Rift over media ‘deal’ By Roy Pilott

A “quite cosy” exclusive deal arranged by Te Awamutu Community Board chair Ange Holt with a media company she has had an involvement in has drawn flak from her own members. It was announced last week the Board was partnering with the Te Awamutu Chamber of Commerce and New Zealand Media and Entertainment (NZME) over the release of information. Concerns were raised that Holt owns a website which promotes the NZME publication the Te Awamutu Courier and previously worked for NZME. The controversial story announced details of a survey called Who Are We Te Awamutu? Te Awamutu News reported on the genesis of the survey last October when Holt suggested the rose moniker for the town could be reviewed. NZME reported last week that the chamber and the community board was partnering “exclusively with the Te Awamutu Courier to bring this project to the community, gather information and opinions and report progress”. Cr Susan O’Regan took a defiant Holt to task this week – telling her at a board meeting it was not a good look and raised questions about integrity of the process. Holt confirmed she had seen the story the day before publication. She referred to the item as a press release, but it carried the byline of the newspaper’s editor, Dean Taylor. Richard Hurrell said the issue started with a working group which had a different name but was now associated with the chamber and Courier. “I knew nothing about it until I read it in the paper, and it’s got the Te Awamutu Community Board blasted all the way through the whole thing – surely we should be informed about this sort of thing before it goes to print.”

O’Regan raised concern “about an agent or group associated with the Waipā District Council entering into an exclusive commercial arrangement over a matter that’s actually public good or interest.” She said it also challenged the role of independence “of the media in question”. Holt fired back that that she was “gobsmacked”. “I think the semantics we are getting into here are pretty sad. We’re all trying to do the right thing, there’s no money…” She had a strong ally in Jill Taylor. “We voted you as chairperson Ange to make these decisions…” she said. Holt said it was an informal agreement

where the Courier would promote the survey in return for having first run of the story. “They are prepared to support us and do some additional promotion at no cost. No one’s signed their life away, it’s merely an offer of support. It was not explained what the additional promotion involved. Holt said it was supposed to be a “goodwill thing” not a discussion in legalities. “…Dean [Taylor] wrote a story, but from now on I will make sure it comes to each and every one of you if that’s what you want.” O’Regan said she was not calling into question the intent. “It’s about the fact that there are rules and

procedures we have to follow and conflict of interest and pecuniary interest are things we have to be acutely aware of, because we’re all being paid from ratepayers’ money.” She said Holt was a former employee of NZME who owned a website which presented PDFs each week of the Te Awamutu Courier – “it’s all getting quite cosy”. Holt responded, “point taken”. Holt said such was the informality of the agreement no arrangements about reports from chair Shane Walsh, the acting chamber chief, had been discussed. Chief executive Garry Dyet confirmed the deal was not sanctioned by council staff and was a private arrangement.

Mayoral race

It is interesting to see that at least four current councillors might stand for mayor. Questions arise if any of these would be suitable for the position. Would they put their current position up for grabs to other people so not stand for council? What have they achieved in the years they have been on council? Would they keep pushing for the level of spending they have been doing and still promoting? Examples would be library, museum, Cambridge pool, and of course the debacle of the spending on cycleways, Memorial Park, excessive sub-divisions and the like. Their handling of Three Waters needs also to be questioned. A comment was made that Te Awamutu has been advantaged over the years - so time for a Cambridge mayor? Whatever happens it will be a voters’ decision. I certainly hope that whoever stands for mayor will keep to their promises on what they are going to do. It also would be great if elected people will listen to the majority of the ratepayers’ opinions when receiving submissions. Great example would be the Memorial Park. This also applies to whoever stands for council and community boards. With the current situation of uncertainty over Covid and Russia/Ukraine I personally feel that local government will have to look after the ratepayers. Rate increases for white elephants would be inappropriate. My idea of a mayor is someone who is part of a team, has an ear for alternative views, is able to delegate and is a people’s person. Jim, the current mayor, will tell you that it’s not an easy job and you cannot please everybody. Bernard Westerbaan Kihikihi

Waipā mayor Jim Mylchreest says releasing the council’s proposed fees and charges for consultation gives the public a “great opportunity” to feedback. “We’ve got to make sure all these fees can be backed up in terms of the costs we rack up,” he told council’s Strategic Planning and Policy committee last week. “If we can’t actually justify those charges, we should be looking at them (again).” The council has recommended a two per cent increase to account for inflation and proposed some other changes. • Building Control fees have increased between 2 and 2.5 per cent reflecting staff costs • A new transportable build charge to cover the cost of staff inspecting ‘build in the yard’ houses moved on site into Waipā • The introduction of extension of time requests • Adult casket interment fees increase

by 10 per cent to bring council into line with neighbouring Waikato and Matamata-Piako councils • A new charge for ‘Doggy Do’ to encourage owners to clean up after their dogs • Wheelie bin charges for 240 litres and 140 litre glass wheelie bins up by 17.5 and 4.25 per cent respectively • Charges for the Cambridge Town Hall removed as the new trust will set and administer the fees • Remove the general waiver of fees for reviewing the Traffic Management Plans of not-for-profit and charity events because those events generate considerable funds. The four-week consultation period opened this week and close on Friday April 8. Submissions can be made online, via email or through a hard copy submission delivered to Council offices or libraries in Cambridge and Te Awamutu. The fees and charges are applicable for the 2022/23 year, commencing on July 1.

Rotary helps campaign Te Awamutu Rotary Club is holding a fundraising movie night at the Regent Theatre on March 21. The feel-good movie, ‘Falling for Figaro’, will be at the Regent Theatre, starting at 6pm. Te Awamutu Rotary Club president Peter Robertson said proceeds from the event will go toward the Rotary Foundation’s

On the beat with Senior Constable DEB THURGOOD Gotcha with teamwork Police had a great catch following a report of cars doing burnouts in Leamington. The apprehension of eight youths from the Auckland area was a combination of good work from Cambridge and Te Awamutu staff plus a police dog handler. So often in this job, teamwork is what it is all, about when achieving great outcomes. This also applies when we are working with external agencies. As community liaison officer, I have developed strong networks with local agencies such as Ministry of Social Development, Kainga Ora, Corrections, Community Mental Health, Cambridge Community House, Age Concern, Neighbourhood Support and more. Often a combined approach to problem solving ensures we all get a complete picture of a situation which in turn enables us to provide an effective solution using our various ‘toolboxes.’ As the incident above

shows, community information is an extra and important ingredient in the mix. On that note, we have recently received reports of cars doing burnouts and people acting in a drunk and disorderly manner in the Keeley’s reserve area of Lake Karāpiro. This is an area well used for sports and recreation purposes, providing as it does access to boat ramps and camping. Any damage to the reserve affects us all. Community information will help us stop this from happening. If you see something happening of concern at Keeley’s Reserve (or any other of our lake front recreation parks), please call 111 at the time. Crime prevention requires us all to step up and make a call rather than hoping someone else will take the initiative. If offenders are not apprehended, the areas will gain a reputation as easy locations and continue to be misused.

We all deserve to feel safe to use this area. Among the burglaries of late, we had two where meat was stolen from freezers. Both were in rural properties. This serves as a reminder that even remote locations can be targeted. All it takes is for someone to know there is a beast in the freezer, mention it to a mate, and you may get targeted. The meat may also end up on-sold. If you have a freezer in an unsecured garage or shed, consider adding a lock to the freezer itself. I also recommend installing CCTV to cover the farmhouse and outbuildings. When it comes to implement sheds, taking a photo or short video of the contents is also helpful. So often otherwise after a burglary has happened, it is only when the victim goes to use a particular tool, days or weeks later, that they realise it was missing.

Another change?

Following Pekerau School’s name correction to Pekapekarau, discussions have started about a similar change for a Te Awamutu crescent. Chair Ange Holt raised the issue at this week’s Te Awamutu Community Board meeting, but agreed the issue would have to be discussed by other parties. Board members were told names changes came with considerable strings attached and should be community driven.

Ngaroto looking up

The state of Lake Ngaroto is a lot better than it has been says acting community services manager Brad Ward. He told the community board that the latest testing revealed no dead waterfowl, however, dead fish and eels maintain a common occurrence. “The cyanobacteria levels are low enough that recreational activities can proceed,” he said. Ward also announced the new boat ramp has opened to the public this week.

Vaccine refusal threatens jobs By Mary Anne Gill

Several Waipā district council staff face losing their jobs because they refused to get Covid vaccinations. The News understands 50 of the council’s 330 staff did not initially support the council’s Covid-19 Staff Vaccination Policy when it went out for consultation in December. The policy came into effect on January 10 and staff had until January 21 to provide evidence of their first vaccination and until February 18 of their second.

There are now fewer than 10 staff who refuse to be vaccinated who could lose their jobs in April and The News understands that includes two with more than 50 years’ experience between them. About 40 staff members, who did not support the mandate, agreed to be vaccinated to comply with the policy. Council chief executive Garry Dyet would not confirm if or how many staff would be made redundant. “We have worked through a fair and transparent process with those employees who chose not to provide evidence of full vaccination, including the

Trustee stands down

Co-founder Margaret Kirk celebrated the opening of the Kihikihi Community Hub last week. Kirk said their debut was constructive, and people who attended wanted to share their resources and ideas. The Hub hosted Jessica Brown from the Citizens Advice Bureau from 10am to 2pm on Thursday at the Kihikihi Bowling Club. “I’ve got this whole page of ideas, we talked about ways to find funding and ways of sharing resources more,” Kirk said. “It was pretty good, there was two hours of solid brain storming.” They discussed appointing a funding expert to the group. Kirk says now that the Community Hub has held its first event, and they have a dedicated venue to use, they can apply for funding. She attended a Community Organisation Grants Scheme (COGS) public meeting this week, to learn more about fundraising and what funds are available. COGS is a

Department of Internal Affairs scheme which supports non-profit community groups. In addition to Kirk and Brown, Violence Free Waipā coordinator Ruth Nicholls, CommSafe community safety officer Mandy Merson, Kawhia public health nurse Christine Martin, and Te Awamutu public health nurse Bronwyne Albright, also attended. Kirk said one of the nurses didn’t know about the police’s Integrated Safety Response (ISR). It is a multi-agency intervention aimed at keeping the victims of family violence safe while working with people to prevent further violence. “There was a lot of people interested in sharing phone numbers of support people,” Kirk said. Youth care and events between 3pm and 6pm was another item that the group discussed, as well as a Kihikihi toy library. The Kihikihi Community Hub will host the Citizens Advice Bureau again this Thursday from 10am to 2pm at the Kihikihi Bowling Club.

Waipā District councillor Marcus Gower made a return trip of Cook Strait last weekend… on a jet-ski. “It certainly is not the quickest way to cross Cook Strait,” he said. Gower was one of 41 riders who took on the bizarre pilgrimage. He said he travelled at an average of 40 to 50kmh, and the return trip from Mana to the Waikawa Bay Marina took the group five hours to complete. “With the price of petrol, it was not a cheap thing to do. It took two tanks of gas, a jetski, and five hours of my life.” The event was organised by the Wellington Jet Ski Sport Club and typically is an annual affair. It was cancelled last year due to Covid-19 and bad weather. Gower started jet-skiing six months ago, and most of his ski time had been spent on lakes.

The swells and the waves made the trip “quite bumpy,” he said. At one point he hit a wave wrong and dove under it, becoming completely submerged before he eventually resurfaced. “It was pretty cool, it was rough, and now I can say I’ve done it.” Gower said that being able to see the ferries from a jetski was a unique perspective. The group also saw a seal during their trip. Upon returning from the journey, Gower said he had body aches, which he attributed to his turbulent time in the ocean. He has since tested positive for Covid-19 and believes this is the true culprit of his pain. Gower said he would be open to the idea of completing the trip again, provided he was guaranteed smooth conditions for the next time. “It’s one of those things that you do once and then say ‘okay, I’ve done that now.’”

Micro solution to mega issue?

Waipā Mayor Jim Mylchreest told the district council last week a company called Ergozyme NZ might have the answer to Lake Ngaroto’s toxic pollution – but who are they? Benjamin Wilson finds out. Ergozyme NZ is a Te Awamutu based company launched last November. The company’s three directors are Wium Mostert and Anél Mostert, who are married and live in Te Awamutu, and Carlo Mostert, who is Wium’s brother and lives in South Africa. They import a product range that is designed to clean water using biotechnology. Micromix is produced by the South African company Ergofito. Wium and Anél moved to New Zealand from South Africa 10 years ago. Wium worked as a PPG Wrightson livestock agent for eight years. Carlo, who has a background in commercial cleaning, introduced Wium to Micromix after he made contact with Ergofito’s managing director, Alvaro Tangocci. Wium says Micromix is the culmination of 35 years of research. The research investigated how water bodies are cleaned naturally over time. He says Micromix emulates this and cleans waterbodies with a biotechnology that uses organic carbon and a bacteria-enzymatic mix. “They researched how water is naturally cleaned and put that in a bottle,” he said. “We destroyed that biology in

water bodies over time, it is so little it cannot regenerate to do the work. We come in and put that back into the water, and that enables it to clean itself.” Studies of the product have been conducted in numerous places, including Utah and Kuwait, Wium said. He says treated water from Kuwait was put into a live fish tank to demonstrate that the product

was safe for local biology. Wium says that Lake Ngaroto could be a good application for Ergozyme’s products because the body of water is stable, so the product would remain active for a long period. “In wastewater plants, you only have a 16-to-18-hour window. With a lake it’s so much better because you’ve got time,” he said.

Ergozyme has only received small batch orders so far, which have been used by farmers for agricultural purposes. In midMarch, Wium is expecting to receive his first large batch of product. Wium says that Ergozyme’s products have been approved for use by the Ministry of Primary Industries. But before it can be

used on council properties, like Lake Ngaroto, it must be approved by the regional council as well as local iwi. Wium understands there will be many questions around the use of Ergozyme’s products. “New Zealand is quite strict and there is a rigorous process in getting these products registered,” he said. Wium says one of New Zealand’s biggest problems is water, and called the state of our waterbodies “scary.” “Where do we go with effluent water? We spray it over the paddocks,” he said. He believes that water needs to be dealt with more precisely, and that there are many aspects that need to be looked at such as oxygen levels, nitrogen levels, and levels of phosphorous. “You can’t put anything into nature if you don’t know what you’re working with. You need to know, what’s in there, what’s the problem, and what we need to fix.” He said he is awaiting testing and approval for the use of his product in Lake Ngaroto and hopes it can be of benefit to other water bodies. “I’ve looked at New Zealand, everybody knows there are problems, my goal is to help people fix these problems.”

Community heroes Alex Phillips and Selina Heke have kept the Kihikihi Rugby Sports Club alive, says junior delegate Tawhiri Gavin. Alex became the club’s chair more than a decade ago, but he returned to his position in late 2020 to revitalise it, after standing down for some years. In the time Alex wasn’t chair, the club lost its liquor licence and it “fell into a real bad shape,” Tawhiri said. Alex’s position is interim. “I don’t want to be at the helm, it’s not about that, I just want to make our club better,” he said In 2020, the club was only running one team, which was Tawhiri’s 11s. Following Alex’s return, the club now operates seven teams. They have also reacquired their liquor license, thanks to some hard work put in by Selina. Tawhiri says Alex and Selina have spearheaded most of the club’s development. Undertaking maintenance, community engagement, and remedial work. He says that a lot of their work has been unseen and unrecognised. Alex says the club’s to-do list is long and ongoing. Currently they’re replacing the ceiling, and then they will be updating the club room and kitchen, as well as re-framing photos. Purchasing a ride on lawnmower is somewhere on the list too. “I’m trying my best to keep our club going, not only for me, but for the people who have been and gone. I don’t want it to

He was just a “young fella” at the time playing rugby for the men’s team. When he joined, Selina was playing for the woman’s team and her father, Owen, played and coached for the club.

Local Groups, Activities and Support for 50+ Selwyn Centre The Selwyn Centre hosts weekly get-togethers for over 65s providing fun, advice and support. They meet weekly in Te Awamutu. It is for those over 65 who are lonely and needing fun and company. It is held at the St Johns Anglican Church Lounge each Thursday morning from 9:30 am to 12:00 pm Strong and Stable Exercise Classes - Te Awamutu Rosehill Village: Thursdays from 9.30am to 10.30am. Anyone from the community can join, you don’t have to live at Rosehill. All levels of mobility catered for with seated and standing options. Cost is $3 per session. Leader is Olive Presbyterian Hall: Tuesdays from 9.30am - 10.30am. Caters for all levels with chairs available for those who want to sit rather than stand. Cost is $2 per session. Leader is Mary. Te Ata Aged Care Community Day Programme Te Ata runs an aged care community day programme for people aged 65 or over. The purpose of this programme is to provide opportunities to socialise, to older people living independently in the Te Awamutu community. Tamahere councillor Aksel Bech (pictured) is to stand for mayor of the Waikato district in this year’s local body elections the, Tamahere Forum website has revealed. Bech, who is also Waikato deputy mayor, announced his candidacy following news long serving mayor Allan Sanson would not seek re-election. Bech, a Tamahere resident, has been on the Waikato council for six years, the last three as deputy mayor. He would not be seeking re-election to the Tamahere ward, leaving the seat open for new contenders, he said. He said he felt it was the right time “to step up, armed with all I have learned”.

I like to sing when I drive. Loud. Hitting big notes like Adele isn’t a problem when I’m alone. Closing my eyes while singing is common, like Adele. However, I’ve worked out that closing my eyes while driving isn’t such a good idea. I reckon the reason we close our eyes is to shut out the real world around us in order to fill our mind with our desired reality. Truth is guys, I can’t sing like Adele when my eyes are shut... but it feels like I can. When your eyes are closed you get to control your perspective. With eyes open, you’re bombarded with all kinds of crazy things. What we see affects how we feel. Our feelings affect our behaviour. So, what happens when our feelings misguide us because we have shut our eyes and filled our minds with a false reality? An ill-advised mind leads us to unhelpful action. Someone who lives with their eyes shut is usually self-obsessed, selfcentred and self-loving. It’s easier to avoid reality than try and change.

I’ve been on a personal journey of inner-focus and healing for the past 15 months, and it’s yielded some realisations that have led to progress and lasting benefits. One of the big “Aha” moments for me was some wisdom I gleaned from a wise sage; “Your feelings are signposts God uses to point your attention to something inside you.” Feelings that rule our lives are not fulfilling their purpose as we were not created to be ruled by our feelings, rather to allow our feelings to guide our focus. When we focus our feelings we find what needs to be acknowledged and addressed, allowing us the advantage of amelioration. Our focused feelings help us to grow. I like to pray when I drive. Like, heaps. I can shift mountains, raise the dead, and see heaven open before me, all from the driver’s seat of my car. Like many, I often close my eyes when praying to remove distractions. This helps me to centre my focus on The Almighty God Who is my partner in

prayer. I know, closing my eyes while driving is never a good idea! Praying shifts my perspective because it aligns my thinking with the mind of God – that is, when my prayers involve more than a wish list or a grizzle. Eyes shut or eyes open, praying becomes a powerful conversation with life-changing outcomes when we allow God to shape what we see. This is the gift of faith – seeing with the eyes and mind of God. If I focus my feelings based on the world right now – health pandemics, wars, hurting people – I will quickly become affected by my feelings and think the world is without hope. But when my feelings point me to my need for the peace that can only come from the answers God holds in His hand, I have focused my feelings in a way that helps me and others. As Adele sings, “Love will soon come. Just hold, hold on.”

Wok wizardry

Woks are versatile. Their use is not just limited to stir-frying. You can steam, smoke, braise or simmer, deep or shallow fry. The wok’s shape was originally dictated by the Chinese hob that had an open top surface into which the round-bottomed wok with its flared sides fitted securely. Nowadays a metal collar or ring purchased with the wok adapts it neatly to gas or electric hobs. Steaming is fashionable at present due to the popularity of Asian dumplings. They’re sold fresh and frozen at your supermarket. Steaming is a healthy practice keeping food moist and tasty. Place a steamer basket or colander over simmering water in the wok, add the food, cover and cook. Stir-frying is also a healthy cooking method as very little oil is required. The food is easily turned against the steeply sloping sides of the wok and evenly coated in oil as it falls back to the bottom. The smaller the amount of food cooked in the wok the better. Cook in batches, if necessary otherwise the food will stew rather than fry. Don’t be tempted to add more oil during stir-frying. Add a sprinkle of hot water instead. STEAMED SALMON WITH CHINESE DRESSING I’ve used lettuce leaves to line the steamer basket rather than the usual baking paper. 2-3 lettuce leaves 2 x 150g salmon fillets, pin bones removed 8 snow peas, trimmed, strings removed 2 spring onions, leaves thinly sliced 2 tablespoons light soy sauce 1 teaspoon each: Chinese vinegar, sugar 2 cloves garlic crushed 1 tablespoon finely grated root ginger Line a Chinese steamer basket with lettuce leaves. Place some water in a wok. Place a rack just above the water line and place the basket on top. Cover the wok and bring the water to the boil. Steam the lettuce leaves until limp. Place the salmon on the lettuce leaves. Spread the snow peas around the salmon. Season if preferred. Cover and steam for about 8 minutes or until just cooked. Meanwhile, place the sliced spring onions in icy water to crisp

1 tablespoon oyster sauce 2 tablespoons tomato-based chilli sauce 2 teaspoons cornflour Deep-fry: 1/2 firm avocado 2 nectarines 1 tablespoon cornflour 1/2 cup canola oil 250g fillet steak, cubed 1 shallot, diced 2 cloves garlic, crushed 1 small red capsicum, seeded and diced Combine the ingredients for the seasoning and set aside. Peel and stone the avocado. Cut into cubes. Halve and stone the nectarines. Cut into cubes. Dust the avo and nectarines with the cornflour. Pour 2 tablespoons of the oil into the wok and heat. Stir-fry the fillet steak until medium rare. Remove and set aside. Sauté the shallot, garlic and red capsicum for about 1 minute. Set aside with the steak. Heat enough oil in the wok to deep-fry. Shake off any excess cornflour from the avo and nectarines. Deep-fry the avo and nectarine for a few seconds. Remove and drain on paper towels. Discard the oil. Stir the seasoning mixture well then add to the wok. Bring to the boil. Return the steak, shallot mixture, avocado and nectarine to the wok and heat through briefly. Serves 2.

WOK-SMOKED PORTOBELLOS The flavour of these Portobello mushrooms is intense. Serve one or two with grills or chill and serve with cold meats. They can be prepared a day ahead. 6-8 medium Portobello mushrooms 2 tablespoons olive oil 1/2 cup citrus-infused dry tea leaves 6 small sprigs fresh rosemary pinch chilli flakes freshly ground salt and pepper to taste Toss the mushrooms in the olive oil. Line the base of a wok with foil. Sprinkle the dry tea leaves in the center. Place a rack over the leaves. Place a sheet of foil on the rack large enough to just cover. Top with the mushrooms in a single layer. Sprinkle with the combined rosemary, chilli flakes, salt and pepper. Cover. Place the wok on medium heat and smoke the mushrooms for about 15 minutes. Serves 4-6. DEEP-FRIED NECTARINES & AVOCADOS WITH BEEF If preferred, use peaches or pawpaw in place of the nectarine. Seasoning: 1/4 cup beef or chicken stock

For five years, Waka Kotahi’s unwillingness to move a speed reduction sign has maintained a source of frustration. In 2017, Waipā District councillor Susan O’Regan contacted Waka Kotahi to voice the concerns of Ōhaupō residents, who deemed the Kaipaki/ Ōhaupō Road intersection to be unsafe. Their concerns were, and still are, that the 70kmh speed reduction signs are placed in a way that makes the intersection a 100kmh zone. Residents also claim that the size and proximity of the speed reduction signs block the view of traffic from the left to road users turning from Kaipaki Road. Residents have proposed the speed reduction signs be moved a few hundred

metres, so the intersection is no longer obscured or 100kmh. “I thought it was a sensible, simple and cost-effective solution for a problem they were facing. However there have been so many changes of staff and changes in programmes or direction in the Agency the issue was largely forgotten about by 2019 when they stopped emailing me,” O’Regan said. O’Regan brought up the matter again in February and spoke to Waka Kotahi staff who were presenting to the Waipā District Council. She followed this up with two emails but has yet to receive any response. Waka Kotahi’s regional manager of maintenance and operations, Rob Campbell, said there had been two serious crashes involving the intersection in the past 10 years.

“Any serious crash is one too many,” he said. “However, there are a large number of important safety projects around the country, and we need to prioritise the timing of these so we can make the biggest difference in reducing deaths and serious injuries.” O’Regan called this metric of safety “crude.” “We have locals saying it is actually quite dangerous here, and they’re clearly not listening.” O’Regan said that although Waka Kotahi only recognises two serious crashes in the area, there are likely many near misses that are not reported. “The reality is, if the residents are feeling unsafe, and presumably are experiencing lots of near misses, isn’t that a better measure than what they perceive as being just a couple of accidents.”

Getting the best apple pie off pat

It’s that time of year well known Waikato real estate agent and Irish historian Cathy O’Shea starts fielding phone calls and emails asking for her Irish apple pie recipe. O’Shea, who recently set up Property Brokers in Cambridge after more than 20 years with Lodge Real Estate, is from County Waterford in Ireland. Her published works include The History of the Irish in New Zealand and the establishment of the 4th Waikato Militia in Hamilton. With St Patrick’s Day next week, the recipe her mother Marie O’Shea and grandmother Babs Keohan handed down to her becomes popular with friends and clients. When she appeared on RNZ’s National programme recently and gave the recipe out, the radio station was overwhelmed with the response and told O’Shea they had never had so many emails asking for a recipe. Ballarat apples, which O’Shea sources from Kaipaki Orchards, are essential for the recipe because they are sour. The trick to making great Irish apple pie is cold, cold butter, cold water, and a cold knife, says O’Shea.

250gm flour 125gm (cold) butter 2 cups white sugar Cup of cold water ½ cup milk Have handy a rolling pin First the pastry: Cut the butter into squares and drop into flour. Rub between your fingers (the same movement as if you were warming your hands by rubbing them together) until it becomes like breadcrumbs. Slowly pour in cold water and ‘cut’ it in with a cold knife until it becomes a thick consistency. This is tipped out and kneaded until we have a pastry that’s not too sticky. The pastry is divided into two and the first part rolled out to the diameter of a pie dish and laid in it, leave the extra pastry fall over the edge of the dish. At this stage the trick is to sprinkle a good quality of cornflour, a fistful, onto the pastry base. The apples are piled in, and covered with 1 ½ cups of sugar. The apples should be piled up a bit higher in the centre. Roll the other half of the pastry out, keep sprinkling flour on the surface and coat the roller too so it doesn’t get sticky. Roll out the diameter of the pie again, and this time fold it into four so it looks likes a slice of pizza. Moving lightly and quickly, brush cold water where the cover and bottom of the pie will meet around the edges of the plate. Place the pastry on top of the apples and fold out quickly to cover the apples. Again, leave any extra to fall over the sides. Gently press the pie all around the outside, and then using a fork with tines upward, press around the edges to create a nice radiating pattern. Turn the fork around as if you were going to spear food, and liberally and lightly ‘bounce’ the fork all over the surface of the pie so you have lots of holes. Lift the dish into the air with one hand, and with the other slice the extra pastry off by flicking the knife forward and through the pastry using the edge of the plate as a guide. Now brush the top of the pie with milk, and dust with the remaining sugar. The pie should look lumpy. Put in the oven for 40 minutes at 180 degrees. The pie is done when some sticky syrup bubbles through the top and the top is nicely browned. Well done and Cead Mile Failte Romhat ‘A hundred thousand welcomes’!
