Entrepreneur Tony Liu overcomes adversity BY PATRICIA GANNON fete@theadvocate.com

It’s ironic that the Royal Panda’s restaurant clientele selects from over a hundred dishes while pandas limit themselves to only one. Their coveted bamboo serves as a reminder in Asian culture to be rooted yet flexible, to endure, survive and conquer adversity. Even under the most forceful wind, bamboo will bend without breaking. Rather like owner and restaurateur Tony Liu. Born in Fujian, China, Liu came to America to study English, the first step on a long road to business entrepreneur. The fact that he knew nothing at all about running a restaurant was no deterrent; he started at the bottom and worked his way up, spending a decade in Baton Rouge food businesses as a dishwasher, runner, waiter, and eventually manager. “In America, there are opportunities,” said Liu. “What you work hard for, you get. As long as you set your mind, you can get it.” With a wife, mother, sister, and brother following his lead, Liu moved to Lafayette in 1991, and a year later opened Hong Kong Inn at a strip mall location along West Pinhook Road. His brother adapted the traditional Chinese cuisine he already knew to suit Western palates, while the family worked a seven-days-aweek dual lunch and dinner shift. Then came the events of 9/11, when the aftermath of the World Trade Center collapse reverberated emotionally across the U.S. An American citizen for 20 years, Liu seemed an unlikely target for a secondary boycott, but found himself the victim of one as rumors of anti-American sentiment spread via the Internet. Liu faced the possibility of permanent closure until former Times Editor Judy Johnson published an editorial denouncing the boycott as un-American and unjust. “For four weeks, the restaurant was empty,” recalled Liu. “But I still had many dreams. You don’t give up.” Those dreams included purchasing land adjacent to Lafayette’s latest WalMart, as well as the new location of the 6,200 sq. ft. Royal Panda restaurant. Designed by the late Pierce Meleton of Lafayette’ MBSB Group, the building took a year to plan and another year to con-

struct. Despite a four-month weather delay, the project was completed in Spring 2005, seats 200 guests and houses a sushi bar, cocktail lounge, two hot buffet lines, and a cold dish station. Houston restaurant designer James Geng is responsible for the luxurious interior details, including the 18 brass-trimmed acrylic panels adorning the ceiling above the buffet lines, the frosted glass dining room partitions, gold-fringed brocade draperies and crystal chandelier. Since the restaurant’s opening in early April 2005, a steady stream of customers have found their way past the Royal Panda’s rooftop dragons and twin guardians, two carved granite lions from China weighing 1,000 lbs. each. He allows as how now it’s harder, not like it used

to be during the oil boom. He operates with a reduced staff and does much of the work himself. “There were a lot of uniformed oilfield people, it used to be better.” “Now I fix the Mai Tai’s and the plumbing,” he said. His secret for staying the course is a combination of hard work and iron will. “You don’t rule anything out,” said Liu. “Everything is possible. Staying that long in business is tough, you have worried times. You do your best to compete with other restaurants, some come for a year, two years, and then leave. You ride high, sometimes you ride low. When the oilfield does well, you do well.” “When it doesn’t, you have something put away for a rainy day.”

Tony Liu says the secret ingredient for the longevity of his restaurant is ‘you have to know your concept, what people like.’

Save now for a down payment

Small steps can pave the way for homeowner ship When it comes to affording a home, it’s essential to tackle one thing well ahead of time: the down payment. Long before you start searching real estate listings in earnest, take concrete steps to put aside funds. That way, you’ll be ready when the time comes to write the down payment check for your new home. First, set a goal. Decide on an amount of money you intend to save and when you’ll need to have it ready. Figure out what that means per week, month or year. Even a modest down payment can be more money than many first-time buyers have ever put together in one place before. The median down payment for first-time buyers is around 7 percent. On a $200,000 house price, that comes to $14,000, or saving $1,167 each month for a year — so, for most people, accumulating that down payment would be a multi-year project. Then track your progress. Once you set your goal and time frame, post it on a chart where you track your progress. Check regularly to see how you’re doing. Pat yourself on the back for progress, but also note how much you have left and prod yourself to keep it up — and maybe dig deeper. In theory, saving for a down payment has two simple parts. Identify money you can spare and stash it where it’ll stay put. But how in reality, how to do that? Consider these suggestions. • Put your savings where it’s not in the mix of your regular spending money. A separate savings account

specifically for the down payment can earn a little interest and keep the principal safe and government guaranteed. • Cut back on frequent small luxuries like coffee-shop drinks. Small steps like this can be a good starting point for an overall strategy to build your down payment capital. • Make sure that savings go toward the down payment and don’t trickle out unnoticed in other incidental expenses or impulse purchases. For example, if you cut a daily $5 coffee expense, then every Sunday transfer $35 to your separate down payment savings account. • Analyze spending. Consider setting a budget for clothing or eating out. Check your credit card or bank withdrawals to get an idea how much you spend eating out each month. Decide how much you’ll cut back and bank the savings. • Set up an automatic payday transfer. Choose an amount you can afford and have your bank automatically send that to down payment savings as soon as your paycheck arrives. • Use a cash rewards credit card. Wait for the rewards to reach maximum dollars per point before you cash in and put the money in your down payment account. Beware of the temptation to justify spending more with the card because of the rewards. • Bank any windfalls — tax refunds, bonuses on the job, or cash gifts. If you get a significant cash gift, you’re likely to need a letter for your mort-

Hundreds of Lafayette youth prepare for Lemonade Day Staff report Young entrepreneurs across Lafayette are set to take part in the ninth annual Lemonade Day Louisiana on Saturday, May 4. This event created in 2010, gives children across Louisiana the opportunity to own and operate lemonade stands while learning critical skills that translate to entrepreneurial success. Participants are given lessons on entrepreneurship, budgeting, and advertising while creating their very own lemonade stand. Lafayette Mayor-President Joel Robideaux has proclaimed May 4th Lemonade Day and urges the entire Lafayette community to support lemonade stands that will be located throughout the Greater Lafayette area on May 4. Lemonade Day is in over 72 licensed territories domestically and three countries. Lemonade Day Louisiana has empowered over 200,000 kids and volunteers to become the business leaders of tomorrow. Enjoy safe backyard barbecues this summer

Backyard barbecues are synonymous with warm weather. And why wouldn’t they be? Grilling over an open flame when the weather is warm embodies the relaxing spirit of spring and summer, prompting many people to leave their oven ranges behind in favor of charcoal and gas grills. As relaxing as backyard barbecues can be, they can quickly take a turn for the worse if cooks don’t emphasize safety when grilling out. According to the National Fire Protection Association, an average of 9,600 home fires are started by grills each year. In fact, the Consumer Product Safety Commission notes that, between 2012 and 2016, an average of 16,600 patients went to the emergency room each year because of injuries involving grills. Such statistics only highlight the need to balance the fun of grilling with safety when hosting a backyard barbecue or cooking for the family. Here are some steps to take for safe backyard barbecuing.

RECOGNIZE THAT GAS GRILLS POSE A THREAT It’s easy to assume gas grills don’t pose as great a threat as charcoal grills, which produce soaring flames once the charcoal is lit. But the NFPA notes that gas grills are involved in 7,900 home fires per year. No grill is completely safe, and cooks must emphasize safety whether they’re using gas grills, charcoal grills or smokers. ONLY USE GRILLS OUTDOORS Grills should never be used indoors. Even if rain unexpectedly arrives during a backyard barbecue, keep the grill outside. If unexpected rain is accompanied by lightning and thunder, extinguish the fire in the grill and go indoors. PLACE THE GRILL IN A SAFE LOCATION Grills should be placed well away from the home. Avoid locating grills near deck railings or beneath eaves and overhanging branches. Cut overgrown branches before lighting a grill fire if they are in close proximity to the grill.

KEEP YOUR GRILL CLEAN The buildup of grease and fat, both on the grill grate and in trays below the grill, increases the risk of fire. Clean the grill routinely. PROPERLY LIGHT THE GRILL Lighting gas and charcoal grills requires caution. Before lighting a gas grill, make sure the lid is open. If you must use starter fluid to light a charcoal grill, the NFPA advises using only charcoal starter fluid. Never add any fluids to the fire after it has been lit. DO NOT LEAVE A GRILL UNATTENDED Cooks should never leave a lit grill unattended. If you must leave the grill, only do so if another adult can watch the grill. Lit grills pose a threat to children and pets, and unattended grills can be blown over by gusts of wind or tipped by wild animals, such as squirrels. A home is a safe haven for its residents. No matter what’s going on at school or the office, many people know they can relax in comfort and safety when they arrive home at the end of a day. Safety at home is something that can be taken for granted until it’s too late. The National Fire Protection Association notes that each year more than 47,000 home fires in the United States are caused by electrical failure or malfunction. Overloaded electrical circuits are a frequent culprit in residential fires. Fortunately, overloaded circuits are preventable. According to the Electrical Safety Foundation International, the following are some potential indicators that circuits are overloaded. • Flickering, blinking or dimming lights • Frequently tripped circuit breakers or blown fuses • Warm or discolored wall plates • Cracking, sizzling or buzzing from receptacles • Burning odor coming from receptacles or wall switches
