n a world that has been filled with so many unknowns, we have found ourselves rethinking our approach so that we can make a difference. We’ve talked to many of our guests and listened to their needs. What we’ve heard is that is that many want to fully reset their lifestyle. We have our second pickleball week planned to include professional pickleball player, Pat Carroll, and our Cal-a-Vie Health Spa pickleball coaches. Pat has earned 8 national titles in singles, doubles and mixed doubles, and 10 World Game titles in all three events. Pat’s love for pickleball lead her to write her book, Pickleball, Less Is More. Pat was ranked number 25 nationally in tennis singles before dedicating her energy to pickleball. Why has pickleball become so popular? IT OFFERS VARIETY. Pickleball is a combination of tennis, badmitten, and ping pong. ANYONE CAN PLAY. Whether new or competitive in the sport, everyone can enjoy pickleball. IT’S A GREAT SOCIAL SPORT. W
e’ve all heard it before—regular exercise is good for you, but let’s talk about what that really means. Exercise has many benefits for both physical and mental health. The good news is that it’s never too late to start. You can start slowly and find ways to fit more physical activity into your daily routine. Let’s unfold the benefits of regular fitness. There’s an immense amount of trustworthy research showing regular exercise has a plethora of health benefits. REGULAR EXERCISE MAY:
• Help with Weight Management – Along with diet, exercise plays an import role in controlling your weight and preventing obesity. Exercise creates energy in the body. Energy burns calories, one of the fastest energy sources; in fact, exercise requires an energy source so that you can perform well. That doesn’t mean you need to overeat in order to exercise, it just means that you want to make sure you have a healthy diet so that when you engage in exercise, your body and mind can engage safely and recover efficiently. • Reduce Risk of Heart Disease – Exercise strengthens your heart and improves your circulation. This increased blood flow raises the oxygen levels in your body which may lower your risk of heart diseases such as high cholesterol, coronary artery disease and heart attack. Regular exercise can also lower your blood pressure and triglyceride levels. • Help Manage Blood Sugar and Insulin Levels – Exercise can lower your blood sugar levels and help your insulin work to your advantage. This can cut down your risk of metabolic syndrome and type 2 diabetes. Also, if you already suffer from one of those diseases, exercise can help you manage it. Physical activity can actually lower your blood sugar up to 24 hours, or longer, after a workout. You may need to check it before and after exercise so that you know how your body is responding; therefore, preventing it from going too high or too low. Your doctor can offer recommendations that are best for you. • Strengthen Bone Density – Regular exercise can help slow the loss of bone density that can occur later in life and help avoid osteoporosis. This is important to help prevent broken bones and fractures that may result from a fall due to a frail body. This can limit mobility and greatly affect one’s independence which can also lead to depression—even more reason to keep those bones healthy and strong through exercise. Strong bones help with balance and coordination which is crucial in everyday life activities.

• Maintain or Increase Muscle Mass - Performing muscle-strengthening activities can help maintain and even build lean muscle mass to help with a higher metabolism, which in turn will help with weight management. It all works together! Strong lean muscle burns more calories than fat which means you want more lean muscle mass. Additionally, studies show that feeling fit and healthy through exercise provides a strong sense of clarity in the brain offering better cognitive thinking and memory. Ultimately, exercise is known to help manage the stresses in life. There is more to fitness than well-defined or toned muscles. Many have lost the interconnectedness between the body, mind and spirit, and how each has the power to affect the other. Developing a love for human movement can help you understand that physical fitness is a huge part of mental fitness and a lifestyle that leads to good health. Finding ways to connect the mind and body through movement is a great way to meditate and take your mind off of the things that might be stressing you throughout the day. This will help you get away from the cycle of negative thoughts that feed depression and anxiety. You might consider redefining exercise as any activity that connects your mind and body. Whether you choose yoga or another form of movement for exercise, remember that our bodies are made to move which helps us feel good. When you to incorporate regular activity in your life, you’re moving closer to overall mind and body fitness.

A N X I E T Y and the G U T-B R A I N C O N N E C T I O N HOW THE MICROBIOME AFFECTS OUR MENTAL HEALTH

G
ut health is paramount for mental health. The gut is often referred to as the second brain due to its critical roles in not just digestion and nutrient absorption, but also the synthesis of hormones that impact our mood and behavior. Our gut and brain are in constant communication since our brain can affect our gut health, and our gut health can affect our brain health. Learning which foods and nutrients support the gut and our mental health can help keep anxiety and its symptoms at bay. Let’s dive into how we can support our gut and good mood through food and nutrition. First, let’s deal with anxiety. If just reading that word causes you to tense up, you are not alone. Data from the early days of the pandemic indicate that more of us are suffering from anxiety, either acute or chronic, than ever before. A report published in the Morbidity and Mortality Weekly Report conducted by the CDC showed that by February 2021, the percentage of adults with recent symptoms of anxiety reached 41.5%. ¹ At a time when many of us are feeling like anxiety has the reigns, it brings comfort to know that there are natural, effective, and approachable ways to ease anxiety, improve our mental health, and get us feeling refreshed and renewed. But what does that have to do with the gut? The gut and brain want to be close friends, but when something gets in the way, our bodies can feel it. The first pathway in this relationship is via the vagus nerve, which sends signals in both directions; thank the vagus nerve for the feeling of butterflies in the stomach or stress-related gastrointestinal problems. This communication pathway is directly influenced by the makeup of our gut microbiome which is the vast community of bacteria species that calls our gut home. Many neurotransmitters that regulate mood and behavior are also synthesized in the gut, such as mood-boosting serotonin and GABA, which helps to control feelings of anxiety and can reduce anxiety and depression-like behavior.

The brain also influences motility (the movement of food through and out of the body), nutrient delivery, and our microbial balance. In turn, the gut influences the synthesis of neurotransmitters, our stress and anxiety levels, and our mood and behavior. If our gut health is compromised or less than ideal (from poor diet choices, stress, toxins, leaky gut, microbe imbalances, or a combination of these), it leaves the window open for anxiety to manifest or worsen. Being intentional with food choices is one of the best and most foundational ways to reduce and help prevent anxiety. Now, let’s look at some strategies to aid in the synergy of the brain and gut. Nutrition plays a crucial role and there are a few key foods and nutrients that you will want to get to know. Fermented foods like kimchi, sauerkraut, kefir, kombucha, miso, and tempeh are sources of probiotics that are good bacteria that can help improve and maintain a happy, healthy microbiome. Another critical component is prebiotics, the indigestible plant fibers that fuel gut bacteria so that they can flourish. You can find prebiotics in many plant foods, but some sources that are especially high in prebiotic fiber includes onions, garlic, leeks, artichokes, apples, jicama, oats, asparagus, and bananas. Beans and legumes also provide an excellent fiber source for the gut. If you plan to increase your fiber intake

with these types of foods, also make sure to stay adequately hydrated, aiming for half your body weight in ounces of water per day. Fiber pulls water into the digestive tract to move things through, so without enough water, it can cause the unpleasant issue of constipation. Another essential component of reducing anxiety is keeping blood sugar balanced. One simple way to do this is to not go too long without eating. Low blood sugar, or hypoglycemia increases stress hormones which can cause us to struggle with focus, leaving us anxious and irritable. To help combat this, ensure that you are not going more than 3-4 hours between a meal if you tend to run on the anxious side. We also want to fuel our body with balanced meals. Having protein, fat, and fiber-rich carbohydrates elongates the blood sugar curve which helps reduce or eliminate shifts between extreme blood sugar highs and lows. The protein and fat work as anchors of blood sugar which help contribute to feelings of calm and reduce mood swings. When it comes to gut health and anxiety, nutritious foods are the foundation, as is sleep, exercise, and stress management practices. If you have a strong foundation, key supplements can also help to reduce anxiety. One nutrient to focus on is magnesium which can be depleted by stress! Self-care is an important aspect of managing stress and anxiety. That management will actually help you do better with your day to day responsibilities and relationships to include family, intimate connections, friends and colleagues at work. Ok, so we know this, but what can we do? There are a few different types of self-care— emotional, physical and spiritual. There are numerous options and we have them all here at Cal-a-vie Health Spa, but let’s look at some key recommendations that will leave you feeling Refreshed & Renewed. Here at Cal-a-Vie Health Spa, we make sure to design our meals to meet nutrient recommendations from our Registered Dietitians as part of our Refresh & Renew program. Incorporating a variety of colorful foods such as the sweet potato and green beans shown here will guarantee that your body is getting that amazing nutrition it is craving. Additionally, beef is a great source of heme iron, which the body absorbs 10 times better than the iron found in plant foods such as spinach. For guests that are low in iron or ferritin, we recommend eating high-quality grass-fed and grass-finished red meat a few times a week, depending on how depleted their levels are. MARINATED BEEF TENDERLOIN
1 tablespoon grapeseed oil 2 tablespoons chopped fresh parsley 2 tablespoons chopped fresh chives kosher or sea salt and freshly ground black pepper 4 beef tenderloin fillets (4 ounces each), cut 3-inches thick In a small bowl, combine the oil, parsley and chives. Salt and pepper the beef fillets. Rub the marinade over the beef and marinate for 2 hours in the refrigerator.

MASHED SWEET POTATOES
1 pound sweet potatoes 1 teaspoon smoked paprika 1 tablespoon maple syrup ½ teaspoon kosher or sea salt ¼ cup + 1 tablespoon orange juice Preheat the oven to 350F. Thoroughly wash the whole sweet potato to remove any dirt. Place it on a baking sheet and roast for one hour, or until it is soft and tender all the way to the center (pierce with a knife to check). Peel the sweet potato while still warm, and break it up with a potato masher. Add the smoked paprika, maple syrup, salt and orange juice and continue mashing until smooth. Set aside and keep warm. GREEN BEANS:
1 tablespoon extra-virgin olive oil 1 pound green beans, trimmed 1 tablespoon water or more 1 teaspoon sea salt In a large sauté pan over medium heat, add the olive oil and green beans and sauté for about 3 minutes. Add a tablespoon of water and allow the beans to steam. Keep adding additional tablespoons of water until the beans are cooked through. Set aside and keep warm.

Pair green vegetables with charred foods. One of the great nutritional benefits of green beans and other green vegetables is their high levels of chlorophyll. Chlorophyll has been shown to block the carcinogenic effects of heterocyclic amines that are generated when grilling meats at high temperatures. These carcinogen substances are harmful to our bodies, increasing the risk for cancer and other health complications.

RED WINE DEMI
2 tablespoons grapeseed oil 1 onion, sliced 2 ribs celery, peeled and sliced 2 carrots, trimmed, peeled and sliced 2 tablespoons tomato paste 2 cups dry red wine 4 cups beef or veal stock Sea salt In a large saucepan over medium heat, add the oil, onions, celery and carrots. Sauté for about 10 minutes, stirring often, until the vegetables are caramelized and dark in color. Add the tomato paste and cook until it turns a brick red color. Add the red wine, bring to a boil and then reduce the heat to a simmer. When reduced in volume by half, add the beef or veal stock and continue to cook at a simmer until a syrup-like consistency is achieved. Strain the vegetables from the sauce and season with salt to taste. Set aside and keep warm. TENDERLOIN PREPARATION
Marinated Beef Tenderloins 2 teaspoons grapeseed oil Preheat the oven to 350F. Remove the tenderloins from the refrigerator, take out of the marinade and pat dry with paper towels. Let sit for about 30 minutes so they will come to room temperature. In a large oven-safe sauté pan over medium-high heat, add the grapeseed oil. Sear the first side of the tenderloins for about a minute, or until they’re a golden brown color. Flip the fillets over and sear the other sides.
