Japan plan flagged The Japanese flag could fly at future Armistice Day services in Cambridge. Japan was an ally in World War 1 and is credited with playing an important role in securing sea lanes against the German Navy. Japan sided with Germany and Italy in WWII. The suggestion of flying Japan’s flag was raised at a debrief meeting of the Armistice committee following the 2018 Armistice Day at the Cambridge Town Hall. During the service each November, many flags are flown, including the Turkish flag – and Turkish representatives lay a wreath. Turkey sided with Germany in the first world war and the allies in the second. Minutes from the meeting record: “It was noted that the Japanese flag has never been

flown on the day although Japan were allies in WW1, and discussion was held around why this had not been done before. It was agreed that it should be included next year.” The flag is known as the Nisshoki or Hinomaru. The acting chair of the Armistice Remembrance Day Committee, Julie Epps, said the decision had not been finalised and would be discussed during planning for the 2019 Armistice Day civic service. The Deputy Consul-General of Japan, Auckland-based Yoshihiro Nakayama, was not aware of venues which fly Japan’s flag on Armistice Day but confirmed that he is invited to the Armistice Day ceremony at the Auckland War Memorial Museum every year. “I believe introducing the Japanese flag for future Armistice Day ceremonies will be a

In a letter to the editor last week, Brian Dunstan asked what had happened to money tagged as an offender levy. “In 2009 an offender levy, expected to generate $13.5 million, ‘over the next four years’, was to go toward a victim compensation fund, perhaps MP Louise Upston could tell us some more about who got it,” he wrote. In response, Claudia Holgate, from Ms Upston’s office provided details. “In the 2015/16 financial year, $4.1 million generated by the levy was invested in support and services which helped around 5700 victims,” she said. “This included $1.7 million to support sexual violence victims such as by employing specialist advisors who helped around 1400 victims through the court process.” She said since 2010, the Offender Levy has also funded grants for victims who needed to travel to attend court, restorative justice or parole hearings. It had also funded grants for families of homicide victims to help with funeral expenses, lost income and counselling. Brian Dunstan’s letter discussed his experiences of seeing staff at the Waikato Hospital A&E being abused and threatened on a daily basis by drunk and drug effected violent people, and how a fellow contributor had reflected on similar issues faced by police. He was concerned that in both cases the “offenders” rights appeared to disadvantage the victim.

great opportunity for people to get to know about the long history of relations between Japan and New Zealand, including the fact that the Japanese vessel Ibuki escorted New Zealand troops across the Indian Ocean during WWI,” he said. Cambridge enjoys a sister city relationship with Bihoro in Japan. Japanese flags have been in the news in the US this month. A story revealed that flags taken as trophies by American soldiers were being returned. Allied soldiers were unaware the flags were heirlooms – they were signed by family members and carried into battle by Japanese soldiers. The work is being promoted by the Obon Society, which “strive[s] to heal the hearts and broken families that were a result of the war fought between America and Japan.’’

Samantha Wallace and her winning brand design for the new Cambridge Community Charitable Trust, pictured with Trust chairman David Cooney.

By Viv Posselt Samantha Wallace’s eye-catching design aimed at taking the new Cambridge Community Charitable Trust into the future is poised to do much more than simply grace letterheads. Her burnt amber image of the high-level bridge stood out to Trust chairman David Cooney as perfectly capturing the connectivity between both sides of Cambridge. More than that, however, is that the process which brought Samantha’s design to his desk is one that promises to forge a much stronger connection between Cambridge High School (CHS) and the Trust itself through the years ahead. Samantha was one of five CHS Year 13 Design and Visual Communication (DVC) students who put their hand up when the trustees invited them to come up with a design concept for the new Cambridge Community Charitable Trust.

Cycle Classic teams raced through the main street of town on Wednesday at the start of Stage One.

Festival of cycling underway By Sophie Iremonger

The much-anticipated Ride New Zealand Cycling Festival kicked off on Tuesday this week with the Opening Night Criterium getting underway outside St Peter’s School. Spectators enjoyed fast and furious racing around the bends of the St Peter’s ring road, cheering along the side lines as racers from under 15 to A grade lapped a 2.5km course. Wednesday saw Stage One of the New Zealand Cycle Classic kick off under cool cloudy skies, St Peter’s once again being the starting point for this elite UCI road race dubbed “Lost Lake Loop”. Riders embarked on a 134.5km journey through farmland,

reaching the outskirts of Ohaupo as they circled what was once a 14,000ha area of peat bog. Three hours and many kilometres later they reached the finish line on Lamb St, welcomed in by a cheering crowd. Stage Two on Thursday saw riders head out from St Peter’s on a 129km wide loop around Maungatautari mountain, finishing at Lake Karapiro. Friday’s 157km Stage Three race was scheduled to take riders south towards Lake Arapuni, starting and finishing in Te Awamutu. Saturday’s 143.8km Stage Four race dubbed “The Climb” will feature an exciting finish atop Maungakawa Hill, with a shuttle service taking spectators to the top

to experience the big screen commentary at Guddex Memorial Park, with a Good George pop up pub and refreshments adding to the atmosphere. It all wraps up on Sunday with the final Stage Five “Circuit of Champions” event which sees riders looping 134km around Hautapu’s rural roads before an exciting finish at Victoria Square. There Waipa District Council has organised a “Party in the Park” event from 12.30pm, including live music, kids activities and food to celebrate the completion of the NZ Cycle Classic and Cycling Festival. This year is the first year the NZ Cycle Classic has been held in Cambridge, having

previously been held in the Wairarapa for 31 years. Organiser and founder Jorge Sandoval said it had been a lot of work bringing the tour to Cambridge, but was well worth it. “Moving the tour to the Waikato was a hard thing to do but is the best for the event,” he said. “I’ve been working really hard for the last 31 years to get the event where it is today and to ensure the people of New Zealand see a top cycling spectacle.” More information about the New Zealand Cycle Classic is available at www. cycletournz.com. Couple repay St John with ambulance

Te Awamutu’s newest St John’s Ambulance went into service on Tuesday thanks to the generosity of former Kaipaki couple Graham and Faye Cunningham. For 68 years Graham lived at Kaipaki, raised on his parents Laurie and Doris’ farm, and then continuing the farm with Faye until they sold and moved to Highfield Country Estate in Te Awamutu two years ago. During the last few years on the farm Faye had experienced a few health issues and St John Ambulance paramedics had come to her aid a number of times. Downsizing from the farmhouse to a retirement home meant they had a lot of extra household goods and furniture they no longer needed, so the Cunninghams donated them to the local St John Opportunity Shop. Graham says he would have liked to have done more — and then a chance sighting of an ambulance picking up another resident at Highfield gave him the inspiration he needed. Signwriting on the ambulance advertised it had been donated by Chas and Cynthia Smith, also from the Kaipaki area and now living in Cambridge. “We know the Smiths,” says Graham. “But we didn’t know they had donated an ambulance to St John. Like

most people, we didn’t even know you could do that.” The Cunninghams came up with a plan to fully fund a new Generation 3 Mercedes-Benz Sprinter. Graham says they had never done anything like this before, but it felt rewarding and satisfying to be doing something important for the community. He says it was great to see the ambulance finished and ready for service. His message to the public is that people can donate — and make a difference. On Tuesday morning the couple, family and friends were present for the handing over and dedication ceremony. St John area committee chairman Ross McGowan welcomed them and a number of special guests, including Waikato area Chaplain for the Order of St John Bishop Sir David Moxon. Formal proceedings began with the gifting of the ambulance by the Cunninghams, received by Ken Williamson. Sir David conducted the dedication of the ambulance and lead prayers before Graham and Faye handed the keys to Stu Cockburn.

Dux students preparing for a busy 2019

By Sophie Iremonger Cambridge’s top high school students will begin their tertiary study next month, following their passion for science. Ashley Barea, Cambridge High School’s Dux for 2018, plans to study a bachelor of science and environmental science at Waikato University, whilst the 2018 St Peter’s IB Dux Holly Christison will study first year health science at Otago. “I’m not really sure of the end goal, I’m really just following my interests, with the environment and sustainability issues, so I’ll

More vandalism at Lakewood

Lakewood residents were surprised on Sunday morning to find one of the gardens at the complex had been severely damaged overnight. Branches were pulled off trees and plants were ripped out of the ground in the garden lining the fence opposite VTNZ. It came only a few weeks after the eastern side of the development, above the lake, was also vandalised last month, with large old trees being drilled and poisoned. Chair of Lakewood’s body corporate committee Mary Anne Gill said it was quite disappointing due to the amount of work that had gone into the area. “We like to put our best foot forward, so it is disappointing,” she said. “And it was over a weekend where we had a lot of visitors in town … Why would you go and do that?” “It is a public area but a few people live there too, it’s home.” Gill encouraged anyone who has any information about the incident to contact Police.

World champs a boon for Cambridge By Sophie Iremonger

The UCI Track Cycling World Cup at the Avantidrome over the weekend reaped rewards both on and off the track, for cyclists and citizens alike. Whilst the New Zealand team scored five gold medals during the three-day event, the business community “struck gold” too, benefitting from the seven thousand people that came to town, including spectators and riders from 39 countries. “It was a fantastic event for the region, made all the more exciting by the Kiwi medal haul,” said Miff Macdiarmid, CEO of Destination Cambridge. “Between that event and Waka Ama, the Cambridge accommodation, grocery and restaurant sector were very busy.” The New Zealand team started off strongly on day one of the event winning three gold

medals. It started with Rushlee Buchanan, Racquel Sheath, Kirstie James and Bryony Botha prevailing in the women’s team pursuit final over Canada, establishing a new national record in the process. “I did use the crowd tonight, this is my home town and I’ve ridden this track so many times, and in the last K, you have absolutely nothing left and you’re searching for something,” said Buchanan, a St Peter’s School graduate and Cambridge local. “The crowd bought it home and I think we really felt it, the guys and the girls, so we’re super proud to do great rides tonight in front of the home crowd.” Regan Gough, Campbell Stewart, Jordan Kerby and Tom Sexton then pulled off the second fastest time in history on the way to winning the men’s team pursuit over Canada in 3:50.159 – a new second-best time by more

than two seconds. Sprinters Ethan Mitchell, Sam Webster and Eddie Dawkins rounded off the first night winning gold in the men’s team sprint, the trio’s first World Cup win since 2017. “I’m not gonna lie, it’s good to be back in the winner’s circle and good to put our best foot forward,” Webster said. Dawkins went on to claim another gold medal on day two in the men’s kerin, storming home over the final 50 metres to win by 0.05s from Quentin Lafargue of France. “The fans and the crowd give a lot of motivation to us Kiwis, and you can see it in performances, you can see stuff that’s maybe not expected, times that are super, super world class that shouldn’t be happening at this time of the year,” said Dawkins. “It’s a testament to how much the crowd motivates

us and how much we draw from that.” The Madison paring of Campbell Stewart and Aaron Gate also won gold on day two. Day three saw the final two medals earned by New Zealand – bronze to Racquel Sheath and Rushlee Buchanan in the women’s Madison, and bronze to Ethan Mitchell in the men’s sprint. The Kiwis finished up the competition winning the Best Overall Nation Award, which offers important qualifying points for next month’s World Championships and ultimately to the Tokyo Olympics. “Honestly the next four or five weeks leading to the worlds is going to be so exciting with everyone fighting for their spots,” Summer Sum 201 Buchanan said. “It’s an awesome place to be and I am confident we are going to make big Summer 2019 gains.”

Chamber looks to big picture issues for Cambridge By Viv Posselt Newly returned to his role as president of the Cambridge Chamber of Commerce, Phil Mackay remains as focused as ever on steering the town’s growth in such a way that not a skerrick of charm is lost. It’s not an easy challenge, but the key to success, he says, is capitalising on links with other strategic players in the region and growing networks that will bolster existing springboards to development. “I’ve done a lot of work on that over the past couple of years, and we’re starting to see results. It is vital for Cambridge to make the most of the regional chamber network and grow its relationship with other strategic players – Waipa Networks, for example, Waipa District Council and those involved with developments at the airport,” he said. “We haven’t utilised those links as well as we could have in the past … some great

ideas come out of those connections.” Phil was first elected to lead the Chamber in late 2016; he was confirmed for another term at last month’s AGM. Three new board members signed on at the same time – Andrew Flexman, Tracey Oliver and David Natzke. Earlier this month Phil said much of the strategic planning needed for Cambridge must take into account growth not only in the numbers coming to Cambridge, but also in the numbers of people living on the periphery and supported by local businesses. “That growth will change our focus,” he said. “As a Chamber we will have to look at the bigger picture if we are to contribute to a vibrant Cambridge. I’ve identified a couple of key issues likely to impact our success. One is our access to skilled staff for local

businesses – something we are hearing is a problem and another is infrastructure. We’re sitting at the apex of the ‘golden triangle’ incorporating Auckland and Tauranga. We need to get those issues right before we can look at how we continue to use our position to our advantage. “We are talking to the chambers in those cities. The reality is that we could go gangbusters in Cambridge for 10 years, but sooner or later the wheels could come off the coach if we don’t look at the bigger picture; we could lose everything we may have gained. Forging relationships that will work for us in the long-term is how we avoid that. And anyway, what is going to work for other chambers will also benefit Cambridge.” Phil said the Chamber typically worked in the small business space, but

it was important to bring bigger businesses on board as well as they tended to think more about big picture issues. “Our role is to connect our members, to make sure they have access to opportunities that will enable them to do business better. What can we as a Chamber do to advance our overall vision of keeping Cambridge vibrant without stumbling over pitfalls and losing its character? We need to focus on the lifestyle which attracts people here and keep that front and centre of our planning. “At the same time, we need to realise that as a Chamber we cannot do everything ourselves. We’re a small not-for-profit organisation with limited resources. We have to be smart over what we do. That’s where networking comes in. We must get everything we can out of making strong connections.”

FRIDAY JANUARY 25, 2019

Bake stand raises fund for kids in hospital the amazing place that Cambridge is, a lot of people gave more – or even just gave a donation without requiring any baking in return. The girls confidently and proudly approached people on their way to the market, or coming from the market, explaining what they were doing and why. It was so clear that their ‘why’ was genuinely to make the kids in the hospital happy at Christmas.” The next day, the girls went to buy gifts for the hospital children, choosing items appropriate for both boys and girls and across a wide age-range. Just before Christmas, they were handed over to staff for distribution to children at Waikato Hospital’s Elizabeth Rothwell building. Susanne said that while she was the facilitator, driver, investor and sometime assistant on communication. “the girls did it all themselves”. “They were the initiator, visionary and drivers of it all, and did an absolutely brilliant job.”

By Viv Posselt

A great idea plus some pre-Christmas slog saw four Goodwood School pupils raise over $250 in December to brighten the lives of youngsters in Waikato Hospital. The then Year 4 students, Bailee Redpath, Imogen Irvine, Emerson Joll and Alexi Buchanan, joined forces to organised and man a cake stall on the steps of Victoria Square on December 15. They sold their baked items for $1 a pop, eventually raising around $250 which they used to buy toys for a wide agerange of youngsters at Waikato Hospital. “It was a great success,” said Bailee’s dad, Kaleb Redpath, “and I believe they raised $257 in the end. The girls said they wanted to find a way to help the kids in hospital, to keep them occupied while they were unwell. We had great support and the public was very generous. It was a great initiative.” Imogen’s mums, Susanne Lorenz, said the girls’ idea to help the children in hospital had been unspecific at the start. Once the decision was taken to hold a bake sale, the girls talked about doing it alongside the Cambridge Farmer’s Market, but after a spot of negotiation with both the market organisers and the Waipa District Council, it was decided to hold the sale on the Victoria Square stairs. “Long story short, they got the ‘permission’ they needed and then set off to plan their stand layout, what they’d need to bring on the day and who’d be baking what,” she said. “List in hand, we went to the supermarket, got all the ingredients for the very long list of baking!” The bake stand girls, from left, Bailee Redpath, Imogen Susanne said that for ease of operation, it Irvine, Emerson Joll and Alexi Buchanan. was decided to sell everything for $1. “Being Photo: Michael Jeans

MORTGAGE MATTERS

Why use a Mortgage Broker? By Gavin Lynch – Yes Mortgages In the present loan market, most lenders are changing their criteria in regards to what, how much and to whom they lend. This makes it even more important to use a mortgage broker so you know you are getting the right mortgage and right lender to suit your needs. I believe every client has a unique borrowing scenario and time needs to be taken with the client to understand and analyse this, so a correct lending plan and structure can be put in place to achieve goals. In this column, I want to explain briefly the role of the mortgage broker and what I can offer. The key role of the mortgage broker is to make the whole loan process easier for you, the client. This is possible because: I can look at all the lending options. I deal with more than 25 different lenders and work to find the best lender to suit your unique situation. • I can do all the ‘leg work’ with the lenders. • This saves you time and avoids pitfalls in getting a loan approved. • I can negotiate rates, fees, and legal contributions with certain lenders to obtain the best deal for the client. • I can meet at a convenient time and place for the client. • This can be in the home or workplace and after hours if need be. • I can advise on the best loan structure to suit the client’s need. And best of all using a broker is a free service in most cases. Now that has to be worth thinking about! If your looking for a mortgage, please give me a call and I can help you though the whole process.

Weekend of BMX action

By Sophie Iremonger

Cambridge BMX champion Sarah Walker managed to add another notch to her belt before heading off on her honeymoon on Monday this week, reclaiming the elite women’s title at the New Zealand BMX Championships in Te Awamutu on Friday. After qualifying second behind defending champion Rebecca Petch, Walker used the best of her experience to hold off the Te Awamutu rival in a closely-fought final. “It was such a good battle and I think the hardest national title ever,” Walker said. “Massive kudos to Rebecca. “It was great for New Zealand in terms of Olympic qualifications.” On Saturday the Te Awamutu Sarah Walker races alongside nearest rival Rebecca Petch in contention for the NZ women’s elite title

track hosted another big event, the Oceania BMX Championships, where riders from the Cambridge BMX Club recorded 15 podium finishes. Some of Australia’s top riders were amongst the 439 competitors on Saturday, presenting a worthy challenge to the 30-strong Cambridge club team which boasts several world podium-placers. It was no surprise six-time world champion Leila Walker won the 14-year-old girls final, or that world number three Lily Greenough finished Sarah Walker claimed the elite honours at the National BMX Championships in Te Awamutu third in a tough-fought 12-year-old on Friday. girls final. Her brother Jack Greenough finished first in the 14-year-old boys final, and their older brother Bennett won the 16-yearold boys final. podium from Cambridge was Kobi Russell, third for ten-year-old boys, Kellee Cryer, second for 12-year-old girls, and Tyla-Shae Donaldson, second in the 17+ women’s final. Greer Hall won bronze in both the 13-year-old girls final and in the female cruiser class. Last year’s world number three Tasman Wakelin managed to add to Cambridge’s gold medal count with a first-place run in the junior men’s division, quite the feat after moving up from the 16-year-old age group to junior men’s 17 – 24-year-old racing this year. This followed on from Tasman’s success in the National BMX Championships the day before, winning the 17 – 18 year old junior elite men’s final. Two more local BMX performance hub riders, Charlie Lester-Rosson and Rico D’Anvers, also finished third and fourth respectively in their national finals.

Tasman Wakelin races ahead of the pack in the junior men’s final.

The Leamington men’s lacrosse team has secured a place at the top of their league after their first game of the year against Te Awamutu Marist on January 16. The team now sits four points ahead of the rest of the league but holds an equal number of wins with their closest competitors, Te Awamutu Marist. The Te Awamutu team was previously unbeaten for the season before facing off against the Leamington lads on Wednesday last week, losing 8 - 6. “I’m really pleased we were

able to win this game,” said coach Anthony Warrington. “TA Marist have done really well this year … They’ve got some really passionate, talented and athletic players, so we all knew it was going to be a tough game.” Te Awamutu Marist started strong, their captain scoring in the first 25 seconds of the game. Leamington answered back with a goal of their own, both sides scoring back and forth up to half time, where the score was at 3 all. “We were definitely rusty after the Christmas break, losing possession of the ball

due to some bad passes or missed catches,” said Warrington. “I reminded the lads to stay focused on the basics and to stay structured in offense and to communicate on defence.” Back and forth scoring continued into the second half, tied at 5-5 with 12 minutes to go. The Leamingotn offense then pulled away to score two more goals thanks to Lucas Thom and Ethan Joblin. “We really put our foot to the ground in those last 12 minutes and started to lock Marist down in our defensive half while continuing to create goal scoring opportunities for ourselves,” said Warrington. Player of the day went to Ethan Joblin, who scored the goal of the day with a fancy close-range shot on goal and had two assists. “The rest of the season is going to be hard as we’re losing Ethan Joblin and the Hamilton teams are continuing to get stronger as they get used to playing alongside each other. I’m hoping that if we continue to train hard and play smart and with passion then we can close out the season having made it into the final.”

Second overall for Ross in the deep south

Nick Ross has come away from the fourth round of the BNT V8s Championship at Teretonga near Invercargill second overall for the weekend and maintaining second place in the Championship. Having qualified position three, the Cambridge racer notched up two third placing’s before taking a lights to flag victory in the final race. Having raced at the Highlands circuit at Cromwell the weekend before, Ross stated that he wasn’t happy with the performance of his Total Lubricants Nissan Altima, citing that he and his Concept Motorsport Team were missing the right set-up on their car to have it a regular race winner. Though the results at Teretonga were good, Ross feels, the performance of the Nissan isn’t quite there yet.

“We‘re still chasing the set-up in the car. We made some pretty big changes this weekend, but we’re not quite where we need to be,” said Ross. “We’ll take the car home, pull it apart and see if we’re missing something. “We were pretty quick here at Teretonga last year, and we put the same set-up on the car this weekend, and we’re just no-where.” Ross is chasing down Championship leader Jack Smith, who won the opening two races of the weekend, but failed to finish the third race after a fierce battle with Ross. Smith suffering a suspension failure and ending his race in the pits. “Though, two podiums and a win is good, we need more wins. We’ll go back to the workshop and have a think about it. We know we have the horsepower, we just can’t get the car to stop and turn like we need to.”

Nick Ross has finished second overall at round four of the BNT V8s Championship at Teretonga.

The fifth round of the BNT V8s Championship will be held at Manfeild February 8-10. “Looking forward to Manfeild in a few

weeks time. It’s a great circuit, we got pole position there last year, so we’ll try and replicate that again and see if we can finish at the front of the field again.”

The Cambridge Pony Club pulled off a successful weekend when they hosted the 2019 North Island Show Jumping Championships for the 34th year over Saturday and Sunday. Their team of riders finished second for the Sue Yearbury Trophy behind Whangarei – awarded to those who show good team spirit, as well as keeping themselves and their area neat and tidy.

Cambridge finished 23rd overall, whilst the Parenga Pony Club, based out of St Peter’s School, placed eighth. Whangarei won the competition overall. Cambridge rider Ashlee Strawbridge also won the Llewellyn Trophy for the second time, presented each year to the Cambridge team member with the most points.

FRIDAY JANUARY 25, 2019

with Jan Bilton

Tempting tomato treats Small, yellow — and supposedly an aphrodisiac — the first tomato was native to the Peruvian Andes. Over the years it has had many name changes, transformations and descriptions. Few vegetables have had such culinary impact as the tomato. Botanically it is a fruit but it is enjoyed as a vegetable. There is some debate about the nutritional content of tomatoes. Is it better to eat them raw or cooked? Water-soluble vitamins such as C and B which include folate, leach out of vegetables when they are cooked, although some will be retained in any juice or stock. The longer the cooking time the more vitamin levels are reduced. However, levels of other nutrients may increase. While cooking decreases the level of vitamin C in tomatoes, it increases levels of antioxidants, including lycopene, the carotenoid plant pigment that helps protect the body from free radical damage. The common medium-sized red tomato is a great all-rounder for slicing and enjoying raw or cooked. Cherry tomatoes now come in different hues and shapes and are excellent raw in salads or as a healthy snack. The fleshy plum (Italian or acid-free) tomatoes are the best for sauces. And the new yellow tomatoes — slightly larger than a golf-ball — are something to relish when served raw but develop exceptional flavour when fried.

Slow Roasted Cherry Tomatoes

Muffschettas

Spread the split muffins with the combined spread ingredients. Combine the tomatoes with the olives, black pepper and lemon juice. Using a slotted spoon, pile on the muffins. Top with a piece of mozzarella. Grill for 1-2 minutes until the cheese is melted. Serves 4.

VEGETABLE NOODLES WITH YELLOW TOMATOES Use store-prepared pesto if you wish, thinning it with lemon juice. Spiralisers — gadgets that transform vegetables into noodles or slices — are available from most kitchen ware stores. Pesto: 3 tablespoons olive oil 2 cups baby spinach 1/2 cup flat-leaf parsley leaves, chopped 2 cloves garlic, crushed 2 tablespoons capers, rinsed 1 tablespoon each: grated lemon rind and juice flaky sea salt and black pepper to taste Noodles: 3 courgettes 1 tablespoon olive oil salt and pepper to taste Tomatoes: 6-8 yellow tomatoes 1 tablespoon olive oil

MUFFSCHETTAS

A yummy variation on bruschetta. 4 English muffins, split Spread: 3 tablespoons butter or table spread, softened 3 large cloves garlic, crushed 2 tablespoons finely chopped basil 1 tablespoon tomato paste Topping: 3 large tomatoes, peeled and diced 8 pitted black olives, chopped freshly ground black pepper to taste 1 tablespoon lemon juice 50g fresh mozzarella, cut into 8 pieces Toast the muffins until golden. Place on an oven tray. Preheat the grill.

salt and pepper to taste To prepare the pesto, heat the oil in a non-stick frying pan. Add the remaining pesto ingredients and heat until the greens are wilted. Place in a blender and process until smooth. This can be prepared ahead and refrigerated. Warm slightly before using. To prepare the noodles, spiralise or julienne the courgettes. Heat the oil and stir in the courgette noodles, cooking until crisp-tender. Season and combine lightly with 2-3 tablespoons of the pesto. Meanwhile, fry the tomatoes in oil until just softened. Season. Place the noodles in two shallow bowls. Top with the tomatoes. Great garnished with shaved parmesan and marigold leaves. Any remaining pesto can be served on the side. Serves 2.

SLOW-ROASTED CHERRY TOMATOES Add to pasta for a flavoursome sauce. Or serve as a side dish for grills. 4 cups cherry tomatoes 4 sprigs thyme 2 large cloves garlic, thinly sliced flaky sea salt and freshly ground black pepper to taste 4 tablespoons olive oil Preheat the oven to 125°C. Arrange the tomatoes in a large baking dish. Sprinkle with the thyme, garlic, salt, pepper and olive oil. Bake for about 2 - 2 1/2 hours, until the tomatoes are shrivelled and soft. Serve warm or cold. May be refrigerated — covered — for 3 days. Serves 4.

Things to do this weekend

Make the most of the great weather. Get out and enjoy Cambridge and its surrounds. The area is jam-packed with things to do, from sports and adventures, to markets, museums and outdoor movies. You’ll get the warm fluffies at face-to-face encounters with cute friendly blacknose sheep, learn about our successful dairy and thoroughbred industries on tours to farms and studs, shoot the breeze cycling our magnificent river and mountain bike trails, make a splash on the water, and savour a break in one of our trendy cafés.

Our town of trees and champions has art galleries to browse, history to discover and nature in abundance. If you need help planning your itinerary, call into the Cambridge i-Site. It’s the place to make bookings, get free maps and information, even hire a bike. E-bikes, mountain bikes and full suspension bikes are available. Saturday night Cambridge Raceway is hosting a free outdoor family movie. Screening starts at 8.30pm. Bean bags are available, or bring your own rug. Food trucks will supply

munchies. Come early and enjoy a free game of croquet courtesy of Cambridge Croquet Club. Pack a picnic and go bush. Maungakawa Scenic Reserve offers lovely walks, picnic spots and places to play. Or meander the water on an ecological river cruise. Adrenaline junkies may prefer an extreme jet tour. Waterfalls and glow worms can be encountered on kayak expeditions. For a change of pace, don’t forget St Andrews Craft Fair on Monday.

Dig up our history at Cambridge Museum

Lake District Adventures

Venturing south of Cambridge

How much do you know about our town and the establishment of Camp Cambridge? The camp was formed on a series of terraces with the Star Redoubt built in Fort Street on 5ha overlooking the river towards Maungatautari. An archaeological dig in 2010 found a number of objects from the redoubt. And here’s the fun part. The Cambridge Museum has special activities for children where they can see the objects, enjoy our puzzles and dress ups. We invite you to browse our fascinating exhibitions and get an insight into our wonderful town and its people. See you at 24 Victoria Street.

Enjoy a fun-filled family outing biking the scenic trails of Cambridge or kayaking the southern end of Lake Karapiro. Lake District Adventures has bikes, e-bikes and kayaks for hire. Bikes suit all abilities and kids’ seats are available. The Te Awa river trail is especially popular and provides safe riding for the whole family. Lake District Adventures also offers tours and operates regular shuttle services along the Waikato River Trail and to other trails in surrounding areas. You can book glow worm tours and guided mountain bike tours, or try your hand at stand up paddle boarding. Varying ages and fitness levels are catered for. There are great value for money adventures to choose from.

South of Cambridge, State Highway 1 passes through the quaint little town of Tirau. The must-stop Corrugated Capital of the World is renowned for its large variety of boutique shops, cafés, restaurants as well as leisurely pastimes on the golf course or nature trails. Retail diversity includes MyStyle, a shop that not only specialises in vintage-inspired fabric but also sells children’s toys and games that don’t need batteries. Paisley House Furniture & Home Interiors has a hard-to-resist range of directly imported and hand-crafted furniture and home décor, plus a wide range of beautiful décor pieces sourced from New Zealand wholesalers. Deciduus, Tirau’s fine art and plant boutique, is unique in the way it combines art and horticulture in its concept gallery. And before you jump back in the car, stock up on supplies at La More Sweets. Confectionery heaven, this shop entices with its lolly range, fudges, brittle and other amazing goodies, including whopper ice-creams.

Old-school magic meets the modern world when young Alex stumbles upon the mythical sword Excalibur. He soon joins forces with a band of knights and the legendary wizard Merlin when the wicked enchantress Morgana threatens the future of mankind. Reviews: “I am bewildered at how amazing this movie is. It perfectly captures the fantasy genre in a way I find to be better than fantasy giants such as The Lord of the Rings, Harry Potter, Game of Thrones, or the Chronicles of Narnia. It captures the whimsy of the story of King Arthur perfectly, and is movie of the year if not movie of the decade.” “What a great film for the whole family. The characters were loveable, the story was fun, and I was thoroughly entertained and whisked away to the movie's adventure. If you're looking for whimsical, kiddish fun for an evening, absolutely go live out your childhood dreams with this movie.”

SCHINDLER’S LIST To commemorate International Holocaust Remembrance Day. This is the last chance to see this important and powerful film on the cinema screen. A powerful story whose lessons of courage and faith continue to inspire generations. The shots featuring a red-coat-girl came from a story that Audrey Hepburn told Steven Spielberg while they were filming her final movie. She told him of an incident during World War II where she saw a little girl with the same attire while the other people were loaded onto trains. That moment was forever etched in her memory and it struck Spielberg when he made this film. Due to the amount of violence and horror depicted, Spielberg made Oliwia Dabrowska, the red-coat-girl and her parents to promise him not to watch the film until she reached eighteen (in 2007). True to what he said, she was horrified of the result when she violated the promise at the age of eleven.

FRIDAY JANUARY 25, 2019

All in a row…

Paddlers from 61 clubs around the country gave everything they had to ensure this month’s Waka Ama Nationals at Lake Karapiro was a huge success. The 30th Te Wananga o Aotearoa National Waka Ama Championships at Lake Karapiro ended on January 19 with Gisborne-based Horouta Waka Hoe Club awarded the Club Points Trophy having amassed 343 points throughout the six-day nationals. It was the eighth time in nine years that the club has won it. A second trophy – the Ace Cuthers Memorial Club Spirit Award – was presented to Tutukaka-based Mitamitaga o le Pasefika Va’a-alo Canoe Club. This month’s event at Lake Karapiro saw a record number

of paddlers sign up to compete over a range of distances, attracting 3577 paddlers in 1700 teams from 61 clubs. There were 10 age divisions at the January 14-19 nationals – the youngest was just five years old. The final day of competition featured 24 finals, 12 of which were back to back. The master 70-plus women’s W6 500m race had the regatta’s oldest paddler, 82-year-old Ngahuia Mōrehu, in one of the two crews.’ Three people were recognised with an award that recognises those who have contributed – or continue to

contribute – to the growth, development and legacy of waka ama. One was Raipoia Brightwell, while the other two - Chrissy Herbert and Bo Herbert - were recognised posthumously. Waka Ama New Zealand CEO Lara Collins said the inclusive nature of the sport brought together paddlers of all ages and ethnicities. “It’s a sport for all sorts of people from all walks of life,” she said.
