aaaah, to have Greece and the Greek traditions threaded into our cover story by way of the Menounos family. What a perfect ode (Greek for a lyric poem), in a sense, to Cambria Style. It fits succinctly with Cambria’s American story, our entrepreneurial founding’s rich history, our products’ unique and ever reaching creativity in design, our attention to detail, all culminates with the import of our technology from European inventors, all so much in the traditions of ancient Greek culture. It was indeed this Greek history that inspired our founding fathers in their creation and design of our great country, America. From the historians of Greece and their awesome storytelling, to Greek grammar and its early age study by our founding fathers, to the writings of Plutarch and Herodotus, with the unthinkable Greek victory in the famous Persian War; thereby inspiring our founders years later in their own revolution. Plato’s story of Socrates, again seeds to our founders, solidifying the design of a “Republic” with a much-needed balance of power in government. The Greek history, which is fascinating in all forms, is the foundation of our nation’s structure—our very architecture as a government, and the genesis of one of our nation’s key paradigms—the greater good of community before that of the individual. We honor those of Greek descent, and thank them for the unprecedented and vital influence they had on our America and its very founding. Enjoy Style’s Summer/Fall issue, 2015!! Our cover profile, Maria Menounos, is the epitome of a woman who greets those moments with utter abandon and boundless energy. Taking chances and following her heart has paid off time and time again, both personally and professionally. What began as a phone call from Maria and her partner Keven after they flipped through an issue of Cambria Style at the onset of a kitchen re-build has blossomed into a real friendship. To say we were welcomed into her home would be an understatement. Instead, she and her entire family—including her parents, his parents, and a bevy of pets—embraced us as we all oohed and aahed over her stunning new Cambria kitchen. It was an experience we won’t soon forget. And next, it’s on to Act II—the master suite!—so stay tuned. Just as gutsy, and having recently published an incredible memoir, is Alana Stewart. She is a beautiful example of inner strength and calm as she continues to grow and evolve with each new venture. Our visit with Alana to discuss her kitchen remodel coincided with a visit from friend Mariel Hemingway, among others. And in another first for Cambria Style, all of this took place during the shooting of Alana’s new reality TV show for E!. In celebration of summer, we’ve also filled our issue with whatever you might need to make the most of the season. NICOLE SASSAMAN’S DESIGN PHILOSOPHY IS SIMPLE: START WITH SOMETHING YOU LOVE. “If you begin with one item that really speaks to you, it’s easy to create the rest of the space around it,” says the L.A.-based designer, who has turned real estate investment and house flipping into an art. “Right now, modern design

feels very fresh and right, and the strong lines and colors of this style are perfect starting points for any room.” Sassaman points to the main characteristics of Modernism, the prevailing design movement of the mid-20th century: simple but beautiful lines, streamlined detailing, exposed hardware and joinery, and humble—even industrial—materials. In short, the idea that form should follow function—a concept in keeping with the current interest in simplified, mindful living. Pair the details with innovative, but enduring design investments like highly crafted furnishings, wood flooring and simple but classic stone countertops—such as the timeless looks in Cambria’s Marble Collection or the Desert Collections for those seeking a sleek and monochramatic look.

DESIGNERS LOVE LED TAPE LIGHTING FOR ITS VERSATILITY, USING ITS SOFT GLOW TO DEFINE PASSAGES BETWEEN SPACES AND TO HIGHLIGHT KEY ARCHITECTURAL FEATURES.

Next time you’re in a spectacular space—a beautifully designed restaurant or a stylish friend’s home, say—take a moment to notice the lighting. Chances are, it’s not the first element you became aware of. Color, pattern, artwork, furnishings: these are the attention-grabbers in these rooms—as they should be. But without a well-planned and wellexecuted lighting scheme, none of those design features would shine. “The proper application of light will allow the room to be seen at its best,” says design-build contractor Ramsin Khachi of Khachi Design Group in Oakville, Ontario and Cambria Brand Advocate. “Good lighting design can dramatically affect the ambiance in a space, even taking it from a clinical look to a more seductive atmosphere.” As powerful as it can be, lighting isn’t always simple. Not only does a lighting scheme depend on the

right placement, but also on the right bulb. And there are more choices than ever before. As incandescent bulbs—or “lamps,” as designers and the lighting industry know them— have been phased out in favor of more efficient alternatives, we now have to choose between compact fluorescent lamps (CFLs), halogen lamps, and light emitting diodes (LEDs). The clear favorite in the design world is the LED.

ENERGY EFFICIENCY AND LONGEVITY

“LED lamps have so many benefits,” says designer Beth Whitlinger of Beth Whitlinger Interior Design in Foothill Ranch, California. “They’re more energy-efficient than CFLs, can last for decades [based on an average daily use of three hours per day; if you use them more, they won’t last as long], and when specified correctly, provide the crispest, cleanest light you can find.” While the advantages of LEDs

TAKE THE BULB TO THE STORE

are clear, Whitlinger does add some caveats. “Price is the big deterrent to using LEDs. Although prices are coming down, and you can certainly find inexpensive bulbs at the grocery store or at home centers, those tend to have a much poorer quality of light than the more expensive bulbs, which cost anywhere from $20 to $60 each.” Lower-end bulbs are typically only available in one color “temperature” (basically, where the light falls on a cool to warm color scale; see Glossary, p. 17, for more details), and tend to look very cold and artificial. “Most people are only familiar with that cheap, cold LED look,” says Whitlinger. “But when you pick a warmer LED, the effect is totally different.”

CREATIVE DESIGN IDEAS

Besides energy efficiency and longevity, LEDs have another benefit that makes them particularly attractive to designers: They don’t get nearly as hot as incandescents or halogen bulbs. “The low heat emanation allows for creative uses that were previously difficult or even impossible to achieve in specialty locations such as display shelf lighting, backlighting, or even in wine cellars,” says Khachi. Designer Robin Rigby Fisher of Robin Rigby Fisher design in Portland, Oregon, agrees. “We use LEDs inside glass cabinets or as under-cabinet lighting all the time. Or, we’ll use LED tape lighting—a flexible strip of tiny LED lights—behind a cove molding at the top of the wall, or in a channel in the wall. The possibilities are nearly endless.”

LED bulbs come in different configurations. To make sure the new bulb will work in the old fixture, take the old bulb to the store.

power of lighting. “I walk around the interior with all the lights out and a flashlight in hand, shining it in different ways to show the different effects we can achieve simply by moving the source of light from one location to another,” he says. “It’s not the first thing most people think about, but the right lighting can mesmerize and impress.”

LOOK FOR A WARRANTY

Some bulbs are warrantied; if you’re buying a pricey LED bulb, make sure the manufacturer stands behind it.

INTENSITY

A measure of the amount of light striking a specific area, expressed in lumens (see below). LUMENS

The amount of light given out in a single direction. For reference, an LED bulb that provides 800 lumens offers about the same illumination as a 60W incandescent; for the effect of a 100W incandescent bulb, look for an LED that provides about 1600 lumens. LUMEN MAINTENANCE

How well an LED bulb maintains its intensity over time. High-quality LED bulbs will maintain 70 percent of their initial output for 50,000 hours or more. W AT T S

T

here’s no other design element that carries the power of color. “It’s the single most effective tool in our bag of tricks,” says designer Billy Beson of Billy Beson Co. in Minneapolis, Minnesota. “Used well, color can infuse a room with personality and energy, and create any atmosphere you can think of.” And yet, as anyone who has spent an hour deliberating in front of a wall of paint-store color samples can tell you, there are few tasks that cause as much confusion and frustration as picking a palette. How to simplify the color selection process? Both Beson and Los Angeles-based designer Nicole Sassaman suggest starting with a single colorful focal point and then building the rest of the scheme around that anchor. “For example, if you’re planning to use a gorgeous rug in your living room, you might pull one of the softer or more neutral shades from its pattern and use that color on the walls, then repeat some of the other colors from the rug in your furnishings and accessories,” says Sassaman. As a general rule of thumb, it’s smart to keep permanant “investment” elements on the neutral side. Stick with classic designs for cabinets as well as flooring and countertops, such as Cambria in Waterstone, Marble or the newest Oceanic Collection. Save the more saturated design choices for items you can change more easily: like paint, accessories, and artwork.

“A black room can look very dramatic, but to keep it from feeling constricting, it needs contrast, so think about deep mouldings and baseboards painted in white or off-white, and add a little sparkle to the space to reflect light around.” Gray is also having a moment. “But not cold, blue-based gray,” says Sassaman. “Look for grays with warmer undertones, for a more contemporary feeling.” Add energy with contrasting pops of bold color like orange, hot pink, or yellow. LIVING SPACES

To figure out which colors (trendy or not) you gravitate toward, Ewen suggests thinking of the places that most inspire you and that make you feel happy to think about. “If that’s a beach in the Caribbean, you might pull sand and sea colors into your rooms; if it’s an Indian bazaar, you might prefer richer spice tones.” While there are no hard and fast rules for which colors work best in which rooms, a general rule of thumb is to choose calming colors like blues, greens, grays, and lavenders for bedrooms and bathrooms; warmer neutrals for the main living spaces, such as living rooms and kitchens; and more dramatic hues—rich red, deep brown, sapphire—for those rooms you spend less time in or use primarily for entertaining, such as dining rooms and powder rooms.

COLOR AND ATMOSPHERE Different hues can create different moods in your design. Here’s how. ENERGIZING

Warm colors like yellow and orange are associated with creativity, clarity, and energy; they’re ideal accentwall colors, or perfect for use in kids’ rooms. Red has been found to stimulate the appetite, so it’s a good choice for dining areas.

Green is the easiest color for the eye to see, so it’s quite literally restful. But any soft, watery shade of blue and green—think of paler, spa-like colors, not saturated ones— will feel serene and soothing. Grays and muted lavenders are also calming picks.

Long connected with spirituality, purple in any shade can give a space a sense of richness and mystery. Indigo has similar associations. And white is the go-to choice for yoga studios and even some yoga clothes, as it’s believed to expand the aura.

Natural shades of green and brown can feel very grounding, and blue is the color our culture trusts the most. Our police and military officers often wear navy blue, and the navy blue suit is a symbol of corporate success.

Today’s flowing floorplans can cause more color confusion. When one space connects to another— think of an open kitchen, dining area, and family room—it can be difficult to know how to choose a color scheme that feels cohesive and yet helps to differentiate each space. Ewen prefers to keep it simple. “Don’t try to use wall color to separate the different areas,” she says. “Choose one complex neutral for the entire space, then let your rugs, furnishings, and accessories create slightly different color schemes in each zone.” Billy Beson agrees, adding a suggestion: “An accent wall in a dining area or on a wall with a fireplace can lend some dimension and create a focal point in an open plan.” For hallways that link spaces, again head toward sophisticated neutrals. “We’re really loving silvery, even metallic, shades right now,” says Beson. “That slight sheen brightens hallways, which are usually dark, and lends a very subtle glamour.”

MARIA MENOUNOS, THE STUNNING HOST AND PRODUCER FOR E! ENTERTAINMENT, was in the despair phase of a DIY kitchen remodel when she discovered Cambria— right in the pages of this magazine. It happened the afternoon she and her longtime partner Keven Undergaro were in a kitchen store pondering design choices and she saw Cambria Style’s Summer 2014 issue featuring actress Amy Smart.

“I said ‘What is this Cambria that so many celebrities are using?’” Maria recalls. “It’s gorgeous—I need to find out more!” A phone call to Cambria got the ball rolling with the right introductions—one of which was a connection to long-standing Cambria fan and interior designer Kelli Ellis—soon that frustrating remodel quickly turned into a stunning success. So much so, that Maria is already at

work on another update to her Los Angeles area home—her master suite and guest bath. Maria says she knew her two-story 1930s white Colonial was “the one” the second she saw it ten years ago. “It was the land—an acre, filled with citrus trees in front, and a huge circular driveway with two magnolias. You don’t often get that kind of space in LA. After we’d bought it, I remember saying to my mom ‘Remember when I was little and said someday I’d have a house that looked like the White House?’” The kitchen, however, badly needed updating: in contrast to the rest of the home, it was drab and dark. The longpostponed improvement finally moved to the top of the priority list in 2014, after two of Maria’s four beloved rescue dogs succumbed to old age. “To the side of our old kitchen was an area we called ‘the dog room,’” she says. “After we lost our German shepherd and standard poodle, it was so sad and empty...We tried rearranging it, which worked for a minute. I couldn’t stand it. Out went the dog stuff, and we started the remodel.”

Maria knew she wanted natural stone but wasn’t interested in the upkeep. Cambria, with it’s ease of maintenance, was the perfect fit for a kitchen that is headquarters for epic bouts of cooking—regularly occupied by two couples­—Maria and Keven and Maria’s parents, Litsa and Constantinos. “Lots of people think they want to put in marble counters, but wow, they are difficult to maintain,” Maria says. “My family and I are real people. We really cook. We beat up our kitchen. I didn’t want any counter surface that was going to be work [to maintain], we already work hard enough.” “Work hard” is an understatement. Curvy, long-haired and gorgeous, Maria looks like she was born to stand on the red carpet. But beneath that composed exterior is a prodigious work ethic. As a child, she helped her parents on weekends when they did early morning cleanup at a local nightclub. And during her teenage years, she helped support herself in college by working at Dunkin’ Donuts. That same

work ethic has continued on into her career in broadcasting, where she’s ACT II: often worked on numerous projects MARIA AND KELLI simultaneously. Her current resume ARE ALREADY includes occasional guest-host duties FAST AT WORK AT PART TWO OF THE on Live With Kelly and Michael, a FAMILY HOME’S stint on Dancing with the Stars, and REMODEL: THE MASTER SUITE starring in the reality show Chasing AND GUEST BATH. Maria Menounos, which was produced by her own production company. As for the red carpet? Well, she’s covered movie premieres and celebrity galas dozens of times in her career for shows like Access Hollywood, Extra, and Today— sometimes attending as many as eight events in one week. “Maria’s commitment to maintaining a dedicated work ethic while cherishing family resonates with Cambria’s core values,” says Editor in Chief, LouAnn Haaf. “She is the epitome of loving what you do without losing track of what’s important. Her commitment to her craft and genuine love and zest for life is infectious.” Maria’s busy life extends online as well, where she and Undergaro have a wide digital presence as founders and CEOs of AfterBuzz TV, which offers a kind of “postgame” wrap-up show for popular TV shows, and Black Hollywood Live!, an online network dedicated to African-American entertainment news. Oh, and she serves as a global ambassador for the Special Olympics and has authored two New York Times best-selling books. On any given day, she says, she may be traveling, speaking, interviewing one celebrity or another, pitching a new show idea, or simply “rushing around, attached to my iPhone in the most unhealthy way.” Life at home is another story. Home, she says, is where she has freedom to change from “E!’s Maria Menounos—which is a heightened version of me—to just Maria. My hair goes up in a hideous bun; I wear sweats I’ve had since high school, a mismatched shirt, and horrible slippers that definitely need a makeover. I play around on the tennis court with my dogs, or catch up on an episode of The Walking Dead.” Showing the private self behind the glamorous public image has always been important to Maria. In the past, she’s revealed that she wore metal braces to correct a leg condition as a child, and shared details of her teenage struggles with weight gain. Her book, The EveryGirl’s Guide to Diet & Fitness, includes a photo of her at size 14. “It’s not that I’m trying to be ‘real,’ this is just who I am,” she says. “It’s important for people to see the reality—to know that the glamour is my work, not me. Don’t get me wrong, I enjoy getting dressed up. But if I’m going to do anything, I want it to be authentic. I don’t have the energy to not be me.”

DESIGN SOLUTION When Maria Menounos began her kitchen remodel, the goal was clear. She wanted to turn a drab, cramped space into one that had a glam look, but that also met the needs of a large, traditional family that has lots of parties centered around food, cooking, and eating. The finished product has the glitz of a movie star and the heart of a workhorse. Milky-white Cambria Torquay, softly veined with cream and gray, gives a sleek elegance to the kitchen’s counters, backsplashes, two large islands, butler’s pantry, and guest powder room. “A white kitchen is timeless,” notes celebrity interior designer Kelli Ellis, who led the remodel. The wall behind the range sparkles with Alexa Marble and Mirror tile, designed by Ellis; a crystal chandelier above an island, reflects the California sun. Everyone in Menounos’s extended family likes to cook, so the kitchen boasts two dishwashers, three sinks, and four ovens.

The main design challenge was to increase usable space with a minimum of demolition. Ellis explains: “I also added what Maria didn’t know she wanted until she saw it—mirrored walls, which open up the space even more and reflect the lush green of the yard.” The kitchen was connected to a newly created family room decorated in a classic neutral palette of white, cream, and gray; new oak floors are stained a light espresso. Dramatic sliding pocket doors on three sides open the whole area to the yard, with its brick patio, fountain, pool, and multiple outdoor eating areas. “The yard is gorgeous,” Ellis says, “and it’s where the family spends a huge portion of their time, so it was really important that indoor and outdoor work together.” In fact, the two flow so seamlessly that it’s hard to notice where one stops and the other begins.

For “just Maria,” family’s always been at the center of life. Her parents are Greek immigrants, and she grew up in Medford, Massachusetts, surrounded by a tight-knit clan that included aunts, uncles, and dozens of cousins. She openly adores her parents, whom she calls “unique people, special, tireless; we complete each other.” That bond’s been strained only once. At 19, while a student at Emerson College, Maria met Keven. Ten years her senior, he was a head writer for MTV. She fell fast and hard. “He was so handsome! And only a few days after we met, he told me about his journey with his dad, who’d died of cancer a few months before, and how he’d taken a massage therapy class to learn how to ease his dad’s pain. I thought He’s smart, handsome, successful, and a caretaker, too? That was it.” The courtship that followed was difficult, to put it mildly; Keven has described it as “Romeo and Juliet without ending in full tragedy.” Keven wasn’t Greek, so Maria’s parents disapproved— vehemently, totally—but Maria wouldn’t budge. “I wasn’t letting my dad tell me whom I could or couldn’t love,” she says. “No one was saying he was a bad person; it was only that he wasn’t Greek. I didn’t accept that.” A crushing split from her parents followed. Maria and Keven ended up living together in a grim basement apartment. The next two years, until she and her parents reconciled, “were the worst time of my life,” she says looking back. Now, Litsa and Constantinos happily share the couple’s home six months a year, splitting time between Maria’s house in California and their home in Connecticut. Maria finds the togetherness deeply gratifying. “Keven’s dad died before all his successes. It’s magical for my folks, having started their lives in villages with no running water, to realize how far we’ve

We eat dinner together as often as we can. My mom cooks all the time. During the remodel, she learned to make lasagna and pizza on the grill.” Ironically, Maria’s parents are now the ones pushing Maria and Keven to marry—their “old world” pressure to tie the knot formed one of the central tensions of the reality show. Maria says that she would have been happy to do just that years ago...if only her parents hadn’t disapproved. Today, after 17 years of living together and being business partners, marriage seems beside the point, she says. Kids are the latest issue. Maria, 37, says she’s acutely aware that “my clock is ticking. My dad pulled me aside recently and said, ‘It will kill me if you have kids without getting married.’ I told him ‘I don’t have time to plan a wedding.’ So that will be our next battle.”

Work on a dozen projects fills Maria’s future calendar. The highlights include a collaboration between AfterBuzz and E! on her EveryGirl brand, a cookbook (publication expected spring 2016), and a partnership with Grecian Delight Foods to produce a line of entrees and side dishes branded as Maria’s Mediterranean Delights. And of course, Remodel, Act II. (Expect to see the details in an upcoming issue of Cambria Style.) Meanwhile, it’s summer in California, and all the doors are open on her beautiful new kitchen/family room. “Now when one of us is watching football and someone else is cooking and someone else is outside, we will all be in the same place,” she says happily. “It’s so magnificent, my dream space. I hope to never leave this place.”

With floor-to-ceiling glass walls that open onto a jewel-like patio, garden, and pool, the home is a model for Zen-like tranquility. Giant timber beams extend across the living room ceiling out onto the patio, providing an arbor for climbing vines. And at the center of it all is her gorgeously remodeled kitchen. From the beautiful Cambria countertops in Torquay and Devon to the Kohler farmhouse sink and white cabinets, Alana’s muted, minimalist kitchen serves as the focal point for the house and way station to peaceful backyard living. Her serene surroundings are a reflection of her new mindset. The reality show is one project, but Alana’s primary focus is a world away from the glitzy entertainment industry. It stems from a tragic event that transformed her and reordered her life—the loss of her good friend and fellow actress, Farrah Fawcett, to cancer in 2009. “I never envisioned myself heading a foundation that would fund cutting-edge research as well as further prevention and awareness,” Alana says. But that’s just what she has become, as president of the Farrah Fawcett Foundation for Cancer Research (FFF). The learning curve was steep, Alana admits, but she got up to speed fast. “I know more about cancers and their treatment than I ever thought possible,” she says. The job demands it. Far from a figurehead, Alana works at the Foundation’s office every day, strategizing fundraising campaigns and targeting groups who might benefit from hearing her speak about anal cancer, the type that took Farrah’s life. “We’re a

CAMBRIA IN COMMON Alana Stewart and Mariel Hemingway both believe in creating a healthful, happy life “from the inside out.” Both are country girls who found fame in Hollywood, and are now doing work close to their hearts: Alana as president of the Farrah Fawcett Foundation and Mariel as a healthy lifestyle advocate. They also happen to have Cambria in common. Mariel, who is also a Cambria Brand Advocate, dropped by Alana’s Beverly Hills home while Alana was shooting an upcoming family reality show, and the two hit it off immediately. Though activity swirled around them, the two women weren’t bothered by the hubbub. The pair quickly decamped to the kitchen and became immersed in discussing interior design and their favorite Cambria countertop designs. “We sat down and started talking and didn’t stop,” says Alana of the encounter. “It was like there was no one else around.“ Though Alana lives in a secluded contemporary house and Mariel on a Malibu ranch, Cambria was a good fit for both homes. in here.” From early morning tea to late-night snacks, Cambria can stand up to any amount of wear and tear. “I have a very small kitchen as well,” notes Mariel, “but it doesn’t matter. Everyone gravitates to it. Energy percolates from there.” Her Cambria has stayed pristine through everything from wine spills to her boyfriend’s motorcycle oil spills. “We’ve dropped a huge pan on it and it didn’t even chip,” she says, abuse that the granite in her last kitchen couldn’t withstand. Both women are environmentally conscious, choosing nontoxic and sustainable products whenever possible, a priority that is at the core of Cambria’s mission as well. The family-owned company recycles all the water used in production, and takes measures to limit the ecological impact of the quarries where it gets its stone. The environmental benefits don’t end with installation, either. Cambria is safe enough to be rated as a food preparation surface like stainless steel and, unlike other natural stones, it doesn’t require any chemical sealants. In other words, Cambria is beautiful, versatile, strong, stylish, and healthy—attributes that, fittingly, sum up these two iconic women as well.

THE REUBEN SERVES 4

INGREDIENTS Thousand Island Dressing ½ cup mayonnaise ¼ cup ketchup ¼ cup chopped garlic dill pickles, plus 1 tablespoon pickle juice 2 tablespoons minced onion or shallot 1 clove garlic, minced 1 teaspoon Worcestershire sauce ½ teaspoon kosher salt ¼ teaspoon ground black pepper

Sandwiches 8 slices pumpernickel or rye bread 2 pounds thinly sliced corned beef 2 cups sauerkraut, drained 8 slices Swiss cheese 8 tablespoons (1 stick) unsalted butter, softened, plus for enough for the pan 4 garlic dill pickle spears DIRECTIONS For Thousand Island dressing: Whisk together all ingredients in a small bowl.

Heat a large heavy skillet over medium heat. Working in batches if necessary, add the sandwiches buttered-side-down and cook, covered, until the bottom is crispy, 3 to 4 minutes. Lightly butter the top and flip, adding some more butter to the pan if needed. Cook, uncovered, another 3 to 4 minutes. The sandwiches should be hot all the way through, the cheese should be melted, and both sides of the sandwich should be crispy or browned. Halve the sandwiches and serve immediately, with dill pickle spears and any extra dressing on the side for dipping.

DIRECTIONS For the cilantro sauce: Place all ingredients in a blender or food processor and purée until you achieve an even consistency. IF YOU DON’T HAVE A PANINI PRESS, YOU CAN CRISP UP YOUR CUBAN SANDWICH IN A SAUTÉ PAN OR ON A SKILLET, PRESSING DOWN ON EACH SIDE WITH A SECOND HEAVY PAN.

FRIED EGG SANDWICH SERVES 2

INGREDIENTS 2 ciabatta rolls 1½ cups frisée, torn into bite-size pieces (about 2 ounces) 1 bacon slice, preferably thick-cut, cut into ¼-inch wide lardons 1 tablespoon minced shallot (from 1 small) 4 teaspoons red wine vinegar 1 teaspoon smooth Dijon mustard Salt and freshly ground black pepper ¼ cup crumbled blue cheese, or other sharp, crumbly cheese 1 to 2 teaspoons unsalted butter, divided 2 large eggs

DIRECTIONS Split your rolls and put them in to toast. Place the frisée in a medium bowl. In a small heavy skillet, cook the bacon over moderate heat until crisp. With a slotted spoon, transfer the bacon to paper towels, reserving the bacon fat in the skillet. Add the shallot and cook for 1 minute, stirring. Add the red wine vinegar and let it hiss and bubble for 20 to 30 seconds, then remove the skillet from the heat and whisk in the Dijon. Immediately pour the hot dressing over the frisee and toss with the lardons, salt and pepper.

Heap a generous amount of salad between each toasted ciabatta bottom. Top each salad pile with 2 tablespoons of blue cheese. Reheat the skillet over medium-high heat. Add some butter and swirl it to coat the pan. Crack 1 egg into the skillet, season with salt and pepper, and reduce the heat to medium. Cover with a small lid to help egg cook quickly and evenly. In one minute, you should have a perfect sunnyside-up egg. To keep egg from running off the sandwich, flip the egg and cook for 20 to 30 seconds. Top the baconfrisée salad with the egg.

I keep notes throughout the year of wineries I’m interested in visiting. If I like the wine, I might want to visit the winery. You can also get ideas from big wine websites, like Wine Spectator. Michael Agnew, beer expert:

It’s always a good idea to start local. Big cities will have several breweries, but small towns might have just one. Of course, visit breweries that make beer you like.

If you’d like to combine tasting with travel, are there pre-planned tours? LM: There are tours available all

over the world. Just make sure you like the person leading the tour, and that he or she is experienced both in wine and in planning excursions. MA: You’ll find package tours to Europe, and bus tours from brewery to brewery in certain

U.S. cities. Another option is to design your own tasting trip. There are beer guidebooks to every state, so you can create a dot-to-dot brewery tour based on your own itinerary and interests.

Is there a best time of year— or even of day—to taste? LM: In the U.S., I like to go during harvest season, usually from about August to September. The sights and scents of a real winery operating during that time just can’t be matched. MA: The best time to taste is first thing in the morning, when your palate is clear. But no matter the time, tasting is meant to be fun, and not too serious.

Is it okay to go in “cold,” as a tasting novice? LM: Absolutely. But if you want the most from your experience, it’s not a bad idea to look up “wine tasting etiquette” or “wine 101” online before you go, so you’ll know what to expect.

HERE’S WHAT TO LOOK FOR AND NOTE IN YOUR JOURNAL APPEARANCE The three components of a beer’s appearance are clarity, color, and foam. Clarity ranges from clear to hazy to so cloudy you can’t see through the beer. Color can be light, medium, or dark. For foam, consider the texture, amount, and how long it lasts. The attendant will tell you how the type of beer you’re tasting should appear— so you can judge whether it’s successful or not.

AROMA You’ll get the best sense of a beer’s aroma right after it’s poured. You’re looking for characteristics of malt, which can smell like baked goods, roast coffee, or chocolate; hops, which has plant-related scents like citrus, pine, hay, herbs, or spice; and yeast, which can be fruity or spicy like bananas, oranges, cloves, or pepper.

TASTIN MOUTHFEEL Here you’re paying attention to the body of the beer. Is it a really light, crisp beer, or is it full and chewy? Carbonation also comes into play. Some will have really low carbonation; others are super-effervescent. Also notice the creaminess—is it velvety?—or astringency, and whether it warms you as you drink.

ALCOHOL CONTENT This plays into both aroma and taste. If the beer isn’t well brewed, it will feel and taste solvent-y and hot. But if the alcohol is well integrated, you’ll find some nice sweetness or even roselike, floral tones.

OVERALL IMPRESSION Appearance, aroma, taste, mouthfeel, and alcohol content are more objective observations—you shouldn’t make any judgments when noticing them. But the overall impression is subjective: It’s what you feel after tasting, when you sum it all up and decide whether you like the beer or not.

TASTE In addition to the flavors you noted in the aroma, when tasting, you’ll also find elements of sweetness, bitterness, and balance. Also, pay attention to the same qualities you noticed in aroma, and note which you taste most. Is it mostly malt? Mostly hops? Mostly fermentation?

WHAT DOES ‘CRAFT’ REALLY MEAN? Webster’s dictionary defines craft as “an activity that involves making something in a skillful way by using your hands.” But the Brewers Association defines a craft brewery as an independently owned, “small” brewery—one that produces 6,000,000 barrels or fewer—that uses traditional ingredients and processes. “But that definition says nothing about quality, and some small operations don’t fit under the guidelines,” says Agnew. THEN YOU’LL LOVE THIS APPEARANCE Tip the glass outward, not toward you, over a white piece of paper, so you can look at the belly and the meniscus correctly. The attendant will tell you why it looks the way it does—why the rim is brown instead of red, for example.

CHARDONNAY Chardonnays, especially New World styles, show rich, citrus-like and tropical fruit flavors which similarly compare to the deliciously creamy, fruity aromas and flavors of most wheat beers.

AROMA Always swirl the glass first, then put your entire nose into the glass. Some people will just wave it around their face, but that doesn’t work. Sticking your nose into the glass will help you pick up all the aromatics of the wine.

MERLOT/SHIRAZ South American Merlot and Australian Shiraz are fantastic wine equivalents to the roasty, chocolate-filled flavors of many porters and stouts. The grapes from these regions take on flavors from dense cocoa to dark blackberry—a match made in heaven. PILSNER >

Make sure you suck a bit of oxygen into your mouth along with the wine you’re tasting. Oxygen helps open up the wine aromatically, and helps you get the most from each sip.

Here, you’re thinking about how the wine feels on the palate. Does it hit the middle of your tongue, the tip of your tongue, your cheeks, the roof of your mouth? Any good tasting room will give you a full explanation of what you’re looking for in terms of mouthfeel.

How does the wine finish on your palate after you’ve swallowed it? Does it have a short finish, or does it resonate for a long time? Sometimes, the age of the vine will give you a more structured wine, or the length of time it’s been aged in the barrels will come through. Again, a good attendant will help guide you in evaluating the conclusion.
