From the President “... to provide the highest quality family country club experience, serving as a focal point for the golf, fitness, swimming, tennis, dining and social desires of our member families.”
Our Club Vision:
Formal Dining Friday & Saturday Nights - 6 in
It’s hard to believe that summer is almost over. The close of every season is marked by recurring events each year, and for summer that means shorter days, cooler nights, children heading back to school and the symbolic ending at Labor Day. While this may mean that wearing white is passé again, there’s no need to despair. Football is cranking up, the golf course is at its peak and our glorious fall weather makes tennis, golf and dining on the patio much more enjoyable than they are during the dog days of summer. And this year, the Club is closing out the summer with a literal bang, with a Labor Day celebration capped by a fireworks show that is guaranteed to send everyone home with a smile.

“It’s the Best Dining Experience in Town!” Using the very finest ingredients, Executive Chef Michael Mort, CEC and his staff create a superb dining experience just for you. See forsythcc.org for weekly menus.
While summer is always our busiest time at the Club, it has also been very active in terms of work on our long-term facilities master plan. A committee organized by the Club’s Strategic Planning Committee and comprised of a cross-section of members has been meeting over the summer to define a preliminary conceptual plan for potential future improvements to the Club, including dining, fitness, pool and tennis facilities. This committee has considered all of the Club’s existing programs, services and facilities as well as relevant financial information, and is working to provide initial recommendations to both the Board and the members on improvements that might be made to match the services existing and new members would like. We currently expect the committee to complete its work in September, after which we will move to the critical stage of member input and feedback on the plan. We are committed to a member-driven process and every member will have an opportunity to provide input. This is your Club and I encourage you to be an active participant in this process. Member input will help define and sharpen the vision of what the membership wants in terms of future facility improvements and should result in a solid blueprint for a master facilities plan that matches our members’ collective desires. Stay tuned for more information in the coming months. In closing, I look forward to seeing you at the Club’s Labor Day festivities and fireworks show. We expect this will make up for the Fourth of July rainout and provide a great ending for summer.

Forsyth Country Club
Dear Forsyth Country Club Families,
BRIDGE
Yesterday morning I went out to walk my dog and it was 65 degrees. Ah yes, the end of summer and transition of the seasons are in sight once again, and while there are a few hot days still on the calendar – fall is upon us. My research shows that the average first frost for Winston Salem is October 13th. That is only 6 weeks! The colors will explode over the next few weeks, and one of the best times of the year to get out and enjoy FCC is here and now. Make your plans now to come and enjoy an afternoon or evening here at the Club during this great time of year.

Firefly, Skyy, Absolut Peach, Stolichnaya, Ketel One, Grey Goose, Absolut, Smirnoff, Tito’s, Ciroc and Belvedere The history of Vodka is unique and varied. Vodka is far and away the most popular spirit category in America, accounting for more than 20% of all distilled spirits consumption. It is defined by government regulations as a spirit without any distinctive character, aroma, taste or color. Vodka is essentially an un-aged neutral spirit that can be distilled from just about anything fermentable. Although the legendary potato is used in the production of some vodkas, most brands’ today, including the imported ones, are made from grain...any grain, including rye, wheat and barley, but principally corn. The key to distillation is the separation of alcohol from the water content of fermented liquid. Because water freezes at a higher temperature than alcohol, the Eastern Europeans were able to separate the alcohol by freezing fermented liquid during the winter months. As a result they were left with a drink with a higher strength than that produced by fermentation alone. A mash was created by heating the grain to release the starch for conversion into sugar. The sweet liquid was allowed to ferment naturally before distilling. Gradually Vodka-making in Eastern Europe 151 was refined. In the beginning Vodka was the product of a single distillation to a relatively low proof, but distillers soon learned the benefits of two or more distillations on product quality. Extra distillations mean the final spirit has a higher strength and greater purity. Next the Eastern Europeans introduced filtration to improve the purity of the spirit further. This was carried out initially with felt or river sand, but in the late eighteenth century charcoal began to be used. The filtration standards established at that time remain to this day. Most Vodka has no color and carries only the clean aroma and character of pure spirit from the still. It has a characteristically light and very slightly oily texture. Different brands have their own characteristics and have been made over the centuries to a variety of styles. There is a long heritage of making flavored Vodkas in Eastern Europe. This ‘goes back to the day’s of home distillation, when Vodka was flavored with herbs, spices and fruit. Nowadays natural flavorings such as cherry, lime, lemon, orange, mint, etc., are added in the final distillation.

Especially for Juniors Family Activities “Childcare”
by Anne Clark - Family Activities Director
Hello FCC Families! When I was a kid, I remember looking forward to those times when Mom and Dad went out for a night with their friends or to celebrate a special occasion without toting us along for the evening. My brother and I would anxiously wait to see which of the older neighborhood kids would be joining us for the evening – the one that builds forts with us in the living room? Or maybe the one that makes homemade playdough! One thing we didn’t like was the word BABYSITTER. “We’re not babies! And we don’t need to be babysat!” While our Thursday Night Kids Club is coming to an end, we’d like to continue to offer Friday Night Childcare, as long as it is being used, but we’d like to change things up a bit. From now on, all babysitting (oh, that awful word!) and childcare will be called Kids Club. For $10 per child (excluding complimentary 109 childcare for special events), Kids Club will provide a fun, entertaining atmosphere & delicious dinner. Our responsible but energetic young adults will help your children have a blast while you enjoy an evening at the Club. We’ll continue to make changes, expand, and improve! In other Family Activities news, Family Night Activities will continue every week through the fall. I hope you will set aside this evening to join us at the Club! Activities are free, but don’t forget that we also have a Family Night Buffet for you and your family to enjoy. Activities for September and October Include: September 1- Bingo in the Grill September 8 - Lawn Games, 6-7:30 PM September 15 - Dodgeball at Tennis Courts, 6:30 - 7:30 PM September 22 - 60’s Night September 29 - Cooking w/ Kip October 6 - Bingo in the Grill October 13 - Comedy Night at the Club with Sarah Barnhardt October 20 - Team Spirit Night, Tailgate, & Flag Football Oct 27 - Halloween Crafts & Bonfire with S’Mores

“Apples for Autumn”
by Michael Mort, CEC-Executive Chef
Cripps Pink: also know as Pink Lady, one of the best varieties for baking whole. The skin retains its color, and the flesh with lemon and strawberry hints, holds together well. Granny Smith: tart and firm, it has a lemony taste that stands up well to buttery tart or pie crusts and crisps. Also works well in sorbet. Gala: mild and crisp, the Gala will not turn brown as fast as other apples when sliced, so it is ideal for salads. Not as good for use in roasting and baking recipes. Jonagold: is a cross between Golden Delicious and Jonathan varieties. This works well when combined with Granny Smiths in pies. Is a contrast with its honey and melon hints and has a juicy, firm flesh. Braeburn: is sweet with deep flavors of spice and pear. Stands up well in cooking, excellent for applespice cakes, muffins, or roasted and served with savory dishes like pork or chicken. Conventional vs. Organic: There is an implication that organic apples are grown spray free. The term “organic” does not mean “no pesticides”... it represents a certification and growing process where only approved pesticides are used. The use of integrated pest control in organic farming (using beneficial insects and birds, mating disruption, and traps) does reduce pesticide use for a number of diseases and insects. Another important fact to remember about apples is the natural process of wax formation on the skin. Whether it is an “organic” pesticide or a “conventional” pesticide, the residues will be trapped under the wax layer, and washing will not remove it. Peeling usually will, but peeling means the loss of fiber and some nutrients. It is also important to note that organic apples do carry significantly less pesticide residue than most conventional ones. However, residues on both organic and nonorganic don’t exceed government safety levels. As with all fresh produce washing thoroughly under running water helps remove dirt, bacteria and surface chemicals.

Here is an easy rustic apple dessert: Apple Galette 6 – 8 servings 1 ½ cups all purpose flour 1 tablespoon granulated sugar ¼ teaspoon salt ½ cup (1/4 lb.) plus 2 tablespoons cold butter 1 large egg yolk, lightly beaten ½ cup chopped walnuts 2 pounds tart apples (3 to 5), such as Pink Lady or Granny Smith ½ cup firmly packed brown sugar ¼ teaspoon ground nutmeg 1 large egg, beaten to blend with 1 tablespoon water 1. In a food processor or large bowl, combine flour, granulated sugar, and salt. Cut ½ cup butter into pieces and add to flour mixture; pulse motor, cut in with pastry blender, or rub in with your fingers until mixture resemble coarse meal. With motor running (or stirring with a fork after each addition), add egg yolk and 3 to 4 tablespoons cold water, 1 tablespoon at a time; process or stir just until mixture comes together in a ball. Form dough into a flat disk, wrap in plastic wrap, and chill until firm but still pliable, about 1 hour. 2. Meanwhile, spread walnuts in a baking pan and bake in a 375 F oven until barely golden, 6 to 8 minutes (leave oven on). 3. Peel and core apples; cut each into 8 wedges. In a 10 to 12 inch nonstick frying pan over medium heat, melt remaining 2 tablespoons butter. When it’s foamy, add apples and stir often until slightly softened and brown at edges, 10 to 12 minutes. Sprinkle brown sugar and nutmeg over fruit and stir until liquid is syrupy and bubbling, about 5 minutes. Stir in walnuts. Remove from heat. 4. Unwrap dough. On a lightly floured surface, with a lightly floured rolling pin, roll into a round about 15 inches in diameter. Line a 12 by 15 inch baking sheet with cooking parchment (or butter the sheet well) and carefully transfer dough round to sheet (edges will hang over sheet). 5. Pour apple mixture into center of pastry, mounding wedges in a circle about 8 inches wide and 2 inches high. 606 Gently fold edges of dough over apples, pleating as you go, leaving an opening about 4 inches wide in the center. Brush pastry all over with beaten egg and water mixture. 6. Bake in 375F oven until pastry is golden brown and apples are tender when pierced, 40 to 45 minutes (35 to 40 in a convection oven). Transfer galette (with parchment, if using) to a wire rack to cool. Transfer to a large plate, gently pulling parchment from under tart. Serve slightly warm or at room temperature, cut into wedges.

CRAZY DUCKS Season Recap The 2011 Crazy Duck season was one of the best! It is always so hard to end the season! We had over 120 swimmers on the team this summer, and they all did a fantastic job! Our entire coaching staff was very proud of every swimmer and how hard they all worked. Their progress from the beginning of the season to the end was outstanding! The ages on our team this summer ranged from 4- 18 and every level of ability was present. But, by the end of the season, every swimmer had learned the strokes and seemed to have enjoyed their summer swimming experience. We had a lot of fun at our home swim meet pizza parties, the games and doughnuts, and throwing the coaches in the pool. Laughter was everywhere on the pool deck – what a fun season!

Forsyth Notes - Golf On the Greens “Heating Up..."
by Chris DeVane-Golf Course Superintendent
With summer nearly completely in our rear-view mirror, we prepare for the fall season…which is one of my favorite times of the year. The fairways will remain green and in very good condition for the next couple of months but, alas, so will the rough. The greens will begin to respond to the more favorable weather and provide a faster putting surface. The trees will soon put on their annual show of colors and provide some truly stunning vistas of the entire property. One item of considerable interest over the last 60 days involves the large number of “bee” and “wasp” reports we have received. The animal in question is actually known as a cicada killer wasp. It is known as a solitary wasp and behaves differently than social wasps, which include hornets and yellow jackets. The male cicada killer wasp is very aggressive but does not possess a stinger. He is merely defending nesting sites and trying to “woo” females in the mating process. The female does have a stinger but uses it to paralyze cicadas and not for defensive purposes. The female is non-aggressive and the rare human sting occurs only if stepped on by bare feet or it becomes entangled in your clothing. The adults live about 60 to 75 days and they should be gone by mid-September. We have treated several areas and will continue to look for and treat other areas as needed. You may have noticed several differences in regards to the bunker rakes on the golf course. The first is that we are now asking you to please place the rakes outside of the bunkers on the grass instead of inside the bunker. The second is that we have placed a small number of rakes in various bunkers that have both a longer handle and a larger rake head. Both of these actions were prompted by input from the membership at large. The next time you are at the golf course, please note these items and give your feedback to any member of the Green or Golf committees. Feel free to “test drive” the new rakes by raking behind yourself or someone else. Another recent addition to the golf course is the replenishment stations for the sand bottles we provide for our walking golfers. These stations are located at the tee boxes on holes #6 and #14. These are in addition to the stations at #1 and #10 tees. I encourage and thank you for your use of these bottles to fill divots in the fairway. One personnel addition I would like to share with you is the hiring of a new Equipment Manager. Jay Rehr comes to us most recently from Barbados, but has worked at both Augusta National and Merion Golf Club. Jay’s experience and knowledge will be a valuable asset to our maintenance team. Please join me in welcoming Jay to FCC. I hope to see you on the golf course soon!
Course Aerification
We are aerifying on Monday, September 12. Aerification will be completed on the 13th.

“Happenings on the Course”
by John Faidley-Head Golf Professional
Golf season is winding down, and it’s been very active, competitive, and
fun highlighted by our Celebrity ProAm, Bagpiper Member-Guest, and Club Championships. I would like to say a special thanks to the continued support of all our tournament sponsors, especially Nationwide Marketing Group and Robert Weisner for their role as Presenting Sponsor of our Celebrity Pro-Am. Nationwide was a co-presenting sponsor this year with Michael and Ben Hough of Hatteras Financial. The tournament raised $80,000 for The First Tee of the Triad. The tournament dates for next year have been set for June 10-12, 2012. Be sure to save the date.
During the month of October, every Thursday will be Guest Day at the Club. We’re excited to announce that accompanied guest fees will be reduced in half on Thursdays which will provide a nice opportunity to bring local friends out to enjoy the club. Guest fees, accompanied by members on every Thursday in October, will be $30 plus any applicable cart fees. Congratulations to Dan Pearce and his guest, Lucas Inman (pictured), for their victory in this year’s Bagpiper MemberGuest. The weather was perfect, chef’s food incredible, and the golf course could not have been better. The shootout was exciting, ending with a chip off victory on #18 by Pearce and Inman over Riyaz Jinnah and John Hollingdale. The Bagpiper is the club’s flagship event and I welcome Bill Doss as the 2012 Member-Guest Chairman. Flight Winners included Jimmy Chrysson/David Eagan, Jay Luke/Jimmy Hoots, Dan Pearce/Lucas Inman, Stephen Ferree/Craig Mathiason, Bryan Peterson/Bob Peterson, Bill Disher/Jim Dobbins, Mike Wolfert/Matt Wolfert, Tim Nerhood/Bob Nerhood, Riyaz Jinnah/John Hollingdale, and Carl Parrish/Bill Reingold. As Couples Golf wraps up in September, we will have two very fun events. Our Couples’ Member-Guest will be held Friday, September 9th. The nine-hole event will begin at 5:30pm with beverage carts on the course, dinner following the round and prizes. The month will also include our annual Glow Ball Tournament on Saturday, September 24th. Sign up your foursome for this ultrafun event. We have two holiday Monday openings on the horizon. The golf course will be open Monday, September 5th for Labor Day and Monday, October 10th for Columbus Day. The golf course will be closed on September 6th and October 11th but practice facilities will open at noon each day. Our next MGA Breakfast Tournament will be held Saturday, October 1st with a 9:30am shotgun start. The year-long MGA Match Play Tournament is winding down with the champion crowned in October. The MGA has enjoyed a very good tournament program this year I would like to thank MGA President Mel Williams, the MGA Board and everyone who participated and supported the MGA events. The annual Parrish Cup Matches versus our cross-town rivals, Old Town, will be contested October 29th and 30th. These matches are a lot of fun and I’d like to invite everyone out to watch
as our best players compete and attempt to retain the cup in this prestigious event. The matches will be played at Forsyth on Saturday the 29th and Old Town on Sunday the 30th. Forsyth holds a 15-10 advantage in cup competition through the years and is riding a threeyear winning streak. The Senior Interclub season comes to a close in October. In addition to hosting several home matches to close the regular season, we are proud to host the Season Finale on Thursday, October 27th. Anyone at least 50 years young that would like to participate in the senior interclub tournament program should contact Carl Bumgarner. Carl has been gracious to serve as coordinator for the senior interclub, taking over for Ed Robins. Carl is always looking for individuals to participate in weekly interclub matches against various clubs in our area. These events are a great way to meet new friends and play some great courses in a tournament setting. The ladies stay busy this fall, closing down their eighteen and ninehole schedules in October. Both groups will play their closing events and host the Susan G. Komen event on October 25th. There are still openings in the Komen. Contact Blair McLorie, Tori BoysenGreene, Kristin Holcomb, or Alana/Mary Ann in the Golf Shop. We have a One-Day Member-Guest scheduled for Thursday, November 3rd. Make plans to attend. Teams may consist of one member and three guests, or two members and two guests. The tournament will begin with a 1pm shotgun start. We will have beverages on the course and a cocktail social following the round. Holiday Classic returns December 3rd and 4th. This is a two-man, multiple format event with a party for players Friday night, December 2nd. Tees and handicaps will be set by the professional staff. Tee times will begin at 10am both days. This event was snowed out last year and replayed as the Super Bowl Shamble. Sign up with your partner for this very unique and fun tournament.
Congratulations Cort Fox eagled the 12th hole on a recent trip to The Old Course in St. Andrews, Scotland. Duncan MacKeen eagled #10 at Forsyth on July 3rd. The eagle followed birdies on #8 and #9 to cap an amazing three-hole stretch of golf. Robert Helms eagled #8 at Forsyth on June 28th. John Spencer shot his age, 84, on July 6th. Carl Walker bettered his age by five shots, scoring an 80 on June 8th. Skip Boswell scored his first ace on the 7th hole at Royal New Kent on July 20th.

“Relaxation Response”
Joshua Prevette, PHD - Fitness Director
Automated External Defibrillators, AEDs, at the Club
The Club has eight defibrillators on the Club property. Defibrillators can be found in the following locations:
The relaxation response is a bodily state you can trigger by practicing some very simple techniques. While in this state, some wonderful and beneficial physiological changes occur. The response can be likened to the reverse of the fight or flight response. When we find ourselves in a stressful situation which requires us to either put up our dukes or get the heck out of here, our bodies go into hyper-drive in order to provide us with the energy we need to cope with whatever is going on. If we do not take it upon ourselves to counter the effects of fight or flight we may find that over a period of time we may develop hypertension, cardiac arrhythmias, digestive problems and a whole host of related problems.

The regular use of the relaxation response can bring about relief to the same degree that the fight or flight syndrome can negatively influence already existent stress-related illness. There are a number of ways to bring about the relaxation response. In order for them to work, they must provide you with some mechanism for arresting your flow of thought. They probably will not be totally contained; however, what is important is not to become attached to the thoughts. Just notice them and let them go by. One method that is very effective for helping to elicit the relaxation response is called progressive relaxation. It’s a matter of systematically tensing and releasing all your major muscle groups. Once that is accomplished it’s on to eliciting the relaxation response. How to Elicit the Relaxation Response: It’s very important to keep an open-mind around expectations of results from the process. Let the process produce results. Keeping a passive, receptive attitude is essential. What you’ll need: 1. A short phrase or word that holds great meaning for you. For example: one, peace, or calm. Or a phrase i.e. I am at peace, or perhaps a phrase with religious meaning. 2. Find a place where you can be alone. Disconnect the telephone and hang a “Do Not Disturb” sign on your door. 3. Approximately 20 minutes of time for the Relaxation Response. You’ll initially need approximately 20 minutes for progressive relaxation, too. Although, it isn’t absolutely necessary for you to use progressive relaxation before taking the steps to elicit the relaxation response; it is a very good segue into it. 4. A straight back chair or a bed. I highly suggest a chair because it’s very easy to fall asleep when doing this in bed. 5. A detached attitude is very important. Don’t worry about whether you’re doing it right or wrong. Here’s what you do: 1. Set down on a chair in a quiet environment with your spine straight. 2. Close your eyes. 3. Use progressive relaxation technique, then go to step four. 4. Breathe slowly and naturally. As you do, focus on your word or phrase. Repeat it to yourself each time you exhale. If your thoughts distract you, simply return to your word or phrase. 5. Continue the technique for 10 to 20 minutes. Use this technique upon waking in the morning and just before going to bed at night for optimum results.
The next time you’re in these areas please take the time to make a mental note of their location. The hanging boxes located on the Golf Course Restrooms and the Field House have an alarm attached that will go off if the cabinets are opened. In the event of an emergency, immediately call 911. Please contact the Golf Pro Shop at 768.7559 or the Club receptionist at 768.0220 if the alarm is activated. We truly hope no one will ever need to use one.
