Our New Cookbook is Out!

The CFMC recently published a cookbook titled Fish and Seafood Recipes for Underutilized Species of Puerto Rico and the US Virgin Islands. This publication promotes consuming underutilized species and thus reducing user pressure on species that are already under management regulations. The book also fosters diversifying fish and seafood interests while contributing to fishery sustainability through our habits as consumers.

The book features a brief overview of the Caribbean US marine ecosystem, and presents valuable information about nutrition, as well as hygiene and proper management when preparing fish and seafood. Professional chefs, home cooks, fisherfolk, and US Caribbean cuisine enthusiasts contributed their recipes and experiences and made this book possible. This volume includes dozens of recipes that showcase a wide variety of species, preparations, and cooking methods.
