! Thus, it is only fitting that the City of Calabasas celebrated the arrival of fall with its annual Pumpkin Festival on October 19 and 20 at Juan de Anza Bautista Park. Continuing an over 40-year tradition, the festival brought the community together with entertainment surrounding the season’s most prized harvest, the pumpkin. Presented by the City of Calabasas and the Calabasas Chamber of Commerce, the festival was a huge hit. Not only was there a Saturday morning costume parade, but the festival also offered live music, marketplace vendors with scrumptious snacks and pumpkin-filled treats, and pumpkin painting and carving stations. Suited for all ages, parents and kids alike rejoiced in taking part of the Halloween carnival games and gushing over the spooky live performances.

Fostering a Sense of Community for Underserved Youth and Families By Lori Berezin Most of us were fortunately raised within families that helped build our self-esteem. Many of our at-risk youth—who suffer from abuse and neglect, substance abuse, homelessness, and other behavioral and mental health issues—still need a place to call home. Casa Pacifica first opened its doors in 1994 to provide cutting-edge, evidence-based services to these underserved youth. They’ve since helped more than 40,000 of the region’s most vulnerable children within their 15 campus-and-community-based programs in Ventura, Los Angeles, San Diego, Santa Barbara, Kern, and San Luis Obispo counties. By collaborating with county agencies and other community-based organizations, Casa Pacifica continues to help. They remain the only organization in our area to provide on-campus services and residential programs for 6-to-21year-old at-risk youth. Services include a vital health clinic open 24/7, a recreational therapy program, and the only nonpublic special education school in Ventura County designed to teach children and youth with severe emotional and behavioral disorders and/or mental illness. Casa Pacifica has grown from its main 25-acre campus and headquarters in Camarillo to include community-based offices in Camarillo, Santa Barbara, and Santa Maria; transitional housing units in Ventura County; plus Stepping Stones transitional housing adjacent to its main campus. They’ve also recently added much-needed residential cottages and the Training Institute and Vocational Education Center. CEO Steven Elson, Ph.D., and COO Vicki Murphy have worked with the organization for more than two decades. They continue to foster a nurturing atmosphere where their dedicated, compassionate staff can best serve their youth and families. “Witnessing the impact Casa Pacifica has made has been a true highlight of my career,” notes Elson. “I am proud to have helped shepherd Casa Pacifica into a premiere service and training organization recognized for innovation and excellence throughout the state and nation. It has been a real joy being part of the journey of so many outstanding staff and emerging leaders in our field who have gained significant knowledge and experience working at Casa Pacifica.” Casa Pacifica continues to create tomorrow’s leaders. Their fundraising efforts, which began before they even opened, remain top-notch. Their initial event, The Angels Ball, led to the Angels Wine, Food & Brew Festival in 1994. A few years later, Casa Pacifica added their Spotlight on Style Fashion Show, which enables individuals at various income levels to support their organization. The community continues to help raise funds for Casa Pacifica’s crucial programs and services. Some key milestones

include: launching the original campus programs with its emergency shelter, residential treatment, special education school and primary care facility; adding in-home behavioral services throughout Ventura County; expanding into Santa Barbara County beginning in 2003; and launching Transitional Age Youth (TAY) in 2011 on an adjacent property to help older teens who have aged out of the foster care system access educational opportunities, employment, housing options, and healthcare while strengthening their personal and community relationships. Since 2016, they also began accepting private insurance/ private pay for families whose children experience significant emotional challenges resulting in psychiatric hospitalization or potential hospitalization. They also launched a “Building New Foundations of Hope” capital campaign to grow their services in schools, homes, and within the community, including a mobile crisis response program for youth in Santa Barbara County. While fundraising remains vital to Casa Pacifica’s ongoing success, nothing is more valuable than the dedication of staff and volunteers who work tirelessly each day in support of the company’s mission. ____________________________________ ____________________________________ Photography by Robyn King The Boys & Girls Club of Greater Conejo Valley (BGCGCV) held its major annual fundraiser, the Stand Up for Kids Gala Dinner and Auction themed “BELIEVE,” on September 14 at the Four Seasons Hotel in Westlake Village. It was emceed by Jim Cathcart. Founder and longtime leader Cal Johnston and wife, Marie, were honored with an emotional tribute by their son, BGCGCV Board Chair Jeff Johnston, for the dedication and active participation in the club since its inception in 2001. The Cal Johnston Award was presented to Amer Soudani, a member of the club’s Board of Governors for the past 10 years, instrumental in the opening of the Rocky and Lon Morton Club in Newbury Park. The annual dinner and auction raised funds to support the provision of quality before- and after-school programs, sports leagues, and summer camps for over 4,000 youth. APPLE AND GOLDEN RAISIN CROSTATA Ingredients Pie crust: 1 cup pastry flour 1/4 lb. or 1 stick butter 1/3 cup granulated sugar 1/3 tsp. salt 1/2 tsp. vanilla extract 2 tbsp. ice water Extra 2 tbsp. melted butter to brush sides Filling: 2 apples, peeled small and diced 1 tbsp. lemon juice 2 tbsp. sugar 1 tsp. vanilla extract 1/2 cup golden raisins, rehydrated in Marsala wine Mascarpone whipped cream: 1/2 cup mascarpone cheese 1/2 cup heavy cream 1/4 cup confectioners sugar 1/4 tsp. vanilla extract 1/4 tsp Chinese five spice
Directions Crostata dough: Combine dry ingredients in mixer for 5 seconds on low. Add butter, mix on medium. Add ice water, mix until dough forms. Form disk, cover with plastic, chill for 1 hour. Preheat oven to 450. Filling: Add apples, sugar, butter, and lemon juice. Cook until apples begin to caramelize. Add raisins and soaking liquid, reduce. Chill. Crostata: Roll 4 oz. dough into circle. Fill middle with 2/3 cup filling. Fold outside to cover Âź in. of filling. Brush border with melted butter. Bake 15-20 min. Chill 5 min. Whipped cream: Put all ingredients in mixer and whip on low for 2 min. Raise to high until medium peaks form.

STUFFED CHICKEN BREAST WITH BUTTERNUT SQUASH PUREE Ingredients Serving size: 1 1 free range chicken breast 1 cup feta cheese 3/8 cup cooked bacon 3/8 cup onion, caramelized 1 pinch fresh thyme, chopped 10 cranks fresh black pepper 3 pcs Brussel sprouts, halved 1 1/2 cup trimmed and washed Tuscan kale 1 pinch garlic, caramelized 1 pinch minced shallot, caramelized Butternut squash puree 2 cups butternut squash; cleaned, peeled, and diced 2 tbsp. butter Fresh micro greens to garnish
Directions Add butternut squash to a pot of water. Bring to a boil. Once the butternut squash is fork tender, remove from pot. In blender, add squash and 3/8 cup cooking liquid with 2 tbsp. of good quality butter for a velvety richness to your final product. Caramelize shallots and garlic first before adding kale to your sautĂŠ pan. Season to taste. Mix bacon, onions, chopped thyme, and black pepper in a bowl. Put filling into a piping bag. Make an incision on the top corner of the breast with boning knife, creating a deep pocket for your piped filling. For Brussel sprouts, start off with a cold pan and olive oil. Place Brussels sprouts face down. The trick is to bring the Brussels up to heat with the pan so they cook all the way through and get really crispy without having to put them in the oven. Blot Brussels on paper towel and season with salt and black pepper.

MASTRO’S:
LOBSTER MASHED POTATOES Ingredients 16 oz. garlic mashed potatoes One each 1 1/4 lbs. live Maine lobster, fully cooked 1 oz. heavy cream 3 oz. whole salted butter, softened 2 tsp. Old Bay seasoning 2 tbsp. charred scallions (we recommend taking scallions and putting them on the grill to char them, it really adds to the flavor) 2 tsp. fresh chopped parsley
Directions Start with 16 oz. of garlic mashed potatoes, and keep hot until serving. Remove the shell from the cooked lobster, reserving all the edible meat. Chop up the lobster meat and add it to a medium sauté pan over medium-high heat. Add 1 oz. heavy cream and 3 oz. whole salted butter. Add 2 tsp. of Old Bay seasoning, and bring the lobster to a low simmer, until the butter has melted and the seasoning has been incorporated completely. The mixture should be hot and frothy, creamy and still emulsified. Add 1 tbsp. of the charred scallions. Place and mound the hot garlic mashed potatoes into a large bowl for serving. Spoon the hot pieces of lobster meat and pour melted butter sauce over the top of the garlic mashed potatoes using all the lobster and all the butter sauce. Garnish with the remaining 1 tbsp. charred scallions, sprinkle with chopped parsley, and serve immediately.

SEARED PORK SIRLOIN MEDALLIONS WITH MANGO, GREEN PEPPERCORN, TARRAGON SAUCE Ingredients 2 - 3oz. pork sirloin medallions Copious amount of rice flour Salted butter Fresh tarragon, chopped for garnish Kosher salt Black pepper White pepper Pan Sauce 2 tsp. chopped shallots 1/2 tsp. chopped garlic Madeira wine to deglaze pan 1 tsp. brined green peppercorns 1/2 cup of mango puree Pork or chicken stock
Directions: Season pork with kosher salt and black pepper. Dredge each medallion lightly in rice flour. Sauté pork in clarified butter and sear to a golden brown on both sides. Remove from the pan. For pan sauce, add all ingredients in to same pan and use pork or chicken stock to adjust consistency. Reduce sauce. Finish off pork with salted butter on top, fresh tarragon to garnish, lemon juice, salt, and white pepper to taste.

MORTON’S THE STEAKHOUSE: TRUFFLE & PORCINI CRUSTED SRF WAGYU FILET Ingredients Serving Size: 1 steak 1 ea. 7 oz. SRF Wagyu filet mignon 1 tsp. olive oil 1 tbsp. black truffle & porcini crust (recipe follows) 1 oz. caramelized shallot & balsamic butter 1/8 tsp. parsley, minced Black Truffle & Porcini Crust Yields: 2 cups 2 oz. truffle zest (powder) 3 oz. porcini powder 1/4 cup granulated sugar 1/2 cup seasoned salt 2 tbsp. black pepper, table ground 1/2 tbsp. crushed red pepper flakes Combine all crust ingredients in a food processor and blend for 20 seconds. Transfer to a storage container and keep at room temperature.

Rub the filet with olive oil and generously encrust top, bottom, and all sides with the truffle mixture. Grill to desire temperature. Be careful not to handle the steak too much. Cooking times are approximate and will vary based on the cooking surface: Rare, 3 minutes each side; medium rare, 4 minutes each side; medium, 5 minutes each side; medium well, 6 minutes each side; well (butterflied), 7 minutes each side. Remove from grill and allow steak to rest for 3 to 4 minutes before serving. Place filet on the middle of warm plate. Place 1 oz. of caramelized shallot butter on top of warm filet. Garnish with minced parsley. Serve immediately.

LAMB CHOPS WITH AU JUS Ingredients 12-16 oz. rack of lamb 4 tsp. extra virgin olive oil 5 cloves garlic 3 sprigs fresh rosemary Salt & pepper to taste (reccomended 1 tsp. each) Veal au jus Stock of roasted veal bone 10 bay leaves 1/2 cup flour Water 1 oz. extra virgin olive oil 1/2 stick butter Salt & pepper to taste
Directions Australian rack of lamb should sit refrigerated, in olive oil, garlic, rosemary marinade for 24 hours. Once marinated, season rack of lamb with salt and pepper. Sear over high heat, meaty side down, about 6 min. Turn the rack so that bones point up and grill until meaty sides are nicely browned on bottom, about 3 min. Turn bone side down and lower heat to moderately low. Cover grill and continue cooking until thermometer inserted in center of the meat is 130° for medium-rare, about 20 min. Transfer lamb to a carving board and let rest for 10 min. Prepare au jus reduction sauce by combining ingredients in a sauce pan, bringing to a boil and then slowly simmering as necessary. Using a sharp slicing knife, carve racks of lamb into chops and serve with Roasted Veal au jus reduction and grilled asparagus.

In mixer blend softened butter until creamy. Add cream cheese, beat until smooth. On slow, beat in cream, confectionary sugar, lemon juice, vanilla until smooth and pourable. Invert the cooled cake onto stand and remove pan. Drizzle cake with glaze. Let stand until set, then serve.

TANDOORI CHICKEN
Directions Heat spices in oil over medium heat until fragrant. Let cool completely. Whisk spices into yogurt, add lemon juice, garlic, salt, and ginger. Cut deep slashes into chicken, coat with marinade, and chill. Prepare grill so that one side is hot and one side is cooler. Shake off excess marinade, place chicken on hot side of grill. Cook 2-3 mins. before checking. Turn chicken pieces so they are brown on all sides. Move to cool side of grill, cover and cook for at least 20 mins. but up to 40 mins. Chicken is done when juices run clear. Let sit for 5 mins. Serve with naan.

Directions: In a sauce pan: Add 9 cups milk, corn starch, egg yolks, and sugar (save the left over ¾ of milk for later). Bring to boil and do not stop stirring for 10-15 minutes. Remove from fire. Add vanilla and butter. Mix with spatula until creamy. Set pan into large bowl with ice and let cool. In a separate pan, add water and ¾ lbs. butter. Bring to boil. Slowly add flour and continue mixing with large spoon until thick. Remove from fire and put into a large mixing bowl on #3 paddle for 20 seconds. Add 7 eggs and mix for additional 20 seconds. Add another 7 eggs and mix for 1 additional minute. Scrape the sides with a rubber spatula and mix for another minute. Prepare a cookie sheet with pan liners. Using a pastry bag, make each about ½” by 6”, making 3 passes to complete (12 on each sheet). Cook at 400 degrees for 40 minutes. Let cool and remove the top of the éclair to fill with cream. Replace top. In a separate bowl, add chocolate chips, 1 tbsp. butter, ¾ cups milk. Melt in the microwave and brush on top of each éclair. Let cool.

Directions Over medium-low heat, sauté onions, bell pepper, and garlic in large stockpot. Cook slowly, stirring occasionally until onions are soft. Add canned tomatoes to the pot (break them into chunks as you add them). Add wine and clam broth, bay leaves, basil, thyme, and oregano. Mix well. Cover and simmer 30 minutes. Stir in the shrimp, calamari, scallops, clams, and mussels. Stir in fish trio, if desired. Bring to boil. Lower heat, cover and simmer 5 to 7 minutes until clams open. Ladle soup into bowls and serve with warm, crusty bread!

Brent's Deli By Lori Berezin Photography by Marvin Steindler Nearly everyone senses the connection between food and many of their earliest family memories. The folks behind Brent’s Deli, a family favorite for more than 50 years, understand this completely. When Ron Peskin purchased Brent’s Deli in 1969, little did he know that he; his wife, Patricia; and his children, Brent and Carie, would all end up running one of the most popular delis in the San Fernando Valley. The Northridge deli they purchased already held a name near and dear to them: Brent’s. That was the first sign that this enterprise was destined for success. Their nearly instant popularity further cemented their fate. Years later, Ron hired a young delivery driver named Marc Hernandez, who eventually fell in love with Carie, Ron’s daughter, while working with her at Brent’s. The couple wed in 2001. Ron’s son Brent met his wife, Dori, here as well. It continues to be a real family affair as Dori and Brent’s daughters, Taylor and Jordan, now manage both the Northridge and newer Westlake Village location, which opened in 2006. It is said, “Everything old is new again.” This especially holds true for Brent’s. They recently completely refurnished and remodeled the bar, refinished the bar top and created a new private room using a slider. They’ve also enlarged their booths for more comfortable seating and eating. Happy hour also just got a little happier. The staff spent several months testing out different recipes,

eventually coming up with a delicious new happy hour appetizer menu that includes burgers, tacos, and sliders. CONEJO VALLEY PRIDE 2019 The 2nd Annual Conejo Valley Pride festival took place on September 28, 2019, at the Thousand Oaks Civic Arts Plaza in association with Diversity Collective Ventura County, building on the incredible success of its predecessor. The family-friendly LGBTQ+ Pride festival—open to all LGBTQ+ residents, families, and allies of the Conejo Valley and beyond— featured headliners David Hernandez and Effie Passero who rose to fame with American Idol, as well as drag queens, musical performances, a variety of local vendor booths, and tons of tasty eats. This year’s festival included a designated kids’ play area with several large inflatables, face painting, macaroni art, a teen lounge, and more fun activities for everyone. If you ever wanted to drive a car that embodies everything you ever wanted in a sports car, the Lamborghini Huracan EVO Spyder might just be that car. I simply cannot say enough good things about the car, and the only way to really experience it is to drive it. Lamborghini has truly outdone themselves with the EVO. The car is so easy to drive and so easy to drive fast. The EVO gives you any emotion that you ever wanted out of a car. It is spectacular. Driving the EVO is mind-blowing. The car makes you feel like a racecar driver even if you are not. It is insanely fast both in a straight line and in the twisties. And when I say fast, I mean hold on because you are about to go for the ride of your life, fast. The EVO is so stable that it just begs you to test the limits of the car. I dare say those limits would only be found on a racetrack by a professional driver. The car is truly that fast. I could tell you about the stats on the EVO but, odd as it sounds, they would never translate to the actual feel of the car. If you want it fast and loud, it is fast and loud. If you want to be scared, the car will scare you. If you want to feel alive, you will feel alive. And if you want to drive it causally to the office or to the grocery store, have at it. Sitting in traffic is not a problem, unless you don’t like people taking pictures of you. Between the looks and the sound, you will be noticed.I have driven the EVO a few different times and the more I drive it, the better it gets. It is a truly amazing experience each time you drive it, and it will evoke emotion. If you can, drive one. You will probably buy one. n
