Reopening the northern entrance to the country’s largest ecological island on Sanctuary Mountain Maungatautari will have huge economic benefits for the Waipā economy. It is already a significant domestic tourism attraction because of its ancient native forest, but visitor numbers have been impacted since the closure of the Hicks Road entrance in 2018 following a dispute with land owners. That side is the one closest to Lake Karāpiro which has thousands of visitors every year.

Waipā mayor Jim Mylchreest, announced the northern entrance reopening on New Year’s Eve. He was chief executive of the Maungatautari Trust from 2002 to 2009 and helped raise more than $17 million required for the construction of 47kms of predator proof fence around 3400 ha of indigenous forest. Before the dispute, the first 850 metres of the walk from Hicks Road had been along a private driveway and across private farmland. “More people can enjoy this ancient ngahere in the heart of our district. Maungatautari is home to so many native flora and fauna and is a very special place to visit so I would

encourage those who can, to do so,” said Mylchreest. Sanctuary Mountain Maungatautari co-chair Poto Davies said the trust was privileged to be able to share the mauri and mana of the maunga. The southern entrance at Tari Road, home to the Manu Tīoriori Visitor Centre, remained open during the three-year dispute. Maungatautari marketing manager Freeman Ehu said there had been a major surge in visitor numbers in the past few weeks. Quinn Dallinger, who has farmed since 2016 on a 225ha dry stock property below the mountain and

next to the Hicks Road entrance, welcomed the announcement of the northern reopening. He has been collaborating with the council and the trust to reestablish access and has overseen the establishment of a track on his property which follows the Wairakau Stream to the mountain. Meanwhile Cambridge Community Board member Mike Montgomerie, who has an adjoining 27ha bush block inside the pest proof fence, released four kiwi in the reserve before Christmas. He told the board a recent survey showed there were as many as 1200 kiwi on Maungatautari.

If you thought it was scorchingly hot in Waipā last week, it sure was -and a Niwa meteorologist says it is going to get hotter. The temperature gauge hit 34.7°C at Niwa’s Lake Karāpiro station on January 4, easily beating Waipā’s hottest day last year of 30. 9°C on January 14. Meteorologist Ben Noll said temperatures across the country were last year on average one degree higher than the previous year and the warmest year on record. “Be prepared for more hot weather though,” he said. Niwa has three Waipā stations at Waikeria, where readings were first taken last year on February 7, Karāpiro and Hamilton Airport. If you are the one people always looks to for help or advice, have highly-tuned problem solving skills and communicate well, then Cambridge needs you. Volunteers operate the Cambridge Citizens’ Advice Bureau in Alpha Street from Monday to Friday 9am to 4.30pm. It needs new volunteers to help the community. Manager Marie Payne says the bureau operates three shifts a day, so volunteers do not have to work all day. Most work 2½ hours – or one shift - a week. Volunteers need to be friendly and inquisitive, she said. “We need mature people with life experience and good communication skills to be trained as interviewers. Our interviewers deal with people either by phone or in person, coming from a wide variety of backgrounds and with a broad range of issues, and questions about their rights.” Before volunteers deal with the public, they get full training. “Once trained, they get access to our vast on-line database to answer any enquiries. No day is the same, and no caller the same, and as a volunteer it is always time to learn more.” Barbara Wilson has been volunteering for two years. She is a former primary school teacher whose skills in the classroom make her an ideal volunteer. Some examples of recent enquiries handled by the Cambridge team: • A client’s drain was blocked where it crossed his neighbour’s property and he asked who was responsible for paying for it to be cleared, him or the neighbour? If the blockage was caused by damage to the pipe on the neighbour’s side, it would be the neighbour’s responsibility.

Happy New Year to everyone. I hope this column finds you safe, relaxed and well. As you will have seen on the news, two prominent issues over the Christmas and New Year period were road trauma and water safety. The impact of these are lengthy and profound amongst family and friends of those involved as well as the attending emergency services. With increased holiday traffic on the roads, we have seen crashes caused by fatigue as well as inattention. I cannot stress enough the importance of planning your journeys, allowing plenty of time and taking breaks. If possible, share the driving responsibilities with others, swapping drivers along the way. Some people like to get a very early start to beat traffic jams and the heat of the day. It is important to consider the extra fatigue this brings, especially later in the day. One moment’s inattention can cause you to collide with someone else, or to miss being able to avoid the careless actions of another. Along with this, have patience. When returning from a shift at Kawhia after New Year’s, I encountered a car which was in the process of overtaking a few others at speed, heading straight towards me, in my lane. When I stopped and spoke with the driver, he explained his actions as being due to frustration at a slower driver ahead. The road he had travelled was a winding section which warranted a more cautious approach. We should all drive to the conditions and our abilities and only pass when it is safe and

prudent to do so. I touched on water safety at the end of 2021, but it is worth another mention. With the scorching temperatures of late, it is natural that more people have been getting into water to cool off. Basic swimming abilities are so important in New Zealand. Often drownings occur when people are out of their depth (literally), overestimate their abilities or are unfamiliar with beaches and boating. Where surf lifeguards are on duty, always swim between the flags. If you are not a confident swimmer, stay close to shore and work a buddy system with friends or family so everyone is accounted for. In New Zealand, what appears to be a calm spot on a surf beach is frequently a rip - a strong narrow current running out to sea. If you get caught in a rip, stay calm, float on your back and let the current take you. Raise your hand and wave it from side to side to attract attention. When the current weakens, if you are able, first swim sideways parallel to the beach and then around and back to shore (not straight back against the current). When alcohol combines with driving or swimming, the risk increases. Drink responsibly, plan your partying and nominate a sober driver. Do not drive or pilot a boat drunk. – Deb.

Briefs… Grey Street Dairy, which saw sales plummet when Waipā District Council closed the road to turning traffic from Hamilton Road to cater for a cycleway, closed its doors on December 30. Owner Wei Na said he had “no choice” because the 60-year-old dairy had lost more than 80 per cent of their customers and was losing money. Te Awa Cycleway update The Waipā build of Te Awa River Ride from below the Velodrome to the Hamilton section at Hooker Road is due for completion by the end of the month. The start of the Cambridge section can be seen from the current track but is fenced off.

History is in the cupboard… but where is Washbourn’s shell case? By Mary Anne Gill

Whenever someone asked Cambridge High School library manager Glenys Bichan for some historical information about their time at the school, she would head to a “Harry Potter” like cupboard and begin the mammoth effort to find it. Photos, magazines, newspaper and magazine clippings dating back decades were all stored there largely unseen and unavailable.

Waipā District Council says it was unaware of any other damage caused by the storm and would engage contractors to make the High Level track safe and useable again. Fire restrictions The Waikato fire District is now in a restricted fire season. The change came into force on Monday and covers Waipa, Ōtorohanga and Waitomo. A permit is now required to light an open-air fire. The website checkitsalright.nz explains the restrictions. Cricket chance The search is on for the next generation of female cricketing talent to join the ANZ Next XI. Eleven young women aged 12-18, will be selected from across New Zealand to join the ANZ Next XI. Pictures like that of Cambridgeborn and bred Wing-Commander Edward Preston ‘Bill’ Wells who left New Zealand as a pilot officer in the Royal New Zealand Air Force. By January 1941 he was flying a Spitfire and had the best ‘bag’ in his squadron. Wells, who died in November 2005, is arguably the most celebrated Cambridge High School student and had hundreds of articles written about his exploits. But there have been other times the school has made the headlines, most notably from the late 1990s when Alison Annan was principal. One decision in 2003 which still baffles Bichan was closing the school’s library because Annan said students were doing their research online and not using the non-fiction section of the library. She replaced it with a cybercafé and stored books in individual classrooms.

Two years later, after Annan had resigned, the library named after former principal George Marshall in 1973, was restored. Marshall who was principal from 1964 to 1972 and died in 2018 aged 93, left the library an endowment which Bichan is using to establish the Marshall Archives. At last a home for the school’s history, she says. Past students like John and Raewyn Dillon have helped catalogue the archives. Another old boy Bruce Harvey, 90, who went to the school in 1946, visited last year and was full of inspiring tales. “He was a living, walking Cambridge High School historical encyclopaedia. “We just knew we needed to make our archives available to all our alumni and make sure their story was kept safe and accessible,” says Bichan. Something is missing though, and the search is on. They cannot find a mounted shell case from the World War II Battle of River Plate, presented to the school by Rear-Admiral Richard Washbourn on 17 July 1964. The shell is about 20cm high – but there are no known clear pictures of it. Washbourn, who won the Distinguished Service Order for his part in the Battle of the River Plate in 1939, became Chief of Naval Staff in 1963. It was in this capacity he presented the shell case to the school on behalf of the Ex-Navalmen’s Association in memory of past pupils who served in the two world wars. At the presentation he recalled Able Seaman Archibald Cooper Hirst Shaw, a former pupil of Cambridge High School. When HMS Achilles opened fire on the German ‘pocket battleship’ Admiral Graf Spee on 13 December 1939, it became the first NZ unit to engage the enemy in the war. Shaw, 27, was in the HMS Achilles Director Tower operating the sight setter ranging equipment that controlled the first of the six-inch guns. He was struck by splinters and died of multiple injuries to his chest and was buried at sea the next day.

He was one of four New Zealanders killed in the engagement. Marshall promised to value the shell case as a reminder of the toils and sacrifices of those who had gone before. “Sadly it has been misplaced and we would love to see its return. If anyone in the community knows about this, we would love to hear the story and hopefully locate this

meaningful artefact,” says Bichan. If found, the shell case will feature in a formal opening next year. support some friends who were interested in buying a motorhome, yet it was the Blunts who walked out having made the investment. Stolwyk said camper numbers were up 30 per cent on the previous year and the busiest days saw about 100 people comprising a

mix of caravans, tents and campervans on site. Secondary school rowers preparing for the return of action at Karāpiro later this month moved in last week. Further up the lake, council sites like Waipuke Park were also busy although rubbish dumping

was again a problem. Waipā Park Operations team leader Matt Johnston said illegal dumping was an ongoing issue. “We have staff and contractors remove the dumping asap to prevent people adding to the pile,” he said.

Having had the opportunity during our recent warm weather to experience on many occasions the new swimming complex in Cambridge, Council is to be congratulated on providing such a wonderful facility and for listening to the public for the retention of the outdoor pool. What the majority of Cambridge residents don’t need of course is to have the experience compromised by a few whose logic extends to believing they should be able to gain entrance to the complex without providing proof of a vaccination in the midst of the worldwide Covid pandemic. With many young children using the pool and others who also remain seriously susceptible to the new variant, the Council is to be congratulated also for again putting the interests of the majority of residents and ratepayers foremost in its mind. Omicron as we now know is more highly contagious than previous variants and is proving to be as dangerous, so any initiatives by our local government to limit its spread among the Cambridge community and the impact on our health services is arguably the only sensible course. Let’s hope that the enjoyment by people of all age groups including the many children using the facility is not put at risk by those who are seeking a review of the criteria for entry to this long-anticipated asset for the region. The Waipā District Licensing Committee gave permission to an off-licence application on December 23 for Blue Drops Ltd following a day-long hearing earlier in the month. One of the 17 conditions imposed on Blue Drops is there is to be no external advertising of alcohol products on the building at 91 Victoria Street. The licence was issued for 12 months allowing the applicants to sell alcohol Monday to Sunday 10am to 10pm. Single sales of alcoholic products under 500ml are prohibited in the building which was the former Guthrie Bowron premises. Commissioner Sara Grayson said the licensing committee was satisfied Blue Drops Ltd was a suitable company to hold an off-licence while directors Kanwaljeet Singh and Avtar Singh were both locally-based and experienced retailers with a “genuine care” for their community. They own the building and have committed to having no advertising on it. The store will be painted blue, the front windows covered with frosted fil and no shelving displaying alcohol directly inside the front windows. The Medical Officer of Health, who was the only person to ‘officially’ oppose the application, after police withdrew their opposition, was concerned at the possibility another bottle store in Cambridge would increase alcohol related harm. “However, police currently do not have concerns about vulnerable communities in the area or any crime, intoxication or disorderly behaviour,” said Grayson.

The committee agreed with one of the Blue Drops directors who said Cambridge was experiencing rapid population growth meaning there was a demand for another bottle store.

When the Hospice Waikato retail managers in Cambridge and Te Awamutu arrived to start the new year raising muchneeded funds for palliative care, quite different scenes welcomed them. In Cambridge Justine Webb-Elliott saw lots of rubbish such as an old barbecue, soiled clothes and broken furniture. Opportunists had already picked through any of the good stuff, leaving the rest at the mercy of neighbourhood rodents. But in Te Awamutu, Hassan Shariff had no such problems because the message had finally got through. “Please only leave donated goods during shop hours.” So why the difference? Hospice Waikato chief executive Craig Tamblyn pinpoints the change in attitude in Te Awamutu to a fire in the George Street premises several years ago. The subsequent publicity and near loss of the building was a real wake up call. “We’re quite lucky in Te Awamutu. They don’t dump there, they wait till we’re open and they come in,” he said. Not so in Cambridge and while Tamblyn says they still want donated goods and clothing, they would rather people dropped them off when the store is open. In Cambridge, that is Monday to Friday 10am to 3pm and Saturday 10am to 1pm. Te Awamutu is open Monday to Friday 10am to 2pm and Saturday 10am to 2pm. There is photographic evidence of many of the people who donated rubbish in Cambridge for the hospice volunteers to sort through. Tamblyn said he had no hesitation in contacting the police. “We have prosecuted people before and

will do it again.” Hospice Waikato has eight shops throughout the Waikato relying on a network of dedicated volunteers. Profits from the hospice shops provide funds for people living with a terminal illness. The shops are an integral part of the hospice’s fundraising efforts. People found to be dumping unwanted goods and rubbish in public places can be fined up to $5000 under the Litter Act 1979 Section 15 (1).

Cambridge farewells museum manager By Viv Posselt

After five years as Cambridge Museum manager, Kathryn Parsons has left to take up an appointment in Hamilton. She will take up a role this month as research librarian for Hamilton City Library’s Heritage Collection. It’s a job that is closer to her professional roots and closer to home – she will be able to walk to work. “I’ll be working as part of a research team, it’s really quite exciting,” she said. This was Kathryn’s first foray into the world of museums. After completing a degree in history, she spent 27 years at the Waikato University library, most of it as the New Zealand Collection Librarian. A long-held desire to see what museums might offer led her to Cambridge in 2016. “There are a lot of transferable research skills involved in working at

museums and libraries. I’ve learned such a lot here… this museum and the wider Cambridge area has such rich history.” One of the drawcards for Kathryn was the strength of the museum’s documentary heritage, something she said was due largely to people like Eris Parker and Susan Hague who put years of effort in. That bedrock of knowledge made it easier for Kathryn to further investigate and expand the collection, reaching out to the community and developing a more public role for the museum. Teamwork has been central to that role, she said. Kathryn came on board in the same month that the museum’s administrator Karen Payne started, and they were joined early last year by Elizabeth Harvey. Together, they have enhanced the museum’s website and created a series of online guides. “I am particularly proud of

those,” she said. “They came about as an alternative for people who couldn’t come into the museum but who wanted to do some research. They might be looking for information related either to their family or their home, or the building they now occupy. Often, they can find the answers through the online guides, and lockdown has meant that more people have had the time to spend on it.” Something else she is pleased with is the growing relationship between the museum and Cambridge High School, playing out mainly through the museum staff and Cambridge High School library manager Glenys Bichan. Other interactive activities either started or grown under Kathryn’s watch is the promotion of power point presentations to groups and organisations, tailored to their particular requirements, and the start of the Cambridge

Let it grow, let it grow…

Happy new year everyone. Glad to see we’re all still here. What a great holiday that was; too short of course, but most enjoyable. It could be just me, but it seems that this summer has been hotter so far than in recent years. Shriek global warming! Actually there is probably more than a grain of truth in that, but such pinpoint alarmism does nothing to further the cause. The hills are turning beige, as they generally do in summer, and the next thing will be our lawns. Cut to within an inch of the ground they don’t stand a chance, and most will be dry, brown, and dusty within weeks. Sprinklers will hold back the desert sands for a while but then council will ban them as the lake levels drop. The last traces of moisture will disappear, the worms will migrate downwards, and formerly verdant swathes will be little more than scorched earth. Unless we change the way we do things. What if we allowed our lawns to grow longer over summer? Longer grass can retain moisture more effectively than short grass, which will in turn keep the ground a bit cooler, which can only be a good thing for the myriad creatures which live in it. In fact a lot more wildlife exists in long grass than in short. Another benefit would be that the lawnmower wouldn’t elevate the front garden into a dust cloud when one tries, for no better reason than force of habit, to mow a patch of grass which has long since dehydrated and given up growing altogether. person who has just hung out the washing, take the shine off the car and the windows, and leave hollows in the ground between the brittle stubs of grass which have managed to hang on thus far. I agree that such a course of action, or more accurately inaction, would make our gardens a bit untidy; we would much rather all the edges were neatly trimmed, and our greenery and foliage grew in orderly fashion. But nature doesn’t really do ‘neat and orderly’, and in the immortal words of Jagger & Richards “You can’t always get what you want”: Your lawn is going to be brown anyway so it may as well be long to boot and at least provide a little shelter for some wildlife along the way. Then, when the heat subsides and the rains return, your lawn will spring back into life (ironically for something which happens in autumn), and all will be well. The worms will come back to the surface, the birds will eat them, and then leave dive-bomb deposits on your dusty car which you will be able to wash with a clear conscience as the lake levels will be on the rise again. The sea levels are on the rise as well, but PLANET that’s a different ONLY story; one which promises to be a lot more inconvenient than a dusty brown lawn.

The 2020s - back to the future Time’s Person of the Year is inventorcum-possible Bond villain Elon Musk, and some people are not happy about it. Those opinions aside, I couldn’t help noticing the contrast between this year’s figure and Greta Thunberg, Time’s choice in 2019. Both Greta and Musk are climate action champions, but of a different kind. Greta embodies an almost punitive activistic spirit; refusing to fly, once sailing across the Atlantic. Musk, on the other hand, while perhaps not as beloved a figure in the climate activism community, has perhaps done more for our climate than anyone else (His company Tesla sold enough cars this year to save about seven million metric tons of CO2 from being emitted.) Though as the Guardian points out, of course, we don’t know whether he recycles his yoghurt tubs at home… You see, I am all for Time Magazine’s choice of Musk, and mostly because he represents the kind of philosophy I think is so lacking at the moment: genuine optimism about the future of humanity. Musk understands that solving climate change should be, ultimately, super cool. While some may hark on about a return to walking and biking, Musk offers the Tesla model 3, in which one can accelerate to 100km/h in around 3 seconds flat… The Muskian-attitude, then, is what I hope the next decade can spearhead. By 2030, we may very well be a “multiplanetary” species, with abundant, clean energy, and yes - even flying cars. In that spirit, allow me to sketch a techno utopian vision... Nuclear power, for decades shunned

by the green energy community, is having a well-deserved comeback; France is building six new ones, for example. Additionally, the first real steps in nuclear fusion are also happening. Fusion power - which essentially aims to re-create miniature suns on Earth - uses only seawater as fuel, meaning we could essentially power humanity’s energy needs for the next 13 million years. The US-based fusion start-up Helion drew $500 million in funding earlier this year, with a goal to build the first commercial fusion plant by the early 2030s. What’s most crucial here are the things we will be able to do with cheap, abundant energy: much more recycling, computing, building, robotics and carbon capture without worry. Next, Space! The first orbital test flight of Musk’s “Starship” rocket is early next year. If successful, the rocket could be the most fundamental paradigm-shift in the space industry since Apollo 11. Being fully reusable, costs per-kg-into-orbit on Starship are around $35/kg, or about 1000x less than NASA’s Shuttle. Musk is scaling up production of the rocket into the thousands, and he hopes it will take us first back to the moon, and then onto Mars. But there are other benefits to a cheap, fully reusable rocket--super-fast travel on Earth; Starship could take you from London to Hong Kong in 34 minutes. What’s more, cheap rocketry could kickstart the space-mining industry, eventually moving all ecologically damaging mining “Off-world.” (Musk’s even recently started a project turning CO2 into rocket-fuel...) And finally - yes- flying cars are here

just in time for the 2020s. If you are feeling bummed out about how the future turned out to be, I encourage you to check out the “Jetson1” company on YouTube, as well as test flights by “Urban Aeronautics”. Advances in droning and battery technology mean that vertical take-off, easily pilot-able flying cars are now possible, and boy do they look cool. Paired with those other forecasted developments in energy cost reduction, flying cars have more mass-market potential later in the decade. Which means no more sitting in traffic. Urban Aeronautics has already secured a purchase deal with an Israeli emergency service company, to provide a kind of air ambulance with the total ground footprint of your average Honda. So, all in all, it looks like this may be the decade we finally get that “future” we’ve been waiting for. Solving climate change can be fun - but we should look beyond that, to what we can do, for example, with 13 million years of abundant, free energy. According to the Guardian, the majority of Western teens in a recent survey answered “no” to the question “do you feel that your generation will have had a better life than your parents’ generation?” Building these new technologies - spaceships, fusion and flying cars - is thus just as much about solving material challenges as it is resurrecting a more optimistic narrative for humanity.

Life on the road Given that the festive period invariably sees many people driving long distances it was interesting to watch driver behaviour during December. During this time, we drove to and around Wellington and came home the long way around the bulge that forms the seaward boundary of Taranaki. We were generally pleasantly surprised and pleased that we only witnessed one truly crazy and dangerous piece of driving. This approaching Wanganui (yes, I know some people like the extra letter) where a car, hell-bent on meeting the Almighty early, came around the outside of a very long truck at high speed. Faced with the dichotomy of swerving my campervan into the nearby ditch or holding my ground I chose the latter – apparently having infinite faith in the tyre treads of the offending oncoming vehicle. The distance that he passed us by was better described in millimetres than any other measurement. The affect on my adrenalin was very noticeable and the words accompanying this reaction not fit for even a rugby post-match party. But we have - as in here in New Zealand – a penchant for unnecessary speed, late use of the vehicle turning indicator and what appears to be a new rule that permits overtaking on the left instead of the right, along with large trucks hogging the righthand lane. But the overwhelming physical appurtenance to the roads was the plethora of infernal orange cones accompanied by a high number of low-speed directives. The majority of these were without a road maintenance worker in sight, thus creating a challenge for many to ignore the numerical directive. Small wonder drivers became frustrated by this unnecessary and, in some

cases, downright lazy inaction over the holiday period. Having said that there are some fine pieces of road either recently put in place or not far from opening. The former contains a superb example of engineering dexterity where the Awakino Gorge tunnel is now bypassed by a sweeping, and very safe, strip of smooth tarmac. It is well positioned, well bordered and a great example of what NZTA and their contractors can achieve. Another is the well-advanced by-pass which leaves Waikanae and heads towards Levin. This continues the strip of fourlane highway that commences at McKays Crossing. However, its immediate southern cousin – the ‘some day’ to-be-opened Transmission Gully - is becoming a laughing stock of bureaucratic bumbling, each party involved blaming another. During December we witnessed not less than three ‘opening’ dates and, as this opinion piece goes to press, the ribbon of tarmac, sitting over a major earthquake fault line, remains closed. This until ‘they’ (whoever are ‘they’?) sign off a high number of parts of the project as being satisfactorily complete. The fact that the cost of this road ballooned out by over half a billion dollars – yes, it is billion – is being blamed by all needing to escape being fined – as the result of Covid. Well, that one is becoming very tired. We even came across evidence of car mechanics adding a $25 Covid surcharge claiming they had to clean cars in their care prior to test-driving them post repair. Just how much does a wet wipe on a steering wheel cost in time and materials?

Surprise yourself. Next time you visit your local supermarket or deli browse the shelves with an eye for something different. There are always new temptations to try which will add interest to meals. I recently discovered black bean noodles. They’re 100 per cent plant based, have a low sugar content and are gluten-free. The thin spaghetti-like noodles cook in five to eight minutes. Slightly chewy and with a mild flavour, they marry well with hot sauces or cold dressings. Date syrup, one of the oldest sweeteners known, is again becoming popular. It is made by heating dates in water, puréeing them, straining, then evaporating the cooking water. The result is a thick dark brown liquid containing the vitamins and minerals from the dates. Use to flavour everything from chicken dishes to desserts. Vincotto translates as ‘cooked wine’ but is actually a reduction of unfermented fruit and skins of grapes or other tree fruit such as figs. The result is a sweet-tart flavour known in Italy as agrodolce. A little goes a long way. Sprinkle fig vincotto over roasted meat, grilled fish, soups, salads, oysters, berries and desserts such as pavlova! DATE SYRUP BBQ-STYLE CHICKEN 10 chicken drumsticks 3 tablespoons each: lemon juice, date syrup 4 cloves garlic, crushed Baste: 1/4 cup barbecue sauce 3 tablespoons date syrup 1 tablespoon siracha Place the chicken drums in a zip-lock bag or a bowl. Combine the lemon juice, date syrup and garlic. Pour over the chicken and move it around so it is evenly coated. Marinate in

Date syrup BBQ-style chicken the fridge for at least 4 hours, turning often. Mix the barbecue sauce, date syrup and siracha in a small bowl. When ready to cook the chicken, preheat the oven to 200°C. Oil a roasting pan. Add the chicken in a single layer and bake for about 30 minutes, until tender, brushing every 10 minutes with the baste. Serves 4-5. BLACK BEAN NOODLE BOWL WITH PRAWNS For a vegetarian option, the prawns can be exchanged for 150g cubed tofu. Ginger Dressing: 1 teaspoon grated root ginger 2 tablespoons each: olive oil, lemon juice 1 teaspoon soy sauce Noodle Bowl: 1 teaspoon vegetable stock powder 50g organic black bean noodles 3 tablespoons olive oil 2 cloves garlic, crushed 150g raw shelled and deveined prawns, thawed 12 thin slices cucumber 4 cocktail tomatoes, halved 1 small avocado, stoned peeled and sliced Whisk the dressing ingredients together in a bowl.

Bring a large saucepan of water to the boil. Add the vegetable stock and noodles. Cook for 5-8 minutes until just tender. Meanwhile combine the olive oil and garlic in a small bowl. Pat the prawns dry. Heat a non-stick frying pan on medium high. Strain in the oil. Add the prawns and panfry for 1-2 minutes each side until milky and pink. Strain the noodles and combine with a tablespoon of the ginger dressing. Place in two serving bowls. Top with the prawns, cucumber, tomatoes and avocado. Drizzle with the remaining dressing. Serves 2.

The position involves carrying out a wide range of duties to ensure that our site is maintained as a tidy, safe and environmentally friendly working environment.
