Te Awamutu College live-streamed its awards presentation ceremonies for the firsttime last week which gave its new Facebook page, launched earlier in the month, an added boost. At the awards themselves, held in the school hall, Megan Walker was named school dux and Matthew Yarndley the proxime accessit. Megan and Matthew were both recipients of Waipā Youth Academic Awards last month. Megan has excelled throughout her time at the college and has consistently achieved excellence in mathematics, statistics, physics, chemistry and economics. She won the Waipā District Council service to the community award for chairing the service committee which raised funds for SPCA, Can Teen and Loving Arms. Matthew, who was one of four head students this year, has been a member of the college 1st hockey XI since Year 9. He aims to study a Bachelor of Health Science with a major in public health.

Other Year 13 students awarded tertiary awards including Max McPhee who received a $35,000 Wellington Kahotea Scholarship (School Leaver Scholarships for Outstanding Achievements) at Victoria University in Wellington. Friendships forged in the heat of a wood-fired anagama kiln in the back-blocks of Roto-o-Rangi are central to an exhibition at Te Awamutu Museum until December 23. ‘Forged in Fire’ tells the story of how the kiln came to be built on potter Janet Smith’s rural property in 2019. Overlaid with that is the tale of friendships formed during workshops where potters camping out on Janet’s land oversee 24/7 ‘stoking shifts’ over several days to ensure the firing processes go to plan. It’s a technical minefield with masterful results. Janet, who is president of Waiclay, has been involved with the exhibitions they have held jointly with Waikato Museum for more than 20 years. That amounts to about half the time she has been a working potter with a four-decade interest in building kilns; she built her first in Taranaki’s Midhurst over 30 years ago and has been buying or building them ever since. Several others followed, each one adding to the accumulated knowledge around the process and each one led by Janet Smith at the entrance to her almost four-metre long anagama kiln.

I’m reassigned…

This is going to be my last column for a wee while. The ever changing beast that is Covid has impacted on my duties and I have now been reassigned temporarily. I am to be working on the Covid Response for the foreseeable future which sadly means my business as usual duties will be severely impacted. I have been assured that I will be able to continue somewhat with my community role in between Covid duties however these duties are projected to be extremely busy. I was delighted to read this morning that Waikato DHB has finally reached the 90% target for first doses, this will greatly help myself and my colleagues with Covid duties. The Covid-19 Protection Framework, or traffic light system as its colloquially known is coming into effect on December 3. It will greatly increase our ability to live life more normally, however this may also increase transmission. I urge everyone to follow the

rules. The basis of my new role is to police the traffic light system. Red The red setting will allow hospitality to open with vaccine certificates, but gathering limits, physical distancing, masks and other public health measures would be used. Record keeping and scanning will be required, with face coverings mandatory on flights, public transport, in taxis, retail, and in venues. Public facilities can open with up to 100 people and one metre distancing. Retail needs to have one metre distancing too. People are advised to work at home, but ECEs, schools and kura can open with public health measures. Some outdoor community events will be allowed with limited capacity. Orange At orange, gathering limits can lift. Places that choose not to use vaccination certificates

will either be closed or have public health measures in place. There will be no limits for the following if vaccination certificates are used: Hospitality, gatherings (weddings, worship, marae), events, close contact business, gyms. Without the use of certificates, hospitality and gatherings will have limits applied. Without the use of certificates, events, gyms and close contact businesses will not be able to operate. Green Green is when there are some Covid-19 cases in the community but at low levels. Fully vaccinated people can enjoy all events and hospitality and gatherings by showing a vaccine certificate. Premises choosing not to use certificates will face restrictions similar to the current alert level framework.

Emissions cut

Waikato Regional Council has slashed its carbon emissions – but must now consider tougher targets. Since it began measuring emissions from corporate activities in 2016 the council has reduced measured emissions by 44.4 per cent. That put it on track to reach a 68 per cent target by 2030. But new reporting requirements to include significant indirect emissions, such as those from public transport, means the council will likely have to set new targets.

School says sorry

St Peter’s School Trust Board Chair John MacaskillSmith has issued an apology for historical abuse at the Waipā school. “…I want to acknowledge and apologise for historical cases of sexual, physical and emotional abuse against former students at our school by former staff members or anyone acting in that capacity.” He said they had researched all notifications of abuse documented since records began in the 1930s. Nineteen individual notifications of historical abuse between 1936 and 1981 relating to eight former staff were found. “No matter what came to light, trustees were committed to facing up to the truth and taking steps toward putting things right.”

Staff at Waipā District Council found assets they did not realise they had - but more disturbingly found they had routinely listed other “disposed assets” on their annual reports for years. Some old assets dated back as far as 1947, deputy chief executive Ken Morris told the council’s Audit and Risk committee this week. The $18 million discovery means the council’s 20202021 Annual Report, which council and Audit New Zealand was to sign off this week, will now have to wait until 30 November. In the Annual Report, Morris says council had a continuous data improvement programme in place to identify errors in its asset databases. The

anomaly appears in roading infrastructure improvement work. “I think our asset registers are pretty good after this latest clean up.” Councillor Roger Gordon asked: “how does an asset disappear?” Morris said roading assets were complex and gave the example of Hall Street in Cambridge. It comprises several lengths of road, a layering element, a multitude of components including a subbase, compacted earth, base course and then a top seal. It had overlapping pavement layers which were all separate assets. The council’s asset register had hundreds of thousands of assets like that, he said. Committee chair Bruce Robertson said the council needed to continually

review the data. “We didn’t get it right, but it was immaterial, to the point of miniscule,” he said about the council’s total equity of $1.75 billion. Elsewhere in the Annual Report, council has reported progress with two ratepayer legal challenges. The first dates to 2001 when the council completed stormwater system work in Kihikihi and the second for $2 million involving Cambridge racing identities Sir Patrick and Justine, Lady Hogan. The Hogans’ company Erinic Investments Ltd initiated proceedings last year in the High Court against the council and four other defendants alleging the council was negligent in issuing building consents, inspecting the building work and issuing Code

Compliance Certificates for a commercial building they own. Erinic Investments is claiming at least $2 million in damages with additional losses such as interest and costs. Meanwhile the Kihikihi case involves June and Wayne Atkinson who have lodged proceedings in the District Court alleging the council has been negligent, breached its statutory duty and created a nuisance in relation to a private drain. The couple went to the Environment Court for an enforcement order against the council in 2008 against the council. The court declined the order. The Atkinsons said when the council completed its work to the stormwater system in 2001, the diversion

of urban stormwater into the open drain causes the drain to flood which results in contaminated stormwater discharging directly onto the property. Waipā legal counsel Diana Aquilina said because both matters were before the court, it was inappropriate for it to make any further comment on the proceedings.

Submissions from WaikatoTainui, Hamilton City Council, Waipa and Waikato district councils left Parliament’s Environment committee with “a lot to think about.” That was the summing up by committee chair Eugenie Sage after hearing presentations on the Resource Management (Enabling Housing Supply and Other Matters) Amendment Bill from those councils this week. The Government announced last month it would introduce legislation to increase housing supply in New Zealand’s five largest urban areas: Auckland, greater Hamilton, Tauranga, Wellington and Christchurch. The requirements would enable landowners to build up to three houses of up to three storeys on most sites in those tier one cities without the need of a resource consent. Waipā mayor Jim Mylchreest and Waikato deputy mayor Aksel Bech both submitted the bill captured towns in their districts as tier one cities which they believed the bill did not intend to do.

Those towns include Te Awamutu, Kihikihi, Cambridge, Ngaruawāhia, Taupiri and Tuakau. “Towns are not little cities,” Mylchreest said. “The bill should be clarified to refer specifically to the tier one urban environments of the five major cities of New Zealand: Auckland, Hamilton, Tauranga, Wellington and Christchurch and they should not apply to the tier three urban environments of surrounding towns.” The Waipā towns were not dormitory suburbs of Hamilton and function as independent service towns for the surrounding dairy farming rural areas, he said. “Waipā District Council has had

an effective growth strategy which has been in place since 2009. “It has been successful in identifying and enabling the staged release of growth cells for the future development of residential and business areas that will accommodate projected population growth beyond 2050. “This strategic planning has enabled the council to coordinate the forward funding and installation of bulk infrastructure in tandem with development demand.” Mylchreest said he and the council were concerned about the unintended negative consequences of “ad hoc intensification” on the amenity and character of the existing suburban living environments in

Waipā towns. “Without wanting to disclose confidential information, the council is liaising with Kāinga Ora and private developers to better deliver a mix of affordable housing in our towns,” said Mylchreest. Later in the hearing, Waikato Regional Council’s Pamela Storey said Waikato appeared to be an “after thought”. The council’s submission aligned with other submissions made by the other Future Proof Waikato councils (Hamilton, Waipā and Waikato). “Much of the focus of the bill appeared to be on Auckland and Wellington, and there seemed no clear understanding of Waikato’s unique environment, including the Waikato River,” she said. Sage (Green Party) joined Anahila Kanongata’a (Labour), Tamati Coffey (Labour), Scott Simpson (National) and Simon Court (ACT) to hear from Mylchreest, Bech, Linda Te Aho (Tainui) and Ryan Hamilton (Hamilton), The parliamentary Environment select committee conducted days of urgent hearings on the bill and finished on Monday. It will report back to Parliament on 2 December.

Tīeke: golfers score a birdie

Riverside Golf Club has appointed one of New Zealand’s longest-serving golf professionals and an old familiar face to two key positions at its new Tīeke course. Richard Ellis will become golf director while well-known Waikato golf identity Warren Collett becomes part time general manager. The pair have a combined centurylong golf knowledge and experience. Tīeke Golf Estate is the former Lochiel course renovated over three years by Te Awamutu College old boy Phil Tataurangi and Brett Thomson of Mahi Tahi Golf Project. On the site adjacent to Mystery Creek Events Centre is a redesigned 18-hole championship course and a new club house. It will reopen next month with more than 30,000 native plants back in the ground after the removal of hundreds of old trees and shrubs and the uncovering of sandy soils which sat dormant underneath the turf for more than 25,000 years.

Ellis is a life member of the New Zealand Professional Golfers Association and an honorary life member of the PGA of Australia. “Tīeke is a spectacular achievement, an incredible new course and one that is going to rate highly in New Zealand. There is already great anticipation and huge demand to play Tīeke and it will very quickly become a must play course for golfers from everywhere,” he said. Ellis recently moved to Cambridge from Pauanui with his wife Cushla and children Michael and Sarah. His company Pacific Golf Management have managed the golf operations since September. The Tīeke Golf Estate is named after the ancient North Island saddleback which was once widespread across New Zealand but declined in numbers during the 19th century because of forest clearances and introduced predators such as rats, cats and stoats. Tīeke numbers are on the increase in Sanctuary Mountain Maungatautari and

the Riverside club has formed a unique conservation partnership which will hopefully see the member of the wattle bird family return to the Mystery Creek area. Collett began his golf administration career at Lochiel Golf Club from 1998 to 2007 and has managed North Shore and Manawatu golf clubs. “I’m impressed with the strategy and planning that has gone into Tīeke over the past few years and I’m confident the club can be even more successful,” he said. The club superintendent is former New Zealand Māori golf champion and Web.com player Jason Laing. Riverside Golf Club was formed from a merger between the Narrows and Lochiel golf clubs in 2014. Not long after Waka Kotahi (New Zealand Transport Agency) designated several holes at the Narrows course as part of the proposed Southern Links Expressway. After a lengthy settlement, the club sold Narrows enabling the investment to take

place on the former Lochiel site. Once Tīeke opens, the Narrows course will close, and ownership of the land revert to Waka Kotahi. It will not be used for golf. “When I first heard about the renovation taking place at Lochiel, I was interested to see the changes. I didn’t expect to see an entirely new course and club house. It’s not just a new course but a fantastic development and a golf course unlike any other in New Zealand,” said Ellis. “I’ve been involved in the start-up of a number of international golf courses, the Tīeke course and clubhouse is extraordinary, and I know once the members play the course, they will be very proud to be part of what has been created ‘One of the best courses in New Zealand’.” Collett said he said yes when he was approached to work at Tīeke. “I was so impressed with the layout, the quality of the new course, and the beautiful new clubhouse, I just knew I had to be involved.” Advertorial

The answer is 42. In a world where there are many questions, we can take solace from the knowledge that the answer to the ultimate question of life, the universe, and everything is 42. Seriously? Well, sort of. This now timeless joke began on a radio show in 1979 and was then published in a book of the same name, The Hitchhiker’s Guide to the Galaxy, presented by the author as a “trilogy of six books.” Needless to say, a canny, modern reader will see the fallacy in what is presented and find truth elsewhere. Or perhaps not. In a world with many questions we also find a world with many experts. Opinions come cheap and the barriers to sharing said opinions are low. Henceforth, we find ourselves in a world where everyone is an expert, even without the burden of proof or expertise. Why 42 is such a perfect answer is confirmed in the source; a supercomputer named Deep Thought who, according to the novelist, took 7.5 million years to compute the answer to which no-one truly knew what the question was. However, the answer still remains at 42. If you’re not spending time contemplating the meaning of life, the universe and everything else you may well already be dead, or at the very least, numb. We just can’t help ourselves, which is why we humans harness anything we can that might present an answer — even if the question is pointless. Adam and Eve fell for this trap, which shows how old the problem is of mankind attending to the wrong questions. When the serpent asked them, “Did God really say?”, they considered the question and, in doing so, fell into deception. Today, the modern human uses the internet to find answers, not knowing that the internet only shows you what you already believe. False confirmation leads to false reality, and so the downward spiral of intelligent life goes. The disciples of Jesus whom he referred to as ‘The Sons of Thunder’ asked Jesus if he would delight in them calling fire from heaven to consume unclean, unhelpful Samaritans. Clearly this was the wrong question to ask, and a rebuke followed. Then and now, we just don’t see things the way we should. Perhaps the reason we have the wrong answer is because we are asking the wrong question. Facing Pontius Pilate, Jesus remained peaceful and unflinching. I recently posted a blog titled “Without Jesus We’re Stuffed”, in which I spent time presenting scripture as the answer worth considering. You might enjoy reading it to find fresh insight, or you could put your hope in the answer calculated by Deep Thought. Choosing not to accept the answer God gave to us, found in Jesus, might well mean your best option is the number 42.

Kermit said “It’s not easy being green” and he’s right. The wife tells me I have been a bit negative today and she’s right too. Of course my view is that I am entirely justified in my opinions; some days things are just plain annoying. Let’s see what you think. We’re all supposed to wear masks when out in public, particularly indoors. I’m forever having to go back to the car to get my forgotten mask. But what’s with the people who insist on having their nose poking out over the top of it? What’s the point of that? We recently paid the equivalent of a dollar a day for a year for a worm farm only to discover you don’t get any worms with it. That’s like ‘Battery not included’ thanks very much. Actually the lovely salesperson at the shop arranged for her colleague to give us a container full of worms from his farm but apparently it’s still going to take 8 - 9 months to get up to a working population. Grated cheese in a plastic packet - that’s pretty annoying more like an ecological clod-hopper than the light footprint on the earth we should be striving for. Brazil and their Cop26 performance - also rather annoying. I was brought up to tell the truth and not to break promises. If I tell Inland Revenue I made less money last year than I actually made I could be in big trouble. Brazil have promised to eliminate illegal de-forestation by 2030, even going so far as to claim they can do it by 2028. Is that right? How come de-forestation was up 22% last year? Way to go Bolsonaro. Watch that deforested space. Then there’s the Australian reporter who flew with two colleagues from Australia to England to interview Adele about her new album. Sony indignantly withheld footage of the interview when it turned out that the Aussie reporter hadn’t actually listened to the album. Adele is alright though; she gave a nice interview to Oprah in which she talked about how she dealt with mental health issues on days when she had no other plans by going to the gym with her personal trainer. So glad she made it through. She must be an inspiration to the many people who have to deal with mental health issues at the same time as getting to the end of one busy cash-strapped day after another. And do we really need three TV ads for oversized utes in one break? With a nice deep gravelly voice-over to make the wannabe ute owners feel manly as they contemplate the purchase of a vehicle which will do nothing to enhance their or their children’s future - and will very likely damage it. Actually the term she used was ‘Negative Nancy’ - that was quite annoying too.

Of ports and trucks By Peter Carr

I drove over the Kaimai Range twice on a warm and muggy Tuesday. And along with all the car drivers who are entitled to a road speed of 100kph I struggled behind a queue of large trucks. Most would have been driving for or from the Port of Tauranga, or working with Tauranga-based industries where the base product, certainly of imports, would have crossed the wharves. The reason I bring this to your attention is that just about every one of those trucks would have passed through – or very close to – Cambridge. And for that matter Te Awamutu too. And those with the King Country and Taranaki at one end of their journey would be very much the beneficiaries of a third bridge at Cambridge. However, it can also be argued that those trucks will, within a few years, be able to join SH1 near Tamahere when the planned Southern Link bends its way under the southern end of Hamilton. Coincidental with this was that this evening I took part – or at least watched and listened to - a very interesting webinar on my computer screen. The three presenters (two of whom I have worked with) put the case that increasing container ship sizes will drive the ports of both Auckland and Tauranga to reach their limits within 10 years. They argued the sheer size of the required ships (hitherto never seen in this country) will very much slow down the ship exchange rate due to the height of the stacked containers, the width of the ships underpinned by the current pavement strength of the wharf surface that will not support what we may wish to call ‘super’ cranes. The webinar postulated that both ports should be regarded – in container terms – of having limited lifespans. And that both could - and perhaps should – be replaced with a whole new structure in the Manukau Harbour. That siting will markedly reduce ship steaming times and also materially shorten the transit time of container vessels to points south. That would alleviate the over-utilised roading system, bringing into question the need for replacement rail ferries. Back here on the local scene I have not seen the traffic flow statistics of truck traffic in the vicinity of the eastern end of Kaipaki Road. The Waipā District Council will certainly have that measure and the information is publicly available on the web. But, and not to deeply disappoint the proponents for a third bridge, would this become necessary if the enormous weight of trucks that currently stagger/roar along Pope Terrace were replaced by coastal ships? Incidentally the webinar also neatly packaged a great saving in carbon-based fuel emissions per tonne/kilometre. Opinion pieces are only one person’s thoughts or observations - perhaps sometimes tongue-in-cheek to kick-start a conversation. or a worthwhile debate. Anything to get away from the dribble we have been hearing about traffic lights (of the non-roading variety)!

Gathering Place: the update

Fundraising for Te Awamutu’s Gathering Place has topped the $1.2 million mark. Two weeks ago the Te Awamutu News reported that the Te Awamutu Presbyterian Church had put a proposal to Waipa District Council to purchase a block of their land on Mutu Street to provide much needed parking spaces in the CBD area. The sale of this and another block will help finance the construction of a new regional community complex – The Gathering Place. The project is expected to cost $3.3 million and has been a labour of love for Ray Miller and members of the Property Planning Committee who have sought to create a complex which is based on extensive community feedback and nationwide best-practice design. The new building will house a youth centre, creche, two counselling rooms, commercial kitchen, seminar room, hall with sprung flooring (meaning it could be used for indoor sport or dance), small playground and an

auditorium seating 150 people. Ray says the new centre will be a hub in the CBD area and will meet the needs of the community all year round. He says already there has been interest from stakeholders in hiring the auditorium, using the counselling rooms and other parts of the complex - despite the fact that ground is not scheduled to be broken on the complex’s construction until late next year. The main St Andrew’s Presbyterian church building had stood on the site from 1960 but was demolished in October 2015 after lying unused for around 18 months. It had been classified as an earthquake risk. The new Community Complex will be built to the highest earthquake standards. Earlier this year we reported that more than $1.1m had been raised - the latest total is $1.215m. Ray Miller said the Property Planning Committee was grateful for the community support at a time when Covid-19 was having such an impact. He said there had been

A father of three has a long road of recovery ahead of him after a tree branch fell on his car earlier this month. Because of injuries to his neck and spine, doctors say Hedley Edwards will never be able to walk again. Hedley Edwards is a sales rep in Cambridge for Giltrap Agrizone. He suffered his life changing injuries after a branch fell on his car while he was driving to visit a customer on Wednesday, November 3. He is receiving care at Auckland’s Middlemore Hospital. It is expected that he will need to stay there for 6-12 months. Samantha Solomon, Edwards’ partner, says the accident is going to change everything. “It’s only been a short period of time and we are going to be in for a long haul.” The couple are parents to three boys, Braxton 7, Gabriel 6, and Harrison 5. Solomon has spent time with Edwards in hospital, but the children have been unable to see their father,

because of Covid-19 hospital and border restrictions. Edwards was in an induced coma for nine days. He is now awake but is unable to speak because of breathing tubes. “We just have to take one step forward at a time and go from there,” his partner said. Giltrap have been in regular contact with Solomon. “They’ve been really really good.” They asked Solomon if she would be okay with them setting up a crowdfunding campaign to help support the family. Solomon said that she was initially hesitant to the idea. “I agreed to it once I got my head around the future and everything we would end up needing.” Solomon says that on top of everything, the family is going to need to find a new place to live. Their home in Huntly will not accommodate Edwards’ change of mobility. Giltrap Marketing and HR Manager Sam Ogden, says the support from the Cambridge community has been massive – particularly

because Edwards is from Huntly and only worked in Cambridge. “We’re absolutely humbled and amazed that so many people have contributed,” she said. Support has come from suppliers, customers, staff, family of staff and old neighbours. She said that Edwards is well-liked by both colleagues and customers. “He’s a lovely guy, a real firecracker.” By Tuesday this week the crowdfunding Givealittle page had raised $45,880 towards a goal of $50,000. Te Awamutu and Kihikihi residents now need to call ahead for a Covid swab following the closure of the community testing station at the Events Centre. There were only three active Covid cases in Te Awamutu/Kihikihi yesterday and one in Cambridge. Numbers in neighbouring Ōtorohanga and Te Kuiti continue to pop up. This easing in Waipā cases comes as the district leads the way among all Waikato territorial authorities and edges towards the 90 per cent fully vaccinated target. Nearly 45,000 residents 12 years and over (93.1%) have had their first dose while 41,425 have had their second dose (86%).

Two iwi vaccination events are being held this weekend. The first on Saturday for rangatahi (teenagers) at the Te Awamutu Vaccination Centre in Arawata Street from 11am-7pm and the second in Kihikihi on Sunday at 50 Lyon Street from 10am-3pm. Casual and registered people wanting swabs can call the Te Awamutu-Mahoe Medical Centre or the Te Awamutu Medical Centre to arrange a time. In the Waikato region, public health staff are now supporting 143 cases to isolate at home. This brings the total number of cases during this Waikato outbreak to 361 (186 active, 175 recovered) with 32 active cases remaining under investigation for links.

Yes, it’s time to make your Christmas cake. Make it now to allow true lusciousness to develop. Make it now so it’s easier to cut. Make it now and enjoy tempting Christmas aromas even before festivities really kick in. The first step with most festive cakes is soaking dried fruits in brandy to soften them and enhance the flavours. A friend at the gym said his wife uses a whole bottle. When I looked at him aghast he said he buys the brandy duty free. (Well, not this year!) If brandy is a little heady for your budget, use a medium-dry sherry or even a good orange juice plus a tablespoon of honey. Ensure the dry ingredients are well combined by sifting them together. This ensures they will be evenly distributed throughout the cake. All cake ingredients should be at room temperature. If the eggs are refrigerator cold then they will probably curdle with the butter. If this happens, add a tablespoon of the sifted flour mixture with each remaining egg to stabilise the mixture. Long low-temperature cooking is best for fruit cakes. This prevents the fruits from burning. Allow a long slow cooling period. Leave the cake in the pan until it is cold to keep your pièce de résistance moist. BRANDY CHRISTMAS CAKE 3 cups sultanas 1 1/4 cups each: raisins, currants 8 pitted dates, chopped 140g (1 cup) slivered almonds 1 cup brandy

Brandy Christmas Cake 250g butter, softened 1 1/4 cups brown sugar 4 eggs at room temperature 2 1/4 cups high-grade flour 1/4 teaspoon baking soda 2 teaspoons ground cinnamon 1 teaspoon ground allspice 3-4 tablespoons brandy, extra Place the dried fruit and slivered almonds in a large bowl. Add the brandy and mix well. Cover and marinate overnight. Line a 10cm-deep, 21cm-square cake pan with 2 layers of baking paper. Preheat the oven to 150°C. Place the butter and brown sugar in a large bowl. (Preferably of an electric mixer.) Beat until creamy and light. Add the eggs one at a time, beating well after each addition. Sift the flour, baking soda and spices over the soaked fruit. Mix well with a wooden spoon ensuring the fruit is well coated in the flour. Combine with the butter mixture. Mix well. Spoon the mixture evenly into the prepared cake pan. Smooth the top. Bake for 1 1/2 to 2 hours, until a skewer inserted in the centre comes out clean. Brush with the extra brandy while still warm. When cold, remove from the pan and wrap tightly in foil. Store in a cool place.

Gluten Free Christmas Cake GLUTEN-FREE CHRISTMAS CAKE 1.2kg mixed dried apricots, pineapple, papaya, cherries, raisins, chopped 1 cup medium-dry sherry 250g butter, at room temperature 2 cups lightly-packed brown sugar 5 eggs at room temperature 250g gluten-free flour 1/2 teaspoon each: ground cinnamon, allspice pinch each: ground cloves, salt blanched almonds, optional Place the dried fruit in a large bowl. Add the sherry and mix well. Cover and soak overnight. Preheat the oven to 150°C. Line the base and sides of a heavy 23cm-25cm round spring-form cake pan with baking paper. Beat the butter and brown sugar together, until creamy. Add the eggs one at a time beating well after each addition. Sift the flour, spices and salt into a bowl then add alternately to the sugar mixture with the dried fruit and any liquid. Spoon into the cake pan and smooth the top with a wet hand. Decorate the top with the blanched almonds, if using. Bake for about 1 1/2 hours or until a skewer inserted in the centre comes out clean. Cool in the pan. Wrap in foil and store in a cool place.

CHRISTMAS MUFFINS Use a fairly firm fruit mince. If it’s runny, reduce the amount by about 1/4 cup. Great to have in the freezer for unexpected guests. 1 1/2 cups plain flour 2 teaspoons baking powder 1 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 cup sugar 100g butter, melted 2 eggs at room temperature, lightly beaten 1 cup (Christmas) fruit mince, stirred 1 tablespoon sugar, extra Preheat the oven to 190°C. Line an 8-hole muffin pan with paper cases. Sift the flour, baking powder, cinnamon and salt into a bowl. Stir in the sugar and mix well. Combine the cooled butter with the eggs and stir into the dry ingredients together with the mincemeat, until just moistened. Spoon into the muffin holes. Sprinkle the extra sugar over the top. Bake for 20 minutes, until a skewer inserted in the centre comes out clean. Great served warm with butter, or with whipped cream and raspberry jam. Makes 8.

Pareanui Bay hoping to land Eagle

Exciting galloper Pareanui Bay got the testing hit-out trainer Tony Pike was looking for when trialling at Cambridge on Tuesday. A dominant winner of the Gr.2 James and Annie Sarten Memorial Stakes (1400m) at Te Rapa a month ago, Pareanui Bay finished second in a 950m on his home track and is set to take his place in Saturday’s Listed Trevor & Corallie Eagle Memorial 3YO (1500m) at Te Aroha. “He was really good today,” Pike said. “They probably ran along at raceday speed or a touch quicker with an apprentice on Stephen Marsh’s horse (Master Park, who led and won). “He travelled up nice coming to the corner and came up off heels and closed it off nicely late under minimal pressure and was good past the post. “It was a nice day out for him. With four and a half weeks between runs we just wanted to give him a day out today to sharpen him up a bit before Saturday.” The heat was run in a slick 53.46 seconds, clearly the fastest of the four heats over the journey, with top-liners Aegon and Coventina

Bay finishing in the second half of the field, but Pike said the solid gallop was a positive for the son of Lonhro who is raced by his breeders Brent and Cherry Taylor of Trelawney Stud. “He is pretty laid back in his track work,” Pike said.
