Editor’s Letter
T
he unexpected events of 2020 have presented a time to step back, slowdown, focus on what is important and give thanks for what we do have. Family, community and quality of life has become more important than ever. While sending our world, country and local community into crisis, the COVID-19 pandemic continues to unfold and it’s clear that the health and safety of our community is the most important concern. On a local level, our healthcare providers and hospitals are doing an outstanding job of preparing for and treating coronavirus patients. With the help and cooperation of the community, we hope we can dramatically reduce the spread of this illness and the associated loss of life. Once we look beyond the challenges to protect the members of our community, we ardently look to infuse momentum toward the recovery of our businesses, schools, restaurants and shops. In this regard, we find a number of positive reasons for hope. In this edition of 1913 magazine, we focus on three reasons for hope and encouragement. First, the lifestyle available in our community continues to be extraordinary in so many ways. We are beyond fortunate and regarded as an oasis in California which features outdoor activities in stunning settings from our spectacular beaches and pristine hiking trails to our world-class tennis facilities and award-winning golf courses. This issue, we feature one of our agents, Lisa Talley Dean, who is a competitive tennis player building lifelong friendships through her active involvement at the thriving tennis clubs across the Peninsula. Lisa shares some of the reasons her family is so committed to living here and why she loves this special community. Another reason for hope is the incredible effort and results we are experiencing in our community from our shop and restaurant owners. Just walk down Ocean Avenue and you will experience innovation, creativity, passion and life. Having to adapt to a never-ending and fluctuating list of regulations while dealing with a downturn in

volume and revenues is very difficult for any business. Our restaurants have been extraordinary in their ability to continue to serve the community and provide us a muchneeded respite from quarantine life. The move to outdoor dining has been a welcome and enjoyable success. In fact, many of our incredible coastal neighborhoods inspire us with outdoor dining and innovative hospitality options including Big Sur, Pacific Grove, Monterey, Carmel, Pebble Beach and more. In this edition, we highlight a few of our amazing restaurants who like many others, are doing an outstanding job of helping us dine in a safe environment while still enjoying the incredible food and hospitality we so enjoy. Lastly, the Monterey Peninsula is experiencing a vibrant real estate boom. As you will see in the pages of this magazine, there are extraordinary properties available for sale across the Peninsula. We have implemented many safety protocols to ensure that homes are marketed and shown as responsibly as possible, and we are lucky to have a healthy inventory of homes. The Peninsula reached alltime volume highs in the number of transactions and in total real estate sales volume over the last several weeks of July. The increased demand for real estate in our community has brought with it a new surge of families looking to enjoy the lifestyle highlighted above. We believe that this liveliness will help the community overall, as our shops and restaurants will have increased support, our schools will have stronger enrollment and the community in general will be more vibrant. We recognize the road ahead for our community and others throughout the world is going to remain challenging. LET THEM EAT Local Restaurants Pivot During a Pandemic By Brett Wilbur
W
hen COVID-19 shut down dinein restaurants last Spring across the County, suddenly one of the most relaxing and intimate forms of spending time with friends and loved ones vanished. Undeterred, many local restaurateurs pivoted, generously sharing fridges full of food with their community and employees while revamping their entire business models in order to safely serve meals. Indoor dining briefly reopened, and then shut down again, forcing restaurants to shift once more. Luckily for us, fresh local ingredients, seasonal menus, creative dishes and delicious drinks remain available through delivery, takeout and outdoor dining solutions. A bright spot in uncertain times, eating a beautiful meal cooked by one of our local chefs has perhaps never been so appreciated.

CULTURA comida y bebida Carmel-by-the-Sea “CULTURA closed on March 16th, 2020,” says General Manager Sarah Kabat-Marcy. “Partners immediately went into creative survival mode figuring out how to navigate through the current state. We developed a unique home delivery subscription, called CULTURA Cares Box Program, in which guests could sign up for a four-week subscription of a weekly contact-free home delivery service. The menu for the Cares Box changes weekly and includes snacks, appetizers, entrées, desserts and beverages. We also give our Cares Box members a half dozen eggs, local produce, local food artisan sample gifts, and in the first few months, two rolls of toilet paper per box.” Kabat-Marcy took wine bottles, donated by Joyce Wine Co. in Carmel Valley, and batched signature cocktails for delivery.
To-go offerings include tacos, burritos, salads, appetizers, snacks, and take-and-bake items, like chicken enchiladas, while outdoor dining is now carefully orchestrated to ensure the safety of guests. CULT Taco in Monterey, the “little sister” to CULTURA, also recently reopened for takeout and outside dining. “All our team members take immense pride and care for the integrity of the work they participate in,” Kabat-Marcy shares. “We are also blessed to have a spacious outdoor patio seating area at CULTURA.” Continued on page 18

Seeing these outdoor seating areas as you drive through Carmel really does make it feel like the city is alive again.”

Seventh & Dolores Carmel-by-the-Sea In the early days of the pandemic, Chef Todd Fisher initially was focused on purging the inventory of premium cuts of meat residing in the 7D refrigerators. “We turned 7D into a butcher shop,” he says. “The demand was awesome, and we are still operating our Butcher Box (uncooked steaks with some sides included) out of the restaurant. Niman Ranch is a great product and it’s not always easy to get your hands on it.”
Some very popular additions to the restaurant now include Chef Bryan Copp barbecuing on a Big Green Egg grill five days a week, as well as dining in an elegant tent in the former parking area. There’s also a new lounge-type outdoor space with a Frescura trailer that operates as a pop-up bar. “Our mixologist Carlos Colimodio is offering drinks like frozen margaritas and our signature cocktails,” Fisher says. “It’s in a space between the patio and our tent area, with a casual vibe, not as formal as the rest of 7D.” Manager Jaime Morales says that rib chops with Bordelaise sauce is one of his favorite dishes, while Fisher says for to-go orders, the fried chicken sandwich “flies out the door, no pun intended.” Continued on page 28

The Forge Carmel-by-the-Sea At the Forge, owners Greg and Carolyne Profeta quickly got over their shock at being temporarily closed down by the pandemic and turned into productive mode. “We decided to shift our fears into determination,” says Greg. “What we knew was we had to stay positive and try everything, and if it didn’t work, try something else.” The Profetas reached out to several nonprofit agencies and cooperatives and donated close to $30,000 of food inventory. Then the menus were updated to work with to-go orders and the restaurant was given a complete refresh while staffers were trained in safety protocols.
“We have outdoor seating for approximately 100 guests at a time, all spaced 6 feet apart with lots of heaters and fireplaces,” Greg says. “Beautiful music, ultra-fresh ingredients and local fauna highlight the experience.” Popular dishes include the Reuben egg rolls, Asian style meatloaf, sashimi grade, pistachio-crusted Ahi tuna, a breaded chicken sandwich with Sriracha mayo, a Niman Ranch burger and the French onion soup. “We have had dozens and dozens of guests tell us they came to the Forge as their first ‘meal out’ since this began because they had read how careful we were, they enjoyed the local farm-totable ingredients and the outdoor setting was ideal,” Greg says. “That means so much to us.” Continued on page 34

Aubergine Carmel-by-the-Sea Aubergine owner David Fink, who runs multiple luxury restaurants and hotels, says what is important about this time is to be able to change and adapt quickly. “We’ve been able to do that at Aubergine,” he says. “We basically moved the dining room outside into our gorgeous courtyard. We’ve created as much of a normal experience as is possible for the guests. They are eating on a plate with a cloth napkin and with nice wine glasses. We’ve tried the same at (sister restaurant) Cantinetta Luca and created a really nice outdoor environment.” With Aubergine already so popular, the fewer available tables have created a lot more pressure for a reservation. “It’s pretty much full every night,” says Fink. “People really want to support us and are ordering nice wines.” Award-winning Aubergine is reservation only and the signature eight-course seasonal menus have remained. Guests answer questions prior to their dinner so that the Michelin Star kitchen can meet dietary needs and preferences. “We always customize the menu to every diner,” says Fink. Guests can also pre-order a weekend to-go meal. “The takeaway menu at Aubergine has been extremely successful with Executive Chef Justin Cogley at the helm,” Fink says. Aubergine’s menu changes daily and is based on what is fresh and local; popular dishes at Luca include wood-fired pizzas and housemade pastas. ■

Q: Why did you decide to relocate to the Monterey Peninsula and switch careers 15 years ago? A: We, like many people, came here for the quality of life. We were both putting in long hours in San Francisco, working at a frenetic pace. At the time, we had a 6-monthold son and 2-year-old daughter and saw that this was a wonderful place to raise a family. There are fabulous public and private schools, there’s so much natural beauty, and a genuinely nice sense of community. We had not appreciated what we had been missing out on in terms of community until we arrived here. We assimilated fairly quickly and met many wonderful people who remain friends to this day.
Q: How did you discover tennis? A: I never played in high school or college, other than a single P.E. class at UC Santa Barbara, but always thought that I would enjoy it and would take it up someday. We joined Carmel Valley Ranch about 10 years ago because we wanted our children to have access to a pool and a sunny place to visit in the summer. There was a fantastic pro who was running the tennis program and he was very determined to provide more competitive opportunities for ladies at the Ranch. He invited me to join the CVR team to round out the roster. I happily obliged even though, honestly, I did not know the basics of a ground stroke. Continued on page 82

Q: What did you find you loved about tennis? A: It has changed my view of the world and has so enriched my life. I love the camaraderie of women’s tennis. I started playing doubles at the lowest position in the interclub league, and the same year, we ended up winning the local league. We then formed a USTA league and won that one too. Doubles and singles tennis are so much fun and challenging, both physically and mentally—a bit like a chess match. In tennis, partnerships are formed and by nature, one cannot play doubles successfully without solid teamwork and problem solving. It’s critical to winning. In addition, I have been fortunate to meet amazing people from different walks of life and with different perspectives. The wonderful friendships I’ve made through tennis are priceless.
Q: Are there connections between tennis and real estate? A: While I did not start playing tennis with any thought of real estate in mind, it turns out there are overlaps. Tennis is an outlet and treat for me. Along with running, tennis helps clear my mind. I come up with many ideas and solve problems when I am engaged in sports. It’s almost as much a mental health activity as it is physical. Not unlike the time I spend in real estate, with tennis, I get to work and know my tennis partners very closely and spend a good deal of time with them—it’s very special. I’ve captained a number of USTA teams for Carmel Valley Ranch, which has been an interesting experience. Probably the reason I excel at captaining is that I have the skill of bringing people together, managing a lot of moving parts and strategizing, which is what I do all the time in real estate. A silver lining above and beyond the general enjoyment I derive from tennis is that I have had the privilege of representing some of my tennis friends in real estate transactions. Q: Besides Carmel Valley Ranch, where else do you like to play? A: I also play at Mission Ranch in Carmel, as it is close to my home, and frequently I take clinics at Spanish Bay. There are great pros all over the Peninsula and I get to know players from different clubs in the area, including Pebble Beach and also Santa Cruz. I enjoy pretty much every form of tennis, whether singles, doubles or mixed (men’s and women’s) leagues. With everything I do, including tennis, I try to be completely focused. Before we moved to Carmel, I was working long hours in private law practice and did not have much time to engage in tennis or other sports. Living on the Monterey Peninsula with my family, playing tennis regularly and doing what I love as a real estate professional is truly a privilege for me and has increased my quality of life beyond measure.
