Once again, the last 12 months have been a

We all hope that this is the year when things get back to normal where Christmas celebrations are concerned. Hopefully we’ll value the time spent with family and friends even more after the enforced solitude of recent years. We know that there will be families sitting around the festive table that will be missing big characters due to the pandemic. We hope they’ll be able to remember those that have gone, with laughs and stories of Christmas past, rather than sadness. I’m sure we’d all like to be remembered that way, with smiles, not tears.

Having been in business at the farm over 40 years, people come and go. After Alan, our legendary butcher retired last year, this year we’ve again lost some big personalities, who made notable contributions. Tim in the farm shop kitchen and Alex in the farm yard to name two particularly valued members of the Cannon Hall Farm team. They’ve moved on to new career challenges and we wish them well in their new roles. They leave big holes to fill but time has taught us that the story of Cannon Hall Farm will always move on to the next chapter. For us that has meant another Sunday Times best selling book, we’ve been lucky enough to pick up more awards, and our On the Farm, Channel 5 TV programmes have spread word about the farm countrywide.

There have been lots of high points in the past 12 months. However, what gives us the greatest satisfaction is getting back to the day to day business of welcoming back customers. It’s lovely to see the smiling faces of children in the playgrounds once again, and grown ups putting the world to rights when they meet their friends here.

Thank you for being a part of our Cannon Hall Farm family, for choosing to make your precious family memories with us. We hope to see you here for many years to come and we wish you and yours the very best at this festive time.

Your one hour tour will be like a real live Facebook live broadcast - you’ll go around our barns and into the areas normally not accessible to the public.

Our goat herd is renowned for being full of character - from Millie the orphaned goat, to Florence Houdini the escape artist and the legendary Stanley who shot to fame after being born live on Springtime on the Farm.

Your one hour session will include an introduction to our goat herd, where you will learn more about the speci c breeds and the speci c characters of our goats. Includes farm admission.

Spend a full day on our family farm and go behind the scenes in our state of the art Roundhouse lambing shed.

Help tend our ock by bottle feeding this year’s ‘vulnerables’ - those lambs who need a little extra special care and the orphan lambs and goats. The overall experience will last for one hour.

Spend a full day on our family farm and go behind the scenes in our Reptile House. Conquer your fears, get up close and personal with a vast array of snakes, lizards, insects and bugs.

These are great as part of a hot buffet at a party or as an accompaniment to a meal. However you choose to have them they’re delicious. They can be made ahead and even frozen so you can celebrate your Christmas or New Year party with a minimum of fuss.

It’s amazing how something simple as the humble potato can become a rich and indulgent treat with the addition of double cream, cheese and butter.

Why not add diced up cold turkey to the mix to give these a more Christmassy feel?

Ingredients

• 4 large baking potatoes

• 2 tablespoons oil

• 2 tablespoons double cream

• 6 oz grated mature cheddar cheese

• 4 slices smoked streaky bacon

• 4 spring onions finely sliced

• Large knob butter

• Salt and pepper

• Sour cream

• Bunch of chives, finely chopped

Method:

Pre heat the oven to 200c. Wash the potatoes and puncture the skin several times with a fork. Rub with the oil and place the potatoes on a baking tray and cook for one hour. Allow them to cool somewhat then cut them in two and scrape out the inside of the potatoes into a bowl. Line up the empty skins on a baking tray. Dice the smoked bacon, fry until crispy and add to the bowl. Chop up the spring onions finely and add these along with the cheese, butter and cream. Season with salt and pepper to taste. Mix in until the butter has melted and the cream has incorporated into the mix but fold in the ingredients so the mixture doesn’t become too smooth. Spoon the contents of the bowl back into the empty skins and bake for 30 minutes. Serve topped with a dollop of sour cream and a sprinkling of chives. I guarantee they’ll be delicious!

It’s an incredibly adaptable recipe. Why not use creme fraiche, or cream cheese instead of cream, try them with blue cheese if you like it. Dice up vegetables such as onion, courgette or pepper and fry (why not use some of the bacon fat for extra flavour) before adding to the mix. Try other cheeses, particularly those that melt well like Gruyère or Emmental. Add Parmesan and pesto to give them an Italian feel. This really is a recipe you can experiment with forever.
