I tillegg tipser speltbonde Heidi Hemstad om at du kan riste kornene i en tørr kjele i forkant. Det gir både bedre smak og bedre konsistens.

Rist kornet i en tørr kjele i 2–3 minutter. Det er viktig at varmen ikke er for høy og at kornet ikke blir brent. Det skal lukte deilig av korn. Hell i vann, deretter melk. Kok opp og skru ned varmen. La dette småkoke under stadig omrøring i cirka 25 minutter. Rør inn saltet til slutt.
