Regional and district councillors have been given an insight into the alarming state of Waipā peat lakes and were warned that without action, they will get worse. Regional councillor Andrew MacPherson accepted a challenge from Fish and Game manager David Klee, to bring councillors and staff to Lake Ngaroto on Tuesday to get an understanding of the ecological disaster, which claimed the lives of thousands of fish and birds last month. The gathering included Waipā major Jim Mylchreest, deputy Liz Stolwyk and chief executive Garry Dyet who said the region’s lakes were internationally significant and “real treasures”. Also present were Waipā councillor Lou Brown, Facilities Team Leader Brad Ward, Waikato River Authority’s Keri Neilson, regional councillors Stu Kneebone, Jennifer Nickel and Angela Strange and Scientist Mathew Allan. David Klee told the News last week the lake was like an effluent pond, after penning an open letter to staff and councillors. He says councils have done good work and farmers have made efforts to improve water quality – but they have also been getting or

giving the wrong messages about what needs to be done. He said this week repairing the damage at Ngaroto was an intergenerational project – and it underlined why, with 90 per cent of Waikato lakes “going backwards” it was time to draw up plans to protect them now. Liz Stolwyk, who used to regularly walk the 7km edge of the lake, told the group “you have to bring the community along on this journey.” She said to Klee “I hear your challenge, it’s a good challenge.”

Klee told the News the Healthy Rivers/Wai Ora project, described by the regional council as the bold first step in an 80-year journey to achieve rivers that have improved water quality and are safe for food gathering along their entire length did nothing for the lakes. Cyanobacterial blooms, fed by nitrogen run off, turned Ngaroto into a lake of death for wildlife, and Klee said but for heavy rain over recent days, the cycle was set to be repeated last weekend. He believes the Emission Trading Scheme should encompass retiring agricultural land

around lakes so they can revert to their natural state and assist in filtering run off. That would provide farmers with an incentive to help restore them. He told this week’s meeting that repairing Lake Ngaroto should at this stage be aimed at stopping the fact it was haemorrhaging. “This is what will happen to other lakes unless we take action now.” The issue has highlighted the need to review the line between commercial and ecological needs. MacPherson told the News following the meeting he was mindful of the role agriculture has played in the country’s economy during the Covid pandemic. “We relied on farmers to keep going – we can’t afford to lock up all peat catchment areas,” he said. But he supported Mylchreest’s comments. The mayor proposed trying experimental methods to fix the lake. “How much damage can we do by trying something different?” the mayor asked. “At the end of the day, if we carry on managing the catchment the way that we are, then this will be the result,” Klee said. “Let’s be honest about that, and then we can have a discussion about what we can do and how we are going to pay for it.”

When you first approach Roto-o-Rangi Memorial Hall, two large, off-green doors will greet you, and then confuse you. You ponder how they could grant you passage into the timeless hall, as they are without a handle or any hint of an opening mechanism. Your eyes scout around as you try to find another way to enter, and then an elusive childsized door of an equally off-green hue chastises you for not spotting it earlier. Its tiny silver keyhole and handle safeguard your entrance. The hall, 10kms southwest of Cambridge and 16kms east of Te Awamutu, was the rendezvous for community meetings, dances, dinners, clubs, church groups, and celebrations. Constructed in 1938 it cost a staggering £489, with the money raised by a local committee fundraiser. Some of its more notable groups were the Ping Pong and Indoor Bowls clubs. Champion bowlers are still celebrated on the walls of the hall today. Roto-o-Rangi School held its centennial celebrations there in 2004, and it was their main event hall for many years before they opened their current multipurpose room. To quote the hall’s secretary, Carmel Howarth, it has “a hell of a lot of history.” Long-time locals serve on the hall committee. Nick Dawson is chair, Jim Gregan, currently a committee member, was

the previous chair before he stood down in 2012. Will Forsythe is the hall’s treasurer and Carmel is its secretary. She celebrated her wedding reception in the hall in 1992 and started a dance class there in the same year. Her three daughters, Rhiannon, Nikita, and Astrid all attended Roto-o-Rangi School, which is just across the road from the hall. In 1993, Carmel was asked to attend the hall’s annual meeting and joined its committee shortly after. Julie Epps is another long-time local deeply involved in the Cambridge community and

has fond memories of the hall. She used to attend the dance school and her boys, Matthew and Braedon attended Roto-o-Rangi School as well. “The talent quest karaoke night for the adults was an eye-opener, with lots of dressed-up ‘celebrities’ belting out songs and a very believable Mr Bean lookalike as one of the judges,” she recalled. Carmel also recounted one of the hall’s New Year’s Eve parties, where she and her husband Steve dressed up as Cyndi Lauper Continued on page 7

I hope you had a good long weekend. For us, it involved several reports of burglary across town - not the sort of thing to which you want to come home. Sometimes it is the little things that make your house a target. A door accidentally left unlocked or a window latch on a ventilation setting is enough to give an opportunist an easy ‘in’ to your property. Please remember to double check your house security when you leave. Once in, the longer the thieves are able to stay in your house undetected, the more time they have to search through your rooms and steal. If a house alarm is installed, when triggered, it will draw attention to what is happening. This increases the likelihood that the offenders will scarper quickly and that neighbours or passers-by will notice and be able to provide key identifying information about them. Please be vigilant. Another topic I want to bring up is Digital Harm. I have previously discussed it a few months ago however we continue to get reports of this occurring on a frequent basis, so it is worth mentioning again. The most common digital harm is online

bullying and so-called revenge porn. Online bullying can be via direct message (text, WhatsApp or Facebook messenger) or in a more public forum (a post on community Facebook pages). Online bullying is more than a one-off and is usually carried out with the intent to shame or embarrass someone, commonly spreading rumours and lies, sending an individual unwanted messages, hacking or impersonating someone online or creating fake profiles to make fun of someone. Revenge porn is when intimate photos or recordings are sent to a third party or made public without the knowledge or consent of the person/s involved often after a relationship break up (hence the name). These actions again are carried out with the intent to cause an individual embarrassment or harm. Online bullying can have significant emotional and psychological impacts on the victim. Depending on the nature of the online abuse, it may fall under the category of harmful digital communications making it a criminal offence. If you have been affected by some

form of digital harm that has or will cause you serious emotional distress, then you can also apply to the courts for a ‘harmful digital communications order’ to be issued on the perpetrator. This is a big topic so for further information about what to do if you or someone you know are being bullied, visit at www.netsafe.org.nz . More information on the harmful digital communications order is available at www.justice.govt.nz. As always, if you receive threats or your safety is at risk, call 111. I’ll finish with a quick word to parents and students who cycle to school. We continue to receive complaints about students using the pavements in Victoria Street as a high-speed cycle path. Remember that bicycles are not allowed on footpaths, especially so in the main street of town with many pedestrians around. Please use the cycle lanes provided and recommended cycle routes to get to and from school. Also, wear a helmet!

Briefs… Inghams buys

Te Awamutu-based car dealer Ingham has purchased the former Bunnings site in Cambridge for an undisclosed sum, gazumping Waipā District Council by 24 hours. Dealer principal John Ingham, who took over Ōtorohanga Motors when it was a service centre in 1986 and built it into a multi-dealer operation North Island wide, told The News all going well “we would love to have a spade in the site this year”.

Art on show

An art exhibition of work by accomplished local artist Charles Stewart will be showcased in an exhibition and silent auction at Te Awamutu’s Rosebank Art Centre this month. A number of Charles’ paintings, done both in acrylics and oils, will be on view alongside artwork done by other Rosewood Centre members. The exhibition will be open from 10am to 2pm on Friday and Saturday and February 18and 19 at The Rosebank Art Centre in Churchill St.

The Pukeatua Memorial Church has asked Waipā District Council to supply deadlocks. The memorial church, which is councilcontrolled, was targeted by thieves last month. The thieves stole two vases and a brass cross. The request, which was raised by Cr Lou Brown in this week’s Te Awamutu Community Board meeting, will be referred to the board’s property team.

Board vacancy to remain

The Te Awamutu Community Board has decided not to fill the vacancy created by board member Gary Derbyshire’s resignation. Derbyshire stood down from the board last November. The timing of his resignation meant that the council was not forced into a by-election ahead of this year’s local body polls.

Tyson: the boy with 810 beads By Benjamin Wilson

When Te Awamutu’s Tyson Hollran was diagnosed with leukaemia, the 10-year-old said, “don’t worry mum and dad, I’m going to smash it”. And he did. Awhi and Alex Hollran said their son’s attitude not only helped him to get through it, but also helped the family. He was never scared of his treatments, even though they made him feel sick. Tyson’s journey began with what seemed to be a harmless backache. He thought he had hurt his back after jumping into his friend’s pool, but it never got any better. Then everything changed after his dad noticed that his gums had turned white. He saw his doctor about his gums and on Wednesday, March 4, 2020. Tyson had a blood test, and within hours, he was told he needed to go to the hospital. The following Monday Tyson was diagnosed with Acute Lymphoblastic Leukemia, and he began chemotherapy that day. “They said: do you want to go into a different room?” recalled Alex. “I said no, I want him to hear. I didn’t want to hide anything from him. “He had a warrior’s attitude right from the start.” Over the following months, Tyson received a wealth of support from his friends and whanau. Family friends came up one day with a gift for Tyson, which turned out to be a new PlayStation 4. Awhi said that being able to play games in the hospital

kept his mind off why he was there. Tyson’s touch coach, Codie Taute, posted about his journey on her Instagram, which led to dozens from the touch community sending Tyson messages and get-well packages. Taute even gave Tyson a shout out on live TV. Liam Walters is Tyson’s best friend. The pair went to Glenview Primary together and played in opposing rugby teams. “He was always there for me, most times that I went to the hospital he would visit, or video call me,” Tyson

said. Jill Shaw, then acting principal of Te Awamutu Intermediate supported Tyson as well. “At the school, they weren’t allowed to wear hats inside, but the principal said in front of everyone that there was one kid who could, and that was Tyson,” Awhi said. The Child Cancer Foundation has a Beads of Courage programme, and Tyson has 810 beads. Each one represents a step of his journey, wherever that be a blood test, hospital stay, chemotherapy, or an MRI scan.

Gone to the dogs

Cambridge Dog Obedience Club’s annual Waitangi weekend championship show produced plenty of excitement and competition despite numbers being down. The event, held at McKinnon Park next to Cambridge High School on Saturday and Sunday, attracted 100 entries from Cambridge, Te Awamutu, Paeroa, Bay of Plenty and Matamata-Piako. Usually there would be more than 160 handlers from around the country but secretary Christine Lansdaal said despite handler numbers being down, there were still 180 dogs competing. And what fun they had if the barking of excitement as they raced around the courses was any indication. There were 14 different classes over the two days which were each split into three different

dog heights. Prize winning dogs received a selection from the CopRice dog food range. Lansdaal said that sponsorship was crucial so the club could run the show. One of the visitors to the event was Lou “No Knees” Baker from the Huntly Agility Club who competed with her 8-year-old Shetland sheepdog Adonis. She earned her nicknamed after she had both patellas removed and had to learn to walk again. “I love what I do with Adonis, I just wish I could run like I used to,” she said. The dogs love it too. “They all enjoy being together, you should see all the dogs at the end of the show when normally those of us camping let them go and they go off running and having pure fun together. It is amazing! All sizes and breeds and happy, happy dogs,” said Lou.

On July 21, 2020, Tyson’s doctor called. Tyson cried. His family cried. His mum locked herself in a closet, and then cried. They were told that he was now in remission. Tyson’s last treatment is scheduled for July this year. Afterwards, he’ll be monitored for five more years, with check-ups every six months. Tyson is now 12 and is just one vaccine dose away from returning to Te Awamutu Intermediate. He is looking forward to seeing his friends again, playing basketball and touch. Tyson’s favourite subject at school is P.E. When asked about what he wanted to do later in life, he said “I want to be a builder and maybe buy mum and dad a house, or a campervan because they said they wanted to travel.” Tyson has seven siblings. And although his journey wasn’t pleasant, he appreciates that it made them closer as a family. Particularly his relationship with his sister, Pacey. Awhi said that one of the worst parts of their journey was seeing all the other kids that were going through it as well. They want others to know that there are many families who are struggling with similar illnesses. They say the best thing is to stick together and to talk to each other. They also want parents to know that it isn’t normal for kids of Tyson’s age to have sore backs. “If your kid has a sore back, go and get it checked out.”

Educator leaves strong legacy By Viv Posselt

Jill Shaw’s teaching legacy could define a generation. Over 50 years, she has influenced thousands of youngsters and navigated a world warped by social media and increasing social problems. “There have been many changes – one is the heavier administrative element – but technology is probably the biggest. Social media has really influenced children’s behaviour,” Jill said. “There is also more poverty, both material and emotional, that is impacting learning. “Teachers today aren’t just educators … they have to be social workers. They have to make school a safe place where a child’s wellbeing

is as important as the curriculum.” February 4 was Jill’s last day at Te Awamutu Intermediate, where she has taught for 30 years and been acting principal since last year. The tug will be hard. Jill’s emotional investment in these youngsters runs deep. “I always wanted a job at this school. I have a passion for year 7/8 students. There is nothing quite like being on the journey alongside emerging adolescents. Intermediate students have amazing choices and Te Awamutu Intermediate does that so well. I have come across people whom I thought were ratbags at school, who are now succeeding in life … it’s very satisfying.” Jill always wanted to

Intermediate, she became deputy principal at Kihikihi Primary and then took the same role at Te Awamutu Intermediate. When she felt the behavioural management programme was “a bit tired”, she and colleague Jock Ellis introduced the

PB4L programme – Positive Behaviour For Learning. In conjunction with SHINE – which encourages respect, honesty, inclusion, never giving up, and seeking excellence – they wove good behaviour into the cultural fabric of school life, and introduced boy’s only classes.

Changes for Pekerau By Benjamin Wilson

Te Awamutu’s Pekerau Primary School has welcomed in the school year with two new staff, Deputy Principal Kylie McKay, and teacher Natasha Martin. On top of McKay and Martin joining the school, last year, Tania Bagley took the reigns as the school’s Principal. McKay was first acquainted with Pekerau when she was five and completed year one at the school. “This school has a massive heart, so to have been able to even apply for the job here is amazing,” she said. McKay has background in literacy. As dyslexia specialist for Learning Matters she consulted with many schools, including Pekerau. She says previous literacy education focused on a whole-word approach, but new science has revealed that this doesn’t work for every student, especially students with dyslexia. Alongside her other duties her focus at Pekerau will be “not leaving reading to chance.”

Like McKay, Martin also received a form of education from the school before taking on her teaching position this year. The Waikato University graduate interned at Pekerau last year. “I am looking forward to putting all of my studies into practice,” she said. Martin is from Paeroa but attended high school at Te Awamutu College. She says she is happy to be integrated into the community again. Parts of her student teaching experience was online last year, due to Covid-19, and for many students this

will be their third year returning to education during the pandemic. Both McKay and Martin are glad their students can return to the school under Red Light. Another major change to the school this year is their name. The name Pekerau is inaccurate and doesn’t represent the story of the region or school. Pekapekarau will be the school’s new name. It means an area with hundreds of bats. They plan to celebrate the name correction in April.

Convoy hits town Te Awamutu saw glimpses of Monday’s Convoy 2022, which attracted thousands of vehicles nationwide. The convoy voiced their opposition to New Zealand’s ongoing Covid-19 mandates and restrictions. They arrived in Te Awamutu just before 7 am on Monday. It was raining and for about 15 minutes, vehicles streamed through the town, following State Highway 3, from Albert Park Dr to Sloane St. A criticism previously made following the convoy was the level of media attention given to past protest events. However, Monday’s convoy was covered by most of New Zealand’s mainstream media outlets. Stuff reported that part of the South Island’s convoy stretched for 17 kilometres, as members made their way from Bluff to Parliament. The convoy attracted support from many who held signs as they drove past. On Tuesday the streets of Wellington central were occupied by thousands of protestors.

Prime Minister Jacinda Ardern has declined to meet the convoy. At the time of writing, the Convoy 2022 NZ Facebook group has over 62,000 members.

According to Carmel, the hall does not see the same variety of events as it used to, but it is still regularly used. Presently, the dance school still uses the hall for its examinations, but its classes are now taught at Cambridge High School. Rowers stay at the hall during rowing season. The Roto-o-Rangi school uses it for its end-of-year ceremonies. Weddings and birthdays are regularly booked. And until recently, a church group attended the hall every weekend. Carmel and her husband Steve own a maintenance business and have cared for the hall for over 20 years. Before Christmas, she spent five days tending to the hall and its gardens and Steve recently replaced spouting

and repainted parts of the building’s exterior. They are constantly thinking of what to work on next. Currently, a shower is on the agenda, so that the hall can be more versatile. As well as removing barbed wire from a neighbouring paddock, more gardening, and more painting. The hall is not funded through rates though, it is funded by community donations, which the committee asks for in the form of an annual levy. Carmel says that more community support would allow the committee to better care for the hall. Last month, thieves stole spouting in the hopes of finding copper, exacerbating the need for an increase in community support. “It is a very cool hall, I just hope that it is here a long time and people look after it,” she said.

We deceive ourselves by thinking we are in control of our world. We boost our confidence with the illusion of having our hands on the steering wheel of our lives. I suggest to readers this is merely a phantasm. Can I be bold and say your misperception of control is a misconception? If any benefit has come from the global pandemic, it would be proof that the control we think we have is fool’s paradise. Why is this a benefit? I always reckon it’s better to be in touch with reality instead of delusion. As someone who likes to incline an ear toward the divine, I feel like God is saying to His creation; “What will it take for the world to pay attention?” And I’m sure by that God is saying, “Look to Me!” Moses is a historical figure famous for parting the Red Sea. The story tells us he was there, but it also reveals Moses did not divide any body of water. Control is an illusion we fabricate to explain the inexplicable, to satisfy our insecurity, to rationalise the unreasonable. We simply hate the tension of being out of control, so we avoid admitting it. Are we in control? No. Do we get to participate in life? Yes. Is there divine intervention? Absolutely. Moses was born a pretty baby and his mother took a shine to him, confident he would one day be special in the hands of God. Not a bad aspiration, particularly for a slave. The big issue with this mother’s reality was the Pharoah of Egypt. “Kill every boy child in the land!” he

decreed. Drowning baby boys removed the risk of Pharoah being out of control. Moses’ mother could not bring herself to carry out this murder and floated her boy down the river in a flax basket. The daughter of Pharoah was bathing downstream and spotted this young baby and instantly decided to adopt him. We do not know why, but we do know this was a divine answer for a nation in bondage. God would use Moses to lead His people to freedom. The very water that was supposed to end Moses’ life was the water that carried him to his salvation. You can’t convince me that baby Moses was in control. Raised in the palace, the maidservant chosen by Pharoah’s daughter to care for Moses was none other than his own birth mother. Orchestrated events like this have God’s fingerprints all over them. This story, along with many others, are evidence of a loving God who desires to be intricately involved in our best. This is not the product of our control, but His divine provision for us in the midst of what feels like calamity, pandemic or death. The best way to get the right perspective is to reject a false one. I urge you to give up the false view that you are in control of your life and turn your focus to the loving God who wants to do life with you. “Humble yourself in the sight of God, and He will lift you up.” James 4:10.

Welcome to the new school year IB students shine The final results for the International Baccalaureate (IB) Diploma for our November 2021 graduates were released in January. This group of students were they 12th cohort of IB students to graduate from St Peter’s, and were the largest group so far, representing more than 20% of the Year 13 group. St Peter’s, Cambridge is proud to be the only school in the Central North Island to offer the IB Diploma as an alternative to NCEA. The Diploma was designed to develop inquiring, knowledgeable and caring young people who help to create a better and more peaceful world, through intercultural understanding and respect. The St Peter’s 2021 IB graduates faced the challenges of the diploma with grace and a sense of personal responsibility.

Max thrives at Outward Bound Year 13 student Max Hewson was fortunate to be selected from over sixty students to attend a sponsored Outward Bound Course during January. Opportunities were also made available to students to attend the Spirit of New Zealand sailing experience. St Peter’s parent Pip McCarroll has seen first hand the value these courses have on teenagers and made available the sponsorships late last year for current Year 11 or 12 students. A truly generous gesture that was well received by the students after a particularly difficult period. Max shares his experience with us here. “My 8-day journey on Outward Bound was packed with adventure and hundreds of unforgettable moments. It was great to meet the 12 other people who were in my group and as soon as the first days passed we quickly went from

complete strangers to lifelong friends. We could also spend some time away from home during the holidays and detach from technology, appreciating the environment around us. Each of the 8 days at Outward Bound was packed, leaving us little time to settle down or relax, this is because we were consistently pushed by our instructors to always be prepared and to live in the moment. Some key highlights of the trip were sailing across the beautiful Marlborough Sounds, tramping off track up difficult mountains and camping under the stars.

International Baccalaureate 2021 Results 40 students awarded IB Diploma. 34 average points of those who gained the IB Diploma. 2 points above the world average. 14% of St Peter’s students earned 40 or above. 98% awarded University Entrance.

Despite the emotional and mental exhaustion that they all faced as they embarked on this second year of the pandemic, these students found a way to keep moving forward. They were kind, and showed a deep appreciation for the support offered to them from teachers, leaders, coaches and family. They did not find the path they have chosen easy, but they did not give up, and each showed a maturity beyond their young years as they sought help when needed, and freely offered that help to each other as well. To say that we are proud and admire the strength these students have shown would be an understatement. Well done IB class of 2021.

Meatless meals

Meatless Mondays were first introduced by the US Food Administration during World War I because meat and other staple food items were being exhausted. Nearly 13 million families signed on. The campaign was continued during World War II by President Roosevelt and then by President Harry Truman in post-war restoration efforts. Meatless Mondays have become a way of life. And it’s not only those who already opt for meat-free menus for health, religious or ethical issues, but for those who enjoy their veggies. Today, spaghetti, stir-fries, stews, soups, barbecues, salads, burritos, chilis, curries, lasagne, kebabs, burgers, tacos, bagels and risotto can be delicious meatless everyday options. Pasta’s popularity has soared in the last 20 years. Boiled, drained and combined with a quality commercially-prepared sauce plus a few of your own additions such as diced capsicums, olives, feta cheese and mushrooms — dinner can be on the table in 20 minutes. BOMBAY CRUST-FREE VEGETABLE QUICHE Can be cooked ahead and reheated. Seed the chilli if preferred. 400g small new potatoes eg perlas 200g baby spinach 1 tablespoon canola oil 1 onion, halved and thinly sliced 2 cloves garlic, crushed 1 teaspoon each: ground coriander, cumin, turmeric 1 green chilli, diced 3 large tomatoes, roughly chopped salt and pepper to taste 4 large eggs 3/4 cup each: cream, milk Slice the potatoes into 5mm-thick rounds. Boil until just tender. Drain and leave to steam-dry. Rinse the spinach then microwave until limp. Preheat the oven to 160°C. Lightly oil a 26cm flan dish about 5cm deep. Heat the oil in a non-stick frying pan. Sauté the onion until softened. Stir in the garlic, spices, chilli and cook for 1 minute. Add the tomatoes and spinach. Season. Cook for 3 minutes.

Summer corn bake

Lightly beat the eggs, cream and milk together. Season. Place a layer of potatoes on the base of the flan dish. Sprinkle with half the spice mixture. Repeat the layers. Pour the egg combo over the top. Use a fork to lift the veggies to ensure the egg mixture runs through them. Bake for about 50 minutes until the egg in the centre is just set. Stand for 5 minutes before serving. Serves 4-5. SUMMER CORN BAKE 6-7 thin slices brown bread spray oil 1 onion, diced 1 cup fresh or frozen whole kernel corn 3 eggs, lightly beaten 1 1/2 cups milk salt, pepper and chilli powder to taste 3/4 cup shredded tasty Cheddar cheese Remove the crusts from the bread. Cut each slice in half diagonally. Brush a 23-25cm baking dish with oil. Line with the bread, standing the points over the rim of the dish. Sauté the onion in a small pan in the remaining oil for 2 minutes. Add the corn. Continue cooking for another 2 minutes, stirring constantly. Spoon into the baking dish. Combine the eggs, milk and seasonings and slowly pour over the corn. Stand for 30 minutes. Preheat the oven to 180°C. Top the corn mixture with the cheese. Bake for 40 minutes or until set. Excellent served as a lunch or a light meal. Serves 4. CAPSICUMS WITH CHICKPEAS & TZATZIKI

Prepare and bake just before serving. Tzatziki can also be used as a dip. 1 each: onion, green capsicum, diced 1 tablespoon olive oil 2 tomatoes, diced diced chilli, salt and pepper to taste 1 teaspoon fresh thyme leaves 1 cup each: cooked chickpeas, cooked long-grain rice, grated tasty cheddar cheese 4 medium red capsicums spray olive oil Tzatziki: 1 cup grated cucumber 3/4 cup Greek-style yoghurt 1 tablespoon each: lemon juice, finely chopped mint, olive oil 1 clove garlic, crushed Preheat the oven to 200°C. Sauté the onion and green capsicum in the oil, until softened. Add the tomatoes and cook for 2 minutes. Season with the chilli, salt, pepper and thyme. Add the chickpeas, rice and cheese and mix well. Halve the red capsicums and remove the seeds. Spray with oil. Microwave for 2 minutes then cool. Fill with the chick pea mixture and place in a heat-proof pan. Combine the ingredients for the tzatziki. Spoon over the filling and spray with oil. Bake for 15-20 minutes until hot and starting to brown. Serves 4.
