TORONTO’S PREMIER URBAN STUDENT LIVING!
A NOTE FROM NICK
Summer Break is Here! Congratulations on successfully making it through final exams! The month of April can be a stressful one, but your hard work and late nights have finally paid off, summer break has arrived! Toronto is an exciting place to live during the summer months, so get out and explore. Baseball fans can check out the Blue Jays or if soccer is more your style, the Toronto FC play at BMO Field. Head on over to Toronto Island and hit the beach to catch some rays. The city is littered with ice cream options to beat the heat, so stop by my recent favourite Bang Bang Ice Cream for an unreal ice cream sammie! In the summer, Toronto is the home of festivals. Whether it’s food, music, or art there are weekly events happening all around you. Take some time to research and plan a fun outing with friends or check out local events and make some new ones. Speaking of events, the Res Life team is working hard to plan some great events throughout the summer here in the building. Keep an eye out for our posters and social media posts so you can keep involved in the CampusOne community. Suns Out, Funs Out!

Best Asian Garlic Pa l e o W h o l e 3 0 Noodles Best whole30 asian garlic noodles you will ever have! These spicy paleo noodles can be served hot or cold- my favorite way is chilled. The flavor is unreal and made me eat two bowls. Course Main Dish | Servings 4 servings | Prep Time 10 minutes Ingredients
Noodles
1 large cooked spaghetti squash see notes on how to cook 1/2 medium zucchini julienne cut 1/2 large carrot julienne cut 1 small red bell pepper minced 1/2 cup fresh cilantro diced 1/4 cup roasted cashews or peanuts- chopped
Sauce
2/3 cup coconut aminos 1/4 cup full fat coconut milk 2 tablespoons fresh grated ginger or powder 2 tablespoons red curry paste 2 tablespoons fish sauce 6 medium/large garlic cloves smaller cloves for less spicy 6 large medjool dates pitted Instructions Puree ingredients for sauce in a blender. In a large bowl incorporate ingredients for noodles, pour sauce in, and mix together. Serve recipe hot or cold. Personally, I like it best served as is- chilled. If you want to heat the noodles, just mix everything together in a skillet and heat until warm.

Recipe Notes
How to bake spaghetti squash: cut spaghetti squash in half lengthwise, use a large spoon to scrape the seeds from the center, lay face up on a baking tray, and brush lightly with olive oil. Bake on 450F for 25 minutes (cook longer for softer noodles). Source: https://paleoglutenfree.com/recipes/best-asian-garlic-paleo-whole30-noodles/amp/
