“I don’t dictate to anyone. It’s not just designing a dress – you have to draw out the bride, help her decide whoever she is that day. Maybe I am part psychiatrist, part costume maker. Because when you work with brides it is about emotion, too; it’s not simply a gown, it’s not simply a moment, it’s about a dream come true.” – Vera Wang Modern brides are telling a story about confidence and originality with their fashion choices. The contemporary bride is looking for a gown that is perfect for her, while equally important are the accessories and statement pieces that complete her unique and personal style. Look to the following pages and you will find in the credits Calgary’s finest fashion boutiques, carrying the newest and most prized prêt-à-porter (ready-to-wear) fashions from the runways. Designers like Hailey Paige and the Jim Hjelm Bridal Collection, Paloma Blanca and Mikaella are producing designs brides are falling in love with year after year. A wedding gown is the fashion investment of a lifetime, and may even be the most expensive dress you will ever own. There are many important things to consider when looking for your gown that go way beyond the latest trends and styles. We wanted to find out more about the world of designer gowns to try to uncover what distinguishes a quality gown from a less expensive dress. We asked Daria Groch Arnold, Owner of Cameo and Cufflinks, for some insider insight about how to find a quality gown, worthy of your investment. “We love seeing the new styles and get excited about what the designers are going to do with the new designs." Says Daria, "We get really excited about bringing in new looks and then having the brides love them. Nothing beats that mesmerized look that a bride has when she has “found her dress”. I look for quality, and materials play an integral part in the quality of most gowns.” In the world of designer fashion, and wedding gowns in particular, fabrics are chosen for more than just aesthetic reasons. They are also chosen according to functionality and the style of the dress. The fabric supports the style, fit and structure of the gown. A quality gown will also use quality fabrics in their linings, and built in corsets under the top layers of the bodice. “Many times girls will want to try on more expensive dresses and convince themselves they are trying on the dress to see what the “style” looks like on them. What few people realize is that the style is achieved due to the fabrics and construction, they will not find the same fit and style with a “knock-off” or

cheaper version." Another consideration is alteration costs, as these are not based on the cost of the gown but on the time it takes a seamstress to alter the gown. “Seamstresses have a harder time working with the lesser quality fabrics, which can require them to spend more time on the alteration”, Daria remarks. Wondering what to do with your gown after the wedding? While there are still some who believe that saving it for a future wedding is appropriate, the likelihood that someone else will want to wear your ideal dress is not great. Of course there is always the option to re-sell your dress and there are a variety of businesses like Wishamon - Glorious Gowns who will happily help you find a good home for your gown. Alternatively, Daria suggests considering having a new garment commissioned. “If you don’t want to sell, I have heard of altering or taking pieces of the dress to make things like necklaces, garters or bouquet wraps for future generations. The one idea that I loved was a bride who altered her dress into lingerie. This is such a great idea to wear when celebrating anniversaries or other special events!” BRIDAL FASHION FORECAST 2015 - Dresses with elegantly designed backs are taking the runway by storm, embellishing and enhancing the female silhouette. Your back will be a focal point as you walk down the aisle and during your first dance, and incorporating detail will intensify the impact of your gown. Following the illusion backs and bateau necklines, lace sleeves and halter necklines are expected to be making a comeback. Coloured wedding dresses have a stronger presence than ever on the runways, and the shades are much deeper and darker than before. Pink, grey or teal, and gold is a popular colour scheme. Structured and figure flattering bodices with ultra-sheer overlays or an abundance of embellishments are at the height of fashion. Crystal flourishes and intricate webs of finely crafted lace are sultry and sophisticated choices. Sheer fabrics with lavish appliqué are also flattering while offering subtle coverage. Bustles and layers have made resurgence, taking its inspiration from the 18 century polonaise. Tapes in the skirt allow it to be gathered up at the back in a variety of gathers. Uneven, alternating layers of various fabrics create texture, fullness and movement. Crystal and pearl studded belts have never been more popular than they are today. Large, bejewelled stud or drop earrings, massive neckpieces and a variety of neck and arm cuffs are right on trend. Brightly colored shoes are an absolute must, accompanied by a clutch and a shawl for the chilly night. Just starting to trend in North America is the bride’s reception gown. Within the next year, it is predicted that there will be a substantial increase in the number of brides who choose to change into a special occasion gown just before the reception. These dresses showcase bold designs, lavish decoration, and are often brightly coloured evening gowns.

A piece of true couture is a treasure with a timeless style. For many women a wedding dress is a special opportunity to own such a treasure. A couture wedding gown tells a story of romance and luxury and eventually develops a history of its own. Couture gowns are often passed down and worn repeatedly as a result of their enduring beauty, each time a story of adventure and love retold. Couture refers to the creation of exclusive custom-fitted clothing, while “haute couture”, a French phrase for “high fashion”, implies unparalleled artistry with the fashioning of handmade garments. Couture designers create exclusive fashion from fine fabrics, delicate embroidery, jewelled details and hand sewing techniques. Through painstaking methods of cutting and fitting to the client's body, the goal of any couture design house is a perfect fit. The manual labour needed to produce a garment this way can take between 100-150 hours for an haute couture suit, and up to 1000 hours for an embellished haute couture wedding dress. Because of the accuracy of the cutting and seam-work, haute couture dresses are designed for one wearer. They are difficult to adjust, and if passed on must be re-fitted to the new wearer or completely disassembled and re-sewn to the new specifications. A couture designer knows that his or her masterpiece will be judged not only for its style and beauty, but for the quality of sewing in its fabrication. A connoisseur of fine couture will recognize a factory stitch or inferior fabric at a glance. One of the most common examples of modern couture fashion is the corset. A corsetiere is an expert tailor or seamstress who is skilled in creating an hourglass silhouette. Corsets can be made to your exact specifications, in any colour and a myriad of styles. They can be created for wear under your dress, or built into the bodice allowing you to achieve an hourglass silhouette which is widely considered the most flattering feminine figure in fashion. Alternatively, corsets can also be decorated and worn as a bodice in a two-piece ensemble. This style, reminiscent of the mid 1800’s fashion scene, is making a surprising comeback on the runways. The fabrics available to a couture house, or designer, are very luxurious and include the latest novelty fabrics and expensive silks, fine wools, cashmeres, cottons, linens, leather, suede, skins or furs. In the case of a reputable design house, the design and colour of a fabric may be exclusively reserved, meaning no one else can produce exactly the same hue. Couture fashion is for the conscious dresser, a person who sees fashion as wearable art, and for whom a hand stitched seam is an intimate connection between the creator and the wearer. Couture is not just for wedding dresses and evening gowns; it is for anyone who sees textiles as art and a vehicle for creative self expression.

The goal of a boudoir photographer is to make a woman feel confident, beautiful and sexy while leaving her with a lasting memento of that feeling. A professional should be able to photograph a woman beautifully and with ease. A great boudoir photographer has the ability to adjust their practices and coach their subject to bring out a woman’s best qualities. The idea is to capture a woman’s individual beauty, sensuality, and spirit, while making their subject feel completely comfortable and safe. Every woman has a different comfort level and a different idea of what “sexy” means to her. According to Calgary Photographer Zev Abosh, it’s important to do some research and find some inspiration for what you want to do before your scheduled shoot. When looking for inspiration, create a mood board, such as one on Pinterest, and share your inspiration with the photographer in advance. This will help them to come prepared to capture the right shot for you. “Also, prepare your outfits in advance and know what you want to do”, says Zev. In other words, don’t expect your photographer to play the part of a stylist, as it is not professional to ask them what lingerie you should wear. Hire a professional hair and makeup artist, or stylist, for your boudoir session. Having someone dedicated to all your personal details such as perfect skin and hair is an essential part of a professional looking photo shoot. For your protection, and the protection of your photographer, there should be another person, such as a photography assistant, or a stylist, in the room with you during your boudoir session. Not every wedding photographer offers boudoir shoots but you will find several in this book. Some boudoir photographers like Zev Abosh (PhotoArt4U) will also include a separate engagement photography session as an opportunity to become more comfortable working together. “You have to click with your client”, says Zev, “it works both ways.” Other boudoir photographers, like Christy Swanberg, offer customized photography experiences including full day sessions with special gifts and a hotel room included Creativity is an important aspect of boudoir photography, and so are testimonials, but ultimately the proof is in the portfolio. Be sure to do your research in advance to find the right boudoir photographer for you and if possible try to arrange a meeting to get to know each other.

Formal dressing is entirely about confidence and elegance. With suits and tuxedos alike, a perfect fit is your top priority and everything else comes after. When trying to achieve a sophisticated look your best bet is to go by the book and follow the hard and fast rules of men’s formal dress.

MEN'S FASHION FORECAST 2015 BY ALIX WILLIAMS

For a bride, the most important accessory will always be the one that took a lifetime for fate to drop in her lap - her groom. And while bridal style is a paramount part of the wedding planning process, groom style is all too often an afterthought. And while few grooms will spend what a bride does on his wedding attire, there are ways for men to look fashion forward, stylish and expensive without dropping 5 digits. Bold colour is the big trend for the dapper groom and strong blues are leading the way. Dark navys are being replaced by cobalt blues, inky blue-greys and indigo blues in fabrics with deep texture - blues are looking best in tonal checks and grainy weaves. While white and ivory shirts certainly have their place, patterned shirts for grooms and groomsmen make a more fashionable statement. Look for shirts with a tight gingham check or jaquard woven pattern for fearless and impressive style, and try the look with either a neck tie, a bowtie or open collar to find which style is best suited to the groom. If your groom considers himself casual, don’t let him rule out a three piece suit too soon. A full fabric vest (as in, no shiny back) will be a huge trend for 2015 - the three piece look becomes less formal for when the groom ditches his jacket for the dance floor. A three piece suit is also a great opportunity for a groom to differentiate himself from his groomsmen - keep groomsmen in two piece suits and let the groom stand out with his contrasting vest. Even the best looking suit in the world is nothing if not fitted appropriately. Slim fit suits are carrying forward as the trend for 2015. A slim silhouette on a gentleman means a jacket that is narrow in the waistline, that sits shorter in the body and has a softer, more natural shoulder. Slim fit pants are narrower at the knee and cuff, and the bottom of the pant does not sit baggy on top of the shoe. The Red Carpet influences groom styles as well. Velvet and velour dinner jackets in blues, blacks and deep reds for the suave, fashion forward groom are perfectly paired with sleek, black tuxedo pants.

Timepieces are complex feats of micro-machinery and engineering. They are designed with faces that resemble the engines of high-performance racing cars and named after famous horse racing tracks. Collectors of these types of timepieces pay special attention to watches worn by the Astronauts of Apollo 11, or wrist instruments taken by deep sea divers to the depths of the ocean. A watch is widely considered to be the most important, and sometimes the only, accessory men prize. For those who take it seriously, a man’s timepiece often becomes part of his identity; it is a symbol that represents his values and lifestyle. It’s a common belief that the watch a man wears speaks volumes about his character. As Actor Tamer Hassan once said, “I always judge a man by his shoes and his watch.” This is a sentiment based on an old adage that still rings truth for many people. The art of Swiss watch making is still extremely respected in the watch industry, and Calgary Jewellery is highly respected and well known for their vast selection of quality Swiss made timepieces. According to Calgary Jewellery Marketing Director, Abby Dickinson, there are three important things to consider when buying a watch; these are: quality, functionality and style. tourbillions, minute repeaters, perpetual calendars, dual time zones, moon phases, alarms and chronographs to name a few”, says Abby. Watch lovers are connoisseurs of new time keeping designs and innovative movements. The movement, or calibre, is the engine of the watch. This internal mechanism moves the hands and powers any complications, such as: a chronograph, annual calendar or a dual time zone. It’s the device inside that keeps the hands moving so you know whether it’s time to work, eat or sleep. The two most common movements are quartz and automatic. Most inexpensive and medium-priced watches, used mainly for timekeeping, are electronic watches with quartz movements. Expensive collectible watches are valued more for their elaborate craftsmanship, aesthetic appeal and glamorous design. These often have purely mechanical movements and are powered by springs. “Designer brands like Breguet, Blancpain, Zenith, and Ulysse Nardin are well known for their exceptional attention to detail, complications and the overall craftsmanship. According to Abby, “Each timepiece is hand assembled by master watchmakers in Switzerland.” With all this in mind, and considering that a luxury watch is an investment that must stand the test of time, it would be wise to do your shopping in person as opposed to on-line. A fleeting instant or an interesting space, a photograph can capture emotions and an atmosphere where words cannot. Your wedding pictures are a cherished keepsake that will be passed down through generations. Photographers are not only artists but storytellers and their visions as well as their styles vary. Look through their portfolios before hiring and choose the photographic style that feels right for you. The photographer is one of the most important decisions you will make in your wedding planning, so choose wisely. LIGHT PAINTING - is a photographic technique in which exposures are made by moving a hand-held light source. Man Ray, in his 1935 series "Space Writing," was the first known art photographer to use the technique. Exposures can last three or more minutes, during which time models must remain completely still, and “light painters” (photography assistants) will move quickly through the frames, manipulating light tools which burn light effects into the picture. This method is difficult to master, and there are few photographers in Calgary who are skilled in the technique. See page 198. FIRST LOOK - Another photographic trend that is becoming increasingly popular is a “first look” photo session. These are special opportunities for the bride and groom to spend a few moments together before their wedding ceremony and have that moment preserved forever. Typically, a photographer will first scout out a spot that is away from guests. Then, the groom will be lead over to wait anxiously for his bride to tap him on the shoulder so he can turn around, and voila! These are brief private sessions where the photographer is able to capture the intimacy of a couple seeing each other for the first time on their wedding day. PHOTOGRAPHIC ART & ALBUMS - Professional photographers take a great deal of pride not only in their photographic images but also in their creative printing choices and the albums they produce. Photographers have a very close relationship with the finished product. If you allow them the opportunity they will present you with creative and beautiful options for a wedding album that will become a cherished keepsake for the rest of your life. What was it like working as a team alongside another photographer? “Alan Maudie is a true professional with an easy personality that made it easy to collaborate and bounce ideas off each other. I provided Alan with the creative landscape so he could do what he does best. Wedding Planner Lynn Fletcher paired the two of us knowing that we would become friends and communicate well. We have the same interest in relating and connecting to our clients on a personal level to capture the wedding story. How long did you work with Alan Maudie prior to the wedding in order to prepare for this event? “About four months prior we had connected over the phone a few times and in the weeks leading up to the wedding we had two meetings to scout the locations that would fit into our wedding story. After we confirmed our locations we could determine the flow of the day.”

CONCEPT - PHOTOPHILCRO

What is the process of working as a creative team, from concept to completion? “It begins with brainstorming which turns into researching which turns into creating storyboards. Then we edit down the ideas and create a timeline of the day. With the ideas in place we begin communicating with vendors which provide the technical support. I will then meet with the bride and groom for a coaching session and give a storyboard overview so they can rest in the knowledge that the team will be creating the best photos possible. Depending the complexities of the ideas, there may be a dry run with the technical team a few days prior. On the day of the wedding we play!” What was the vision for this particular wedding? “I planned large-scale photo shoot settings that would increase the client’s overall wedding theme – Versailles, Old World, and Fairytale. There was room for Alan, the photographer, to balance my creative direction with his photo journalism style. We planned that we would get the epic shots and that Alan would also be able to capture intimate and relaxed moments for Samantha and Jon with no signs of creative production.” We looked at the job as an opportunity to play, adding to one another’s craft. We were excited for the outcome of what two creative minds could come up with. There were a lot of creative meetings where I created story boards to communicate the vision beyond what words could describe. Together we were able to capture the epic vision that was imagined for Samantha

"In the early hours of the wedding day, Brad gently woke me up to tell me how much he loved me before retreating back to his friend's suite. It warmed my heart as I knew I was marrying my true partner of life. After getting ready with the wedding party in the morning, the next magic moment was the "First Look" that Edward Ross and Leya Russell orchestrated. They captured the moment of expression of how much love we felt for each other with our wedding party surrounding us. I remembered the joy, excitement and pride that I felt for my handsome groom. At 5pm, the wedding party, mother of the groom, bride's parents, Brad and I walked down the sandy aisle to the song, "Somewhere Over the Rainbow," sung by Hawaiian artist, Israel Kamakawiwo'ole. Our Minister, Diego Vidal, was really friendly and made our guests feel at ease. It was truly the perfect moment as I felt so incredibly lucky to be surrounded by the people we loved and who loved us on a beautiful beach against the blue Sea of Cortez, bluebird skies and the famous Arch and its rock formations in the background. At sunset, we hosted our reception on the outdoor terrace of the El Patron restaurant at Villa del Arco. We feasted on several kinds of delicious salads, fresh seafood, chicken and roast beef. For dessert, we enjoyed chocolate cake, creme brulee and fresh fruit parfait. As the night fell, we danced to our favourite tunes from our music collection. When they are matured, we process them, dry them and cure them ourselves.” Animals raised on the ranch are not fed corn, soy, or filler; they eat natural grass that is native to Alberta. Says Chef Monteiro, “Some of the grasses they eat have been wiped out by fires, so we have had to bring in the seed, grow the grass and then feed the bison from that. The level of omega 3’s in our animals is off the charts because of what they eat, and the fact that they are not forced to get big. They are allowed to graze naturally and enjoy a good life.” Canadian Rocky Mountain Ranch was built on 540 acres of lush foothills in order to provide their restaurants and customers with high quality products produced in a natural, humane and sustainable manner. Today, they are credited with building some of finest herds of elk and bison in the world.

UMAMI Taste, or gustation, is one of the traditional five senses. There are five basic tastes: sweet, bitter, sour, salty and the most recent addition to the group - umami. Japanese for “savoury,” umami was coined at the beginning of the 20th century by Kikunae Ikeda, a chemist desperate for a way to describe the taste of seaweed and dashi. Umami has a mild, but lasting complex aftertaste that is difficult to describe. It induces salivation and a sensation of saturation on the tongue. By itself umami is not palatable but it makes a great variety of foods pleasant, especially in the presence of a harmonizing aroma. Ingredients with very strong notes of umami include tomatoes, cured meats, cheeses, mushrooms, truffles and soy sauce. Even more so than salt, umami tends to involve the entire mouth, including the tongue, throat, roof and back of the mouth, and it lingers on the palate, making it extremely satisfying.

The classic definition of a cocktail is a beverage containing three or more ingredients, one of which must be a spirit. Through passion, skill and imagination however, a mixologist can transform a rudimentary drink into a sensory emotional experience. They are dedicated to the art, mystery and science of the modern cocktail. Some people apply colours to a canvas, or compose music, and some people create cocktails. A mixologist’s world is full of apothecary jars filled with syrups and bitters, 100 pound blocks of ice and the wonderful evocative aroma of hickory, cigar, rosemary and cherry. Just walking through the door to a proper bar, with a mixologist on site, one's senses become excited. Flowers and scents have the ability to shuttle you into another time and place using memory as a conduit. Cocktails have the ability to engage the amygdale, the part of the brain that associates smell with memory and emotion. The connection between what you smell, taste and feel is one of the most powerful tools at a bartender’s disposal. Inspired by some of the giants in molecular gastronomy like Ferran Adria, Heston Blumenthal and Grant Achatz, today’s mixologists are focussed on using recently developed techniques equipment and ingredients to manipulate textures and flavours. They challenge conventional thought and people’s perception of what a cocktail should be. “The No Speak Americano is my tribute to the first bad-ass drink that James Bond ever ordered... the Americano,” said Dominik Aschauer, Bartender at Cilantros, in a Luxe interview. The essence of an Americano is a combination of three basic ingredients: Campari, vermouth (Punt e Mes) and soda. As with all fine cocktails, quality of ingredients is important. “In my version, I combine ingredients that pair well and complement each other with what I love. I love black licorice and I’ve always loved tea, so it has house made black tea and my star anise syrup in it… and of course all the cocktailers are putting bitters in their cocktails, so I add a little rhubarb bitters and Asperol.” Christina Mah, General Manager and Mixologist at Hotel Arts, describes mixology as “an art form with many different components.” From house made ingredients and preparation of the cocktail, to the final presentation of the final concoction, Christina believes that quality of service plays a large part in the guests’ overall experience. Christina’s approach to mixology is to take culinary practices and apply them to mixology and the use of aromatics. Christina has also recently been exploring the use of liquid nitrogen, even though she admits that she’s “not really one for chemicals.” At Raw Bar by Duncan Ly, Christina treats the preparation of each cocktail as Chef Duncan Ly would with each dish. Each flavour and ingredient not only complements and works together, combined they complement the dishes that Chef Ly creates. “My favourite cocktail is the Aviation, a classic from the 20th century, because it has a good balance between ingredients.” It also uses gin, a spirit Christina believes to have the complexity that other spirits don’t. She’s says, “It’s refreshing and we’ve had it on the Raw Bar by Duncan Ly menu for the past two years.” Serving signature drinks at weddings is a simple and sophisticated way to personalize your wedding reception. But why stop at one recipe when you can design an entire drink menu? Design a personalized cocktail menu for your guests incorporating drinks or recipes that you adore. Use fresh herbs, twists and garnishes. Flowers, tender greens, herbs, wood and citrus; everything from elderflower and lavender to lime, are all at the disposal of the creative cocktailer. Trends in cake design don’t change as quickly as they do in fashion, however year after year pastry chefs all over the world are challenging themselves with innovative and edible creations. We asked Judy Crowe, Lead Cake Artist of Cake Sensations, for some exclusive insight and expert advice into this year’s hottest new luxury wedding cake trends and here is what she shared with us. TALL TIERS - While the average wedding cake is still three to four tiers, some couples are choosing to double the size of their wedding cake by interspersing tiers of four to six inches of sugar or real flowers between each layer. It is not uncommon for modern brides to request a cake over five feet tall. DESSERT TABLES - Dessert tables with a wedding cake as the centerpiece, along with many choices of macaroons, meringues, truffles and candies, are personalized and elegant options for a wedding celebration. Variety allows you to further personalize and also cater to more of your guests' preferences. TEXTURE - There are so many methods used to incorporate texture into beautiful cake decorating. Cake tiers resembling the bark of a tree, covered with silver edible sequins, sugar jewels, or layered with delicate ruffles, are just a few. Often used on only one or two tiers, some decorating techniques from 25 years ago are making a comeback with a modern twist, such as edible lace.

SPARKLE - Whether it is bands of rhinestones, dangling crystals or edible jewels, cakes that sparkle make a beautiful centerpiece. Brooches, jewels and pearls can also be added for extra sparkle. Made from various forms of sugar, they can be gilded with real edible gold, or pearl finishes. FAVOURS & FLAVOURS - A mini cake decorated like the wedding cake boxed to take home is a great way for guests to enjoy the wedding cake again the next day. Alternatively, porcelain tea cups with a gourmet cupcake inside make beautiful and delicious individual gifts. Unique artisanal flavours are also a great way to delight your guests and offer a unique experience. Try floral and herbal flavours like lilac, violet, rose and green tea.

SPECIAL DIETS - There are more diet concerns faced by today's bride and groom than ever before. Most weddings need to accommodate guests with nut allergies and one-third of Canadians are choosing gluten-free, due to celiac disease, gluten-sensitivity or simply because of preference. “When a cake goes into production, sugar flowers and special embellishments (edible lace, jewellery, cast or pulled sugar features, moulded items, sculptures etc.) are prepared. Unique structures may need to be built and hanging crystals prepared to size. We coordinate with the venue and or wedding planner regarding the delivery time and cake table preparation. The cake is transported in several pieces and assembled on site by a cake artist and assistant. The finishing details are applied on site to ensure that the cake looks sensational and is not damaged during transportation.” – Judy Crowe, Lead Cake Artist - Cake Sensations
