Club House From Chef “New Menu”
by Dusty Snow, Executive Chef
I am extremely happy to see how well our new menu has taken off, and even happier to see how many beef stroganoff’ dishes members have enjoyed. Our “summer peach triple threat” special includes a glass of local peach wine with our new grilled salmon entrée with a warm peach chutney and cilantro risotto cakes. To top it all of, a local white peach crème brulee. I believe a few people have ordered a double serving. It makes me feel good to create simple, well-made dishes for the great people here at Salem Glen. Wonderful things are happening at the Club. I'm glad to be a part of it.
“Benefits of Cooking with Kale” by Dusty Snow, Executive Chef
Kale is a dark leafy green, considered to be in the same family as cabbage, brussel sprouts and broccoli. It is known to be one of the healthiest vegetables out there, absolute loaded with antioxidants and packed full of essential vitamins. From Web MD: Kale is a Nutritional Powerhouse: "One cup of chopped kale contains 33 calories and 9% of the daily value of calcium, 206% of vitamin A, 134% of vitamin C, and a whopping 684% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese, and phosphorus.

We are happy to share that we now serve adult beverages at the pool and more food items. The Snack Bar Menu will be available throughout the week, and the Grille Menu will be an option for food service Wednesday through Sunday. To answer some of the rules and guidelines for the pool, see the following: • No coolers or outside food or beverages • Food and non-alcoholic beverage purchases apply to member monthly food minimum • Members are allowed to bring guests. • Each guest fee is $5.00 per person per day. (This includes extended family and friends, children and grand children over the age of 5.) • Guests must register at the pool upon entry. • Children under the age of 5 have no guest fee. • There is no limit to the times a child under the age of 12 may be a guest at the pool. • However, adult guests are limited to 5 visits per pool season It's going to be a fun and fantastic summer at the Salem Glen Golf & Country Club Pool. Don't forget, the Pool is available for private parties and special events. Call me today at 712.1010 ext. 226!
Kale’s health benefits are primarily linked to the high concentration and excellent source of antioxidant vitamins A, C, and K -- and sulphurcontaining phytonutrients. Carotenoids and flavonoids are the specific types of antioxidants associated with many of the anti-cancer health benefits. Kale is also rich in the eye-health promoting lutein and zeaxanthin compounds. Beyond antioxidants, the fiber content of cruciferous kale binds bile acids and helps lower blood cholesterol levels and reduce the risk of heart disease, especially when kale is cooked instead of raw.” You can use kale in many ways. Some treat it like collard greens and add peppers and onions with a dash of apple cider vinegar at the end to go with a nice pot roast or pork chop. Some toss it in a little bit of vegetable oil, lemon pepper, jerk seasoning or steak seasoning and bake them in the oven at 350 for about 8-10 minutes and create kale chips; an absolutely delicious alternative to that bag of potato chips. On the current menu, I serve kale like a spinach dish. In a very hot pan, add a table spoon of vegetable oil, throw in mushrooms, peppers and onion with a teaspoon of garlic. Once the veggies start to sweat and garlic turns slightly brown, add in a large handful of kale, a small pinch of salt and pepper (a little goes a long way here), a splash of white wine, and let it reduce and steam the kale for just about a minute. To finish, add a sprinkle of feta cheese some brightness. It goes exceptionally well with our pork tenderloin and mustard cream sauce here at the club!

Golf & Health Golf News "Short Game! Short Game! Short Game!" Daniel Byrd - Golf Professional
With over 60% of your strokes coming from inside of 100 yards, it is essential that you spend a proportionate amount of time on your short game as you practice. You should devote most of your short game practice to putting and chipping. Improve your chipping and putting, and you’ll significantly reduce your handicap. The touring pros spend more time practicing their short games than all of their other shots combined. How many weekend golfers can say the same? The most important aspect of chipping is to make sure that your lead wrist doesn’t break down during the chipping motion. The moment your wrist breaks down, two things happen: The loft of the club changes, which alters the trajectory and the roll (inconsistent distances will result); and your arm also breaks down, which can result in bladed shots that go screaming across the green. To ensure that neither of these things happen, work on keeping your arm straight and your wrist firm during the shot. If you’re having difficulties, place a rubber band around your lead wrist and slide the butt end of the club under it, holding the club close to your wrist. This will give you the correct feel when chipping the ball. Accelerate The Putter Acceleration is the increasing speed at which the clubhead moves through the ball and is important for hitting shots of substantial distance and also short putts. In fact, if you find that you’re missing too many short putts, the cause may be failure to accelerate the putterhead. Here’s a drill that will help. On the practice putting green, find a hole that will permit you to set up for a flat and straight putt. Place a sand wedge perpendicular to the line of the intended putt so that the face is down and the thinner part of the shaft is on the line of the putt. The shaft should lie just at the edge of the cup. From a distance of three feet, putt to the hole with sufficient speed so that the ball will hit the shaft, pop into the air and fall in the hole. If you decelerate the putterhead through the stroke, you’ll generate insufficient speed for the ball to overcome the shaft in front of the hole. However, smooth acceleration of the putter will produce enough speed to hole the putt over the shaft. If you’re feeling extra adventurous, try this technique on a short breaking putt. Just remember to set the shaft perpendicular to the break in order to ensure the ball pops straight into the cup. After a few practice sessions, you can take this drill to the course by visualizing the wedge’s shaft in front of the hole. Visualizing will not only foster proper acceleration, but also will have you focused on the process of making a putt rather than worrying about the outcome. The key to accelerating and staying on line when making short putts is to keep your hands ahead of the ball, thus preventing excessive wrist motion on the forwardswing that can send the ball rolling offline. One technique I’ve employed to help me stay on track is the left-hand low grip. By positioning my left hand low, I’m able to prevent my hands from releasing too much. This helps me to keep the putterface facing the target, even after contact with the ball. Also, note how I hold the finish. That’s a sure sign I’ve accelerated and the ball is on the right line.

Course News "Summer Time is Calling”
Matthew Robinson - Superintendent
I would like to thank you for your patience throughout the aeration process. Everything including the weather went extremely well for us, and the greens responded and healed even better than I could have hoped for. Now that the temperatures are creeping up the scale the greens are performing as good or better than they ever have under heat stress conditions. We have successfully applied fertilizer wall to wall over the entire golf course. The bermuda should start to begin filling in and growing to a consistent playing height once our night time temperatures stop dipping quite as low for it to really to take off. This was an unusually wet winter and we are experiencing abnormally high amount of weed pressure. We are spraying as fast as we can as conditions allow, and we thank you for your patience. We have begun the process of sodding tees. Sod is in short supply this year due to the winter and the many golf courses needing repair. We hope to have the project wrapped up within the next week. The up coming summer looks to be great. Please come out and enjoy the playing conditions at Salem Glen.
