Light a grill or heat a grill pan. Using a small, sharp knife, remove the stems from the peppers and reserve. Cut around inside the peppers to detach the membranes and remove the seeds. Using a butter knife, fill the peppers with the cheese mixture and reattach the tops. Rub the peppers with olive oil. Grill the peppers over moderately high heat, turning occasionally, until blistered all over the cheese filling is piping hot, about 7 minutes. Transfer the peppers to plates and serve. The cheese filled peppers can be refrigerated overnight. Bring to room temperature before grilling.

Preheat oven to 375ºF. Cook bacon in a medium fry pan over medium-heat until lightly crisp. Remove bacon and drain fat. Add 2 Tbsp olive oil to the hot pan, along with onion, garlic, chopped mushroom stems, zucchini and herbs. Sauté under tender, about 5-10 minutes. Combine veggies with bacon.

Preheat grill on medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
Remove the stems from the Portabella mushrooms and finely chop. Set aside. Using a spoon, remove the gills from the mushrooms and discard. Brush mushrooms with oil.
Stuff the mushroom caps with mixture, sprinkle cheddar on top and drizzle with olive oil. Bake until cheese is lightly golden, about 15 minutes.
These scallops are diver caught and individually selected by hand. This means there are no negative effects to the environment.
