Holiday Menu Re-heating Instructions Carlino’s is proud to be a part of your holiday celebration. Our chefs have made each dish especially for you. We have crafted these special holiday meals to the point of perfection, so we ask you to follow our simple, easy to follow re-heating instructions to serve your guests with a delicious, home cooked meal from our kitchen to yours. Preheat your oven to the indicated temperature.

Remove food item from the refrigerator and allow soups, pasta and side dishes to sit for 30 minutes. Allow main course items to sit for 1 hour.

Due to the variance in home ovens, cooking times may differ. Be sure to check for preferred doneness. Starters

Boneless Turkey Breast (sliced) Preheat oven to 325°F. Cover the pan with foil. Heat for 25-30 minutes. Remove foil and continue to heat for an additional 10 minutes. To ensure proper handling, be sure to check internal temperature for a reading of 165°F. Old Fashioned Spiral Sliced Ham Remove plastic. Cover with foil. Bake in a preheated 325°F oven for 1 hour, or until a meat thermometer registers 140°F. Be careful not to heat beyond this point as this can result in dryness. Remove from oven, and allow to sit for 10 minutes before serving.

Roasted Filet of Beef Tenderloin is cooked rare. Take out of refrigeration for 30 minutes. If rare is desired, serve cold, slice thin (1/4”) with horseradish cream and heated au jus. If a greater doneness is desired, preheat oven to 450°F, remove aluminum lid and cover with foil. Heat for approximately 15-20 minutes for medium doneness. Roast Pork Loin, Braised Beef Brisket, Chicken Marsala, Chicken Piccata, Chicken Parmigiano, Chicken Cacciatore & Grilled Honey Balsamic Chicken Preheat oven to 350°F. Loosen lid. For half pans, heat for 25-30 minutes. For full pans, heat for approximately 45-50 minutes.

Veal Saltimbocca Rollatini, Veal Marsala & Chicken Parmigiano Preheat oven to 350°F. Loosen lid. For half pans heat for 30 minutes. For full pans, heat for approximately 40-45 minutes.

Beef Brasciole Preheat oven to 350°F. Loosen lid. For half pans, heat for 35-40 minutes. For full pans, heat for 45-50 minutes. Fish (unstuffed) Preheat oven to 350°F. Loosen lid. For half pans, heat for 15-20 minutes. For full pans, heat for 25-30 minutes.

Fish (stuffed) Preheat oven to 350°F. Loosen lid. For half pans, heat for 20-25 minutes. For full pans, heat for 30-35 minutes.

Homemade Pasta & Stuffed Pasta Dishes Preheat oven to 350°F. Loosen lid. For half pans, heat for 35-40 minutes. For full pans, heat for 45-50 minutes. Homemade Lasagna

Starches, Risotto and Vegetables

Risotto Preheat oven to 350°F. Loosen the aluminum lid, or top pan loosely with aluminum foil. For small pans, heat for 20-25 minutes, add one quarter cup water and stir periodically. For medium pans, heat for 30-35 minutes, add one half cup water and stir periodically. For large pans serving up to 20 guests, heat for 40-45 minutes, add one cup water and stir periodically. Oven Roasted Potatoes & Twice Baked Potatoes Preheat oven to 350°F. Remove lid. For small and medium pans, heat for 20-25 minutes. For large pans, heat for 35-40 minutes.

Parmigiano & Parsley Mashed Potatoes Preheat oven to 350°F. Remove lid. Cover with foil. For small and medium pans, heat for 30-35 minutes and stir periodically. For large pans, heat for 40-45 minutes and stir periodically. Add one half cup cream or low-fat milk if needed.

Potatoes Au Gratin Preheat oven to 350°F. Remove lid. Heat for 30-35 minutes. Optional: Place under low broiler at end of heating process for 2-3 minutes to brown the top layer. Side Vegetable Dishes & Sweet Noodle Kugel Preheat oven to 350°F. Loosen the lid. For small pans, heat for approximately 20-25 minutes. For large pans, heat for 30-35 minutes. Eggplant Rollatini & Eggplant Parmigiano Remove parchment paper from under the lid. Remove any stickers from the outside of pan. Place lid back on loosely. Preheat oven to 350°F. Bake for approximately 40-45 minutes. Allow dish to sit for about 10 minutes before serving. Sausage, Peppers & Onions, Meatballs in Sauce & Grown Up Mac n’ Cheese Preheat oven to 350°F. Remove lid. For small and medium sizes, heat for 25-30 minutes. For large pans, heat for 35-40 minutes. Stir periodically. Chicken Tenders & Potato Latkes Heat for 20-25 minutes.

Preheat oven to 350°F. Remove lid.

Roast Pork in Gravy, House Porchetta and Roast Beef in Gravy Place gravy in a saucepan over medium heat and stir frequently. Once heated through (approximately 10-15 minutes), carefully place sliced meat into the hot gravy and serve. Fried Calamari and Fried Smelts For the crispiest fried fish, preheat oven to 350°F, spread out calamari and smelts in even layers on a baking sheet, and bake for approximately 10-15 minutes. Carlino’s Homemade Pastries Be sure to remove from refrigeration for at least 30 minutes to allow the full flavors of the handmade delicacies to develop.
