The edible garden is a popular idea that has taken hold. Fresh herbs, fruits and vegetables — whether picked from our very own garden patch or picked up at the weekly farmers’ market — flavour our local cuisine. It’s simply become a West Coast way of life. This hit home for me when we photographed Steph Song for our cover. The Vancouverbased actress graciously agreed to model some of her favourite local designer labels for our story, Shooting Star. As our hair and makeup team prepped the fresh-faced beauty for our photo shoot, we chatted about a project she had auditioned for and was hoping to land — a lead role in a made-forTV miniseries that would take her to Toronto for several weeks of shooting this summer. The miniseries is based on a Giller Prize-winning novel and the role would be her most challenging to date. “I’m really bummed,” the actress told me. “I just planted my tomatoes.”

or years, British Columbia’s tourism cheerleaders have championed the province as a great close-to-home travel destination with everything to offer, and that message resonates this year more than most.
A sluggish economy will do that. The socalled Swine Flu has played into it, too. “People are telling us they still want to get out and travel,” relates Cameron Mein, a Langley-based tour operator, “but they’re wanting to spend a little less and stay closer to home, maybe with less commitment in terms of time away.” Such market research is one reason why Mein’s Destination Tours firm has increased the number of its Summer Getaway packages to seven, including the Naramata and Kelowna wine regions, Whistler, Victoria, Banff, Sun Peaks mountain near Kamloops and the west coast of Vancouver Island. Two-night stays at places like Ucluelet’s amazing Black Rock Oceanfront Resort (see story on following pages) and Westbank’s gorgeous lakefront inn The Cove (a package-upgrade starting point for the Kelowna wine trip) are proving popular. People tend to ignore their own backyard, but that may be starting to change here.”

For one, Mary Eickhoff has seen more of B.C. than most people half her age – and she’s done it all on two wheels. The retired South Surreyite enjoys the freedom of multi-day rides with fellow members of Cross-Canada Cycle Tour Society, a recreational club of mainly retired people. Eickhoff is particularly fond of cycling the back roads and small towns of Vancouver Island, from Victoria north to places like Comox, Courtenay, Chemanius and, via ferry and water taxi, Powell River, Lund>

Whatever the destination in B.C., Eickhoff is excited to cycle there. “I’m just not as keen to fly places,” she admits. But economic uncertainty is still in the short term forecast, so what to do when the weather heats up but the economy stays cool? Shop casual and shop local!

In 2006 you were voted FHM Asia magazine’s Sexiest Woman in the World. Are you comfortable with that title? That was a long time ago as far as a sexy body goes [laughing]. To be really honest, at first I thought it was an objective award and it made me feel a little silly but after a while I owned it and loved it. My boyfriend would look at me wearing his boxers and wife beater T-shirt with soup stains on the front of it — not having changed out of my clothes for a couple of days because, you know, you occasionally have those kinds of days — and I would just go, “Hey! Number 1, babe. Number 1!”
What does sexy mean to you? I don’t want to sound like all those new age women’s magazines but sexy really is about attitude. When I feel strong having just worked out at the gym, or when I have learned a new martial arts move or mastered a jump horseback riding or something I haven’t done before, I feel really good about myself and I think that kind of energy just radiates outward. It really does come from within.

what was on TV at the time was a role I had done for a series called Six Weeks where I played a woman who was eight months pregnant. She was always nagging and crying and not really sexy at all. So, many thanks to all those who voted who looked past all that. From a very young age you were going places. Yeah, my dad was a geneticist and we moved around a lot. Before I turned 15, I was in 15 different schools. You grew up in Saskatchewan and at the age of 12 moved to Brisbane, Australia. From there, you moved to Los Angeles, back to Australia, then Singapore and now Vancouver. Is this home? Vancouver has been home ever since I stepped off the plane in April 2005. I had just finished an absolutely brutal pilot season in L.A. and came up here to visit my Canadian agents who, until that time, said, “We really don’t know how to help you because you really don’t live here.” When I stepped off the plane, breathed in the air and looked around, went for my first hike in Deep Cove and my first time kayaking, it felt like home and I didn’t want to leave. Where do you like to hang out in Vancouver? McLeod’s bookstore is a very frequent haunt of mine. Finch’s for lunch. Café Medina is pretty awesome. You left L.A. Why? I wanted to have a good quality of life. I could see how I could thrive in L.A. but I don’t do well there. I need air around me and I need to see trees. And I need to feel like I belonged. In L.A. you were just a number, not even a person. If you can find family in this industry it’s gold; you can’t find that in L.A.

After three years in Tinseltown, you moved back to Australia where you anchored the National Geographic program EarthPulse, before relocating to Singapore. Why move? I wanted to experience as many different roles as possible and there just weren’t sufficient roles for Asians elsewhere at the time. The wonderful thing about working in Singapore for the four years I was there was that I was assigned to a TV station. They still work in that really old tradition where the network owns the actor. You get a salary and you get a whole bunch of hours that you have to fill on television. I think with my contract I had to do 30 hours a year. So they would come to me and ask me to do a sitcom, comedy, television movie, guest spots on other shows. Because of it, I got exposed to a wide audience but also I got exposure to the different kinds of things I could play. My first role I played a neurosurgeon. I was, like, 22 years old… not sure people were buying it.

You’re proving yourself constantly. That’s what an audition is; it is a job interview. And it happens so many times. I know an actress who has gone to 300 and not booked a damn thing. But she still continues.
You starred in Douglas Coupland’s debut screenplay Everything’s Gone Green in 2006 and then his TV series jPod a year or so later. What was he like to work for? He’s fun! He never came to the set that much. I remember on Everything’s Gone Green I found him behind the monitor giggling a bit. He said to the director, Paul Fox, that being on the set was too much like being inside his own brain so he didn’t want to come to the set anymore after that. I rarely saw him, either, on the set of jPod. Tell me about Dim Sum Funeral, which made the film festival circuit before its summer release. What has been the reaction to the film? So far it’s been great. It’s about four AsianAmerican siblings who come together to bury their mother in a traditional Chinese funeral. The four siblings absolutely hate one another. They have been brought up to be super competitive amongst themselves for the affections of their parents. And over
the course of the week, because Chinese funerals take a week, they grow to love each other again. I play the youngest daughter Mei Mei who also happens to be a lesbian. My partner is played by Bai Ling. Were there any steamy sex scenes? No. Well … there’s a hot tub scene. That was steamy. You are also in a thriller, The Thaw, starring Val Kilmer, due out this year. When was that made? It was done this time last year. We filmed part of it up north in Williams Lake and then the other half down here (in Vancouver). It’s about the discovery of a woolly mammoth completely intact, frozen, that has started thawing out. Val Kilmer plays a scientist who discovers the woolly mammoth and also discovers that the prehistoric bug that killed the woolly mammoth is also thawing out. >

>The bug is not dead and can infect other things. Enter five college students. I play one of the students. And the fun begins. As an actress working on independent films you have had to work that much harder onscreen and off-screen to get your film recognized and watched. Tell me about that. I do a lot of film festivals. It’s fun. It’s weird. Film festivals are weird. It’s really kind of a carnival atmosphere. You spend most of your time in absolute silence, peace and quiet and then there’s this frenzy for a week. It’s so bizarre. Do you prefer working in television or film? I like doing both. There is something really nice about inhabiting a character for three months and kissing it goodbye and never seeing it again. For TV, doing a regular series role, you are with that character and that team for five months and for want of a better word they become your family. Do you have aspirations of being behind the camera? Sadly, yes. I am an actor — another statistic, I know — who wants to be behind the camera. I want to produce. My boyfriend [Aussie-born commercial director Tony Redmond] and I started a creative content group called Island Films.
What I love about going to the movies is the anticipation of being told a good story. Waiting for the curtain to go up, trailers to finish and story to begin. Sometimes, as you know, that’s not often the case. Tony and I started brainstorming and have come up with a lot of stories and a lot of good scripts we’re shopping around. One of them is about Asian immigration to Australia during the gold rush. It’s epic. It’s historical. Cross-cultural.
Don’t do anything that does not feel like progress.
In 2003, you had a starring role in the Singapore television sitcom Achar! which was the breakout comedy of the year. Do you see yourself doing more comedy? Comedy is tough. Comedy is really hard to pull off. It’s about timing. I just had the benefit of working with really good people. Now, is it true you learned Cambodian from scratch for CBC-TV’s 2007 miniseries Dragon Boys? What was it like working on that series? Yes. I learned as much as I could. I don’t know if I pulled it off very well. I can still order food but that’s about it now. I played a Cambodian village girl who gets sold into prostitution in Vancouver.
Playback magazine named you among its 10 To Watch for 2006. To what do you attribute the honour? Wasn’t that nice? I’d say masterful direction by Paul Fox in Everything’s Gone Green and Jerry Ciccoritti in Dragon Boys. Maybe they just needed to put an Asian face in amongst the sea of white people.
How comfortable are you being that Asian face? When I go for auditions, I’ll read the breakdown for the character and I’ll realize she’s midwestern, Texan — even described as blond and blue-eyed. Yet they still want me to go and audition and I will go. And sure enough the room is filled>

Was there a role or script you really fought for? Dim Sum Funeral. That the characters were Asian-American was completely incidental — the way it was written it could have been any white suburban family. There were issues I can relate to, like family issues; all the siblings hated each other — not saying that I hate my two sisters, but you do go through that phase. I remember my parents urging us to be completely competitive with each other. I found I could relate to that.

Do you have a mentor or role model? I have always loved the work of Sandra Oh. She’s stellar. She chooses roles that are so open, so brazen, so vulnerable, and so beautiful. She has a quiet grace about her onscreen.

You have a double degree in nursing and journalism. Why the switch to acting? What did your parents say when you switched? My parents couldn’t say anything. That’s why I got the double degree. If I wanted to pursue acting without something to fall back on my parents would have lost their minds. They would say, “You’re going be some bum on the couch.” I went ahead and got a tertiary education so I would not feel guilty about pursuing acting.

What would you say to a girl in Vancouver who wants to be an actress? What kind of advice would you offer her? An Asian-Canadian actress? Interesting. I just said “actress” but you automatically assumed Asian-Canadian actress? Yeah, I did. Didn’t I? I think we trundle a different road. There are things we read for that we will never get. And I say that having said earlier it’s really about the actress and what you take to the
room but sometimes it really isn’t. What would I say? I say learn languages. Learn Mandarin. Learn Cantonese. And don’t do anything that does not feel like progress. It seems you’re at a pivotal point in your career. Do you feel as though you’re on the verge of stardom? I felt like that for the last 10 years [laughing]. You know what? I think an actor friend of mine who is successful said it best. He said to me, “I became an overnight success but it took me 15 years.” What’s next for you? There is a script out of Toronto that I am very interested in that I have not had the go-ahead on yet. I would love to work on it. It’s an eight-part miniseries. I would love to tell you more but I can’t. I am very superstitious that way. Are there babies in your future? Yes, yes, yes. How many yes’s is that? Tony and I have a dog [pulling out a photo of her ‘child’ Jake, an Australian shepherd] but the babies are coming. And your biggest success to date? I don’t think there is one. I think there has been a succession marked by little steps and little chapters. Being given the opportunity to work is such an extravagance.l

Grill thrill
It isn’t just the warmer weather that has people eating lighter fare, says Mina Petrovich of A Moveable Feast Catering in North Vancouver. “A lot of people are turning to fresh, local produce and staying away from the heavier items baked in creamy sauces,” says the chef, who has noticed a move towards healthier eating. “Dry ribs are huge, and salmon grilled with extra virgin olive oil.” After nine years of owning the catering company, trends are easy to spot and “in general people are more concerned with what they are eating.” — Rosemary Keevil-Fairburn
Prawn and Fennel Salad INGREDIENTS
METHOD
2 lb. tailed and peeled raw prawns 2 large fennel bulbs, thinly sliced 1 large clove garlic, crushed 1 tsp fennel seeds, toasted ½ tsp dried chili flakes 1 tsp Dijon mustard Zest and juice of 2 lemons Zest and juice of 1 large orange 1 small jar of capers, drained 1 cup extra virgin olive oil 1 large red onion, thinly sliced 4 ribs of celery, cut thinly on a bias 1 medium red pepper, thinly sliced 1 bunch flat leaf Italian parsley, chopped 1 bunch fresh basil leaves, chopped Salt and pepper to taste
Toast fennel briefly in a pan until you can smell the aroma; remove onto a plate immediately to avoid burning. Toss the prawns with a splash of olive oil, salt and pepper, and grill them on a high-heat barbecue until pink, only a minute or two on each side. Set aside to cool.

To make the vinaigrette: in a large bowl combine the crushed garlic, toasted fennel seeds, chili flakes, Dijon mustard, zest and juice of lemons and orange, and the capers. Slowly whisk in one cup of extra virgin olive oil. Add salt and pepper to taste. Add sliced vegetables, cooled prawns and chopped herbs to the vinaigrette. Place salad in the fridge to allow the flavours to come together. The flavours are so fresh and intense that it needs minimal time to marinate. Makes six to eight servings.
The flavour combinations in this salad allow for the addition of any favourite fresh herb. Fresh dill and mint would be lovely as substitutions or additions to the parsley and basil.
